This issue, our editorial staff dedicated themselves to hashing out all the ways in which you can make 2019 your best year yet—from fitness programs, to the latest on nutrition, to real talk about therapy and Botox, we start the new year on everything you need to know about health, beauty, and wellness. And wellness isn’t just about indulging in the latest diet trends or beauty hacks, it’s also about engaging with your creative passions: read up on the Stockton Civic Theatre’s latest production, A Comedy of Tenors, in our Section Editor Caitlin’s article “That’s Entertainment”. Garner inspiration from Crystal Mayer’s tale and read about how her daughter inspired her to create her own photography business in “Little Love Story Photography”. Aside from entertainment, for some people, their passion is helping others. This issue, we interviewed one such individual: Andy Prokop, the man who captained the ship of United Way of San Joaquin for almost two decades and bids the organization, farewell. Life hasn’t always been easy for Andy Prokop—but that doesn’t mean it wasn’t blessed. As CEO of United Way of San Joaquin County for two decades, and even long before then, Andy has maintained an aura of radiant positivity that he joyfully shared with his family, employees, and community through nonprofits. And his dedication to the latter was no accident. “When you follow my journey and look at both my childhood and corporate years, there were nonprofits throughout my entire life

passions

that were there to serve my needs,” says Andy. “Food, shelter, protection, clothing, etc.—there was always an agency out there that provided that for me.” Like many of us, Andy was born to a dysfunctional family. At just five years old he was able to tell that his mother had a drinking problem. His father left when Andy was young, leaving Andy to be pulled along the violent current of his mother’s addiction. But there was light at the end of the tunnel, appearing in the form of the foster care system. In his foster homes, Andy not only found constructive hobbies, but also the positive role models he so desperately needed. “I was blessed by people who opened their homes and hearts to me,” he recalls. “It set a good example, teaching me to be a

good person and to be kind to people.” Andy lived his life with that mentality, securing a job, going to college, and eventually being drafted into the US Army to serve in the Vietnam War. “Even when I was in the military, I approached everything in a way that said, ‘I can do this, and I will do this,’” he remembers. During the war, Andy found himself situated on the open edge of a UH-1 Helicopter, flying over the emerald green jungles of Vietnam. A Door Gunner and Air Frame Mechanic for three years in the US Army, Andy was able to return home without a scratch—and for that, he thanks God. But being drafted had other consequences. Specifically, for many veterans of the Vietnam War, exposure to the herbicide and defoliant chemical “Agent Orange”. It is for that reason that Andy must bid farewell to United Way, and to San Joaquin. On doctor’s orders, Andy set his sights on a drier climate for his lungs, the likes of which can be found in Spanish Springs, Nevada. “We’ll move in January and start our new life,” says Andy. “It will definitely include giving back to the community and being an instrument for good. I plan to join organizations that help veterans, children, feed people, or just one that’s a positive influence on the community. My arms are wide open.” Though his mantra—and nickname—is “Always Positive”, closing the door to a 20year journey still stirs up bittersweet emotions. After all, Andy grew with this organization and helped make United Way of San

Joaquin what it is today. “I could stay five more years,” laments Andy. “But I feel honored to have gotten to do this job as a servant to my community and doing my hearts work for almost two decades.” When asked to recall a favorite memory at United Way, Andy cites a moment with the recently passed Alex Spanos. “We used to put on the AG Spanos Golf Tournament, and one of the greatest moments of my life was when Mr. Spanos was standing next to me on the scoreboard—it looked like he was eight feet tall,” laughs Andy. “And Mr. Spanos had the biggest grin on his face: the golf tournament made so much money that we were able to give hundreds of thousands of dollars to our community.” Andy’s favorite superhero is Wonder Woman: he’s always revered strong women. It’s only fitting, then, that his successor will be Kristen Spracher-Birtwhistle, co-founder of the Eleanor Project. Andy is confident Kristen will lead United Way down a successful path. “I lived the life that prospered because of nonprofits,” states Andy. “I believe we’re turning the corner in our economy; discretionary dollars are becoming more abundant. I have total faith that my successor will excel, and so will United Way.”

