“Ballet has taught me that you can’t put half of your effort into anything… especially life,” says 16-year-old Alana Stewart of Stockton. It’s clear that this mature outlook, fueled by raw talent and dedicated practice, could lend reason to why after only two years at Pacific Ballet, Alana will take the stage in the Nutcracker, at Bob Hope Theatre, with the nationally recognized ballet company, Bay Pointe Ballet.

Alana fell in love with dance at a young age. As her mother, Jennifer, explains, “She was just a toddler, and her first performance really wowed us!” With smiling eyes, Jennifer recounts her daughter’s performance in Beatrix Potter, as the baby duck. “She was only four years old, and she came out onto the stage with the most serious face, hitting every mark. The other dancers were just standing there being cute—but Alana was precise.” While still living in Rio Vista, Jennifer traveled multiple times a week so that Alana could attend classes at Pacific Ballet on Stockton’s Miracle Mile, because of owner Suzànne Lundberg’s focus on Classical Ballet, and style of teaching. “I’m a geek about it,” Suzànne says of her passion that also began as a young child. “Classical ballet is completely contrived—there’s nothing natural about it, and I love that process as a teacher. Sure, your body can’t just move that way, hit that pose or nail that combination—but I know how to get my students there.” The intense study of classical ballet involves much more than just moves, as it has a rich history, language, anatomical background, and a call for rigorous techniques that result in dreamy, flowing, and incredible movement. And, Alana finds this all rather meditative. “All your problems disappear. You can’t focus on anything else when you’re practicing, or else you’ll fall on your face!”, says the ballerina who just began studying Pointe (a ballet technique that requires the dancer to support their body weight on fully-extended feet) a few weeks ago. Alana honed her meditative state when she took the stage for her first true audition, for the Nutcracker. “I read up on Bruce Steivel [the internationally acclaimed Artist Director for Bay Pointe Ballet, professional ballet dancer, and choreographer],” Alana explains. “And it was pretty nerve-wracking dancing in front of him!” But, the young dancer impressed— and on December 9 she will perform in the Party Scene and Battle Scene.

On each Saturday leading up to the December 9 performance all 30 local dancers from across the county and other dance schools—chosen from the auditions—practice at Pacific Ballet, the Bay Pointe Ballet’s official host studio. “Bruce had been looking in the area for the right studio to work with,” Suzànne explains. “I interviewed with him, worked with him last year, and have run casts for many Nutcrackers, so it was a perfect fit.” For Alana and the 29 other local dancers apart of this production—the experience couldn’t be more impactful. “To give my students the opportunity to work with a professional company is more than I could’ve hoped for,” Suzànne adds. To work with paid, professional dancers is such a phenomenal experience. Some of these kids have been dancing for 8 or 10 years and have never had an experience like this, living in a small town.” The partnership between Bay Pointe and Pacific Ballet has streamlined Suzànne’s mission to bring a
professional company to Stockton, and to open doors for her dancers. As not only a teacher, but a mentor, Suzànne often spends more time with her students than their parents—between school, life, and practice four or five days a week. “I’ve had all the talks,” she laughs. And in the end, I just want to give them a safe place to be involved in a discipline that will carry over into all aspects of their life.” And it’s clear she’s been successful, as three small children take to the dance floor while I sit in the back with Alana. Wise beyond her years, the dancer who enjoys reading historical fiction raves about her passion, and future plans. “Suzànne is unconventional but so thorough. She continues working with us until each student has the pose or combination, perfectly. And whether or not I’m going to be a professional dancer, I’m going to keep treating my training that way.” Alana’s parting words? “Go see the Nutcracker!”

