For Kerri Shiozawa, food is power. A licensed pastor, guiding others through their spiritual and emotional healing processes has always been a part of Kerri’s life. Day (and the months to follow) have always been a time to set new goals for ourselves, focus on growth, and embrace hope for the future. In the midst of a global pandemic, this focus on bettering ourselves is more polarized than ever. As we make our new year’s resolutions (take some tips from page 30), it’s important to make commitments we can keep but still challenge us, as well as ask ourselves what is truly important. This year, I’ve learned that family is more precious than I think anyone realized before, I crave travel in a way I didn’t appreciate until it was gone, and I want to see the success of those around me, especially the small businesses that support us and exist in our community. So, my resolutions this year will focus on those significances. That being said, many new year’s resolutions focus on body image, from weight loss to increased flexibility, or perhaps something more specific such as completing your first pull-up or summiting a mountain. We are here for the fitness resolutions that make us feel good and build strength. We are also here for body positivity and loving ourselves and our changing bodies through the journey. Shannon Rock, a talented photographer based out of Stockton, started a body positivity project to celebrate women and their bodies, and even embrace what makes them different. This is a new way of looking at ourselves, and it doesn’t rebuke the desire to grow, but it does place emphasis on finding acceptance and self-confidence, too. It has been one hell of a 2021, and we’re not too sad to say goodbye. So, let’s raise a glass and toast to a better 2021.

Sure, we said that last year (and the year before), but this time we mean it. It starts with optimism. Of the 50 plus percent of Americans who set resolutions every January 1st, people stick with it, on average, a measly 32 days. That’s pretty mediocre when you consider that it can take 66 to 254 days for some habits to take hold. What’s worse? According to the New York Post, one in seven Americans never really believe they’ll keep their resolutions in the first place and 52 percent of failed resolutions are blamed on a lack of self-discipline. Another 43 percent point to busy schedules. This year, set goals you’re motivated to achieve, build in incentives, and find what actually motivates you. Remember, the goals you set are to better yourself, but getting others involved can help hold you accountable and keep you motivated in that lull between the excitement wearing off and your goal turning into a habit.

COVID-19 held the power to decimate Stockton when it made its presence known in our community back in February. Shutdowns and restrictions as well as political unrest and demonstrations have led many businesses to not only shutter their doors, but to board up their windows, too. But COVID-19 is responsible for something else, as well. Back in November 2019, Isaiah Stowers, an eighth grade science teacher from Stockton and owner of Stowers Does it All, fell in love with running. But COVID took away his races, and as a result, Isaiah started running virtual events with a company

So, you got a little too excited to bid farewell to 2021 and finally welcome the New Year. Who could blame you? But before you reach for a bottle of Tylenol – or another bottle of booze – you should take a look at these common hangover myths.

MYTH: HAIR OF THE DOG
MYTH: LIQUOR BEFORE BEER
Shorthand for “the hair of the dog that bites you,” this would-be hangover cure references a once popular belief that you could cure rabies with a concoction made from the hair of the dog that bit you. Applied to drinking, the idea is pretty simple: just drink more! But this boozy iteration won’t do you too much good – not for long anyway. Hangover symptoms start when your blood alcohol content nears zero again, so by drinking more you are only putting off the inevitable, and that headache could return with a vengeance.
There’s no evidence that changing the order of your drinks will help you avoid a hangover. This myth likely originated from a basic understanding of how our bodies process alcohol. Since carbonated drinks like beer or sparkling wine can irritate the stomach, there is some evidence that they may be absorbed faster. However, more likely it’s a question of how much you drink, not the order of your drinks.
MYTH: POP SOME PILLS BEFORE BED You really shouldn’t. First, over-the-counter painkillers only last a few hours, so taking them before bed means they’ll have worn off before you even wake up. Second, and more importantly, acetaminophen (the active ingredient in Tylenol) becomes toxic when mixed with alcohol and can do some serious damage to your liver. Instead, wait until morning and then take Ibuprofen.
SO, WHAT WORKS? Truth is, once you realize you’re hungover, it’s too late to do much about it. Still, there are a few ways to avoid getting there in the first place. Alcohol does dehydrate you, but that is not the cause of your hangover, which means a bottle of water won’t cure it. However, drinking water leading up to and throughout the night can help you avoid a hangover. Same goes for food. Eating after drinking is good for one thing: killing those cravings. But if you want to “soak up the alcohol,” you’re better off eating before you start drinking. And the one sure fire way to avoid a hangover? Everything in moderation.

