Chef Hugh Acheson highlights the bounty of the Gulf Coast presented with deft simplicity BY CARRIE HONAKER
Puncturing the golden yolk of a slow-cooked farm-fresh egg, the unctuous liquid enveloping the awaiting crisped rice, collard kimchi, shallots, winter squash and oyster mushrooms, signifies a turn of seasons at Hotel Effie’s signature restaurant Ovide.
The dish showcases the comfort and simplicity which James Beard Award-winning chef Hugh Acheson embraces as he feeds pandemic-starved patrons looking for nourishment. Simplicity, a trend Acheson gravitates toward, is anything but simple. It’s fraught with balancing the bounty of seasonal produce, fresh Gulf seafood and locallyfarmed proteins, while not manipulating much in technique so that the ingredients shine with their natural flavors.
“Trying to get through the pandemic while the world is in a state of tumult, we all want that big hug of food that pulls at the heartstrings,” said Acheson. “Nourishment is a concept far beyond sustenance, nutritional value — it’s what food means to you at that specific moment.”
With the arrival of fall, guests and patrons can look for seasonality and sustainability
to continue to occupy Ovide’s menu. The abundance of collards and beans through September, apples and sweet potatoes into October and zesty citrus as the weather begins to chill, sparks inspiration for Acheson.
“I yearn for peach season in late spring, have an itch to peel May fava beans, wake up in November with a new idea of honeynut squash,” said Acheson with a sense of reverie.
“Going into the fall, it’s a celebration of ingredients. We can highlight all that beautiful local produce in the way people want to eat these days, just smartly plated and smartly cooked.”
The moody gray paint mixed with amber leather accents, rich hints of emerald and wood-grained tables emit a sense of restrained minimalism to Ovide’s dining room. Set against the large-scale ceiling mural — a bouquet of pale pink peonies, delicate bluebells, fiery lenten roses and fluffy white viburnum — guests get a sense of the story of Ovide where Acheson juxtaposes lush seasonality tempered with deft simplicity.

century in the Southern United States, he has many cooking styles to draw upon. But at the heart of all his menus is respect of where food comes from and where it’s going.
“I always try to create menus that pull at some of those threads,” said Acheson. “Making rice and peas while thinking about my family’s time in the Blue Mountains of Jamaica means that I am cooking from a place with zeal and authenticity. To me, it makes the food make sense.”
Staples like the popular roasted Gulf Oysters with dill butter, classic shrimp cocktail and delicate beef tartare will remain on the menu. And mains like the juicy bone-in pork chop and tender filet mignon will always have a spot, but their sidekicks will change to incorporate fresh, seasonal produce.
Another item that won’t change is the farm-raised oysters served on the half shell with mignonette and buttermilk crackers. Since the closing of the iconic Apalachicola beds, a bevy of oyster farms have cropped up to fill the void. Acheson is happy to support the ecological wonders cleaning our waters.

The fall and winter menu will rely on seasonal ingredients presented simply. Like the dinner menu, the brunch and lunch offerings will feature seasonal dishes mixed in with old favorites.

