This year, HCA will launch just under a hundred graduating students towards their bright futures, which in and of itself is gratifying for the staff. But what they seem to love the most is observing the progress that the students make over their four years at the school.

get ahead of myself in case we turn another dark corner, but I’m letting myself feel a little hope these days, smiling a bit more, and embracing the new beginnings that await us on the horizon. And while the pandemic has been a trying time for all of us, it hasn’t come without its lessons. Whether we’ve learned how to better tend to our mental health, to appreciate the time spent with family, or picked up a new skill such as baking bread or knitting, it is important to look at any potential positives lockdown and quarantine have supplied us with. Even if it has mostly sucked. I’m not belittling the struggles we’ve all faced together, but I am championing a brighter future and trying to soak up all the silver linings I can find. It’s my own process for tending to my mental health. In light of all of those well-earned lessons though, we are learning to live in a different world—one that isn’t quite the same as it was before and may honestly never be again. But again, there are positives coming out of this pandemic. Our annual How To section this month explores a breadth of topics that meet us where we are today. Whether we’re looking forward to tomorrow and the wedding of our dreams, becoming steadily more capable at handling our affairs virtually, sprucing up our home (while we’re spending so much time here), or looking to focus on our health, the how to guide has a little bit of everything that applies to us today. Since COVID-19 first disrupted lives worldwide in the spring of 2020, Cheryl Francis, president and founder of Grace & Mercy, and her volunteers have been working tirelessly to serve those most severely affected by the crisis in our local community. But in the midst of a pandemic, how are the Girl Scouts Heart of Central California (GSHCC) troops going to reach clientele? An online cookieordering platform and virtual cookie booths, that’s how! “While we’re in higher risk colors and levels, we are recommending contact-free options like virtual booths and drive-thru order pick up,” says Sara Hanson, Communications and Public Relations Specialist for GSHCC. Part of that plan is the online system that was developed four years ago to help friends and family outside of the region support Girl Scouts they knew. This year, the platform is getting an extra marketing boost to assist with pandemic cookie sales. To order, use the individual link provided to you by a Girl Scout,

or, if you want cookies but don’t know anyone personally, log onto GirlScoutCookies.org and place an order. When your order isn’t linked to a specific salesgirl, you will be connected with a local troop so funds stay in the community. Other marketing tactics will include virtual booths. For these, girls can utilize social networks to alert people in the area of drivethru purchase opportunities. The emphasis is on remaining contactless, so people simply drive-up to the booth, order their cookies, and girls place them into their trunks. Physical money cannot be exchanged but each girl will have access to a digital cookie sales platform that allows for ordering and payment. Some girls are using the virtual platforms as more of an informational tactic to draw customers in. This way, girls can communicate what they have

The student at John Mccandless Stem Charter School plans to continue her career in dance, which includes a long list of awards from solos and group dances at national competitions and a first place overall win in her age category from Spotlight Dance Competition in 2019 for a hybrid blend of contemporary, modern, hip-hop, and popping, into adulthood. “I'm not exactly sure [what I want to be when I grow up] yet, but I know it has something to do with dance.”

PHILANTHROPY AND FORKLIFTS HOW ONE COMPANY SUPPORTS ITS COMMUNITY DURING A PANDEMIC BY SUZANNE LEDBETTER When 2020 was wrapping up, Blake Burnham, general manager and vice president for Wattts Equipment, and his executive team, wanted to give back to the communities his company serves. Having had a successful year of sales, he looked for ways to help the non-profit community reeling from the longterm effects of the COVID-19 pandemic. Watts Equipment, founded in 1967, is a forklift and supporting material handling dealership specializing in Crown and Toyota products. It’s a family-run business in its

third generation, and philanthropy is at the base of the company’s foundation. So, when Burnham was looking for a way to make a donation at year’s end, he sought out organizations in need of forklifts to make them more efficient. “When my wife’s grandfather Virgil, started Watts Equipment in 1967, philanthropy was at the core of our company’s foun-
dation,” Burnham said. “With success comes an obligation to give back to our community. And the best way we could help our community was to make our non-profits more efficient in their distribution of products.” The response was overwhelming. What began as a 12 days of Christmas giveaway, turned into the donation of 13 electric pallet jacks to non-profits. With COVID-19, fundraising for many organizations came to a screeching halt while demand grew exponentially. Food banks and community centers were scrambling to serve their constituents. When Burnham discovered organizations like the Oasis Center were moving pallets of food and water by hand, he knew the electric pallet jacks could make a difference. With the help of Second Harvest Food Bank, Watts Equipment found 13 worthy non-profits in need of the machinery, and the impact was immediate. From food banks to the Salvation Army to St. Joseph’s Hospital Foundation, Burnham doled out the pallet jacks with pride and the charities were thrilled to receive them. “The new equipment helps us move supplies safely and efficiently," says Keith Jess, manager of materials management at St. Joseph's Medical Center. "Watts Equipment understands community and after 50 years in business they understand the importance of St. Joseph's Medical Center too. My team and I are overwhelmed with gratitude."

