UPFRONT 209

WARMING HEARTS THIS WINTER When the holidays finally roll around in San Joaquin, the air is electric: we’re celebrating the year, giving thanks for all we have, and adopting an altruistic mindset that brings positivity to everyone. It’s for that reason that we do our best here at SJM to highlight the charitable organizations who are constantly fighting the battle on San Joaquin’s toughest fronts: This month, we sit down with Hallie Weber, Stockton Program Director at “Restore”, the nonprofit organization working with the youth of the Magnolia District by teaching them vocational skills. Helping others is always a key theme of the Holidays—this year, so is self-care. This holiday season, treat yourself to some therapy of the shopping variety at the Fashionable You, and maybe cross some items off your Christmas shopping list while you’re there! And once you’ve done your shopping, it’s time to show off your new threads at all those dinner parties! For those on a diet this holiday season, we salute you, and we’ve got our local dietitian on the case: Take some tips from Deirdre on how to best avoid temptation at dinner time (and don’t worry—you can still indulge and have fun!). Personally, after a good holiday dinner, there’s nothing my family and I love to do more than watching a good ‘ol Christmas classic. Soak up the nostalgia in “Christmas at the Movies” where you’ll find Caitlin’s list of certified-Holiday classics that will have you laughing, crying, and feeling all warm and fuzzy inside. Speaking of warm, we’ve got a comprehensive list of the best beverages for those chilly winter mornings—including warm cocktails for frigid evenings. Whether it’s a peppermint hot cocoa you’re craving or a classic Hot Toddy to give you a glow, Caitlin’s compiled a list you can sip on all season. If the drinks don’t keep you warm this winter, and you’ve got a grinch’s heart that’s two sizes too small, do we have a story for you: Dive into the lives of three amazing kids, Jordan, Masha, and Salvador, all of whom stay or attend school at the Children’s Home of Stockton. Few people know what really goes on in a group home, or the kids who stay there, but they’re some of the strongest, most resilient kids in the county. And, thanks to the amazing staff at the Children’s Home, they have a future that’s as bright as the North Star. This issue is full of heart. We recently said goodbye to our Managing Editor of five years, Lindsey Rodrian. She left some big shoes to fill, and this issue was dedicated to walking in them. We wish her the best and will always be thankful for her dedication to our magazine. And thank you, faithful readers. Good tidings to you and all of your friends!

LAST THOUGHTS GETTING COZY

Home is where the heart is, so keep both warm this winter and invest in that mobile fireplace you’ve been eyeing—or splurge on the ever-coveted heated bathroom flooring. Trust me, your post-shower toes will thank you! Whether it’s an outdoor fire element you’re wishing on, or simply replacing your light bulbs with those that give off a warm, yellowish glow, it’s the perfect time to make your home just a little—or a lot—cozier.

FOOL-PROOF GIFTING …At least where the foodies are concerned. And, deep down, aren’t we all foodies at heart? If you’re inclined to agree, check out Suzanne’s “Holiday Gift Giving Guide” from local businesses that are sure to please anybody who loves wine, cheese, and fancy oils. As Suzanne wisely says, one can never have too many cheese boards!

ALY MONTEZ

Driving through the Magnolia Historic District of Midtown Stockton, you’re bound to catch ever-surprising glimpses of massive Queen Anne-style homes. And yet, on the same block—sometimes right next door—sit run down apartments, splintering houses with boarded windows, and their inhabitants chain-smoking on the porch. The poverty that plagues the Magnolia district is a paradox that Stockton knows all too well. On one hand, there’s the ghosts of Stockton’s wealthy history as the “crown jewel” of California—on the other, the rut that the

city’s inhabitants have been stuck in for decades. For the past four years, Hallie Weber has joined in the effort to pull them out. “It’s a paradox of incredibly well-off families living right next to the poorest of poor,” says Hallie, Stockton Program Director at the 501(c)(3) nonprofit organization known as Restore. Together, she and her fellow volunteers have specifically taken on the task of revitalizing Magnolia neighborhood. “So many of the families that we see here are locked in this sort of cyclical poverty, suffered by generations that have just never known anything different.” It’s with the hope that they can show these families something different—plenty of food, healthy relationships, and the skills needed for a successful vocation— that Restore has engaged with the youth of this neighborhood.

“At its core, everything that Restore does is all about relationships,” Hallie states. “We believe that having healthy relationships are what form healthy communities, and a huge part of that is youth mentoring programs.” A relatively young organization, Restore began working with Magnolia families by connecting them to resources like the Midtown Food Pantry and Restore’s own Clothing Closet. Some years later, the old Chinese fishing proverb resonated with the organization, and Restore decided to teach the youth of Magnolia how to fish— or rather, how to screen print. Stockton RAGS (Restore Art & Graphics Styles) is Restore’s mentoring-based design and screen-printing program that teaches kids what it takes to start and run their own business, while also providing them with screen-printing and graphic design skills. You may have seen their work at their Stockmarket booth—t-shirts with designs that range from artsy to outdoorsy, bearing positive messages like “Hope” and “Adventure is Calling”. “RAGS shows kids what it looks like to learn a process from beginning to end; how to actually use graphic design skills to make something, to see that on a screen and then brought to a t-shirt,” Hallie explains. “And it actually helps fund the work we do; any money that comes from the shirts goes back into the program.” With RAGS success as Restore’s first vocational program, the nonprofit is cur-

rently pursuing an even bigger project that would provide at least three more vocational training opportunities for the youth of Magnolia. Dubbed “The Well”, Restore’s newest building in the Midtown Magnolia neighborhood will house a café, coffee shop, venue space, and meeting space for budding local businesses. “Every element of The Well will have a vocational training component,” Hallie explains. “There will be a culinary arts program out of that café, a coffee roasting program out of the coffee roasting we’ll do in-house, and in the venue, kids will learn how to set up for and coordinate an event, and even sound engineering.” While The Well is currently under construction, the Grand Opening is up in the air—aside from RAGS’s income, Restore is dependent on public grants and private donations. They are currently in need of significant funds to bring this project to completion. In the meantime, Restore will continue to revitalize the neighborhood via their other programs—the community garden at El Dorado Elementary School, their monthly community meal called “Come to the Table”, and their youth mentoring programs. “For years, it’s been so easy for people to point at Stockton and say, ‘That’s broken,’” says Hallie. “What Restore is all about is coming in and instead saying, ‘That’s beautiful—let’s bring the beauty out.’”

