The Lund Collection Launches in the Cotswolds Bergman Design House, the award-winning studio founded by Marie Soliman and Albin Berglund, unveiled The Lund Collection, launching in the Cotswolds this spring. Chinese New Year-Inspired Brunch Recipes Just because the New Year has passed us by doesn’t mean we can’t still indulge in some Chinese New Year-inspired preparations we love! Bottomless Brunch has compiled a list of tasty dishes to share with family and friends that might just become your go-to staples…

Salt and Pepper Tofu 14 ounces firm tofu 2 tbsp corn flour 1 tsp Sichuan ground into a powder 2 tbsp sunflower oil 2 red peppers sliced into pieces ¼ of a whole broccoli head, chopped into small florets 3.5 ounces beansprouts 2 tsp low-salt soy sauce Sweet chili oil, for drizzling

Start by making sure the tofu is dry, as this will give it a firmer texture once cooked. Achieve this by wrapping it in kitchen roll to soak up any excess moisture or place a chopping board on top for 20 mins to squeeze out the liquid. Cut the tofu in half down the middle and cut each piece into four triangles, then in half again until there are 16 pieces. Meanwhile, in a bowl, mix the corn flour, Sichuan and 1 tsp of salt and coat each piece of tofu in the mixture. Heat 1 tbsp of oil in a large frying pan or wok and add in sliced peppers and broccoli and stir fry until soft.   Next add in the beansprouts and soy sauce, cooking for another 2 mins, so the vegetables are crunchy. Heat another tbsp of oil in a large pan and fry the coated tofu for 10 minutes, turning the pieces halfway through cooking. Once crisp, serve on top of the vegetables and drizzle with some sweet chili sauce.

For a vegan option full of flavor, try this salt and pepper tofu recipe. It’s quick and easy to make and has a good combination of spicy, sweet, and earthy flavors that should go down well with everyone. Serves 4

Chicken Chow Mein For a noodle dish, chow mein is a favorite among many. The flavorsome recipe is the perfect combination of sweet and savory, and noodles are even believed to bring happiness and longevity in the year ahead. Serves 4 8 ounces fresh egg noodles 1 tbsp sesame oil, plus 1 tsp 3.5 ounces chicken breasts, cut into small pieces 2½ tbsp groundnut oil 2 garlic cloves, finely chopped 1.7 ounces mangetout (snow peas/sugar peas), finely shredded 1 carrot, finely shredded 2 spring onions, finely chopped 2 tsp light soy sauce 2 tsp dark soy sauce 2 tbsp Shaohsing rice wine ½ tsp freshly ground white pepper ½ tsp golden castor sugar • • • •

In a pan of boiling water, cook the egg noodles for 3-5 mins, then drain and transfer them to cold water. Remove them and drain thoroughly, toss them with 1 tbsp of sesame oil and put aside. In a bowl, combine chopped chicken breast with 1 tsp sesame oil, 2 tsp Shaohsing rice wine, ½ tsp white pepper and ½ tsp salt for the marinade, mix together, and leave to marinate. Heat a wok or large frying pan over a medium-high heat, add in 1 tbsp groundnut oil and add the chicken, stir frying until cooked. In another wok, add 1½ tbsps of groundnut oil and wait until hot, add 2 finely chopped garlic cloves and stir fry until fragrant, before adding 50g of finely shredded mangetout/snow peas/sugar peas and finely shredded carrot, stir fry for a minute. Add in the noodles, 2 tsp light soy sauce, 2 tsp dark soy sauce,1 tbsp Shaohsing rice wine, ½ tsp golden castor sugar, 2 finely chopped spring onions and stir fry for a couple of minutes. Add in the chicken to the noodles and vegetables and stir fry until everything is warmed through. Add 1 tsp sesame oil and give everything a good stir, before putting it on a plate to serve.

Vegetable Spring Rolls

This super crunchy and filled with tasty vegetables dish is one nobody at your table is going to say no to. Read on to learn to make this crowd pleaser in your own home. Serves 10

A packet of spring roll sheets 1/2 Chinese cabbage, finely sliced 1 handful of beansprouts 1/2 large carrot, finely sliced lengthways 1.7 ounces of rice noodles 2 cloves of crushed garlic A little less than an inch piece of ginger, minced 1 tbsp of coriander/cilantro 1 tbsp of sesame oil 1 tbsp of Shaoxing rice wine 1 tbsp of soy sauce 3 tsp corn flour, mixed with 3 tbsp of water 1 tbsp of sesame oil Salt Vegetable oil • • • • • • •