TREAT AORTIC VALVE DISEASE WITH MINIMALLY INVASIVE SURGERY

TO GUIDE SPECIAL PROMOTIONAL SECTION Aortic valve disease has multiple causes. For
some, it’s a genetic condition, while for others, the disease develops over time. In either situation, aortic valve disease refers to issues pumping blood from your left ventricle (the main pumping chamber in your heart) to your aorta. For a long time, open heart surgery was the best method of treatment for those with aortic valve disease, but a less-invasive, even outpatient, procedure has reduced some of the risk associated with the surgery for those who qualify. Dr. Ramin Manshadi, cardiologist at Manshadi Heart Institute, underwent training for Transcatheter Aortic Valve Replacement surgery (or TAVR) at German Heart Hospital and UC Davis Medical Center in order to bring this lessinvasive treatment of aortic valve disease to his patients in San Joaquin County. In many cases, TAVR can properly treat severe aortic stenosis and relieve many of the side effects that come along with it. Once reserved for those who were too sick to undergo open heart surgery, the benefits of this less-invasive procedure are now available to more people. “Given the updated valves and less need for general anesthesia over

time, the recovery is now extremely good,” Dr. Manshadi says. Those who opt for a TAVR procedure will likely experience faster recovery, minimal scarring, a shorter hospital stay or no hospital stay at all, less pain, and less anxiety. From a risk perspective, the biggest risks of TAVR are the same as open heart surgery, but the chances of experiencing one of these poor outcomes is up to 20 percent less for severely ill patients when compared to open heart surgery. Instead of cracking your chest, during TAVR doctors use a catheter to reach the narrowed aortic valve, either entering from an incision in your leg or chest. Then, using imaging equipment, doctors guide the catheter to your heart where, in most cases, a balloon is inflated to position the replacement valve. Once the replacement

valve is in the correct position, the catheter is removed through the same incision. If you have been diagnosed with severe aortic stenosis, consult a cardiologist to determine if TAVR could work for you. In many cases, the procedure reduces or eliminates symptoms of disease and helps people get back to normal life faster than open heart surgery. Whether it’s fine lines and wrinkles or dull, saggy skin, we all have problem areas that age our complexions. With the right care and products, however, you can shave as many as ten years off of your appearance. The key is consistency. Good skin starts with good skincare. The right products make all the difference. However, it’s also important to create a skincare routine that is manageable. Crafting a ten-step nightly regimen only works if you commit to it. Every skincare routine should include some basics: cleansing twice daily with a gentle cleanser, using an exfoliant with retinol or retinoid, moisturizing nightly, and applying sunscreen every morning. TREAT GLAUCOMA PAIN-FREE BY NORA HESTON TARTE Over 40,000,000 people are affected by glaucoma worldwide. Classified as a chronic disease with optic nerve damage and loss of peripheral vision, glaucoma can be progressive and irreversible, and, in many cases, it causes a painless loss of sight. The damage to the optic nerve in glaucoma is commonly caused by a high intraocular pressure. “It is well established that lowering the intraocular pressure can slow the process of optic nerve damage,” says Dr. Joseph Zeiter, Jr., an ophthalmologist at Zeiter Eye Medical Group. “The degree of pressure lowering necessary to prevent optic nerve damage is different for each person and each optic nerve.” Treatment strategies for glaucoma ultimately are aimed at lowering eye pressure as much as possible, and advancements have led to easier and more effective ways to do so. Throughout the