Imagine a scale in your living room. It’s a large, bulky thing, with a huge bowl for measuring. You go to your fridge, pull out two one-gallon jugs of milk, and drop them into the scale. 16.6 pounds. You head to the kitchen again, this time adding your pantry’s contents. Cans and boxes, dry goods and snacks. Maybe you reach 40 pounds. It’s back to the fridge, then, and steak and chicken, frozen foods and leftovers are tossed right in. Congratulations! You’ve managed to clear out your entire kitchen and have reached 100 pounds. Maybe 200? That doesn’t come close to the hulking 400 pounds that Elzo Williams of Harvester Farms—a man whose only goal is to gather fruit from unpicked trees across San Joaquin for donation to local food banks and charities—collected from a single orange 44

tree alone. A tree that, without his skillful hand and volunteered time, would have been left to rot. This is the fate for many fruit and nut trees across San Joaquin’s communities, whose owners are far too busy to collect the literal fruits of the tree’s labor. But for Elzo, that fruit is worth hours of toil, with pounds and pounds donated directly to nonprofits across the Central Valley. Elzo first discovered this community need—and solution—through his work with Comcast that took him to countless homes in the region. “[I’d take] an inventory of trees that I could pick for food to donate.” Knocking on people’s doors who had a singular fruit tree in their front yard would sometimes yield a visit to the back, where three more fruit-laden trees stood. Two years later, and Elzo has built a strong following, with a phone number that the community can dial to request a tree sweep. “We have had the pleasure of dropping
off to several food pantries,” Elzo notes. From Helping Hands and the Emergency Food Bank, to Delta College’s Food Pantry, and more—all have been recipients of Elzo’s work. “209 Cares was really excited,” says Elzo. “We handed out apples and pomegranates. And the homeless folks were very appreciative.” But what started as a dream has unfolded into a flourishing nonprofit that Elzo would like to bring full circle. His goal? Transforming his four acres of land into an educational farm, where students can venture out to on class trips, or with their families to learn about the agricultural abundance of our region. CAROLE’S CANDLES HOSTS THEIR OWN BOUTIQUE IN STOCKTON A hidden gem has taken residence on Country Club Boulevard in Stockton. From behind the large pane windows where a signature ribbon curl rests, sits tables of brilliantly colored pillar candles, shaped into glistening jewels at their very peaks. Crested in snowcapped whites and vivid reds, verdant greens and more, the entrancing scent sneaks out and into the crisp open air every time the front door opens wide, bringing cause for pause in passerby. These hints of forest pine and cinnamon-laced apples, candy canes, and winter storms, are the work of mother and son duo Carole Seitz and Tom Maples—the creators of Carole’s Candles. “We started out in the 90s, selling our candles at the Farmers Market on Main Street in Stockton,” explains Tom. The candles had been a combination of art and heart prepared in Carole’s very own kitchen for years while she fought breast cancer. After treatment, it became more passion than mere hobby. Tom helped to usher the business into the wholesale industry; and from there, the candles began popping up in stores across the United States. “But, we wanted a place where people in our local community could go to buy [a candle], instead of our website, since we no longer go to the market,” says Carole. “We had discussed the possibility of moving the manufacturing to its own shop,” Tom describes. “And we really liked the idea of a storefront, so people could see how the candles are made and what it is that we do.” Only a few years later, and Carole’s Candles now hosts a marvelous array of seasonal themed votives, pillars, and tapers in the shop, having

