ES you are not hallucinating – this is a real copy of Broad Sheep it’s back in print again. All credit must go to Clare who has kept the faith all through the drought with regular online issues despite the lack of live gigs, theatre, films, exhibitions and shows. I bet you have been missing the gigs and shows but I expect what you have been missing most are my monthly words of wisdom to help guide you through the pratfalls of the modern world. So, stop your snivelling because I am back to answer the 2 most important questions of the time. 1. Which billionaire idiot should you choose for your first space flight – Bezos, Branson or Musk? 2.
What the F**K are Bitcoins.
So lets start with the easy one, space travel. Who you gonna trust to get you into the stratosphere and back home again (assuming you want to get home again). First up is wacky-baccy enthusiast Elon Musk. Admittedly he has successfully piloted his electric car company to a position where it is worth more than General Motors but, there again, said electric car, as I revealed a year ago when I had a ride in one, features built in whoopee cushions in each seat and a button you can press that makes it flash its lights and flap its gull wing doors to celebrate your birthday. The man loves a practical joke and I think the last thing you are looking for on the edge of the atmosphere at 3,000mph with ten tons of rocket fuel up your bum is practical jokes. Also his test flights have often ended with the rocket exploding on landing, so sorry Elon you are out. Next, our very own ‘playboy of the modern world’ Branson. Apart from carrying pretty girls around Richard also crossed the Pacific in a balloon and then made several unsuccessful attempts to balloon around the world. In 2019 he was stripped of his Virgin Trains franchise to run the West Coast mainline trains and with the airline in a certain amount of post-covid trouble Richard is putting all his trust in ferrying you lot on $250,000, 6 minutes weightless, suborbital flights to the edge of the atmosphere. These were meant to kick off with a splash of publicity in 2009 but due to …ahem… a few problems have yet to begin. No Richard I think not, next!
Now as far as possible I try not to buy stuff on Amazon not just because of the bad working conditions of its employees or its reluctance to pay taxes but because I figure Jeff (I’m the richest man in the world) has plenty enough cash already. However in the middle of my pre-Christmas alcohol free period I was desperate for some Big Drop non-alcoholic stout (the only non alcoholic beer that really tastes of something). I typed an order into Amazon and before you could say Google it was on my doorstep. Efficient is not the word. Does he brag about his space program? – No. Has he had lots of major exploding type disasters? – No, (well one in 2011). Is he prepared to go up in his space ship himself? – Yes, and take his brother with him? – Yes. Its no contest Jeff you win and perhaps you could donate a free trip to a lucky Broad Sheep competition winner! Next Bitcoins. You are going to have to pay attention for this one, so sit up straight at the back Williams and stop flicking ink pellets at Gloria. The key to understanding Bitcoins is to get over the fact that there is nothing really there for you to get hold of. No grubby notes to stick in your back pocket, no threatening letters from your bank manager, not even 8,133.53 metric tons of gold in the vaults of the Central Bank of the USA. What there is, is a very, very, very long piece of computer language. This long equation is known as a blockchain and is actually composed of blocks of verified transactions. Everytime you buy or sell bitcoins your transaction becomes part of a block in this long chain. Try imagining it as a large housing estate full of identical sized houses. When you make a transaction it’s a brick. A builder grabs your brick and a load of others and instantly uses it to build a new house but he won’t get paid for the house until he accurately calculates how many bricks there are in the whole housing estate. This ensures that nobody fiddles the system by trying to use the same brick twice or makes fake bricks. Once it’s all correct (it normally takes about 10mins) your payment goes through and the builder gets paid 6.35 brand new bitcoins i.e. about £180,000 (at todays rate). The builder is a bitcoin miner and it is the miners who generate new money and keep the whole system working properly, even though nobody is actually in control. However as the housing estate gets bigger the miners need bigger and bigger computers and more and more electricity to work out the ever increasing total of bricks in the whole estate. As the Pink Floyd mentioned ‘Hey! Teachers! Leave them kids alone! IA iPlayer I have recently been re-viewing the BBC’s excellent three-part history of Venice. Allowing for poor Francesco da Mosto’s tortured English pronunciation, the aerial photography of the Serenissima is utterly breath-taking. None more so than when the focus is on St Mark’s Square. St Mark’s – or, as it is known to Venetians, Piazza San Marco – must be the most perfectly proportioned civic square in the world. An open-air theatre, flanked by beautiful arched arcades, in which