A GALLERY OF FLAVOURS

n the beautiful glass pavilion at CourtX in Canoe Lake, just behind the rose garden, is a lovely sanctuary called The Gallery restaurant, the latest addition to CourtX’s site. Here you can sample handmade tapas and small plates, many from Spain, some from further afield. The restaurant is located upstairs, with floor to ceiling glass windows, showcasing sights of the area and sky views. A feature of the space is the acoustic ceiling system designed to provide acoustic comfort, so that even when the restaurant is busy, you can talk easily without raising your voice. The individual pieces form a structure reminiscent of waves, and aptly the material is made from recycled bottles.

They have now opened The Gallery restaurant, offering Mediterranean style, small sharing plates, many of which are cooked on a Japanese charcoal grill, using pressure cooked binchotan charcoal.

rought up in Sardinia, now living in Southsea and working as a banker in London, Stefano De Luca has created a recollection of life and food, in a newly published book, My Sardinian home cooking.

“In many ways the book is a tribute to my mother, Bonaria Melis as I enjoyed so many blissful hours with her, learning to cook, enjoying the aromas and flavours of the Sardinian-Mediterranean kitchen. And many of the dishes in the book are taken directly from my mother’s recipes, they are simple, healthy, and inexpensive to make,” said Stefano. SPRING GREENS Words: Daniel Nowland

W

e’re now approaching that euphoric time of year where you can turn the heating off, enjoy a cuppa in the sunshine and hopefully venture outdoors without a jacket. Certainly by the time this magazine comes out, I hope to be doing all three.

of olive oil, and a few pinches of sea salt crystals. Spend 4 or 5 minutes scrunching the kale in your hands, massaging the oil, lemon and salt into the leaves.

As we approach Easter, many of us also enjoy a change in our eating habits and start to use some of the produce which spring has to offer. Fresh leafy greens are some of my favourite things to eat, and I like to eat them at a level to compete with Popeye in terms of iron intake! Kale, watercress, spinach, rocket, and various lettuces all become available from the UK during the spring, and all of them are fabulous whether used in salads, soups, or pasta dishes. With many of these vegetables, the less you cook them, the more of their nutrients they will retain. I would love to share with you a few ideas for using these, and you’ll most likely find all of these on the counter at the deli over the coming weeks.

Finish with a sprinkling of crumbly white cheese such as feta, Wensleydale or Caerphilly, a sprinkle of pumpkin seeds, and a generous pinch of cracked black pepper.

WATERCRESS AND WALNUT PESTO

RUBBED LEMONY KALE

You’ll need:

Rinse off any grit or soil and strip the leaves from the stalk. Add to a large mixing bowl along with a squeeze of lemon juice, a glug

Bunch watercress (approx 80g), rinsed and chopped Juice of half a lemon 2 cloves garlic, peeled 80ml extra virgin olive oil 50g cheddar, grated 50g walnut pieces

Use green, purple, or black kale for this super quick healthy salad. It’s always better to buy the bunches of kale rather than the chopped and bagged type if you can.

Blitz all of the above together in a food processor until finely chopped. Season with sea salt and cracked black pepper and have a taste, adding more salt or more lemon juice until you have a tasty peppery pesto. Toss through freshly cooked pasta for a quick healthy dinner.

BACON SEARED ICEBERG CAESAR

This sounds strange — but it’s a game changer! A little heat helps create a fantastic flavour in the lettuce, and the core of it remains cool and crispy. Place 2 rashers of smoked streaky bacon per person in a large frying pan. Fry over a low heat for at least 10 minutes until the fat has rendered out and the bacon is golden. Remove the bacon from the pan and set aside and turn the heat to high. Discard the outer leaf and split an Iceberg lettuce into quarters, leaving the root intact. Fry the wedges on their cut sides in the bacon fat for just a minute on each side until lightly coloured. I tend to use one quarter per person. Remove to a plate and top with Caesar dressing, a grating of hard cheese such as parmesan, the crispy bacon, and a little cracked black pepper. I like to serve with some crusty bread and a glass of white wine. 13

