Salmon jerky with caper, shallot and dill mayo
This is a lovely summer recipe with a beautiful taste and texture, perfect for enjoying with a crisp glass of white on the lawns.
We are lucky enough to be able to serve afternoon tea and dinner outside under the shade of the horse chestnuts and sycamores, which is wonderful now that the weather is heating up.
Afternoon tea runs throughout the year between 2 and 4.30pm, and dinner is served 5 – 6 (early evening menu) and 6 – 9.3pm (a la carte). Come in and see us! Call 01263512412 to book your table.
serves 2
ingredients • 550g of salmon fillet, skin-on, boneless • 100ml of soy sauce • 1 tbsp of lemon juice, freshly squeezed • 1 tbsp of maple syrup • 2 tsp freshly ground black pepper • 1 dash of tabasco • 2 tsp liquid smoke (I source ours from award winning butcher H.G Graves, also available online or from Tescos) • 100g of coarse sea salt • 4 tbsp mayonnaise • 1 jar of Lilliput capers • 2 tsp chopped dill • 1 banana shallot finely diced
Remove the pin bones and silver flesh from the fillet but leave the skin on. Wash thoroughly
then pat dry.
For the caper, shallot and dill mayo. Mix all ingredients in a small mixing bowl, folding until it is evenly mixed.
Place the fish in the freezer for 30 minutes before you begin, this makes it easier to slice. Once firm, cut into slices approximately 1cm in thickness.
Mix the soy sauce, lemon juice, maple syrup, freshly ground pepper, pepper sauce and the liquid smoke and whisk well.
Coat the salmon strips in the bowl of marinade, transfer to a sealable bag and allow to marinate for at least 12 hours in the fridge.
Pat dry with a clean kitchen towel. Position a clean wire rack over a baking tray, sprinkle the salmon pieces with coarse salt on both sides and let it 'dry' in the fridge for 2 hours.
Preheat the oven to 75°C. Brush away all the salt from the salmon pieces.
Cover the wire rack with parchment paper or a silicon mat and place over a clean baking sheet. Lay the salmon strips out spaced evenly on top.
Cook the salmon until it reaches 75°C. Lower the heat to 60°C, steadily cooking the fish for about 4 and a half hours in total, flipping halfway through. The final jerky should be crispy outside and chewy and sticky inside.

Priscilla entertains shoppers
Corner Street resident ‘Priscilla Dorothy’ gave a well-received singing performance at the High Street Co-Op in Cromer on May Day Bank Holiday Monday.
Priscilla, who sang three songs unaccompanied including ‘All Things Bright and Beautiful’ to delighted customers, has been singing since the age of 16 and has performed in various London shows and X Factor auditions.
Ovenclean will transform your oven and put the sparkle back into your kitchen!
During her musical career she also taught ballet and still really enjoys her singing.
●
It all started when...
... hosting a dinner party for friends and family, the conversation steered towards the food. After many kind words and compliments, they said, “We could eat your food every day”.
With our busy lifestyles and the frustration of ‘we never have time to cook each evening after a busy day with work’, the conversation continued. We want a meal that’s quick and convenient but doesn’t compromise on nutrition or taste? Light bulb moment! If on days like that, you could just open your freezer and discover a library of carefully-prepared meals waiting for you to heat up in a jiffy… No need to plan ahead!
We did our research and the results were that (however much of a foodie you are) sometimes you just don’t feel like cooking from scratch.
what we do… After further research and product development the business began - Norfolk Gourmet Kitchen. The company goal - create nutritious and tasty food! We set about creating and tweaking recipes to create wholesome, all-natural dishes that tasted just as delicious
when cooked from frozen. Why did we choose to fill people’s freezers, not their fridges? Because the freezer would immediately lock in the incredible flavours and nutritional goodness of each dish, naturally reducing food waste by keeping their food ‘fresh’ for up to six months.
Once we had nailed the recipes, we started delivering our freshly frozen meals directly to food-loving folk across Norfolk. Simply open your freezer for a library of carefully prepared meals waiting to be heated. Some of our favourites Shin of Beef Ragu with Pasta, Chicken & Spinach Curry with Brown Rice (GF) Roast Gammon, Crispy Roast Potatoes and Vegetables (GF) are a must try.
we’re friendly, easy to use & local… The meal selection includes both a Gluten free and vegan range. Our service is easy to use, simply place your order via our online store or call the sales team. We deliver weekly in your area (Norfolk).

