The Origins of Coffee Part 2
arly coffee drinks in the coffee houses of London drew little resemblance to what we now consume, simply consisting of badly roasted coffee that was hand ground and mixed with hot putrid water. Coffee met modernity in 1884 when the first espresso machine was patented by Angelo Moriondo of Turin. The ridiculous title of this ground breaking machine was: ‘New steam machinery for the economic and instantaneous confection of the coffee beverage’.
We will come back to espresso in a moment, but we should look at how the majority of people still ‘make’ their coffee in an instant. In 1901 a Japanese chemist named Dr. Sartori Kato, developed the first successful method of creating a stable soluble coffee powder. The first instant coffee was sold to the public in 1909 and demand skyrocketed. During World War II instant coffee was supplied to American soldiers in their ration packs. During one year of World War II, the U.S. military bought more than one million cases of Nescafe, the entire annual output of Nestle’s U.S. plant. Let’s get back to espresso. Early machines simply forced steam through the coffee causing a burnt and bitter flavour. In 1938 Cremonesi developed a piston pump that forced hot (but not boiling) water through the coffee. The first machine was installed at Achille Gaggia’s coffee bar. Inspired by this equipment Gaggia started producing a commercial piston machines of his own refined design in 1946. This new model led
to the first crema appearing on espresso. Gaggia is also responsible for the first ‘modern’ cappuccino coffee. Cappuccino’s origins are in the coffee beverage Kapuziner from the Viennese coffee houses of the 1700s. It is described as ‘coffee with cream and sugar’ although it does not say exactly how it is constructed. The cappuccino gets its name from the colour of the hooded robes worn by monks and nuns of the capuchin order. This colour is quite distinctive and ‘capuchin’ was a common description for the colour red-brown in 17 th century Europe. In the 1950s the cappuccino was redefined, now made from espresso and heated milk (though far from the quality of the micro foam and stretched milk used today). A cappuccino was also the starting place for the most popular coffee drink on the planet, the latte! Lino Meiorin was the first Italian trained barista in the bay area of California and he made truly Italian cappuccinos. These were found by the locals as being too intense for their palate. So Meiorin made adjustments, making a cappuccino with larger portions of milk to lessen its impact on the taste buds. He called the drink a ‘caffe latte’, quite simply meaning coffee with milk. It has been estimated that a staggering 70 million cups of coffee are consumed in the UK every day. We do indeed owe a lot of our modern coffee culture to inspired Italian invention.

iving by the sea in one of Britain’s sunniest locations, we are all guilty of forgetting what we have on our doorstep. Our city is rich in history and enjoys a growing economy. Amongst this vibrant growth sits a business that has a long association with Old Portsmouth and its seafaring past. Nestled in Camber Docks, shadowed by many new architectural arrivals, Viviers Fish Merchants sells fresh fish 7 days a week and yet it is often overlooked in favour of the supermarket and pre-packaged convenience foods.

My expectations of the owner, Eric Vivier were fairly accurate, no sharp suit or polished shoes, but dressed in simple working attire. A busy man who has carefully built a very successful business. When we did sit down for a while, I asked Eric how the business started. “We began fishing locally, and in 1989, Two men appeared asking if we could supply them with locally caught crabs and lobsters. In time, we were sending 30 to 60 tons a week to San Sebastion in northern Spain. This was a very healthy order and was pretty much the foundation of the company”.