A COMEDY OF TENORS BRINGS FAMILIAR FACES AND RIOTOUS LAUGHS  BY CAITLIN HAMER

Paris, 1936. Three world famous tenors come together for the concert of the century. “Of course, things go terribly wrong!” laughs Shawn Carrington, director of Stockton Civic Theatre’s production of A Comedy of Tenors, which opens this month. Audiences may recognize some of these characters from Lend Me a Tenor, which

happened to be Shawn’s directorial debut when it was staged at the Stockton Civic Theatre in 2012. Though A Comedy of Tenors is a sequel, those who didn’t get a chance to see Lend Me a Tenor don’t need to worry about being confused. While this uproarious show picks up two years after the events of Lend Me a Tenor, the characters explain what happened previously for the benefit of the audience.

Those who saw the first production, though, should recognize two of the cast members who were able to reprise their roles from Lend Me a Tenor. “When I found out there was a sequel, I knew I had to see what happened next,” says Shawn. “It has all the elements – and more – from the original.” Shawn’s history with theatre, and his love for the live reactions it elicits, goes back to his early days of drama class back in Illinois. “I was a shy kid and it was just a way to get me to talk,” he recalls. “The first time I opened my mouth and people started laughing, I was hooked.” Finding himself in Stockton, he began acting at Stockton Civic Theatre, starting with a production of You Can’t Take It with You in 1994. From there, he assisted in directing several shows before finally taking the helm on his own. “I act every now and then when I get the chance,” he adds. “But I love directing. From the moment I get the script, to getting the team. I like putting the puzzle together and going from what’s on paper to seeing it on stage.” Shawn especially loves the excitement of opening night, when all the months of hard work culminate in an unforgettable performance. “When you’re approaching the part that you know is going to blow the roof off, and you get there – it’s so worth it,” enthuses Shawn. “Every bit of the struggle that went with putting the show together is worth it.” A Comedy of Tenors plays at the Stockton Civic Theatre from January 16th through February 3rd. LITTLE LOVE STORY PHOTOGRAPHY A TALE OF THE STORM, SUN, AND THE RAINBOWS IN BETWEEN

Growing up, all Crystal Mayer ever wanted to be was a mom. Then, in 2012, Crystal finally had her first child—a daughter, Alivia. Naturally, she wanted to document every single milestone in her daughter’s life. “I wanted to get her photos done every month,” she recalls. “I even made and brought my own props to the shoots. I started coming up with different themes, like Breakfast at Tiffany’s, Flashdance, etc.” Eventually, Crystal started taking her own photos of Alivia, with so much success that friends and family began reaching out to her, too. Around that time, Crystal and Justin decided to try for another child. Once

again, they experienced a loss. “After we went through that, I realized I may only have Alivia, and I didn’t want to miss out on her life—I couldn’t go back to the 40-hour work week doing something that didn’t bring me joy.” With her husband’s support, Crystal was able to launch Little Love Story photography, which specializes in maternity, newborn, children, and family photography. “Seeing parents when they get their photos or hearing them say that the photos brought tears to their eyes, that brings me joy,” says Crystal. “These are going to be the photos in their kids’ yearbooks when they graduate high school. These are memories they’re going treasure for a lifetime.” Another specialty that Crystal has be-

come known for is her “Rainbow Baby” photoshoots. “A rainbow baby is a baby born after a loss,” explains Crystal. “I’m able to relate to so many of my clients, and it’s a privilege to see those who were having fertility problems have their first child—and I get to photograph them!” And don’t worry—all good love stories have a happy ending. Today, Crystal and her husband have not one, but two beautiful daughters. Alivia (now six years old) will help out during Crystal’s photoshoots, while Amelia (two years old) toddles around and plays with the other children. CHANGING with the SEASONS ALLEVIATE WINTER WOES, WITH THESE HELPFUL TIPS  BY ALEXANDRA KRUEGER

When winter finally arrives in the Central Valley (after a sweltering summer that lasted well into November), many of us are glad for a change. However, winter holds a few problems of its own. With the right information, you can curtail each issue and enjoy the chilly season.

DRY SKIN

To combat dry skin in the winter time, most people lather up with the nearest lotion. However, that only treats the symptom of the problem. While moisturizing is important, there are many other things you can do to keep your skin supple and calm. First on that list is soap: During the winter, make sure your soap is pH balanced, or at the very least “gentle”. Also, be wary of using exfoliators during the colder months, as they can aggravate your skin further. A great life-pro tip is to keep your showers short. We know how good it feels to hop in the hot shower when there’s frost in the air—unfortunately, excessive exposure to hot water strips your skin of its natural oils, something you definitely need to combat dry skin.

