Firefly’s New Chef Brings the Best to the Gulf Coast

atrons would be hard-pressed to find another restaurant in Panama City Beach with the same ambiance and dining experience of Firefly. Its motto is “casual fine dining,” but Firefly really is more than that. With the addition of the sushi bar and multiple private dining rooms, the restaurant brings something for everyone to the table. An evening in the main dining room underneath a beautiful, sprawling tree — complete with glistening lights and twinkling “fire-flies” in its branches — will make you fall in love with more than the delicious cuisine. Whether you’re looking for the perfect romantic date destination, a fun night out with friends or family, or a private space to hold your next meeting or event, Firefly has something for everyone. It’s no wonder that Firefly is an eighttime Florida Trend Golden Spoon Award winner, has won the Wine Spectator Award of Excellence 12 years running, and has been included in OpenTable.com’s “100 Most Romantic Restaurants” and Urbanspoon.com’s “Top 250 High-End Restaurants in the World.” In November of 2019, Firefly welcomed executive chef Rob Burgess to its kitchen. Having studied 22

and graduated from Le Cordon Bleu culinary school, his credentials and background speak for themselves. Being at a neighboring restaurant in Panama City Beach for seven years, joining the team at Firefly was a seamless transition. “I’ve always had tremendous respect for Dave and Firefly,” Burgess stated. “So when the stars finally aligned, I couldn’t pass up the chance to jump on board.” When asked about the decision to hire Chef Rob, Firefly owner Dave Trepanier said he was the obvious choice. “I’ve been wanting to work with Rob for a long time,” he shared. “I’ve known what

a great chef he is, and he has the best work ethic — always the first guy in in the morning and the last to leave at night. Rob is an outstanding chef, plus he’s a neat freak and particularly into cleanliness. He’s just one of those guys that if you get an opportunity to work with, you’ve just got to do it.” From South Carolina, Burgess grew up on a small farm with his parents. “We raised horses, chickens, ducks — you name it we had it,” he shared. “Growing up, my mom was always in the kitchen. We always had a home-cooked meal every night. After high school when I wasn’t sure what I wanted

to do and left a nearby university after three years, it was natural to start cooking and go from there.” Trepanier, attributes the success of his restaurant since it opened in 2007 to many things. “It’s easy to say the food makes Firefly special, but it really is so much more than that,” he says. “It’s the whole experience — the service, the atmosphere and the attention to detail.” When asked about new dishes that can be expected to see on the menu, he credits the customers to the mix of food items. “Coming over to Firefly, there is a little different clientele,” Burgess said. “They are definitely much more adventurous eaters, which is very exciting for me. We will be implementing a few new sushi rolls to keep that fresh and lively, and some exciting

items to the main menu. I like variety — which the Firefly menu is already full of. You can find seafood, pasta, sushi and steaks without it being cumbersome. I absolutely love cooking Italian food, but I do like variety. Keeping it fresh and not keeping it mundane is key.” Like many other local businesses in Panama City Beach, Firefly was unfortunately damaged when Hurricane Michael made landfall in October of 2018. It was a devastating time for the famed restaurant, but Trepanier says it was the unknown that was the hardest part. “Not knowing when you can get a roofer to start, how is insurance going to work, and most importantly, how is my staff?” he explained. “There was zero communication for so long that I didn’t know who was safe, who lost their homes or who left the area. It was a very scary couple of weeks.” The unfathomable wake of Hurricane Michael didn’t cause any hindrance on the excellent service, staff or cuisine you’d find at Firefly. “I have a great chef and great management,” Trepanier proclaimed. “We do our best to train them right and bring our team up to our standards to ensure our quality. At the end of the day, we just try to put good people on the floor and give our customers the best experience when they enter our doors.” The 535 Library Lounge remains to be the perfect spot to cozy up with good friends and enjoy a drink while waiting for your table, or just catch up on the

