I’ve never been one to make New Year’s resolutions… probably because I’m the last guy who would ever stick to one. It’s not that I don’t strive to improve myself with each passing year—I think we all try to do that to some extent. (In fact, this month’s editorial is in support). It’s more the all or nothing principle behind these annual pressure-filled promises to be perfect that I can’t seem to get on board with. If you miss one day at the gym or let yourself have even the tiniest slice of your kid’s birthday cake, it’s as if you’ve officially fallen from grace and been cast into the darkness and shame with all of the other resolution breakers. To me, change of any kind should come as most things do – in due time and with moderation. So this year, don’t try to be perfect because we all mistakes. Instead, focus on becoming better—a better parent, a better spouse, a better boss, a better person. In that pursuit, don’t forget to keep having fun and enjoying life. Take the family on a trip or do something nice for yourself (like booking a destination relaxation getaway at one of our featured spas). Whatever you choose to do, stay positive and always remember that each new day brings another opportunity to start fresh. I will leave you with a passage from award-winning author Neil Gaiman that sums up my hope for all of us this year: I hope that in this year to come, you make mistakes. Because if you are making mistakes, then you are making new things, trying new things, learning, living, pushing yourself, changing yourself, changing your world. You’re doing things you’ve never done before, and more importantly, you’re Doing Something. So that’s my wish for you, and all of us, and my wish for myself. Make New Mistakes. Make glorious, amazing mistakes. Make mistakes nobody’s ever made before. Don’t freeze, don’t stop, don’t worry that it isn’t good enough, or it isn’t perfect, whatever it is: art, or love, or work or family or life. Whatever it is you’re scared of doing, Do it. Make your mistakes, next year and forever.

LAST THOUGHTS CHEERS to 15 Years! It’s crazy to reflect on San Joaquin Magazine’s life. I began this publication because I felt there was no real way for people to find out what was happening in their city. At the time, the only local news source was the Tracy Press and local businesses only had the Penny Saver and the Stockton Record to advertise in. Having been a graphic designer since age 17 with a ton of experience in print publishing, I thought, “I’m going to come up with a Tracy guide where people can find out what’s going on all over the city.” With that, Inside Tracy (today’s, San Joaquin Magazine) was born. This month’s article stressing the importance of blood donation really go me thinking. I guess I’ve never considered what a large impact the act indeed makes. “Every two seconds, someone in the United States needs blood,” says Annie Havens of Delta Blood Bank. And in 1947, two Stockton women found themselves among this staggering statistic and tragically passed due to lack of available blood. “They were the impetus for a local blood bank,” Annie notes. “It was felt that both lives could have been saved had blood been available for transfusion.” Just one year later Stockton Regional Blood Center (today’s Delta Blood Bank) began operating as the port side city’s first blood bank, in

support of all San Joaquin residents. And today, they serve a five-county area including San Joaquin, Stanislaus, Tuolumne, Calaveras, and El Dorado counties—under the umbrella of the American Red Cross—and partner with 11 local hospitals. The powerful act of blood donation may seem small as you sit there with a cotton swab taped to your arm, munching a cookie. But the significance of the ten-minute act can potentially save multiple lives. “Honestly, I just looked into it. I became more aware of how much it helps people and thought that was a great way to give back,” Bill Swanson says of the reason fueling his reoccurring, pre-scheduled donations. “I worked at Linden High School— where my kids attended—and they were doing a blood drive. That day I gave my first pint.” To date, Bill has donated 45 gallons to the Delta Blood Bank. Bill’s blood—along with the blood of 18,728 other residents that have donated this year—is collected at the seven donor centers and multiple mobile drives throughout the region. It is then transported to the bank’s lab to be processed and distrib44

uted. “Testing is performed on blood samples sent to a national testing laboratory in Portland, Oregon and the results are electronically communicated to indicate when the blood and platelet units are ready for distribution to hospitals,” Annie explains. “A sample of each unit undergoes 13 different tests for infectious diseases and platelets also undergo bacterial testing during the process.” After receiving the green light, blood is sent to local hospitals (like Dameron, San Joaquin General, Doctors Hospital, and Lodi Memorial), to save the lives of mothers, fathers, children, and friends that make up the approximate 33 percent (1 in 3) of us who will require blood at least once in our lifetime. “And with access to a national inventory management system, blood and platelet donations can also be sent to where the need is greatest, such as areas impacted by natural disasters and tragedy,” Annie adds. The need for blood will never end. As communities grow, as accidents happen, as people are diagnosed with disease, and as babies are born—access to un-substitutable, un-manufac-