ILL HEALTH

Most folks think it’s a given that you get sick at least once during the colder months. This doesn’t

have to be the case! However, Jack Frost will knock you on your behind if you don’t at least get a flu shot, so make that a priority this season, especially if you’re over 65. Other common methods employed to ward off the flu include washing your hands often, not touching your nose, mouth, or eyes with your hands, and even wearing a face mask. Perusing the veggie aisle in the winter time will also combat your chances of falling ill. While you might not be craving a salad in January, if you deprive your immune system of nutrients, it won’t function as well as it should—leaving you vulnerable to illness.

Truth: Botox gets a bad rap because it is derived from botulinum toxin, which is commonly linked to food poisoning. However, the small amount of this protein in Botox injections isn’t enough to cause any problems, making Botox completely safe for cosmetic use.

For as long as she could remember, Letty Nava had wanted to own and operate her own shop. “It was a long-distance goal,” muses Letty. The years flew by, and as is often the case, she ended up focusing on other things. In this instance, it was art. “When my kids were little, I started painting at home,” Letty explains. “And when they went to school, I started volunteer-teaching art.” After instructing students on the intricacies of art for nearly two decades, Letty decided it was time to paint for herself, settling into an expansive, inviting studio space on Downtown Lodi’s Oak Street. Letty knew it could double as both a studio and the boutique she had always dreamed of. “I just celebrated my third year of being here, and I finally feel like it’s happening!” she exclaims. 40

Upon entering the space, you’ll find the lovely boutique, which is stocked with handmade jewelry, Letty’s original art, and hand painted personalized items. “When I started, I asked myself what kind of shop I wanted this place to be, so I made it a home and gift shop,” Letty says. “I had my paintings, which go with the home, and jewelry, which is a gift.” Since opening, Letty has expanded her inventory – there is painted furniture, bath and body products, and candles, too. Letty makes quite a few of the beaded earrings and necklaces herself, as well as scarves, and a number of gift items. In fact, walk into Nava and Co on any given day, and you’ll likely find her creating something in her working studio, which makes up the other half of the location. But the studio isn’t the only place she gets to unleash her artistic side. “I started live-painting for weddings,”

says Letty. “I go to the reception and paint the bride and groom while it’s going on.” Letty also takes commissions for other paintings, and she started doing jewelry commissions, too. “People can bring in a certain outfit and I’ll custom make jewelry to go with it.” Interested in creating some art or jewelry of your own? The Food

As the Super Bowl approaches, you can start to draft your menu. Once we find out who will play in the Super Bowl (two weeks before game day) you can pick a few themed dishes based on the towns. For example, if Philadelphia is playing, ditch the sliders and go for Philly cheese steaks. If the Tennessee Titans make it to the big dance opt for some Nashville Hot Chicken, one of the hottest dishes in America right now. Just have fun with the theme and your guests will be happy either way.

Take some friendly advice from someone who loves to host parties—it’s better to have too much food than not enough. And it’s always a good idea to have a combination of hot and cold items on your buffet. Utilize crock pots and chafing dishes to keep hot food warm as much as possible. And lastly, have a good combination of food coma inducing football food and healthy eats. Think veggie trays and fruit platters alongside cheeseburger sliders, hearty chili, and seven-layer dip with chips. Pro tip: keep snacks on all the end tables or coffee tables to keep the guys satiated during the game. Things like popcorn, spiced nuts and pretzels are super easy to put out and simple to keep refilled throughout the day. And don’t forget dessert. People always want something sweet after a few drinks! There are two super simple desserts you can whip up to play along with the football theme. The first is chocolate rice Krispy treats. Make a batch and


form them into mini-footballs. Use white cookie frosting to make laces (like on a football) and voila! You can also dip fresh strawberries in chocolate and use the white frosting to make the same laces as you did on the rice Krispy treats. At least the kids will be happy, right?

