n G ast Amanda Spencer has combined her passion for food and photography ro B a r into becoming one of the most popular Instagram food bloggers in the Alamo City. Known as S.A.Foodie, Spencer has more than 4,000 followers, who enjoy her eye-catching photos of mouth-watering dishes and tantalizing drinks taken at San Antonio’s eclectic restaurants, bars, coffee shops and major hotels. “It’s pretty cool,” she said of her 4,000-plus followers. “I must be doing something right.” Being one of the city’s top food bloggers comes with perks, of course. She often receives invitations to the openings of new restaurants since owners and chefs know they’ll gain valuable exposure from her food photos. “I enjoy getting to try all of the great dishes that San Antonio’s establishments have to offer,” Spencer said. “I’m also able to help people out, when they email asking about restaurant recommendations for birthdays, dates and other special events.” Her interest in photography began after the birth of her daughter. She purchased a Canon camera to chronicle her child’s milestones. Because she’s always had an adventurous palate, Spencer started taking pictures of the various plates as they arrived at her table, including some of the more interesting menu items she’s had. “I ate grasshoppers and meal worms for the first time at Mexcaleria Mixtli,” she said, with a laugh. When she’s not dining at one of the city’s restaurants, you can find her bartending at Cowboys Dance Hall.

Handcrafted Burger of the Month 100% Certified Angus Chuck Beef, Cheddar Cheese, Oaxaca Cheese, Hickory Smoked Ham, Avocado, Applewood Smoked Bacon, Grilled Onions, Grilled JalapeĂąos and Chipotle Aioli on a Brioche Bun.

We take great pride in our restaurant being family owned and operated. My mother, Thelma, and brother, Omar, have been a pillar of support in helping me build this restaurant. We invite you to join us for an experience of superior flavor and taste combined with the freshest, never-frozen ingredients available. We aim to not simply please our guests, but to also make them happy that when they leave, they say to themselves, “I can’t wait to come back.” Be Happy and Eat Well! Our menu has been handcrafted with care for you. The key to the perfect burger starts with fresh ingredients, double grinding of Angus Chuck beef, slicing the cheese off the block, slicing the ham off the bone, freshly baked artisan buns, hand-cut fries, thick-cut bacon, and house-made sauces and aiolis. Appetizers had to be no exception, so it starts with fresh wings with delicious sauces and house-made Blue Moon beer batter used for Jalapeño Poppers, Fried Pickles, and Onion Rings. Fries are sauteed with white truffle oil, parsley and then topped off with finely grated asiago cheese. Pairing the Burger Bar's menu with the Electro Lounge's live music further solidified it as a truly original concept in order to establish itself as a brand.

Check out this amazing custom creation! That's one of our blue moon beer battered jalapeños poppers on top!

New American Cuisine Bakery of the Month

Our vision for our restaurant is to provide New American Cuisine that is approachable, delicious and has a great value. At the heart of our menu is bread. We believe it is the right of all diners and foodlovers to enjoy a good meal away from home that is fulfilling, delicious and honest, while also made with ingredients from high-quality sources. We strive to source the best products seasonally and regionally whenever possible. Our meals are prepared with the utmost care and attention by our talented chefs and bakers. We serve breakfast and lunch. Our desserts range from a variety of pies, breakfast breads, cakes and whatever we feel will compliment the diversity of Artisans' Alley. Here at The Bread Box, everything is baked on-site, from scratch, every day. We use the freshest ingredents in town while supporting local farmers. We source items, like our eggs, from farms only a few miles away. We believe the products that go into making our bread should reflect our beliefs of keeping life simple, local, and fresh. Stop by and see what we have on our shelves today. The scent alone will make it hard to resist! Tina and Lucas aren’t your typical slices of bread from the everyday loaf. They don’t come from a long line of bakers and they didn’t have a need to bake from a young age. What they did have, was a want to give their kids something better than what the bread aisles of any store could provide; fresh bread with local ingredients and real value. Tina went to work making bread for her kids’ lunches out of her home kitchen, which sparked an interest in Lucas as a chef. From there, Lucas found he has a knack for bread making and started producing them for the restaurant he was currently working for. From there, other kitchens employed Lucas for his bread making skills via word of mouth, making this duo stand apart from most bakeries. They never went restaurant to restaurant looking for clients, their clients always came to them through recommendation. Now, only a few years later, The Bread Box, located in San Antonio is supplying more than 40 local clients with their bread kneads. These two, along with their staff, make it their job to create bread specific to your restaurant or bakeries needs. We believe it is the right of all diners and food-lovers to enjoy a good “meal away from home” that is fulfilling, delicious and honest, while also made with ingredients from high-quality sources. We strive to source the best products seasonally and regionally whenever possible. our meals are prepared with the utmost care and attention by our talented chefs and kitchen staff.

Established Restaurateur Brings Italian-Texas Dishes to the Tables of Tribeca

As a boy growing up in his native France, Jean-Francois Poujol developed an appreciation for fresh ingredients, and the distinct flavor and aroma of savory cooking from his mother, who got most of what she needed to cook from their backyard. “She made everything fresh from our garden,” Poujol recalled. “She would say, ‘Get me some parsley,’ and I would go straight to the backyard to get it.” Poujol, who has been a major fixture among San Antonio’s dining scene for years, is the owner of Tribeca, a restaurant and bar in Olmos Park at 4331 McCullough Ave., that features a variety of zesty Italian-Texan dishes, including pizza, pasta, burgers and other delicacies. Poujol has a long history and solid background in the food service industry. It began when he first arrived in America, specifically California, in the late ‘80s. Over the years, he worked his way from busboy, to barista, to waiter and then management at a number of Newport Beach area restaurants. Along the way he graduated in 1999 with his bachelor’s degree in business administration with an emphasis on finance from the University of California Northridge. After a long stint as manager of a five-star restaurant at an upscale Beverly Hills hotel, Poujol moved to the Alamo City when he was recruited in 2002 to manage La Mansion Del Rio hotel’s Las Canarias restaurant. Poujol launched his first venture, Soleil Bistro, in 2007. He later changed the name to Tost and eventually sold it in September 2012. In May 2013, he opened Tribeca. “We’re now focusing on a creative culinary aspect and planning some new things for 2016 for our guests, including a deli,” he said.”

At Tribeca we take pride in our work and ethics. We grind our own meats, make our own pizza dough, pasta, and focaccia breads, as well as our house made mozzarella. In addition we are a big supporter of local farms and markets so we purchase all of our ingredients from local producers. Our Kitchen is open Tues. thru Sat. from 4pm–10pm, Sun. from 11am–3pm (Sunday Brunch Menu Only), CLOSED MONDAY. Join us for a late night cocktail on Fridays and Saturdays when our bar stays open until midnight. Bon Apetite!

ORGANIC FOOD TRUCK of the Month

INTERNATIONALLY INFLUENCED GREEN CUISINE UMAMITA is internationally influenced, having kicks and flavors from Asia, Europe, North, Central and South America but not forgetting our Texan-Mexican culture. It is Like it's name and slogan describes it - SO GOOD. The emphasis is on organic food, locally grown and free from GMO’s, hormones and antibiotics.

DISHES OF THE MONTH

WHY UMAMITA?

Our Chilito Shrimp Salad

DRINK OF THE MONTH

Organic grilled chicken breast #sammich on a Hawaiian bun.

The name is inspired in the term ''umami'' Umami is a Japanese term that describes a pleasant savory taste imparted by an amino acid that happens naturally in many foods including meats, fish, vegetables and dairy. It is used to describe a fifth primary taste. This additional taste is the combination of the primarily tastes; sweet sour salty and bitter. This taste is now used to describe not only Japanese, but Mexican, Chinese, and many other international foods. So next time you hear the term "UMAMI" you'll know it's SO GOOD. I believe in the organic. The original and the traditional. Like being a child and tasting something for the very first time the way it was supposed to be prepared and finding my love for the meal in its parts and its entirety. I believe in being original and creative. Our culture is used to a certain way food is prepared and served. So change will be met with resistance. We strive to overcome those obstacles by combining traditional ingredients together and presenting a truly organic meal. I believe in being responsible in what I consume and what I serve. The organic phenomenon should include not only the origin of our fruits veggies and meats... It should also be a reminder of creation and how God intended humans to consume his gifts. Umamita is about organic food and cooking. We want to share a creativity in our culture that exposes our customers to flavors they are used to combined with new flavors and methods they may not have considered. This is our love, this is our passion, our drive is to share it with you.

Chef Hsu Ying Wong Chef/Owner at Umamita and Chef/Owner at Hsumamic Organic

You have to try a very refreshing organic coconut slush!