CASE FOR KIDS GIFTS FOSTER KIDS WITH DIGNITY

On any given day there are approximately 428,000 children in foster care in the United States. These kids are moved from the homes they know, often with no possessions of their own. In most cases, the few belongings they do have are carried with them in an over-sized garbage bag. Enter Ministry Case For Kids, a Tracy-based nonprofit that serves foster children in Tracy, Manteca, and Mountain House. The volunteer-run organization grew out of a need noticed by Lori Souza, president of Case for Kids and a social worker in the foster care system. With help from the community, Case For Kids gifts kids entering foster care new items in a plastic Sterlite container—not a garbage bag. “It gives foster kids a sense of dignity. Entering the system with a garbage bag can be really tough,” says Melissa Lea, volunteer coordinator for Case For Kids. “The case is something of their own that they can take with them, whether they continue in the system, are reconnected with their family or are adopted.” This year Case For Kids plans to help 250 local children entering foster care. Every case comes with at least three outfits, toiletries, bed sheets, toys, books, and anything else they may need. To make it truly special, the cases are customized for each child, decorated with their name on top and filled with items they enjoy. “When we receive a request from a case worker or foster parent, we post the need on our Facebook page. A community member will volunteer to help fill the case,” Melissa explains. “We send them the child’s first name, age, clothing and shoe size, as well as their favorite color and interests. We often times include items they specifically need.” First and foremost, the cases help kids. However, there’s a clear perk for foster parents, as well. These individuals give so much to the children they foster, often taking in sibling sets or welcoming children into their home at a moment’s notice. The case takes a little burden off of their shoulders as kids are coming in at least a little prepared for their new normal. “These cases give them a little breathing room and help them make these beautiful children more comfortable,” Melissa says. To get involved, follow Case For Kids on Facebook and keep an eye out for volunteer requests. Donations of new items are also accepted; the organization is especially in need of twin bed sheets. SLEDGEHAMMER WORKOUTS
We’re just going to go ahead and call this the Thor workout. At The Shop Fitness in Lodi, Ian Michael and his team of fitness trainers are handing out polyurethane sledge hammers for core work. “You can do a series of sledgehammer exercises, which is really good for your core,” Ian says. The core hammers, which look just like a sledge hammer albeit with a ball on the end, can be used on any surface. It’s an update from hitting rubber tires with a sledgehammer and Ian incorporates the activity into classes weekly, mostly on conditioning and cardio core days.
PILOXING
Step out of the box, and into the ring! Piloxing offers an artful blend of Pilates and boxing. While boxing increases a person’s speed and agility, Pilates is gentler on the body and focuses largely on flexibility and strength. Mixing the two creates a whole body workout with some serious stress-busting power for those looking to try something new. Celebrity trainer and Swedish dancer Viveca Jensen is the mastermind behind this mash-up.

Goat yoga is a hot yoga-craze taking the nation by storm and honestly, we’re just waiting for it to hit San Joaquin County. With all this farmland, we know there are plenty of goats to go around!
BATTLE ROPE TRAINING
Battle rope training fits a budding trend of mixing core-strengthening activities with high intensity. “You’re working your core but in a way that burns a lot of calories,” Ian says. For this exercise participants use big ropes to complete a series of cardiovascular and strength training movements. “It just burns a lot of calories in a short amount of time,” Ian says. “It’s different.”
BARRE
Traditionally barre refers to the horizontal, waist-level bar on which ballet dancers rest a hand for support during exercises. This simple device has sparked a barre fitness trend in San Joaquin County. While the workout uses the same type of bar and incorporates plies and pirouettes, it’s also inspired by Pilates, dance, yoga, and functional training, and set to music. Live music is a constant at this young beer company already with a reputation for frequent releases of new brews. Before now, the brews were only available on tap. SEPTEMBER 29 – IDOL Beer Works (pssst that’s Lodi spelled backward) joins the local craft brew scene. The full brewery and tasting room took up shop in an old tire store and is quickly becoming known as a place to unwind with a drink, grub from local food trucks, and gather with the community. Lori Crawley, a sales design consultant at Classic Design Interiors in Lodi admits heated floors are a niche market here, but they can also make your home next level. She says the most popular place for this luxury is the master bathroom, while some homeowners opt for heated floors in the kitchen, too.

For many, no Christmas is complete without toys that come to life, a clockwork castle, and a giant mouse king. On December 13, the beloved The Nutcracker reopens at SF Ballet, a tradition that kicked off in 1944 when the American premiere of the timeless tale was enjoyed in San Francisco on Christmas Eve at the War Memorial Opera House (where it is still performed today). Performances run through December 30 with showings Tuesday-Sunday. (SFBallet.org, 301 Van Ness Ave.)
ICE SKATE IN UNION SQUARE
If you love ice skating, there’s no place more picturesque to enjoy the sport than in San Francisco’s Union Square (333 Post St.) Flanked by holiday decorations galore, including that infamous 80-foot tree, it’s an easy stop-off for holiday shoppers. Those interested in getting on the ice can go around and around the city rink for 90 minutes, and skate rentals are available for adults and kids.