The Drinks

On game day, you can never have too much beer. Make sure you have plenty of ice chests on hand and even more importantly, make sure they are well stocked. I recommend going with a couple kinds of beers: pick up a local brew from the guys over at Five Window or Channel Brewing and then fill in the rest with an easy drinking beer like Bud Light. You also want to make sure you have plenty of ice to keep the beer cold. No one wants to head to the store in the middle of their own party! And if your friends are big on cocktails, buy accordingly. I like to keep it to two or three choices: vodka, rum, and whisky. Those cocktails need mixers, and again, lots of ice! Most importantly, be sure to have a good assortment of beverage options for the non-drinkers. Think soda and bottled water. You might even want to stock up on juice boxes if there are going to be a ton of little kids!

If you don’t have enough, rent them or ask your guests to bring a few extra. If you have oversized pillows, put them on the ground in front of your television— someone will enjoy sitting on them. Not everyone will be into the game, so be sure to have some fun activities to keep guests entertained. Cornhole is a great choice to put outside or in your garage. A little friendly competition never hurt anyone. Be sure to have a football or two to be thrown around at halftime or in between quarters.

4 lb. Ground Beef 2 Packages Hawaiian Sweet Rolls 1 Package Frozen Onion Rings 2 8 oz Package Sliced Cheddar Cheese ½ C. BBQ Sauce of your Choice 3 TBSN. Worcestershire Sauce 2 to 3 TBSN. Fiori’s Butcher Shoppe Seasoning

DIRECTIONS

Turn on BBQ grill. Preheat oven to 425 degrees. Line three cookie sheets with foil. Place frozen onion rings on one of the cookie sheets and place in the oven for 14 to 16 minutes. Form burger patties into 3-inch patties and arrange on two of the cookie sheets. Pour a splash of Worcestershire sauce on each patty and season with Fiori’s seasoning (or your favorite burger seasoning). Meanwhile, split each Hawaiian roll in half. Cook hamburger patties for two to three minutes on each side and add the cheddar cheese while burgers are still on the grill. Remove from heat. On each roll, place one burger, two onion rings and add BBQ sauce. Serve immediately or keep in a warming drawer until ready to serve.

1 C. Pilsner Style Beer 1 lb. Gruyere Cheese 1 TBSN. Cornstarch 2 TSPN. Dijon Mustard Dash of Worcestershire Sauce 1/8 TSPN. Paprika ½ TSPN. Hot Sauce

DIRECTIONS

Bring the beer to a boil over medium to high heat in a saucepan. Reduce the heat to low and simmer. Meanwhile, toss the gruyere cheese in the cornstarch and add the cheese to the beer one handful at a time. Stirring until each batch is completely melted. Add the mustard, Worcestershire, paprika, and hot sauce and combine. Transfer to a fondue pot or crock pot to keep warm. Serve with bread, fruit, or vegetables. Can be made up top two days ahead and reheated. 54

SEAN AGCAOILI HOLISTIC HEALING EXPERT When you receive spiritual gifts from your ancestors, you can’t run away from them—so says Sean Agcaoili, founder of Holistic Alchemy, and healer/ceremonialist at Stockton’s esoteric boutique, Dragonfairy. In the Philippines, Sean’s maternal great-grandmother was known as a Manghihilot: a practitioner of Hilot, the indigenous Filipino massage and healing practice. Manghihilots have the ability to detect and correct congestion in the body, misalignments in the skeletal structure, as well as energy imbalances. Most of the children in Sean’s family were gifted in the art of massage—including Sean. DR. KRISTINA DULCEY-WANG LICENSED CLINICAL PSYCHOLOGIST Mental health: In years past, the topic was taboo, discussed only in hushed tones. Thankfully, that’s no longer the case; these days, the phrase is a positive one, often used as a synonym for “self-care”. Thus, therapy—the direct route to repairing mental health—has become more normalized as well. “There’s a lot of comfort to be found in therapy,” states Licensed Clinical Psychologist Dr. Kristina Dulcey-Wang. “When you seek help for a problem, you’ll often find that others know what you’re feeling and have experienced what you’re going through.” Dr. Dulcey-Wang says that while the upswing in mental health-awareness is evident, many people still feel the pressure to live by the “pull yourself up by your bootstraps” attitude. “While that mindset can sometimes be helpful, the risk is that it makes people apprehensive to seek mental health services,” Dr. Dulcey-Wang explains. “It also creates isolation within relationships— you’re not going to want to reach out to a friend when you’re going through a hard time if you think they’re going to be unsympathetic.” If you notice changes in your