3 WAYS PLANKING BOOSTS YOUR MOOD THIS EXERCISE HAS THE POWER TO MAKE YOU HAPPIER BY NORA HESTON TARTE Feeling a little down? Especially in the midst of a pandemic, who can blame you? Luckily, there’s a fast way to give your mood a boost, and it only takes sixty seconds. Exercise in general is good for your mental well-being. Breaking a sweat, for example, releases endorphins. Jackie Kiegley, fitness and group exercise director at Twin Arbors Private Sports, says exercise is an integral part of happiness and can promote feelings of happiness. Exercise also promotes increased mobility and can reduce physical pain, all of which makes you feel better overall.

While exercise in general has mood boosting powers, there are reasons that planking—an isometric core strength exercise where people assume a position similar to the top of a push-up and hold it for an extended period of time—can bring some extra happy to your day. The position allows for muscles to stretch, ultimately helping to relax them. If you spend much of your day sitting, you likely notice stiff muscles throughout the body and holding a plank for as little as thirty seconds (and completing a few reps) can help those tired muscles find relief.

Accomplishment feels good. A plank is an exercise that is easy to use for tracking progress. If you’ve never done a plank before, or if you don’t exercise regularly, start small. Hold the plank position and focus on keeping the body in a straight line, without raising the booty up too high. At first, hold the position for just 15-20 seconds at a time and repeat the process three times per session. As core strength builds, increase time increments; one minute is pretty standard for holding a plank. From there, increase the frequency, duration, and/or repetitions. If this doesn’t feel like enough of a challenge, add weights. A partner can place a circular weight plate on the back to help promote muscle engagement and build strength.

A plank builds core strength. Your core encompasses your abs, back, obliques, and even arms and legs. A weak core carries a lot of penalties including poor posture, lower back pain, and more susceptibility to muscle injuries. People with a weak core are also more likely to experience fatigue and a lack of endurance. By strengthening the core, you can reduce pain and increase strength, making day to day activities easier—what could make you happier than that?

At 39 years young, Shannon Rock is a strong, confident, and successful woman. She is a proud business owner, a celebrated photographer, a partner in a thriving, loving relationship, a generous daughter, and a friend. However, this wasn’t always the case. Up until recently—and sometimes even still—Shannon has struggled with aging. “I am starting to grieve the loss of youthful beauty,” Shannon says. “I have been plagued with a terrible fear of getting ‘old’ because society rarely calls older women beautiful.” It’s not just one feature—it’s the whole of them. As women, aging doesn’t carry the same graces as it does for men. Our breasts may sag after childbirth, our legs get cellulite, crow’s feet appear, and our necks begin to wrinkle. Even the texture of our skin begins to morph in a way that signals an impending doom (thank you beauty industry!). “I can’t tell you how many times as a photographer I am asked to edit out these ‘imperfections’ and it breaks my heart,” Shannon says. Shannon, a former model herself, has started to feel the pressures of perfection in her own image. She has struggled to embrace the lines on her face, thinning hair, flabby arms for all the world to see every time she raises a camera to her face. And her same insecurities were echoed in the subjects of her photographs, women asking Shannon to edit them to look younger, more, dare we say, beautiful? “I so intensely have wanted to band together with other women and redefine what beauty really means,” Shannon says. It was that desire coupled with a chance meeting of a photo subject who had
recently undergone a breast implant removal after double mastectomy—she is now flat chested and scarred after 17 surgeries, but also beautiful, bold, and owning her unconventional, yet still womanly body—that jump started a passion project Shannon had wanted to pursue for years. (The subject’s name is Tara Heinzen, see the San Joaquin Magazine October 2021 issue for her full story). Tara’s story coupled with Shannon’s past, which includes an abusive relationship in her 20s that ended in a broken arm and a final awakening that proved to Shannon her worth, a childhood filled with ridicule and violent bullying that fed an unhealthy need to be liked by others, a lack of confidence inside of herself even as she pursued a career in the arts and dabbled in modeling, and a tragic and sudden loss of her father at a young age toiled together before it manifested into this revealing and empowering opportunity Shannon created for herself— a photography book celebrating new norms of beauty and the women who are fierce enough to speak out and speak up for those everywhere struggling to see their own worth and magnificence. Tara Heinzen is an artist. She’s also a breast cancer survivor—though she may buck that particular term—a woman, a proponent for body positivity, an entrepreneur, and a beacon for self-love and female empowerment. Tara, in a lot of ways, was always these things, but an experience with stage 0 breast cancer has influenced her life, her artwork, and her outreach for the past 8 years. Stage 0 is a term used to describe a form of non-invasive breast cancer sometimes without any detectable masses. For Tara, her own mother had suffered stage 3C inflammatory cancer, a type of cancer that causes inflammation, discharge, and pain without any detectable mass until it's at stage three or four. Tara tested positive for the BRCA1 gene and at age 35 began to have some of the same

and men who feel weakened by the pressures of society’s definition of beautiful, those who feel different about their imperfectly perfect bodies, or think that those wrinkles and signs of age aren’t stunning depictions of the wisdom you have, to be raw, to be open, and to declare, you are beautiful just as you are,” Shannon says.