Eric was an apprentice in the dockyard when he left school but he decided to take a chance on fishing. All that he caught was prepared in his garage at home by his wife Marilyn, who sold the fish at the local markets. As his own catch and what he bought from other fishermen increased, he decided to come ashore and to rent the site which the business still occupies. Owned by Portsmouth City Council, the Viviers’ building was formerly a bonded Customs and Excise Warehouse. Eric’s son, Andrew, joined the business as soon as he left school, working firstly on the fishing boat and then at Viviers. His other son, Stuart joined after a career on the stage in London. Kerri, Eric’s daughter, started ‘Kerri’s Catch’, selling at Farmers markets all over the south coast, while Lorraine, (Andrew’s wife) takes care of all the administrative duties. Eric has recruited other staff including Rick. “Rick, who is of Chinese descent, handles all sales to the local Chinese community who have made Portsmouth their home,” said Eric.
Viviers now owns and operates a fleet of twelve fishing boats, fishing along the south coast. “Ten boats operate out of Old Portsmouth and 2 from Plymouth. About 80% of the catch finds its way to the local and London market place and we have an office at Billingsgate Fish Market”, said Eric. London has seen a boom in quality restaurants serving fish, and Viviers are able to help satisfy this demand, their regular catch includes: Bream, Cod, Dover Sole, Haddock, Herring, Huss, Clams, Cockles, Crab, Crayfish, Oysters, Lobster and more.
Anything that can’t be caught locally is sourced from other locations such as Scotland where salmon, mussels and razor clams are regularly purchased. Eric would like to see the Portsmouth population consume more seafood and fish. The signs are encouraging and he plans to invest in the Camber site and to open a retail outlet in the centre of town. The third generation of the family is ready to take up a role in the business, his grandson Murray, thirteen years old, has a strong desire to go to sea when he reaches age 16 - just like his grandfather. ast month I wrote about a collective shift towards healthier foods, and a return to more natural diets. The food we eat is digested and absorbed into our cells – we are literally built from what we consume. Nourishing food will help heal cells, support hormone activity and build strong immune systems, whereas mass produced food does little to fulfil the actual needs of our bodies. Eating the right food can help your body naturally flourish.

Spicy Mediterranean Sea Bass
Serves 4
Here’s a recipe from Charlotte at ZWILLING J.A. Henckels

Ingredients 4 X 100g fillets of sea bass 1 x stick of picante chorizo (fresh uncured) 200g cherry tomatoes Tin cooked chick peas 100g spinach 2 x red peppers 2 x red onions 4 x cloves of garlic 1 tbsp tomato paste 2 x sticks celery 300ml chicken stock 1 tsp smoked paprika 1 tsp paprika 100ml white wine 50g butter
Preparation
1 Roughly dice the chorizo and heat the pan with some vegetable oil on
a medium heat, add the chorizo and cook until nicely roasted and all the oils have come out.
2 Remove chorizo but leave the oil in the pan. Turn up heat and sweat off
onions, garlic, celery and then peppers, leaving 1 minute between each.
3 Add spices and cook for a minute. Add tomato paste, again cook out
for 1 minute. Deglaze with adding the wine. Add stock and simmer for 5-6 minutes. Add drained/rinsed chick peas and cook for 5 minutes. Within the final 5 minutes, heat a frying pan and add a little oil.
4 Skin side down, place and push the sea bass down into the pan (insures even cooking on skin side). Season the fish when in the pan. Cook almost entirely on the skin side.
5 To finish, add butter and a squeeze of lemon juice to the pan, flip the
fish over and pull pan off the heat, the residual heat will finish the cooking of the fish.

Finally throw in your halved cherry tomatoes and spinach into your ragout and cook for 2-3 minutes. Adjust seasoning and serve.

Katie picks her favourite vintage find in Southsea and shares its history
I
came across this very smart glass ashtray promoting Taylors Dairies at Browners Independent Trading Co. on Elm Grove, Southsea.
My search for information has taken me, literally, all over Southsea. Thanks to Stephen Pomeroy’s incredibly useful online database of historical directories and photos of Portsmouth, I discovered that, in 1914, Taylor & Sons took over a workshop in Kingston Cross from Hoad & Sons, who were the last practising wheelwrights (vehicle builders) in Portsmouth when they closed in 1986. The exact location of this workshop has been hard to track down. I was told three different locations by local residents, but the most likely seems to be the site of Atlantic House on Kingston Crescent. And there ended my online search. Determined to find out more, I beetled along to Portsmouth Central Library in Guildhall Square to check the Kelly’s Directories, an absolute mine of information for anyone researching Portsmouth’s past. If you haven’t come across these impressive red bound, gilt embossed tomes before, they were
a precursor to today’s Yellow Pages, a trade directory that listed all businesses and tradespeople in a particular city or town, as well as a general directory of postal addresses of local residents, including gentry and landowners. Success! The first mention of ‘Taylor & Sons Dairies’ appears in 1908 and they are listed until 1942 when they became part of Portsmouth Dairies Limited (19421968) after amalgamating with Streets, Hoar & Dumbrill Dairies. Kingston Cross was their chief depot, but they also had smaller depots at 46 Castle Road and 105 Haslemere Road as well as 230 Chichester Road and 135 Highland Road in Eastney. Kelly’s Directories gave an interesting insight into changes in the dairy industry. In the early 1900s, listings were entitled ‘Cowkeepers & Dairymen’ suggesting that there were more individuals who kept milking cows, but by 1918, this had changed to ‘Dairymen & Cowkeepers’. However a real sea change happened during the Second World War when the 56 listings under Dairymen in 1942 dwindled to just 25, four years later in 1946. 17