behavior, mood, appetite, or an increase in sleep or irritability, these in dicate that you’re stressed. If you find that your normal coping skills aren’t working to deal with these factors, therapy can provide you with the tools you need to feel better. “Therapy helps patients to gain skills that maybe they haven’t developed before,” states Dr. Dulcey-Wang. “Developing coping mechanisms, distress tolerance, interpersonal effectiveness, or just learning to be more assertive can really help a client navigate their personal trials.” The main thing to avoid is self-medication. Watch your alcohol consumption and refrain from drug use. If you decide that you want to try therapy in 2019, Dr. Dulcey-Wang advises patients to make a list of qualities they’d like to see in their therapist and then narrow down the list from there. “It’s often a process of finding someone whose personality and style fit you as well as their expertise. If you happen to go and it doesn’t fit, don’t be afraid to try someone else.”

Contrary to the phrase “beauty sleep”, catching enough Z’s can do more than boost your looks—having an adequate amount of sleep every night helps with memory, benefits your mood, improves your concentration and productivity, and strengthens your immune system. But these days, it seems a good night’s sleep is hard to come by. Dr. Ronald Kass, D’ABIM in Sleep Medicine, sees patients every day who are afflicted with Sleep Apnea, Restless Leg Syndrome, Narcolepsy, and Insomnia at the Pacific Sleep Disorder Center in Stockton. “The increase in sleep issues in this country has a lot to do with the obesity epidemic,” states Dr. Kass. “In countries where obesity isn’t as common, only 2-4 percent of people have Sleep Apnea. In America, the last study found that Sleep

Apnea affected 10 percent of women and 24 percent of men.” And don’t assume the only downside to Sleep Apnea is the snoring. According to Dr. Kass, the treatment and identification of Sleep Apnea is one of the most important medical issues of our time. “We now know that those with Sleep Apnea also have high blood pressure and Diabetes which can lead to strokes and heart attacks. It also leads to Alzheimer’s.” Another reason Americans are losing sleep? Screen time. “Electronics do interfere with sleep—the blue light that’s emitted from the cell phone can prevent your brain from processing melatonin and will keep you awake,” explains Dr. Kass. “I recommend

that sensitive patients should avoid being on their cellphone, laptop, or iPad for at least one hour before they go to bed.” Lack of sleep can cause a myriad of problems, including weight gain, high blood pressure, mood swings, lethargy, and lapses in memory. It can inhibit your social function, athletic ability, and impair your ability to drive. CONNIE SCHWARTZ ACUPUNCTURE SPECIALIST The ancient healing practice of acupuncture can assist in many types of pain relief, ranging from migraines to neck and lower back pain. While many assume the treatment is painful, at Inner Balance Medicine in Lodi, Licensed Acupuncturist Connie Schwartz practices the Japanese Meridian style of acupuncture, where the goal is for the patient to not feel the needles at all. “The Japanese have a strong but delicate kind of culture, and their method of acupuncture reflects that by being a lot more energy based—the practitioner should feel the patient’s qi through the needle, not the other way around.” But what exactly is qi? And why should it warrant a needle being stuck in one’s body? “Qi is your body’s energy,” says Connie. “We all have selfmade energy to keep our bodies functioning, it’s your life force. Qi keeps your organs working, your blood circulating… It’s what allows us to take a breath.” Ideally, your qi should always be flowing steadily. However, energy blockages do occur, often manifesting as illness or pain. It’s the acupuncturist’s job to diagnose these blockages and insert the needles into the correlating points in the body. The treatment both stimulates the body’s ability to heal and rebalances the person’s qi. “Basically, acupuncture just helps to keep the body well,” says Connie. “We see people as young as children to as old as in their 90s, treating everything from colds, to digestive issues,

to gynecological issues, to psycho-emotional issues such as anxiety and depression.” One popular reason to get an acupuncture treatment is if you experience migraines—yes, there are needles in your face, and no, they don’t hurt. “We don’t always have to treat locally, though,” elaborates Connie. “We have a lot of ‘distal points’ on the hands, feet, or other points that correlate with pain elsewhere on the body.” For migraines, Connie says they often needle the iliotibial band on the side of the leg. One of the main things you can look forward to during an acupuncture treatment? A good snooze. “Most patients fall asleep while we’re doing it,” laughs Connie. “I always say it’s the deepest, shortest nap you’ll e v e r take.”