STRENGTH THROUGH BATTLE
Many women struggle to accept themselves. Physical features, whether it’s the size of their nose or their body, a skin condition they were born with or a limb difference they obtained later in life, can threaten the very core of what being a woman is. It can also make women question their own beauty and desirability to others. But it seems that many women outspoken about breaking these norms have endured something deep and meaningful to find clarity, and through that fight they have emerged victorious and better than they were before. Tatum Turner was diagnosed with stage 2B breast cancer just before her 40th birthday, a diagnoses that took her mother when Tatum was just 14 years old. For 26 years, Tatum lived in fear of developing cancer. “Being a woman with breast cancer has shaped my idea of beauty because it can distort everything that society feels is beautiful,” she says. Tatum is African American, and like most ethnic women, she has dense breast tissue, which has been associated with a higher risk of breast cancer. Currently undergoing chemotherapy and with surgery on the docket, Tatum’s body is changing. She utilized cold cap services— a close-fitting silicone cap that cools the scalp during treatments— during infusion appointments, trying desperately to keep her hair. Throughout the years, with braids, perms, press and curls, weaves, wigs, and more, Tatum was very attached to her hair. But when it started coming out in long strands, she saw no other choice but to part ways with it. “One Saturday evening I discovered that I am not my hair and the weight
TATUM of my problems and strife left on that day,” she says. “All the worries and the trauma of being a dark skinned black girl left me and I felt inspired, light, redeemed, and happiness of just being me…. When my 12-year-old looked at me and said ‘Mama, you are so beautiful,’ everything that concerned me left and I was ready to rock my perfectly shaped head.”
Losing her hair was just one physical woe in a lineup of many. Tatum also has scars from infusion treatment and the medication has had unpredictable side effects from illness to mouth sores to depression. She’s developed boils. “The idea of being intimate is another whole story and challenge,” she says. Rebecca Nowak, too, was diagnosed with SJMAG.COM

REBECCA breast cancer. The diagnoses came at 31 years old when her third son was just eight months old. An attempt to fight the cancer naturally didn’t work, and she underwent numerous treatments for cancer that had metastasized to her liver, abdomen, spine, pelvis, and brain. She is currently cancer-free. As a result of her port, a necessity to receive life-saving drugs, Rebecca developed a pronounced scar near her collarbone. She remembers coming home from the hospital, not far from death. “I came home after nearly dying; very jaundice, skeletal, and sick looking. I said to my mom ‘I look so ugly,’” Rebecca recalls. Other moments of insecurity have crept in, too. But between three births and a battle with cancer, Rebecca reminds herself that her body has been through hell and back, and that is beautiful.

Anne-Allyce George was in her 20s when she noticed a tiny spot on her left hand. At first, she assumed it was a scar that would fade, but instead of getting smaller, it began to grow. Anne-Allyce had vitiligo, a rare condition where the skin loses pigment cells and creates the appearance of light-colored spots. Since Anne-Allyce’s skin was already pale, she didn’t feel the spots were too noticeable, until they began to pop up in new places. “The skin around my nails started to change (lighten), and I got a spot the size of a dime in the very center of my décolletage. That spot has grown to the size of a pear,” she shares. One of the most common reactions she gets from strangers is asking what methods she’s tried to fix her “spots.” Her response? Her vitiligo is nothing that needs to be fixed. While some women begin to struggle with confidence and physical beauty as they age or undergo a traumatic event, others’ experiences start young, and can be even more difficult to cope with. As a teenager, Shyla Pinkins attempted suicide twice. She was depressed, and as a full-figured African American girl, felt like she didn’t fit in. “I’d say I still struggle with being treated differently because of my body. I feel like it stems from stereotypes that claim that fat people are sloppy, smell bad, and just overall lazy. None of which I am,” she says. The bullying Shyla endured came from the usual suspects—kids at school—but she also felt judged by people in her life who should be lifting her up, whether it was intentional or not. As a child, Shyla hated doctor’s appointments. Her pediatrician pointblank would call her fat and recommend extremely restrictive diets to help Shyla slim down. Her grandmother once offered to pay her one dollar per pound she lost as encouragement to shed some weight, which made Shyla feel like something was wrong with her, even though she wasn’t in pain and didn’t feel physically ill.