OVERSTRAND GARDENING CLUB
On 7 May 55 members and guests thoroughly enjoyed a talk by Marian from Hedgehog Haven in North Walsham.
Not only did we hear about the wonderful work she does to rescue and return these marvellous little creatures to the wild, but how we gardeners can help them by leaving a rough area of longer grass or a corner with leaves and twigs for shelter and nesting.
Hedgehogs can easily become dehydrated which leads to blindness, so please put out a shallow plant pot saucer of water for them, as bird baths are often too deep. Hedgehogs need to be able to forage for food such as worms, snails and beetles etc. and often need to travel 2 miles each night! Today many gardens have gravel and paving instead of lawns and solid fences instead of hedges so they cannot move freely and sadly many are starving to death. They need to be at least 600g to hibernate and survive the winter. ‘Meat flavoured’ cat food wet or biscuits is the food of choice (no gravy or fish and never milk or bread it makes them very ill). They are now a critically endangered species and it is feared they may be extinct by 2025 without support.
With the exception of spring (May-July) when you may see a mother hedgehog scurrying about for food in the daytime, hedgehogs are nocturnal so “a hedgehog out in the day is NOT okay!” was the message.
Everyone was delighted to meet Holly and little Stan two of her patients who are on the mend but sadly Holly although well is now blind so unable to return to the wild. Both were on the best behaviour and stars of the show!
Next month (Tuesday 4 June) we welcome Sarah Hammond from English Peonies. Meetings held at the Parish Hall, The Londs, Overstrand at 2.30pm. Guests welcome £3 includes refreshments.

‘Wally the Elephant’ celebrated St. George’s Day with Scouts at Beeston Hall School
West Runton Scout Group played host to this year’s St George’s Day Celebration on behalf of North East Norfolk District Scouts, and by kind permission of the School Headmaster, Fred de Falbe the Celebration was held on the Beeston Hall School Sports Field and in a blaze of sunshine proved to be a memorable and enjoyable event for all.
Civic Dignitaries, parents, friends and supporters saw 500 Scout members aged from 6 years onwards - Beavers, Cubs, Scouts, Explorers, Adult Leaders and Supporters all assembled at Beeston Regis Holiday Park clifftop field. 3.
West Runton Group formed the District Colour Party this year and led the procession along the cliffs, through Laburnham Caravan Park to the Cromer Road and into the school, their flags displayed by a good breeze which gave maximum colour.
Twelve Scout Groups provided standards for each of their Sections, together with the
light on smaller charities that need more publicity.
The Celebration Service on the chosen theme of ‘Bones’ was led by District Scout Chaplain, The Rev’d Canon Paul Cubitt - Vicar of North 6. Walsham, Edingthorpe, Worstead and Westwick (Benefice) and Priest-inResidence at the Parish of Our Lady and St Joseph, Sheringham and Cromer, The Rev. Tim Bugby (Ordinariate of Our Lady of Walsingham).
The gathering was then treated to a very original presentation by West Runton Scout Group members about their village history which began with the Scouts ‘sailing’ by in a crabber (mounted on a trailer)! They then gave a 2. very animated potted history of the palaeontology behind, and discovery of, the fossilized skeleton of a steppe mammoth, found on the beach after a heavy storm in 1990 ... the Scouts named him ‘Wally’!
The audience sang and cheered as the performance unfolded. Scouts, Cubs and Beavers together with their Leaders all renewed their Scout Promises.
5.
District’s Explorer Scouts and the parade was admirably supported by Gt Yarmouth Sea Cadets, our guest Marching Band, led by S/Lt (SCC) Lydia Chilvers RNR OiC.
The Celebration Service was opened by the new High Sheriff of Norfolk, Clare, the Lady Agnew of Oulton - born in the windmill at Cley and brought up on the coast in east Norfolk, Lady Agnew said she was delighted to be able to return to the area and in particular to Beeston Hall School where her two children, Madeleine, 23, and Edwin, 19, had been pupils. Lady Agnew sees 1. her role for the year as supporting charities and their volunteers, and she will be particularly trying to shine good
Following the National Anthem and the presentation by District Commissioner Paul Henriksen of the St George Flag to 1st Hoveton & Wroxham Group as the exemplary Group of the year, the young people and their Leaders paraded back to their starting point.
