I grew up in Tracy. I married and raised my family here. In the summer it feels like there are endless outings—but after the fifth ongoing week of rain (it’s okay because we need it!) my kids get antsy, and my wife gets bored. Is there anything to do here? Does our front door even open? Are other people living in this town?? You better ditch the cabin fever attitude quick, as we approach a time of love. Yes, that’s right, the Hallmark Holiday is here again. I’ve shared my go-to Valentine’s Day story with you once before. And yes, roses are still half off on February 15th (at least for the sake of tradition). Anyway, don’t be like me—unless your wife has a similar stance on the holiday or one hell of a sense of humor. 28 dates in 28 days is here to help you say goodbye to your unpredictable, unsexy, plans of dinner and a movie—not just for Valentine’s day, but for every Friday night throughout winter. Grab your most romantic rain gear (yes, we’ve included that in this issue too) and hit the streets with your beau to make your cabin-fevered love feel anew. Who doesn’t love a month centered around love and chocolate? Go out and seize it! A perfect opportunity? Lodi’s annual Wine and Chocolate Weekend. Spend a day or two dressed the nines in flapper fashion, indulging in decadent chocolate treats and sipping awardwinning, handcrafted wines at more than 50 local wineries. Incidentally, February is also Heart Health month, and by now we’ve all heard about the supposed benefits red wine has been touted with providing to our health. Specifically, antioxidants in red wine called polyphenols may help protect the lining of blood vessels in our hearts. And resveratrol is one polyphenol in particular that may help prevent heart disease by increasing levels of “good” cholesterol and protecting against artery damage. I’ll raise my glass of red wine to that! Also pulling on my heartstrings is a trip to New Orleans. It has been on our bucket list for quite some time. My wife and I love to adventure in loud flavorful places, and not many top the Big Easy. I can almost taste the food and feel the swampy air. Maybe that’s how we’ll celebrate this year.

The lights dim and the once bubbling cacophony of men and women settle down and into the velvety comfort of their seats. They look up and onto the stage where the curtains have parted, and a singular form stands tall. Her golden tresses flash beneath the glow of the spotlight as excitement tangled in her chest radiates down her limbs. She steps forward and into the weight of her role. Her lips part, she breathes in deep, and Liisa Dávila lets loose a soprano’s melody that carries her captive audience away from the theater and into a world of her making.

It’s one of the most challenging roles in the soprano repertoire. I felt too lucky to have the opportunity to sing it and blessed to have been able to make it through with success.” When she isn’t on stage, Liisa helps her students to master the art of the voice. “I got involved with teaching because friends kept asking for private voice lessons. My private studio has grown from only a few friends to a full studio of 12 or so. I found my own system and technique to teach from my years of experience, and I am happy to share what I have learned.” Her community work takes her to high school and junior highs, coaching students to bring out the best in their vocal range. “I feel that there are beautiful voices out there that need a place to shine. I feel happy being a part of that.” Micaëla of Carmen, Donna Elvira of Don Giovanni, and Liù of Turandot are just a few roles that Liisa—a classically trained Soprano—has performed throughout her life on stage. Nearing her 200th performance, Liisa has worked with organizations as close to home as the Philomathean Club of Stockton and the Stockton Opera Guild, and as far as the Greek Island of Syros. “I am grateful to have sung locally, nationally, and internationally,” Liisa smiles. “My favorite is on the opera stage where I can be a singing actor, portraying different characters.” Music has always been a part of Liisa’s life. “My first exposure to the art of singing started at home. I have a very musical family, and we had a lot of singing, music study on the piano, and even little plays on the fireplace hearth.” Though Liisa took to the violin, viola, and piano, singing has always been her first and greatest love. “My family has said that I have been singing since day one, looking for any opportunity to use my voice and find a song to sing.” Between private lessons and her time at Delta College, Liisa

