Moses is the man at the helm of the The Community Foundation of San Joaquin, a Stockton native, first generation college graduate, and proud son to Mexican-American immigrant parents that started off in life very humbly picking onions and tomatoes in the fields around Stockton. Moses started his career in public service in 2012 when he was elected to serve on the Stockton City Council. In 2016, he was elected as chairman of the San Joaquin County Board of Supervisors. CIVIC DUTY COMMUNITY FOUNDATION CEO GIVES BACK TO HOMETOWN  BY NORA HESTON TARTE / D

When COVID-19 caused shelter-in-place orders in San Joaquin County, the Community Foundation mobilized to start the San Joaquin Emergency Response Fund, a fund used to support food banks, essential social service providers, homeless shelters, and schools as the disease and closures quickly affected everyone in the county. “As the health crisis grew, so did the community’s needs,” says Moses Zapien, CEO of The Community Foundation of San Joaquin. As a result, more money was needed to take care of the community and with the help of Mayor of Stockton Michael Tubbs to start the Stockton Strong COVID-19 Relief Fund, professional football player Brandin Cooks to start the Stockton Children’s Fund, local businesses, longtime donors, and outside foundations, the Community SJMAG.COM | JULY 2020

Foundation was able to raise $1 million in just eight weeks. “It’s by far, the most we ever raised and given out in such a short amount of time,” Moses says. At first the money was gifted to local nonprofits working on the frontlines of COVID-19 relief efforts. The initial goal was to lessen some of the effects the pandemic had on both businesses and individuals. Now efforts are shifting to address economic issues that have arisen as a result of the pandemic. Moses is the man at the helm of the foundation, a Stockton native, first generation college graduate, and proud son to Mexican-American immigrant parents that started off in life very humbly picking onions and tomatoes in the fields around Stockton. Moses started his career in public service in 2012 when he was elected to serve on the Stockton City Council. In 2016, he was elected as chairman of the San Joaquin County Board of Supervisors. He also co-founded the Stockton Little Free Libraries Association in an effort to build 100 neighborhood lending libraries circulating children’s books throughout the city. Since 2017, when Moses first took over as CEO, he has carried out grant and scholarship programs, building charitable funds that can be deployed in the community to help move the needle of progress. “Philanthropy has the potential to touch every segment of our society and it is a powerful force for

doing good in the world,” he says. Perhaps that’s why Moses says one of his favorite aspects of his job is gifting money to local charities. It may sound like an easy job, but a lot of consideration goes into each award. Part of the problem is that there isn’t enough money to fund every endeavor, so Moses and his colleagues have to research organizations and their missions to choose where money will best be spent in SJC. Becoming CEO wasn’t something Moses set out to do; he was simply fulfilling a desire to serve his community and engage in civic duty, two attributes his parents instilled in him at a young age. “When I was very young, I remember my father would take me with him to the voting booth on election day,” Moses recalls. “When I grew much older, they supported wholeheartedly my decision to run for local office.” During one election, Moses’ mother attached one of his fliers to her purse so she could tell people everywhere she went to vote for her son. Moses won that election. As a Stockton native, Moses is in a position

to serve the community well, understanding the nuances that make SJC unique. Raised by small business owners with a farming background, Moses appreciates the local agriculture, choosing the best bounty for homecooked meals—Linden cherries, Lodi grapes and wine, and Ripon almonds. When he has time off, Moses spends it visiting his favorite cafés, restaurants, and wineries within SJC, and with his family, which includes more than 60 first cousins—"I’ve lost count,” he jokes—most of whom live here. “I’ve been fortunate to have had some amazing opportunities to serve my community—both in elected and unelected positions,” Moses says. “Over the years, I’ve realized however, that to be a leader, one does not have to have a fancy title or even be in a position of authority. One simply has to have a heart for serving others.”

