Jason David’s son, Jayden, was diagnosed as an infant with Dravet Syndrome, a rare form of life-long epilepsy categorized by frequent and prolonged high-intensity seizures that are often drug-resistant. Even medicated, Jayden continued to experience multiple daily grand mal seizures lasting over an hour that caused violent muscle contractions and temporary loss of consciousness. But his dad’s dedication to helping him get better may have saved his life. By Lindsey Rodrian

OPEN OUR EYES TO NEEDS OF OTHERS AND MAKE A DIFFERENCE Ho, ho, ho! The holidays are here! Christmas is one of my favorite times of year, but not just for the reasons you may think. While the weather is warm and any snow found nearby is man—made, the magic of the holiday season is still alive and well throughout San Joaquin County. From Santa visits to festive crafting, our region has an abundance of events boasting Christmas cheer. The best events, however, are those that give back to a part of the community we don’t always see, an underserved population who, without the kindness of strangers, might not have a Christmas at all. In our Seasons of Giving feature this month, we highlight community heroes and their holiday-themed efforts. Plus, every organization offers opportunities for others to get involved in giving back. Flip through the pages to read about the people dedicating their time to spreading holiday cheer, then pick up the phone and become a part of the efforts. After all—we’re stronger together. This month we’re also featuring Jayden’s Journey, a cannabis store in Modesto, and the family behind the company. My 25-year-old daughter is autistic and for my family Jayden’s Journey is more than a store, it’s a place of refuge, a personalized information center, and a gamechanger for our daughter. When the store first opened, some members of the community were enraged. But Jason was willing to do anything to help his son. And, in a way, that national attention gave him a voice that launched his business into success. I’m lucky that Jayden’s Journey is in my own backyard, but there are people who fly from all over the country to visit the Modesto shop. Because of Jason and Jayden’s story, staff understand many of the frustrations parents face when they have an atypical child as well as how to use CBD to better a child’s quality of life. Finding that balance was hard, but Jayden’s Journey made it easier. Peace,

Darrell Phillips, 80, has been Santa Claus for 39 years. His first gig was at the Clements Buckaroos Christmas Party, a private event for members and their guests. Since then, he’s kept busy being Santa, dressing up in a red suit and donning a full (natural) beard at Santa jobs across the county. In his job, which he does on a volunteer basis, Darrell says the best part is seeing babies start their Santa traditions; little ones just a few weeks or months old, visiting Santa for the first time with parents. When payment is given to Darrell for his efforts, he turns around and donates it to local causes. He’s not in it for the money, and that shows through his dedication to his seasonal role. Many kids who climb onto Darrell’s lap each Christmas—he estimates more than 25,000 kids have taken a seat on his lap so far—ask for the newest toys on the market, or Christmas staples

The hardest moments are when kids who believe in the magic of Santa ask him something Darrell, no matter how much he wants to, simply cannot give. “It can be heart wrenching to hear from children at the schools when they ask for one parent or the other to come home, get a job, or sadly, get out of jail,” he says. “There is nothing to be said but to try to give a bit of a hopeful answer.”
HAVE YOU SEEN HIM? Darrell Phillips is like the Where’s Waldo of Santa Clauses. Over the years he’s played the role at gigs throughout the county, including the following: Lockeford-Clements Lions Club Victor School Lockeford School Vinewood School St. Anne’s School Darrell says there is one child he knows personally who recognizes him when he visits his school each year, but he’s vowed to not ruin the surprise for the other kids. Instead when he sits on Darrell’s lap he whispers his name in his ear and gives him a thumbs up without letting the other kids in on their secret. Even when Darrell isn’t playing Santa at local events, he’s not exactly breaking character. He spends time with his pet—a dog named Barney, not nine flying reindeer—and works on various projects on his ranch, mainly in his shop out back. He is, however, incognito January through July—that’s when he has to start growing out his beard again for the holidays—which makes spotting Darrell a little bit trickier. Being Santa is not a gig he intends to give up any time soon, either. Darrell says he will continue to play Santa Claus for as long as his health allows. “I have as much fun playing Santa as the kids do in seeing Santa,” he says. SJM