— Chef Hugh Acheson“Citrus, late season tomatoes, okra, collards, red snapper, shrimp, stone crabs … I am always looking to get as much from the local sphere as possible,” Acheson elaborated.
For him the red snapper coming from just a mile away out of the Gulf and prepared Escovitch-style, served with local pigeon peas and rice, is an Ovide highlight. Preceded by the seasonally abundant arugula
and citrus salad, the spread is sure to yield nirvana.
Wash it all down with one of the bar’s signature cocktails made with fresh juice, like the sublime Orchard Occasion — a medley of mellow bourbon, vibrant peach and warm allspice shaken with a bit of honey, squeeze of lemon, some muddled mint and a dash of bitters — an occasion you won’t want to miss on one of those crisp fall nights.
It is always so odd to me that a billion-dollar industry has been built on factory-made salad dressing when, with simply one minute of time and a clean mason jar, you can create your own. And if you’ve never made your own dressing before, it shows you that making things from scratch is entirely easy, and the results are better than most stuff you can buy — and without stabilizers or preservatives.
Plus, vinaigrettes are infinitely flexible. They’re not just salad dressings. They’re sauces for a steak, chicken or fish. They’re great ways to add flavor to dishes, and they’re infinitely adaptable flavor-wise.
Making a vinaigrette gives you a formula to create your own vinaigrettes, whether for salads or to use as a sauce for simple meat or fish. There are three categories of ingredients in a vinaigrette: oil, acid and flavor. The formula is 3 parts oil to every 1 part acid (whether vinegar, lemon juice or something similar), and you can flavor it however you want, but with one basic rule: If what you are adding is essentially an oil or an acid, you will need to cut down the amount of your foundational oil and acid.
A good example would be adding tart orange juice to a vinaigrette; if you do that then you’d want to cut down on the vinegar, because both are acidic. If you’re adding bacon fat left over from breakfast to a vinaigrette, you would thus edge back the amount of oil, because both are fats. Other than that, go crazy! Have some soy sauce from
that takeout Sichuan order? Some miso that has been inadvertently aging in the recesses of your fridge? Some finely chopped scallions or chives? The options are virtually endless.
Makes about 1¹/³ cups
» 1 cup extra virgin olive oil » ¹/³ cup cider vinegar
» 1 teaspoon Dijon mustard
» ½ teaspoon Diamond Crystal kosher salt
» 1 garlic clove, peeled and crushed with the side of a knife
» freshly ground black pepper
Place all ingredients in a pint jar. Screw on the top. Shake vigorously for 10–30 seconds, until combined. And, Done! Shake again prior to use. It has a long shelf life if kept in the fridge, up to three weeks or even longer if you remove the garlic before storing.
» There is no real secret to a good vinaigrette, aside from the ratio of 3-to-1, oil to acid. That means use three times the amount of oil you use to that of acid. You can tinker with this ratio to your preference and according to your ingredients — some vinegars or lemons are more sour than others — but in general, 3-to-1 is a balance that gives you nice tartness rounded out with the smooth flavor of the oil. It will make a vinaigrette that is tart but not pucker-up sour, making it lively and delicious. What oil you use is up to you but I use a reasonably inexpensive extra-virgin olive oil to good results. I find nut oils impart a ton of flavor, but
they’re expensive and can overpower if you don’t cut them with something else. Peanut oil, avocado oil, grapeseed oil and safflower oil can all be used, but I would avoid generic vegetable oils, as it has a pretty basic, heavy flavor. So, counterintuitively, do not use something called “salad oil,” which was once a thing.
» A good quality vinegar is a necessity, and there are many choices that will guide the vinaigrette’s flavor, but for basic purposes I recommend cider vinegar. You can also use lemon juice, or really anything tart and liquid.
» You don’t have to use mustard if you don’t want to. But I do because I like the flavor, and because the mustard helps the oil and vinegar emulsify, which means it bonds them together, and makes it a bit thicker. Without it, the oil and vinegar would separate quickly and the vinaigrette would be pretty thin. Not a bad thing, just up to you.
» I believe in the consistency of Diamond Crystal Kosher salt. If you use Morton’s, the other major kosher salt brand, or plain old table salt, it’s almost twice as salty, so use about half as much as I call for.
» The jar can be a leftover pickle jar — which does remind me that pureed dill pickles in a vinaigrette is a thing of beauty — or a Mason jar with a clean band and lid.
As for what to do with the vinaigrette, there is a vast menu of possibilities. In looking over ideas and recipes that I have written,
vinaigrette is perhaps the most important core item that I use. It finds a home everywhere.
» Add some flavor to a simple salad.
» Perfectly pair it with a more complex salad, featuring roasted vegetables, grains and cheese or meat.
» Roast some vegetables and toss with chili flakes and vinaigrette.
» Put a spark on avocado toast.
» Splash it on fried okra, other fried vegetables, fried anything!
» It’s great with steak!
» Shave a crunchy vegetable, dress it, and call it slaw.
» Boost your breakfast and add it to some greens and eggs.
Let’s roast some of those carrots you see at the store — not the ones in a plastic bag that look gnarly, rather the bundle with their green tops still on. We will roast them fast and match them with some of those tops for big green flavor, feta cheese for salty richness, mint for herbaceousness and some quick pickled shallots for a nice acidic bite.
Roasted carrots with tops, feta, mint and pickled shallots Serves 2–3
» ½ cup cider vinegar
» 1 teaspoon granulated sugar
» Kosher salt
» 2 shallots, cut into thin rings
» 1 pound of carrots with tops
» 1 tablespoon olive oil
» Kosher salt
» 2 tablespoons vinaigrette (page 14)
» ½ cup feta cheese, crumbled
»¼ loosely packed fresh mint leaves
» freshly ground pepper to taste
Preheat the oven to 425 F. In a small pot, combine vinegar with ½ cup of water, sugar and a good pinch of salt. Bring to a boil and add the shallots. Turn off the heat and let them sit in the pickling liquid.
Cut the greens from the carrots and immerse them in a bowl of cold water. Process through them by removing the stems, plucking off the leaves, about an inch
long. You need about a cup of these greens, and the rest can be used to bump up volume in a pesto or a salsa verde. Discard the stems.
Scrub or peel the carrots, then cut them in half if they are thicker than an inch in diameter.
Cut into 5-inch lengths and place them in a bowl. Toss with olive oil, and season them with a couple pinches of salt. Place them on a baking sheet pan in one layer and roast for 10 to 15 minutes, until cooked through and caramelized at the edges.
Drain the carrot greens and dry them a bit in a salad spinner or on a clean kitchen towel. Place them in a small bowl and dress with half of the vinaigrette. Season with a little pinch of salt.
Drain the shallots, discarding the pickling liquid.
When the carrots are roasted, remove them from the oven and let cool for a couple of minutes.
Arrange the carrots on a platter and scatter the feta over top. Dot the carrots with mint leaves and dressed carrot tops, then finish with pickled shallots and serve.