turable blood will save lives. Yet, less than 10 percent of eligible donors across the nation choose to use their good health to save another’s. “Not everyone can donate,” notes repeat donor Sheldon Barr. “They get sick, or pass out, and can’t work for a couple days. But for all the people that can…. If you’re able to and don’t…. I think that’s criminal.” Consistently donating since 1971, Sheldon shares the same blood type with only nine percent of the population. As only one in 12 people have B Positive blood running through their veins, the importance of Sheldon’s year-to-date donation of 65 gallons is vital. “They need this blood for babies, for people with autoimmune deficiencies,” he continues. “The act takes basically no effort, but it helps a lot of people.” Volunteer donors truly give the gift of life to trauma patients, the chronically ill, and 1 out of every 7 hospitalized patient. Sharing your time and health with another deeply impacts our direct community, assists in times of natural disaster, tragedy, and every-day happenings.

When parents at Stockton Unified School District brought forward their concerns about bullying, staff didn’t hesitate to put a plan into action. action. Parents learn how to detect a problem, how to determine if a scenario classifies as bullying, and what channels to use to confront the issue. “As a parent you want to be protective,” Kennetha observes. However, it’s important parents do not approach other students or their guardians alone. Instead, counselors can help mediate a successful conversation. Kennetha says so many times parents come to the trainings and discuss conflict, not bullying, and they don’t realize the difference. They don’t know what bullying looks like, especially in the digital age. “When we talk about bullying we’re talking about a progression of behavior or an imbalance of power,” Kennetha says. “Bullying means everyday I see you there is an issue.” Conflict, on the other hand, is a standalone event. Bullying at SUSD doesn’t

wear one mask. “I think we see things, you know, with teenage girls,” Kennetha says. Girls who fight over boys or call each other nasty names over social media. Studies have shown that the most common types of bullying are verbal and social bullying, and that bullying is most common amongst middle school students (StopBullying.gov). Usually bullying represents an internal conflict. A child doesn’t wake up one morning and decide to start bullying another student for no reason. There’s a change in behavior that parents, if trained, can see. And it could prevent the bullying from starting or progressing. “This training provides parents with understanding,” Kennetha explains. “I think most of the parents who actually come are parents who want to be aware, parents who are actively engaged in their student’s education.” Bully incidents at SUSD have plummeted over the past three years. As of last spring, bullying was not among the top three social concerns of students, according to a student leadership survey of both elementary and high school students. Three years ago it was the number one concern.

It took two months for Stevens and her colleagues to morph parent concerns into a parent training class held at both the school and district levels. It became part of SUSD’s parent involvement platform, a three-year-old initiative that offers 27 parent training topics each year. The bullying trainings have been a part of the program for two years. “We really want parents to be engaged and aware,” Kennetha says. “Schools can’t do it alone. It must be coupled with what’s happening in the home.” Not only do the training sessions allow parents to voice their concerns about bullying, it provides them a way to take

MEDITATION 101 REACH GOALS WITH SELF-BELIEF AND VISUALIZATION  BY LINDSEY RODRIAN

We all know the saying, “New Year, New You”. As we welcome 2017—and follow social norms that induce self-inventory—I ask, who do you want to be? Is your “new you” more focused, positive, and happy? Does she nurture positive social connections, overcome impulses, and take care of her body? If these questions have you envisioning a different version of who you are today, I encourage you to translate that thought into reality. The ancient practice of meditatio swept the continents, influencing many religions before making its way into Western culture. With thousands of respected studies supporting the mental and physical benefits—like decreasing depression, increasing grey matter concentration (areas of the brain involved in learning and memory, regulating emotions, sense of self, and perspective), enhancing the brain's ability to generate gamma waves, reducing blood pressure, and the risk of heart disease and stroke—giving this practice a try seems to be a no brainer. So, we sat down with Kim Ruiz, Spiritual Healer and owner of The Healing Spot in Tracy, for some beginner’s tips.