• •

Start by soaking the noodles in warm water for around 10 minutes. Place a wok over high heat and add the sesame oil, cabbage, carrots, and beansprouts and stir fry for around a minute. Add in the crushed garlic and ginger and cook for a few more minutes, before adding the soy sauce, Shaoxing wine, spring onions and coriander/cilantro. Transfer everything from the pan into a bowl and leave it to cool slightly, draining off any excess moisture. Next, drain the soaked noodles and stir them into the vegetables. To get started making the spring rolls, place a layer of spring roll pastry on a clean work surface, with one of the corners facing you. Place around 1 tbsp of the vegetable mixture on the corner of the pastry and slowly diagonally roll the pastry up tightly around the filling. Once closer to the center of the pastry, tuck in the corners on either side, then brush a small amount of the corn flour mixture onto the remaining corner, finish rolling and press together to seal. Repeat this process with the rest of the mixture and pastry to form all spring rolls. Finish by filling a saucepan with oil and heat to around 180°C (around 350°F). Once hot enough, fry the spring rolls in batches for 2–3 minutes, until golden and crispy.

Steamed ChineseStyle Sea Bass This steamed whole seabass recipe is simple to make, and it’s a great one for sharing with friends and family. If there’s one fish dish you make, let it be this flavorful preparation. Serves 4 About 1-ounce fresh ginger, peeled and cut into matchsticks 1 whole large sea bass, gutted and cleaned 1 tbsp dark soy sauce 1 tbsp vegetable oil 1 tbsp light soy sauce 1 tsp palm sugar 1 spring onion, diced diagonally ½ small pack coriander ½ red chili, finely sliced diagonally • Heat the oven to 180°C (around 350°F). Place half the ginger inside the fish, before laying it on foil. Fold the sides of the foil up around the fish to create a bowl and add 1 tbsp water before sealing and cooking in the oven for 15-20 mins. • In a separate pan, heat the light and dark soy sauce, oil, palm sugar, and 1 tbsp of water until bubbling. • Once the oven timer is up, check the fish is flaky and fully cooked and place it over a large shallow bowl. • Top the fish with the spring onion, chili, coriander/ cilantro and ginger, before pouring over the sauce from the Pan. Serve and enjoy. m

Dine inside surrounded by rustic Texas décor or have a relaxing meal on the deck overlooking beautiful Lake Marble Falls. For a welcome sip, Save the World Brewing Company is your spot or you can also head to Wedding Oak Winery which opened its historic 1926 tasting room and 10,000 case winery in 2012 and only uses Texas grapes in the wines. Another option is Torr Na Lochs winery and tasting room in Burnet where a variety of reds, whites and roses await your attention. Visit Stargazing at Canyon of the Eagles is one of the best activities in Central Texas— minimal light pollution in the region guarantees splendid sights. Canyon of the Eagles’ cabins provide brilliant sunrise and sunset views

Over at Log Country Cove, 36 rental homes overlooking Lake Lyndon B. Johnson make for an ideal getaway for any visiting nature lover wanting to swim, fish, boat or walk the trails surrounding the property. Head out on a walking tour of downtown Marble Falls with a snack at Choccolatte’s, a quaint handmade chocolate, coffee, and gelato shop, known for its Pecan English Toffee. Their toffee is truly buttery with Texas pecans, covered with Callebaut Belgium Chocolate. Located on Main Street is the Marta Stafford Fine Art gallery, a warm inviting space in a former bank lobby

dating back to 1930. With numerous windows and high ceilings, natural light permeates the gallery creating an open and airy interior that allows local and national artists’ works to shine. As one of Texas’ river-formed caverns, Longhorn Cavern State Park is full of natural wonders such as Crystal City, an area of the cavern that is adorned with calcite crystals that were formed by standing pools of calcium-saturated water and more. After opening in December 2018, Spider Mountain is a breakthrough for mountain bike and adrenaline junkies. It is the first lift-accessed

bike park in North America to be open all year and currently boasts five downhill biking trails, with more scheduled to open. Situated on the east edge of the Llano Uplift, the geological heart of Texas, Inks Lake has some of the best views of pre-Cambrian (more than 600 million years old) geology in the state. All forms of life are abundant here, with the most common mammals being white-tailed deer, raccoon, squirrel and armadillo, along with the occasional sighting of fox, ringtail and coyote. Bird watching at Balcones Canyonlands National Wildlife Refuge, straddling the divide between the Colorado and Brazos watersheds, gives you access to any of 245 bird species for part or all of the year. Due to the refuge’s importance, it has been designated significant for world bird conservation. The American Bird Conservancy has also recognized Balcones Canyonlands National Wildlife Refuge as an IBA (Important Bird and Biodiversity Area) for its significant role in conserving the golden-cheeked warbler, the black-capped vireo, and their habitats. If you cannot already tell, the Highland Lakes area of Central Texas has much to offer. All you need to do is get there and see what they have in store for you. m