U.S., eye drops are commonly the first line of defense against glaucoma. If that fails to produce maximum results, there are other medications that can be used to achieve the desired pressure level. “Unfortunately, there can be difficulties with compliance, cost, and side effects with many of these medications,” Dr. Zeiter says. As a result, laser therapy may be used instead of medication to decrease the eye pressure. Endoscopic Cyclophotocoagulation, or ECP, is a laser treatment procedure that targets part of the eye called the ciliary body. These steps also help reduce the likelihood of contracting other illnesses including the flu or common cold. “Get vaccinated,” Amir urges. “Even in times like this, some people are refusing to get the vaccine and are taking a let’s wait and see approach.” For locals, Hammer Lane is scheduled to get the COVID-19 vaccine made by Moderna between mid-February

to early March. Their roll out will be on an appointment basis and will follow the current CDC guidelines. During these times, ones’ mental well-being can also be threatened. Recognizing there is a problem is often the first step, but with the daily stressors people are facing as a result of the pandemic, it may be harder to decipher what is and isn’t a cause for concern. If feelings of stress, anxiety, worry, or sadness are consistently interfering with everyday life, it may be time to seek help. And, in the meantime, try to get relief from symptoms or prevent feelings of anxiety and depression by incorporating some of the following into your routine: use technology to your benefit such as apps, FaceTime, or Zoom to keep close to your social circle, listen to favorite music, take time for meditation or self-reflection,

As much as we wish they didn’t, accidents happen. While car collisions can be stressful, they don’t have to be unmanageable. If you ever find yourself in an auto accident, first things first: take a deep breath. Then, follow these straightforward steps to get your car repaired and your peace of mind restored. You and your vehicle will be back on the road in no time! Directly after the crash, make sure to stop immediately and pull over if possible. Ensure everyone at the scene is safe and call 911 if there are any injuries. Then, you’ll need to exchange names, addresses, telephone numbers, and driver's license numbers with all of the drivers involved in the accident. It’s also a good idea to take photos of any damage caused in the collision. If the accident is minor and you’re able to drive your car away from the scene, the next thing you’ll want to do right away is

schedule an appointment with a trusted auto repair shop. If the damage is more extreme, call roadside assistance or your insurance provider to coordinate a tow and have your vehicle sent directly to the body shop. But some don’t consider that everything you need now won’t be everything you need later. Each one of these items checks a box for the aging senior looking for a home that caters to them.

LOW MAINTENANCE YARD A big, beautiful backyard is often number one on a family checklist because you can’t really create more outdoor space. Either the home you buy has a big yard or it does not. However, the same is true in reverse. A yard that requires a lot of maintenance may be hard to keep up with. You can xeriscape a yard—meaning putting in landscaping with little maintenance requirements such as rocks and low-watering plants—but the size of a yard isn’t exactly malleable. As a result, seniors may want to downsize to a house with a small yard, or even no yard at all. A small patio with chairs will be easier to manage than an acre of aging trees and a garden that needs lots of attention.
SINGLE-STORY HOME/ DOWNSTAIRS BEDROOM
Whether you’re there yet or not, avoiding multiple daily treks up and down stairs will save your joints some serious pain while also reducing the
risk of falls. If there is a downstairs suite in your home, that can also help, as the upstairs bedrooms can be saved for spaces you won’t need to be in on a daily basis. If your home doesn’t have these features, there are possible installations that can help. First, an alert necklace or bracelet that you can use in case of a fall. Secondly, a chairlift may be needed to make trips up and down stairs more manageable.
LOCATION Say it with us—location, location, location. Deborah suggests asking yourself this question: “Is it close to friends, family, medical facilities, [and] shopping centers?” Ease of access becomes more important when driving at night gets more difficult. Choosing a home either walking distance or a short drive away from all the businesses you need to visit on a regular basis (think a grocery store, post office, doctor’s office, and even hospital or urgent care) can create a more manageable lifestyle. Being close to family and friends also increases
the chances that loved ones will be able to assist with tasks from time to time. One thing Deborah points out isn’t always a good fit is a rural home. Retiring in the wilderness may sound serene but being far from these amenities can be detrimental.

The ease of access in getting around your property is also important. Choose a home that doesn’t have a lot of stairs leading up to the front door, or a big step down into the garage. Handrails, chairlifts, and wheelchair ramps can help when mobility becomes a concern, but it may be easier to choose a space that simply doesn’t present these obstacles. Being able to get in and out of your house as well as to and from your car without fuss is important.
ENERGY EFFICIENT FEATURES In addition to physical changes, budget and monthly income may also change drastically upon retirement. If you’ll need to save some pennies, energy efficient features including solar, new HVAC and appliances, and LED lighting can all help keep monthly costs low.