11
West Runton Scout Group decided to support Beeston Hall School’s nominated Charity for 2019 and therefore the collection was this year in aid of East Anglian Children’s Hospices (EACH) for their NOOK Appeal.
The Headmaster, Fred de Falbe, said afterwards “It was lovely to be able to welcome so many to our school to share in what is an important community event. My thanks go to District Commissioner, Paul Henrisen and West Runton Group Scout Leader, Helen Cardani for organising this so brilliantly, and also two long-serving members of the Beeston Hall staff, Mike and Angie Cole – Mike has

Clapham & Collinge Solicitors tackle Dementia Awareness Q&As - Lin Whitehead dementia that once they have been diagnosed there are no longer able to make or change their legal documents, however this is incorrect.
Dementia currently affects 850,000 people in the uK and it is thought that 225,000 people will develop dementia this year. that’s one every three minutes.
At Clapham & Collinge we play our part in making Norfolk a more welcoming and helpful place for people living with dementia by holding regular dementia awareness sessions and training workshops to help raise awareness, understand what it’s like to live with dementia and help create a dementia friendly community.
With Dementia Action Week 2019 taking place in May, we have taken the time to answer some of the most frequently asked questions which arise during our training sessions.
Q. what is dementia? Dementia is the term which describes different brain disorders that trigger a loss of brain function, such as memory loss, confusion and problems with speech and understanding. There are numerous conditions which fall under the heading of ‘dementia’ and it is important to know the difference between them as each exhibit different symptoms so will be treated differently. We have highlighted the most common forms of dementia below. Q. Can someone still make legal documents if they have been diagnosed with dementia? It is often a concern for someone living with
As mentioned above, dementia and the severity of it can vary between each person, however provided a person has the mental capacity to make legal documents, they can do so despite having been diagnosed with dementia. It is a principle of the Mental Capacity Act 2005 that a person it not to be treated as unable to make a decision unless all practical steps have been taken to help them to do so.
The legal test for capacity to make a new Will or Lasting Powers of Attorney (LPAs) is decision specific and applied on a case by case basis. This means that whether an individual has capacity to make a new Will or Lasting Powers of Attorney (LPAs) will be very much dependant on their personal circumstances at the time of giving the instructions. As capacity can fluctuate with a condition like dementia, people are said to have good and bad days, so it may be that more than one meeting is needed to determine if the person has the requisite capacity, and it is not uncommon for a solicitor to ask the person’s GP to assist, should they have any concerns. Q. How can i get involved with Dementia action week 2019? Dementia Action Week is an initiative set up by the Alzheimer's Society
which aims to encourage people to take action to improve the lives of those affected by dementia. https://www.alzheimers.org.uk/get-involved/ dementia-action-week.
Q. How can i learn more about living with dementia or helping a loved one who is living with dementia? At Clapham & Collinge we hold regular dementia awareness sessions and training workshops to help raise awareness and help to create a dementia friendly community. We are part of the Sheringham Dementia Friendly Community and Norwich City Dementia Action Alliance.
All of our lawyers are ‘dementia friends’ and so are experienced, knowledgeable and approachable to advise you the documents you may need if you have been diagnosed with dementia, or can provide you with advice and guidance on steps which may need to be taken if you have been appointed as an attorney for someone living with dementia and are unsure on your role. Cromer Shoal Chalk Beds inspires classroom learning
based around the Cromer Shoal Chalk Beds MCZ for children in two classes at Mundesley Junior School. They visited Sheringham beach with National Trust Learning Officer, Rob Coleman, where they dug for lug worms and went rock pooling. Rob demonstrated a push net for catching shrimp, the children saw a live plaice as well as learning about local marine wildlife.
Children from a Norfolk primary school have been learning about marine protection on their doorstep after their teacher was inspired by a community workshop looking at the role of the Cromer Shoal Chalk Beds Marine Conservation Zone (MCZ) locally.
The workshop, held last Autumn in Trimingham, was run by Alice Tebb and Hilary Cox MBE from the Agents of Change project and was attended by Jenny Lumb, a year 3 and 4 teacher at Mundesley Junior School. The aim was to find ways that the community and local area can benefit from having the MCZ on its doorstep and how local people might support it.