THE OMEGA ART SCHOOL SUMMER TERM There’s still time to enrol on The Omega Art School summer term. With a mix of daytime and evening classes, from complete Beginners classes to the Improvers classes for people with more experience — there’s something for everyone. “This is our 4 term and we are delighted at how so many people are enjoying the classes and developing new-found skills. Most people tell us that they loved art when they were young but haven’t felt able to paint and draw as adults. And although it's possible to learn art at home, our classes give our students confidence, direction and skills they could never learn on their own”. th

Each class is like a workshop in itself, taught by professional artists, with demonstrations, background notes, feedback even homework. “It’s a really exciting programme and our students have been amazed at the progress they have made,” said Kevin Dean lead tutor at the art school. This term starting the week of 25th April — to the week of 4th July we are offering 3 new beginners

classes on Wednesdays — you can choose from a morning, afternoon or evening class. There are also limited spaces in our Improvers classes on Mondays and Thursdays. “Class sizes are small and we have tried to keep the costs as affordable as possible at £29.80 per session, which includes all materials, including sketchbooks for homework, plus the tutors are contactable if people need help outside of the class”. The festival acted as a release and reunion for people after a year of cancelled or postponed events and time away from family and friends.

SOUTHSEA EAR CLINIC NOW OFFERS FREE EAR WAX CHECKS THE SIMPLE SOLUTION

If you have been to the doctor recently to discuss any discomfort, or hearing loss, due to excessive ear wax, you may have been disappointed to discover that most doctors no longer offer routine ear syringing. “Even pre COVID, doctors were becoming increasingly reluctant to offer ear syringing or irrigation, in part due to it being not as safe as microsuction, but also there is no longer any NHS funding for ear wax issues, and GPs are not required to provide it as one of their core services,” explained Becky Guarracino of Southsea Ear Clinic. “In order to put people’s minds at rest, people can book a short, free, ear wax examination along with a general check up of the ear canal. Often the issue is simply blocked ears, but occasionally the issue is not wax, in which case I can advise the best course of action or refer the patient to their GP. I also have a video otoscope that not only allows patients to see inside their own ears (if they want to), but it also allows me to capture images to send to their GP for further advice,” said Becky, who has a degree in Audiology from Southampton University. Becky has also worked for the NHS for many years, before setting up her own practice at The Remedi Clinic in Marmion Road – opposite Victoriana. “Microsuction has transformed the process of wax removal. It’s a very gentle process, especially compared to the previous method of flushing the ear with water, which carries a greater risk of damaging the ear canal or ear drum. Plus, the use of a proper ENT (ears, nose, throat) binocular microscope gives the best view of the ear. At Southsea Ear Clinic our equipment is just the same as what you’d find in the ENT department of a hospital. To make the treatment as comfortable as possible, we ask that patients use olive oil (such as Earol) in their ears three days before their appointment at the clinic. However, if there is a reason why somebody does not want to use oil beforehand, this can be discussed,” said Becky. “We are constantly looking at ways of making the

service more available to more people. Currently, I’m at the clinic for 3 days a week, all day Monday and at different times on Wednesday and Saturday, but I’m also making home visits on the other days of the week, which is proving popular with people who are house bound, or who would simply prefer to be treated in the comfort of their own home”. So should people go to their doctors if they suspect ear wax is causing problems with hearing or they are in pain? “Yes, that’s still an option, but the doctor may not be able to offer a quick solution. You will probably be advised to use some form of ear drops for several weeks and if that did not solve the issue and you were experiencing ongoing issues with hearing loss or pain, you might need a referral to the hospital for microsuction, which may take several months before you are seen. Or you might simply come to Southsea Ear Clinic and get the problem resolved straight away,” said Becky. THE WATERSPORTS HUB A place to support, connect & inspire our community to get out safely on the water

H

ave you ever walked along the beach and watched people standing and paddling gracefully, or not so gracefully, off shore — on long pointy boards? Chances are they are paddleboarding, the fastest growing watersport in the world. And as with all watersports, no matter what your experience, and no matter how calm the tides might be, it’s always important to know the risks of stand up paddleboarding (or SUP for short). Fortunately, Southsea has it’s very own, newly formed, Watersports Hub, founded by Katy Sexton, Sam Light, and Claudia Albrecht of Island Feather. The Hub offers a complete service, in and around Southsea, from beginners lessons to advanced tuition in SUP, Kite Surfing, Open Water Swimming, and Water Safety.