worked with choir ensembles to grow her skill and fuel her passion. But her transfer to Sacramento State and time with the Sac State Opera Theatre led her to choose her profession. “…I had the opportunity to perform a leading role in the school opera productions. I loved the music and the process of learning music for the stage, and decided that is how I wanted to guide my career.” After graduating with her Bachelors, her studies continued onto LA, New York, and Florida—with a summer spent overseas in Greece. Now, Liisa continues her travels, performing with numerous opera organizations in the valley, foothills, and beyond. When asked about some of her proudest moments, two, in particular, took her attention. “Singing Schubert Mass in G in the acclaimed Avery Fisher Hall at Lincoln Center in New York. So many great singers have been on that stage and I got to stand there in the very same spot, doing what I love most. Incredible!” Her second was equally dear and much closer to home. “Singing the role of Violetta in the opera La Traviata with Townsend Opera in Modesto.

Music IN THE STREETS
DSA WANTS EVERYONE TO PLAY BY LINDSEY RODRIAN PHOTOS BY RITA HILL
It is no secret that music brings people together. Still, the ladies of Downtown Stockton Alliance (DSA) are nothing short of starry-eyed as they talk of the charitable, excited, and talented community members they’ve encountered since launching their program, Music to Our Ears.
DSA’s CEO, Cindy Fargo, became interested in offering Stocktonians such an experience after noticing the success of similar programs in other cities. “We all loved the idea, but weren’t sure how to go about it,” Sylwia Qualls, Communications and Graphics Manager, explains. A chat with her husband, a teacher at One Charter AVPA High school, resulted in the program’s first piano donation. “And that was the start of it.” With the ball in motion, Downtown Stockton Alliance connected with the community via social media, sharing their vision for the project and their need for piano donations—and artists to decorate. “An overwhelming amount of people started calling in,” Sylwia adds. “Donating pianos, their time, or their talents.” Donated pianos are paired with artists who use the piano as a canvas in which to express a personal story, a tale of their hometown, or a local legacy. The instrument-turned-art is displayed in a public place, (like a storefront, coffee house, or shopping center) just begging to be played! “We want people to come play music for the community!” Sylwia smiles. And play they do. As both entertainment and an artistic outlet—the program goes beyond as it serves as a community connector. “People tend to generalize and have preconceived notions, but these pianos break the barriers. They show you that what’s on the outside is not necessarily underneath,” Sylwia says. And, they enchant our children. “In most places, people--and especially children— are not allowed to touch the pianos,” Sylwia

notes. “But here you’re encouraged!” In an effort to ignite downtown, the program’s coordinators can’t be more pleased with how it’s been received. With over 20,000 people occupying the area Monday through Friday, these people typically walk from point A to
point B without much engagement. Now, people stop on the sidewalk to enjoy a pianist; brighten someone’s day with their talents; share in a nostalgic moment. “It’s such a great medium for community bonding, in so many ways. You can play, you can paint, you can listen, you can dance, you can promote. It touches all backgrounds and all ages.”

VIRAL VIDEOS SAN JOAQUIN TAKES ON THE MANNEQUIN CHALLENGE BY

The Mannequin Challenge is the latest in a slew of viral video trends filmed for both entertainment purposes and marketing value. With social media, the trend has spread like wildfire, much like the 2013 Harlem Shake videos. Characterized by a camera moving around a scene that appears completely frozen in time (participants stand motionless, often in silly positions) some of the videos are quite elaborate.
Groups in San Joaquin County— from sports teams to restaurant staffs— are joining the fun. The San Joaquin Regional Transit District filmed their challenge at the downtown transit center in Stockton on Metro Express route 40. “We saw it was a growing trend,” Kelvin Cao, the customer engagement analyst who filmed the video, says. “We wanted to be the first public transit agency in California to take it on.” The video features both passengers 44