Known to local fishermen as the ‘chalk bed’, Cromer Shoal is thought to be Europe’s most extensive chalk reef – it stretches for more than 30km along the coast. Divers from the MCS-led national volunteer dive project, Seasearch, have recorded more than 120 species of seaweed and other plants on the shoals and more than 350 species of fish and invertebrates. The area has been a Marine Conservation Zone since 2016.
Jenny Lumb, created a number of themed lessons
“It has been great to engage the children in marine environmental issues and help them realise that their actions can affect the sea near them as well as the whales and turtles they have seen in the media,” said Jenny. “So many of the children and their families - and us teachers! - were unaware that there was such a special Marine Conservation Zone on our doorstep before we started the project.”
Sheringham fisherman, Jim Lingwood and retired Cromer fisherman, William Cox MBE went into the school to introduce the children to local fishing methods and what it’s like to be a fisherman. Jim showed the children what fishing gear looked like and how it worked whilst William strung netting to a crab and lobster pot (called a parlour pot) and told the children stories of local fishing history. Fishing is an important part of local culture and history. It was also a great opportunity for the children to appreciate where food comes from and to support the local fishing industry.
Jim Lingwood got involved with the children in a question and answer session - “I’d ask them things like ‘what do you think I do?’ and ‘how do you think I go out to sea?’ They get really into it. One lad asked if I had ever caught a shark. I said I’d seen a whale but I’ve never caught a big shark! I
feel they came away understanding a little bit more about their local small-scale fishing industry.”
The children learned about how they could be ocean-friendly by going out on a beach clean with 2018 MCS Volunteer of the Year, Michelle ‘Shell’ Duddy, who lives in Mundesley and regularly runs four other beach cleans in Norfolk.
“It was a great opportunity to show the younger generation how important it is to keep our beaches clear of litter and fishing gear to protect marine life and keep our marine environment healthy,” said Shell. “They all enjoyed the day and collected almost 30 kg of rubbish of the beach.”
Hilary Cox from the Agents of Change project also went into Mundesley Junior School to explain to the children why Cromer Shoal Chalk Beds MCZ is such a positive thing for the area.
She said “This is a truly exciting project to enable schools to integrate with local issues and encourage everyone to learn more about what lies just beneath the waves on our shoreline.”.
As well as writing thank-you letters to all the experts, crucially, they children wrote letters to their parents using persuasive writing to encourage them to use less plastic. As part of their maths lesson, they had to survey their parents to ask them what they knew about the MCZ and discovered only 16% had heard of it!
The Agents of Change project is keen to hear from local teachers, educators and/ or parents interested in getting the Cromer Shoal Chalk Beds MCZ, local fishermen, fishing culture and the marine environment into local schools.

OVERSTRAND FUN DOG SHOW
All 13 classes were judged by North Norfolk District Councillor for the Poppyland Ward Angie Fitch-Tillett who was certainly kept busy with some of the classes having over 40 entries.
Angie said “I really enjoy these sorts of events, they are fun with a touch of excitement as every dog owner wants to win and ultimately receive the cup for Best in Show.
This year’s honours went to Jim Balcombe and his rescue dog Turner (pictured with judge Angie Fitch-Tillett).
The trophies for Best in Show and runner up were again kindly donated by Jeff Richmond, with the rosettes for all classes sponsored by Sea Marge Hotel and the souvenir programme sponsored by Overstrand Garden Centre.

Show organiser Mickey Sewell said “I am extremely grateful to all our sponsors and to all those from Overstrand Together who set up the event and most importantly of all to all the dog owners who took part and made it such a fun day. It was an important day for Guide Dogs who used the event to launch their newly formed North Norfolk Fundraising Group covering Sheringham, Cromer, Overstrand and inland to North Walsham.
Mandy Loveder Community Fundraising Development Officer for Guide Dogs said “It was great to be able to attend the Overstrand Dog Show and to meet many residents and visitors who were interested to hear about the work of Guide Dogs and our thanks go to the organisers for inviting the new fundraising group for their first outing. Volunteers have come forward to fill the roles of Coordinator, Treasurer and Merchandise Coordinator as well as fundraisers who will all work together to attend events, take on collections and be placing collection devices around the area in pubs, clubs, shops, wherever will be willing to help raise funds for this amazing charity.