THE FAIRMONT GINGERBREAD HOUSE
Every year the Fairmont in San Francisco reconstructs its two-story, life-size gingerbread house in the ornate hotel lobby. The gorgeous candy home promises to be even bigger than 2016’s masterpiece as the hotel’s culinary and engineering teams combine forces to create the magical, walk-through attraction. Once complete, the edible abode will stand more than 22 feet high and 23 feet wide with a whopping 7,500 homemade gingerbread bricks used in its construction, along with hundreds of pounds of candy and more than a ton of royal icing. On most days guests can roam into the grand lobby (which is completely transformed for the holiday season) for a glimpse of the gingerbread castle, but for guaranteed access you’ll have to stay at the hotel. Starting November 24, gingerbread holiday tea will also be served at the Fairmont, (950 Mason St.)

Through December 17, holiday tea will be served at the St. Francis on Saturdays and Sundays. The afternoon includes fine, artisan teas, English tea sandwiches, and an assortment of pastries. Step it up a notch with an accompanying glass of sparkling wine.
8TH ANNUAL DRAG QUEENS ON ICE December 7. It doesn’t get much more San Francisco than this. Guests are invited to watch the Bay Area’s best drag queens lipsync and skate on the Union Square rink for one night only! FLASHBACK FRIDAYS December 8, January 12. Go back in time to the 1980s when iHeart80s @ 103.7 takes over the sound waves at the ice rink. Radio DJs are on-site spinning the best hits of the decade while skaters enjoy the rink. Don’t forget your legwarmers! All skaters are encouraged to dress for the occasion. SILENT SKATE PARTY December 14. Talk about a throwback Thursday! Union Square transports skaters back in time with a disco-themed skate with a twist— the event is completely silent. Pick up a pair of headphones, choose a station, and dance the night away. POLAR BEAR SKATE January 1. Want to skate California style? Once a year San Francisco gives its own special twist to the infamous polar bear plunge (a practice of dunking into ice cold water in the middle of winter) by inviting skaters to strip down to their bathing suits as they circle around the ice. When celebrating the holidays in the city, a place to stay may be in order. The Westin St. Francis is in the middle of all the action, just steps from the Westfield Mall and famed Union Square. Inside the hotel, the holidays are just as cheery. Every year, St. Francis’ team of pastry chefs build architectural masterpieces in the lobby, including a castle made entirely of sugar cubes. While you’re there sneak into the Sweet Boutique for holiday-themed goodies—pssst there’s Parisian macarons. The decorations have already gone up so families can start enjoying the holiday display immediately. (Through Jan. 2, 335 Powell St.)
There’s something magical about heading to the city to complete your holiday shopping. The Westfield mall, the shops surrounding picturesque union square, and the 10-story Macy’s are just a few of the reasons shopping in San Francisco brings an element of joy and light to the experience. Everywhere shoppers turn, jolly men in red suits fulfill childhood wishes, towering Christmas trees loom ahead, and every tree and streetlight are adorned with oversized jingle bells and sprigs of holly. The Nutcracker isn’t the only holiday stage show worth seeing. Through Dec. 24, A Christmas Carol plays at the A.C.T. Geary Theatre. It’s the ideal story for adults and kids—teaching the true meaning of Christmas since 1843. And the lively San Francisco performance is known for its rendition, a music-infused production of the classic Dickens tale. Pick up tickets to a matinee or evening performance before they sell out! TOURING THE CITY
Sure, there’s Ubers, taxi-cabs, BART, and Muni available to every San Francisco traveler, but where’s the fun in that? Every person who visits San Francisco should hop on a traditional cable car at least once in his or her life. If you haven’t done it yet, the holidays are the best time to check that item off of your bucket list. Throughout the season cable cars are decorated in giant Christmas wreaths and strings of garland, adding some holiday cheer to your ride across town.

Through Dec. 30 you can up the ante on that cable car ride by booking tickets to the Holiday Nights & Sights City Tour. Travel by classic cable car through Fisherman’s Wharf, Little Italy, Chinatown, Union Square, the Financial District, The Embarcadero and Pier 39. It’s the only time of year those bay bridge lights shine brighter! You’ll have to leave the kids at home for this boozy holiday tradition—it’s not quite the type of Santa they want to see. Every year, Union Square plays host to a hoard of Santa-clad bar goers during one of the largest pub crawls of the year. Dressed as Santa Claus, Mrs. Claus, elves, reindeer, and a slew of other holiday-themed characters, it truly might be the most wonderful time of the year. Around December, holiday-themed teas become all the rage. In San Francisco, several hotels play host to these upscale gatherings. We’ve already visited the Fairmont and St. Francis, which both offer their own renditions of the classic, but there’s plenty more places to sip in style in SF.

