Salina Country Club rang in the New Year with style! Thanks to all of you who made it out to celebrate with us. We are looking forward to some great things in February. The weather is starting to cooperate and so far the golf course has wintered well. We’re starting to see more and more players out on the green. We’re very excited about the upcoming changes to the #4 tee and the Practice Facility. In an effort to improve the playing conditions, the #4 tee will be widened and leveled. Similarly, the Practice Facility tee box will also be leveled. Both of these changes will allow Chris and his crew to change up the teeing ground and provide you a much better experience. Weather permitting we will begin moving dirt in early February. In the clubhouse, February will be full of opportunities to make your month special. We start with First Sunday Brunch on February 5th; followed by our popular Omelet Bar the next three Sundays. We have two opportunities for you and your special someone to come out and celebrate Valentine’s Day with us. We will have a special menu on February 14th, and for those unable to get out during the week we will also prepare a Valentine’s Prix Fixe on Saturday, February 11th. In addition, Chef’s Weekend Prix Fixe menus will be available the last two weekends of the month and we will host two more Prime Rib Nights for your enjoyment. We are looking forward to another great month at the Club. I hope you’re able to make it out for some of the special events we have planned. Thank you all for being members of Salina Country Club. Randy’s Corner There is a lot of excitement and great reviews with the new 2017 Callaway and Titleist driver models! We have demos available for you to test drive or give us a call to set up a fitting. A properly fitted driver can make a big difference in both distance and accuracy. Our “Winter Clearance Sale” continues this month so be sure to take advantage of great bargains on clothing brands including Nike, Foot Joy, Under Armour and more! Cart packages will renew on April 1st. If you are currently on a cart package and do not want to continue please let us know prior to that date, otherwise your package will automatically renew for the year. Cart package prices will remain the same for 2017; $120 per month for family, $100 per month for individual, for 12 months. This year’s golf calendar will include new fun events for golfers of all levels. Be sure to keep up with the SCC Golf Weekly emails for details. Complete 2017 Golf Calendars will be available in the Pro Shop and on the SCC website by March 1st, but if you need to know any dates or information before then just give us a call. There will also be more learning and fun opportunities for SCC junior golfers than ever before! The 2017 program will include: Spring After school sessions, Junior Camps, Wednesday morning sessions in the summer, Randy’s Tournament Prep class, and Fall After school sessions. Call or visit the Pro Shop for more details and dates.

Men’s League and Women’s League sign up forms will be available in the Pro Shop beginning March 1st. If you are not committed to a team for 2017, please let us know. The SCC Ladies Golf Association would like invite all lady members for fun weekly golfing events and activities planned throughout the year. There are morning and evening groups, groups that keep score and groups that don't, groups that have tournaments and ones that just play for fun. No matter which kind of golf you are looking for, the Ladies Golf Association wants to welcome you. SCC is proud to feature Sous Chef Mike Styer on the front cover of the February 2017 Newsletter in honor of his 5 year anniversary with Troon! Mike was introduced to the culinary arts like most people, through Emeril on Food Network. His appetite for great tasting food and distaste for his mother’s cooking inspired him to practice at home. “My Mom wasn’t a good cook but she made great red velvet cake.” His first break into the Food and Beverage industry was at Nakorn Thai and Sushi in Hollywood Beach, Florida. Working his way up from a Dishwasher to a Prep Cook and Deliverer he developed a passion for Asian fusion and fresh seafood. To move up in the ranks Mike transferred to Pangea Bistro in Central Florida where he honed his skills under Ryan Vargas and helped his restaurant team win the Boca Raton Magazine 2011 Best Restaurant of the Year Award. After two and a half years Mike moved with Vargas to Ballenisles in Palm Beach to begin his Troon journey. After three years of hands on hospitality experience, Mike was accepted into the Florida Atlantic University Culinary Arts program. Little did he know his 3 week assignment at SCC with Chef Eric Shelton would change the course of his career, “I had a gut feeling this was where I was supposed to go.” Though it meant leaving Florida behind, Mike has made Salina his home and has contributed so much to the SCC family. At home Mike stays true to his roots and enjoys making beans and rice, salmon poke, and vegetarian fare for his girlfriend Mia Kirchman.

SCC is exited to highlight the newest member of the Culinary Team, Matt Oliver! Matt found his passion and discipline for cooking under the tutelage of his father. At 6 years old he was perfecting omelets and French toast for his two older brothers; skills that would help him take on his first Food Industry position as Line Cook at the Original Pancake House in Palm Beach Florida at 17. His drive landed him acceptance to Lincoln Culinary Institute in West Palm Beach, where he graduated in 2010. Shortly after school Matt’s path converged with Mike Styer’s story at Pangea Bistro. A year later, family ties and business pulled him away from Florida and planted him in New Orleans to help run Rouxd Food Truck. While living in Louisiana Matt was consumed by Cajun and Creole cuisine and flavors. A lucrative position with the Four Seasons brought him back to Palm Beach at Atlantic Bar & Grill. He stayed there for three years until he got a phone call from his old colleague and friend, Mike Styer. “I wanted career advancement and management experience and SCC offered me those opportunities.” Though new to the team, Matt has already taken on many projects with enthusiasm and finesse as the Chef de Cusine. Matt’s favorite recipe is his Dad’s homemade gumbo. “We eat it together as a family every Thanksgiving.” Hopefully he will treat us to his special recipe in the future!