Born and raised in Mexico with Chinese descendants, Hsu loved cooking with passion very early in childhood. Chef came to San Antonio, Texas for college. After Culinary School and many Gastronomy courses in Mexico she started her journey in San Antonio at the Riverwalk as a Chocolatier. Later on she obtained her experience being a sushi chef and catering chef. Today she is a food service director at a private catholic school, and she also is an instructor of a gastronomy/culinary club. Chef Hsu has three very original daughters and they are her drive and motivation to lead a better example for a much healthier eating tendency. Her love for food trucks and challenging restaurants along with the opportunity to work with a great entrepreneur like John McDowell, has brought Chef Hsu the inspiration to make UMAMITA an exciting project.

TOP CHEF OF THE MONTH CHEF GARRETT STEPHENS The County Line

Like all great chefs, Garrett Stephens never shops thinking of ways to create and improve the cuisine and cocktails for County Line BBQ restaurant on IH-10, near the Colonnade. Case in point: while smoking brisket in his backyard, it occurred to him that a hint of smoke would so enhance a cocktail with Texas Rye whiskey, so what did he do? Created a round cube of smoked ice, dropped it into his version of an Old Fashioned and voila: The Old Smokey cocktail was born and is one of its top sellers. And because he wears many hats at County Line—manager, pitmaster, chef, Social Media director and now cocktail mixologist—this never-ceasing quest for great cuisine reaches all menu items, from the incredible smoked BBQ to the hand-made dressings. Although never formerly trained at a Culinary Institute, Garrett is a self-proclaimed foodie—personified by the Pitmaster cooking classes where he taught grilling techniques with a surprising array of different ingredients. County Line also provides a great avenue for his love of Texas music with its two live music series, benefitting the San Antonio Food Bank. Check out what is going on with Garrett and all the good people at County Line at www.countyline.com/ or Facebook--or better yet, come by and listen to fabulous Texas music with an Old Smokey in hand. NEW MEXICAN RESTAURANT OF THE MONTH

A NEW LOCATION AND A NEW IMAGE Regulars of El Mirasol know what to expect: the best Mexican Food and margaritas (known as Chispas) in San Antonio. For 15 years, El Mirasol has been nestled in a nondescript shopping center located on Blanco. Those who know and love El Mirasol come back again and again, sometimes even a few times a week. Restaurateur and owner, Jesse Calvillo, Jr, says the success of El Mirasol would not be possible without his loyal customer base, “we’ve been here this long because our customers are incredibly loyal to us.” It is the loyal customer base that drove El Mirasol to open a second location at the Alon Town Centre at NW Military and Wurzbach in June of this year. While only a mile apart from the primary restaurant, the words “second location” don’t actually do the new location any justice at all. The Alon location boasts a spacious, modern interior design. The bar is at least 25 feet long and tequila is constantly available on tap. Modern high top tables and chairs are positioned throughout the bar so that guests may comfortably enjoy one of El Mirasol’s famous Chispas. Table seating is abundant, and patio diners can enjoy a clear view of the Alon Town Centre fountain. The menu is the same one that keeps El Mirasol’s fans coming back: ALL of the classic favorites are there: Ceviche, Chicken Mole, and Chili Ancho Enchiladas are all on the menu. The recipes date back to 1979 when Jesse’s parents, Jesse Sr. and Carmen Calvillo opened La Fogata. When the Calvillos sold La Fogata, El Mirasol on Blanco was their chance to reinvent themselves. Jesse further explains, “the time had come when El Mirasol needed to be reinvented and expand. The second location has allowed us to do both.” The new location also has a private party or meeting room complete with enough parking to make the most loyal El Mirasol customer smile. The Blanco location remains open, and is getting ready for a facelift of its own. THE EL MIRASOL CHISPA El Mirasol regulars are the ones in the know: when ordering a margarita on the rocks you call it a “Chispa.” This handmade, fresh margarita IS a showstopper. El Mirasol’s founder Jesse Calvillo, Sr., named it this almost 15 years ago. With a squeeze of fresh lime, an El Mirasol Chispa is the perfect way to cool off from the San Antonio heat. Chris Simpson When you want to challenge a new market or demographic, something needs to change. You must think outside the box, or in Hofbrau Beer Garden’s case they thought outside the whole realm of food. Chris Simpson is a former Professional Arena Football head coach. With twenty-five years of coaching experience, he’s had to do numerous marketing, and promotional tasks and wear many hats. Not only coming up with strategies and offensive or defensive schemes for the upcoming opponent, but tying it all together to create a well-rounded successful program. In many ways a team is a company in and of itself, so what better way to get a diversifying view than to pick out of a different pond. Since Chris’ involvement with The Hofbrau, they have brought together a lot of great new ideas. One being the “V” card for fellow Hofbrau patrons, it entitles you to perks and promotions that you otherwise would never know about. Other promotions have been brunch on Sundays, named Hofbrunch, the release of the Hofburgers, a special three-meat blend that’s unique to Hofbrau. A Summer Fest and crawfish boil called Boil and Brew, with live bands playing weekly until midnight. He’s hit the ground running in his first four months which is not surprising coming from a championship winning coach. Chris knows how to build with what he has and flourish with success.

Our Massage Therapists are licensed/certified, insured, professionally trained and practice high quality massage therapy. We have an enthusiastic, professional and positive attitude.

An Inspiring View‌ by Margaret Kondoff, Majestic Massage Last year, my husband Wayne and I were working at a local San Antonio sporting event and noticed the para-athletes. These para-cyclists were powerful and inspiring to view. I thought, they put to shame those of us who choose to take the elevator over stairs. Perhaps the folks who continue to drive around busy parking lots for closer parking spots instead of walking a distance, should be ashamed of themselves. You know who you are.. These athletes reminded me of the obstacles we or others we know have had to overcome and are still struggling with daily. Whether the obstacles are physical or emotional, it is no surprise that your physician with be very involved with your recovery. Wayne and I are licensed Massage Therapists. Over the years we have been privileged to have worked with many clients, organizations, corporations and hospitals in San Antonio and surrounding areas. While we are not physicians, we are encouraged by the noticeable support from the medical field and community. Doctors, more than ever are recommending massage therapy for their patients. Medical massage is carefully used for certain patients in the aiding of their recovery. Local hospitals are also using massage therapy for their own office staff stress management and offside retreat settings. It is not surprising to visit your massage therapist for stress relief. We can all agree that stress can

exacerbate many conditions. Knowing already your condition, Massage Therapy, when recommended or cleared with your physician, can help with your recovery. Massage promotes healthy functioning of your lymph system by directly stimulating and relaxing your muscles. This flushes out metabolic wastes and helps distribute nutrients to the body. Massage therapy also creates a response within the body that affects the cardiovascular system, lymphatic system and immune system. Massage increases the count and function of white blood cells, thereby strengthening the immune system. Stimulating the lymphatic system provides energy, better health, better rest, weight loss and decrease in inflammation. Many people know well that Massage Therapy reduces muscle tension and soreness. They may not realize at the time that Massage Therapy helps to lower blood pressure and increases blood flow. It helps to balance and counter-act the effects of stress. So here we are and another year has come. This year, Wayne and I look forward to working at the next local sporting event where we can assist, cheer and be inspired by our strong bodied and stronger willed friends. "Believe you can and you're halfway there."

