President’s message

W

elcome to the latest edition of the Roar! It’s been a bit of a quiet month or two for me since the last edition, as I’ve been recovering from a bit of minor shoulder surgery, which will mean I’ll need to leave the 338 Win Mag in the safe for a bit, and perhaps take the 30-06 for a run! We’ve got a another great branch camp/hunt on this month, October 17-18, so bring along your families and enjoy a great weekend. Why not try and take the Friday off work and get their early?! We’ll be celebrating longtime ADA Central Vic member and all round top bloke John Richardson’s 70th birthday on the Saturday night, with the branch providing a barbecue dinner. It’ll be a great family atmosphere. The location will be available to members in the Roar, and also on the new ‘Team Ap’ (see ad below). The team ap assists in providing timely information from the Club Committee and members in a secure and private platform. So if you have a smart phone, please download it! The Branch Meeting on Wednesday, October 14, is set to be a ripper. We’re back at the Longlea Clubroom following its renovations and we’ll have a barbecue ($5) and a few drinks available. As the clubroom hasn’t been ‘officially’ opened since its renovation, it may be advisable to

be a fantastic opportunity to invite along a friend to introduce them to the club and get them involved in deer hunting! Also, remember that if you want to enter any antlers in the end of year awards to be held at our annual Christmas Party, you need to get them scored! Jayson Dehn, Matt King or Gary Hogan can score them for you. The Annual Branch Christmas Party will be held at the Tooleen Hotel on November 21, from at 6pm. Its $35 per person for a two-course meal and live entertainment. Drinks at bar prices. There’ll be a large number of quality raffle prizes up for grabs so come along and enjoy a great evening. Bookings are essential so please let Rod Reddish know ASAP centralvic.treas@austdeer. asn.au or via our Facebook page. This event is not just for members so friends are welcome. The renown Branch Breakfast will again be held in the car park next to the hotel for anyone wishing to camp or stay at the hotel.

bring a fold-out chair along, just in case. We’re also having a Buy, Swap and Sell on the night, so have a look through your shed and see what camping/hunting/outdoors gear you might like to offload and bring it along. For anyone interested in attaining their Hound Hunting Licence, Mark Jones from the Game Management Authority will be there to give a quick talk and to run the hound hunting test. The test will cost $29.90 per person, but make sure you bring CASH on the night. There will be no eftpos available. We plan to start the test at 7.30pm. To top things off, there’ll be a butchering demonstration conducted, showing how to break down a deer in the field and then Best wishes, how to butcher it. This is a great Ern Addington opportunity for new members to Central Victoria Branch President learn what to do when you bag your first sambar! SMITHS OUTDOORS

att and Laura Smith are celebrating the first Birthday of their Bendigo hunting and shooting store this October, with a month-long promotion supported by Beretta Australia and Nioa.

The couple are not new to business in town, both having helmed successful businesses before opening Smiths Outdoors in 2014. “We wanted to create a different kind of store – one that could grow on our experience in retail and professional services, allow us to spend more time with people who love being outdoors and give us a crack at bringing more non-shooters into our community,” Matt says. “We think we’re on the way to achieving that, thanks to the great support of hunters and shooters in our region, the advice of regulatory authorities and clubs, and the trust of distributors of the world’s best known brands,” he says. Hunting and shooting in Victoria brings more than $450 million to the economy every year, as competitions and drives across the state attract local, national and international attendees. From clay target shooting, to fox and rabbit control, deer and pig management and range target shooting, thousands of people participate in the recreational, environmental, cultural and economic benefits of hunting every week.

Matt Smith with Daniel Young MP at Smith’s Outdoors ors Birthday Promotion launch earlier this month. Laura Smith has always loved being outside. “I grew up walking the creek near our house, building dams and stepping stones, collecting mushrooms and blackberries, sticking my fingers in my ears as Dad lined up a rabbit for the pot. Now, hunting gives me the opportunity to spend time alone, to remember my heritage and to enjoy the beauty of our landscape,” Laura says. “It’s a privilege to own a firearm, to have access

6 I Sambars Roar I October-November 2015

to property, to hunt and to share good food with good people. It’s important that our children know where their food comes from, too, and we balance our hunted game with our own farmed lamb, chicken and eggs, vegetables and herbs,” she says. Special guest Daniel Young, MLA of the Shooters and Fishers Party, joined representatives from the Game Management Authority and members of the local shooting and business community to

celebrate the milestone on October 1. And the celebrations continue for the month of October, with every purchase of more than $100 putting customers into the draw to win prizes from a massive $4000 pool thanks to Beretta Australia and Nioa. Mission accomplished!

CV Branch member Richard Chan wrote last month about the frustration of a near miss on bagging his first sambar, this month he’s sealed the deal!