HOLIDAY HOMES A CHARITABLE EVENT BENEFITS LODI COMMUNITIES BY NORA HESTON TARTE For one day only, Omega Nu— Lodi’s invitation-only sorority—is hosting its annual holiday home tour, a philanthropic event created to raise money to fuel the group’s charitable efforts year round. Get prepared to ooh and aww at the decorations inside six appointed Lodi homes, a celebration of architecture, interior design, and the holidays. Each home is impeccably decorated, and perhaps a tad over-the-top, serving up a serious helping of holiday inspo for those who haven’t put their own seasonal decorations up just yet. Start with a champagne brunch at 11 AM at Weibel Vineyards, catered by Addy’s Paella, and shop local wares while you are there. At the end of the brunch, ten themed gift baskets will be raffled off to guests. Funds are raised both through ticket sales—the group sells between 500 and 600 each year—and also through the raffle. 30

All proceeds from the event benefit local charities, most chosen by Omega Nu, however, each homeowner who participates in the home tour gets to designate where $1,500 will go, selecting a favorite local charity to support. “With great consideration, we grant all proceeds from our efforts to needs in our city of Lodi,” says Evonne Shinn, president of Omega Nu and a member since 2013. The Omega Nu Home Tour is one of two main events hosted by Omega Nu to support local charities. With both events, the group of volunteer women was able to donate $60,000 to area charities last year. HOLIDAY DÉCOR MUST HAVE A HOMEMADE WREATH Putting together your own holiday wreath is a great way to get into the holiday spirit. The nostalgic smell of fresh pine alone will likely have you ready to put on your favorite flannels, make a cup of cocoa, and start decking the halls. When it comes to picking out a wreath, it’s important to make sure that there are no browning needles on it. The fresher the wreath you can find, the better. This is especially true if you’re going to be buying your wreath early on in the season, thus needing it to last a little longer. Once you’ve brought your wreath home, give the branches a light spritz of water every other day or so. This will keep it looking fresh,

and full of Christmas cheer. The next step consists of picking out your wreath decor. Burlap or checkered ribbon paired with rustic accents, and cotton balls make for a wreath that says trendy with a farmhouse flair, while white or red ribbon accompanied with gold jingle bells and frosted pine cones say classic and timeless. The best part about this step is you can really do whatever your heart desires. When it comes to picking out ornaments and patterns, just have fun. To attach your decor, use a pair of wire clippers to cut individual pieces of floral wire for each item. Next, use the wire pieces to secure the ornaments one by one to the wreath by twisting the ends of the wire together. Be sure to tuck the re-

maining wire in where it cannot be seen. For the final and finishing touch, tie a bow using your favorite ribbon. Expert Tip: try placing the bow in a few different spots on the wreath to make the best placement. Then, using a piece of wire, attach the bow wherever it sits prettiest. SJM

BY NORA HESTON TARTE What’s worse than a Christmas tree that doesn’t keep until Christmas Day? For those that like to celebrate the season as long as possible by getting their tree early, the biggest struggle is often making sure the tree doesn’t dry out before the grand finale. Follow these tips to keep your tree kicking all season long so it’ll look just as good on Dec. 25 as it did when you took it off the lot.
PICK A GOOD TREE
One way to ensure a long life for your Christmas tree is to pick one with promise from the get. Signs of a good tree include lush, green needles (with zero or few brown ones in sight) that are pliable and do not easily snap. Test it: Pick up the tree and let it drop a few feet to the ground. A healthy tree will keep most of its needles upon hitting the ground while a tree that is already drying out will lose a bunch on impact.

START IT OFF ON THE RIGHT STUMP. Christmas trees bought from farms are typically pre-cut. To help the tree absorb water efficiently, make a new cut when you get home, lopping another inch or so off the bottom. This will help the tree absorb water well and stay green.
WATER IT WELL Think of your tree as a giant cut plant, like flowers you may keep in a vase. Prep a stand before you come home to place the tree in and keep the tree in water throughout the time it’ll be in your home. Water it daily so the stump never dries out. This will help keep needles looking fresh.
CONSIDER PLACEMENT When deciding where to place your tree it’s normal to consider aesthetics, but take some other considerations into mind. Christmas trees should be placed away from heaters (watch out for ceiling vents above your tree) and direct sunlight. Both of these elements can brown the tree.
FEED YOUR TREE This isn’t a must, but some people swear by the practice. Drop a tablespoon of corn syrup or table sugar into the tree stand to keep the tree well fed. Perhaps conduct a study of your own to see if the additives make a difference in this tree’s health over last year’s tree. SJM