DEHYDRATION & ELECTROLYTE BALANCE Dehydration depletion of body fluids

By Fitness Editor Skie Molinar

Electrolyte Balance an equilibrium between the amounts of electrolytes (as calcium, potassium and sodium) that is essential for normal health and functioning. “In sharing my personal story I’m hoping that this will help those athletes who perform intense cardio, training for any kind of sport that may cause dehydration.” One summer as I began my contest prep for a bodybuilding show, I began running 3-4 times a week no more than 3 to 4 miles per session. At this time of in season training, I was drinking 1 sometimes 2 gallons of water a day, which I thought was plenty of water to keep me hydrated to prevent dehydration. During this time I was working as a Physical Therapist Assistant in a Rehab Hospital in Corpus Christi, Texas doing about an hour a day of aquatic therapy Monday – Friday. During that hour of aquatic therapy, I began to notice an odd feeling, as if though I was not in my body, extremely fatigued & I could not focus or concentrate like normal. Blaming it on my hard workouts, strict meal plan & extra cardio, the thought never occurred to me that I was getting dehydrated. Ignoring the odd feeling, I continued on my journey in contest prep training, running, supplementing & drinking 1 - 2 gallons daily. One weekend as I was driving into San Antonio Texas for the weekend with one of my girlfriend’s, I began to feel that odd feeling again followed by confusion and disorientation. I felt as if though I was going down fast, a feeling of dying!! Thank God we arrived at the Hotel to check in & as I stood there, I told my girlfriend please call 911 immediately, “I feel like I’m dying.” Well thank God I didn’t faint or die & EMS got there! They took me into the emergency room where they began the process of trying to figure out what was wrong with me. They took some blood work & asked me several questions. The ER doctor came in, sat down, looked at me & said that I was severely dehydrated and asked if I was getting enough liquids in my diet etc. He said he was going to have give me electrolytes through IV ASAP (as soon as possible). Needless to say I was in shock I couldn’t believe it! With a perplexed look on my face, I responded & told him I was drinking 1-2 gallons of water a day and how was this possible. He stated I wasn’t getting electrolytes back in my system, therefore, he was recommending Gatorade & Pedialite. Doctor’s sometimes neglect telling you everything you need to know about dehydration or what supplements there are to help replace those vital electrolytes, except for Gatorade or Pedialite, so do some research on your own. After this horrible experience, I’ve learned that water is not enough to replace electrolytes in your body to stay in balance. You will have to go to certain stores that sell supplements etc. to find the best electrolyte balancers they have in stock. There are a couple of Electrolyte Balancers I’ve used and recommend. Thanks to these Electrolyte Balancers, I’ve never been in a hospital for dehydration again. 1. Trace Minerals Electrolyte Balancers 2. NutriBiotic Essential Electrolytes in capsule form (my favorite)

3. Optional; Gatorade, Pedialite or Pickle juice. Being dehydrated can be extremely dangerous, causing muscle cramps, headaches, diarrhea, confusion & disorientation! Always remember your heart is a muscle, therefore it affects cardiac stability and cardiovascular strain causing irregular heart rhythms. At times I may forget to take my Electrolyte Balancers, but as soon as I began getting a headache, cramps & getting a hint of that odd feeling, I immediately take my Electrolyte Balancers. Within 30 minutes or 1-2 hours of taking my Electrolyte supplements, I will begin feeling like my normal self again. It all depends on the level of dehydration you are in, that guides how quickly you recover after taking your Electrolytes. Always check with your doctor before taking any of these or other supplements. Follow the instructions on the bottle. Athletes that train intensely or vigorously may have to take Electrolytes twice a day, depending on their training & sweat production?

Name Cassandra Birthplace Houston, TX How long have you lived in San Antonio? I moved to San Antonio in September of 2010. What inspired you to create Mobile Om? Shortly after moving to San Antonio, I found myself frustrated when looking for a yoga community. At the time, yoga was still fairly new to San Antonio and I found that most people I talked to were unfamiliar or misguided about the practice. While teaching at a couple of local studios, I couldn’t ignore the feeling inside that I needed to do more, to find a way to bring yoga to the community in a way that was easily accessible and not intimidating. I wanted to break the boundaries of belief about what yoga is and knew I had to shake things up. Inspired by the bourgeoning food truck scene, I decided that physically breaking out of the walls of a traditional studio, would be a perfect way to fulfill my mission, thus Mobile Om was born. When and why did you start practicing yoga? I went to my first yoga class in 2005, looking for a way to get in better shape and regain flexibility I had growing up as a dancer. I found the practice physical challenging and it wasn’t long before I began feeling stronger and more centered in my physical body. But, it was more than the physical changes I experienced, but a deep mental and emotional shift that kept me returning my mat. Over the years, my yoga practice has led me out of my comfort zone, taught me to breathe through resistance and struggle, and listen to my intuition, both on and off my mat. Who are some of your biggest influencers for your yoga teaching and your yoga practice and why? While I have had the opportunity to practice and train with some phenomenal yoga leaders, the biggest influence on my yoga teaching comes from the students who show up to my class each day. Over the years, teaching has become a powerful practice in presence, connection and holding space for others. What is your Favorite place to practice yoga in San Antonio? Hays Street Bridge

Favorite place to teach yoga in San Antonio? With Mobile Om, I am blessed to teach in some of downtown San Antonio’s most interesting and unique locations. It’s hard for me to choose just one since each space has so much to love. My favorite thing about teaching yoga in unconventional locations are the distractions and quirks that come along with each space. Life is chaotic and we are often unable to control the ebbs and flows it throws at us. Learning to tune out the distractions while on our mat teaches us to do the same in life. What are your thoughts on meditation? Meditation is one of the most powerful aspects of yoga for initiating personal growth. The physical practice of yoga is a moving meditation, using the breath and body to create union with the mind and bring awareness to what is going on in the present moment. I find that many people think of meditation in terms of the “doing” aspect without realizing that just like yoga, meditation is not about the doing, its about the being. When most people think of meditation, they thing of someone sitting still in lotus position and finding tranquility in stillness of mind. While yes, this is a powerful place, it’s not necessarily practical in today’s busy world. The real heart of meditation lies in learning to be mindful in everyday life. Seeking inward to create more intention and awareness in every day moments. Finding an extra breath before responding to a frustrating situation, choosing to sit with discomfort to discover what’s really there instead of jumping into mindless reactions. Looking at meditation as a practice in presence and awareness in all things will have a profound impact on your life. Learning to recognize the chaos of the mind will natural call you to seek refuge in stillness, but it’s a process that needs to be What would you tell a beginning yogi/yogini? The most common thing I hear beginners say is that they aren’t “flexible” enough for yoga. What they fail to recognize is that shifting from a “not enough” mindset is the whole reason they need yoga. Yoga is not about the physical poses. It’s not about touching your toes, tying yourself into knots or bending over backwards, these are just tools we use to get to know ourselves better. The practice of yoga is a very personal journey, one that looks different for every single person. One of my favorite teachers, Baron Baptiste, said it best “You can meditate and practice yoga until you are blue in the face, and all you will ever be is blue in the face unless you have the courage to open your heart, face reality, admit your mistakes and take right action.” The price is not in the poses, but in the practice of being mindful and intentional. The poses are a very powerful and practical way to push us to our edges and reveal the resistance and struggle in our bodies and minds, but the real work happens within when you discover that struggles is optional and you are exactly who and where you need to be right now. What style of yoga do you recommend to beginners? My biggest advice to those just starting on their yoga journey is to be curious and seek variety. Try out as many styles and teachers as you can to see what resonates with you. What is your vision for Mobile Om and yoga in San Antonio? The number of people practicing yoga in San Antonio has grown by leaps and bounds over the past few years, but one of the things I have often found lacking is true connection and community amongst practitioners. While yoga is a personal journey about connecting inward, it’s also a powerful tool for enhancing interpersonal connection. Mobile Om has become so much more than another place to practice yoga. We have become a community of people who love yoga and love people. My vision for Mobile Om is to continue being a driving force in cultivating the overall yoga community in San Antonio, creating space for connection among students from all sorts of yoga backgrounds. 1114 S Saint Marys St, Ste 210 San Antonio, TX (936) 499-4804 Check out a full schedule of our classes, workshops and events on our website: www.mobileomtx.com

CONQUERING OBESITY The Hands On Health Wellness Center is dedicated to helping individuals live a healthier, more fulfilling lifestyle. Hands On Health uses the most technologically advanced, most evidence based and nutritionally complete, physician managed fat loss program ever developed. We utilize revolutionary technology to create the most accurate measurement of your body fat, muscle mass and metabolic rate in order to customize each diet plan to produce long-term results. This is the only weight management program that specifically targets fat loss with maintenance of lean body mass (LBM). Abnormally high body fat causes co-morbidities of obesity like metabolic syndrome. Maintenance of LBM results in the preservation of basal metabolic rate (BMR) and therefore prevents cycling or yoyo dieting which is so typical of standard diets. Body fat percentage and LBM are monitored frequently and regularly utilizing the Body Composition Analyzer, the most accurate and precise bioimpedance device available. Your Personal Wellness Coach customizes the daily calorie allowance and protein requirements for each patient based on their BMR and LBM. Utilizing an extensive online meal planning tool, patients perform their own meal planning, building meals from a 5,000 food item USDA data base with calorie, protein, carbohydrate and fat goals set for them in an easy to follow program, providing education in how to eat healthfully for fat loss. This is a simple yet comprehensive program that provides the highest quality and most effective supplements available. Many motivated patients have been able to avoid surgical bariatric procedures with this program. Hands On Health is an easy to use, professional, patient friendly program, and we are with you every step of the way until you achieve your goals!