HERE’S A LIST OF THINGS YOU SHOULD ALWAYS THINK ABOUT WHEN YOU’RE GOING OUT ON YOUR PADDLE BOARD.

● If you can, always go with a friend. It’s more fun, and they can help you if you get into difficulty. ● If you are going out alone, always tell someone where you’re going and when you’ll be back. Don’t leave the house without a mobile phone or communication device. ● Bringing your phone to take some photos? Make sure you keep it in a waterproof pouch. That way it won’t get wet, and you can use it to call for help in an emergency too. ● Check the weather forecast and tide times before you set out. If the water is too choppy, you might find it difficult, especially if you are a beginner. And be aware, the conditions can change quickly. ● Avoid offshore winds. They will quickly blow your paddleboard far out to sea, which can make it extremely tiring and difficult to paddle back to shore. ● You should wear a suitable personal flotation device. This can be a buoyancy aid or a lifejacket. Choose one that still allows you plenty of movement so you can paddle freely. Not only will it keep you afloat, but it will also help give you time to recover should you fall in – and chances are you will!

● Wear suitable clothing for the time of year. In the winter, you will want to use a wet or dry suit. In the summer, you might be able to get away with a swim suit. But if you are going to be in the water for a long time, you might want to upgrade to something that keeps you warm. ● You should always use a paddleboard with a leash. There’s nothing more frustrating than having to swim after your paddleboard if you fall off. The leash will also help you stay connected to your board if you get into trouble and help you float. ● If you are launching on a lifeguarded beach, make sure you launch and recover between the black and white chequered flags. There should be less swimmers in this area, giving you more room to manoeuvre. Consider other water users by learning the rights of way in the surf. This can save you and others from getting injured. ● Get the appropriate level of training. You might be tempted to just buy a board and head out. Having a few training sessions can teach you the right technique, so it’s more stand-up and less fall-in paddleboarding! uring storm Eunice a client travelled

waves before trying to open the front door. It was actually quite an exciting occasion, but also indicative of how there

warnings to view a two-bed flat. The lack of property on the market is causing a major problem to the housing market, with incomplete chains now effectively throttling sales. And speaking to other agents around the country, this is very much a national issue. Many people who have sold their properties are now having to ask their purchasers to be patient whilst they try and find their next home, often leaving buyers waiting many months for things to fall into place. Going into rented 32

accommodation for some clients, in order to break the chain, has been an expensive, but sensible option, allowing them to make an attractive offer, without being part of an often complicated housing chain. Unless homeowners are willing to go into rented accommodation, the market is really stuck in a broken domino effect. And the more people that say they can’t find anything to buy, the less likely other people are to put their houses on the market. It’s difficult to see what might need to happen to break the deadlock. One recent property ended up with over six different good offers on the table and we worked hard with the owner to ensure they got the best price from the best buyer, especially as the highest bid doesn’t always present the best buyer for the homeowner. NO ACT IS TOO SMALL Laura Allen

D

id you know that here in Portsmouth, we can’t put Tetra Pak cartons in with our normal recycling? I didn’t realise until a couple of years ago, and judging by the oat milk and orange juice cartons in my flat’s communal recycling, it’s not common knowledge. In other towns and cities across the country, it’s perfectly okay to pop Tetra in with your regular cardboard and plastic recycling, but frustratingly, not here. We’re not alone though — only 26% of Tetra is recycled around the world. That being said, we’re lucky enough to have one of the measly four carton recycling stations in the whole of Portsmouth in West Southsea. It’s in the Victoria Avenue car park, opposite the Holiday Inn, and it’s also okay to recycle your coffee cups there too. I save my Tetra Pak containers now, and do a mass Tetra drop off every couple of weeks. Recycling does, of course, help prevent more plastics and other nasties from polluting the planet, but if you’d like to help even further,