and employees. “It wasn’t planned out very much, it was more very candid,” Kelvin explains. The entire video took about one hour to shoot, mostly because they had to correct bloopers (i.e. people moving when they shouldn’t be). A successful video hinges on participants’ stillness. “It was fun, but it was also
kind of advertising,” Kelvin admits. “We got tons of comments on Instagram and Facebook.” The goal was to show the approachability of RTD, and it seems to have worked. Kelvin says the bus driver was quickly recognized, and can now add video star to his resume. University of the Pacific’s women’s water polo team received international recognition for their video featuring teammates in various staged poses underwater. “It was definitely a more complicated shoot,” Head Coach James Graham says. Viktoria Szmodics, the player who filmed the video, “obviously had to be holding her breath.” The team racked up almost 9 million views on the mannequin challenge page (Facebook. com/MannequinVid) and was featured on USA Water Polo, CNN, NBC Sports, and other local and international news stations. “We’re a small, private university,” James says. “The opportunity to be out there in the public eye… it’s a good thing.” While RTD and UOP had goals in mind (James says his team wanted to get 100,000 views), the staff at fenix in Lodi used the challenge as a team building exercise. “Our pastry chef wanted to do it,” Ruben Baumback, the restaurant’s floor manager, notes. “We’d seen a few online, so we decided to try it.” The video sweeps across the chef’s table full of guests, and several employees make an appearance: a buser is cutting bread, the pastry chef is removing something from the oven, and Ruben is taking a phone call. “We’re like a close family, so it just brought us closer,” Ruben says.

Stayce began her health journey nearly a decade ago when she felt a need for change— physically, mentally, and emotionally. “I started off as a gym-minded, high-protein, personal trainer,” she explains. “I saw all these people working so hard, and just had this feeling that there was something more.” With that, Stayce began extensively researching health, which ultimately opened her eyes to more of a holistic approach. “I left the gym and became a health minister,” she continues, “That was a life transforming time for me.” “But then I got really sick.” Stayce was experiencing autointoxication because her new lifestyle was purging stored-up toxins faster than her body could release them. since, the couple moved back to Curtis’ hometown of Stockton in the 90s— where he worked as a pharmacist, and Pat in Human Resources. February is American Heart Month, and we’ve teamed with residents and doctors to promote healthy decisions, education, and empowerment through their personal experiences. Heart disease is preventable when we act as our own health ambassadors, yet this disease continues to rank as the leading cause of death for both men and women in the United States. On the flip side, genetics play a significant role, and those with a family history of cardiac events are urged to be proactive and aware—even if they make

conscious healthy decisions. According to the American Heart Association, fewer Americans have been dying of heart disease and stroke since the 1980s—thanks to progress in medical therapies for patients with a history of cardiovascular disease and from lifestyle changes that are curbing the risk. And with minimally invasive surgery on the rise, high-risk patients get another chance at life while others avoid major surgery, and cut recovery time in half. Now, let’s meet the triathlete, the medical professional, and the “bionic man”.
Fred Dillemuth, 75, Stockton In what Fred Dillemuth describes as divine intervention, the then-57-year-old traveled to Pasadena to participate in a decathlon— showing up a half hour before start time to find the competition already underway.
“I flew home, and the next day while at the gym, I felt this weight descend on me, pushing me down,” Fred says of his “silent” heart attack. Though he didn’t experience the token chest and arm pain, he decided to head to the doctor.
JUST the
FACTS: Approximately 2 out of every 3 people who have heart attacks experience chest pain, shortness of breath or fatigue a few days or weeks before the attack. In the United States, someone suffers a heart attack every 42 seconds. Every 80 seconds, one woman is killed by heart disease and stroke. Cardiovascular diseases claim more lives than all forms of cancer combined. A person with angina (temporary chest pain) may begin to find that it takes less and less physical activity to trigger the pain. Any change in the pattern of angina should be taken very seriously and brought to the attention of your physician. A heart attack happens when the blood supply to the heart is cut off. Cells in the heart muscle that do not receive enough oxygen-carrying blood begin to die. The more time that passes without treatment to restore blood flow, the greater the damage to the heart. High blood pressure or blood cholesterol, smoking, previous heart attacks or strokes, and diabetes can increase your chance of heart disease and heart attack. It is important to recognize the signs of a heart attack and to act immediately by calling 911. A person’s chance of surviving a heart attack increases if emergency treatment is administered as soon as possible.