Today, Shyla still struggles with being different, but now it’s more about how others treat her than how she treats herself, although her insecurities aren’t all in the past. Dating, she says, can be difficult, as she often finds herself friend-zoned. “I’ve been rejected many times, in many aspects in my life because of my size,” Shyla says. “I’ve been picked last and just flat out told I couldn’t do certain things because I couldn’t fit the outfits.” Constantly told she was too big to dress like other girls and that she should avoid short dresses, swimsuits, tank tops, and other feminine clothes based on her size, all of Shyla’s ideals surrounding beauty have been consistently challenged.
BUILDING CONFIDENCE
“Every time I turn on the television, open the magazine, or even browsing the internet, society’s standards of beauty tell me I’m not beautiful,” Shyla says. Over the years she’s been able to build confidence and practice selflove. “It has taken a lot of time, patience, and hard work to change my mindset. I still have to tell myself every day I am beautiful, I am loved, and I am strong.” Self-love is an ongoing journey for Shyla, and it isn’t a perfect one. She has her moments of feeling rejected still but focusing on her daily affirmations helps. She holds back criticism of her own body and replaces the negative thoughts with positive thoughts and ideas. “I do struggle with my confidence at moments, but I put my head up higher and make my back straighter and push through those moments,” Shyla says. After shaving her head, Tatum began to accept her new look. Bodies continuously change and with more treatment and surgery on the horizon, Tatum’s physical journey is far from over. She says learning a new body can be both depressing and liberating. “My ideals surrounding beauty have definitely changed because I feel so naturally beautiful and I feel like I’m so thankful to be just be alive,” Tatum says. “The extreme measure I took to find beauty seem shallow now and shedding the stress of what society places on women to be beautiful is no longer part of my regimen.” For Tatum, her ability to find peace in her evolving appearance is rooted in faith. Pushing negativity out is the key to inner confidence, as is the reminder to be gentle with herself. “I find comfort in myself and that’s the best confidence you can have because it’s hard to spend time with your worst critic,” says Tatum. Rebecca, too, donned a bald head. “I was bald-bald for a good five months,” she recalls. For her, it was the inability to blend in that made her feel self-conscious. She was rocking the bald look, all praise from those closest to her and sweet reminders of just how beautiful she was from her husband, but the new look was captivating, and everyone took notice. She had to get comfortable with not being able to blend in. In the beginning, Anne-Allyce says she was embarrassed by her changing skin. Her acceptance—now ten years in the making— wasn’t immediate. Eventually, however, instead of shying away from the attention her skin called to her, she began to embrace it.

“Once I realized that it wasn’t going anywhere and it’s what my skin was going to look like for the rest of my life, I didn’t feel uncomfortable anymore,” Anne-Allyce says. Most of her moments of insecurity stemmed from wanting to look like everyone else. The dreaded Instagram scroll would turn up photos of women with flawless skin, and Anne-Allyce would feel pricks of envy. The feeling, luckily, was fleeting. “I enjoy being different and having skin that looks like no one else’s,” Anne-Allyce says. “If you think about it, even others with vitiligo don’t have the same spots as mine. My spots are completely unique to me... that’s pretty cool!”
ACCEPTANCE
Accepting the path God chose for Tatum is one way she is coping with her ever-changing body and