A

fter my devastating missed opportunity that I wrote about in the last issue of the roar I finally manage to deck

my first sambar deer. I had a weekend teed up with a few mates to head out, which when the weekend approached fell to pieces with other engagements coming up. I was still free and had nothing planned so headed out on my own. I made the trip out Friday night after work to start first thing Saturday morning. I started at the bottom of a gully with the intention of getting up high before the thermals started to rise, turns out the thermals started to lift a lot quicker than I expected. I ended up pushing two deer (not seeing anything I just heard them crashing off) both were higher up the ridge then me so I knew exactly what I had done wrong, I was too

low and they smelt me. After a kip back at camp I went out for an afternoon wander, this time I was on the money getting honked by a smaller deer behind thick scrub, it was close but not close enough for me to get a look at it, let alone try fire a shot. For me that was a mini success as I was in close to a deer so I was working the winds correctly and stalking quiet enough that I got within the deer’s comfort zone before it realised and honked me. The next morning was time for a change in game plan, I got up early and took a fourwheel-drive track around the gully which I was hunting to the top to start from above. I ended up finding some good tracks which I was forced into following as the deer had followed a game trail through some tick stuff which was the path of least resistance, which made stalking and tracking easy. Before I knew it I was

8 I Sambars Roar I October-November 2015

looking around and there was a hind standing there staring at me. This time I wasted no time in shouldering my gun and taking the shot. It was text book, I had a good view at her side on front half, I had the choice of a neck, spine or shoulder shot. I nailed her in the shoulder (later founding that the shoulder blade and ribs were smashed straight into the lungs), I waited a couple of minutes while she crashed around a bit, once the noise stopped

I walked in (with a core lokt 30-06 in the chamber ready to go but it was not necessary) she had piled up on the steepest of hills and only stopped rolling because her legs got tangled around a small tree. The pack out started at 8:45am and I was in the car ready to go home at 1:30pm, taking all four legs, tender loins and back straps. The only thing left behind was ribs, neck and head.

Family hunt helps pass on the passion CV Branch member Kevin Borden had success at the last family branch cam;hunt, where he joined in passing on his love of hunting to new shooters and the next generation he family weekend, an integral part of the Central Vic ADA calendar came around as usual, in early June, for spouses and children to attend.

T

Friday night saw several families arrive to the ‘usual spot’ and camp was established, kids fed and a few beers had before the big kid dinner. Saturday saw a few groups head off into various parts of the forest, some dads and grandpas taking the next generation of hunters into the bush with them, in order to pass what skills they could onto the young ones. That evening the stories flourished from the fresh droppings, running marks and the HONK that children had experienced and the back slapping to one hunters wife who went on a tag along trek, saw a deer, called hubby back, who was then able to secure a very edible hind. Sunday saw a few folk preparing for a hunt, after a couple of young blokes had already headed from camp, neither of whom had shot a deer before, in fact Richard Chan had not been hunting although he had been to a hunters education course, Dave had gone upstream a long way to hunt back towards camp. After a slow start about camp I decided to go for a walk about the local ‘flats’ where I had seen a few deer previously. Poking about for a while I heard a honk close by in a thicket, then a lot more honks assured me that a hind was very nervous, moving forward with the .270 at the ready I was becoming overcome with anticipation, the waiting to see a leg moving under the tee-tree canopy, then several legs running at right angles to me. Some lighter coverage revealed enough of a body for a neck shot, 130 grains stopped the hind instantly, two other animals ran off to be hunted another day.

So now the hard work begins but many hands make light work and the new 650 Rhino was working well. UHF Calls came in from other hunters. Dave was there in quick time, then

10 I Sambars Roar I October-November 2015

Richard, who was then seeing a deer for the very first time. Not long later Len and his grandson Will arrived on site.

Happy snaps and back slapping, much deliberation and debriefing then Richard took advantage of the opportunity, with knives and guidance offered, he set about emptying the carcase, then halving it for

the carry out. It is so rewarding, to have young blokes in the club that will oblige to carry out sharing the workload and the spoils. Let’s do it again next time!

SAUCE 15ml/1 tbls butter & flour (optional. 1 Wine glass of Port. 30ml/2 tbls redcurrent jelly. GARNISH 400g can whole Chestnuts drained. Suteed mushrooms.

S

imon Winfield knows a thing or two about Game. Born in Cape Town he has cooked in some of the top restaurants both here in Australia, the USA, South Africa and England. Simon started cooking in Australia working in the renowned “Lynch’s” in Melbourne. He and two partners head up Tommy Collins Catering and Events. They also owned The Little Ox in Brighton, Hawk and Hunter in Ripponlea and Little Collins in Notting Hill. Here’s Simon’s take on a ripper Roast Leg of Venison.

1. Marinade. Slice Onion & Carrots, sweat gently in butter or olive oil. Place vegetables in a bowl (not metal) add red wine, parsley, thyme, bay leaf, garlic, peppercorns & crushed juniper berries. 2. Soak venison in marinade, covered for 3 days in a cool place, turning 3/4 times a day. Drain venison, reserving the marinade. 3. Pre heat oven to 180 or gas 4. 4. Boil down the marinade until

reduced to around three quarters original quantity. 5. To cook meat, heat butter and olive oil in a thick-bottomed ovenproof casserole with a tight cover. Add diced pork and saute until crisp and golden. Add venison. Strain reduced marinade over venison, cover and cook in preheated oven for 1 hour 20 mins. Increase oven temperature to 220, gas 7 and continue to cook a further 10 mins. Transfer venison to heated serving platter, cover with foil. 6. To make sauce, skim fat from sauce in which venison was cooked and reduce to half by cooking over high heat. Thicken, if necessary, by whisking in a “beurre manie” (made by mashing 15ml/1 tbls each butter and flour together to form a smooth paste. Add Port and redcurrent jelly and blend all together. Season. 7. Strain the sauce, which should be dark and rich, over the venison when carved and plated, garnish with chestnuts and button mushrooms. Serve with roasted in season veg, and roasted Kepfler potatoes. ENJOY!

YOU WILL NEED Leg of Venison 30ml/4 tbls butter 30 ml/4 tbls olive oil 100g pork belly