Female Model of the Month

l e m r Ca y e l d u D

I began my modeling career when I was 14, I was home schooled so I was able to participate in a few local shows in San Antonio and shortly after I met my mother agent Lari Nelson. I was with her for less than a year when I went to my first Expo in Dallas, I met my many agents, from all over the world, I received 12 call backs and signed with my Dallas agent, The Campbell Agency. Campbell Agency has definitely helped with networking and receiving some great clients with numerous jobs for print work, but I have my mother agent, Lari Nelson, to thank for everything, if it wasn't for her I would be completely lost, professionally and personally. I'm now about to leave for LA to further my modeling Career, and I don't know what the future holds for me, but I hopefully will be a very successful model, once again I would be absolutely nowhere without Lari, and my Dallas agent Nancy Campbell, owner of the Campbell Agency and Daniel Jackson owner of Public Models of LA and Mike Beaty the owner of the Model and Talent Expo Dallas Texas, they all have guided me in the industry, I am looking forward to the Future!!

Male Model of the Month

o v a t s Gu a i c r a G

Right after high school I studied at San Antonio College to receive my Business Degree. During college I worked part time as a bus boy at Bill Millers BBQ, just to have some extra money in my pocket. Modeling had never crossed my head, I just couldn't picture myself as a model, and it was actually there at Bill Millers where I got discovered by a scouting agent from The Agency Model and Talent. My first jobs were runway shows it was super cool I had never experienced anything like it, being backstage getting my hair and make up done and then going out and walking on the runway. It was all new to me but I liked it. I have been fortunate to have walked for really good and famous designers from around the world. About a year ago I was invited to Model and Talent Expo in Dallas TX, there were around 400 models, singers and actors to show their talent to 50 of the top agencys in the world. The Expo is a 5 day event where the talent gets to perform their skills 1 on 1 with the scouts. I got a total of 15 callbacks from agencys in Tokyo, Milan, NY, LA, and Dallas. At the end of the expo I got awarded with male runways Model of the year and Swimwear Model of the year. I signed with the Campbell Agency in Dallas TX and let me tell you, it has been amazing I am beyond blessed with the opportunities I have been given. I’ve been featured in various international fashion magazines, have done multiple fashion shows, various campain ads, been in quite a few commercials, one which was aired during the San Antonio Spurs Playoff games and done commercial voice overs. I have learned so much this past 2 years I’ve been modeling and acting, all thanks to the Owner of The Agency Model and Talent Lari Nelson my mother agent, for showing me the skills I know today and guiding me in the right path. I seriously would not have been where im at without her help. And a huge thanks to Mike Beaty (Founder of Model and Talent Expo for the chance to be part of that marvelous event. My family and girlfriend have been a big part of my modeling career without their support I couldn't been able to come this far, so a big special thanks to them too. Last but not least I owe everything to God who has blessed me with such amazing opportunities and blessed me with such loving family, friends and girlfriend. WELCOME SUMMER BRIDES ITS WEDDING SEASON! by Amanda McManus

Chanel Le Blanc 2016 Skincare Collection

Photographer: Tim Fraga Model: Ana Brown Mua: Amanda McManus

He finally popped the question! Now you have the most gorgeous rock sitting on your finger, your girlfriends cannot stop squealing in excitement and anticipation plus the family has been asking non-stop about yet-to-be-planned details of the upcoming nuptials. Aaaagghhh! Take a deep breath, it's time to focus on you now and what you need beauty wise! Here is your foolproof bridal beauty reference and countdown to looking sublime and unforgettable on your BIG day! YOUR BEAUTY TEAM: When it comes to looking flawless, it is important to assemble the perfect glam squad! Stick with who you know - Use your tried-and-true aesthetician, makeup artist and hairstylist. They already know your hair, skin type and personality so why re-invent the wheel? This will help eliminate any rooms for error. Ask for Recommendations - If you are in need of a new pro crew, ask family or friends for their favorite go-to's and visit them. Also, browse local magazines and websites for "best-of" lists. Trial Runs - Schedule a run through session with the hairstylist and makeup artist. Consider taking pictures and making notes of what you like and do not like. Refer back to your list to narrow down your choices. YOUR BEAUTY PLANNER: A guideline to achieving your best skin and prepared for that amazing make-up look! 8-12 MOS Healthy skin and fantastic makeup looks go hand-in-hand. Get an appointment with a dermatologist. This pro will be able to recommend/prescribe any products or prescriptions to get you glowing and healthy skin by your wedding. Don't forget to discuss other problem areas like the chest or back that may be on display while in your gown. Create your makeup inspiration board. Social media sites like Pinterest are perfect places to find your "wish list" images. Pin and save them to refer your ideals to your MUA (make-up artist). If there is a makeup artist you MUST have, book her now! Begin a regular cleansing, toning and moisturizing routine. Find a line that will focus on your ultimate goal whether it be lifting and firming, hydration and radiance or brightening and dark spot correcting. Exfoliate at least twice a week , and wear sunscreen to protect your skin. 5-7 MOS Begin the pampering process :) If you have no bigger issues like oily, itchy or dry skin to tackle once you have spoken to the dermatologist, then look into facials, especially during the dryer winter months. Try something like an oxygen facial that plumps up the skin and adds to the glowing look. If you have an airbrush or self-tan in mind, begin testing out options now. Schedule your trial run with your make-up artist. Ensure that the same products being used then will be the exact same products on the big day so as to avoid any disasters on the big day. If you have not already been sharing looks then be sure to share with your mua during the test run. How much "HAC-ing" do you want? That would be highlighting and contouring. Is all out Glam with full on strobing your style or do you like barely there flawless finish with a light, ethereal cheek highlight more what you are hoping for? communicate this well to your artist. When done well, highlighting and contouring can make the face look sharper, while still looking natural. If you do not regularly wear makeup, any kind of color can be a real shock. Start wearing a bit of makeup every day to start getting use to it and help the transition. 1-2 WEEKS It's crunch time! Get one last facial and be sure to leave out extractions as this can irritate the skin. Do not pick at any blemishes or breakouts yourself, your makeup artist can easily cover any of them. Shaping, waxing your brows is ideal at this time. You don't want red, irritated skin the day of your vows. Also, you and your makeup artist should have already agreed upon whether or not s/he will be available throughout the day for touch ups. If not, be sure you purchase all the products you will need to do it yourself. Be sure the makeup products are similar to what was used. DAY OF WEDDING The day has arrived! Be sure to get plenty of rest and stay hydrated. Although us GREAT MUAs can conceal dark circles from lack of sleep, allergies, etc...we really do not want to have to for your sake. As my personal client, I would even add in an extra relaxing mini-facial while applying your bridal makeup! :) Just try to relax and enjoy the quiet moments. Then CELEBRATE!!!!

Socialite of the Year Decides to Let Loose at Dance Festival The summer party season is about to get even hotter in San Antonio, and Lorena Monroe, aka Bonita, will be in the middle of it all. Promoting well-being through dance events, Bonita has partnered with Semeneya Dance Studio on Big Salsa Festival from August 11-14 at the Grand Hyatt San Antonio. The festival is a four-day event featuring not only some of the greatest names in performing arts, but also in music. Attendees will have the chance to watch dance performances from around the world, see live concerts, and participate in social dancing into the early morning hours. The event also offers workshops led by some of the best instructors and choreographers in the industry. “Dancing means a lot to me. It makes me feel alive and energized” explains Lorena. Her passion for dancing is fueled by her desire to combine outward beauty with feelings of well-being. Lorena recognizes that dancing is one of the most instinctive desires of humans to express emotions through body movement. In 2007 she made her first TV debut, producing and starring in her own show “Bailando Por Pasion” on Azteca TV. “The show connected me with so many wonderful people and made me realize that I can change lives by spreading happiness through dance” reminisces Bonita. Other projects in the beauty and fashion industry led Lorena to a successful career as the owner of lorenaonline.com and Bonita Natural. However, her passion for dancing never ceased. “I have known Lee Rios for decades and it seems only natural to support this event in August”, says Bonita. Lee Rios, owner of Semeneya Dance Studio (mysemeneya.com) has almost 20 years of experience in the industry. The idea for his studio (whose name is derived from Spanish for “move”) started in 1999 when Lee began salsa lessons. Soon his natural talent for dance was noticed and paved the way for the opening of his first studio space. Decades later, Semeneya is known nationwide for its sterling reputation for creating dancers with passion. The San Antonio dance studio gained national media visibility through the TV show “America’s Got Talent” a few years ago. Lee is also considered the pioneer of the salsa and latin dance movement in San Antonio and South Texas. The culmination of his dream has been the opening of a 25,000 square foot dance studio that doubles as a special event center. The space offers multiple instructional spaces, room to practice and freedom to collaborate. The studio doubles as an entertainment venue and showcases Semeneya’s own dance apparel shop.

Bonita invites you to come to the Grand Hyatt in August to dance until you drop!

Forever Young

COVER STORY:

What’s in a name?