CARING for YOURSELF IN QUARANTINE SELF-CARE ISN’T SELFISH  BY NORA HESTON TARTE 2020 has been a year. With everything going on around us, many are feeling overwhelmed, angry, sad, even hopeless. Self-care is always important, but living through a pandemic, being home from work or working from home, playing teacher and full-time caregiver to your children, and giving up social interactions only makes the need for selfcare stronger. “Many people equate success to what they have achieved, but, there is no control over the outcome of anything, you only have control over your input. So, try defining success based on your input, behaviors, and how you treat yourself and others,” says Shabneet Brar, M.D., a psychiatrist with San Joaquin General Hospital. Most of what you may be feeling is normal—or as normal as anything is right now—but that doesn’t change the low we can feel from insomnia, irritability, stress, anxiety, and confusion. Take steps to improve your mental well-being and better equip yourself to serve others, including your family and work. If these feelings are not addressed in the here and now, they can have lasting effects that include alcohol and substance dependency or poor physical and mental health. Dr. Brar recommends taking a break from the news and social media. Leave your phone in another room while you engage in an activity you enjoy such as reading a book or gardening. “If you really want to

give yourself a break refrain from posting on your favorite social media post during this time,” she suggests. “This can be an empowering experience.”

Other ways to care for yourself during the pandemic—when some of your favorite self-care methods may be unreachable—are to exercise, practice yoga or meditation, pick up new hobbies, maintain a good sleep schedule, or create your own home spa. If anxiety and stress during the pandemic are interfering with your daily activities, call your healthcare provider. Talking to someone can help. If guilt over taking care of yourself is causing you stress, step back and reevaluate how you look at self-care. “Self-care equals self-respect. Taking care of yourself leads to improved self-confidence, self-esteem, and self-worth,” Dr. Brar says. Not to mention, we can’t pour from an empty cup. Prioritizing ourselves allows us to perform better in other parts of our lives and show up for those who need us.

Instead, he turned his free time into a mission, serving San Joaquin County healthcare workers and beyond by 3D printing much-needed PPE equipment. “The PPE shortages really hit home,” Dr. Cajee says. “We couldn’t get proper Level 3 or N95 masks in our dental practice. And I was shocked to learn that… early in the pandemic hospital and nursing home workers couldn’t get PPE either.” Recognized in the top 10 percent of dental offices nationwide for technology,

Dr. Cajee was already adept at using a 3D printer in his dental practice. With all of the necessary equipment at his fingertips, he didn’t hesitate to start creating the PPE equipment needed across the county. The PRINTtoPROTECT Coalition was born. With the help of community entities such as The Community Foundation of San Joaquin County and Mayor Michael Tubbs’ StocktonStrong, Dr. Cajee and his colleagues were able to fund the project and produce 10,000 face shields for area healthcare workers. Fire Prevention on FOUR LEGS SJC RESIDENTS HIRE LOCAL GOATS AND SHEEP TO MOW FIELDS  BY FAITH LEWIS / D FRANKIE ARBURUA Wildfires have always shaped California’s landscape, but as warmer spring and summer temperatures return year after year and cause earlier snowmelts, the state’s wildfire season is starting earlier and lasting longer. Before the hoses and fire retardants ever come out, California deploys a different kind of fire-fighter – one on four legs. For John Cubiburu’s flock of more than 5,000 ewes, there is one goal during the spring: eat the vegetation that would otherwise become a fire

hazard in the dry, hot California summer. According to John, using animals as a form of fire prevention is an efficient and cost-effective alternative to mowing, which can sometime spark a fire itself, or chemical weed killers. “The goal with the sheep is never to overgraze, but to treat it kind of like a lawnmower,” John says. “When we’re doing any type of fire prevention… a lot of

it is timing because you can’t always force an animal to eat something that’s not in its most palatable state. You have to time it right.” That means knowing exactly what type of vegetation needs eating on a particular plot of land and which animals are best suited for the job. For example, a young lamb and an older ewe are likely to prefer different types of grazing, so John is able to choose the best animals for every task. And what about those weeds and grasses that are less appealing to sheep? According to Frankie Arburua III, who started F Ewe Sheep Company four years ago, that’s when you double down – with goats. “Sheep and goats combined actually work really well as the sheep eat the grasses, while the goats eat shrubs, thistles, and bushes,” he explains, adding that the animals work fast. “The speed of clearing land is dependent on the type of grasses and weeds the sheep are grazing. Generally speaking, a group of 500 ewes can eat about three acres per day. They eat most everything, but goats are helpful in areas where there are some shrubs and bushes to complement the sheep.” On top of clearing the land and reducing the risk of fire, the sheep and goats also play a big role in fertilizing the soil, an added bonus as much of the grazing area serviced by livestock companies like Cubiburu Livestock and F Ewe Sheep Company is local farmland.