Jason David’s son, Jayden, was diagnosed as an infant with Dravet Syndrome, a rare form of life-long epilepsy categorized by frequent and prolonged high-intensity seizures that are often drug-resistant. Even so, by his fifth birthday, doctors had prescribed Jayden 22 anti-seizure pills per day that left him nearly immobilized. Still, Jayden continued to experience multiple daily grand mal seizures lasting over an hour that caused violent muscle contractions and temporary loss of consciousness. He also experienced less severe myoclonic seizures consistently throughout the day. As a father, Jason felt defeated, having held his convulsing son countless times since his first seizure when he was just a tiny and perfect four-month-old boy.

It’s a heartbreaking sight for anyone. And as a parent who wants nothing more than to protect their child, severe seizures are a soul-crushing experience that leaves most feeling helpless and out of control. The daily trauma pushed Jason to consider suicide, but instead, he decided to fight.
Feeling as if the doctors and medical system was failing he and his son, Jason began attending different support groups and seminars throughout the country to learn more about Jayden’s condition and how other parents supported their child’s well being. “It was eyeopening and I really learned a lot,” Jason says. “Everything comes from the autoimmune system. It's about learning to balance the pieces because your sick kid is kind of like a broken puzzle.” After more than four years of daily seizures, 42 times in an ambulance, and 300 shots of rectal Valium to rescue Jayden from the intense fullbody convulsions, Jason began researching Cannabidiol (CBD) and medical marijuana. He reviewed countless studies reporting on its ability to act as a neuroprotectant and even discovered that the Department of Health and Human Services had filed for a patent. In 2011 Jason purchased a CBD tincture from a state-licensed dispensary in Oakland and held onto it for two weeks before deciding to give the holistic treatment a try. “And that was Jayden’s first seizure-free day since the diagnosis,” says Jason. Jason continued providing Jayden CBD for a month as he monitored his son’s progress. After weeks of consistent reductions in seizures, the single-dad decided

to begin slowly weaning Jayden off of the 22 pills he took daily. “The pharmaceuticals were really impacting his quality of life. He wasn’t eating, walking, communicating,” describes Jason. Every day Jayden teetered between non-responsive or excitably upset demonstrating severe autism-like tendencies. As his dad slowly removed the pills from Jayden’s daily routine, he began smiling, chewing, and walking. “Each time we eliminated a pill, Jayden became more human.” With so much progress made, Jason was frantic when the same CBD brand he had purchased and administered seemed to be less effective. Confused, Jason had the product lab tested for potency and the results were unsettling. “That batch contained no CBD,” he notes. Because of inconsistencies in dispensary products due to a lack of state-mandated regulatory testing at the time, Jason again opted to take matters into his own hands to ensure his son continued to progress via pure and quality-consistent medical marijuana. Jason began consulting Dr. William Courtney, a physician respected globally for his work in pediatric cancer treatment with cannabis. Dr. Courtney educated Jason on the medicinal properties of the cannabis plant, as well as the importance of ratios and testing.
Following continued education and a few trial and error runs, Jason began consistently producing ‘Jayden’s Juice’, a high-quality 20:1 full-plant extract. OPERATION DREAMKEEPERS (PRESENTED BY GOOD SAMARITAN TRAINING CENTER)
Since 1992 Good Samaritan Training Center has put on its annual Operation Dreamkeepers event to bring toys to kids who otherwise may not have any on Christmas Day due to reasons including parental drug and alcohol abuse, unemployment, physical abuse, unsafe home lives, orphanage, and more. The center works with local community centers as well as Child Protective Service (CPS) agents to sign up 1,100 kids to receive presents every year, plus attend a holiday program featuring a puppet show, seasonal music, nativity show, and a new bike raffle where about 50 bikes are given away to kids at the event. The event is held at the San Joaquin County Fairgrounds in building two. Since its inception, David says the event has given brand new toys to more than 34,000 community kids in need, plus stockings filled with treats. The program also offers gifts to children with special needs that are truly thoughtful, such as a talking doll for a girl who is blind. “If we stop caring about the needs of the poor, if we stop caring about those types of people, what
kind of city would we be?” David asks. David came to Good Samaritan Training Center first in 1998 as a volunteer after his own struggles with alcohol and drug abuse. When he found faith he says he also found a desire to give back to his community. Now, David works for the center full time and he is the executive director of Operation Dreamkeepers. His wife, Loretta Cloxton, is the director. She is one of 100 volunteers needed to put on the event. The goal of Operation Dreamkeepers is to give children in the community not just a physical gift, but also to provide them with a holiday-themed day of fun. The event is completely about the children, with rails that separate them from the parents enjoying the show to make sure kids are front and center for the excitement. The event also exists to remind children that they are not forgotten. Someone cares about them regardless of what is going on at home. “I was there. I was adopted. I was that child,” David says. “There’s no family turned down.”