Angkor: The Lost Empire of Cambodia Exhibition at the California Science Center

The world premiere of ‘Angkor: The Lost Empire of Cambodia’ exhibition debuted at the California Science Center in February. Through 120 original artifacts (half on tour outside Cambodia for the first time) and hands-on exhibits, visitors use the lens of science to explore the ancient empire of Angkor. Once considered the most extensive metropolis in the world, Angkor houses over 100 temples, now mysteriously quiet and surrounded by the dense Cambodian forest. The exhibition is set to tour nationally and internationally at the culmination of its debut at the California Science Center.

‘Angkor: The Lost Empire of Cambodia’, developed by Museums Partner in collaboration with the California Science Center, the National Museum of Cambodia, and the Cambodian Ministry of Culture, uses science to reveal insights into the rise and fall of ancient Angkor as well as its enduring legacy. Visitors learn how the tools of archaeology, from decoding inscriptions to aerial surveying and laser scanning, have enriched our knowledge about the engineering and cultural marvels of an empire, the daily life of its people, and the environmental challenges that shaped its future. The exhibition is on display through September 5, 2022, along with a visually stunning 3D IMAX movie featuring an epic adventure where science, mystery and ancient civilization intersect. Audiences explore one of the archaeological wonders of the world as it reveals its full splendor and mystery through Angkor3D: The Lost Empire of Cambodia, a new IMAX movie. The Khmer kingdom lasted from the 9th to the 15th centuries and at its height dominated a large swathe of South-East Asia from Myanmar to the west to Vietnam in the east. Angkor, the capital, sprawled across an area the size of New York’s five boroughs, making it the most extensive urban complex of the preindustrial world. By the late 16th century, the once resplendent capital of the empire was being overrun by the surrounding forest. For 150 years, many experts have attempted to provide answers, and theories abound. Thirteen hundred carved inscriptions survive on temple doorjambs, but the people of Angkor left not a single word explaining their metropolis’ collapse.

Enjoy a meal and some outdoor entertainment at Queen Creek Olive Mill

cool desert nights provide the ideal growing conditions for the olive trees. After the tour, enjoy their Tuscan-inspired eatery featuring fresh gourmet sandwiches, paninis, soups, salads, gelato and espresso in the cafe indoors or in the olive grove itself. Agritopia is an urban farm designed to flourish in the urban setting where instead of a huge field of one crop, you find a patchwork of numerous specialty crops. Same-day harvest is sold at The Farm Stand. Barnone, located near here, is Arizona’s Craftsman Community. Inside a rustic Quonset hut built with metal from WWII planes that served the nearby Air Force base, the venue has been brought back to life as an innovative artisan collective on the urban agriculture campus. Tortilla Flat is an authentic remnant of an old west town, nestled amid the Tonto National Forest, in the Superstition Mountain Range. It started out as a stage stop in 1904 and neither fire nor flood has been able to remove this historic stop along the Historic Apache Trail. Real saddles serve as bar stools where you can enjoy a cold brew or sarsaparilla. The unique wallpaper is really dollar bills from visitors worldwide. Plan on having some Killer Chili, Big Burgers, Prickly Pear Ice Cream and more! Scenic Nature Cruise aboard the Dolly Steamboat is a short 90-minute expereince on Canyon Lake, the smallest of the Salt River Projects lakes. The manmade lake is less than an hour’s drive from Phoenix at an elevation of 1,660 feet and a popular spot for swimming and boating. The lake features more than 28 miles of cactus-dotted shoreline, wondrous