simply everything happens, from formal processions and masked celebrations, to kinetic sculpture exhibitions and light shows. It is the only civic square in the world where pigeons are encouraged. Around the perimeter – many slightly raised above the square’s paving to give customers a better view – are some of the world’s most famous café / restaurants, including the 300-year-old Caffé Florian, said to have been a popular haunt of Lord Byron (take your cheque book if you are planning to order anything more than a coffee). Even in the early hours just before dawn this huge trapezoidal space can be exhilarating, as you watch teams of well-rehearsed street cleaners sweeping the paving in balletic precision with their long-handled birch brooms. The perfection of St Mark’s came tumbling back to me the other day when I attempted to navigate my way across Hereford’s High Town, once a calm and pleasant pedestrianised public space after the City Council had grasped the nettle of banning through traffic. This was nearly a century after the enforced removal, said to have been authorised by the City Mayor, of the handsome late-16th century Old Town Hall. Ledbury, Leominster and Ross have managed to hang on to their smaller-scale versions, but Hereford’s was the most impressive: three stories high and gabled (with figurative pargetting added between the half-timbering at a later date), it covered an area of 260 sq m. Fourteen trade guilds operated from the top floor, there was a magistrates court on the first floor and the huge open-sided covered market at street level was ringed by a grid of 27 massive oak columns. Rumour has it that some of these timbers finished up in

the mayor’s garden. Pevsner described the demolition as “a wilful act of municipal vandalism”. Over the years High Town’s clutter has mounted exponentially, with profit the main ‘driver’. Coffee cabins and associated seating, fruit and veg traders, ethnic food take-aways, ice cream stands, antique dealers and plantsmen. Not to mention the overbearing charity chuggers. I feel rather sorry for High Town’s two long-standing ‘inhabitants’: the Salvation Army lady who sits in front of the Butter Market and the Indian girl selling Big Issues outside W H Smith. I seriously doubt that any un-sighted RNIB student, attempting an east-west traverse of High Town would ever make it unaided. Newest man-made clutter to arrive on the scene are 10 giant cylindrical steel planters with slatted hardwood seating around their perimeters. There is a further rash of them down Eign Gate. Heaven knows how big the lifting machines will need to be – or how much they’ll cost to hire – to move these items for three days to make way for the May Fair’s big rides and stalls at the beginning of August, the 900th time showmen will have converged on the city. Earlier this year Hereford Library Services mounted a stunning exhibition to celebrate what is Britain’s oldest street fair. O we’re unlocked, the cinemas will be open and we can once again luxuriate in the big screen, big sound and big tumbrils of popcorn and the collective social experience that we’ve had to forgo in favour of Netflix and Amazon Prime this past 16 months. Except that we can’t. I’m scribbling this the day after the government announced a delay of (perhaps) a month beyond June 21st when all of the above was supposed to happen, along with unfettered access to pubs, clubs, theatres et al so instead we, or rather the cinema industry, must limp along as it has done since mid-May. Regular readers of my film commentary, if such there be, must forgive me for once again mentioning my sister’s PictureHouse cinema chain, especially since she doesn’t have one in or indeed anywhere near the Marches. However she and her team programme a total of 60 venues and 300 screens right across the UK so I regularly consult her about the state of the cinema-going nation and since these started to re-open in a sociallydistanced way back in May, it’s not been a pretty picture (sic). Indeed on one of my blessedly regular trips to London in early June I saw three films in her company’s flagship site, Picturehouse Central in the West End and was mildly depressed by the experience. True, the weather was hot and sunny – hardly conducive to sitting indoors for early evening performances (my sister loves the rain and cold) – but the auditoria were far less than a quarter full in each case. One of these was Picturehouse’s biggest screen, a 600+ seater, which was showing one of the latest and best reviewed films, THE FATHER, starring Anthony Hopkins and Olivia Coleman. On the basis of watching a BAFTA screener (DVD) I myself reviewed this in my piece on the Borderlands Festival in our online issue back in April but wanted to see it as its director and crew intended and I wasn’t at all surprised that on a (very) big screen it was well worth the effort. Visually, the set designer and cinematographer’s skills enabled me to spot the subtle changes in time and psychological mood that abetted the disturbing, sad and even shocking narrative of mental decline which shifts seamlessly from the central character’s view of the world around him to the actuality he, his immediate family and ultimately his carers must deal with.