Join a regular class and bring blocks, blankets, and other yogi tools to make simple modifications to stretches (most instructors offer suggestions throughout the class). Sometimes, the best meals are the ones that you grab when you’re on the go. A humble roadside establishment welcomes you in with tantalizing scents, and the warm, flavor packed meal reminds you to slow down and savor life. Dhabas, which are small, informal dining spots found on the side of highways in India, are exactly those kinds of places. And while Dhaba Indian Cuisine, one of Tracy’s most popular restaurants, isn’t quite as casual, both the food and the good feelings you’ll get there are just as fantastic as the ones you’ll find at an actual dhaba. HAWK’S LANDING WINE CELLARS

“We source our wines from Napa, Central Coast, Lodi, the foothills, etc.,” says Michael. “I enjoy letting people taste different varieties from all different parts of the state to highlight which varietals do better in certain regions.” One of Hawk’s Landing’s crowd favorites is wine from right here in the Lodi Appellation: the 2016 Lodi Symphony, winner of the Double Gold in the 2017 San Francisco Wine Competition. “The Symphony is its own varietal: a cross between a Muscat Alexandria and Grenache Gris. It’s got a hint of sweetness, off dry, and has nice honeysuckle notes to it, with a good balance between sweetness and acidity,” explains Michael. “It also has a fragrant floral nose—on bottling days, the aroma fills the whole winery.” Be sure to stop by their tasting room, Hawk’s Landing Wine Cellars, in Downtown Lodi. Opened just a few months ago, it’s already When Dave and Trish Pechan bought 40 acres of fertile land in Linden, California, it was in the spirit of a century-long tradition of agricultural excellence: Mathias Pechan, who immigrated to the US in the 1840s, took to the fields and farmed in the heartland of America, igniting a family tradition of working the land that has inspired generations. Since purchasing their 40 acres, Dave and Trish Pechan have opened Hawk’s Landing Wine Cellars to share the fruits of their labor with the community. Reflecting on the past two decades, Dave says, “We have seen so many changes over the years—particularly the past three years—that it still feels new and exciting, almost like a new start-up business.” Michael Webster, winemaker and general manager of Hawk’s Landing, married into the family almost 10 years ago and is passionate about highlighting California’s various regions through the flavors and subtleties of their award-winning wines.

Michael’s favorite part of the job. “We’re very excited to have the chance to share our family experience, history, and our way of making wine with other people on a familiar level,” says Michael. If you ask Michael what his favorite wine is, he’ll suggest the 2016 Napa Valley Mount Veeder Cabernet. “It’s a fuller bodied wine, and it has some great blackberry leather tobacco and cocoa notes. MICHAEL DAVID MAKES BIG MOVES

STAPLE LODI WINERY LAUNCHES POLITICALLY CORRECT LABEL  BY � SUZANNE LEDBETTER

It’s no secret that Michael David is Lodi Wine’s most prolific winery. They’re famous not only for their award-winning wine, but also bold, creative marketing, and inspired labels like Lust and Rage. But with the recent sale of 7 Deadly Zins to Wine Group, the winery shifts its focus from the brand that put them on the map in favor of other labels, like their top selling Freakshow wines. Recently, Michael David launched an edgy, Bordeaux style wine titled Politically Correct. The 2015 blend, available only in the tasting room, is a sharp departure from their traditionally big, juicy, bold wines that folks have come to know and love. Politically Correct is a Bordeaux style wine crafted from Cabernet Franc, Cabernet Sauvignon, and Petite Verdot. The wine is light, elegant, and food-friendly, with neutral oak and great acid. This wine begs to be paired with dinner and retails at a humble $49 per bottle. Adorning the label is the quote, “Political correctness is instant death to creativity.” Word. Politically Correct is the brainchild of Melissa Phillips Stroud, V.P. of Sales and Marketing and sixth generation Lodi grape grower. “The wine evolved as a project—the idea that we always have to be careful about what we say, do and how we represent ourselves,” Stroud professes. “We are all trying to be individual, creative, unique beings, while still working within the confines