What’s IN A Name? HOW A RACE HORSE, COMMODORE, AND NAPOLEON BONAPARTE LEFT THEIR MARK ON SAN JOAQUIN COUNTY

Have you ever stopped to contemplate how the park around the corner got its name? Or the street you live on? Throughout the county, the unassuming names of streets, parks, and even cities have preserved the area’s early history and settlers’ legacies.

 BY FAITH LEWIS SAN JOAQUIN RIVER When Spanish explorers arrived in hopes of establishing another Catholic Mission, they named the river after Saint Joachim, father of the Virgin Mary. Five decades later, the county itself was named after the river.

LODI As one of the more controversial names in the county, some credit the name “Lodi” to a local recordsetting trotting horse. Others believe it was named for the Northern Italian city where Napoleon Bonaparte first saw military victory. Still others are content with the somewhat more mundane explanation that settlers named the city after relocating from Lodi, Illinois.

MICKE GROVE REGIONAL PARK William G. Micke moved from Missouri to California in 1897 with only three dollars to his name. He worked his way up from ranch hand to landowner and finally influential grape cultivator. Now the park pays homage to his and his wife’s philanthropic efforts.

JACK TONE ROAD The longest maintained road in the county was named after wellknown pioneer and settler John “Jack” Tone, who emigrated from New York in 1849. The Jack Tone Ranch is now the oldest family-owned, continuously operated horse ranch in the state.

STOCKTON Stockton became the first city in California to receive a name that was not Spanish or Native American when it was named after Commodore Robert F. Stockton, a U.S. naval officer of the 1840s.

The face of JUICE BARS Mark Sarale opened his first Nekter Juice Bar in March of 2018, and the Stockton shop quickly became a staple for those in search of a healthier juice. Since then, Sarale has taken over an existing Roseville store and is opening a Modesto shop with his two sons. He’s also partnered with two other businessmen to bring more juice bars to the Sacramento area. Mark originally got into the juice business for two reasons. He’s an experienced franchiser with San Joaquin businesses in other markets, and he’s a dedicated health and fitness nut. These passions collided when Mark’s wife told him about the Nekter shop in Roseville.

The juices are made from fresh fruits and vegetables delivered to the shops three to four times per week, the base of the smoothies and bowls come from cashew milk made fresh daily on-site, and all of the products are free of refined sugars, yogurts, and juice concentrates. “Everything we have is as fresh as can be,” Mark says. Even the vegan ice cream—sweetened with agave nectar—is made from the same fresh cashew milk. Guests are invited to order from a menu of smoothies, pressed juices, fusions, acai bowls, and vegan ice cream, or create their own concoctions. It’s also a great place to start a juice cleanse.

Mark and his two sons, Marcus (pictured) and Julian, have turned the franchise into a family business, with Marcus running the Stockton shop and Julian working to take over Roseville/s. “My son Marcus, he’s the face of the Stockton store,” Mark says. “He’s been there since day one. As we grow [my sons will] oversee the operations with me.”

The face of PUBLIC GOLF Manteca Park Golf Course is fast becoming one of the top courses in the Central Valley for playability and value.

driving range, golf carts, a chipping green, and a putting green, plus a banquet hall, coffee shop, clubhouse, and store.

Living up to its motto, ‘The Public Course with the Country Club Feel’, Director of Golf Jeff DeBenedetti says, ‘we treat our customers like family and we do what we can to exceed their expectations. All players of all ability levels are welcome and will enjoy their round of golf here.” And as one of the most affordable courses in the area, players will also enjoy enhancements made throughout the course.

For those who haven’t seen the course since the takeover, there has been a significant re-design. The holes were renumbered to encourage a better game flow and a faster pace of play, plus a better last hole experience. What was once known as a slow course can now reasonably be played in just over four hours.