bucking the attachment to those physical attributes she used to find so important. “You can rewrite your story and create your own definition of beauty,” Tatum says. Working on her inner self is most important now—that and focusing on her health. Instead of fighting the hair loss, the scars, and the side effects, Tatum has chosen to fight the cancer. She’s embracing her bold new look and seeing her bald head as a sign of beauty and resilience. “You can’t change your journey, but you can make it better.” Anne-Allyce learned to love her vitiligo by accepting it as part of who she is, and that’s the same tactic she applies to the rest of her changing body. Turning 30 triggered a lot of physical changes in Anne-Allyce—an idea most women are familiar with. “I find myself constantly longing for what once was. As time goes on, I look at past pictures of myself
and wish I looked the way I did last year or several years ago,” she says. Ultimately, she has chosen to focus on what’s inside to shine a light that will illuminate her outsides. Acceptance does not mean you will not struggle still; it doesn’t mean that your thoughts surrounding physical beauty are one hundred percent healthy and you’re cured from self-criticism, but it does mean you’re working to love yourself. “What makes me beautiful is all of me inside and out, from my kind and giving heart; my goofy, blunt, and opinionated personality; all the way to the outer me: my eyes, my lips, my size, and my big hair,” Shyla says. “As a woman you are always under pressure to be thin, to be pretty, to be stylish, to be nice, and to be everything for everyone at some point in time. It took me until recently to figure out what I like, what I think it’s beautiful, and that it’s okay for that to
be many different things.” While it’s important that selflove and beauty come from within, sometimes we need the support of others to pull ourselves out of a dark place or embrace a new image. Rebecca had always valued scars. On others she found them glorious stories of a life lived, so she didn’t struggle too much with the bold new accessory on her skin. Other ways her body changed, however, were a struggle, and the gentle reminders of her beauty from others—friends who said they liked her no-hair look, her husband’s reminders that he found her attractive, reassurance ¬-from her own mother—helped her accept her changing form and become comfortable in her new skin. Shannon, too, has learned to value her scars—both physical and emotional. Instead of letting them hold her back, she embraces them, let’s them make her better. She feels
pain every time she holds a heavy camera, something left over from the broken elbow that never fully healed. But Shannon won’t let the pain someone else gave her hold her back. It’s her message to the world that she can’t be stopped. Today, Shannon’s scars remind her to push forward. “I am strong, determined, and confident. Something I wasn’t before.” Shannon’s emotional scars are more prominent, echoed in the way she chooses to live her life every day, letting them humble her and expose perfection for the myth it is. She’s given herself her own scars, too—etchings to honor the pain of the past. These are her tattoos, one of which is prominent in her company logo; a semicolon to signal the emotional pain that comes with losing a loved one to suicide—in this case her father—and the survivors suicide leaves behind, like herself.

For Anne-Allyce, being a mother—her daughters are 11 and 7—Is another piece of the puzzle when it comes to self-acceptance. Much as people ask Anne-Allyce how she will fix her vitiligo, she wants her daughters to know that their differences are not something to be changed. She calls it a wildly necessary lesson for young girls. “You don’t need to be ‘fixed’ just because you look different or not ‘normal.’ You are who you are and that is beautiful!” Ultimately Anne-Allyce wants her daughters to grow up with the influences and resources to form their own opinions on everything, including beauty, and to embrace their own natural attributes may it be vitiligo or curly hair. “This is such an amazing time to raise a daughter because women all over the world are making history every day and showing my girls that there are no limits to their potential.” While cancer changed Rebecca’s outside, it also gave her a new perspective on life. Her insides, perhaps, morphed even more. “It’s made me more thankful for life, health, relationships, motherhood,” Rebecca says of cancer. “It’s made me more empathetic and intentional about loving others. I can be a barer of hope and encouragement to those that may be facing the scariest thing in their lives.” Shyla sees the merits of Shannon’s project. She hopes Redefining Beauty will become a source of self-love and acceptance for other women struggling with their physical appearance. “I will tell other women... honey you are beautiful in any size and if you can’t see that, you need to open your eyes. Love yourself, every inch and every pound. Love yourself now because tomorrow isn’t promised.” “Over the course of the next year, I will be looking to uplift and showcase courageous people of all genders, colors, backgrounds, and sizes. I want to raise awareness and change the face of beauty in this world,” Shannon says. It was originally her goal to focus the project on women and the harsh beauty pressures we face, but through development, Shannon has decided to incorporate stories from men, transgender individuals, the LGBTQ community, and more. Her goal is to produce eye-catching photo spreads accompanied by personal stories that redefine what it means to be beautiful in today’s society for everyone, and to help people find the acceptance she has found, and is still pursuing, in her own journey.

Winter may have most running indoors to give into the hygge lifestyle, but if you have adventure in your heart, January offers a swell of outdoor activities for those that won’t let a little rain get them down. On the Central Coast, along Highway 1 Discovery Route, the temperatures stay moderate even in winter, and outdoor excursions don’t shut down for the season. Plus, local businesses cater to the cozy with fireplaces and comfort food. So, take a drive down the scenic coast and dive into a world full of excitement.