Unfortunately another sort of uneasy reality means that the only chance you have of seeing it is to visit one of the few mainstream multiplexes that exist in the Marches, e.g. an Odeon or a Cineworld, which we at Broad Sheep tend to shun because they don’t favour indie films or indeed, the magazine. At the time of writing very few of our preferred indie cinemas have re-opened because with their small auditoria the demands of social distancing and staffing levels means that it simply doesn’t make commercial sense to do so. And of the few that

have, the film distributors’ contractural terms mean that they can’t afford to show the latest releases, such as the two other titles I enjoyed in London, FRANKIE and MINARI. The latter of those I also reviewed via a BAFTAscreener back in April which, once again, certainly benefited from a big screen showing although this story of a conflicted Korean family eking out a tough living in rural Arkansas seemed 20-30 minutes too long second time around. FRANKIE, starring the ever-impressive (and gorgeous) Isabelle Huppert as well as Brendan Gleeson, Marisa Tomei and Greg Kinnear is an acting masterclass although this other story of an emotional disordered family holidaying in a visually dazzling Portugal could’ve been tightened up a bit. But coming back to the few indie cinemas that have had the bottle to re-open, it’s a case of reviving classics or more recent if worthy fare such as Edgar Wright’s admirably suspenseful 2017 heist movie, BABY DRIVER starring Ansel Elgort (DIVERGENT), John Hamm (T.V’s MAD MEN), a never better Kevin Spacey and some utterly stunning car chases. That’s showing at a venue new to me, The Loft in Hereford, along with other gems including PULP FICTION and A STAR IS BORN which need no further recommendation. Also in Hereford, the Courtyard is bravely showing a few recent releases, including AMMONITE – again reviewed by me in April – FIRST COW and MY NEW YORK YEAR. Both of these, along with FRANKIE, had their release dates delayed by over a year due to the pandemic, the former another fish-out-of-rural water drama by talented director Kelly Reichardt (NIGHT MOVES), the latter an Oscar-worthy performance by Sigourney Weaver as the reclusive J.D. Salinger’s hardnosed literary agent who hires an engagingly naïve assistant (Margaret Qualley – the best thing in 2019’s otherwise ho-hum SEBERG). See all or any of the aforementioned if you can, and most importantly of all, see them in a cinema. Mark Williams

T feels a great deal longer than fifteen months since the Woolly Organ last appeared in hard printed form, and longer still since Mr Pernickety had a platform from which to air his uncompromising culinary prejudices. During all that time, while nimbly evading the clutches of the Coronavirus and the Grim Reaper’s scythe, Mr P scarcely visited a public eating house, but made some strides in his own food production skills (soon, perhaps, to be offered to the public). His last review in the undistributed Broadsheep of April 2020 was of the Feathers Hotel in Ludlow, where he had dined with his old friend, the wrinkle-rocker. It was with some hesitation, in view of his deep contempt for the way the innards of that distinguished, ancient building have been so savagely abused by the current owners, that he had to concede that the quality of the food served there was unexpectedly high and distinctly enjoyable – well presented and probably as good as anywhere in the town. In the end, though, the excellence of the dinner was not enough to counteract the profound aesthetic shortcomings of the surroundings and its display of crimes against visual good taste. Coming out of this long period of isolation, Mr P and his Lovely Companion were