The Teddy Bear Tea is perhaps one of the most wellknown tea experiences in the city. It’s known for mixing its upscale design with kid-friendly extras. The Top of the Mark is a famous stop for those who frequent the city. With high-end cocktails and gorgeous views of the city, it’s a nice place to stop and enjoy each other’s company. As another pot of freshly brewed green tea rounds the table and a second batch of spicy edamame and sizzling gyoza arrives, so, too, does the first wave of rolls. It’s a parade of color, filled with bright pinks and oranges, vibrant greens and yellows. Splashes of sauce line the plates like signal flags, providing perfect landing strips for each succulent bite. It’s a full house, but somehow each

table is treated more like family than mere guests. And with fresh entrees and service like this, it’s not hard to see how Mikasa Japanese Bistro has won over its fanbase time and time again. This kind-hearted business strategy is what’s allowed Harry Yu to open multiple restaurants across San Joaquin. His current enterprise? A Mikasa in Lathrop, opened in 2007, followed with a Tracy restaurant in 2013. “I love to eat, and I’ve worked for different restaurants, and I’ve learned different skills,” says Harry. “I can always see what is best for the restaurant. What can be put together to make a fusion, a bistro. We’ve tried to make something very unique!” By all accounts, Harry has succeeded, offering his patrons popular dishes from across the Asian spectrum of flavor. “We have not only sushi, but also Chinese cuisine including Mongolian Beef, Kung-Pao Chicken, and lighter Japanese dishes, like Sukiyaki,” Harry explains. “We find out what they normally like to eat when they go to a Japanese restaurant.” From seafood, to teriyaki steak, and sushi both raw and cooked, the staff at Mikasa seeks to please every diner—ensuring their order can be adjusted just for them. Having worked in the restaurant industry since he was seventeen, this service style comes naturally to Harry. “I grew up in the bay area, working weekends and part-time,” Harry describes working up the ranks from saucer to waiter and eventually manager. “After that, I started working in the kitchen,
learning from a Japanese chef in San Mateo. He taught me how to make the California roll, and later on, how to cut fish for sushi rolls and sashimi.” The skills he’s honed have been passed onto the plates of San Joaquin, providing picturesque portions of varying size, shape, but always insurmountable flavor. Brilliant bentos, brimming with salmon sashimi, California rolls, or tempura are always a hot item, and served with a side of miso soup, salad, and rice. You’ll always find one or more of Mikasa’s special rolls sliding onto awaiting tables. The Golden Gate Roll is a favorite for locals, filled with crab meat and tempura shrimp, salmon, tobiko, and red onions. Layered over top is cilantro and lettuce, drizzled in lemon juice, chili oil, and unagi sauce! Harvested from a dedicated block of 450 vines, this Zinfandel’s ruby hue exhibits ripe aromas of dried red currants and a cherry finish. The elegance of this wine is in the balance between fruit flavors, acidity, and subtle tannins that linger. Aged for more than 15 months, this Zin took home Double Gold at the San Francisco Chronicle Wine Competition. Mikami has limited production wines, available only to members of their newsletter club. This library wine from the legendary Lucas Winery was crafted in celebration of owner Dave Lucas’ daughter’s wedding in 2009. The ZinStar Reserve is produced from 100% Zinfandel from their Certified Organic (CCOF) ZinStar Vineyard, just steps from the tasting room. Aged for 14 months in French Oak, the elegant nuances of the winery’s style truly shines. ZinStar’s concentrated flavors of currants, blackberry, and raspberry are accented with hints of pepper. push it to the limit!” The Zinfandel was an absolute success, with fifty-percent of its berry content taken from the Lodi Appellation, and the remainder from other highly notable regions. From the bottle, to the cork, and all things in between, each and every part of the creation process had the highest level of quality in mind. But, what truly prompted Aggie to step into the realm of winemaking after receiving her degree in marketing from California State University, Sacramento? “The name, the purpose, my mission. Everything revolves around my brother— Louie—who passed away from Leukemia in 2002.” Aggie states. Louie Bonpua, Aggie’s older brother by six years, had made his little sister, his soul mate, promise to help support The Leukemia & Lymphoma Society, and raise awareness. Since its conception, Soulmates Wines has showcased other exceptional blends, including a chardonnay, and a rosé which, in Aggie’s own words, “…is literally like a champagne! Rosé, the other bubbly!”
A legacy of fine wines began with a singular promise, and the strength of a bond between two siblings. Aggie Bonpua first launched Soulmates Wines in April 2010 after an old friend approached her about investing in the rich world of vino. “In the beginning, I wanted to create a varietal that was welcoming. And, as an avid traveler and social butterfly, it wouldn’t necessarily be aged and reserved,” Aggie explains. “My first wine, a Zinfandel, was a blend that was exactly that.” Bold, full-bodied, with rich berry notes, it was a hit and teetered at the high end of Zinfandel alcohol content. Aggie laughs, “As long as I am in line with what the government allows me to do, I’m going to 114