Ron Walker is fairly new to the property-owning game at Sandestin Golf and Beach Resort®, but he’s no stranger to business. He has an accounting background and works back home in Texas developing subdivisions and commercial properties and owns a car dealership and storage facilities.
With his experience, Walker knows when a system is working and said it certainly is at Sandestin®, thanks to the rental management team.
He started purchasing properties at Sandestin® just this past January. By July, he had already accumulated eight.
But Walker doesn’t play favorites when he comes to visit. “I stay in all of them,” he said. “I like that because it’s a change … they have their own little personality.”
He noted that one of his favorite properties, on the 16th floor of Beachside Two, is ideal for views, with its dual balconies featuring a wall of glass windows in the bedroom and the living room overlooking the beach. And another, a three-bedroom, three-bathroom house in Laurel Grove, offers room to spread out for longer stays.

going, how it’s looking, do we need to do something here, etc. And I relay that back to my management team,” said Walker.
His Sandestin® Rental Management team consists of his property manager, Lee Sailors, as well as Lauren Hargraves and Tami Tucker. “They’re just great to work with,” Walker said of the team.
And the feeling is mutual, as Sailors expressed that Walker “is an exemplary rental owner and takes pride in his properties. He wants the guests to truly enjoy their stay and have the best vacation experience.”
The team takes care of everything from sending cleaning crews to handling maintenance services. And the jobs are always reviewed to ensure that they are up to Sandestin® standards.
“What makes it nice is that I don’t have to go find somebody to come in here and do that; they’ve already got them on staff,” he said.
But what Walker loves most about working with the Sandestin® Rental Management team is how communicative they are. They always make themselves available to help with anything they can.
Walker noted his recent golf cartpurchasing experience.
Any golf cart on the Sandestin® property has to go through an extensive process of obtaining permit stickers and go through a full inspection, even if they are brand new. Walker said that his Sandestin® Rental Management team came out to assist throughout the process, making the tedious task easy for him.
“They went above and beyond and stayed with me. We did this for a full day and got the carts all stickered up. And they didn’t have to do that.”
Sailors, specifically, has been a great help in promoting his properties. “It’s kind of a feeder system that I think, as an investor, is the best thing to have. I don’t think I could beat that,” he said.
While staying at Sandestin® himself, Walker enjoys going to the beach, playing pickleball and hitting Grand Boulevard for shopping and dining.
He frequents his favorite store, Sunset Shoes — Oofos sandals are his favorite —
and enjoys restaurants like Emeril’s Coastal, Cantina Laredo and Hotel Effie’s Ovide.