Recycling Tetra Paks and litter picking along the shoreline may feel like small acts in the grand scheme of saving the planet, but we shouldn’t underestimate t h e i r p o w e r. I n Southsea, we’re so well positioned to make an impact — we don’t even need to jump into a gas guzzling car to enjoy brilliant coffee spots, restaurants, pubs, and shops, as there’s so many within walking distance. Speaking of shops, Southsea boasts a vibrant array of second hand/vintage/pre-loved stores. Buying second hand clothes and furniture helps extend the life of individual items and prevents more flooding of our landfill sites. It also contributes towards decreasing demand on suppliers, which in turn reduces planet damaging bi-products that occur during production processes. My favourite pre-loved clothing spot is the


endearingly quirky and colourful, with racks of quality, well-cared for, vintage clothes. Whilst I’m there, I also like to walk a minute around the corner to Palmerston Road and pop into Sue Ryder’s Vintage and Retro Boutique. There’s plenty of bric-a-brac to be found there, but it’s their vintage clothing section that draws me back time and time again. It’s hard, whilst making these small lifestyle changes, not to pat ourselves on the back. ‘I take my reusable bag with me wherever I go and my dining table is made from upcycled wood — I’m really doing my bit!’ In reality though, I think we all feel the weight of the responsibility to fix the planet upon our shoulders, and it’s overwhelming. We feel relief from that responsibility whenever we complete an act of sustainability and say ‘phew, I can rest for a moment.’ That’s how I experience it, anyway, and I’ll continue to look for new ways to make my life more planet friendly in the small ways that I can, right now, whilst perfectly positioned in Southsea.

12th April 2022 HOWARD SMITH Rupert The Anthropomorphic Bear Rupert’s centenary was in 2020 and this lecture is a fascinating back-story of how and why Rupert was created. It explores the folklore and dark influences on his initial adventures and looks at how artists Mary Tourtel and Alfred Bestall depicted him through the years. Howard was an all-round graphic designer and an art stakeholder. He has lectured to graduates on creating print and to post graduates at universities. One of his earliest clients was Royal Mail Educational and GPO films. In 1998 he co-authored with Brian Stewart and designed the Rupert Bear Dossier for Hawk Books. 10th May 2022 SUE JACKSON Huguenot silk weavers of Spitalfields - From Riches to Rags

This lecture looks at the lives of the Protestant Huguenots who escaped from persecution in Catholic France in the seventeenth century. We will see how they lived and worked and how fortunes were made and lost. Originally in Art and Design publishing Sue now lectures for the National Trust, U3A and the City Literary Institute. She is a Blue Badge Guide.

This lecture tells the story of how native artists, composers and writers broke away from the court in the 19th century in order to forge a cultural identity that was truly Russian. Rosamund Bartlett is a writer and scholar who is an expert on Russian cultural history. She is the author and editor of several books including biographies of Chekhov and Tolstoy. 12th July 2022 MARIE CONTE- HOLM Japanese Art and the West - From Nambam to Japanoiserie From early encounters through trade and Christian missions to the re-opening of Japan to the west in the mid-nineteenth century; this talk will focus on artistic interaction from 16th century depictions of the Portuguese presence in Japan to the influence of Japanese woodblock prints on the Impressionists and post-Impressionists. Marie was Director-General of the Daiwq Anglo-Japanese Foundation from 1999-2011 and has held senior academic positions at various UK universities. 11th October 2022 CLIVE STEWART LOCKHART- George Chinnery - The

greatest artist of British India and the Far East Horace Walpole said in 1783 ‘No man ever went to the East Indies with good intentions’ and George Chinnery was certainly that man. Running away from debt and his wife, he settled in India for 23 years.

Clive has spent a number of years in Sothebys, before joining Dreweatts, a major regional firm of auctioneers. In 2012 he joined Woolley and Wallis as Managing Director. He has been a member of the BBC Antiques Roadshow team for over two decades. 8th November 2022 CHRISTOPHER BRADLEY Arabia Felix - Secret Treasure Chest of Yemen and Oman South Arabia is one of the World’s oldest inhabited regions, with unique tribal, trading and religious history. The talk is illustrated by traditional art, architecture & decoration. 13th December 2022 CAROLINE WALKER - Discovering MacDonald Gill: architect, artist & mapmaker. Best known for his eye-catching, s o m e t i m e s humorous pictorial maps ‘Max’ Gill worked with many eminent architects including Edwin Lutyens, creating painted maps for Arts & Craft houses including Lindisfarne Castle, magnificent murals for churches, and Cunard liners. An enduring legacy is his alphabet for the Imperial War Graves Commission used on all British military headstones since the First World War. Caroline is the grand-daughter of Evan Gill, brother of MacDonald and Eric Gill. She is currently writing the artist’s biography.