In Dr. Robert Young’s case, his name has become his destiny. An avid athlete, Dr. Young defies aging by maintaining a healthy, athletic lifestyle and has completed numerous Ironman triathlons and countless marathons, including running the Boston marathon in 2001 & 2002. As a respected cosmetic surgeon, he has made a career of helping patients achieve youthful aesthetic results, and has performed more than 10,000 breast augmentations at his Aesthetic Enhancement Cosmetic Surgery & Laser Center, making him widely known as the “Boob Doctor” of San Antonio. Dr. Young is also recognized by Allergan (the maker of the leading silicone gel breast implants) as one of the top breast augmentation doctors in the country. What many don’t know, however, is that prior to starting his practice in 1990, Dr. Young was a distinguished military Colonel who served as Chief of Plastic Surgery at BAMC before his retirement after 20 years of service in the Army. His career started after being accepted at West Point, and he went on to become one of the first graduates of West Point to be sent to medical school after completing additional trainings in Airborne and Ranger Schools. He also served as Platoon Leader at Nike Hercules Missile Site in Florida before entering Medical School at Tulane University. Also destiny, Dr. Young and his beautiful wife Michelle met over 20 years ago when she was a patient of his. Fast forward to 2014 and the now married couple found themselves waiting at the same valet station of a popular San Antonio restaurant. It was that night that Michelle approached him to strike up a conversation. The couple jokes about how Dr. Young did not remember her but charmingly stated that he’d like to. At that point, they were inseparable. The couple share many common interests, including an immense love for animals, a strong interest in the financial industry and a passion for running. This highly athletic couple competed in 7 marathons together during the first year of their courtship. Michelle, known as a humble beauty with a big heart, also has an impressive work resume. She earned her graduate and undergraduate degrees from the University of Incarnate Word and graduated Cum Laude with a BBA, and Summa Cum Laude with an MBA. Additionally, she has obtained several FINRA securities broker licenses, including her series 7 & 65, and is now working towards completing a CFP designation to become a Certified Financial Planner. For the past two years, Dr. and Michelle Young have become respected community donors, selflessly dedicating time and

resources to important organizations across the city. Still newlyweds, they recently made an incredible joint decision to put their personal goals and desires on hold and agreed to dedicate the large majority of their free time and resources to this years 6th annual Family Endeavors DWTS campaign whose mission is to provide comprehensive, effective, and innovative services that empower people to build better lives for themselves, their families, and their communities. This has been a huge undertaking for the Young’s given that they have no prior experience putting a campaign committee together or raising a large amount of money in such a short time, yet this giving couple graciously said yes and began rolling up their sleeves to get to work. “Since Bob and I have never campaigned before nor are we very good about asking people for money or sponsorships, we just decided the best way to go about it was to put on many themed “parties for a cause” and donate all ticket proceeds to the charity.” Michelle explained. As one of their events, they generously turned their 1-year anniversary party into a huge fundraiser at the very spot where they got married. The party was a great success with a fantastic turnout and the Young’s donated 100% of ticket sales to Family Endeavors. With a goal to raise $200k by this September, Dr. and Michelle Young are about 2/3 of the way there. They have been working tirelessly on 13 main functions planned at the beginning of the campaign. Michelle admits that with both of them working full-time while building a new house, adding the great responsibility of raising money for this campaign has been the biggest challenge of her life. She credits her committee manager and members of the team as some of the most genuine people she has met who have volunteered their time continuously without asking for anything in return. Through the ups and downs that come along with a huge campaign, Michelle has relied on the encouragement of her husband and friends and is extremely appreciative for this experience. She continues to persevere through all of the challenges and lovingly states how she immensely values her team members, all of the ticket purchasers, and all the people who have supported her and the cause along the way, calling them true “gems”. Always eager to extend invitations, this kind-hearted couple is quick to remind us that it doesn’t take lavish parties or wealth to impact others. While their commitment to this cause is on a large scale, Michelle says she is just a regular down to earth person, like anyone else. She admits to having made mistakes through this process, has learned to be vulnerable, and is proud of the fact that she has been able to persevere through some

difficult challenges. Additionally, she believes that anyone can make an impact on others by doing the simplest things, like being kind. “It doesn’t cost a thing” she reminds us. While running a campaign and running a marathon may seem like two completely different activities, Michelle describes them both in similar ways. “If you fail the first time, get up and do it again. Do it again after that if needed until you get it right, just don’t let anyone stop you from achieving your goals. Keep moving forward and when it becomes difficult to push any further, find that strength within you to push even harder until you reach the finish line.” In this campaign marathon, the finish line will be the Dancing With the Stars event on September 17, 2016. Michelle will represent “Team Forever Young” by participating with 6 other dancers and calls it a “friendly match” where everyone supports each other. At the end of the day it doesn’t matter who raises the most money, but what we can all do to make a difference in others lives. The medal for completion will be in the form of smiling faces that will be placed on the families helped by this great cause. Above all else, those are the beautiful things that keep this couple “Forever Young”.

Bandera Natural History Museum The Newest Gem in South Texas! By Lisa Marie Mendoza

I love day trips and took a summer ride through our beautiful hill country to the "Cowboy Capital", Bandera, Texas to view their newest treasure, The Bandera Natural History Museum. As I entered the gates, I was immediately tickled to see the life size dinosaurs surrounding the property. The visionary for this museum is Mr. Juan Infante, and with the help of a group of Bandera residents they brought this wonderful dream into reality. Their collective mission: EXPLORE • EXPERIENCE • EDUCATE • ENJOY I knew my good friend Dinosaur George would be giving presentations throughout the day, and was excited for him and pleased to see his young fans began to arrive and swarm around him, asking questions and joking with him. The children's curiosity peaked as they gathered around the display tables and the sheet covering the special treasures underneath. It’s always a beautiful thing to see children excited about learning and he had plenty to teach and inspire them. His devotion to educating young minds is something to be admired. Patience, kindness, respect and playfulness is

George's nature. This is why he often has fans arriving from near and far eager to hang onto every word he speaks. When the presentation was over it was time for the kids and adults to take pictures with their favorite Paleontologist, then tour the life-size dinosaurs and Ice-age animals that were once present here in Texas. Children will learn even more with the educational play stations positioned on the Museum grounds. Time to mosey into the museum to explore. As you enter the “International Hall”, the first wonders you will encounter are a 17-foot giraffe, a Torosaurus that starred in the movie, Night at the Museum - Secret of the Tomb, a collection of Latin American masks, and many artistic pieces including animal carvings from all around the world. On to the “Trail of Habitats”, where you'll see amazing animals displayed within dioramas of their specific natural habitats, the backgrounds were lovingly hand-painted by artists from Mexico. Outside the museum, The Texas Hill Country Master Naturalist Chapter planted native Texas plants attracting all types of birds and butterflies. This will be an ongoing project. This Museum did not disappoint, the official Grand Opening was on July 2nd. I look forward to going back to see new exhibits and watch as the museum grows. A "Sensory Safari" is also available to special needs groups so they can learn through touch, sight and sound. Please contact them in advance so they can accommodate your needs. The Museum will use their resources to Photos courtesy of Joe Garcia via Facebook promote and support conservation efforts. Entry to the Museum is $10 for adults, $6 for Children ages 4-12, Children three & under, as well as Active Military are FREE. Your admission includes access to the grounds, free parking, the museum shop and the snack bar. Hours are Wednesday-Saturday from 10am-5pm, Sunday 11am-3pm. They are closed Monday-Tuesday. Hunting the Devil Fish of Padre Island © 2012 Steve Hathcock Manta rays were once called devil fish by sailors who saw large “horns” extending forward from their heads. These horns turned out to be ingenuous scoopers which, when unfurled, guide plankton into the manta’s mouth. Manta wingspans can reach up to 20 feet, and they glide though the water like birds. The manta ray (manta birostris) has long been regarded by fishermen as dangerous. Occasionally and for unknown reasons, mantas have been known to leap onto small boats often times causing considerable damage earning them the name, devilfish. Though they are distant cousins of sharks, mantas are not man eaters. Their preferred diet consists almost entirely of plankton and small fish. When mantas encounter a shoal of fish, they quickly move in to feed, swallowing as many fish as they can. Like whales, the manta rays were oftentimes hunted for their oil and abrasive skin. At one time they were very plentiful along Padre Island but overhunting as illustrated in the following and destruction of their habitat has greatly reduced their numbers. 1912: While on a fishing expedition to Tarpon Beach on the southern tip of Padre Island, a group of visiting anglers devised a six inch steel harpoon to which was attached 150 feet of rope. Armed with their lethal barb the men set off looking for one of the famed devil fish or giant mantas that frequented this part of the Gulf of Mexico. Ed Kline, a local fisherman of some fame was hired to help the anglers find one of the giants. Around 10 o’clock that morning a huge manta was observed basking in the sun a short distance from the jetty. Its broad back rose well above the surface indicating its huge size. Quietly approaching close to the slumbering creature, Kline stood up in the boat and hurled the harpoon as hard as he could. The sharpened tip sank several inches into the flesh of the monster fish. The creature woke with a start and immediately plunged for deep water. The men hesitated as the rope fed out at their feet. Should they cut the line or take the ride. Their dilemma was solved when the wounded fish suddenly changed course and sped out into the open gulf at a speed that soon left the land behind. The monster swam out about 6 miles before circling back towards the shore. At this time, the crew of another craft attached themselves to Kline’s boat. To the amazement of the men, the added weight seemed not to affect the giant beast in the least. One by one fourteen other boats attached themselves to the line tethering the giant ray. Undeterred, the huge fish continued to dash here and there. Before long it became obvious the battle had developed into a contest of stamina. Overhead a tropical sun burned down and slowly, the fun went out of the contest. Once the fish dragged the men some 25 miles out into the gulf and it dawned upon the men that they may be in of danger. Twice the creature set a course for the boats that foamed along behind him but fortunately passed beneath without overturning any of them. Occasionally it would come to the surface and throw itself about madly. At the end of 6 hours the men finally realized the creature might tow them about indefinitely. A signal of distress was hoisted and the man on watch in the cupola of the Life Saving Service over on Brazos Island immediately ascertained the problem. A crew arrived shortly with a 30-30 rifle and another harpoon. The second harpoon was thrown into the creature and again it threw one of its mighty wings into the air and headed out to open sea. Incredibly, the creature continued at a rapid pace for 2 hours without seeming to tire in the least. Nine hours had passed and the exhausted men all suffered from heat prostration, thirst and hunger, but none demurred from their quest. It was time to use the rifle. The first shot was fired into its body and the fish immediately sank far beneath the water and headed out through the pass into open water. But the weight of the boats and men were beginning to take their toll and the creature was finally hauled to the surface where several more shots were fired into its body. That ended the struggle. A rope was attached to the body and the great fish was towed to land by one of the gasoline powered launches. It was estimated that the weight of the creature was in excess of 3000 pounds and it measured 15 feet across and 30 feet long.