VERY merry MANNERS A GUIDE TO BEING THE PERFECT HOLIDAY GUEST  BY ALEXANDRA KRUEGER The holidays are a time for giving! Sometimes, though, the best gift you can give to your loved ones is a kind word and a little consideration—AKA, some good ol’ fashioned etiquette. With so many dinner parties on the horizon, everyone could use a little refresher course on appropriate holiday manners. Read them all, and we promise you’ll be prepped and ready to be the perfect party guest!

RSVP, ASAP As soon as you receive an invitation, make sure you let the host/hostess know if you can or can’t attend. Having an accurate guest count early on will make it easier on your host as they plan their party, so be sure to return their generous invitation with this simple common courtesy.

34

|

SAN JOAQUIN MAGAZINE DECEMBER 2018

Come Bearing Gifts

Easy on the Eggnog

Don’t show up to the party empty-handed! Always arrive with a gift for your host. It doesn’t have to be something elaborate—just something to show them that you appreciate them putting together their lovely event. Consider boxed candies, decorative candles, or even a bouquet of flowers in a vase.

…and the vino! While it may be tempting to over imbibe (especially if you’re surrounded by extended family) make sure to limit yourself so that you don’t do or say anything you’ll be embarrassed about the next morning.

Put Down the Smartphone It should go without saying that you’re there to spend time with your friends and family, face to face. Put your phone on airplane mode or turn it off so you can really engage with others at the event. But, if you must let the world know what you’re up to, at least save the Instagram selfies for the end of the evening.

Offer To Help Clean Up Because the host has no doubt put a lot of work into the event, the least you can do is offer to assist them in clearing the dinner table or tidying the mess. They might decline your offer and insist that you enjoy yourself, but you can be sure the offer was appreciated.

Thank You Cards If you’re given any gifts at the event, be sure to handwrite all thank you notes and send them out as soon as possible. This gesture is the pinnacle of holiday etiquette!

AVOIDING HOLIDAY TEMPTATION  BY DIERDRE CARLSON

The upcoming holiday season is a time to enjoy family, friends, and food. However, the never-ending stream of food and parties can make it easy to over-indulge. But don’t worry! Contrary to popular belief, you can still enjoy the holiday season without packing on those extra holiday pounds. According to recent studies, Americans gain one to two pounds on average during the holiday season. While the amount of weight is not clinically significant, research shows that it tends to stick around and possibly even accumulate over the years. Below are a few tips to enjoy yourself in a balanced way throughout this holiday season.

to your alcoholic beverage of choice. Go with a 5 fluid oz. glass of red wine which contains about 125 calories per serving, as well as a potent anti-oxidant known as resveratrol. Alternating between water and alcohol will also help minimize overindulging—and keep you hydrated.

DO NOT SKIP MEALS

SAVOR EACH BITE

START WITH VEGGIES Holiday meals tend to be served buffet-style, so start by filling your plate with vegetables and a salad before moving on to the entrées and desserts. Why? Because vegetables are high in nutrients and fiber, which is a winning combination for your overall health and keeping you full.

Although this may be a popular strategy for holiday eating, it is not the healthiest. “Saving” all your calories in preparation for a big holiday party or gathering can result in overeating. And especially don’t skip breakfast—current studies show that people who eat breakfast tend to consume fewer calories throughout the day.

Research shows that it can take about 20 minutes for your brain to get the signal that you are actually full, so pace yourself when enjoying your meal. By savoring every delicious bite, you are more likely to take your time and stop when you’ve had enough.

BE SMART WITH YOUR BEVERAGE CHOICE

Often, in social holiday situations we have a habit of eating something simply because it’s there. Try to be picky at your holiday

Beware of the sugar traps when it comes 36

EAT WHAT YOU LOVE

functions. Focus on only eating foods you absolutely love and skip foods you don’t. Also, to help curb unnecessary eating, don’t hang out near the buffet table. It’s as they say: “Out of sight, out of mind.”

ENJOY DESSERT There will likely be a large variety of cakes, cookies, pies, and ice cream at your holiday meals. Definitely have some. Enjoy them. If you want to taste every dessert, consider having a small sample of each.

GET MOVING Walking is one of the healthiest habits to have during the holidays, especially after eating a big meal. A brisk 20-minute walk after a meal can help ease digestion and stabilize blood sugar levels.

LOSE THE GUILT The holidays should be a time of celebration and relaxation, but many people get anxious about holiday eating. If you do happen to eat more than you planned at an event, don’t beat yourself up. More importantly, don’t let a slip become a fall. Try to get back to your healthy eating habits as soon as possible.

A PLACE to BREATHE RETAIL THERAPY AT THE FASHIONABLE YOU  BY CAITLIN HAMER / D ALY MONTEZ The perfect shopping trip may seem elusive—how often do you get to walk into a store where you feel comfortable, find something you love, and walk out with purchases that didn’t break the bank? Craving such an experience? Head to The Fashionable You, a new Lodi boutique that’ll make you fall in love with shopping again. Owner Leah Suelter has created a friendly and inviting environment that’s sure to put customers at ease as soon as they walk in the door. The stylish and down-to-earth interior is approachable enough that you feel like you can be yourself. And of course, embracing one’s self is a huge part of shopping successfully. “It’s kind of inherent that we bag on ourselves,” laments Leah. “I want all women to walk out of here feeling better than when they walked in.” Leah prides herself on being very deter38

mined, so it’s only natural that she excels at helping customers find gorgeous clothes that are within their comfort zone. “Half of our inventory is plus size,” she adds. Since finding plus size clothing can be so difficult that it can deter people from shopping, Leah was happy to help customers avoid that obstacle. Instead, they can focus on finding versatile clothes that will make them feel joyful and confident. “I try to find things that are playful, romantic, and country chic,” says Leah when reflecting on the brands she stocks. Whether you’re looking for dresses that can double as daywear and nightwear, or a more casual tunic and jeans outfit, this shop has you covered—and don’t forget about accessories and jewelry! Though the designers The Fashionable You Boutique carries change all the time, Cheekys and Kancan are two mainstays that Leah and her customers love. An added shopping incentive: 10 percent of proceeds from faith-based

items are donated to Lifeline Church. The Fashionable You also has a selection of handmade products from local vendors. Bath bombs from Simply Natural, wine glasses from The Young Mama Bear Company, and men’s soaps from The Lathered Lily all make for cute stocking stuffers – or treats for yourself! Don’t be surprised if you find yourself chatting with Leah like you’re old friends while you’re shopping. It’s her warmth as well as her merchandise that makes for a truly refreshing and restorative experience. “I just wanted to make a space where people can leave knowing that they’re perfect how they are,” she says.