LOS OSOS/BAYWOOD After you cruise into town, take it easy. The small communities of Los Osos and Baywood are your oyster, brimming with gorgeous views of rugged bluffs and the roaring Pacific Ocean. Stretch your legs at Sweet Springs Nature Preserve, a halfmile trail winds around a river and ends at the Pacific Ocean. Along the way there is plenty of wildlife, including great horned owls, deer, California quail, and more, plus plaques boasting educational tidbits about the preserve. After you snap some photos, trek back to your car for a bite to eat. The parking area for Sweet Springs Nature Preserve is on the corner of Ramona Avenue and 4th Street
Noi & Doi’s 2nd Street Café is an unsuspecting gem. Situated near the water, the small eatery offers a patio by the Avila Boardwalk as well as take out when indoor dining is closed. If it’s chilly, grab goods to go. The Asian grub ranges from seafood stir fry to rice and protein dishes. If you’re looking for something a little easier, we recommend the tuna melt—a classic done extremely well. Avila Beach
AVILA BEACH Just north of San Luis Obispo sits Avila Beach, a modern coastal town tucked into the curve of the San Luis Obispo Bay. Right on the water, Avila Beach Paddlesports, offers kayak and stand-up paddleboard (SUP) rentals. Staff give you a quick rundown before launching you off the dock into the ocean. We recommend paddling yourself down to the Port San Luis Lighthouse. The route will take you out amongst a gaggle of adorable, fuzzy sea otters before looping you under the dock (past a rowdy group of sea lions) and along the bluffs, where you’ll spot giant rocks decorated with entire families of pelicans that will take off if you get too close. In the distance you’ll see a small beach. Up the steps and along a paved path you’ll quickly reach the lighthouse, as well as a wooden tree swing that sweeps you out near the ocean, before trekking back to the shore. After a morning on the water, explore the Bob Jones Trail. A five-mile, roundtrip walk, mostly shaded by a sycamore forest, will take you past a tidal estuary, Woodstone Market, and downtown Avila Beach. Break up the (approximately two hour) journey by pausing at Woodstone for lunch and a glass of wine. Start from the Ontario Road parking lot. Even in the colder months, Avila Valley Barn beckons families, couples, and friends to spend an afternoon on the farm. There are often hayrides and pony rides (though those have been temporarily suspended) as well as fresh barbecue food, a fruit stand, and sweet shoppe. A highlight of time spent on the Central Coast’s southern stretch is a hike along the ocean bluffs at Montana De Oro State Park. There are several routes to take in the area, but if you’ve never been, we recommend the Bluff Trail. The 3.4-mile out and back path follows rugged coastline along a flat trailhead, winding along coves and offering stopoffs to walk down to the beach where you’ll find lively tidepools. There is no shortage of wildlife here, and the animals don’t come across shy, often hopping right next to the trail as if they are observing you. After a leisurely stroll, it’s time to check in at your accommodations
for the night. The Bee’s Knees Fruit Farm is a farm stay unlike any other. It’s best to fuel up before visiting the area’s rural wineries. Stop by Moxie Café for a hearty lunch of sandwiches, salads, and more. Tucked away on an industrial stretch, the service is unparalleled, and a long patio offers plenty of seating for guests. Tracy Thai has long been a family affair. “I grew up in the restaurant business, it’s just in my blood,” says Gesaranee, who goes by Gesa, the friendly face and co-owner of Tracy Thai. “After graduating with my business degree, I realized that I really enjoyed what I grew up doing and decided to help run the family business. At the center of Tracy Thai’s magic formula—the one that has kept the Asian eatery in business for 14 years—is the cuisine. “Thai food is very fresh, nothing is preserved,” Gesa says. “We cook with a lot of vegetables and use healthy ingredients like garlic, ginger, lemongrass, SJMAG.COM

cravings and fresh herbs to flavor our food.” Those ingredients lend themselves to a healthful menu, one that can boost the immune system and promote overall well-being. It’s all in the ingredients. Lemongrass is an herb that gives off a citrus like scent and is thought to have antioxidant properties, as well as work as a natural fever reducer. Tamarind comes from a pod and is made into a paste. When used in cooking, it imparts a sweet and sour flavor. Its many health benefits include digestion assistance. Ginger is a spicy root that adds a warming element to food. It is thought to soothe the stomach and possess anti-inflammatory properties. All three of these ingredients are found often in Tracy Thai’s cuisine— helping customers feel good while they eat well. When it comes to lunch, Gesa recommends starting with the Grilled Prawns, her personal favorite, featuring jumbo prawns marinated in coconut sauce and grilled to perfection, followed by the Tracy Thai Salad, a refreshing salad made with lettuce, tomatoes, red onion, and a house made
basil dressing, before finishing with the Wonton Soup, cooked with homemade chicken dumplings, bok choy, spinach, carrots, chicken, and shrimp, sizzled in a warm chicken broth. For dinner, there are too many good options to only choose one. If you are in the mood for something comforting, the Pad Thai is delicious—classic rice noodles sautéed with bean sprouts, green onion, tamarind sauce, and your choice of beef, chicken, or prawns. Yellow Curry is another customer favorite made from scratch with potato, carrot, onion, chicken, yellow curry powder, and coconut milk, and served with the customer’s choice of jasmine, white, or brown rice. But if you’re in the mood for poultry, Gesa recommends ordering the Basil Chicken. This flavorful meal is served with sautéed chicken, bell peppers, yellow onion, basil, and house made garlic chili sauce. And you can’t go wrong if you order the Garlic Pork, marinated pork sautéed with garlic pepper sauce and served with a dried chili. All of the sauces at Tracy Thai are made in house and really take