“People that exercise a lot should be watching their recovery time. Let your heart rate lower before moving onto the next exercise.” “They took a look, said ‘code blue,’ and tossed me into an ambulance.” Fred was rushed into surgery at Washington Hospital in Fremont, and cardiologist Dr. Burke implanted a stent into his almost fully clogged artery. “Everything was fine for about eight years,” the decathlete explains. “In my workouts, I started noticing that I would get only a half-mile out and start vomiting.” Worried, Fred grabbed a phone book and “found Dr. Manshadi.” That next day Dr. Manshadi—a sport and interventional Cardiologist—met with Fred and informed him that he had had another heart attack. “Every athlete, from child to professional, is at risk for sudden death,” Dr. Manshadi explains. “Because with exercise, you’re putting your whole body in extremely high demand for oxygen, and if there are any underlying problems, it will show itself then.” Within 24 hours, Fred was back on Dr. Burke’s table, this time for a bypass surgery. “The doctor said, ‘I know you’re a jock, and you can run right out and start where you left off, but if I have to operate on you again, you’re not gonna like it,” Fred recalls with something impish tucked in his smile. We all know the precursors to heart conditions—lack of exercise, poor diet—so how can a man in optimal health, that works out six days a week, fall victim to this syndrome? “Genetics,” Dr. Manshadi
explains. “If you do everything perfect, but have a family history, you still have a very high chance.” With prevalent family history, Fred “did everything Dr. Manshadi told me to do,” to get his life back. He slept nine hours a night, ate virtually no fat, and very low sodium and sugar. Sitting across the table from Fred, you’d be shocked to hear his experience. The Stockton transplant is full of life and energy as he recounts his life accomplishments with wife Christina, their time in the Peace Corps, Job Corps, and their most current philanthropistfueled endeavor—I Care—an organization for at-risk youth that works to break the chain of poverty. “We taught,” Fred says of he and Christina’s four years in the Peace Corps, at the height of the Vietnam War. “I had a major in biological sciences, and she had a major in math, so we were in great demand.” Fred’s eyes sparkle as he speaks of their past students. “Many went on to college,” he adds with fatherly pride. The Job Corps took Fred and Christina to the Republic of Palau where they worked to build a new school. There, he also taught track and field. “Everything was bamboo, the hurdles, the jumps… everything! Eventually, we were able to get the proper equipment.” 12 years, two life-saving heart surgeries, four decathlons, nearly 40 meets, and 177 medals later, Fred experienced one of his greatest life thrills as he watched a Republic of Palau jersey compete in the Olympics. “By insisting that I have the heart bypass surgery Dr. Manshadi, no doubt extended my life by many years,” Fred says. “In my 20 plus years of competing with senior athletes, I’ve only met one who also had this surgery. And with 14 All American Standards, I’m very thankful to Dr. Manshadi for the rarity in everything I’m able to do.”