Goldfield Ghost Town used to be a busy bustling little town perched atop a small hill between the mighty Superstition Mountains to the east and the Goldfield Mountains to the west. The first gold-strike was made in 1892, and it took just a little under a year before the town came to life. After more than 115 years, travelers from all over the world still visit this gold mining town to enjoy the excitement and grandeur of Arizona’s Wild West. Activities include daily gunfights presented by the Goldfield Gunfighters, underground mine tours and the only narrowgauge railroad in operation in Arizona. You can enjoy a breathtaking view of the Superstition Mountains when you dine on the patio at the Mammoth Steakhouse and Saloon (located within Goldfield Ghost Town). Keep an eye out for the cowboy boots hanging from the wall and rustic western artifacts scattered throughout the diner. Live music, delicious entrees and friendly staff will bring you back in time to the wild west. In the city, explore the world’s music and cultures at the Musical Instrument Museum which takes you on a journey around the globe, deep into the heart of human creativity. It is the largest museum of its type that you can find and displays instruments and objects from every corner imaginable. Limited special exhibits are available through the year. The Greater One-Horned Rhino Returns to Manas National Park Twenty-five years ago, the population of greater one-horned rhinos in Manas National Park had been reduced to zero. Today, 54 rhinos roam the park and are successfully breeding in the wild. Following a period of civil unrest in the region when onehorned rhinos were poached to local extinction, two of the world’s leading conservation organizations and the Assam government launched a first-ofits-kind initiative in the early 2000s

to re-establish the population of wild rhinos in Manas National Park. For over 15 years, orphaned or injured rhino calves have been rescued and brought to the Center for Wildlife Rehabilitation and Conservation (CWRC) during the annual floods in Kaziranga National Park. The calves are given 24/7 care and rehabilitated until they are able to be translocated to Manas National Park and released back to the wild.

“The International Fund for Animal Welfare (IFAW) and the Wildlife Trust of India (WTI) have rescued, rehabilitated and released rhinos in Manas National Park for over 15 years. These rhinos and their offspring now make up nearly 50% of the rhinos currently thriving in the park. For over a decade, we have documented the birth of second and third generation calves from rhinos released by this project,” said Katie Moore, Deputy Vice President of Animal Welfare at IFAW. CWRC was founded by IFAW and WTI and is the only wildlife rehabilitation facility in India that has been part of key wildlife reintroduction programs. Since 2002, more than 7,000 wild animals have been rescued by the team at CWRC and its satellite units. The International Fund for Animal Welfare is a global nonprofit helping animal and people thrive together. These are experts and everyday people, working across seas, oceans and in more than 40 countries around the world. They rescue, rehabilitate and release animals, and restore and protect their natural habitats. The problems they’re up against are urgent and complicated. To solve them, they match fresh thinking with bold action. They partner with local communities, governments, nongovernmental organizations, and businesses. Together, they pioneer new and innovative ways to help all species flourish. Wildlife Trust of India is a leading Indian nature conservation organization committed to the service of nature. Its mission is to conserve wildlife and its habitat and to work for the welfare of individual wild animals, in partnership with communities and governments. WTI’s team of 150 dedicated professionals work toward achieving its vision of securing the natural heritage of India, in six priority landscapes, knit together by nine key strategies.

In addition to the rescue, rehabilitation, and release of greater one-horned rhinos, IFAW-WTI has worked to increase the area of protected land around Manas National Park. “The partnership between IFAW and WTI is proof that together we can do more. India’s Protected Area Network, which is comprised of national parks, wildlife sanctuaries, and conservation and community reserves, has expanded by more than 772 square kilometers since IFAW-WTI began campaigning for increased protections for the Greater Manas Landscape in Assam, India,” said Phillip Kuvawoga, Director for Landscape Conservation at IFAW. “The landscape is a key biodiversity hotspot and home to some of the world’s most unique wildlife such as golden langurs, Asian elephants, wild buffalo and greater one-horned rhinos—all listed on the IUCN Red List. Just last year, we achieved another great milestone with India’s government declaring a new protected area, Raimona National Park, as part of Greater Manas.” The two organizations also took action on a growing area of need in India—connected landscapes. As new human developments are constructed, there is a critical need for wildlife to move safely between protected landscapes. To address this concern, IFAW and WTI started the Right of Passage: National Elephant Corridor Project, which has identified 101 linear strips of land that will allow elephants and other wildlife to travel from one landscape to the next. The first six corridors are secured and the next six are underway. “IFAW is committed to creating a world where people and animals thrive. For the past 20 years and for the years to come, IFAW and WTI are working together to accomplish that goal in India. At every step of our process, the evolving needs of animals and people drive our partnership and our strategies,” said Moore. m

Northern Pacific Airway livery Reveal A new airline, Northern Pacific Airways, will soon be connecting the east and west with international service between the United States and Asia through Anchorage. As a new long-haul airline, NPA plans to offer flights between multiple cities including some in New York, Florida, California, Nevada and with direct flights to cities in Japan and Korea via

Anchorage. NPA’s 757s pop with bold colors and striking graphics and the airline’s modern livery design is inspired by the night sky, Northern Lights, ice, and snow.
