President’s message
A
pril has arrived! The cooler weather is finally here and Sambar Season is upon us! We’ve got some great hunts lined up for 2016. The April 23 Branch Hunt will be at a location we haven’t hunted for a while, and the May 28 Branch Hunt is our major hunt for the year, with some members choosing to add a couple of days either side of the official May 28-29 to make the most of the drive (see back pages). It would be great to see as many of you as possible there for these two Branch Hunts. Once again this year our Branch will be running a Mentoring Weekend for new members. It was a great success last year, and prompted a number of new memberships and helped spread our passion for Sambar hunting. On June 18 we’ll be conducting the Mentoring Weekend. If you’re interested contact Rod Reddish d recommend for further details. II’d
The sausage making demonstration at the Wild Deer Expo getting in early, as numbers are limited. The weekend covers the basics: gear, Sambar behaviour, and all the usual things a new hunter needs to know. Also, a big thank-you to everyone who attended the Wild Deer Expo in Bendigo for the March 5-6 weekend. It was a fantastic event, but certainly a warm one! We still managed to put on a good display (story and photos pages 8-9). On a sad note, I’d like to pass on our heart-felt condolences to Dave Britland and children Liam and Courtney. Dave’s wife Wendy, 43,, p passed away in February.

ON SHOW AT WILD DEER EXPO
A
ustralia’s biggest hunting, fishing and guiding expo, Wild Deer Hunting, Guiding and Fishing Expo was held at the Bendigo Exhibition Centre and Showgrounds Regional Exhibition Centre from March 5-6. More than 300 exhibitors displayed a range of hunting, guiding, taxidermy, guns, knives, fishing gear, swags, archery, camping, 4WD accessories, GPS, communication, optics, ammo, quad bikes, generators, camper trailers, boats and marine, dune buggies and loads more! The Central Victorian Branch joined the Australian Deer Association stall to give a demonstration on caping, butchering, sausage making and pickling. Scott Richardson demonstrated caping, and Ern Addington demonstrated pickling. New Central Victorian Branch member Sara Grazia, from Melbourne-based company Sausages Made Simple, provided an expert demonstration on the art of sausage making. Her company specialises in teaching sausage making, including traditional methods and techniques, and sells a range of “how to” guide books and instructional DVDs. Onlookers were treated to the full experience of seeing a deer broken down from carcase to being made into delicious sausages, and were then invited to a free freshly cooked sample.

Using ADA as a Genuine Reason. If you use your ADA membership as a Genuine Reason for having a Firearms License, please remember that you are required to attend a minimum of two (2) branch activities. Whether they are shoots, meetings or club hunts, it is your responsibility to ensure you meet the requirements. Roast Venison
S
imon Winfield knows a thing or two about Game. Born in Cape Town he has cooked in some of the top restaurants both here in Australia, the USA, South Africa and England. Simon started cooking in Australia working in the renowned “Lynch’s” in Melbourne. He and two partners head up Tommy Collins Catering and Events. Currently Simon is the face of a new Bagel chain, “Schmucks” and a new restaurant in South Yarra, “South Central” Here’s his take on an old favorite “Roast Venison”
This is really simple. Firstly in a Mortar and Pestle roughly crush all the dry ingredients, place in a bowl, then squeeze the orange juice, put it, zest, and around 3 tablespoons of good virgin olive oil into your bowl. (If you do not have a Mortar and Pestle, wrap everything in a clean t-towel and bash it with a rolling pin). Rub the marinade all over the Fillet, and marinate for at least 24 hours. Turn your oven onto 200. Heat a fry pan with a little olive oil (not too much as the marinade will help in the cooking). Wait till your pan is really hot, then sear the fillet until brown, turning all the time. This should only take a few minutes. Do not over cook! Place the fillet in a baking tray and cook for around 10 minutes, remove and loosely cover with foil. Leave to rest for around 8/10 minutes. This should give you a rare to medium/rare roast. If the pan juices are not too burnt, place pan over an open flame on your cooktop and when hot pour in a glass of red wine, reduce a little then if necessary thicken with a little Cornflower mixed with a little water. Alternatively you can serve with Horseradish Cream.
ACCOMPANIMENTS. POMMES DAUPHINOISE. This is really impressive if served in a large souffle dish. The recipe below will be enough for 2 dishes, or more. 1 kg of potatoes. Salt and Pepper. Tablespoon of Nutmeg. 2 halved garlic cloves. Few onion slices. 4 tablespoons Gruyere cheese. 1 egg. 1 cup milk. Butter. Peel Potatoes, slice thinly. Arrange in souffle dishes, or large casserole dish. Sprinkle with salt, pepper, grated Nutmeg . Heat milk with onion slices and garlic, strain, combine with beaten egg, pour over potatoes. Sprinkle with cheese, dot with butter. Bake in moderate oven 45/50 minutes or until potatoes are soft when tested with skewer. Serves 4/6. GARDEN SALAD. Baby Cos Lettuce. Italian Tomatoes. Avocado, Diced Cucumber. Dry roasted Pumpkin seeds. The Dressing. 1/4 cup Olive Oil. Juice of half Lemon. Small piece of Garlic, squashed with some salt and the blade of a knife. Two tablespoons of Whole Egg Mayonnaise. Salt/Pepper. Whisk all items together. Mix salad in a bowl, leaving out the Avocado and Pumpkin seeds. Toss in dressing, then place the Avocado on top with the Pumpkin seeds. ENJOY!
YOU WILL NEED Olive Oil One eye fillet of Venison. A few whole black pepper seeds. Two Star Anise. One Cinnaman Stick. Bunch of Thyme. Whole Fennel Seeds. One Orange, plus zest.