Manuel G. Revillar, 86, Stockton “I called in to schedule his annual check up, and told the receptionist that the over-the-counter medication they had suggested for his acid reflux hadn’t helped,” says Donna, Manuel’s wife of 63 years. His ongoing 82
symptoms of a burning feeling that often worsened after meals led his general practitioner to order an EKG and referred him to Cardiologist Dr. Leim (Dr. Manshadi’s predecessor).
On a Friday afternoon, a second EKG was performed, and its results had Dr. Leim asking Manuel if he had experienced anything dramatic like heavy pain or the inability to breathe. Unable to pin-point an instance, Manuel became high risk and was sent to Dameron. He spent the weekend there and on Monday he received a triple bypass. “That was in 1988; I was 57.” Though Manuel was under excellent care—eating right, exercising, and participating in physical therapy—his arteries continued to clog, resulting in 3 angioplasties in one year. In 2004, the Revillar’s switched insurance companies and chose a new family doctor. That doctor discovered a carotid artery, and Manuel had his second bypass in 2004. Though the couple can’t agree on whether or not Manuel died, momentarily, on the table that day—they both express extreme gratitude for Dr. Manshadi as they move to share the next chapter of their story. “I took over Dr. Leim’s practice in 2000,” Dr. Manshadi explains. Manuel had been a patient of the practice for quite some time, and Dr. Manshadi continued to monitor him. “As we age, our valves become inflamed, calcified, and then stenotic, which compromises the function of the heart. Right now there are 40 million people over the age of 65 and seven percent experience this. Aortic Stenosis is one of the most common, yet serious, valve disease problems.” Once people start showing symptoms of Aortic Stenosis, mortality significantly increases. With two open-heart surgeries under his belt, Manuel quickly became high-risk as his valve issues surfaced. “I try to be cutting edge in my practice, if something is not available, I work to deliver it to my patients,” Dr. Manshadi says of Manuel’s options. Opening his chest a third time wasn’t the best option, but the minimally invasive Transcatheter Aortic Valve Replacement (TAVR) procedure was not yet available in www.sanjoaquinmagazine.com

San Joaquin. “I had been working with TAVR for about four years at UC Davis before it became available in Stockton,” Dr. Manshadi explains. “And with his history, Manuel was a perfect candidate.” The TAVR procedure proved successful, yet Manuel experienced fatigue and shortness of breath. “The insurance we had at that time denied tests and medicine we felt were needed,” Donna says. So, Dr. Manshadi instructed his patient to take a drive to UC Davis and go straight to the Emergency Room. “Within five minutes of us checking in, they had him hooked up and were caring for him,” Donna notes. “They scheduled a pacemaker surgery for the next day.” A few years, and heart stints later, “Dr. Manshadi calls me the bionic man,” Manuel says with boyish charm. “I should’ve been dead when I was just 60 years old, and here I am with all my mental facilities, driving to the casino every other week.” “You want a formula to win?!” he asks. “I got one: You’ve got to have the guts to bet, and you need to know when you’re on a hot run.”

The 74-year-old Stockton Native dedicated herself to health and wellness early on. “When I was in high school I knew that I was going to be a nurse, I knew where I was headed. I always wanted to take care of people.”

With a focus on women’s health, Louise worked to become a nurse practitioner, until retiring in 2011. “I couldn’t walk from the car to the clinic anymore,” Louise says of her symptoms that led to her retirement. “I thought it was asthma.”
When her asthmatic symptoms and easy fatigue increased, Louise headed to her general practitioner in 2011. “My doctor said he could hear a valve issue, and sent me to Stockton Cardiology.” There, Louise met with Dr. Richard Waters, MD, FACC. He diagnosed her with Aortic Valve Stenosis, and Louise headed to the Bay Area to undergo her first surgical valve replacement. “Since 2011, Louise has had four different heart valve surgeries,” Dr. Waters explains. “In three instances, she had open heart surgery and was put on heart –lung bypass.” As Louise explains, the invasive, reoccurring surgeries were due in part to failing valve replacements that led her to “more and more difficulty.” “At that point, I could barely walk and slept sitting up, with difficulty lying down,” she explains. With her quality of life at an all time low, Dr. Waters had his patient’s well being in the forefront of his mind. “I had been thinking about her a lot,” he explains. “And with the Transcatheter Aortic Valve Replacement (TAVR) team secured at St. Joseph’s Cardiac Hybrid Suite, I asked her to consider being one of the first to undergo this groundbreaking procedure.” TAVR is a less invasive procedure which allows a new valve to be inserted within the native,
diseased aortic valve. The procedure can be performed using one of many approaches, the most common being the transfemoral approach (through a small incision in the leg). This option gives highrisk patients a chance at a new life—as the procedure boasts low surgical risk and quick recovery time when compared to open heart surgery. “The TAVR team made me know that they were here for me, that I had a chance,” Louise says of the doctors that restored her health. “I went in for my TAVR procedure at 730 AM on a Thursday and was in recovery within 2 hours. And shortly after, Dr. Waters walked into my room and said, ‘Do you want to go home?’” “This is opposed to eight or nine days in the hospital after your heart being open,” Louise continues. “There was so much less pain and discomfort. I could get around, and I wasn’t able to before. I could breathe. I had an ease of breath that I hadn’t had in a very long time— and unless you experience that, you can’t truly appreciate it.” One month after her procedure with Dr. Waters, Louise danced at her granddaughter’s wedding. “I have my wife back,” Louise’s husband says with tears in his eyes. “I see her out in her garden for the first time in many years, and I feel so grateful.”
“This team made me know that they were there for me. When we had to go in for testing, they met us at the door and made us feel completely comfortable. They took very good care of me.”