The 73rd hole comes into play on the 16th hole of The Raven. That area of the course was originally part of Baytowne, and at the time was a par 4 and without residences. When Robert Trent Jones Jr. was designing The Raven, he felt the existing corridor was too narrow

for a par 4 and came up with the idea of creating back-to-back par 3s. The hole you play depends on what day you come — 16A is played on even days and 16B on odd.

As one of the most popular events of the Gulf Coast biggame tournament circuit, the 2022 Emerald Coast Blue Marlin Classic (ECBC) celebrated 20 years of exciting, highstakes competition and a new competitive element with the inaugural Sport Fishing Championship. The 20th annual ECBC took place June 22–June 26 right here in Baytowne Marina at Sandestin Golf and Beach Resort® This year’s platinum anniversary showcased some of the sport’s top boats vying for almost $2 million in cash prizes.
“We celebrated 20 years of the Classic in style,” said tournament director Jason Draughn. “We welcomed back our valued contestants and Wind Creek, our presenting sponsor. We also brought on several new partners and sponsors, and we couldn’t have had this much fun for 20 years without every one of them!”
Participants competed for awards including one of the largest jackpots we’ve ever had for a blue marlin top prize. Eligible fish must be at least 110 inches long to qualify. That minimum is measured from the tip of the fish’s lower jaw to the fork of the tail. Qualifiers typically average 500 pounds or heavier.
In addition to the blue marlin weight cat egory, smaller blues, white marlin, sailfish and spearfish that are successfully released earn points in the competitive release divi sion. Releases are verified by video footage. Yellowfin, bigeye tuna, wahoo and dolphin fish are scored one point per pound. ECBC attracts multi-million-dollar sport-fishing
yachts from across the Gulf of Mexico as well as the southeastern United States.
Fishing began after Thursday’s noon start from the Destin Pass and concluded Saturday afternoon. Eligible fish are weighed Friday and Saturday evenings at the Baytowne Marina and always draw a crowd.
Two decades is a considerable stretch in the realm of big-game fishing. Tactics change and evolve, boats get sold, captains and mates move on. But some memories last forever. Long-time ECBC participants will carry ECBC memories around for years to come.
“My favorite memory was two years ago,” said skipper of the Mollie, Jeff Shoults. “That was when we weighed the first-place

blue (660.4 pounds) and came in third in the catch and release. We took home $507,000 that year.” Shoults has fished every year of the ECBC.
Memories abound, ECBC and big-game sport fishing continue to evolve and grow. The Sport Fishing Championship brought new and exciting energy, as well as international exposure on CBS Sports, to ECBC during its inaugural series. History was made when anglers competed for a $1,000,000 prize in tournaments all along the East Coast, Gulf Coast and all the way to Puerto Rico.
Angler Christian Fast, Capt. Jason Buck and the team aboard A Work of Art won the 20th anniversary Emerald Coast Blue Marlin Classic after weighing the largest blue marlin at 638.7 pounds. The team also released three blues. With tournament awards and optional entries, that effort was worth $545,681. Art Favre owns the 92 Viking based in Orange Beach, Alabama. The 84 teams competing in this year’s Classic were angling for $1.98 million in overall prize money.
“I’ve fished the ECBC since the beginning,” Favre said. “We were fortunate to win the top catch and release once, but this is our first in the kill division. So, this is a sweet win after all those years to get in the top slot in this tournament. I’m honored and humbled by it.”
After 20 years, ECBC at Sandestin® has only gotten better, and will only become greater, still.