PORTSMOUTH MUSEUM free art exhibitions Tues-Sun: 10-5, Edward King: A Life in Art The young Van Gogh himself was inspired by Portsmouth painter Edward King. The Dutch artist saw one of King’s etchings in The London Illustrated Press and wrote how he admired the ‘striking, powerful virile drawing’. Now a large body of King’s works are to go on show for a year at Portsmouth City Museum – they have been recently conserved by curator Susan Ward and her team. King (1863-1951) is best known for painting Portsmouth after the blitz bomb damage in 1941. He shows scenes around the Guildhall, Commercial Road and Portsmouth Cathedral amid piles of broken red brick and rubble. His style is vigorous, full of troubled energy and raw detail.
He painted prolifically while a permanent patient at St James’ Hospital for mental health, where he spent the last 25 years of his life, suffering from depression. He was allowed out to paint in the day, and would use old boards and found materials as his canvas. In this show, there are many of King’s wartime works alongside more gentle scenes of Portsmouth before the war – houseboats at Milton and rural scenes of cabbages growing behind St James’ Hospital. There are 60 paintings, mostly oils, alongside archive material from Portsmouth City’s collections. Through recent conservation treatment, the museum discovered several of the paintings were double-sided and that King had used an impressionistic technique of leaving some of the canvas deliberately blank. he first thing John Cooke wants you to know is that this story is not about him. This seems fitting, considering that he’s the Chief Executive Officer of a company that was founded with the aim of doing something lovely for the people of Southsea.
an offer, to safeguard the grass courts. They wanted someone who knew about tennis and the logistics of a club to run things. He’s a tennis fan and appreciates the tradition of the courts. He knew that if you lose grass courts they never come back.”
Canoe Lake Leisure is privately funded by its Chairman, a local business person. He, John and a partner are behind the resurrection of Canoe Lake’s 12, Grade II listed tennis courts. But there’s more to their story. And although it’s not all about him, it does start with Mr Cooke. “Fourteen months ago, I was a tennis coach,” John tells me. He gestures out of the window of Greens Café, toward pristine artificial grass tennis courts with state-of-the-art floodlighting. “Now I run this whole project. I’m a caterer, a lease negotiator, a Chief Executive Officer…” He smiles, “I’ve got an Economics degree, but it’s been a steep learning curve.”
Far from just rescuing the Victorian courts from extinction, John and his team found themselves developing an ambitious programme to take the whole site into the twenty-first century. John explains, “Initially the plan was to run the grass courts. Then we looked at the pavilion and thought we could do something quite special with it. He is keen to point out that, “We’re happy to talk to anybody. It’s a priority for us to provide the community with great facilities and form partnerships with people who don’t have access to resources like this.”
John promises, “Our priority will always be the community.” He explains, “On Court 1 you could have people ranked very highly in the world knocking up, while on Court 2 you have Billy and his mate from down the road. And they could all go to the coffee bar afterwards and

As long as your hair is healthy, you can wear it long and grey. When choosing any hairstyle consider hair texture, personality and your lifestyle. If I've bombarded you with rules: women with long faces should never wear long hair! Got a round face?... Never go short... Bla bla bla. These are just guidelines. If you still want a haircut that doesn't abide by the ‘rules’ of your face shape, then by all means, get that haircut! How you feel about yourself always trumps what the beauty industry feels is flattering. The secret to looking gorgeous is your attitude and you can carry off any haircut you choose. The haircut you should really get, is the one that makes you feel like YOU.

A
fascination with property is in our DNA. Who can resist a cheeky look at Rightmove or On the Market from time to time to look at that house you’ve always dreamed of owning. Southsea and Portsmouth are endowed with grand and humble examples of Edwardian, Victorian and Georgian properties that hark back to the roots of our city, and who can help but be seduced into clicking onto the internal photos and checking out the floorplans in a way that our forefathers could never imagine? After some twenty years of working in the local housing market, its properties and architecture still fascinate me. Their former uses or configurations hark back to a time before fridges, microwaves, central heating or even electricity. To be an estate agent without a passion for property means you are just a salesman passing through. I’ve met plenty of those people in my industry. I’ve also witnessed several evolutions of the housing market from prices slumping to increasing, Black Thursday, 9/11, the Iraq war and other quiet times. But throughout these periods there are always deals to be done and people moving because they have to. Presently the amount of available property nationwide is between 30-40% less than two years