reluctant to travel too far for their first post-lockdown restaurant visit and returned once again to Ludlow and a small eating house which, in the course of the lockdown, experienced its third change of ownership in recent years. The French Pantry first appeared as an offshoot of a small magasin d’alimentation which had been set up in the late noughties by Simon King, an absurdly talented musician and knowledgeable gastronome who felt he needed a day job. For much of that first period the chef wielding his skillet in a tiny, barely equipped kitchen was M. Olivier Bossut – a skilled and experienced creator of traditional, provincial French cuisine. In time M. Bossut was inveigled by a fellow Frenchman who owns the Dinham Hall Hotel to go and cook there. Mr P reviewed that establishment a few years ago, raising his thumb with regard to the food, though once again grumbling about the unsympathetic ambience of the place. Meanwhile the French Pantry had been sold to two men who revamped the place in such a way that Mr P was never tempted in. These owners disappeared unexpectedly towards end of 2019, when Olivier Bossut and his wife, Lynette, decided to take it on. This would normally have been been a happy concatenation of events, had it not been delayed for over a year by the ravages of Covid. The Bossuts (with their son helping front of house) set about re-Frenchifying the place with a light touch and in an entirely pleasing way – less quirky than the original, less flamboyant than the immediate predecessors (although retaining their bizarre lighting arrangements.) Mr P’s advice to the new owners would have been to change the name (which was never a plus, in Mr Ps’ view, and certainly not after the reputation became somewhat tarnished under the last incumbents) either to Olivier’s own name, or perhaps that of his home
town (whatever that is). Even with the restaurant (just 20 covers in normal conditions) operating at half capacity, there was a pleasing warm, foreign feel to the place (made more poignant by the pain of Brexit) with red gingham napery, and French music (from which the late Mlle Piaff’s lack of regret was mercifully absent). The LC doesn’t on the whole enjoy the robustness of French provincial cooking, finding it too rich for her delicate constitution and she had decided to eat fish (although she would have had steak/frites had they been available). She loved her starter, Gateau of Crab with a saffron beurre. Mr P always likes escargots, and thrust an enthusiastic prong into the shells of the Herefordshire-reared gastropods on offer, ruing only that M Bossut had gone too easy on the garlic for his taste. Meanwhile, the LC’s portion of crab gateau proved a little large for her, allowing Mr P to enjoy a delicious couple of mouthfuls. With their starters, they both drank a good Sauvignon blanc, Jardin du Sud from a well-chosen list of French regional wines. For a main course, the LC chose a fillet of sea bass with an unusual beetroot risotto and crustacean sauce. She enjoyed the bitter sweetness of the beetroot contrasting with the bass, and she was still smiling when she finished it while Mr P happily munched a subtle tasty chicken cooked on the bone in a tarragon sauce which only the French seem able to get right. These very pleasing main courses were followed by a shared Lemon and Lime posset – a pudding which the LC considers a tough test for a chef. She and Mr Pernickety once had a lemon posset in a Herefordshire pub that almost required a beetle and wedge to access it. M Bossut’s was sensational – light as air and a creamy delight. Mr P looks forward to eating there again, soon. Mr Pernickety

grass roots Washed away, depleted or degraded - the state of our soil!