It’s not hard to sell a weekend in Tiburon—lovely weather, 360 degree views of all of the bay bridges, accommodations on the water, high end restaurants from star restauranters including Michael Mina—it’s all here for a beautiful weekend away. Tucked onto the northside of the San Francisco Bay, this quaint seaside town is bursting with local flavor. There’s a little bit of outdoor adventure, a little bit of serenity, and a lot of good food just a short trek away from the bay, and the surroundings are sure to tantalize all of your senses, from the sounds of waves lapping at your doorstep to the aromas of fresh fish getting served up at the local eateries. Step into this stunning escape and get lost in the small-town charm as you dine on seafood favorites, hike to new heights, and spend long evenings taking in the scenery off the Tiburon Peninsula. escape TAKE IN THE SIGHTS
It never gets too cold in Tiburon, or too hot for that matter. Located on the San Francisco Bay, rolling fog blankets the town, cooling it from top to bottom. But when the fog clears away and the sunshine peaks through, the true beauty of the peninsula comes alive. From the water to the mountains, there’s plenty of ways to explore the varied terrain. We recommend starting with a trip to Angel Island, a short ferry ride away from the small downtown stretch of Tiburon. Ride over (it takes about 15 minutes) and prepare for an excursion. The best views are proffered on the more difficult hikes. A map guides the way for several trails; a favorite takes visitors to the top of Angel Island where they catch 360 degree views of the bay, and you can glimpse all three Bay bridges from one spot. Pack a lunch to enjoy at the picnic tables located at the top, but don’t underestimate the trek. The hike is about 3.5 miles to the peak of Mt. Livermore and starts with 144 stairs along the perimeter trail at the bottom. From there, it’s a steady climb to 788 feet. There are other things to do on the island. Guided tours
offer up history of the former military installation. Or you can rent (or bring your own) bikes to explore off-foot. From 1910-1940, an operational immigration station—now a historical landmark— processed more than 175,000 Chinese immigrants, and is now marked as a historic landmark. If you want to hike but don’t want to over-exert yourself, choose the path more traveled. A 5.5 mile perimeter trail will take you all the way around the island without the heavy uphill. Lunch is served at a small

eatery and gift shop that stocks sandwiches, beers, and hot dogs near where the ferry lets off. Some days, live music is played on the deck where patrons can enjoy it as they grub and toss back a post-hike brew. Hang around for a bit before catching the ferry back (you can see them come in from the deck). If you haven’t figured it out yet, Tiburon is all about the views. Its unique juxtaposition means it’s easy to find a golden gate backdrop for just about any Instagram photo you take. The Hippie Tree is a tourist spot ideal for snapping a few photos. Take a quick walk—it’s dirt

so dress accordingly—up Gilmartin Drive (it’s best to park around 100 Gilmartin Drive) and walk up the fire road until you hit a towering eucalyptus (and probably a LOT of other tourists). Several swings hang from the high branches, and if you pick the one in the middle toward the front, you can snap a photo overlooking the bay waters with no other swingers in view. Expert Tip: Before you leave, get a few shots in front of the bridge. Here, the scenery does all of the work. Another way to enjoy the endless views of Tiburon is on Paradise Drive. The road hugs the water as you loop around, trekking a few miles out from downtown. This is a good place for spotting animals in the water, from dolphins to sea lions dipping and diving off the shoreline. If you’re in the area, don’t skip the opportunity to get on the water. Bring your own kayak or paddleboard and launch off a neighboring dock or grab a couple of rentals from a nearby spot (San Francisco, Sausalito, or San Rafael). Sea Trek, in Sausalito, will likely be the closet rental shop to you. Sam’s Anchor Café

The best view in all of Tiburon may just be at the Water’s Edge Hotel. The name perfectly describes the boutique hotel, perched on a historic dock overlooking the bay. While many rooms proffer their own views on private balconies, the upstairs deck, washed in sunshine on a clear day, is the ideal spot to take in a sunrise or sunset. Complimentary coffee and breakfast delivered to your room each morning can be taken to the outdoor space, complete with cushy couches and large umbrellas, and wine can be enjoyed in the evenings, as those painted orange and pink skies give way to a landscape filled with twinkling stars above a lineup of sailboats. When allowed, the hotel ups the ante on extras, providing a wine reception for guests to enjoy local bottles and small snacks on the rooftop deck.