Jeff and his team are embracing the idea of community at the course. A big part of the mission involves bringing junior golf to Manteca. Employees told Jeff they once left the city to play golf at the junior level because there wasn’t a local outlet. All of that has changed. Manteca Park hosts four junior leagues to hit every caliber of player. And with Jeff at the helm—his last junior golf team won the junior’s PGA national championship—young golfers are in good hands. The full facility is more than an 18-hole course. It also offers a

The City of Manteca also hired a new superintendent who is improving the look of the grounds, the playing conditions, and the drainage. Condition-wise, Jeff says it’s one of the top courses in the San Joaquin Valley, and the prices give players the best value in the valley ($29 on weekdays, $34 on weekends). Perhaps the biggest perk, however, is the course location. “It’s right here in peoples’ backyard,” Jeff says.

Dr. Manshadi knew from a young age that he wanted to be a physician. “During a complicated pregnancy and birth, competent doctors in Israel saved both my and my mother’s lives,” he explains. Today, he seeks to emulate the confidence of those doctors by saving lives, educating others, and truly honoring the Hippocratic Oath. Named a top doctor by Castel Connolly, Dr. Manshadi began volunteering and administering EKGs at UC Davis Medical Center as a college student at the age of 18. There, he met Ezra Amsterdam, a teacher and mentor. “He instilled in me the love of cardiology,” he says. There was not only a love, but serious talent, as Dr. Manshadi dove deeper into the study—and with the ability to justify and analyze complex entities and categorize them, he excelled. “If your gift and passion are synonymous, you will be successful and happy.” In May 2013 Manshadi Heart Institute welcomed patients with a simple yet profound mission: Improve the lives of patients through excellence in cardiovascular education, heart disease prevention, and the highest-quality treatment available. From prevention to intervention, the Institute offers a full spectrum of cardiac care. Dr. Manshadi personally improves the lives of the general public, raising awareness of sudden cardiac death in athletes and donating his book proceeds to purchase and install AEDs in schools across the country. “It’s very important to know how to use and AED, and you never know when you’re able to save someone’s life,” he says. “When applied within first two minutes, there’s a 90 percent survival rate.” In his free time, Dr. Manshadi enjoys coaching soccer and supporting a league he funds for young children.

At the Creamery staff likes to get creative on turning out festive holiday shakes, and the decadent 4th of July shake, only offered around the holiday, is no exception. It starts with strawberry ice cream and a layer of blue frosting on the glass doused in blue sprinkles, but it doesn’t stop there. A rocket pop shoots out of the top of the glass, a scoop of vanilla ice cream is plopped on top, and a mound of sprinkle-covered whip cream with American flags decorate the top. For the final touch, a trio of cupcakes sits on top, each one finished with frosting and sprinkles. Throw in two straws— because this baby is made to share— and finish it with a couple of sparklers and this cool dessert is fire.

Have you ever heard of a crazy milkshake? These thick, creamy shakes are fully custom, made with your favorite ice creams and toppings right inside of a mason jar that you get to take home—so it’s ok if you can’t finish the over-sized shake in store. The Cookie Monster shake starts with bright blue bubble gum ice cream—to match your favorite Muppet—and is swirled with chocolate syrup. allowed to travel again, where will we go? If you’ve spent months dreaming of all the spots you’d visit when it was all over, it likely feels impossible to decide where to go first. So, instead of picking one locale to welcome the end of quarantine, why not visit them all? Plus, did you know roadtrips are expected to be the next big travel trend? Our biggest tip is to keep an eye on what each state has opened and call ahead to businesses you want to visit. The hardest part of taking a road trip is the planning. Lucky for you, the route below has not only been planned—complete with departure and drive times— It’s also been tested by me. So, take advantage of my hard work and set off on this curated road trip across 15 cities in just 15 days. Buckle up—it’s about to be the adventure of a lifetime! SJMAG.COM | JULY 2020

Yellowstone National Park

Twin Falls, ID.

The land of waterfalls Drive Time: 9 hours, Arrival Time: 4 PM, (one hour time difference) Departure Time: 9 AM Get an early start on the road to make the most of city number one. Instead of heading to the obvious Boise (which is a little out of the way for this route) stop off in Twin Falls, ID, known for being home to 19 county waterfalls. The local KOA has a cozy campsite to call home for the night, but only after you’ve hit a couple of sites. Here, it’s about nature, and small-town charm. Drive down to Shoshone Falls approximately three miles outside of town. The views here are stunning, with falls higher than Niagara, and it’s fun to marvel at the surrounding homes.