This year, the Officer Matt Smith Christmas Toy Drive will celebrate its 20th year of gifting to those in need, and Joe Silva has been involved since the beginning. It all started in 1999, when six officers decided to run a toy drive. With holiday spirit in their hearts, they collected toys through a bin at Arroyo’s Café in Stockton and handed them out on Christmas morning to selected families. Today, three teams of police officers and volunteers visit more than 30 families on Christmas morning to show them they haven’t been forgotten. The families selected have often lost loved ones to homicide, been the victims of abuse, or are simply in need. They are families the Stockton PD is made aware of either through their own work or come as referrals from the San Joaquin County Victim Witness Program. “The families that we visit, they were unfortunately a victim to some type of tragedy throughout the year,” says Officer Silva, public information officer for the Stockton PD. Instead of give up time with
his family on Christmas morning, Officer Silva has always insisted his kids come along for the journey. In fact, his kids were never allowed to open their own presents until they got back from handing out gifts to other families. While other groups and communities offer similar programs, Officer Silva says they are the only group who visits on Christmas Day because they want families to have that extra holiday cheer when they need it. “We do not want them to be forgotten on Christmas morning,” Officer Silva says. It’s not uncommon for cop cars to come down the street with lights and sirens to announce the arrival of Santa Claus and his team of uniformed elves. Through a more recent partnership with Knights of Columbus, police officers also carry jackets and will give them to any children in a home without one, and thanks to Arroyo’s Café, families also get food baskets. “It’s a way for us to give back to those families that were affected by violent crimes,” Officer Silva says.

Matt Teresi found Lodi Adopt a Child in 2018 when he was volunteering for a fundraiser. It didn’t take him long to fall in love with the organization and its mission, swiftly taking over the role of president. “My great grandpa… had numerous simple yet powerful metaphors that have been passed on to me. One such metaphor is that children, like trees, are easier to straighten when they are young,” Matt shares. That’s what LAAC does. Through gift collection and monetary donations, the organization works to create Christmas memories and spread hope to more than 800 underserved kids every year. This year LAAC will host its 30th annual Christmas Wish program. Started on November 23, community members are invited to stop by the LAAC office to choose a recipient’s angel card. Then, they simply purchase
and drop off a gift for the child on the card. One of the best parts is the kids make their wish lists themselves, so community members know they are buying clothing or toys that kids want. Last year more than 800 gifts were collected, including 200 new bicycles and tricycles. By giving presents to children who may not otherwise have any Christmas presents, LAAC is giving kids more than a wrapped toy. Feeling special during the holiday season and like someone cares for them is a gift that can change a child’s entire life. “If the community can help to instill a sense of hope for the future in children when they are young, their prospects for future success are much improved,” Matt says. In December, all of the gifts are distributed to the kids at a Christmas party hosted in their honor.