Water’s Edge Hotel
While the views are just about the only reason you need to stay at this luxurious hotel, the location is its other big draw. Not many hotels take up waterfront property on the bay, but Water’s Edge is one of the lucky few. Not to mention its Main Street address means its smack dab in the middle of all the action (which is sometimes a lot and sometimes a little depending on when you visit). It’s easy to walk to dinner or a champagne and caviar nightcap before heading back to the hotel for a deep slumber. In the mornings, breakfast is right outside and when you’re ready to explore outside of Tiburon, the ferry station is a stone’s throw away. 25 Main St.

There are many places to delight your senses in Tiburon. Make room to taste the local bounty while you’re in town, from grab-

and-go lunches and coastal wine to patio beers and fresh catches. You can most likely spot Servino Ristorante from the comfort of your bed. Also on Main Street, the Italian eatery has ample seating, including an upstairs deck you won’t want to miss. It’s hard to pass up an opportunity to order calamari anytime you’re close to the water. The Monterey Calamari here—large fried rings—is served with an herbed aioli and marinara sauces for dipping as well as a lemon wedge. Pacifico Shrimp and the Polpettine (lamb meatballs) also make excellent starters. For your entrée, however, we

The shop sells delicious baked goods to take home by the box as well as fresh made breakfast and lunch dishes. The avocado toast is simple yet elegant, a thick slice of Rustic bread, topped with smashed avocados and Maldon salt. The breakfast panini, served on warmed focaccia bread with organic eggs, French ham, and cheese is another worthy option. With a need for a familyfriendly steakhouse and lively bar scene, Woodbridge welcomed Oddfellows Tavern with hungry bellies and open arms. Steaks, lamb chops, and the mouth-watering chicken confit. Locals will tell you to try their signature fish ‘n’ chips, crispy bacon Brussels sprouts, and the N.Y. steak sandwich. Large portions packed with flavor—these are good eats in the neighborhood! With a premium wine list and lavish, whimsical cocktails, the tavern is already a popular destination. Located where the former Cactus Mexican Restaurant once sat, the newly renovated dining room and vast patio are the perfect spot to make yourself at home. The seasonal cocktail list is just what we all need to get our groove

back dining out. At Oddfellows, they master the modern spin with tricks like adding blood orange to an old fashioned and making infused simple syrups to take their libations to the next level. The brunch game at Oddfellows is also strong. With staples like avocado toast, eggs benedict, and French toast, there is something for traditionalists craving their usual fare. And for the adventurous, the prosciutto tartine, chicken and waffles, and brunch burger will help you eat outside of the box. It’s important to note that the restauranters don’t take themselves too seriously either. Take for example the beermosa, which is just your light draft beer topped with orange juice. It’s perfect to down after a night out on the town. And we’re loving the Oddfellows Bellini, too. Crafted from Kettle One peach vodka and

orange blossom vodka, the booze is topped with peach puree and sparkling wine. You also might opt for the One Stop Shot, a breakfast in a shot topped off with a bacon chaser. After all, you can never have too much bacon. We also can’t forget to talk about the desserts. The pastry and dessert team takes an old school dessert like a Baked Alaska and makes it their own. The conventional recipe simply calls for ice cream and meringue, but this Baked Alaska is a delight for the senses and the perfect ending to any night out. They start with a boozy brandy coffee semifreddo and cover the creation in a fluffy meringue before giving it the flambé treatment. When it comes down to it, here’s the real advice: For any meal, day or night, get in on the hype and give Woodbridge’s newest steakhouse a try.

DIRECTIONS Pour ingredients over ice and stir for a few seconds to chill. Then, strain into an old-fashioned glass over one large ice cube and garnish with an orange twist or slice.

With its natural infusions, we can create a cornucopia of cocktails ideal for the season—light and fresh without sacrificing flavor and combined with fresh fruits for added zing. Ian Bens, chef at Towne House Restaurant at Wine & Roses in Lodi, uses gin in the restaurant’s seasonal cocktails both

He’s sharing two recipes for Towne House’s available spring sippers with all the tips on how to make them like the pros. 1 bag, (454g) fresh or frozen cranberries 12 oz. (340g) organic sugar Combine cranberries and sugar in bowl. Pour into a vacuum bag and seal, crush berries lightly in bag. Leave overnight to dissolve. Cook in the bag at 160F for one hour, strain through a fine filter pressing lightly to release juice. Or, heat cranberries and sugar gently in a pot until dissolved. Do not simmer. Strain as above, through a fine filter, pressing lightly to release juice.
DEHYDRATED CITRUS CHIPS Choose small Meyer lemons, blood oranges, or another citrus. Rinse in a bowl of water, dry off. THE ULTIMATE CHEESE and WINE PAIRING WITH A LOCAL TWIST BY SUZANNE LEDBETTER One of life’s greatest pleasures derives from the act of swirling a glass of wine, taking in the aromas, observing the color, and detecting flavor profiles. But this spring, let’s take our wine drinking experience to the next level by adding one of life’s other guilty pleasures—cheese! There is a ton of information out there on what cheese pairs well with different wine varieties. But here at SJ Mag, we’re making it even easier for you to pair your favorite local wine with some of our favorite cheeses. Trust us when we say you won’t be disappointed.
ALBARIÑO AND GOAT CHEESE
CHARDONNAY AND TRIPLE CREAM BRIE