Holiday RECYCLING

THIS HOLIDAY SEASON, GIVE THE PLANET A PRESENT! Did you know that between Thanksgiving and New Year’s Day, Americans throw away an extra million tons of garbage each week? Americans also use more electricity to power holiday lights than some countries use in an entire year!

This Season Try Some of These Earth Friendly Tips: Make a little less food; save both your waistline and your wallet. Swap old incandescent holiday lights for energy-efficient LED lights. Use rechargeable batteries instead of alkaline batteries.

Avoid Giving “Stuff”, Instead: Give the gift of time: give a coupon to make dinner for a loved one, help with gardening or small home repairs. Give the gift of an activity: a hiking trip, picnic, massage, or movie. Give the gift of culture: buy tickets to a concert, musical or play.

For countless at-risk youth and their families, the Children’s Home of Stockton (CHS) is and has been nothing short of a godsend. The stately complex of burgundy brick buildings on Pilgrim Street in Downtown Stockton has a history that reaches as far back as 1882, and a charitable legacy to match. However, if you’ve never been, perhaps you imagine the Home to be some kind of purgatory for disadvantaged kids, grey and grim, holding them in a place between past trauma and inevitable future turmoil. You would be very, very wrong. That said, it’s not unusual for Group Homes in California get a bad rap. In 2016 Senator Mark Stone acted on this stigma, endorsing the Continuum of Care Reform AB-403, a bill that would initiate a two-year process of phasing out group homes in California. By January 2019, group homes like CHS will cease to exist. But, the disadvantaged youth of San Joaquin need not worry—the Children’s Home of Stockton has a www.sanjoaquinmagazine.com

plan. Shedding the title of “Group Home”, CHS recently became a Short-Term Residential Treatment Program (STRTP), a classification change that will allow them to continue to care for their students and residents. But, the change is not without consequences. “Before, when we were classified as a group home, kids would come stay with us for three, four, five years,” explains Joelle Gomez, CEO of the Children’s Home of Stockton. “Now, the new legislation requires that we’re just a short-term crisis intervention. That will have a lot of ramifications on kids’ treatment and success.” The fact is, few civilians—and, dare I say, politicians—really know what goes on in a group home setting, much less the kids who stay there. However, in light of this new legislation, places like CHS need their community’s support now more than ever, if they are to continue rehabilitating our youth who would otherwise be left behind.

MIKE GALINDO

LEAD RESIDENTIAL CLINICIAN

n a d r Jo

Beneath The Surface JORDAN & MIKE

The CHS campus is larger than you’d expect. Brick offices and classrooms make up the main interior, and in the far right corner are the Cottages—white buildings housing children who are in need of Residential Treatment Services. There are seven of these cottages, each specializing in addressing certain issues, including dysfunctional family systems, physical abuse, substance abuse, delinquent/ pre-delinquent behaviors, social skills & living deficits, etc. Treatments vary from individual, group, and family therapy, daily living skills training, vocational training, and more. While all of this sounds very clinical, the Cottages exude a surprising mix of friendliness and orderliness that you’d expect from the apartment of college kids—very responsible college kids. 62

SAN JOAQUIN MAGAZINE DECEMBER 2018

The main living area consists of a full kitchen, dining room, and living room with an entertainment system. A massive whiteboard hangs on a wall in front of the kitchen table, listing the names of every resident (about 10) and the chores they are currently assigned. Certain pets are allowed— while visiting, I am introduced to a small bearded dragon and a guinea pig named Juapito. The first resident I meet is Jordan. Sixteen years old, Jordan attends CHS’s One Vision high school, and is very close to graduating. His favorite class is music, in which he learned to

play acoustic and bass guitar. Jordan comes from a background of family disfunction and gang affiliation, but you’d never guess it. When he greets me and sits down for his interview, he’s all smiles, all respect. “At first, I didn’t like it here at all,” Jordan admits, with a grin. “It was very structured, and I was used to being able to do whatever I wanted. But the structure really helped me a lot—chores, curfew, the rules here; all of it held me accountable. It took me like seven months to get used to it.” Mike Galindo, CHS’s Lead Residential Clinician of 29 years and Jordan’s personal Clinician, says structure is a key component

for successful rehabilitation. “Structure is a big part of creating a safe and healthy environment,” Mike states. “That’s the first step. Then, when the kids feel safe, they’re able to share experiences, and also start addressing thoughts and feelings; how they think about themselves, how they view the world.” Having essentially lived on his own from the time he was 13, Jordan developed issues with authority, and lacked a steady role model to show him how to handle life’s challenges. “I used to affiliate with gang members, and was involved in dealing drugs,” Jordan explains. “I was gone—I didn’t know who I was anymore. I was lost in the streets.” Mike says kids turning to this kind of outlet is not unusual. “In general, a lot of our kids come to us with trauma,” he says. “They’ve been victimized in some way, and learn inappropriate ways to cope, which are to join gangs, to steal, etc. They were hurt, so they, in turn, hurt somebody else.” But all that changed when Jordan came

www.sanjoaquinmagazine.com

to CHS. Structure taught him that independence and discipline live side by side—and family therapy services helped him reconnect with his mom. “During family sessions, we talk about the problems we used to have. She tells her side, I tell my side, and we meet in the middle,” Jordan says. “It’s helped a lot. She and I are pretty cool now.” At the time of his interview, Jordan was planning to move onto San Joaquin County’s transitional housing program, in which previous residents relocate to apartment-style living with fewer roommates. Residents are required to either A) attend college full-time, or B) maintain a full-time job. They’re also assigned a life coach who teaches them how to budget and handle various adult responsibilities. Since then, however, there has been good news: Jordan’s grandfather has invited Jordan to stay with him. “Coming here and experiencing the structure the program provides, it helped me realize that there’s so much more than

yourself,” says Jordan. “On the surface, might be a lot… But deep down inside, there’s more. Way more.” In the years to come, Jordan plans to pursue his passion for music. When asked what he would tell someone in the position he was in just two years ago, without missing a beat, he answered, “‘You need to come to the Children’s Home.’”