Chinu Mehdi and Sharon Benninger, along with Meela Mehdi (not pictured), founded Uplift All after bonding with Stockton’s homeless population through St. Mary’s Dining Room. Originally the women came in to take photos of people dining at St. Mary’s for a project, but as they got to talking, the three were touched by the people at the center. What they learned is that many of the homeless people who came into St. Mary’s were bored. They didn’t really have much to do with their free time. So, the women began teaching classes through the center such as dance, tai chi, yoga, writing, meditation, job skills, arts and crafts, music, portrait drawing, and theater. “They sing, they dance. It gives them something to do,” Chinu says. During one of their visits eight years ago, Sharon noticed how cold a man’s hands were. She asked what she could do to help and the man said he really needed a pair of gloves. That sparked an idea. That year the women decided to make Christmas bundles for the people at St. Mary’s that included gloves, hand-knit beanies, a scarf, toiletries, and a snack. It’s been eight years and the efforts are still going strong. Every winter, the www.sanjoaquinmagazine.com
group gets together for one day only and creates 500 care packages to distribute at the center on Christmas Eve. “It’s a pretty full bundle,” Sharon says. “The people are St. Mary’s were so grateful.” Chinu says the individuals they help are often isolated from the rest of society. “They don’t look clean, people have this impression that they aren’t nice people, that they smell, that they are infectious,” she says. “They are human beings just like us. It is so important for them to have a little bit of a normal lifestyle, to celebrate Christmas.” The packages are funded through community donations, often by the women who show up to put the bundles together, or donated such as the hats, which are hand-knit by local women. For a personal touch, every gift includes a handwritten Christmas card to ensure every recipient knows someone cares for them. After years of working to better the lives of those in need in Stockton, Chinu, Meela, and Sharon decided to create their own foundation for the work they do. The organization, called Uplift All Foundation, was created in 2016 and makes it easier for others to get involved. JOIN THE CAUSE:

DIY DECORATIVE CONCRETE DISH YOU’LL NEED:
• Plastic containers or other sturdy molds of varying sizes and at least one large and one small container to make your decorative dish. (Finally give that old, mismatched Tupperware some use!) Expert tip: Try to use molds that are narrower at the bottom and wider at the top. It will make it easier to remove the concrete once dried.

Concrete has been relegated to sidewalks and pool decks for far too long. As a surprisingly versatile medium for indoor décor and DIY projects, it’s time to change the way you think about concrete. “I personally love decorating indoors with cement decor because of the clean, modern feel it has,” says Amanda Denton of Boxwood Finch. “Cement can be modern without being cold.”
Thoroughly grease your molds (the inside of the larger mold and the outside of the smaller mold) to ensure you are able to remove them once the concrete has set.

STEP 2:
Mix the concrete according to the package instructions; your mixture shouldn’t be overly watery. Pour it into the larger mold.

Place the smaller mold inside the wet concrete and weigh it down with sand or rocks. Be sure that the bottom and sides are approximately the same thickness.

Tap the sides of the outer mold to remove any air bubbles and smooth the exposed edges. Let rest on a flat surface until dry.

Bats get a bad rap! The flying mammals have long been linked to blood-sucking and infectious diseases, but the truth is these unique creatures are good for the Central Valley, providing many benefits to its residents. First, lets debunk the myths. Yes, bats can carry rabies (as can any warm-blooded mammal), and part of the fear comes from the fact that 90 percent of U.S. rabies cases originate with bats. However, of all bats tested for rabies—i.e. the sick and weak—only six percent test positive, and overall, less than 1 percent of bats are carriers. In fact, experts speculate that the reason human deaths from bat rabies are high is because humans aren’t aware of the rabies risk. In reality, bats do more good than harm. Let’s check it out!
WHAT TO DO IN YOUR GARDEN THIS MONTH CLEAN UP Winterize your backyard by putting away garden tools, emptying the gas from the mower, and draining hoses. Then store everything in a dry place. Make a list of items you may need to replace.
1. Whether you’re allergic to bug bites and
stings, or simply are not a fan of creepy crawly things, bats may just be your best friend. Bats eat bugs, and different types of bats have different favorite meals. For example, pallid bats, which reside in the Central Valley, prefer to eat non-flying bugs such as spiders, scorpions, and crickets. A small bat can eat up to 3,000 bugs per night, including disease-carrying mosquitoes.
2. They are dying out faster than we want them
to. Much like the bee epidemic, losing bats wouldn’t be a win for the ecosystem. Disease is 78

mostly responsible for the decline in bat populations, however, displacement due to new construction is also sometimes to blame. Bats make up more than one-fourth of all mammal species on the planet, but some of the 1,000+ species are endangered.
3. Bats help the environment in more ways
than one. Dependent on the species, bats are responsible for fertilizing crops with their guano, pollinating plants, and even helping to spread seeds to grow more plants. Like honeybees, they are a vital—and fragile—part of our ecosystem. SJM