events of the week. The Firefly Bar has HD screens for watching the big game, and it’s a great place for grabbing an appetizer or enjoying a full meal in a more casual setting. The sushi bar serves creative, delicious handmade rolls that are sure to impress. Combine all these elements with a diverse menu and over 200 wines, and it’s easy to see why Firefly has become a favorite dining destination for both Panama City Beach locals and visitors. Patrons can visit FireflyPCB.com to find Firefly’s Sunset Special menu, happy hour specials such as Tini Tuesdays, and weekly chef ’s specials. Visitors to the site can explore all that Firefly has to offer, browse the restaurant’s menus and make reservations online — as the dining room is often full. CHEF PHILIPPE OLIVIER ROBLES “I have a life-long passion for food. My commitment to quality and excellence can be tasted in every dish!” – Chef Philippe Robles, a graduate of the Haute-Vue Culinary School in Morlàss, France, has more than 25 years of experience in highly respected dining establishments. Before joining Resort Collection, Robles was executive chef for Sandestin Golf and Beach Resort. Prior to his tenure at Sandestin, he held the position of chef de cuisine at Criolla’s Restaurant on Highway 30A in Santa Rosa Beach, Florida. Robles’ talent has carried him to positions in France, Switzerland and Hawaii. Robles has worked for five-star fine dining restaurants such as the Ritz Carlton Hotel, Buckhead in Atlanta and the Ritz Carlton Hotel in Maui, Hawaii. In France, the prestigious Restaurant Gerard employed Robles’ talent as did Hôtel du Béarn, Restaurant La Marmite, Hôtel du Palais, and Hôtel de Chiberta. His skills were further honed during his work at Noga Hilton in Geneva, Switzerland.

ontinuing to bring the biggest names in country and rock music to its stage in Panama City Beach, Pepsi Gulf Coast Jam is returning for its eighth year in 2021. Festivalgoers from across the world will travel to listen to today’s top hits in “This Crazy Town!”

What makes Gulf Coast Jam special? Rendy Lovelady, Pepsi Gulf Coast Jam’s executive producer, said it best at the inaugural 2013 event: “I want to bring something that everyone can continue to enjoy for the next 10, 15, 20 years. This festival will become a staple in Panama City Beach!” And it has. Lovelady and his team of producers, Mark Sheldon and Dave Trepanier, have proven that Pepsi Gulf Coast Jam is here to stay and never fails to bring the best artists in the industry to the World’s Most Beautiful Beaches. Fans are already looking forward to this year’s festival, which will feature major headliners each night. Despite ongoing concerns about the coronavirus pandemic, Lovelady said he believes the show can go forward safely. “The weather is going be beautiful, but the wind is going to be blowing in an outdoor venue,” Lovelady said. “It’s going to be very safe, very safe. Plus, we’re going to take all the precautions we need to, to make sure our crowd is safe.”

The event’s organizers have taken measures to help keep attendees healthy. Hand washing stations will be placed throughout the festival grounds, and touch points — such as railings, chairs and portable toilets — will be sanitized throughout the day. A deep cleaning will be used on touch points each evening after festival grounds are cleared. They have also implemented Radio-Frequency Identification (RFID) wristbands to replace traditional printed or e-tickets and eliminate the exchange of cash at vendor booths. “We are doing everything in our power to ensure this is a fun and safe event for everyone who comes through our gates,” said Sheldon, Pepsi Gulf Coast Jam’s COO. “Our beautiful beaches are open, and we can’t wait to gather together to hear some incredible music.” The headliners for 2021 are sure to get everyone on their feet! Get ready to throw down with Southern rock legend Lynyrd Skynyrd. The band is known for epic classics like “Free Bird,” “Simple Man,” “Tuesday’s Gone,” and “Gimme Three Steps.” Raise your hand if you’re ready to party with Brad Paisley! He boasts a decades worth of hits, such as “Whiskey Lullaby,” “I’m Gonna Miss Her,” and Grammy award-winning song of the year, “He Didn’t Have to Be.” Known as an honorary Panama City Beach local and true beach-lover, Luke Bryan will bring his amazing jams such as “Huntin’, Fishin’, and Lovin’ Every Day,” “Country Girl,” and his newest hit, “One Margarita.”

In 2013, Trace Adkins, Brantley Gilbert and Toby Keith headlined the three-day music festival and brought in a crowd of 13,000 people from 49 states and 14 countries. To boast such a large crowd right off the bat — even before the event was held during Labor Day weekend — was a major accomplishment. “Pepsi Gulf Coast Jam is a festival different from any other,” says Sheldon, Pepsi Gulf Coast Jam’s COO. “It’s a perfect combination of vacation and music all rolled into one.” The first year, however, was all about learning so that the festival could be bigger and better in the years to follow. However, more than on-site logistics have made this event successful. “The support from the city of Panama City Beach has been tremendous,” Sheldon insists. “From the Tourist Development Council board to the police, fire rescue, and all city offices — it has been a team effort to make this event great!”