There’s so much more than yourself. On the surface, might be a lot… But deep down inside, there’s more. Way more. - Jordan

Finding Your Voice MASHA & RANDY

Many teenagers find attending public high school to be a difficult experience. In that kind of environment, especially that of larger schools, it can be easy to feel lost in the crowd. For Masha, the public high school experience was long past difficult: her social anxiety made it almost impossible for her to attend school, and when she did, being around too many people at a time made her feel trapped. But, for Masha, that was business as usual. Even the resulting suicide attempts she

64

|

SAN JOAQUIN MAGAZINE DECEMBER 2018

describes with nonchalance—that is, until Valentine’s day. “I was already in a bad place: smoking weed, going out late, drinking... And then Valentine’s day came, and one of my friends took advantage of me when I thought they were supposed to help me,” Masha recalls. “All of my friends, except for two, blamed me for it. They said that I should have known better. I couldn’t take that—I felt so guilty.” A textbook case of victim-blaming led Masha to make her most serious suicide attempt. And, she might have succeeded, if not for one of her good friends. “My friend rushed to my house and had to stop all the bleeding—it was just a whole mess,” says Masha. At that point, it was clear that her public

high school environment was too toxic. In a stroke of luck, Masha’s mother lived near the CHS campus, and quickly enrolled Masha in CHS’s Non-Public School (NPS) program. NPS is an education program designed for students who need a more specialized environment in which their individual needs can be met. With smaller class sizes, an emphasis on behavior management and social skills development, and a highly structured campus environment, NPS provides students with a safe place to learn. For Masha, the program came into her life just in time. Since becoming a Day Student of NPS, her outlook on life and ability to engage in academics have improved dramatically. “Back then, I would only go to school for

a h s a M

like 10-15 minutes, and then I’d leave and go home because I couldn’t do it anymore. When I came here, I started taking four classes a day,” Masha recalls. “Less than half a year later, I was taking full classes and going every day. I feel like that’s a big improvement.” On top of her improved attendance, at NPS, Masha also found her voice. “I play 3 instruments, guitar, ukulele, and piano, but I mostly like singing,” says Masha. “I’m doing a performance this weekend downtown at the Red Orchid for an event,” she adds, with a smile. As CHS’s music teacher of 10 years, Randy Carnahan knows just how the power of music can positively influence a child’s life. “Approaching an instrument, it’s like ‘Okay, here’s this thing I don’t know anything about, but if I put some time working on it, I get something back out of it’,” explains Randy. “After they leave here, these kids may never touch an instrument again, but at least they learned how to work towards a goal.” Since attending NPS, Masha has been steadily progressing toward the goal of graduation. Over a year clean of self-harm, it’s thanks to NPS that Masha now looks forward to her future: she currently plans to attend college, earn a degree in Sociology, and pursue a career along the lines social work. “CHS really helps you feel like you matter, like you belong somewhere, even if it’s somewhere small,” concludes Masha.

The Turning Point

SALVADOR & APRIL Salvador Hernandez-Rodriguez had spent two months in Juvenile Hall when the court gave him the option of joining CHS’s Residential Treatment Program. He took the deal, but the doubts lingered. “I was nervous at first, because the people inside were like, ‘Oh, it’s a group home, they’re going to treat you badly,’” Sal remembers. “I was thinking this place was going to be worse than Juvenile Hall.” Thankfully, it didn’t take Sal long to realize that CHS was far from a detention center. Instead of punishing Sal for his past actions or present anger, CHS therapy services sought out the causes of Sal’s destructive behaviors and helped him overcome those issues—the majority of which stemmed from deeply-ingrained cultural

and family dynamics. “I was eight years old when my sister was born,” says Sal. “I’d always been an only child, but after that, my parents had me take care of her. Then another sister was born. I had to be the example for them; I had to be the good boy.” April Chavez, Salvador’s Residential Clinician at CHS, explains. “One of Sal’s issues was that he was a parentified child, meaning that he was put in a role of being very responsible,” she states. “So, when he got here, we basically had to put him back in the role of being a child. Like, you’re the teen. We’re going to take care of you.” Aside from taking care of

his sisters, Sal was also the English speaker in the house—even though he was just a child, he had to do all the talking. “He had a lot of resentment about that. Although he was always a good student and a good kid, he held a lot of that inside,” April explains. “When it would erupt, he would explode.” It was clear that bottling up his feelings was not going to work for him in the real world, so Sal needed to work on expressing his emotions in a healthy way. “Learning to say something early on was a challenge—it was a big difference culturally from his family environment, where questioning or saying anything was thought of as disrespectful.” Says April Through frequent individual therapy, group therapy at least twice a week, and family counseling once a month, Sal learned that it was okay to express his feelings and be honest with his family. “Once you stay here and

www.sanjoaquinmagazine.com

do the treatment, you actually find yourself, develop yourself, and grow as a person,” states Sal. “I found stuff that I never really knew why I was mad at. I found stuff that I was really good at but had never tried before.” With his anger under control, Sal can focus on the things he’s passionate about, from creative writing, to acoustic guitar, to community service. Close to graduating, Sal’s set his eyes on academia. “I really want to go to college because I think that’s where I’m destined to go,” he says. Post-college, Sal hopes to pay it forward by going into psychology or social work. “I feel like coming here has been a turning point in my life,” Sal states. “Being here changed me into a whole different person, and I’m grateful for it. I keep thinking, what would have happened if I didn’t come here? How would my future be?”

JOELLE GOMEZ

CEO OF THE CHILDREN’S HOME OF STOCKTON

It just gives me so much hope for these kids who I know I’m going to see lead successful lives.

-Joelle

Moving Forward JOELLE GOMEZ

As CEO of the Children’s Home of Stockton, Joelle Gomez knows all too well how group homes—and the children within—can be misjudged. “At-risk youth is a population of people that many people have stereotyped. People think they deserve what they get, that they’re delinquents, that they’re choosing to be involved in gangs or use drugs,” says Joelle. “If more people understood how traumas they’ve experienced in their childhood have affected them, they’d understand that these kids weren’t given much of a choice as teenagers.” It’s easy to say that welfare systems are broken, because no matter how much work is being done, there will always be people who encounter life’s obstacles, fall down, and need help getting back up. But the ongoing nature of the problem, rather than invalidating child welfare, only supports the ongoing need for programs such as the Children’s Home of Stockton. “The courage it takes for these kids to overcome their traumas…” says Joelle, shaking her head. “When I see them succeeding—it could be a small step, like being more respectful to their peers and staff, going to school on a regular basis, or successfully meeting their goals and treatment plans—it’s incredibly moving,” she says. “It just gives me so much hope for these kids who I know I’m going to see lead successful lives.” FOR MORE INFORMATION: CHILDREN’S HOME OF STOCKTON 430 N. OH BABY, IT’S COLD OUTSIDE!