North Lake Tahoe:
North Lake Tahoe pulls visitors from around the world in large part due to its ski resorts. In fact, North Lake has the highest concentration of ski resorts in the nation. Due to early snowfall, the resorts enjoyed early openings, which means the big players are already welcoming guests to the mountain. As fall gives way to winter, nights are growing longer, temperatures are cooler, and the undeniable hunger for comfort food is raging inside of our bellies. There’s a reason soup is considered the food of the season. In between those hearty turkey dinners, lighter fair that warms your soul is what’s on the menu, and in between slaving over those big holiday meals, it’s ok to treat yourself to a night off from cooking. At Don Luis Mexican Restaurant in Stockton, customers choose from a variety of soups any night of the week, all created using daily-made stocks. Enjoy flavorful combinations including the exquisitely mar-

local dish inated tender-pork pozole reminiscent of classic Mexican City recipes and the Cuate family recipe used to create authentic menudo made from honeycomb tripe. Sink your spoon into the caldo de camarones (bites of prawn simmered in shrimp stock, blended with sautéed vegetables, and finished with chipotle garnish) or the albondigas (Mexican style meatballs served in chicken broth with fresh vegetables sautéed until tender). Order your soup as a half-size or full, depending on your appetite, (offered on all bowls except for the caldo de camarones). “Don Luis is fresh, made-to-order, natural ingredients, and the food is very authentic,” says Owner Alex Cuate. “Everyone should come in and eat at Don Luis’s during the holidays.” For the ultimate Mexican comfort food meal, pair homemade tortillas with any soup from the menu. Instead of crumbling crackers into the broth, dunk shreds of tortilla into the bowl as you go. At Don Luis you can’t go wrong with the soup and tortilla combo because every part of the meal—yes, the tortillas, too—are made fresh. These steaming soups are surely filling enough to justify being a full meal, but if soup sounds more like an accompaniment to you, try diving into one of Don Luis’ other authentic Mexican dishes. Alex says the torta Cubana, three amigo fajitas (chicken, steak, and shrimp), Chile rellenos, and chipotle fusion are the most popular menu items year round. Plus the establishment offers burgers and sandwiches, too. Don’t forget to upgrade your drink selection while enjoying breakfast (classic

And the eatery also allows customers to make adjustments where necessary. Staff has adopted a laid-back attitude
when it comes to creating your own meal. Some restaurants may scoff at changing an order but at Don Luis the customer is always right. Switch out ingredients, make additions, and customize your food the way you want to eat it. It’s just one more way that Don Luis caters to the whole family regardless of taste buds or diet. Not to mention, through careful plate selection or variations, meals can also be made for those that are gluten-free, vegetarian, or even vegan. At Corner Scone Bakery in Lodi, owner Terrie Green bakes scones daily from 5-7 AM. Most days Terrie makes signature flavors like mixed berry, lemon, chocolate chip, and maple bacon. During the holidays, specialty flavors are introduced including herb, cheddar, and sausage; chocolate duo packed with three types of chocolate; and strawberry with white chocolate. The bakery’s pride and joy this time of year, however, is the everpopular cranberry-orange scones, and if you’ve ever wanted to attempt these 100

delectable treats on your own, now is the time. Terrie is giving up her recipe for the bakery’s staple, along with all her tips on how to perfect them. Ready? Put away the stand mixer and prepare to get your hands dirty! When making any scones there are a few tips to follow, according to Terrie. Dry ingredients are always mixed together first to create the base. Next, fats are cut in such as butters and shortenings, using a small pastry fork. Terrie suggests cutting fats into pea-size shapes to blend and distribute evenly. Expert Tip: If you don’t have
a pastry fork, use two knives to cut in opposite directions simultaneously. Next up are the wet ingredients such as eggs, milk, and flavorings, poured over the top of the dry ingredients. “So much of these steps are a part of any kind of baking,” Terrie says. “A lot of people don’t take in how important technique is.” When mixing everything together, use your hands and fold the ingredients together. “Never stir,” Terrie warns; this will create unwanted elasticity and compromise the batter. Instead, push batter with the back of a spoon to create a wet-dry consistency. If it’s done right, everything will be incorporated but the batter will appear clumpy. Next, pour the mixture onto a floured work surface. If it sticks, something isn’t quite right in the recipe; the batter should slide right out. Flour your hands and roll the batter into a ball. Then, cut it in half and begin making circles that are two inches tall and 8 inches round. Cut these into six triangles. Expert Tip: a chef’s knife will help eliminate waste. Then, repeat with the other half. Don’t forget the egg wash! Use equal parts water and egg, mix well, and brush over the top of the scone to create a golden brown color. Sprinkle sugar on top to caramelize as it bakes. Want to try it yourself? Flip the page! SJM