The VEGETABLE GARDEN Change your lifestyle and fall in love with fresh food. There’s something special about eating your bounty. And access to fresh fruits and vegetables at all times is pretty cool, too.
PLAN:
The first question to ask is, what does your family like to eat? Then, plan to plant that. Start a garden journal, jot down your plant choices, and identify their sun, space, and water needs. Tomatoes, cucumbers, peppers, peas, beans, corn, and squash love full sun. Root vegetables like carrots, radishes, and beets need at least half a day of sun to thrive, while leafy greens—like spinach, kale, and chard—tolerate the most shade (but still grow best in full sun). Scout out your top garden locations and keep an eye on those spots for a full day to identify the amount of sun each area receives. If full sun isn’t available, scratch that location from your list. Next, plot out your spot. Is it large enough to house all your favorite veggies? Eric Firpo, a certified permaculturist and coowner of In Season Market & Nursery in Stockton, shares that you can stunt your plants’ growth if room to grow isn’t available. Water. “The big question is how are you going to water it?” Eric asks. As he notes, vegetables need daily water—so unless you plan on hand watering each day, a soaker hose or irrigation system is the way to go. Gardening:
Sometimes called the “no-work garden,” this method is the answer to those barren, weedy, sandy, clay-compacted spots in your yard. “Leave the sod where it lies, blanket it with wet cardboard, or 5-10 layers of newspaper, to stifle the grass and weeds,” Julie explains. Then begin layering your organic material like grass clippings, leaves, fruit and vegetable scraps, coffee grounds, tea leaves, landscape trimming, and shredded junk mail. You’ll want to alternate layers of “browns” (fall leaves, shredded newspaper, and pine needles) with layers of “greens” vegetable scraps, garden trimmings, and grass clippings”, with your brown layers twice as thick and your green. “But, don’t overthink it,” Julie says. “Just make the layers and your lasagna garden WILL grow.”

After a few weeks of layering, you should have a two-foot tall pile that will shrink at an alarming rate. What you’ll be left with is perfectly composted soil just asking to house your favorite vegetable plants. You can start this easy project at any time of the year, but a fall start is best as the rain helps break down layers, and organic material like fallen leaves and general yard waste is aplenty. If you opt for a spring or summer start, consider adding more “soil like” layers to your lasagna, like peat moss or top soil so that you can plant in your garden right away! Once you’re ready to plant just simply dig down like you would in any bed. 92

The last frost in San Joaquin is typically the last week of February, making the end of March—or start of April—the perfect time to welcome your established plants or transplants into your garden. A trip to New Orleans has been on my bucket list for years. Bursting with flavor in the form of scrumptious French-Inspired Cajun and Creole cuisine, local haunts, live jazz, and street performers— the Big Easy knows how to “Laissez Les bons temps rouler!” (Let the good times roll). Of course, the extended weekend leading to Mardi Gras (February 24-28th) is the most popular, and busiest, time to visit. We set out on our adventure in October—and there were still plenty of parade float activities, bead throwing, nightlife, and festivities swirled delightfully inside this cultural melting pot that poses as a historic southern port town brimming with romantic distractions, well-preserved architecture, and charming neighborhoods.