7 Ways to Warm Your Home This Winter  BY NORA HESTON TARTE

www.sanjoaquinmagazine.com

Winter is officially upon us and temperatures are dropping but fear not! There are several ways you can keep the heat from leaving your home! Over the next few pages, take a peek at our list of creative (and resourceful) ways to keep you and your family cozy this winter while keeping heating costs low, so neither your wallet nor your thermostat has to take the hit.

KNOW YOUR HVAC When you turn up that heater dial, it’s the HVAC system in your home that is responsible for keeping your family warm. That’s why it’s so important to keep that unit in prime working order. Follow these steps to turn up the heat (and keep costs low).

MAINTENANCE A well-maintained unit is a well-working unit. Call a local HVAC expert, and schedule a routine maintenance call. A certified technician will visit your home, inspect your unit, and let you know if anything can be op-

80

|

timized. Replacing dirty filters or other spare parts can make a world of difference, and when an HVAC system is clean and running smoothly, your bill will come down, too.

REPLACEMENT

Older units often have to work harder to maintain a steady temperature in the home. Replacement may sound costly, but buying a new unit often pays for itself. Newer units are energy-efficient and therefore cost less to run helping to save money on that monthly heating bill.

SAN JOAQUIN MAGAZINE DECEMBER 2018

Fireplaces

Roast those chestnuts over an open fire! Fireplaces offer romance during the holiday season, creating warmth and improving ambiance in your home. Fireplaces as a focal point are trending right now; step yours up by adding an accent wall, or a mantle to hang those stockings from. If you don’t like the hassle of building a fire, add a gas insert, or fill your fireplace with tall candleholders for a modern look. Don’t have a fireplace in your home? Mobile units are easy to add and often boast chic designs. There’s something special about whipping flames on a chilly December evening, and technology offers many of the same perks of real fires with gas or electric units. When you’re shopping around, test out units to ensure the one you buy gives off enough heat. For another practical way to keep your home warm this winter, you’ll want to make sure to close your damper if you have a traditional fireplace. This keeps the heat from escaping out of

your chimney and makes warming your home more cost effective.

Heated Floors

Stepping onto cold tile isn’t the best way to start a morning. Eliminate chilly toes by replacing floors with a heated system. On a budget? Pick a small area to redo, like the bathroom. Because heated flooring uses radiant heat, it actually works better than most heating systems when it comes to warming your home. Heat typically rises, occupying the space above your head where it isn’t needed. With radiant heat, heat begins at the floor level and slowly rises, occupying the entire room from bottom to top, and keeping you and your home feeling cozy. Warm up other floors with large area rugs. Placing a furry carpet underneath your bed or couch will make those first steps off of the furniture more comfortable.

Furnace Care

An out-of-date furnace doesn’t work optimally. Keep Jack Frost from nipping at your toes by tuning an older unit. “It uses way less gas if it’s adjusted properly,” Rod Johnson, owner of Rod Johnson Air & Solar, explains. In addition to tuning the furnace, it can often help to replace your blower or install a high-efficiency motor. In a worstcase scenario, you’ll have to replace it, but typically these small tweaks can add a few degrees of comfort for the winter months.

Insulation

If your home feels chilly in the winter, try adding insulation into the walls. Houses are always insulated, but not always adequately. Take advantage of insulation services offered at companies such as Rod Johnson Air & Solar to give your house some extra padding. Not only will this keep your home toasty in winter, it’ll help keep the heat out in summer, reducing cooling and heating costs year round.

Outdoor Heating

In San Joaquin County, we’re fortunate enough to be able to enjoy the outdoors all year long, so winter is no reason to hide inside. Make backyard hangouts more comfortable this season by adding heating elements. A quick fix for a chilly patio is a heating lamp reminiscent of the ones found on restaurant patios. If you want to get fancy, add a fire pit or fire table, the latter of which can be picked up at any Home Depot or Lowe’s. Last up, make sure the furniture is ready for winter. We often stack and store patio furniture during the winter months, but cozy pads on those metal chairs and the addition of a few pillows and throws can really warm up an outdoor space in winter.

Lighted Ambiance

Warming up a space sometimes has just as much to do with a cozy feel as it does the actual heat. Using warm lighting can instantly transform a room and give it a subtle glow. LED lights and even light bulbs come in many shades, so change out white hues for bulbs labeled “warm glow.” The yellowish tone will feel perfect in dreary winter months. In addition to changing out your existing bulbs, consider adding more lights around the room. This replaces the natural light that goes missing after Daylight Savings forces us to fall back. Corner lights and small table lamps tend to offer a subtler glow than large overhead pieces. Candles can achieve the same effect. Place a few of your favorite scented candles around your home and light them on quiet evenings in.

Enjoy a Danish Holiday on the Coast of California  BY

NORA HESTON TARTE

Eleven months out of the year Solvang operates as the Danish capital of America. Windmills reminiscent of those found in Denmark, Tudor-styled buildings, and statues that nod to fable writer Hans Christian Anderson transport visitors to another world. In December, Solvang transforms itself into a Christmas spectacular with the city’s annual Julefest—a celebration of lights, food, and all things Christmas. Plan an escape during the month to embrace the holiday spirit and the Danish culture.

VISIT SOLVANG

ENJOY JULEFEST

Julefest (pronounced yulefest) is Solvang’s annual Danish Christmas celebration. Lasting the entire month, visitors can enjoy the California stop rated amongst America’s 10 most Christmassy towns. Festive lights are strung over every windmill and building in the city while Julefest brings visits from Santa, holiday parades, and more to California’s Central Coast. Schedule your stay around the Skal Stroll, one of Julefest’s best December events. For two days, December 15-16, wine and beer lovers can grab a passport and enjoy sips from craft breweries and tasting rooms throughout the Santa Ynez Valley—there’s more than a dozen in all. Special for the holidays, wineries also invite guests to judge Gløgg, a traditional holiday mulled wine served in Denmark. On the same weekend (or any other Saturday leading up to Christmas) Solvang hosts VIP Candlelight Tours perfect for newbies. If you’ve never been to Solvang before—or if you have but haven’t taken