In 2015, Rendy promised that the lineup would be the biggest one to date. There was a mix of charttopping acts, up-and-coming stars and country music legends throughout the three-day festival. Headlining acts included Lady Antebellum, Miranda Lambert and Keith Urban, and they were joined by other big acts such as Hunter Hayes, Martina McBride and Sam Hunt. “I think it reiterates just how strong of a lineup we put together,” Lovelady says. “There really are only a handful of acts that we haven’t yet brought down to the Panhandle. Each year, we’re just going to get bigger and better.” Due to circumstances beyond their control, the festival was cancelled in 2016 by Hurricane 38

Hermine’s dangerous approach on the Gulf Coast. It was a devastating blow to both the producers and eager concertgoers. But the disappointment didn’t last long as promise of a huge lineup in 2017 was already underway, and it certainly delivered. The fifth annual Pepsi Gulf Coast Jam brought 15 acts to join headliners Jason Aldean, Little Big Town and honorary Panama City Beach local Luke Bryan. Festival organizers also continued a commitment to raise funds for St. Jude Children’s Research Hospital, which focuses on treating and defeating childhood cancer and other life-threatening diseases. For every ticket sold at Pepsi Gulf Coast Jam, $2 went to support the life-saving work of St. Jude. Who could forget the list of established entertainers Pepsi Gulf Coat Jam brought to the stage in 2018? Headliners included Florida Georgia Line, Eric Church and Thomas Rhett, with huge supporting acts like Justin Moore, Chris Janson, Dustin Lynch, Chase Rice and Brett Young. The festival has been bringing the freshest sounds in country music, and this year was no exception. Last year in 2019, the group of artists not only represented three decades of amazing music but also countless awards, No. 1 singles and top-selling albums.

ften when people ask me what’s the hardest workout I do, I say it’s not a single workout at all. The hardest part of training is doing these workouts day after day after day — in other words: consistency. Doing a hard workout once brings small benefits. But being able to do hard workouts consistently month after month yields results.

PUTTING IN THE TIME A large part of training for a long-course triathlon involves putting in the time. It can be easy to get caught up in intensity and heart-rate zones or watts, and these training tools can definitely help improve performance. However, simply spending time swimming, biking and running consistently will lead to improvements in racing. Six-time IRONMAN champion Heather Wurtele says consistency is probably the most important aspect of her training and is responsible for her consistent improvement over the years. “I think people assume that they have to have these epic sessions — and, of course, there is a time and place for high-intensity sessions or long rides and runs — but the bulk of the work is just getting your four-plus K’s done in the pool every day or heading out the door for another 50-minute aerobic run,” she says. She adds that it’s not necessarily exciting, but a lot of value lies in being engaged in each session. “In my experience, it takes years of consistent work to make big gains in the sport, so you have to learn to embrace the process,” she says. Triathlon Squad and Wurtele’s coach Paulo Sousa refers to it as getting the work done: “(It’s) about consistency. Every athlete has days where it’s hard to get out the door for the next workout. Most of the time, this is a mental issue that is experienced by athletes at every level,” he says. Sousa offers one way of helping athletes with these issues: building the training schedule around sessions that don’t need a lot of mental energy to accomplish. “I like to call them ‘breadand-butter’ sessions,” he says. “They are usually short in duration and low-intensity but are still a very important part of the overall training program.”

MAKE TRAINING WORK FOR YOU If you know that Tuesdays are filled with meetings and obligations, build your schedule around an easier or rest

day on Tuesdays. If you absolutely dread running on a track, do your speed workouts on the road or trails. By building the training schedule around your unique personality and schedule, it will be much easier (and enjoyable) to remain consistent with your training.

IT’S NOT “ALL OR NOTHING” Fitting triathlon training into your busy life is bound to create time conflicts at some point. On those days when you realize your allotted two-hour time slot somehow got reduced to 30 minutes, rather than bagging the workout all together, use those 30 minutes for a quality session. The small workouts still count and provide fitness.