She continued “we are looking for more volunteers to join our group as it gives us more chances to reach further to raise income to provide essential lifesaving services. Guide Dogs are working to give people
with sight loss the confidence and skills they need to live the life they choose. If you can volunteer your time to help Guide Dogs to raise the vital funds needed to help them in their mission to enable people with sight loss gain greater mobility and independence, please contact Mandy Loveder on 07468 711890 or e-mail mandy.loveder@guidedogs.org.uk
Since 1931, Guide Dogs’ iconic service has transformed the lives of thousands of people living with sight loss, allowing them to be independent. Every hour another person in the UK starts to lose their sight. Almost two million people in the UK are living with sight loss that has a significant impact on their daily lives. By 2050, there could be nearly four million.

Have you ever wondered about the origin of those goats which are seen every year munching grass on the cliff slope at Cromer, a little to the west of the pier?
On Tuesday 7 May we found out!
Mr Mark Frosdick, Animal Control Assistant with North Norfolk District Council, gave us a most interesting talk entitled ‘Goats on the Slope’. The project started in 2015 when the problem of dealing with overgrown vegetation on the slope threatened to be very expensive.
Mark suggested putting goats there to deal with the vegetation and was permitted to try the idea out. By 2017 the project was so successful (and economical compared with normal grass-cutting) that the area for the goats to feed on was tripled. The species used is a rare species, the Bagot goat. (The name derives from the Bagot family, to whom some of these goats were given by people returning from the Crusades.) The animals are hardy (there are also some Bagot goats in Cumbria) and they managed very well during the long snowy winter of 2018 – they are wintered further west along the coast and the costs of this are met by the sales of merchandise. There is also a breeding programme, and a number of billies are on loan to the Norfolk Wildlife Trust. The National Trust is also showing some interest! The aim is to make the project self-sustaining, and an increasing merchandising programme is enabling this; furthermore, in 2019 it is hoped to develop a website. There was a good time of questions and answers after the talk, and Mark was thanked by our chairman, Jack Broughton.

Cromer Marrams bowls Club News from the Club House ...
News from the Club House For the first home friendly of the season Buxton BC visited on a cold, damp afternoon. Conditions were not the best, but some good bowling and good company meant the afternoon was successful.
Cromer won the game with victories on two rinks, 28-6 and 18-8, and defeat on one rink, 12-13. Most successful rink was led by Chrissie L with Gay and Neil P.
We then made the short visit to Southrepps BC with the same result, winning on two rinks, 25-4 and 16-15, but defeat on one rink, 15-21. Most successful rink for Cromer involved Keith P, Andrew H and Gary Y. Thanks to Southrepps for their hospitality and slightly improved weather conditions!
The weather wasn’t any better for the first Federation league game at home to Cawston ‘B’! It was cool, damp and gloomy but both teams put up a competitive performance and the scores fluctuated throughout the evening.
Eventually Cromer came out on top with an 8-1 victory, winning on two rinks and drawing on the 3rd. Scores were 17-10, 15-14 and 16-16. Best rink was Jackie, John Br and Bob A. Team captain, Roger G, was relieved to
finally win a game after the ‘trauma’ of last season.
Someone up there knew the bowls season had begun because following the games played in inclement weather it got worse as the first game for the men at Fakenham was postponed due to the heavy rain! You don’t have to be mad to be a bowler, but it helps at this time of the year!
Fortunately the weather improved for the visit of Kings Lynn BC. The game was very competitive with Cromer winning on one rink, Kings Lynn on three rinks and two were drawn. Total score 100 - 109. Cromer’s best rink was Gay, Steve and James with a 19-12 victory.
The NANSA league team started the season with a game at home to Dilham and Smallburgh BC. In a closely fought match Cromer won on points 55-47 but only shared the points (4-4) due to winning on only one rink. Ann, David M and Jackie were top victors with a 25-9 win.
Home matches at Marrams green on the runton road in the next fortnight are • Club Rose Bowl Saturday 25 May 2pm • Southrepps BC (friendly) Saturday 1 June 2pm • Cambridge MB BC (friendly) Sunday 2 June 2pm