Yellowstone National Park


If you’re up for a little exploring you can also find the backside of a waterfall. Above Dierkes Lake, there is a one-way road that dead ends next to a waterfall. Either find the trail out of Dierkes Park or hop the divider and climb down a few rocks for a shortcut. Where to eat: Scooter’s for beer, bar food, and tips from the locals about where to go next.

Yellowstone National Park

Drive Time: 4 hours Arrival Time: 1 PM Departure Time: 9 AM This park is huge. Luckily, you can drive your car around it. You’ll want to keep your eyes on the scenery as you ride into the national park (and make sure you book your campsite plenty in advance). While here, do the obvious. Our best recommendation is watching Old Faithful erupt. There’s a viewing area in front of the geyser that erupts about every 45 minutes so if you’re up for hanging out a while, a viewing is all but guaranteed. After the anticipated eruption, grab some grub at the onsite cafeteria, along with a local brew, before heading out to set up camp. It can get chilly in the forest even in the summer months so plan accordingly. One of the highlights of Yellowstone is enjoying a campfire In this mystical place. Other recommendations: Take a hike— there’s so many to choose from we’ll let you pick your own—and lookout for wildlife. The bison here roam around like they aren’t afraid of people and every field is filled with deer, rabbits, and other animals.

The home of that famous presidential monument Drive Time: 7.5-8.5 hours Arrival Time: 5 PM Departure Time: 10 AM If you’ve spent the past two days camping, you’ll be looking forward to a hot shower, especially after the longest drive of the trip—all the way through Wyoming. There are two routes out, one that takes you up through Montana and another that cuts across the state. We opted for a slightly longer trip to see Montana and grab lunch in Billings. Dependent on the date, Mt. Rushmore offers a nightly lighting ceremony at 8 or 9 PM, and it’s a great time to see the monument. If you’re looking for something else to do, stop by Bear Country USA to see the bears, including cubs. Expert Tip: You can also stay in adjacent Rapid City.

Sioux Falls, SD

Drive Time: 4.5 hours Arrival Time: 3:30 PM (one hour time difference) Departure Time: 11 AM When in Sioux Falls, there is no reason to pass up a hotel with a waterpark inside. There are plenty to choose from (we stayed at the Ramada) and they tend to stay open late. Enjoy the quaint downtown and a little civilization. Stogeez is a cigar bar known for its martinis where men in suits smoke indoors. Through a glass door Bin 201 features craft cocktails and wine. Looking for cocktails only? Bartenders at Pave serve drinks made with homemade bitters and syrups. Before you leave, explore Falls Park for short hikes and more waterfalls. SJMAG.COM | JULY 2020

Minneapolis, MN

Drive Time: 4.5 hours Arrival Time: 3:30 PM Departure Time: Noon This city has a straight-forward itinerary for first-time visitors. Mall of America for rollercoasters and shopping, pregame drinks and grub at Cowboy Jack’s where everyone gathers before a home game, and tickets to a Minnesota Twins game where the ambiance is made by the skyline in the background. If you’re up for it, explore the downtown nightlife after the game.

Drive Time: 6.25 hours, Arrival Time: 6:30ish PM, Departure Time: 4 PM If you ask us, you’ve earned a day to sleep in and a little time to explore the rest of Minneapolis before you leave town. We recommend breakfast at Al’s Diner before you leave. Then, hit the road. You’ll get into Chicago with enough time to grab dinner and drinks at any one of the city’s rooftop restaurants and bars. Then, spend the next day exploring. The can’t miss spots are Willis Tower and the Skydeck, shopping on Michigan Avenue, Navy Pier, photos in front of the infamous Bean, and the Chicago Sports Museum. Where to stay: Hilton Garden Inn Chicago Downtown. What to eat: deep dish pizza at Giordano’s or Lou Malnati’s.