Not many businesses can boast an air of flair, fine food, and family quite like Peking Restaurant. With familiar staff and rich, warm tones coating the walls of their business, this Mandarin Szechwan inspired establishment holds their banner high in San Joaquin. Just a stone’s throw from Lincoln Center on Pacific, it’s regarded as the perfect lunchtime getaway during a weekend shopping experience. Peking Restaurant first opened its doors under the guidance of Bill Chu in 1979, and the establishment filled the area’s need for an authentic taste of the Asian continent. Over its long history, it developed a following, known for fresh ingredients prepared in seriously mouth-watering ways. Dishes such as the Braised Tofu, rich in black mushrooms and water chestnuts, has become an old-time favorite for returning customers.

And our personal favorite, Northern Style Vegetables, sautéed in a light garlic wine sauce, is a hit with vegetarians on the look out for good eats. “We want families to enjoy a meal together, and if you’re by yourself for a quick lunch, no problem!” says Curterina Chu, co-owner of the familyrun establishment. “Our food is fresh, it arrives quick and hot.” Since its inception, Peking continues to charm its guests with traditional family dishes such as the Sizzling Rice Soup, but it’s also enjoyed an inspiring twist in updated décor and refreshing options in the form of a dessert menu. Of course, when we’re ready to sink our teeth into an entrée, we turn to the Prawns Ala Peking, a tantalizing dish that’s typically spotted across many tables in the restaurant. “Some of my favorite dishes are our walnut prawns and 108

the Mongolian chicken,” Curterina explains. “The prawns are deep fried, have a light coating of our special sauce, and are topped with sweet walnuts. And I love the Mongolian chicken because the onions bring out the flavor of the spiciness and work really well for the dish!” Put in your wine list request, pick out your beer pairing, or go for dry champagne to toast your meal off right. The extensive variety of dishes that include lamb, beef, and chicken, or seafood and pork, allows more freedom and flexibility for even the pickiest taste buds. Guests can even snag an entrée or two that they won’t find written down. “Our chicken lettuce wrap isn’t on the menu, but customers can order it specially! The wanton noodle soup is also a popular secret dish.” If you aren’t looking for a little ambiance to add to the

Rejoice, my foodie friends! Fresh lettuce is prepping for harvest, which means we’re in for a nutritious treat in salads, wraps, and even soups! Lettuce has a long legacy of being served at the dinner table, older than most vegetables we have the luxury of dining on today. Tracing its presence as far back as ancient Egypt and Greece, it was served up as a sleepinducing dish when the Greeks believed it was perfect for settling down guests after a hearty evening of hosting. As our staple vegetable made its way to America, our colonial ancestors continued growing it in their own gardens whenever the season allowed. But as time passed and lettuce grew in popularity, it was cultivated on a commercial level in the twentieth century. These days,

over ninety percent of our nation’s lettuce production occurs in California and Arizona, with California leading. 4 leaves of iceberg lettuce 4 slices roast turkey ½ cucumber, sliced 250 g. hummus Sprinkle of paprika DIRECTIONS:

LETTUCE & AVOCADO SOUP INGREDIENTS:
1 tbs. oil 15 g. butter 1 onion, diced 2 heads romaine lettuce, roughly chopped 600 ml. vegetable stock 3 tbs. chopped fresh dill 2 avocados, roughly chopped 1 lemon, juiced 4 tbs. crème fraiche DIRECTIONS:
Gently heat the oil and butter in a pan. Add the onion and fry for 5-7 minutes or until softened. Add the lettuce and fry for a further 5 minutes, or until wilted. Transfer to a blender with the vegetable stock, dill, avocados and lemon juice. Blitz until smooth. Pass the soup through a sieve, using the back of a ladle to push it through. Discard the pulp.