Grab a bottle of Bokisch Vineyards Las Cerezas Albariño to start. This Spanish wine with bright acidity and hints of lemon zest will pair perfectly with the creamy, tangy quality of goat cheese. Feel free to add a little lemon zest or orange marmalade to accompany the cheese, but the albariño and goat cheese are righteous all on their own.
Let’s begin this round with a local favorite, Harney Lane’s Home Ranch Chardonnay. It’s creamy, round on the palate, and has all the hallmark buttery goodness one would expect from an oaked chardonnay. It even has a baked apple element that begs for one of our favorite cheeses of all time—a triple cream brie. Want to splurge? Look for Mt. Tam. Triple Crème Brie.
We chose to uncork the Oak Farm Vineyards Zinfandel for this combination because of its exuberant youth, fruit forward flavors, and mild tannins. It pairs beautifully with cheeses that have nutty, sweet characteristics like a Pecorino Romano. The sharp finish of the cheese really balances out this Lodi zin.
Reach for a bottle of Klinker Brick’s Farrah Syrah, a silky smooth dark garnet wine bursting with black raspberry and hints of toast. The fine tannin structure stands up perfectly to the nutty, salty, aged gouda. Be sure the cheese is aged at least 18 months, like the ones made by Old Amsterdam.

COUNTRY COCKTAILS BROKEN ARROW SALOON SPECIALIZES IN THEMED DRINKS
BY NORA HESTON TARTE / D DAN HOOD Broken Arrow Saloon opened in October 2019, an official rebrand after Lori Fountain bought the infamous Irish Pub, Shamrock, in Tracy. She describes the process as a “bar rescue” without all the help, remodeling the large space that, she says, was run down when she purchased it. With the realization that Tracy didn’t have a true country bar, only a handful of dive bars without enough room to dance, she decided that is exactly what the city needed. “I just thought that our town needed a venue where we could have live music and people would dance,” she says. Fast forward 18 months and the bar is doing better than expected, serving up a collection of patriotic-themed cocktails that are meant to be more fun than fancy ($5-9) in a laidback atmosphere perfect for regulars getting together after work, perhaps over a round of pool. At Broken Arrow Saloon, patrons can expect exactly what the name entails, according to Lori. “You kind of know you’re going to be going to a casual, fun, country place,” she says. Line dancing, karaoke nights, and live music are all part of what makes the venue country, but the list of cocktails with tongue-incheek names is the other big draw. Where else can you order up a ‘Merica Shot, a red, white, and blue shooter, or a LoLo MoMo, a twist on the classic mimosa spiked with vodka. Together Lori and her staff turned out a fun list of drinks that really signify what Broken Arrow Saloon is all about. And when they were stumped, they turned to customers for help coming up with the monikers, like the Lasso Lady, a Truly-based cocktail named by a regular.

INSTRUCTIONS In a large bowl, whisk together the olive oil, lemon juice, honey, and salt and pepper. Add the arugula to the bowl and toss. Top with the shaved Parmesan, sun dried tomatoes, pine nuts, and pepper to taste. Makes four cups. Perfect with fish, chicken, or shrimp.
ARUGULA SALSA VERDE INGREDIENTS
2 plum tomatoes, diced (optional) Finely grated zest of 1 small lemon 1 garlic clove, finely chopped 3 cups arugula leaves, finely chopped ¼ cup coarse fresh breadcrumbs 1 tablespoon finely chopped capers 1 tablespoon red wine vinegar ¾ cup extra-virgin olive oil, plus more ¼ cup finely grated Parmesan
DIRECTIONS Mix tomatoes, lemon zest, garlic, arugula, breadcrumbs, capers, and vinegar in a small bowl. Using a wooden spoon, slowly mix in ¾-cup oil, then add Parmesan. Pour a little oil on surface to keep salsa from discoloring.