a tour—this event will tell you everything you want to know about the history of California’s Danish town, established in 1911. Tour guides wear costumes and sing carols as you stroll through downtown before heading to a private reception with Santa Claus and snacks (hot cocoa and cookies). Expert Tip: Jump on this event early—tickets sell out fast! In the evening, show up for the Nativity Pageant, an elaborate stage production that tells the classic nativity story with live animals, musical accompaniment, and narration at the Solvang Festival Theatre (420 Second St.) The second weekend in December (December 7-8) offers some of Julefest’s biggest attractions. Get into town on Friday evening to watch the festive tree lighting ceremony on December 7 (5-6:30 PM). Entertainment includes performances by ballerinas, live music by local musicians, caroling, and an appearance by Santa Claus. On the next day, the Julefest parade brings more than 400 partic-

ipants and 50 individual entries to the streets of Solvang. Participate in the Santa Sprint beforehand. Starting at 10:30 AM costumed (or not) runners can sprint through the parade route before everyone else. After the parade, Santa will be at Solvang Park to take gift requests from kids (12:30-4 PM). Finish off either weekend with downtown shopping. Clothing boutiques, specialty stores, tasting rooms selling wine-themed goodies, and candy shops will all be in the holiday spirit. Carolers and live musicians walk the streets on and off throughout the weekend while shops offer discounts and gift suggestions to shoppers.

SOLVANG WINE

Located in Santa Barbara County, Solvang is a favorite destination for those who love wine. There are more than 20 tasting rooms showcasing Santa Ynez Valley, Santa Maria Valley, and Santa Rita Hills wines to choose from. Take a self-guided tour through downtown. It’s a good opportunity to stop off at local bakeries, eateries, and boutiques in between tastings. While you can’t go wrong with any of the stops, we definitely have some recommendations you shouldn’t miss. Here are some of our favorites:

CALI LOVE WINE

HELD EVERY DECEMBER, JULEFEST IS A MONTH FULL OF LIGHTS, CELEBRATION & HOLIDAY CHEER!

This boutique business combines wine and music in a California-themed tasting room/ guitar museum. Stop in during the day to be serenaded by the sweet stylings of the owners-musicians, or come back in the evening to enjoy karaoke and spinning DJs. As if that wasn’t special enough, Cali Love is dedicated to preserving old-world winemaking techniques such as native yeast fermentations, multi-varietal co-fermentations, and extended macerations to create hand-made wines sourced from local vineyards. (1651 Copenhagen Dr.). This location is kid and dog friendly.

CROSSHATCH WINERY

Have you ever wanted to sip wine inside of a windmill in the middle of town? It’s the bucket list item you never knew you had. Cross it off at Crosshatch Winery. Come in for a tasting or order wines by the glass. Crosshatch wines run the gamut with a lineup of Rhone and Bordeaux roses, whites, and red. (436 Alisal Road —in the windmill)

LION’S PEAK AND JULES FESTIVAL WINE WALK, DEC. 15-16

Schedule your travel for mid-December and take advantage of this Julefest exclusive. From 11 AM-4 PM on Saturday and Sunday Lion’s Peak participates in the wine walk event. The winemaker has selected a few special pours for the weekend and will offer special bottle pricing, plus appetizers, live music, and more.

DASCOMB CELLARS

WANDERING DOG WINE BAR

Dascomb Cellars has a rich history in Santa Barbara County, boasting grapes from one of the oldest vineyards in the county. The family owned and operated business pours handcrafted wines from California Central Coast, all approved by the resident master winemaker David Dascomb. Order a glass—or a few— of the winery’s small-lot reds, ranging from merlot to sangiovese, cinsaut to vintage port. (1659 Copenhagen Drive, Ste. B)

There’s a reason Wandering Dog was voted the best place to wine taste in the Santa Ynez Valley. Pull up a seat and order a flight. In addition to local sips, Wandering Dog features pours from around the world, plus gourmet appetizers and other treats. For the beer lover, there are more than two-dozen craft beers to choose from. Expert tip: order a cheese platter created to compliment your individual tastings. Every Thursday the wine bar hosts a blind tasting event. From 4-7 PM, sip four half-glasses of red wine and try to guess the varietal, alcohol percentage, region, vintage, and price of each one. (1539-C Mission Drive)

LION’S PEAK

Lion’s Peak serves up Bordeaux and Rhone styled red and white wines offering a little something for every palette. What is truly special about this Solvang gem, however, is its collection of library cabernet sauvignons that date back as far as 1994. (1659 Copenhagen Drive)

SOLVANG SHOPPING

The sweet shops in Solvang are a unique experience for visitors. There are a few small bakeries and other stores that serve traditional Danish goodies, a far cry from the pastries you’re used to picking up. Stop into Mortensen’s, a busy bakery located in Petersen Village Square. Macaroons, fruit-filled treats, and almond-everything are favorites on the menu. The shop carries some history, too—it was opened in 1967 with Ove Mortensen, a native Danish from Copenhagen. (1588 Mission Drive) The Swedish Candy Shop is unlike the other sweet stores in Solvang. The storefront hocks traditional Swedish goodies but its specialty is polkagris, a Swedish stick candy that dates back to 1859. (485 Alisal Rd., Ste. 135) If you’re looking for a non-alcoholic tasting adventure, stop into Solvang Olive. The downtown shop boasts locally grown and produced cold-pressed olive oils, flavored vinegar, and other culinary treats. Mix and

match to create new flavors. We recommend the champagne mimosa vinegar and blood orange EVOO. (1578 Mission Drive) At Jule Has (Danish for Christmas House) it’s Christmas 365 days each year. The year round Christmas store features costumed sales people selling ornaments, nutcrackers, and other holiday décor. In December the store offers a little extra magic as the streets of Solvang finally match the interior of the favored shop.

HANS CHRISTIAN ANDERSON

Hans Christian Andersen is a famous fable writer from Copenhagen best known for stories like The Little Mermaid and The Princess & The Pea. His propensity for fairy tales with dark undertones makes him a favorite of both kids and adults. Perhaps the most famous piece of Andersen pop culture in Solvang is the replicated Little Mermaid statue located outside of Chomp that looks much like the famous Denmark piece. And not far away you can find a statue of the author himself. (1693 Mission Drive) Step into the Hans Christian Andersen museum to learn more about his life and stories. DAN HOOD

Tucked away into the corner of West Lane and Bianchi, you’ll find the restaurant known as Kitchen at Stonebrier. The first thing that strikes you will probably be its name—if every restaurant has a kitchen by default, what’s with the emphasis? When you walk into the restaurant, that’s when the “ah-ha!” moment strikes: It feels as though you’ve walked into a friend’s dining room. Chairs are wide and comfortable, various rugs carpet the floor giving the place artsy appeal—and yet, place settings are poised, a musician is strumming his guitar, and all the elegance of dining out is still there. With its unique atmosphere, you’d be hardpressed to find anything like the Kitchen in San Joaquin. “The family environment makes our restaurant really special,” says Jeff Holt, Head Chef at the Kitchen at Stonebrier. “It’s almost like Cheers when people come in here—by the time you get out the door, you’re going to know somebody.”