the flavors of the food to the next level. Sweet and sour sauce comes with most of the appetizers, ginger sauce is served with crispy duck, and Tracy Thai’s famous sweet chili sauce is served with chicken, calamari and grilled shrimp dishes. For customers who don’t eat meat, the garlic tofu, crispy tofu sautéed with garlic pepper sauce, is a very popular option. Or, if you’re an eggplant lover, that’s on the menu, too! If you’re looking to accompany your meal with a fun, fresh cocktail, Gesa recommends her own concoction—the Phoenix. The pretty purple sipper is made using Lychee puree, vodka, pineapple juice, and fresh lime, served in a martini glass. Regardless of what you order, your experience at Tracy Thai is sure to make you feel right at home. “I love seeing my regulars come in; knowing people by name,” Gesa says. “This is like their kitchen at home. It’s beautiful to me.”

“The most popular thing on our menu is the Papaya Salad,” says Gesa. “It’s something we eat a lot in my culture and family.” This customer favorite is served with lettuce, carrots, tomato, shredded green papaya, peanuts, lime juice, fish sauce, and freshly grilled prawns. If you’ve never had green papaya, Gesa describes it as crunchy and flavorless; taking on the flavor of the sauce it’s in while elevating the texture of the dish.

Cut Polenta into rounds, about ¼-inch thick Pat the polenta rounds dry with paper towels before frying to help with spattering. Fry the polenta rounds in olive oil until slightly brown and crispy along the edges; let drain on paper towels. Cut the polenta rounds into halves. Top with a dollop of crème fraiche and caviar. Garnish with chopped chives.

The masterminds behind High Water Brewing, Inc.—Steve and Barri Altimari—are turning out an exciting menu of sippers using their line-up of flavorful beers as the base. “One of the big driving forces in why we were pursuing beer cocktails was for us to expand the available types of drinks and use our beers to enhance the flavors of some of the standard cocktails,” says Steve. Beer cocktails aren’t exactly new, but they are trending. In addition to the mainstays like the Michelada and Shandy, High Water is working with flavors like raspberry, cranberry, lavender, grapefruit, and violet, to make beer cocktails with more edge. The results are some refreshing and complex drinks like the B&B Spritzer with Violets and Lavender made with #FUBAR2021 Sour Beer, Abe’s Famous Michelada featuring the Cucumber Kolsch, Ramble on Rose Spritzer created with Ramble on Rose Sour Beer, and Mother Gose Missing Raspberry Lemonade, which uses a base of High Water’s Raspberry Gose. What sets High Water’s drinks apart is they don’t mix additional alcohol in—the beer speaks for itself. The duo makes it easy to enjoy a beer cocktail. Simply step into the tasting room and order one up. Barri doesn’t rest, constantly turning out new mixtures to indulge. They’ve also included recipes to two favorites below, so you can pick up the necessary ingredients—including beer from High Water— and mix up your own at home.

MOTHER GOSE MISSING RASPBERRY LEMONADE High Water Brewing’s Raspberry Gose blended with housemade raspberry lemonade and raspberry-cranberry juice. Garnished with fresh cranberries. INGREDIENTS:
4 oz. Mother Gose Missing Gose Beer 2 oz. sweetened fresh lemonade 2-1/2 oz raspberry-cranberry juice
ABE’S FAMOUS MICHELADA Cucumber Kolsch blended with Abraham’s Picante Clamato Juice and fresh citrus. Served with a tajin rim and garnished with a green olive, pepperoncini pepper, cocktail onion, housemade pickled carrot, and a lime wedge. This cocktail is named for Abraham Lara, the High Water Brewing bar manager and co-conspirator in the Beer Cocktail program. INGREDIENTS:
4 oz. Cucumber Kolsch 14 oz. Clamato Juice 1 oz. fresh squeezed lemon juice 1 oz. lime Juice Worcestershire Sauce, to taste Tabasco, to taste Ground black pepper, to taste Tajin powder Choice garnishes DIRECTIONS:
Mix Juices and season to taste. Wet rim of 16 oz. pint glass, dip rim in Tajin Powder to coat, and fill with ice cubes. Pour beer into glass, top with clamato juice blend, and garnish with choice ingredients.
DIRECTIONS:
Place juice in 16 oz. pint glass with ice cubes, add 4 oz. Mother Gose Missing, and top with 2 oz. of lemonade. Stir and serve with a straw.