Louisville, KY

Louisville Mega Cavern

Drive Time: 4.5 hours Arrival Time: 9:30 PM (one hour time difference) Departure Time: 4 PM Step one: learn how to pronounce Louisville. Then, explore the nightlife if you’re up for it. Drink a whiskey sour at The Porch and grab pizza at Spinelli's Pizza, an underground hotspot that plays old-school rap music or hardcore punk while you wait. Or, opt for a good night’s rest because the next day is about to be packed. Start your morning by paddle boarding the Ohio River, learn about baseball and take home a custom bat at the Louisville Slugger Museum, zipline through the Louisville Mega Cavern (the world’s only completely underground ziplining adventure) and visit Churchill Downs. Expert Tip: Plan to be in Louisville on a Churchill Downs After Dark Night where horse betting goes until midnight. What to drink: Don’t leave town without drinking a mint julep.

EAT DINNER ON THE ROAD Try visiting the fast food chains we don’t have at home. The Midwest is home to Culver’s and their infamous cement mixer shakes.

Drive Time: 2.5 hours Arrival Time: 5:30 PM (gain one hour) Departure Time: Noon Thanks to some creative planning, you’ll be able to enjoy two nights in this town while still hitting 15 cities. Some of the most fun here was provided by the unscheduled time so prepare to spend your nights out on Broadway, listening to live music as you tour rooftop bars brought to you by America’s biggest country artists. Then, dive into music history by touring the Grand Ole Opry and the Music Hall of Fame. A Nashville Pass provides a cost-effective way to see the sites. Then, drive out of town a little ways to enjoy the wine at Arrington Vineyards, Brooks & Dunn’s winery outside of Nashville. Plan Ahead: Get tickets to a concert here, preferably at The Grand Ole Opry, and leave time to tour the city’s famous murals for a solid photo op. What to eat: Hattie B’s and GooGoos.

St. Louis, MI

Drive Time: 4.5 hours, Arrival Time: 4:30 PM, Departure Time: Noon Land in St. Louis with time to check in and get ready before a night game at the ballpark. Busch stadium is a favorite and we nominate it for our second baseball game of the trip in large part because of its cool skyline (see a trend?) Or, watch the game from Three Sixty, an indoor/ outdoor rooftop bar across the street offering 360 views of the St. Louis Arch and Busch Stadium. Here, the locals will tell you all about the food that makes them famous. Stop for ooey-gooey butter cake and coffee before heading to the Arch in the morning, and make sure dinner includes a side of toasted ravioli. If you have time: schedule a tour into the top of the arch, and of course don’t forget to snap photos outside.

Here is our third and final recommendation for a ballpark along this route if a home game is scheduled at Coors Field. When you get into town, walk the 16th street mall and visit

Union Station. Here, you can sip cocktails and then chow down on ice cream, and you can even book a room inside the station. At night, hit up Williams & Graham, a speakeasy hidden behind a bookcase. If there’s a wait, the bar next door will host you in the interim. Day two, have breakfast at the ever-popular Snooze (inside Union Station) before heading to the Wild Animal Sanctuary in Keenesburg.

Laramie, WY

Drive Time: 2 hours Arrival Time: 8 PM (later if you take the detour) Departure Time: 5 AM This is another one of those stops we chose just to break up the drive. Get in before dark because the road between Fort Collins and here isn’t a fun one after dark.

The coronavirus pandemic led many to avoid routine medical appointments, especially seniors who are considered higher risk. But San

Joaquin County health professionals are urging patients not to neglect their health for fear of the virus – or anything else that might come up during this uncertain time. Instead, they’re encouraging patients to take advantage of virtual medical appointments. Sound like the future? It shouldn’t. This service has been offered by local healthcare providers like Kaiser Permanente and St. Joseph’s Medical Center for years.

We have been a leader in telehealth and have been providing our members and patients telephone appointments for the last ten to fifteen years and video visits for the last five to seven years,” says Dr. Hyma Jasti, the Chief of Adult & Family Medicine for the Kaiser Permanente Central Valley service area. “Most of our patients appreciate the convenience and ease video and telephone appointments provide.” Dr. Jasti recognizes that a virtual appointment can be intimidating, but she believes the benefits outweigh any drawbacks and encourages seniors to give it a chance. “Although it may seem overwhelming to try something new like a virtual visit, Kaiser Permanente has made it easy to do,” Dr. Jasti says. “These appointments are convenient and can be done from the comfort of your home. During the shutdown, Ave on the Mile, located in the heart of the Miracle Mile, spent time revamping its classic menu. They haven’t replaced the quick bites and