Cranberry-Orange Scones PROVIDED BY CORNER SCONE BAKERY YIELDS 12 5.5-cups flour 1/3-cup sugar Dash of salt 1 tbsp. baking powder Blend all dry ingredients together Cut in ¾ c. butter Add 1.5 c. chopped cranberries In a separate bowl combine the following: 1 egg 1 grated orange rind 2 c. buttermilk Fold wet ingredients into dry ingredients Cut and shape scones (see previous page) Use 1 egg and 3 tbsp. water to create egg wash Brush over scones Sprinkle with sugar Bake at 350 for 22-25 minutes, or until golden brown

COOKIE CRAZY THE SPRINKLE ROOM DECORATING CLASSES
BY NORA HESTON TARTE Even the walls are covered in sprinkles at Lodi’s The Sprinkle Room. Opened by Katie Klouda, owner of Bee Love Cookie Co., in March, The Sprinkle Room acts as both a satellite campus and storefront for her burgeoning cookie company, and a creative space where Katie can host both public and private cookie decorating classes year round. “The studio space has just been amazing for classes,” Katie says. Every class, regardless of time of year, uses shaped sugar cookies as the starting point, and then guests are taught how to make the cookies pop with icing and sprinkles. The goal is to

create masterpieces that look as appetizing as the ones Katie makes for Bee Love Cookie Co. One of the best parts of the class, according to Katie, is that guests get to make their own sprinkle concoctions by mixing different colors and shapes from her impressive collection that she keeps on display in the form of sprinkle shelves. The other big masterpiece is the sprinkle wall, adorned with vinyl sprinkles Katie made herself on a silhouette-cutting machine. In pink cursive letters it says ‘treat yo self,’ over the top and it’s the perfect instagramworthy spot for guests to snap a photo. Katie also uses the

TOO MUCH HOLIDAY CHEER? BY NORA HESTON TARTE
Imagine this: it’s 7 AM and you’re trying desperately to drag yourself out of bed after a holiday party that went late into the night. Spending the day watching Netflix and feeling sorry for yourself simply won’t fit into the day’s busy schedule, whether it involves shuffling off to a day at the office or taking the kids on a local holiday outing. So what should you do? While there is no cure-all for over-indulging the night before, we do have some tips to help you get on the move. Tried and true methods like cups of coffee and pain killers will certainly help keep the headache and stomachache at bay, but there are options that might put a little extra pep in your step on a hard morning. Staying hydrated is key. Replace some of what you lost by drinking more than a plain glass of water (alcohol can throw your system off balance). Over the counter pick-me-ups in the fridge—or at the nearest gas station—include Gatorade, Powerade, or Vitamin Water. One of the best tricks is taking a few swigs of Pedialyte before bed and again in the morning (mix it with water for the best results). Supplements are one more way to get over that morning hump. Ginger can help stave off gastrointestinal complications (mix it with water, tangerine extract, and brown sugar) while studies have linked prickly pear extract to an overall reduction in hangover symptoms. could potentially even reduce your blood alcohol level, according to one study. Lucky for us, many of these cures require no preparation the night before, but the best ways to wake up peppier is to prepare. GET FESTIVE WITH FRESH POMEGRANATES

With December comes the holidays and loads of festive baking, dressed-up cocktail parties, company potlucks, and family gatherings. Whether you are looking for a dish to wow your party guests or something sweet to bring to your in-laws, pomegranates are a fabulous, fresh fruit to kick up your cuisine. Plus, it’s less expected than other seasonal flavors. If the thought of cracking open a fresh pomegranate sounds too daunting, or the possibility of staining your favorite blouse keeps you from cooking with pomegranates, you can always purchase the colorful arils already deseeded at your local market in the fresh produce section’s refrigerator. If eating them really isn’t your thing, they do have other uses, such as adding a rustic flair to your holiday tablescape. HEALTH BENEFITS Antioxidants help remove free radicals and reduce inflammation, and did you know that pomegranate juice has three times more antioxidants than red wine or green tea? RICH IN VITAMINS These juicy morsels are high in vitamin C, E, and K, and they are also a great source of folate and potassium. HEART HEALTH Fresh pomegranate juice is at the top of the list for heart-healthy juices. Studies have shown that it protects the heart and arteries by improving blood flow, and it may even slow the growth of plaque in the arteries. 106