Set up shop. Kim encourages both newbies and veterans to create a mediation spot within their home. “Make the space warm and beautiful, with low or natural light. Gather up things that make you feel good, like stones, unscented candles, flowers and a Himalayan salt lamp. If you aren’t planning on practicing on the floor, get a comfortable chair that allows you to sit upright.” Turn off and tune in.When you’re ready to begin, turn off all electronics or remove them from the room. Find a comfortable location to sit or lie that allows your arms and legs to be uncrossed, with a hand 48

placed on each leg. “And then, just breathe naturally,” Kim says. “Don’t make an effort to control your breathing, but just be aware.” Now comes the most difficult part: quiet your mind. (Kim notes this aspect proves most difficult, and if you feel you’re struggling, practice sitting still and silent for five minutes a day until you’re able to quiet your thoughts.)

Get it right and get it tight! Pilates works your core (or as they say in the practice, your powerhouse) like no other, can relieve back pain, puts minimal strain on your body, and some even say it seriously improves sex life. Take a mo-

ment to familiarize yourself with Pilates’ main principles—to get the most out of your experience—before you swan dive into your first class. Concentration Focus on your body and the movements you’re making. Pilates is not a race to the end, it’s instead a slow, powerful dance. Strengthen your mindbody awareness with slow and precise practice. You’ll get so much more out of your workout if you keep your body in check to ensure good form and posture. This constant connection goes beyond physical benefits, as your concentration quiets your mind from any distraction, entering a meditative state!

Control These may seem slightly repetitive, but really they’re intertwined. Instead of high intensity or repetition, Pilates calls for precision to gain maximum benefits. So get that level of concentration—and centering of your powerhouse—under control.

Centering Let’s get back to that powerhouse I mentioned earlier (your core). As you move throughout each exercise, be sure to keep your core in check. If your powerhouse is tight, all of your body’s muscles will function and develop more efficiently.

Breathing Take deep exhalations as each exercise is performed. Pilates’ practicers believe this helps to activate your muscles, while also keeping you concentrated and controlled.

Precision As with any muscle-memory fueled routine, you won’t walk into class nailing every pose with effortless form and grace. You may not even be able to keep up with the pace. But that’s okay! Instead of rushing to stay with the group, take time to understand each movement and ensure that your body is in the right spot. Proper form is key, and focusing on form from the get go will ensure that once your muscles hold that memory, it’ll be the correct one.

Flow I know that I literally just told you not to expect grace and form right off the bat, but that is in fact your end goal. As you move from each exercise, try to hone in on your inner ballerina and smoothly transition—of course, only once you’re sure you’ve nailed the proper position.

THE NATION'S BEST BATON TWIRLERS COMPETE AT STOCKTON ARENA JANUARY 13 - 15 Tap along with the tempo, ladies and gentleman! This year’s internationally attended baton twirling championship is back in our Stockton county seat. Checking in at Stockton Arena, a plethora of competitors from across the U.S., Japan, Australia, and England will test their athleticism, endurance, and skill.

The art of twirling dates back to Eastern Europe and Asia, where festival twirlers practiced with knives, guns, and other various instruments. Spreading across the world, it was incorporated into military drills and marching bands, before transforming into the baton practice we know today. As its popularity grew, leaders of twirling organizations across the globe joined to form the World Baton Twirling Federation in 1977,

setting in place a standard for regulations and competition categories. This year’s Pan Pacific Cup boasts solo acts involving 2-baton, 3-baton, and artistic twirling. Artistic pairs, teams, and group events elevate the sport further. Because twirling involves a vast amount of concentration, stamina, and dexterity, athletes must hone their routine to follow through in every maneuver. Each flip and