BE FLEXIBLE Life happens, so roll with the punches and get back on the plan. Don’t overthink workouts, and don’t try to make up skipped workouts. Just do the work. Sousa states: “The sport of triathlon is full of overthinkers. They overthink everything: nutrition, equipment and, of course, training. When athletes overthink, they lose focus on the truly important things: consistency, patience and long-term approach to development.” Rather than overthinking, focus your energy on trusting the training process, being patient and knowing that consistent training pays off. When you miss a workout, don’t try to cram four workouts into the next day. Simply move on to the next scheduled day of training. In the big picture of your race, one workout will not make a difference in performance. The breakthrough performances on race day will be a result of months of consistent hard work in training. Becoming a staple event at Resort Collection’s Edgewater Beach & Golf Resort, competitors can look forward to IRONMAN 70.3 Gulf Coast. Occurring in May, this IRONMAN-branded event has become a noteworthy triathlon in Panama City Beach. The competition will begin with an open water 1.2-mile swim in the Gulf of Mexico. Competitors will then continue on to bike 56 miles on an out-and-back course through rural areas of Bay County and Panama City Beach. Much like IRONMAN Florida, it is a flat and fast course, perfect for athletes looking to obtain a personal best. 40 IRONMAN 70.3 World Championship qualifying slots will be handed out to the top 40 finishers.

IRONMAN makes visiting Panama City Beach in November the perfect destination for an adrenaline-fueled race and a mini vacation all in one. This race is where only the most elite triathletes compete for a coveted slot in the IRONMAN race in Kona, Hawaii. The swim is a two-loop, 2.4-mile course that takes place in — you guessed it — the Gulf of Mexico. As if the swim wasn’t challenging enough, athletes will also have a short beach run between laps. Competitors will next complete a 112-mile bike ride at only 161 feet above sea level. Concluding the daylong race is one of the flattest runs on the IRONMAN circuit. Spectators and supporters line the roads and cheer on runners as they finish a full marathon (26.2 miles).

Not quite ready to tackle a triathlon? Expanding from a previous half marathon and 5K competition, the Panama City Beach Marathon was born and features all three races in one. The certified 26.2-mile out-and-back course is relatively flat and follows alongside the Gulf of Mexico, through neighborhoods and the state park and loops back to the finish line at Pier Park. The event also still includes half marathon and 5K competitions. A free kids’ fun run takes place in the streets of Pier Park, with all children receiving a finisher’s ribbon! GAYLE’ S TRAILS Crafted since 1998, Gayle’s Trails continue to bring hiking and biking aficionados to Panama City Beach for expansive and challenging trails. What began as construction for walking paths is now a network of linear paved trails radiating from a central trailhead at Frank Brown Park in Panama City Beach, the three route options. In compliance with the new guidelines set forth by Gov. Ron DeSantis and the Florida Department of Business and Professional Regulation (DBPR), Resort Collection is removing all bedding comforters, spreads, quilts, decorative pillows, etc., from within our vacation rental units. THE FASTEST GROWING SPORT YOU’ VE NEVER HEARD OF One of the fastest growing sports in America involves a court and a net. But it’s not tennis or badminton, it’s pickleball. For the uninitiated, pickleball is something of a mix between tennis, racquetball and ping pong. Players use special paddles and a wiffle ball, and games take place on tennis courts with specific pickleball lines. Nets and court sizes are smaller than their tennis counterparts, and the most common game is doubles, although singles is also an option. It has its own set of quirky rules — for instance, try to stay out of the “kitchen”— but they’re easy to learn. The game is also quick, making it a convenient way to get in some exercise. Games in a typical league run only 15 minutes each — you can get in as little or as much as you want. ake a break from the beach and experience the wild. ZooWorld is not your typical “look and see” type of zoo and offers numerous unique, hands-on opportunities with animals you would otherwise never get to touch. Brought to Panama City Beach almost 75 years ago by a local family, the zoo is nearly unrecognizable from the renovations and improvements made to the entire park by new ownership. ZooWorld has truly become a gem of the community. Zoo World Panama City Beach, Florida, is home to exotic animals from all over the world, and you won’t need binoculars to see them! Step foot onto the 5.4-acre property and be welcomed with monkeys, guinea pigs, otters and rheas (a smaller breed related to ostriches). There is even a fun tunnel through the guinea pig exhibit for little ones to feel like they are in the room with them. Brought back from its original establishment at ZooWorld in 1948, the Snake-a-torium is remodeled and features decades of history. Not only can you see pythons, boas, and vipers, but also get a close look at bearded

dragons, Argentine tegus and iguanas. Squeamish around reptiles? That’s OK — you can wait right outside the vinyl strip doors and gently pet the bunny rabbits. Besides the snake-a-torium, other hands-off exhibits are abundant. Check out the native black bears in their new home with two floor length glass viewing barriers, or the interesting bearcats from south Asia. There are also active tortoises, meerkats, several monkey species, and Asian wild dogs to see and learn more about. If looking and seeing isn’t a big enough thrill or if your children love animals, almost the entire remainder of the park allows for touching, petting and feeding animals. Starting with probably the most popular hands-on attraction, feeding the two giraffes is an awesome time no matter your age. Purchase a few lettuce leaves and reach up to hand it to them, or if you’re even more daring, feed it to them straight from your mouth. There is even a private giraffe feeding area on a platform overlook for an extra cost. After feeding the giraffes, stick around to pet the fun and personal petting zoo animals such as ponies, deer, goats, camels, pigs and more.