2022 marked the 20th anniversary of the Emerald Coast Blue Marlin Classic at Sandestin®. With 84 teams and almost $2 million in cash awards, it was one of our biggest yet. From the traditional golf scramble, to the shotgun start to the big weigh-ins, there was an exciting energy surrounding this year’s event. Greg Torres is our general manager at our sister company, Cottage Rental Agency. Greg serves as an ambassador and the leader of the vacation rental company and oversees daily operations out of the Seaside, Florida, office. His major focus is to drive enhanced performance for CRA rental owners, as they are the center of what drives success and they are the heart of the mission at CRA. As a mentor to staff, he leads the team in delivering consistent, unique experiences for guests while also enhancing the quality of service.
Greg has relocated to the area by way of Sedona, Arizona. Most recently, he was the senior director of area operations for Diamond Resorts where he oversaw the operations of four Gold Crown Resorts. His extensive background also includes time spent with Bluegreen Vacations and Wyndham Vacation Ownership out of Las Vegas, Nevada.

Vasil joins us from Miami Beach, Florida, but is originally from Bulgaria, Europe, and relocated to Miami 20 years ago to play professional soccer. But an unfortunate injury stopped his career in sports, and he discovered his love for food and beverage while in college. Vasil relocated to Northwest Florida with his wife Kameliya, who is also from Bulgaria, and his two twin sons Asparuh and Apostol. Fun fact: Kameliya and Vasil are from the same city in Bulgaria, yet met in Miami.
Vasil’s favorite part about being in food and beverage is the constant moving parts — much like chess, which he loves to play. In the 18 years in the business, he has yet to encounter two days that were alike. Vasil is responsible for the food and beverage operations including: Marina Bar & Grill, Banquets, Beach Club, Tiki Bars, Fat Tuesday and Burnt Pine.
Born and raised in the area, Tiffany Clemons knows a thing or two about vacationing at Sandestin® and puts her knowledge to great use in her role as the senior marketing manager. This marketing maven handles all things marketing for Sandestin® to include business units like golf, weddings, food and beverage, rental owner relations, group sales, retail, recreation ... you get the idea! If you see the Sandestin® logo somewhere, that’s her!
It’s hard to say where you’ll catch Tiffany throughout the day; one day she could be writing an article for Sandestin® Living Magazine, the next, working on a photoshoot with a national brand or even creating social posts about big fish! In her time off, however, it’s safe to say that you’ll find her traveling to concerts and music festivals across the country or snuggling with her pup, Penny, fittingly named after her favorite movie, “Almost Famous.” Tiffany has moved around, all over the Southeast, but something always brings her home to Northwest Florida and we couldn’t be happier that this is the case.
As the associate director of sales for Hotel Effie, Sharon acts as liaison between customers who are seeking the perfect place for their meeting or event and the hotel team. This involves proposing solutions and coordinating site inspections and getting the group contract in place before introducing them to their services team. Her favorite part of the job? Getting to connect with new people, companies and organizations and helping create experiences that inspire them to bring their friends, colleagues and members together to connect, learn and celebrate at Hotel Effie.
Sharon grew up in New Jersey and moved to New Orleans, Louisiana, in 2002, where her son was born and where she started her hotel career. They now reside along the beaches of Northwest Florida with their sweet dog, Stella, who was rescued by local shelter Road Dogg and is an absolute ball of light and energy! In her spare time Sharon practices the art of up-cycling bottles into clean candles. On weekends you will find her at the farmers market at The Village of Baytowne Wharf sharing her handmade candle creations with the local community. She also enjoys traveling, writing and spending time with family.

Since home prices have appreciated at an extraordinary pace these last two years and we have now experienced a recent shift in the market, many have become curious and questioning: Are things just slowing down, or is a crash coming?
To properly answer this question, we must understand two things. First, what is the reality of the shift in today’s housing market? And second, what the experts are saying about home prices in the coming year.
The reality is we are seeing an inflection point in housing supply and demand. According to ECAR’s July 2022 report, the inventory supply was up 76.5% from the same month last year and active listings were up 63.1% while closings were down by 28%. This shows an inflection because we had seen a massive amount of demand and not enough homes available for sale for the number of people wishing to purchase.
Today, supply and demand look different, and the market is slowing down from the pace we have seen. This offers proof of the sudden slowdown so many people are feeling.
Right now, most experts are forecasting home price appreciation in 2023, but at a much slower pace than the last two years. When we look at the shift taking place along with the trends we are seeing, we can conclude the national real estate market is slowing down, but it is not a bubble getting ready to burst.