toss must take them closer to that perfect angle at the precise moment when they will catch their baton from its plummet. Local Baton Twirlers Baylee Pine, Julia Sawin, and Emma Sawin were delighted to share their thoughts on the upcoming event and a bit of background in their competition categories! “I am excited to be twirling at Pan Pacific. I can’t wait to see and meet twirlers from other countries,” Baylee comments, ready to compete in Solo, Dance Twirl, and 2-baton. “I practice anywhere from 5 to 20 plus hours a week. All of my coaches live out of town so I practice on my own along with coach taught lessons.” Having faced injuries last April, Baylee is thrilled that her recovery has allowed her to continue training for the Cup. “I look forward to seeing athletes from other countries that share this unique sport with me.” Julia Sawin explains, participating in Solo, 2-baton, and Dance Twirl, along with pairs. “To me, this is like a mini Olympics, competing with some of the very best so I know it will be rewarding and challenging.” Emma Sawin, competing in Solo, Dance Twirl, and Strut, is thrilled to showcase her skills where friends and family can come and watch. “This is a very cool experience and it is so close to my house which is why it is so special. I feel very lucky to get the opportunity to compete in something like this.”

ONE DAY AT A TIME, ONE GIRL AT A TIME

PROJECT GIA “It takes a lot of audacity to change things—and I’m just that audacious, I guess,” Mariah Looney proclaims. It’s one of the few times she’s stepped into the limelight during our conversation, preferring to praise Sabrena Hernandez, Seidy Gastelum, and Monica Patel, her equally incredible board members, seated around her. But these are the words of a young woman whose reach has extended her organization across social media platforms to garner over 1500 followers on Facebook alone. This is the founding voice of Project Gia. Project Gia, also known as Project Girls In Action, is a growing organization born in San Joaquin that empowers, and provides direction to local resources, for young girls ages 12 to 18. It began as a lunchtime discussion with Mariah’s professor. But after Mariah’s mother’s passing, she leapt headfirst into creating the project with a Facebook page that opened in January 2016 and a website that launched in July of the same year. “We started meeting with local business owners and organizations that believe in us,” Mariah states. “We went from just a Facebook page to a community of almost 2500 people on social media. And people message us asking to volunteer!” “The community has helped shape a lot of what Project Gia is becoming,” Seidy elaborates. “It hasn’t just been us. And we’ve met with other women, more established women, who have steered us.” “We’re always willing to sit down and meet with people who are interested in helping or have ideas or a business that they want to connect us to,” Sabrena adds. “We’re always open to meeting with people.” Although Project Gia’s primary focus is to promote young girls online,

the group hopes to expand their reach into classrooms, teaching students about online dangers. “Social Media is such a key thing in our time right now,” Monica points out. “Everyone’s on it, everyone’s using it, and I’ve seen a lot of cyber bullying.” “We hope to hold workshops teaching girls and kids in general that you have to protect yourself on social media,” Mariah points out. “You have to know how to use it in the right way. Kids don’t realize that what they post up might influence their career.” The program is continuously evolving through the board of directors and their junior counterparts, whom are in the age

range the program is directed toward. The junior board helps to tailor the program into exactly what young woman need, keeping Project Gia looped into the current issues young women face. And as the program expands, so will its ambitions. “Stockton needs this,” Mariah says. “We’re not thinking that we’re going to change the world, we’re thinking we’re going to change one girl at a time.”

Many properties in herbs can support our heart health—increasing efficiency of function, strengthening the heartbeat, and normalizing the heart rate. Herbal, cardiovascular remedies are typically divided into two groups: cardiotonics and cardioactives. Cardiotonics (hawthorn berry, motherwort, gingko, garlic, linden, and others) should be taken long term and act as an overall heart hug as they improve heart rate and rhythm, and decrease palpitations and blood sugar. But, if it’s a dramatic effect your heart desires, turn to cardioactive herbs—like lily of the valley, purple foxglove, Scotch broom, and squill—that lessen the heart's work load. We unconsciously breathe in and out throughout the day. I invite you now to focus on your breath and take a big inhale and exhale. Did your chest rise and your belly pull in? If so, you’re breathing only from the top lobes of your lungs. This is a reality for many, because as we age (or feel stressed), our breath becomes shallower, and we tend to use less of our lung potential. Shallow breath can negatively influence the body’s overall physical and emotional well being, including cells, nerve functions, circulation, digestion, and muscle action. From asthma, to a sinus infection, or just overall function—our respiratory system seriously impacts our overall health. Many herbs can be used to treat illness, congestion, or relax or stimulate the entire system! Break up seasonal phlegm with Mucolytics like aniseed, cayenne, fennel, and angelica. Support your lymphatic system and swollen glands with echinacea, blue flag, poke root, and red clover. Soothe and protect from inflammation with licorice, marshmallow, and slippery elm. Yum!