Watch out for the baby goats that roam and hop around freely and offer up tons of laughs. Grab an animal feed cup, and they’ll gobble it all up right out your hand. Ready to take flight? Walk through a free flight aviary with hundreds of colorful and exotic birds who love the interaction. For an even closer experience, bring in a budgie stick to feed the birds. You’ll start to find them sitting on the stick, your shoulder, or finger trying to nibble off the birdseed. If there is one thing to be said about the entire team at ZooWorld, it’s that they are passionate about animals and their life work. In early 2020, they raised close to $20,000 for purchasing critical medical supplies to assist relief for Australia’s wildlife wounded by their brush fires. ZooWorld has also made huge strides in reducing harmful and plastic waste. In spring of 2019, they had over 450 patrons pledge to give up straws and cut back on plastic bag use, and they also passed out reusable water bottles and shopping bags.

Last but not least, try out ZooWorld’s newest attraction and fla-mingle with their flock. It’s your chance to become a part of this pink herd in a fun and interactive way with Chilean flamingos. Get up close to snap some great photos, and learn from the experts who care for them daily. Please note, you still are unable to touch the flamingos. s winter slowly releases its chilly grip on Northwest Florida, the Gulf of Mexico and its surrounding bays and estuaries come to life.

Panama City Beach Spring/ Summer Fishing Report

Early in the spring, you’ll find a massive congregation of sheepshead in the St. Andrews Pass along the jetties. These distinctive black and white striped fish can be caught throughout the year, but they’re especially plentiful during the spring when they mass in big schools to spawn. As a matter of fact, it’s one of the few times during the year that you can catch as many as you want. Sheepshead are great table fare and the bag limit is quite liberal, but I encourage you to keep only a few and release the rest — especially during this time of the year when they are most vulnerable. A medium-light action spinning rod with live shrimp or fiddler crabs on a small circle hook is all you really need to catch a lot of fish. Try using a Carolina rig weighted with just enough lead to get to the bottom.

beaches, in the pass and in open water in the bays. When the fish are feeding on the surface, it’s fun to dash from school to school and throw jigs, spoons or small plugs into the frenzy. The most common way to target them, though, is to troll Christmas tree rigs, spoons, bubble rigs and similar baits. You’ll see a lot of big charter boats trolling in a line around the bay in search of Spanish mackerel this time of year. One of my favorite spring tactics is motoring along the beach in search of big schools of redfish cruising in the surf. The size of the fish can vary greatly from school to school, but that doesn’t matter because casting lures into schools of several hundred fish in crystal clear water never gets old. Sight fishing is much easier with a control tower atop your boat, but you can still have a successful outing without one if you take your time and don’t get in a hurry. Once you locate a school, navigate your boat in front of the fish and let them come to you. After you catch one, move out

to deeper water and wait a minute, then run back out ahead of them and let the school come to you again. If you only try to play catch up, you’ll just keep pushing the school down the beach. As spring turns to summer, you’ll begin to see tarpon showing up along Panama City Beach. Known affectionately as the “silver king,” tarpon can humble even the most seasoned angler. They migrate from east to west in mid- to late-spring, either solo or in large schools. Despite their large size, tarpon tend to be quite skittish in our crystal clear water, and anglers must put all their skills to work if they want a successful hookup. The tarpon’s large eyes allow them to scrutinize every bait, so extreme care must be taken to fool them into a bite. And cracking the code can be a challenge on any given day. While a 40-pound fluorocarbon leader will often provoke more strikes, it lacks the abrasion resistance to land a fish after a prolonged battle — and heavier leaders sometimes won’t get any action at all. It’s just the nature of the beast.

But on those magical days when conditions are perfect, you’ve selected the ideal bait, made a precise cast and the silver king cooperates, you’ll experience the incredible acrobatics that cause many anglers to dedicate their lives to the chase. And if you’re fortunate enough to battle a tarpon all the way to the boat, be sure to cherish the moment; treat it with respect and release it healthy to fight another day.