Giant Manta caught off South Padre Island circa 1950s

“Altogether our fight with the monster was an experience that none of us would care to go through a second time.” One of the men later told a reporter, “In addition to the constant risk of our boats being capsized, there was something uncanny about being hauled backwards and forwards through the waters of the gulf by some hidden power of the deep. Other sea-devils were seen in the locality while we were there but we made no effort to capture any of them. One victory of that kind is enough for a lifetime.” Email your questions to steve@southpadretv.tv or visit his website http://southpadretv.tv/

FISH TALES © 2013 Steve Hathcock May, 1917 Brazos Island southern bank of Brownsville Ship Channel: R. B. Creager of Brownsville and his friends witnessed a battle royal like none any of them had ever seen. Wanting to do a little tarpon fishing, Creager had waded into the shallow waters of the pass between Brazos and Padre Island. After several hours, he finally succeeded in hooking a fine tarpon that was about six feet in length. Spectators gathered to watch as Creager battled with the giant fish, gradually working him toward the beach. Finally he had the tarpon within six feet of the land when suddenly a large shark appeared and “made a lunge for the silver king.” Striking the victim in the side, the teeth of the shark tore out a great piece of flesh. The attack put new life into the exhausted tarpon as it struggled with all its might to elude its new enemy. Creager could only stand by helplessly as the huge man-eater lunged at the captive fish, each time tearing off huge chunks of its flesh. Sometimes the shark, which Mr. Creager estimated to be between nine and ten feet in length, would be almost completely out of the water as it positioned itself for another chunk of fish. The one-sided battle went on for several violent minutes until finally the tarpon was torn to shreds and devoured entirely by his giant foe, right before the eyes of the spectators. At length, in some manner, the shark became entangled in the line by which the tarpon was held. Suddenly Creager realized he had more trouble on his hands. The shark made for deep water, running out for about a hundred yards. Finally the line broke and the monster disappeared. It was one of the most novel combats ever witnessed in these waters. When the battle was ended the water was covered with blood and not a trace of the tarpon could be seen. see following video of typical shark attack on hooked tarpon. https://www.youtube.com/watch?v=9wFwkjL1Jmc May 14, 1942. 7:30 am: Brazos Santiago Pass: Armed with a light reel, a bamboo pole and 42 pound test line, A. F. Pierce, (an oil field worker from Lubbock) was fishing off the beach near Brazos Santiago Pass (southern tip of Padre Island) when hooked the huge fish. Pierce could only hang on to the line after that, taking only 20 minutes off for lunch and refusing to relinquish his rod to many eager volunteers. His opponent took no time off at all.

After fighting for several hours, the fish surfaced long enough to be identified as a giant grouper, one of the larger species in Gulf waters. (Experienced anglers guessed it weighed 500 pounds.) Seven times or more Pierce brought it near the breakers, where waiting harpooncrs tried to finish the fight. Each time the fish rallied and headed out to sea. A determined Pierce fought the monster throughout the day and as darkness fell upon the scene spectators turned on their headlights to provide illumination for the unfolding drama. Shortly before midnight Pierce staggered to the shore and viewed his prize not more than several dozen feet into the surf. All were spellbound as swimmers armed with harpoons waded neck deep into the breakers to put an end to the battle. But with a sudden lunge, the huge grouper snapped the line and swam lazily away. On the beach an exhausted Pierce collapsed and his friends quickly carried him to a nearby hospital where he was given sedatives. Physicians said he was grievously disappointed, but otherwise his condition was not alarming. Veteran sportsmen said Pierce set an all-time record for these parts in battling such a large fish with light tackle and even though he had lost his fish Pierce was now entitled to call himself a professional angler.

A giant grouper caught off Padre Island. Circa 1918

Brownsville Herald May 28, 1917: The largest sea bass ever caught with a tarpon hook and tackle was landed in 25 feet of water in front of the coast guard station on Brazos Island Sunday after more than 3 hours. The fish, which weighed 460 pounds, measured 7 and-a-half feet in length. The giant fish was hooked by Dr. J. Cole of Brownsville. At first the doctor thought he had hooked a sting ray and was ready to cut the line when he caught sight of the fish on the end of his tackle and there was “no turning loose. The giant fish was played for over three hours before being landed in front of the coast guard station on Brazos Island. The boat carrying Dr. Cole and his comrades was too small to handle the added weight of the fish so Captain Reed of the Coast Guard agreed to tow the fish to the wharf at point Isabel. There, a gang of men of men helped haul the fish from the water to the Rio Grande train which was nearby. From there it was hauled to Brownsville where it was placed on ice. There was no record of what happened to the fish from that point on. For more fish-tales visit http://southpadretv.tv/hunting-the-devil-fish-of-padre-island-1467/ Email steve@southpadretv.tv

CHELSEA BURGE Barista of the Month Paramour’s resident barista Chelsea Burge was raised in the small town of Bandera, TX. Burge got her start as dishwasher at the age 16 and has been in the industry ever since. Her career as barista began in 2013 at San Antonio’s well known coffee chain, Local Coffee. It was there that she received all of her training. Burge found great inspiration in her head trainer Jason Tantaros. “He genuinely cared about coffee and his passion for it was contagious.” In 2015, she began working as a server at the wood-fired pizza joint, and another local favorite, Barbaro and then joined up with Paramour Bar. Like all great barista’s, Burge is conscientious and attentive. At work, she operates the main task of dialing in the espresso, the drip coffee and the pour over options daily. Furthermore, she keeps things creative by constantly thinking up new ideas to keep things fun and interesting for each guest. Good customer service is vital to Burge. Often found sharing a pour over with a guest who may be coffee novice she places great emphasis on forming a personal connection with the individual she serves. Burge is very enthusiastic about the passion that goes into the entire process, from roasting, to brewing, to serving the coffee. She appreciates the joy that it brings to people universally and strives to impart that joy to each guest. When she isn’t working, Burge spends time with her long-term boyfriend and her two dogs Hurley and Chuck. Like any true resident of the Lone Star state, Burge grew up at the rodeo and rides horses in both the Western and English style.