BEHIND theKNIFE: CHEF PAUL RATTO OF HERITAGE DINING AND PROVISIONS AT THE WATERLOO GUN AND BOCCE CLUB SUZANNE LEDBETTER
Chef Paul Ratto is a force to be reckoned with. After years of pumping out private dinners and elaborate catering gigs, he recently launched Heritage Dining Provisions at the Waterloo Gun and Bocce Club. Since taking over formal operations in May, and completing renovations to the dining room, Paul held Heritage Dining Provisions’ grand re-opening in September. He revamped the menu, blending old traditions and new culinary creations. He is even changing the way people dine, with themeddinners on Friday nights. One recent Friday night featured Spanish tapas and paella. And the following week, Heritage was converted to a steakhouse. Paul also serves dinner on Wednesdays, lunches Tuesday through Saturday, and is launching a monthly Sunday brunch. One thing is for certain, each and every meal Chef Ratto puts out is a showcase of the farm to fork movement. He believes that the 116

best products are those within our county. In fact, most of the products he cooks with come within 5 to 10 miles of his establishment. “My favorite part of being a chef is watching the local farmers’ reactions when they come in for lunch and find menu items utilizing their products,” says Paul. And, Chef is here to celebrate and showcase what he considers ‘underappreciated products’ of the region, like our award-winning olive oils. “The quality of San Joaquin County’s olive oil is off the charts,” he exclaims. “Calivirgin, Cortopassi, Olive Oil Drop, Bozzano. They’re all great products, and I utilize them in everything, from the chimichurri to the desserts.” Growing up in an Italian family, Paul spent countless evenings watching his grandmother whip up Italian staples, and gained an inherent love for cooking as a result of her passion. While never formally trained, he gained his culinary knowledge working as a wine salesman alongside notable wine pro Daryl Corti, of Corti Brothers

Sacramento, and Chef Rick Mahan of The Waterboy. They guided him through the nuances of pairing wine with food, and how to create the perfect bite. He credits his time spent in the wine industry for his current culinary success. But, Paul’s first focus is always food. He boasts, “If you cook good food, they will come.” And one of his fondest mentors, Randall Paragary, shared with him a great piece of advice, “If you can be consistent, you will succeed.” Paul also firmly believes in giving back to the community. At a recent March of Dimes Celebrity Chef Series, he served a perfectly executed swordfish tonnato. “This is where the fish is slowly poached in Calivirgin Olive Oil, peppercorn, bay leaves, and citrus peels,” he explains. “I finished the fish with capers and pickled shallots. SEEDS for the SEASON
CRANBERRIES BY SUZANNE LEDBETTER
Do you ever ask yourself why cranberries are synonymous with the holidays? Maybe it’s the ruby-red hue that accents holiday dishes, or the way cranberries add the perfect amount of tartness to rich chocolate desserts. Or wait— maybe it’s the way cranberry juice partners with vodka for a perfect cosmopolitan cocktail!? In any case, cranberries have found their way into the hearts and traditions of American kitchens. But, do you know how they came to be a culinary staple? Although many indigenous fruits hail from North America, very few have gained celebrity status like the cranberry. Native Americans collected the tiny berry for a variety of medicinal, cooking, and aesthetic uses. These included using the cranberry for dyes in their rugs and blankets, treating tribe members for stomach cramps and fever, and mixing the pulp of the berry into dried meat or fish. And, of course, the Native Americans are the ones to thank for creating the very first versions of cranberry sauce. Traditionally, cranberries were grown in the wild on long running vines in sandy bogs and marshes. The labor involved with harvesting cranberries was back breaking work, but cranberry famers were innovative—developing a multitude of mechanization 120