SUGAR RUSH! I’ll be the first to admit it: I have a problem. If there’s a bundle of baked goods brought into the office, I’m breaking down the door to reach ‘em. I can’t go out

for lunch because the closest dining location is a bakery. (I'm looking at you, Corner Scone.) And heaven forbid if the Boss is in town, because the whole gang’s going out to lunch at least one day out of the week. At that point, I have to look down at my love handles. And honey? Let’s be honest, those hips don’t lie, either.

And neither do the facts. Sugar is one of the leading culprits to obesity in the United States, which has conquered one in three people in our country. Two out of three people are considered overweight. Those numbers don’t bode well, and neither does the toll sugar takes on your heart health, teeth, and immune system. Trust me, those trips to the kitchen add up! But how exactly does sugar add up to weight gain? Simple. Although your body uses sugar as energy, excess sugar is converted into fat and stored throughout your body. Those love handles aren’t so lovely anymore, are they? And it’s all due in part to that extra cookie, candy bar, and even, yes, that bottle of juice you’ve been using as your “healthy” snack of the day. Thinking of going cold turkey? It may be harder than it sounds. Sugar is like that Ex you just can’t help falling back in love with. Sugar triggers the same pleasure centers in your brain that serious drugs like cocaine or heroin do, which makes sense as to why it’s just so hard to quit! Trust me, many a foodie has fallen prey to serious sugar withdrawals, myself included. So what can you do to destroy this terrible relationship? Just say no to sugar! Yes, those withdrawals aren’t fun to deal with, but neither is the huge list of problems you’ll have to endure if you don’t make it over the hill! Our advice is to clear out each and every sweet temptation you’ve been storing in your house, opt for fruits when you need a “fix” and shout your newfound strength from the mountaintops! Because, when you’re reaching for that cupcake, it’s pretty damn hard to take a bite while friends and family watch you break your solemn vow.

Taking the silver medal for largest producer of cheese in the country, we churn out more than 250 different varieties, two of which call our ocean-side state home! Monterey Jack’s origin story started in the missions dotting California, and I’m sure you can guess how San Joaquin Gold got its name. As you can plainly see, Wisconsin isn’t the only state brimming with Cheese Heads! The addicting flavor populates the hearts of cheese makers across our Golden State. And because our unique cheese trail runs straight through our Central Valley, we just had to have a chat with a few of these local crafting experts! Read on and discover how some of your favorite blends made their way onto cheese platters, party plates, and more. Every journey must have a beginning, and ours starts with milk! Although several unique blends (ready to try reindeer, moose, or camel?) are developed into cheese across the world, California typically works with cow, goat, and sheep. How the milk is handled throughout the process impacts how strong, or mild, the cheese will be. “We handle the milk as gently as possible and chill it quickly after milking,” Owner of Lodi’s Spenker Artisan Creamery LLC, Betty Ann Spenker, says of their creamy chevre. “Attention to detail keeps the milk from acquiring that objectionable “goaty” flavor, and our goats produce milk high in butterfat, which makes it extra creamy.” Cheese makers that outsource their milk, like Oakdale Cheese and Specialties, team with local dairy farms that produce specifically for cheese making. Others—such as Nicolau Farms in Modesto, Fiscalini Farms in Salida, and Stuyt Dairy Farmstead Cheese Company in Escalon—boast onsite dairy production. produced,” says Walter Nicolau, of Nicolau Farms. “We label our goat cheeses as artisanal farmstead and we label our mixed milk cheeses as artisan.” The milk, either delivered or produced on property, is sent into large holding vats which act as catalysts in all cheese crafting! “[For us], the entire cheese making process takes about nine hours,” Laura Genasci of FiscaliniFarms explains. “Cheese cultures—good bacteria strains that work together to convert lactose to lactic acid that makes for a more flavorful cheese—rennet, and salt, are added to the vat as specific steps like stirring, cutting, and turning are performed to create proper curd formation.” Once the curd has developed, watery milk remains (known as whey) are drained, and the