SAVOR SWEET POTATOES BY SUZANNE LEDBETTER
When the frosty winter winds arrive, we all turn to comfort food. But with the new year and new fitness goals, sometimes healthy comfort food is hard to come by. But fear not, because sweet potatoes are the perfect staple to add to your pantry. Mildly sweet, creamy, and packed with flavor, these root vegetables are what many dieticians call a superfood! Did you know sweet potatoes contain more potassium than a banana and are low on the glycemic index? This means the carbohydrates digest slowly and don’t spike insulin levels. They are loaded with essential nutrients, high in fiber, and fat- and cholesterol-free. And here’s a little-known fact, purple sweet potatoes have more antioxidants than blueberries! Be sure to give sweet potatoes a chance this winter. Incredibly versatile, they can be boiled, baked, broiled, grilled, steamed, sauteed, and pureed. Sweet potatoes make a tasty addition to a piping hot bowl of green coconut curry, winter salads, soups, and even desserts.
TAHINI ROASTED SWEET POTATOES INGREDIENTS 4 lbs. medium sweet potatoes 2 c. plain whole milk Greek yogurt 1 4 oz. package pancetta 2 tsp. orange zest 2 tbsp. sunflower seeds 2 tbsp. pumpkin seeds 1 tbsp. hot honey 4 tbsp. tahini ¼ c. lemon juice 1 garlic clove crushed 1 c. mint leaves 2 tbsp. olive oil Jacobsen Sea Salt

DIRECTIONS Preheat oven to 400 degrees. Toss the sweet potatoes in olive oil and sprinkle with sea salt on a foil-lined baking sheet. Roast, turning once halfway through, until tender, approximately 55 minutes. Remove the potatoes form the oven and let cool. Increase the oven temperature to 450 degrees. Roast until browned and crispy on the edges for 25 minutes. Meanwhile mix yogurt, tahini, chile, orange zest, lemon juice, salt, and garlic in a small bowl. Garnish with hot honey, sunflower seeds, pumpkin seeds, and mint.
SWEET POTATO AVOCADO TOAST INGREDIENTS 2 medium sweet potatoes 2 avocados 1 tbsp. lemon juice 1 pinch sea salt Pepper to taste ¼ c. crumbled feta 2 tbsp. dried cranberries
DIRECTIONS Cut the sweet potato lengthwise into ¼-inch slices. Toast in a toaster, (you will probably need to do this twice) or in a toaster oven for ten minutes. Add the toppings of your choice and sprinkle with a pinch of sea salt. **Alternative Toast Toppings • Peanut butter and honey • Crème Fraiche and raspberry jam • Almond butter, apples, coconut flakes, and cinnamon
SWEET POTATO GNOCCHI INGREDIENTS 1 large sweet potato 1 ¼ c. flour ¼ c. ricotta cheese 1/3 c. parmesan cheese ¼ tsp. nutmeg 1 tsp. + ¼ tsp. salt 4 tbsp. butter 3 large sage leaves 1/ 8 tsp. black pepper
DIRECTIONS Fill a large stockpot with water and add salt. Peel a large sweet potato and place in pot. Bring to a boil. Cook for 20-25 minutes or until tender when stuck with a fork. Meanwhile, in a mediumsized mixing bowl, add flour, nutmeg, ricotta, and salt. Remove the potato and
submerge in an ice bath. Once cooled, grate, using the large holes of a grater. Add one cup of the sweet potato mixture and add to the flour mixture. Stir until a dough is forms. Gather the dough into a ball and knead for two minutes. Divide the dough into four equal portions and roll each ball into a long rope, about 18 inches long. Cut each rope into oneinch pieces. Bring a medium pot of salted water to a slow boil. In a medium-sized saute pan, add butter over medium heat. Add sage, pepper, and ¼ tsp. of salt. Meanwhile, add 25 pieces of gnocchi at a time (approximately ¼) into the water. Cook until floating, two to three minutes. Strain gnocchi and add to a bowl, pour over butter sauce, and enjoy!