Smoky Eggplant Dip with Pomegranates INGREDIENTS 2 medium eggplants 1/3 c. tahini ¼ c. lemon juice 3 tbsp. extra virgin olive oil 1 tsp. Kosher salt ½ c. pomegranate seeds
DIRECTIONS Heat your charcoal grill to medium heat. Brush eggplants with olive oil and place eggplants directly on coals. Cook, turning occasionally, until skins are completely charred and flesh collapses, 1520 minutes. Transfer to a colander set over a medium bowl. Let cool 15 minutes. Remove skins from eggplants. Transfer flesh to a sieve set over a bowl and let drain for 10 minutes. Transfer eggplant flesh to a food processor. Add lemon juice, tahini, olive oil, and salt. Process until creamy and season with kosher salt. Transfer dip to a bowl and top with pomegranate seeds, and drizzle with additional olive oil. To save time, make one day ahead. Serve with pita chips or veggies.
Cambozola Crostini INGREDIENTS 1 multi-grain baguette 8 oz. Cambozola cheese 1 tbsp. honey 1 tsp. grated orange zest ½ c. baby arugula Aged balsamic vinegar (optional)
HAVE POMEGRANATES… NOW WHAT? Sure, using them sounds like a great way to add some seasonal flair to your cuisine, but what types of dishes benefit the most from the tart crunch of a pomegranate? The crimson colored pomegranate arils add the perfect punch to winter salads or lamb entrees, while the tart red juice makes for killer salad dressings and holiday cocktails. Here are a few simple ways to elevate your culinary game with an in-season favorite.
COCKTAILS The holiday season is a time for celebratory toasts. So why not use fresh pomegranate juice in a winter prosecco punch with fresh lime juice, satsuma tangerines, and blood oranges? The acid in the pomegranate pairs perfectly with bubbly by bringing balance. Optional: add vodka. SALADS The possibilities are endless. Layer arugula, blue cheese, walnuts, and apples in a large bowl. Add a cup or two of fresh arils for flavor and top with an aged balsamic drizzle. Or opt for spinach, candied pecans, and goat cheese—just don’t forget the pomegranate arils! ROASTED VEGGIES Think squash, root vegetables, and cauliflower. Roast cauliflower with a Mediterranean flair. Coat thick slices with a mixture of olive oil, salt, lemon juice, coriander, cumin, and pumpkin seeds. Roast until caramelized. Garnish with pomegranates and fresh goat cheese. Another options is to roast squash with vadouvan, curry powder, shallots, and garlic and then garnish with fresh labneh and pomegranates. www.sanjoaquinmagazine.com
DIRECTIONS Preheat oven to 375 degrees. Cut the baguette on the bias to ¼-inch slices and brush with olive oil. Bake crostini for 7 to 8 minutes until golden brown. Meanwhile, cut the Cambozola into ¼-inch slices to fit crostini. Remove crostini from the oven, top with cheese, and put back into the oven for 3 minutes. Remove, top with arugula, drizzle with honey, and garnish with pomegranate arils.
Roasted Brussels Sprouts INGREDIENTS 2 lbs. Brussels sprouts 4 oz. chopped pancetta 1 c. pomegranate arils 3 tbsp. olive oil 1 c. feta cheese 1 tsp. kosher salt ½ tsp. fresh ground pepper 2 tbsp. balsamic vinegar DIRECTIONS Preheat your oven to 425 degrees and cover a deep cookie sheet with foil. After washing and trimming Brussels sprouts, spread them out onto the cookie sheet. Meanwhile, cook pancetta in a small saucepan over medium heat around six minutes, until brown. Drain pancetta on a paper towel and drizzle remaining juices over Brussels sprouts. Drizzle olive oil over the Brussels sprouts, season with kosher salt and bake for 15-20 minutes. Remove from the oven and sprinkle crumbled feta over the hot sprouts. Garnish with pomegranate arils and balsamic vinegar.