of society.” For her, this is true not only as an individual, but as a company, and as creators of wine brands. Society perpetuates the dichotomy that someone should be unique and stand firm in their beliefs; as long as you conform to an always-changing set of rules. And at Michael David, one of their marketing mottos is—Life is short, break all the rules! Which is why the launch of this new label is so important. “At Michael David, we don’t ever want to put our consumer in a box,” said Stroud. “We want to offer them different styles and let them make their own decisions. Christine credits early memories of her mother preparing food as what set her on the course to creating recipes of her own. “Food was the centerpiece of our family gatherings, and I would say it was in about every conversation we had. Family, food, and love: that’s really what it is.” Combine those strong feelings, Ashley’s California Culinary Academy degree, plus a decade of experience in the restaurant business, and it makes perfect sense that they would start ˜ this business. “My greatest gift or compliment of all is when a guest calls me to the table, or I am making my rounds, and they˜ tell me that my food reminds them of their mother’s or grandmother’s cooking. “Being called ‘Chef’ takes some getting used to,” admits˜ Christine Louie. “I actually always considered myself just a cook.” Whatever title you give her, the fact is that Christine certainly knows her way around a kitchen. Through her love of food, a generation of family recipes at her fingertips, and her partnership with her daughter Ashley, who is a classically trained and educated chef, she created Mamas and the Tapas. What started as a casual conversation about starting a food truck ended up becoming an adventure. Now, this Central Valley staple has graduated from a food truck to a brick and mortar café in Manteca. “Preparing food for people is what I live for,” she says. Adorned with old family photos from Christine’s family, the dining room provides a sense of history

and warmth. The food, prepared lovingly by Christine and Ashley, provides unbelievable flavor. “Our recipes are family traditional,” explains Christine. “Our food is Puerto Rican by nature. The Lodi natives were down on Hermosa Beach to watch their daughter compete in beach volleyball when the idea struck. “At the Beach Volleyball Nationals, all the athletes were eating poke because it was both healthy and filling,” recalls Jenny. “My husband Paul kept saying to me, ‘Lodi would love this, Lodi would love this!’” And he was right—since Loco Poke opened, Lodi has taken to the 120

The younger generations are especially taking advantage of a quick, nutritious option for lunch. “We wanted to be by the high school so that kids could have easy access to healthy food options,” explains Jenny. But more than offering the youth of Lodi a nutritious lunch, Loco Poke is also a loving tribute to Jenny’s late sister Lisa. “My sister passed away seven years ago,” says Jenny. “She was a part of our roller derby team, and her moniker was ‘Loco Lisa’—so as we talked about names, we were coming up with ‘crazy fish’, and then it clicked, and we were like, ‘Loco!’” Lisa also loved Hawaii, the origin place of the poke bowl, so it only made sense that Jenny and Paul share her same spirit of love with Lodi. “Poke means ‘cut up fish’,”

ROASTED LEMON CHICKEN THIGHS 124

INGREDIENTS 3 to 4 Chicken Thighs, Skin on Bone in 4 Lemons, 3 cut into thin slices, one cut in half 1 Head of Garlic 8 Thyme Sprigs 8 Rosemary Sprigs ¼ C. Olive Oil 24 oz. Bag of Baby Potatoes, Mixed ½ TSPN. Rosemary Sea Salt ¼ TSPN. Pepper, Freshly Ground

DIRECTIONS Preheat oven to 425 degrees. Pour olive oil into the bottom of a cast iron skillet. Season chicken thighs with sea salt and pepper. Brown chicken thighs, skin side down, for four minutes on medium-high heat. Add potatoes and garlic to the pan. Layer lemon slices, fresh thyme and rosemary on top of the chicken. Remove the cast iron skillet from the heat and place in your oven’s middle rack. Cook for 30 to 35 minutes. Remove from the oven and using a spatula, flip chicken thighs so that the skin is side up. Add more fresh thyme and sprinkle the pan with leftover lemon halves.


CITRUS & AVOCADO SPINACH SALAD INGREDIENTS 1 5 oz. Bag of Spinach 1 Grapefruit Segmented 3 Tangerines, Segmented 2 Avocados, Sliced ½ C. Candies Walnuts 2 TBSN. Orange Drop Olive Oil 2 TBSN. Balsamic Vinegar Salt and Pepper to Taste DIRECTIONS Cut the grapefruit and oranges into segments and peel off skin and any remaining pith. Set aside. Slice avocado. Empty spinach into a large bowl and add citrus, avocado and candied walnuts. Add freshly ground pepper, salt, orange flavored olive oil and balsamic vinegar. Toss and serve with a Lodi Sauvignon Blanc!