appetizers patrons have come to love, instead they’ve expanded the menu under the direction of chef Brandon Hernandez, who took over as head of the kitchen in 2020, and chef John Scott, to evolve with the times. Now, in addition to coconut prawns and totchos— beloved staples of the Miracle Mile eatery—there are also overflowing salads and bigger bites. And in their 10th anniversary year, it was the perfect time to rebrand. The Southwest salad is owner Kevin Hernandez’s faSJMAG.COM | JULY 2020

vorite, a towering bowl of mixed greens piled high with your choice of chicken or steak, tomatoes, cheese, black beans, corn, and queso fresco and finished with a cilantro vinaigrette dressing. “Our house made dressing [sets it apart],” Kevin says. “It’s fresh, it’s like Tex-Mex, it’s healthy.” The bigger bites on the menu go hand-in-hand with Ave on the Mile’s mission to be a late night dining spot. The atmosphere will still be lively with live music and DJs on select nights, but the duo is also hoping to draw in diners who want a full meal at the end of the day, instead of grabbing tapas to accompany drinks. This new part of the menu includes a hearty chicken marsala, the Signature Ave Burger (complete with bourbon onions and cheese, plus an option for beyond meat), and a Mediterranean pasta special. When everything is said and done the menu offers something for everybody, with bar food that has been so elevated it’s hardly bar food at all. “We kind of structured this place to be a lot of things to a lot of people,” Kevin says. One thing that hasn’t changed too much is Ave on the Mile’s Sunday Funday Brunch. Now called “The Experience,” Ave is playing up the eatery’s once a week special menu. In addition to tasty grub, AVE ON THE MILE patrons will occasionally enjoy live 2333 Pacific Ave, Stockton music as a DJ plays background tunes (209) 462-5283 for your Sunday morning special, be it AveOnTheMile. com boozy or not. Kevin and Jason, the Ave’s general

manager since day one, along with chefs Brandon and John debated whether or not the chicken and waffles should be on the menu, but ultimately the oncetrendy dish turned brunch staple won out—and it’s become a favorite. The vanilla waffle slices are drenched in maple syrup and garnished with green onions and chilis. Of course battered chicken sits atop the masterpiece, offering a fried, salty crunch to balance the sweet of the waffles. Another favorite is the breakfast burger, served open-faced. This behemoth of a breakfast dish includes everything you might find on a brunch menu including a fried egg, bacon, avocado, cheese, and more, served alongside country potatoes. Other brunch favorites? The Ave Egg Bake and any thee four egg benedicts ranging from

crab cakes to the classic. Whether you’re here for breakfast or dinner, consider adding a specialty cocktail to your tab. The restaurant is constantly turning out new concoctions to serve the public including the Classic Ave, a citrus-based drink with Cointreau and Absolut Blood Orange Vodka served in a martini glass, or the Sweet Street, the Ave’s version of a lemon drop made with fresh lemon juice and Citron vodka. “Our vision going forward is to continue to be the late night dinner destination,” Kevin says, without straying from the atmosphere that regulars have long described as a transportation outside of Stockton. The emphasis will remain on the casual, intimate, bigcity vibes, with urban food that exceeds expectations.

With the Coronavirus causing mass panic, one local bakery found a way to make light of a scary situation. Lodi’s Frosted Flour Bakery started pumping out toilet paper cakes by the hundreds for folks looking to bring a little humor while stuck at home. Each Saturday, their team, along with a handful of volunteers, delivered cakes in the shape of a toilet paper roll to hungry home bound families. We’ve got $20 on the fact you would have NEVER predicted ordering a cake in the shape of a toilet paper roll, right?