I can’t believe we are already a month into 2017! As you may know December- February is engagement season and the Sales Department has been busy keeping up with demand. We had a very successful run at the Salina Bicentennial Center Bridal Show where we promoted Salina Country Club for Wedding Receptions, Outdoor Ceremonies (NEW), Rehearsal Dinners, Bridal Showers and of course year round membership. We look forward to also having a booth at the Salina Central Mall Bridal Fair on February 4th. If you know a lucky Bride or Groom to be we encourage them to stop by and say hello! We have lots of special menus, events, and specials to look forward to in the month of February. For all you kids in love we will be celebrating Valentine’s Day on both February 11th and 14th. Also for those of you looking to really pamper your significant other this holiday be sure to check out our new Hot Stone Message Therapy Service! I am personally looking forward to Chef’s Special Mardi Gras Prix Fixe. For anyone who loves the jazzy scene of New Orleans and cuisine with a kick, this is the menu for you. We will be putting the roux in “Fat Tuesday” this year. With spring just around the corner we are already starting to work on our Spring and Summer Member Event line up. We are looking to add some new dining events specifically to welcome new and perspective members into the club. If you have ideas please feel free to let me know! We also have two new members to introduce to Salina Country Club, Todd and Lisa Gilmore. Please feel free to introduce yourself and welcome them! What a month it’s been! My first January in Salina has let me experience snow, freezing rain and sunny 50 degree days all within a couple weeks. As I type this letter it feels like spring! We have had a busy month in the Grill Room and Johnny’s thanks to Chef’s special value nights and Prix-Fixe menus that everyone enjoyed. This month we are proud to offer Prime Rib on two separate nights as well as a value night. Please be sure to check the SCC calendar to find out when we will offer these club favorites. Valentine’s Day is also right around the corner! Chef will be offering a fantastic Prix Fixe menu that includes two glasses of prosecco and single rose for each couple. Gentlemen don’t forget to make your reservations early!

Please note that on February 5th we will be closing the Food and Beverage Department after 2:00 pm. We are hosting our annual Employee Appreciation Day and look forward to having the staff and their families here to enjoy some good food, games, and great company. They have all done an outstanding job this year and it’s our pleasure to host this event for them. Good friends, Good food, Great times! Steven

February might be the shortest month of the year, but it will be an exciting month on the golf course. The construction on #4 tee and the Driving Range tee is set to begin. Prior to the start of construction we plan to remove the rock walls so the project can finish in a timely manner. The sprinklers have already been removed on #4 so we can reuse them on the course. The construction is scheduled to start in the middle of the month, weather permitting. In the meantime we have been removing some of the ornamental grasses on the course. This should provide you better sight lines on the course, less time looking for your golf balls, and improved pace of play. These grasses were originally put in place to deter golf carts from driving in these areas. As long as everyone stays on the path until they reach the green stake and returns to the path at the red stake, there will be no negative impact in removing these grasses. This will give the course a “clean” look and highlight the work we did last winter to trim the trees up off the ground. We are also working to improve drainage on the cart paths and prevent water from pooling up after each rain. We have added drainage to the #8 tee area and plan to add one to the circle parking during the Driving Range construction. Although these projects might not be exciting to some, these small details are what set our course apart. The work we are doing now will benefit the course this year and in the future. Hello Everyone! Although the tempo of business has slowed down since the holidays we have been picking up pace with our weekly specials for you at the club. Thank you to everyone who came out for our Down Home Cooking Series in January. For February we will be bring back our Prime Rib Nights on the 16th and 23rd and Pasta Night on the 21st. The Prix Fixe menu is also back in full swing and was well received last month.

We will also offer two specialty holiday Prix Fixe Menus for February. Join us for Valentine’s Day and sample a three course meal designed to be savored and shared. Then later in the month celebrate Mardi Gras with us on February 28th. We will prepare a special Cajun inspired menu with your New Orleans favorites. With each Prix Fixe we focus on sourcing as many local ingredients as possible. We have partnered with Prairie Land Market and built relationships with the farmers that sell to the market. With that being said, if there is something you enjoyed on our menu those items can be found at the market. We are currently working with Clay Center Locker for beef, C&C farms out of Scandia KS, Saline County Produce and Svaty Produce. Jeff Cooper will also be added to the lineup in the spring. He will provide custom grown greens, garlic, and chicken that will be ushered into the spring menu rollout the second week of March. I encourage you all to support the community and sustainability of Salina and stay connected with the Prairie Land Market. Following the spring menu, our next project will be to launch a retail cabinet here at the club. We will offer pickled vegetables, jams, spice blends and a selection of Chef Tim’s desserts for pre order pick up. So keep an eye out! I look forward to serving you. Chef E