5 Tips for Finding Your Second Career Gerardo “J.J.” Ramirez Jr., Partner, San Antonio Central Office of’New York Life Insurance Company

Contrary to popular belief, life does have second acts. And if you’re nearing retirement and want— or need — to continue working, there’s some good news: you can leverage the knowledge and experience of your first career into a new one that can generate the income you need and be personally fulfilling at the same time. Here are five tips to help you find and prepare for the right second career for you. 1. Start thinking about your second career now. No matter when you plan to retire from your current job, it’s never too early to start thinking about your life “2.0.” In fact, the longer time frame you have to plan, the better. If you’re serious about a specific area, take a class, volunteer or offer to help out for free to get exposure to that business or industry. 2. Take stock of your goals and objectives. Take some time to step back from the rat race and really think about what you want to do in the future. What is important to you? What are you naturally gifted at? Do you want to work for yourself? Do you want to make a positive difference with your work? Your second career should be strongly connected to your inner desires and goals. Even if you don’t have the experience in that area yet, like the saying goes, if you want something badly enough, you’ll make it happen. 3. Start cleaning up the clutter. When it comes time to segue to a second career, it will be a lot easier if your life is in financial order. Start paying down debt, make sure your credit score is strong. Consider some small lifestyle changes that will reduce stress and increase peace and organization in your life. 4. Get and stay healthy. It’s true: when you are physically fit, you have more energy and are mentally sharper to face the challenges ahead. Starting a second career will take an incredible amount of energy, both mental and physical. Start getting in shape now for your future career. 5. Get out there and network. The best way to find your second career—the one that’s right for you—is to start networking, volunteer Saturdays at a flower shop to learn the trade. Take advantage of social networking pages that focus on your fields of choice. Read books on it. Take one small action everyday toward your goal. Consider a Career as a Life Insurance Agent. As you stand poised to experience new opportunities, consider this: why not choose a second career that will positively impact not only you, but those in your community as well? A career as a life Insurance Agent can offer many benefits, including the potential to make a significant income, the chance to work for yourself on your own schedule and the opportunity to learn and grow from other experienced and successful professionals. In addition to the financial rewards you may receive, as a life insurance Agent you can take pride in the fact that you are making a difference in the lives of others by helping your clients build a more secure future for their families, while helping them protect what matters most: the ones they love. That can impact families in your community for generations to come. And you don’t need previous sales experience or a college degree — just the commitment and desire to succeed. Martin J. Phipps has a “never back down and never give up” attitude that has catapulted him to be one of the top agricultural attorneys in the country. Phipps grew up in Arkansas and Texas as the eldest of six children. A father, trial attorney and entrepreneur, through his building and businesses Phipps contributes to the economic growth in the San Antonio market. Designed by Duran-Hollis Rupe Architects, Inc., Martin Phipps’ namesake The Phipps building, located in downtown San Antonio and doubles as the home of Phipps’ law practices (Phipps Anderson Deacon LLP and Phipps Moore LLP) and the Paramour Craft Cocktail bar. The 30,000-square foot attraction features ingenious uses of metal, a storefront within a structural steel frame and wood accent finishes throughout the law offices and bar. Located along the Museum Reach, across from the San Antonio Museum of Art and downstream from the Pearl, The Phipps at 102 Ninth Street brings Phipps’ eclectic aesthetic to the burgeoning urban development of downtown San Antonio. A spectacular view, craft cocktails hosting events of local organizations such as, Culinaria, Techbloc, Cloud Academy, Soundgarden and the Texas Democratic National Convention Official After Party have catapulted Paramour to top destination status. Paramour is a rooftop cocktail bar serving hard to find, difficult to acquire spirits with specially sourced barrels of bourbon and tequila. The eclectic décor and ambiance reflect the downtown vibe shifting to all things urban and cosmopolitan as our new San Antonio develops. Phipps’ vision to make Paramour one of the best cocktail bars in the country is unstoppable. Phipps’ law practices, the Phipps building and Paramour are changing the physical and cultural landscape of downtown San Antonio. This is just the beginning for Martin Phipps as he is a leading catalyst for growth in downtown San Antonio.

CHRISTOPHER WARE

GENERAL MANAGER/BAR MANAGER Straight from Texas’ panhandle, Christopher Ware brings his Amarillo-born hospitality straight to San Antonio via the rooftop drinkery that is Paramour. Service and hospitality have been the cornerstones of Ware’s professional career as a bar manager, and with Paramour, he spent many sleepless nights fine-tuning the bar program and management style to ensure that not only is Paramour an industry leader in San Antonio, but across Texas and beyond. Ware began his service industry career while attending Texas Tech University in Lubbock, TX, where he waited tables. Even at 18, in west Texas, Ware was able to take pride and respect in the industry that would one day be his dream job. A true multi-tasker of responsibility, Ware joined the military while still in college, and was a United States Marine from 2000-2007, serving in Iraq. While his bar backing and serving days were on hold, it was in the military that Ware learned the discipline to manage a team and teach them the ropes of excellent execution. Ware stated, “I’m the first sergeant of the bar. I’m there to make sure people are able to do their jobs in order to provide guests with superb service. To me, a bar is only as great as the staff that is well provided for and it’s my job to make sure they have the tools and knowledge to be great.”

After Ware’s military duties ended, he moved to San Antonio and started working at locally acclaimed, Bohanan’s Bar and from 2010-2012, serving as Head Bartender. While at Bohanan’s he trained under the late bartending sensei, Sasha Petraske of Milk & Honey in New York City and still considers him a mentor today. After Bohanan’s, Ware was part of the opening team of Chef Jesse Perez’s Arcade Midtown Kitchen (now closed). Here Ware created and executed the bar program, and while he eventually passed the torch, the bar program at Arcade was well known for inventive cocktails, including its namesake cocktail, ‘The Arcade,’ that was created by Ware. At Paramour, Ware is all about perfection, and believes “a client should be able to walk through the door and be transported to an ideal alternative reality,” a reality that Ware personally created. Ware spent years traveling and forming the relationships necessary to hoard the best of the best of whiskeys from across the world. Everything from rare, new finds to vintage whiskeys that are more folklore than reality. “Hospitality has been considered a divine right throughout the western culture and I see myself as a steward of that ideal,” Ware said of his personal additions to the Paramour team. When Ware is not at Paramour training his staff, crafting up fresh cocktails, or tending to United States Bartending Guild (USBG) matters as he’s the secretary of the San Antonio chapter, he’s the quintessential family man, spending time with his wife, two sons, and their three dogs. When asked “why San Antonio?” Ware replied, “no other city in Texas could a tradesman afford a luxury life for his family. San Antonio has been great to me and I will be great to San Antonio.”

AARON ZIMMERMAN VICE PRESIDENT OF PROGRAMMING AND MARKETING FOR THE TOBIN CENTER As the Vice President of Programming and Marketing at San Antonio’s newest theater, The Tobin Center for the Performing Arts, Aaron Zimmerman knew his passion was to work in the entertainment industry, and his specific career goal was that of a job in the live events sector. The path that lead him to booking performances at the Tobin Center started in college and has been an interesting , fun and successful one at that. The Tobin Center is currently ranked by Pollstar as the # 1 venue in the state of Texas, and #1 world-wide for theaters of its size. In 1998, as a freshman at the University Maryland at College Park Zimmerman was the Student Director of concerts on campus and an intern for Cellar Door (now known as Live Nation). In 2002 he graduated with a degree in the Business of Music and moved on to New York City, where working with live events became even more of a reality as he took a position of the day-to-day manager of such acts as Gloria Gaynor, The Duke Ellington Orchestra and Martha Reeves and the Vandellas Zimmerman then moved to Chicago taking a position Jam Production / Theatricals as their Talent Buyer

and Promoter. Here his responsibilities included booking 36 Broadway subscriptions across the country, and booking Chicago based concerts that featured Adult Contemporary music artists. After 4 years in Chicago, his career path took him to Miami where he was hired as the Director Programming at the Adrienne Arsht Center for the Performing Arts. This position gave him a more defined career direction honing his skills as an In-House Building Promoter and Talent Buyer. After Miami, he continued to follow his passion of programming with positions that included the Director of Programming at the David A. Straz Center in Tampa, and working for the owner of the NHL’s Florida Panthers as The Executive Director of Entertainment at The BB&T Center in Ft. Lauderdale. At the Tobin Center, Zimmerman is responsible for booking every show that has graced the stage of both H-E-B Performance Hall and the Carlos Alvarez Studio Theater. These acts have included Paul McCartney, Lionel Richie, Ringo Starr, Santana, Jason Mraz, John Mellencamp, Harry Connick Jr, and Billy Idol. Most recently he’s added Duran Duran, Culture Club and Kraftwerk to the list of exciting acts that will be taking the Tobin stage. In addition to the Tobin presents concerts and artists in the Tobin Studio Sessions, Zimmerman also books all the theatrical productions that make up the Tobin EDGE Series, the Tobin Dance Series and the BMW of San Antonio Signature Series- whose 2016-2017 Season brings the FIRST National Tour of Hedwig and the Angry Inch to San Antonio and the LAST of a SA favorite, Mamma Mia, the Farewell Tour to the Tobin. “The Tobin Center has had a truly changed the landscape of the live music scene in San Antonio” Zimmerman states “Playing a major role in this brings me a great sense of pride, I’ve accomplished a lot in the 3 short years I’ve been here and I’ve also learned a lot. This city is unique and it’s got a great passion for live entertainment. I’m excited to be part of that passion- working at the Tobin Center gives me the opportunity to bring great acts to San Antonio audiences.” Zimmerman is also happy to being doing what he loves, with much thanks going to his father “I am blessed to have had parents that supported me in any endeavor or path I wanted to follow. They encouraged me to follow my dreams and do whatever was going to make me happy. My father once told me ‘if you do what you love, you will never work a day in your life.’ It’s a mantra I’ve always followed. I love going to work every day and my passion has never weaned.” With the support he’s received Zimmerman likes to encourage others trying to break into the tough business of entertainment “Anyone in life can do anything they set their mind to. Yes, it takes hard work and dedication, but never give up. If you have passion to do what you love, you will be successful.”