ago. This is having an impact in pushing up prices, and coupled with high local demand it’s a great time to sell! The reality is many people are focusing on reducing their mortgages or extending their current homes. There has never been a time when using an estate agent with local knowledge has been more important for anyone considering selling. There have been two examples recently when other agents relied on the internet to value houses, in one instance we achieved a £100,000 increase upon other valuations. Paying a couple of hundred pounds to a centrally based call centre may sound attractive but could cost thousands. No two days are the same in this job, from advising people how to maximise the value for their home to helping them sell property in adverse circumstances. Coupled with working and living locally I’m always bumping into clients around the town in the shopping centres, restaurants, seafront and on one memorable occasion with my ‘lifeboat crew hat on’, going aboard a sinking vessel which was being crewed by clients. I am so proud of Portsmouth and Southsea, proud of how it’s developing and looking forward to the challenges of the years ahead, serving the community in buying and selling homes, and by being part of the RNLI Lifeboat crew.

ot another superhero movie from the Marvel comic store? How many more can they bring to the screen without the audience flagging? Going by the amount of trailers for superhero/ hero/fantasy blockbusters, (you know the type, the ones that the in-house Dolby system make the fillings in your teeth fall out from the reverberations in the cinema), it seems to be loads - ie Superman versus Batman, Wonderwoman. This time Ryan Reynold plays ‘Deadpool’. An ex-special forces vet who’s skin becomes severly disfigured in an experiment to cure his cancer. He is a super fast talking, wisecracking, motor-mouth of a hero. He does not stop yakking - but he constantly breaks
the fourth wall and talks to the audience and as narrator he signposts and illustrates all of the generic tropes which these super-hero movies display. It has been said that the appearance of parody within a genre signals its impending demise - well, its true this time. But Deadpool is not parodic in the true Blazing Saddles model. The storyline takes itself too seriously for that. It is post-modern, ironic, playful, rude and slightly disrespectful of its type and constantly disrupts the suspension of disbelief. Yet it ends up ticking all the genre boxes and is massively popular in the States - and now here. So carry on superheroes! It seems you cannot do anything wrong. Deadpool 2 is being made already. To infinity... and beyond!

RED BULL MATADORS AERIAL DISPLAY TEAM WILL RETURN TO THRILL CROWDS AT LOUIS VUITTON AMERICA’S CUP WORLD SERIES PORTSMOUTH
T
he Louis Vuitton America’s Cup World Series Portsmouth is all about high adrenaline, fast paced action on the water, as the best sailors in the world compete on ‘flying’ catamarans that reach speeds of over 40mph. But off the water there will be even more action, with acrobatic air displays by the Red Bull Matadors set to delight the crowds in Portsmouth on Sunday, July 24, 2016. The Red Bull Matadors show features two state-of-the-art stunt planes flying through the skies, often just a few feet apart. The highly skilled pilots will be flying at speeds of up to 250mph in a series of loops, dives and spectacular smoke displays. They have flown and competed all over the world, and their show was a highlight of last year’s event in Portsmouth.
Two more aerial display teams are set to be announced for the Louis Vuitton America’s Cup World Series Portsmouth, which takes place from July 21-24, 2016, along with plenty of other onshore attractions. Extreme sports fans should also check out Southsea Skatepark, which will feature live demos during the event. Spectators can watch the racing and aerial displays
from a ticketed family friendly Race Village, which features live commentary, a main stage, ‘Team Zone’, special technology zone and other exhibitors. Seats are also booking fast in the Premier Grandstand, which was a sell-out for 2015, and dedicated fans can treat themselves to a ticket for the Sailors Lounge, with special guest speakers giving a real insight into all the action. This year the Southsea Common area outside of the Race Village will be unticketed & unrestricted, so families can bring a picnic and watch the Red Bull Matadors and the sailing action. Event organiser Leslie Greenhalgh of Team Origin commented, “We’re delighted to announce the first of our aerial display teams, and look forward to bringing more great acrobatic shows, as well as other new features, to Portsmouth this summer. The Louis Vuitton America’s Cup World Series is one of the world’s most prestigious sailing competitions, but it’s also a really family friendly weekend with something for everyone.