techniques, beginning with large wooden scoops, and eventually with mechanical harvesters combing berries from the vine. Today, cranberries are still primarily harvested along the northern portion of the U.S. from Maine to Washington, and along the Appalachians to North Carolina. They are also grown in the American Northwest along the Oregon Coast. The first commercial canning of cranberries was in 1912 by the Cape Cod Cranberry Company, which marketed the product as Ocean Spray Cape Cod Cranberry Sauce. The company eventually evolved with other growers to become the famous Ocean Spray, synonymous with cranberries today. These folks have brought you everything from cranberry juice to that crazy glob of jellied fruit served at Thanksgiving meals across America. And in modern cooking, dried cranberries are highlighted in a bounty of the salads found on Pinterest or Bon Appétit. The deep concentrated flavor of dried cranberries is the perfect addition to ancient grains, like quinoa and couscous, or as a contrast to roasted Brussel sprouts. So, even if Cranberries weren’t your thing as a kid, you may want to consider adding them to your culinary repertoire. You may be sweetly surprised by their versatility!

CITRUS
SAUCE INGREDIENTS
2 Lg. Navel Oranges 1 - 12 oz. Bag Fresh or Frozen Cranberries, about 3 and ½ cups ¾ C. Honey DIRECTIONS
Use a vegetable peeler to remove three 3-inch long strips of zest from one orange. Blanch zest strips in boiling water for one minute and drain in a colander. Finely chop the zest, and transfer to a small bowl. Quarter Oranges, and pulse with cranberries in a food processor until coarsely chopped. Add the orange zest and stir in honey. Chill sauce overnight, or up to three days. *Gourmet Magazine, 1996
PORK TENDERLOIN in a CRANBERRY CABERNET SAUCE INGREDIENTS
2 Medium Sized Pork Tenderloins • 1 Can Whole Cranberries 1 - 1/2 C. Fresh or Frozen Cranberries 1 to 2 C. Cabernet, or wine of your choosing 8 Garlic Cloves • Fresh Thyme Fresh Tarragon • Fresh Rosemary 1/2 C. Butter • Sea Salt and Pepper DIRECTIONS
Prepare a bed of fresh herbs—rosemary, thyme, tarragon—in the bottom of a 9 x 13inch glass dish. Remove the pork tenderloin from wrapping, and make four half-inch slits into the pork. Stuff the garlic cloves into the pork and season liberally with sea salt and cracked pepper. Sear pork on all sides in a cast iron or all-clad skillet to brown. Place pork in the glass dish, covering the fresh herbs, and bake for 25 minutes, or until internal temperature reach 165° F. In a saucepan, combine cranberry sauce, whole cranberries, red wine, and a few leaves of thyme and tarragon. Cook on medium until the sauce begins to boil. Reduce the sauce for three to five minutes. Remove from heat, stir in the butter. Slice pork on the bias and finish with a drizzling of the cranberry cabernet sauce. Garnish with fresh rosemary. Serve with roasted fingerling potatoes or creamy polenta. www.sanjoaquinmagazine.com

A WINNING COMBINATION BAKLAVA CHEESECAKE AT PAPAPAVLO’S BY SUZANNE LEDBETTER There are few desserts as satisfying as the Baklava Cheesecake that hails from the kitchen at Papapavlo’s Bistro and Bar. On a particularly chilly day in December, consider trying a dish of Jungle Curry to heat things up and rekindle your love of flavorful food without all of the calories. Historically, curry refers to dishes that are created from curry paste, coconut milk or water, meat, seafood, and vegetables. A traditional curry paste is cultivated using fresh or dried chilies and a combination of spices. At Thai Spices, Bun Goble combines bell pepper, onion, and green beans with shrimp, scallops, fresh fish, and cala124