HOW TO SET GOALS & ACHIEVE THEM. REALLY.

TheSecretToSuccess.com By Jeremy McGilvrey

Y

ou’ve heard it before: “Set your goals first.” “You can’t hit a target that you can’t see.” “Start with the end in mind,” etc. So why haven’t you done it? Why are you stuck? Why do you read these blogs and still get no results? “Sure I have goals,” you say. “So what about it? I try.” No preaching from me is going to make it happen. No self-improvement course is going to help. No inspiring quotes is going to work their magic IF YOU DON’T ACT. If you’re trying to achieve your goals without a plan, without a system, without support, you’re wasting time and getting stuck. Maybe this blog will be the one to push you over the edge. Maybe you’ll reach a point of no return after this blog. Maybe a breakthrough will occur. The choice is yours. Below are 10 tips that I have found useful in helping me see my goals come to pass. I hope you will encourage and inspire you to take action. Because it’s a horrible thing to live a life where you die in the middle instead of the end. 1. Be specific. “I want to be a teacher” is not specific enough. “I want to be a professor at so -and-so college by the end of 2016” now that’s a goal that has specific steps. Being vague about your goals is like using a map to get to a state but not knowing which address you’re trying to get to. You waste your own time (and maybe your loved ones’ patience) with vague goals. 2. Write it down. Post it where you’ll see it everyday. Give it substance. Give it life outside of your brain. You might have several goals going at once. Make a physical ‘temple’ to each of your goals in the form of sheets of paper taped to your wall. You might think, “But what if my goals change?” Then you modify the thesis statement. Chances are, some new information might come to pass that might sway your goal. Then you have to rewrite your goal. Write that new one down. If you don’t know where you’re going, you won’t know how to get there.

3. Your goals should honor who you are. If you have several goals, it’s important that each goal not conflict with the other. “Playing in a rock band” and “having a great relationship with your spouse” can potentially conflict. Some great Life Masters have found ways to turn conflicting goals into goals that support each other. Maybe there are ways to create music AND allow your relationships to inspire that creativity. And maybe that creativity can help you bring a spark to your relationships. In this way, your goals can reflect the best in you. 4. List your steps. Realize that there are steps toward a goal. Don’t set a goal without them. These can be a list of “skills needed,” or “people to contact,” or “gathering needed information” to make important decisions. This last one is so important, because most often people get stuck because of one reason. They don’t have enough information. Which brings us to number 5… 5. Ask the right questions. I was torn with having to decide about an important job offer. Unfortunately, what I thought would be a dream job didn’t fit well with the dynamics of my family. There were important questions to be asked: salary, housing costs in the area, living expenses…When I finally asked the hard questions, I was able to see how the job didn’t fit within my higher goals. I switched gears and decided it was a no-go on the job. That doesn’t mean I have given up on my goal. I have reworded it in another form, but it still honors who I am. 6. Give yourself a time line. Set deadlines…No. Let’s call them “lifelines;” “Deadlines” insinuates a death or an ending. When you complete a step, new “life” is breathed into your path to goal fulfillment. Without a calendar, your days will float by and before you know it, it’s been months and you’re beating yourself up for not getting any further. Then you become discouraged and demotivated. 7. Commit 1 hour a day to working closer to your goal. If it doesn’t serve your goal, it is a waste of your time. It can be as little as learning a bit about programming a day if your goal is to land a specific computer job. Playing computer games might relieve stress, but won’t get you closer to that goal. As Steven Pressfield in “The War of Art” says, “Go Pro.” Pros, as opposed to amateurs, put so much importance into their craft that they cannot live without doing it daily. If writing is what you want to do, do it. Everyday. Sacredly. Religiously. Set aside time away from people. This is your time. When you do this for yourself, it gives you time for others. 8. Set up a support team. You don’t trust yourself? If you can’t hold yourself accountable, then entrust your goals to a friend who’s main job is only to ask, “What did you do today that brought you closer to achieving your goal?” or “Where are you now?” 9. Persist until you get a “No.” Often times, when you’re depending on someone’s answer to a question, an important question whose answer will help you get closer to your goal, we wait and wait, thinking that they’re thinking about your question. Often times, they’ve just forgotten. Persist until you get a “No.” You’ll be surprised at how many people genuinely want to help you. And always remember: Never take a “No” personally. 10. Use a system and stick with it. Be it old school paper and pen or 21st century task organizer apps on the web, find a system and persist. I love the quote by Michael Gerber in his highly influential book E-Myth. Gerber writes: “Systems permit ordinary people to achieve extraordinary results predictably. However, without a system, even extraordinary people find it difficult to predictably achieve even ordinary results.” Finally, Enjoy the process. Setting and achieving goals are what make us human. As you take the steps to goal fulfillment, you’ll meet friends along the way, build lasting friendships and acquire new skills. Be grateful that you can make a decision to MOVE FORWARD. Today. Right now. It’s time to live. This blog is not “me writing to you.” It’s “yourself speaking to you.” This blog post has to become your own inner voice. It’s not about me. It’s about you. Your life. Get on with it For more success tips visit: www.TheSecretToSuccess.com.

GINA HARTBARGER As general manager for the County Line River Walk location for the past 20 years, Gina Hartbarger had been on the lookout for a space downtown for County Line’s overflow crowd, and for a place to hold private parties in this incredible nook of the city. When she learned Starbucks was vacating the two floors above County Line--with restaurant space on one level and perfect private meeting space on the third floor--she jumped at the chance to grab this perfect space..and Barriba Cantina was born in late 2011 as the newest restaurant for the County Line owners. Make no mistake: Barriba Cantina is Gina’s baby. The “Mexican street food” concept stemmed from her roots as a life-long San Antonian. “Growing up here as a kid in a family that is half German, half Hispanic, I was always eating cucumbers, mangoes and watermelon with salt and great fresh tortillas,” Gina adds. With that history and as GM of Barriba, Gina has overseen the creation of a “wild menu of cocktails infused with fresh fruits and juices and fruit-infused liquors, to reflect what is in season.” The menu also reflects her insistence on fresh foods, seasonal products and locally grown items, with favorites such as Baja Pescado (tilapia seasoned with a mile ancho chile rub, served on corn tortillas topped with corn pico de gallo, jalapeño ranch, avocado tomatillo salsa and cotija cheese) and Tacos Del Rey (beef marinated with mild chipotle chilies and a blend of Mexican spices, then cooked and served on corn tortillas topped with fresh chipotle slaw, caramelize onions, avocado tomatillo salsa, corn pico de gallo and cotija). Her infectious humor also guarantees that Barriba has an emphasis on fun and energy, so the restaurant features free live music every night (and even during the day sometimes) and funky, bright interior design with lots of beautiful Mexican tiles, murals, fixtures and local art.

While the majority of the team is focused on work at the office, Jennifer Soliz is the friendly face behind every correspondence, building a relationship with each client. Whether it’s a meeting to go over the vision for a website or to get final approval on that big campaign before launching, MORGAN Jennifer is there to make sure ALEJANDRA things are running smoothly and are communicated every step of the way. MASHELL The real magic happens when the team comes together to discuss the project. Between the tailored content by Morgan Grant, Vuepoint’s resident copywriter, and the designs that come to life through the mind JENNIFER of graphic designer, Mashell Phillips, the project comes to life and creates energy in the digital space. Digital marketing is a relatively new concept. It’s a fast paced and quickly evolving animal that the women of Vuepoint have no issue tackling head on. Mashell adds that "We want to continue setting the bar for digital marketing in San Antonio. There are so many great opportunities, and we’re excited to see Vuepoint continue to grow."