With iron tables and chairs sporting spiraling designs, a fire pit for winter, and an outdoor bar, it feels like you’re having dinner in the fancy backyard of a good friend—it’s an easy-going atmosphere that draws in many, with a dash of elegance. If you’re in the mood for more of a quick bite than a meal, the patio is also the best place to enjoy the Kitchen’s wide selection of appetizers. From their crowd-pleasing Cabernet, to the classic Old Vine Zinfandel, to their bright Chardonnay (Tom’s wife’s favorite), the McKenzies have found their place here in Lodi wine country and couldn’t be happier. “Without a doubt, the Old Vine Zinfandel is consistently good, people really like it,” says Tom. “I have no problem selling our Cab— it rivals the Napa Cabernets. It’s hard to imagine that an Orthopedic Surgeon would have the time or desire to craft fine wines, but that’s exactly what Thomas McKenzie of McKenzie Vineyards does. With six generations of farmers and winemakers in his family, you could say Tom has wine in his blood—even his busy schedule couldn’t keep him away from the business. “McKenzie Vineyards was a family thing that’s been going on for over 100 years. My great grandfather planted his first grape vines in 1896, and our grandfather Everett assembled what is now the core of McKenzie Vineyards,” Tom explains. “When he passed in 1946, our father Donald ran the vineyards upon his return from Germany after WWII, putting together the current vineyard operation. He ran it until the mid 2000s, and today, we do.” Family history aside, after years of working on the McKenzie’s ranch and vineyard in Acampo, Tom was ready for a change. “I wanted to do something fun, so I bargained with my wife,” says Tom, with a chuckle. “I told her we’d make a ton of chardonnay to her taste buds, and a ton of Cab to mine. When my brother heard, he wanted to do the Zinfandel and everything else.” Thus, McKenzie Vineyards & Winery was born. Together, Tom, his brother Leslie, and nephew Scott make fine wine 100

MEET

MAKER MELISSA ROBLES WEIBEL FAMILY WINERY

HOW’D YOU GET STARTED?

A

After completing the winemaking certificate program at UC Davis, I worked as a lab tech at a large winery. I held that position for one year before becoming an assistant winemaker—which I did for 5 years before becoming the winemaker here at Weibel.

WHAT’S YOUR WINEMAKING STYLE?

A

I would describe my winemaking style as “new world”. It really embodies an entrepreneurial spirit and breaks away from making wine the same old way.

WHAT’S YOUR FAVORITE ASPECT OF THE WINE MAKING PROCESS?

A

At Weibel I love creating new flavors for our sparkling line. It’s fun coming up with and creating new flavors and bringing something new, adventurous, and delicious into the world of wine.

WHAT’S THE MOST REWARDING ASPECT OF YOUR JOB?

A

I love watching people enjoy the wine I’ve made. After putting so much work into it, there’s nothing more satisfying.

WHAT DO YOU MOST ADMIRE IN THE WORLD OF LODI WINE, AND WHY? SIP WINE AT: WEIBEL FAMILY WINERY 9 North School St, Lodi (209) 370-6013 Weibelcom

I admire the community! Lodi is such an amazing wine region. All the wineries here not only create such excellent products, but they’re so communal. And the people that inhabit the area are just as extraordinary and supportive of local wine. I feel fortunate to be part of such a brilliant winemaking community.

behind the knife

WINEDINE 209

BEHIND theKNIFE: ˜ of WATERLOO JOSE NUNEZ  BY SUZANNE LEDBETTER

Loyalty is a rare commodity in the restaurant business. But sometimes you meet a chef ˜ who is just that. Jose Nunez, Executive Chef at The Waterloo, is celebrating his 20th year with the dining spot famous for their BBQ ribs and pesto. Yes, you read that right—20 years working and creating alongside the J.T and Bette Thomas family, who established the legendary restaurant in 1982. Longevity like Jose’s is almost unheard of in the restaurant business. While Jose was born in Central Mexico, he immigrated to the United States when he was 18. His first job in a restaurant was at Mel’s Diner, where he worked his way up from dishwasher. In every kitchen, Jose eagerly jumped into new positions and eventually sharpened his knives at chain restaurants before he came to Waterloo. He even attended culinary classes at Delta College to hone his skills and further his knowledge. But, what made Jose want to become a chef? The simple answer: his mother. He found inspiration from the woman who cooked up traditional Mexican dishes for the family with love. So, when he arrived to the United States longing for an authentic mole, he ordered the dish at a nearby restaurant. He was sadly disappointed to find it was nothing like his mother’s. He

104

|

SAN JOAQUIN MAGAZINE DECEMBER 2018

began asking her to share her family recipes, and to this day, the mole is his all-time favorite food! ˜ what he When I asked Chef Nunez loved most about his job—he grinned from ear to ear. “I love everything about my job,” he says with pride. “I love coming out into the dining room and shaking hands with our regular customers who I’ve known for 20 years.” He’s also grateful to work for the Thomas family, whom Jose describes as the nicest people in the world, who treat their staff like family. Most weeks, you can find Chef ˜ Nunez at the restaurant seven days a week, even when they are closed on Monday

and Tuesday. He is dedicated to ordering, managing, and maintaining the kitchen so that he and the staff can put out the best possible products to their guests. And that’s exactly what they do. Jose serves up bold and savory food that is the perfect combination of BBQ and Italian with the vibe of a good ol’ steakhouse. And if you are looking for suggestions from ˜ on what to order when dining Chef Nunez at the Waterloo, he won’t commit to just one item. “EVERYTHING is good,” Nunez ˜ exclaims. “You can’t go wrong with a New York Steak, Ribeye or Waterloo’s signature dish— the ribs and pesto! “ His favorite local ingredient to work with is undoubtedly the pesto that is used to craft the house favorite, pesto pasta. Everything is made from scratch and the fresh pesto is delicious. I mean let’s be real, who doesn’t love the pesto pasta at the Waterloo? It’s actually addicting. So, stop on by the Waterloo and see just what keeps a restaurant in business for over 35 years. And be sure to say ‘hi’ ˜ to Chef Nunez if you see him out and about the dining room shaking hands with the customers. You won’t meet a more gracious guy. ˜ BITE INTO THE BBQ FROM CHEF NUNEZ: THE WATERLOO 10447 E. Waterloo Rd., Stockton (209) 931-4019 TheWaterloo.com

CHRISTMAS CHOCOLATES

A ROUNDUP OF TREATS AT GHIRARDELLI’S  BY NORA HESTON TARTE Lathrop is home to its very own San Francisco-inspired candy land. Located right off i-5, Ghirardelli’s serves some of the sweetest treats San Joaquin offers, from Christmas-themed goodies to decadent ice cream sundaes. The extensive menu makes it easy to try something new on every trip—check out our picks for the top treats to try.

