President’s message
O
ur Christmas party this year was our biggest and best yet, with more than 70 members and guests enjoying the great family atmosphere at the Toolleen Tin Shed. There were plenty of prizes and awards during the night (see pages 8-9), a great meal and plenty of great conversation around the fireplace. Special thanks to those who worked behind the scenes to make this event a success, including the Richardsons who provided the big brekkie the following morning for those who stayed in the camping ground across the road. 2015 was a stellar year for our branch of the ADA, with a number of new members, plenty of branch hunts and opportunities to share our passion for hunting and outdoors. In 2016 we hope to maintain this momentum of fun, friendship and hunting in our relaxed xed and friendly
club as we seek to encourage and welcome new hunters and their families. A big item to put in your calendars for the new year is the Wild Deer Expo to be held at the Bendigo Exhibition Centre on March 5-6. The ADA is holding a stall to promote the ADA, and we will be providing members to pp this event. support

Family fun at branch camp The Branch Family Camp in late October brought together a number of members’ families for an enjoyable weekend in the bush. Kids enjoyed the river and bush, and getting out with mums and dads for a stalk. A special moment was celebrating John Richardson 70th around the camp fire.

Venison Diane!
S
imon Winfield knows a thing or two about Game. Born in Cape Town he has cooked in some of the top restaurants both here in Australia, the USA, South Africa and England. Simon started cooking in Australia working in the renowned “Lynch’s” in Melbourne. He and two partners head up Tommy Collins Catering and Events. Currently Simon is the face of a new Bagel chain, “Schmucks” and a new restaurant in South Yarra, “South Central” Here’s his take on an old favorite “Venison Diane”
Cut 4, 4cm thick steaks from your fillet or thicker if you like. Crush the garlic and firmly press onto one side of the fillet. Turn steaks over and firmly press the crushed peppercorns on the other side. Put a 4cm cube of butter in a fry ban with a good glug of olive oil. Heat pan to very hot. Place steaks garlic side down, and cook for around 4 mins. Turn over to other side, turn down heat slightly and cook for a further 4min, this will give you a medium rare steak. When done remove steaks from pan and cover loosely with foil. Remove pan from heat, pour in around 2 tablespoons of Worcestershire Sauce, use a wooden spoon to loosen up all the garlic and pepper from the pan. Pour in the cream and stir vigorously, until you have a lovely thick rich creamy sauce. Turn heat on low and cook the sauce stirring continuously for minute or so. Return the steaks to the pan and pour in the pan juices let on the plate the steak were resting on. Turn the steaks a couple of times to cover steaks. Place steaks on plate and pour over a generous amount of sauce.
DO THIS BEFORE YOU COOK THE STEAKS. VICHY CARROTS. Place peeled and sliced carrots in a pan with a really large blob of butter, 3 table spoons of sugar and a small amount of water, about half way up the carrots. Boil until the water has evaporated and you have a beautiful rich caramelized sauce. CRUSHED POTATOES. Use small potatoes that are good for roasting. Boil potatoes until soft, cover with olive oil and salt and pepper. Place in oven at 210. Just before they are cooked, take out of oven and squash each potato with the back of a large spoon. Place back in oven to finish. AFRICAN BEETROOT. Buy a large bunch and cut tops off the beetroot leaving 5cm of stalk. Boil until soft. Cool and peel, (a good tip is to peel them over the sink with two plastic shopping bags over your hands, stops you ending up with purple hands). Mix together few glugs of olive oil and 3rd of a cup of Red Wine Vinegar, plus a small hand full of Caraway Seeds, and ground black pepper in a roasting tin. Rub all over Beetroot. Roast at 180 for around 20 mins, tossing occasionally, slice. ENJOY!