O
VER the 20 years or so before COVID struck, I attended many talks, lectures and seminars on global heating and other environmental topics at two institutes in London. One was the Grantham Institute, at Imperial College, and the other was the Grantham Research Institute at the London School of Economics. Both are named after a financier, Jeremy Grantham, a wealthy philanthropist based mostly in the USA. I learned a lot from the academics, but the most arresting talks of all were given by Jeremy Grantham himself. He had made his fortune in a firm he co-founded in Massachusetts, advising wealthy people on how to get richer. Grantham grew up in Britain but has spent much of his adult life in the USA. He is reputed to have put about 98% of his personal wealth into supporting his environmental interests and has funded three university institutes in England. Around the turn of the century, he started to focus on the environmental risks facing not just rich investors, but every one of us in the world. This began when he and his family made a series of fact-finding trips to Latin America and Africa. From these journeys Grantham came back a changed and radicalised man. When I first saw Grantham speak, I expected sixty minutes on climate change. But what we got was a gripping Cook’s tour of about eight environmental threats to the planet. He expressed his frustration that many climate scientists seem to work in silos, where they know little about how changes in related fields may impact on their own areas of study. For me, the most arresting topic was that of soil loss in parts of the USA. He charted how, in the farming state of Iowa, the average depth of soil had, since 1850, fallen from 14 inches to less that 5 inches. In Grantham’s words the “safety margin” of soil depth had plunged from 11 inches to just 1 or 2 inches. He harkened back to the “dust bowl” disasters of the 1930s, when, across a swathe of states, from Montana to Texas, thousands of families saw the soil from their farms blow away in great dark clouds. A recent study suggests that the risk of more US dust bowl disasters is now double what it was in the 1930s. Grantham says a minority of US farmers have reacted to that threat by abandoning ploughing, which accelerates erosion, and going for “no till” agriculture. But he fears that many farmers will fail to react quickly enough and that by the time they wake up to the danger, most of their topsoil will be gone. It is tempting to see this threat to farming and to food supplies as an American phenomenon, with no relevance to Britain. But scientists at Sheffield University concluded in 2015 that loss and degradation of topsoil were going on worldwide, and at breakneck speed. Britain, they said, was no exception.

A team led by Professor Duncan Cameron found that almost a third of the world’s arable land had been eroded or polluted in the 40 years since 1975. They said the loss of soil from ploughed fields was occurring at a rate ten

to a hundred times faster than the natural process of soil formation. In England, you might hope that the DEFRA agency Natural England, set up in 2006, would be a bulwark against destructive farming methods. But some staff at Natural England have said it is being crippled by serious under-funding. The Prospect trade union has reported that steep cuts in its income have left Natural England weakened and “beyond crisis point”. The union says Natural England’s funding from government has been slashed by two thirds over a decade. A former staff member at Natural England, Rosie Wood, who left in 2015, has continued to monitor its problems. She says, “It’s dire! The government’s approach is – “Do more with less!”, year on year”. “The conservatives and the treasury seem to have taken the view that wildlife and the environment are obstacles to growth. As for Shropshire and Herefordshire, I don’t have exact figures, but crudely speaking, growing crops like potatoes or wheat on soils right up to the edge of rivers, streams, and drainage ditches where flooding and heavy rain is routine will guarantee you problems. Look at the satellite photos of the plume of topsoil coming out of the mouth of the Severn estuary - that’s all been washed off fields along the catchment from North Wales and all the way down.” A memorable declaration on the menace of soil erosion and degradation came four years ago from a man well known in public life. He said intensive farming in the UK could cause a crisis in soil fertility within 30-40 years. In his view, heavy use of machinery and chemical fertilisers, herbicides and pesticides were having a dangerous impact on soil. “Countries can withstand coups d’état, wars and conflict,” he said. “But no country can withstand the loss of its soil and fertility.” Who uttered those alarming words? None other than the former environment secretary, Michael Gove. He has since moved on from DEFRA, to be replaced by George Eustice. But what are George Eustice and fellow ministers doing to stop the damage and loss of soil in the fields, which Michael Gove highlighted? That, we have yet to learn. Julian O’Halloran