PEPPERMINT BARK Stock up on bags of this holiday staple! Peppermint bark is a Ghirardelli’s favorite, made with both white and milk chocolate and filled with crunchy candy cane pieces. Grab some for yourself, and spares for stocking stuffers.

CRISSY FIELD The ice cream shop at Ghirardelli’s Lathrop outlet is a big draw, reminiscent of the flagship store in San Francisco’s Fisherman’s Wharf. Every treat nods to a San Francisco landmark. Grab a Crissy Field Cookie Bits Sundae, a delicious blend of vanilla and cookies and cream ice cream, smothered in hot fudge, whipped cream, and chocolate chip cookie crumbles. Two milk chocolate caramel minis top it off. 106

SEA SALT CARAMEL HOT CHOCOLATE

CHOOSE FRUIT OVER CHOCOLATE

EARTHQUAKE

There’s more to Ghirardelli’s than chocolate—no, seriously. Some of the best flavors are fruity in nature (although most still come with something chocolate). Trade in your traditional sundae for a Marina or Muir Woods. The first is made with raspberry sorbet and served with a dark chocolate square, the latter is black cherry vanilla ice cream topped with mini dark chocolate chips and a cherry.

A dessert to feed the family—this favorite is made for four, featuring eight scoops of ice cream, eight toppings, a banana, diced almonds, mini dark chocolate chips, cherries, and whipped cream.

FOR MORE INFORMATION: GHIRARDELLI CHOCOLATE OUTLET & ICE CREAM SHOP 11980 Harlan Rd., Lathrop (209) 982-9304 Ghirardelli.com

What’s better than a steaming cup of cocoa on a chilly December day? Not much! Ghirardelli’s blends a sea salt caramel variety topped with whipped cream, caramel sauce, and sea salt with a square of milk chocolate on the side. Craving something richer? The Decadent Drinking Chocolate is made from the brand’s mini dark chocolate chips.

TALES

of KALE

A WORLD OF WONDERS IN A LITTLE LEAF  BY ALEXANDRA KRUEGER If you don’t know what kale is… Well, let’s be honest: everyone in California knows what kale is. It’s the trendiest leafy green to hit the market, so it’s safe to say we can skip the intro. However, while most people know that kale is a superfood, they don’t really know what makes it any different than any other leafy green at the grocery store. Kale one of the most nutrient dense foods on the planet (spinach can’t even say that!) This means that, for a small number of calories, Kale packs huge amounts of vitamins and minerals that boast dozens of health benefits. Trying to increase your nutrient intake? Kale. Want to protect your eyesight? Kale. Looking to lower your cholesterol? Kale. Wondering how to reduce your risk of cancer? Kale, kale, kale. 108

|

SAN JOAQUIN MAGAZINE DECEMBER 2018

Aside from its impact on your overall health, there’s a reason kale is hugely popular in places like LA, where beauty is everything. If you know anything about natural beauty, you know that it all starts on the inside: you literally are what you eat. Kale contains tons of antioxidants, vitamins A, B, C, and the rare vitamin K, iron, calcium, protein, and potassium. Essentially, eating Kale is like a spa treatment for your skin, nails, and hair. You can also apply kale products directly to your face. It has hydrating and antiinflammatory properties that can calm redness and brighten your complexion. All that being said, you might be wondering about some creative ways you can incorporate kale into your diet (After all, how many salads can we really be expected to eat?). Check out these awesome recipes for a truly delicious does of this leafy super food.

KALE, BLACK BEAN, & RED CHILE TACOS WITH QUESO FRESCO

PARMESAN KALE GRILLED CHEESE

*Courtesy of foodandwine.com INGREDIENTS: 3 TBS. vegetable oil 8 guajillo chilis, stemmed and seeded 2 C. boiling water 3 garlic cloves, chopped ½ TSP. dried oregano ¼ TSP. freshly ground black pepper ½ TSP. sugar 1 bunch Tuscan kale, no stems, cut into ½ inch-wide strips 1 15-oz. can black beans, drained and rinsed ¼ C. crumbled queso fresco 12 warm corn tortillas

*Courtesy of ifoodreal.com

INGREDIENTS: 2 Dinosaur kale leaves, ribs removed & chopped 2 slices bread (whole wheat) 1 oz. Parmesan cheese, sliced 1 oz. any other melting cheese, sliced 1/4 TSP. garlic powder 1 TBSP hemp seeds, shelled

DIRECTIONS: In a medium saucepan, heat the oil. Add the chiles in batches and toast over moderately high heat until pliable, about 1 minute. Using tongs, transfer the chiles to a heatproof bowl and cover with the boiling water; set a plate on top to submerge the chiles. Let stand about 20 minutes. Reserve the saucepan and oil. Drain the chiles, reserving 2/3 cup of the soaking liquid. Transfer the chiles and their soaking liquid to a blender along with the garlic, oregano and pepper and puree until smooth. Strain the chile puree through a fine sieve. Reheat the oil in the saucepan. Add the chile puree and 3/4 cup of water and cook over moderate heat, stirring constantly, until slightly thickened, about 5 minutes. Season the chile sauce with salt and the sugar. Add the kale and black beans to the chile sauce and cook, stirring occasionally, until the kale is wilted and the beans are hot, about 5 minutes. Transfer to a wide bowl and sprinkle with the queso fresco. Serve with the warm tortillas.

www.sanjoaquinmagazine.com

DIRECTIONS: Preheat indoor grill or panini press. On a slice of bread, crumble half Parmesan cheese and sprinkle with hemp seeds and garlic powder. Top with kale, crumble remaining Parmesan and place a few slices of melting cheese. Lay other slice of bread on top. Place on a grill and close lid tightly. Grill for a few minutes or until grill marks appear, cheese has melted and/or you hear cheese dripping on a griddle. Remove and cut in half with a long sharp knife. Serve hot