Nash+Tender is serving up this Nashville trendsetter for lovers of fried chicken, cooking up hot chicken out of its Stockton eatery. The hip

poultry dish is most popular in Nashville, but it’s quickly making its way across the nation, popping up at fried chicken joints all over, and Stockton has its own joint specializing in the Southern delicacy. Typically, hot chicken is prepped by being marinated in a water-based blend of seasoning before it’s floured, fried, and covered in a cayenne-spiked paste. Hot chicken, however, isn’t hot chicken without the option for extra heat. At Nash+Tender guests can order their chicken—seen above served as a hot chicken slider—anywhere from country-style (no spice) to stupid hot. The latter is so dangerous you’ll have to sign a waiv-

er to order it and it can only be consumed in restaurant. Flavors in between include mild (light spice), medium (perfect heat), hot (it burns) and xtra hot (call the firefighter). The menu, however, also gets creative, serving up plates of tenders, salads, and even hot chicken and waffles. Want something even more outside of the box? Ask for the Tender + Mac Sandwich. It’s safe to say, we never thought we’d be able to order cocktails to-go from our favorite local restaurants. But when the Coronavirus pandemic hit California, everything we ever knew about the food and beverage industry went out the door. The Department of Alcohol and Tobacco, a government agency known for its strict rules, relaxed the law to allow restaurants to serve cocktails to go. It’s like all our dreams finally came true. Summertime. When markets are overflowing with heirloom tomatoes, local melons, and stone fruit. When the smell of overripe fruit fills the air in San Joaquin county and the mercury melts an ice cream cone before you get your first bite. But you know what brings all of these ingredients together into spectacular meals? Basil. A summertime staple, aromatic and herbaceous, the bounty of basil is the backbone of summer dishes.

DIRECTIONS Preheat the oven to 350 degrees. Toast the pine nuts on a rimmed baking sheet, tossing once halfway through, until golden brown. Transfer to a food processor and let cool. Add the cheese and garlic, and pulse until finely ground. Add basil and place the top back on. With the motor running, add oil in a slow and steady stream until smooth, about one minute.

Pesto Caprese Pasta 94

INGREDIENTS 8 oz. cherry tomatoes, halved 12 oz. dried pasta such as spaghetti 2 tbsp. Calivirgin Basil Olive Oil Bocconcini mozzarella ¾ tbsp. Best Basic Pesto ½ tsp. salt ¼ tsp. pepper ¼ c. basil, leaves, chiffonade ½ c. parmesan, finely grated

DIRECTIONS Preheat oven to 350 degrees. Roast cherry tomatoes in olive oil, sea salt, dried basil, and oregano for 5 to 7 minutes. Boil pasta in salted water for 10 minutes, or until pasta is al dente. Drain pasta, reserving a half a cup of pasta water. Place our Best Basic Pesto in a large bowl with two tablespoons butter, add pasta and pasta liquid until well coated. Season with salt. Add tomatoes, Parmesan, and garnish with freshly chopped basil.


Pesto Chicken Panini

INGREDIENTS 1 large Ciabatta or Pugliese loaf

1/2 c. mayonnaise 1 jar of roasted red peppers (Suggested: piquillo peppers) 2-3 pesto chicken breasts, or rotisserie chicken

MORE THAN A GARNISH… COCKTAILS Use basil in a poolside cocktail with fresh strawberries or watermelon. Muddle basil leaves with raw sugar and lemon juice. Purée fresh strawberries and combine with a simple syrup. Strain basil juice into a rocks glass with ice, add 1 ½ oz. vodka, 1 oz. strawberry puree, and club soda. PASTA Whether you are making a light pasta dish with olive oil or creamy garlic shrimp, basil adds a brightness that makes the meal look and taste even better. Chop it and combine the fresh herbs with the sauce or use a fresh pesto to punch it up. INTERNATIONAL FLAIR Add it to Thai dishes, curries, and bean dishes. Try sautéing garbanzo beans in olive oil, garlic, coconut milk, and chopped basil for refined flavor.

Best Basic Pesto INGREDIENT ½ c. pine nuts ¾ c. Parmesan, grated 2 garlic cloves, finely grated 6 c. basil leaves; about 3 bunches ¾ c. olive oil 1 tsp. kosher salt

DIRECTIONS Use 3/4 of the roasted red peppers and purée with mayo in a small food processor. Slice bread horizontally and scoop out some of the excess bread. Brush or spoon the red pepper mayonnaise onto one side. Spread pesto on the other side. Add a few of the leftover roasted red peppers and spinach to roasted red pepper half. Layer chicken (sliced), mozzarella, soppressata, remaining cheese, and basil. Put the two sides together and drizzle the outside of the bread generously with olive oil.