cheese takes one final tossing. As a raw milk farmstead, Ansally Stuyt of Stuyt Dairy Farmstead Cheese Company explains that their milk is not pasteurized, “A mandatory, 60-day ageing is required. However, we like to age for 90-120 days because we’ve found that timeframe to produce our favorite flavor!” Once the cheese is ready to leave the safety of the vats, its destiny is largely determined by what’s being made. Soft cheese (much like Nicolau Farm’s fresh chevre) is ready for any final prepping before being packaged. But cheese that requires aging is mercilessly crammed into plastic molds used to give the cheese its well-known wheel shape! Some wheels may tap-in at over 20 pounds at the beginning, but as the curds lose excess whey, they solidify. Many types of cheese, like gouda, are sealed in their plastic molds and then placed under a pressing machine to remove any last droplets of whey. Talk about a tight squeeze! If that wasn’t torture enough for our favorite fromage, these delectable

bites must then take the plunge into cheesy maturity by building their rinds. Rinds are the exterior shells that encase cheese as they mature, ensuring that the interior of each wheel ages properly. Bloomy rinds are those soft, fuzz-like cheese exteriors found on camembert and many of Spenker Artisan Creamery’s specialty bloomy-rind cheeses. Traditional cheddars and Lancashire (sometimes covered with a special cloth or type of leaf) welcome nature to, for the most part, take control—thus, their rind is fittingly titled “natural”. Many types of cheese—like the Gouda from Oakdale Cheese & Specialties—is given a special bath in heavily salted water called brine, that promtoes a strong flavor. After its lengthy transition from milk to

curds, and finally proud wheel, the cheese is placed into storage that’s set at just the right temperature for its type. It is then monitored over the following months and flipped, wiped down, or handled according to its special needs. Much like that of a fussy child. Father time coaxes the cheese into further developing its own texture, flavor, and unique scent— whether our coddled cheese breaks down into ooey-gooey bliss, or continues to lose moisture and harden into the parmigianoreggiano we always knew it could be.

Driving gives individuals a sense of independence -- just ask the 16-year-old who passed their driver’s test for the first time. However, the reverse is also true. Losing driving privileges can feel a lot like losing independence. Sometimes mature drivers have to give up driving privileges before they are ready. Fatal car crash rates rise sharply once a driver has reached the age of 70, (according to HelpGuide.org). The State of California even requires in-person renewals for all drivers age 70 and older. However, there isn’t an arbitrary number that dictates the age a person loses the ability to drive safely, instead it’s up to the individual to make the call on when to hang up the keys for good.


How To Help: When You Know It’s Time Mom & Dad Stop Driving

While handing over a driver’s license may feel embarrassing, it’s important to consider physical limits. Having frequent “close calls,” finding dents with unknown origins, getting lost frequently, struggling to read traffic signs, being on the receiving end of frequent honking, difficulty concentrating, and warnings from police officers are just some signs that driving may no longer be safe. In some cases, a driver-improvement course may help. However, for many, when vision worsens and cognitive functions change with age, it’s simply time to look for alternate transportation options. Instead of feeling sad, remember that choosing to give up driving privileges is a responsible choice. It’s normal, and others on the road will thank you. You could save a life.

How to Get Around Lucky for San Joaquinians, there are several options for getting around without a driver’s license. Check out some of these options, and don’t forget to get a California State Identification Card in lieu of your driver’s license. You’ll still need proper identification.

• Ask family and friends to pitch in. • Get familiar with bus schedules. Visit SanJoaquinRTD.com to learn more. • Take advantage of meal services. The Human Services Agency of San Joaquin County runs Meals on Wheels. • Walk when possible. Walking offers several health benefits. • Call an Uber or Lyft service. When you’re in a bind, these services prove less expensive and more convenient than traditional taxi companies. • Consider a move to a senior living facility to limit driving needs.

Aging can be hard. While your loved one likely knows their eyesight is declining and their reflexes are slower, choosing to give up a driver’s license can feel a lot like giving in. However, if you notice a loved one—a parent, neighbor, friend—struggling behind the wheel, don’t let it go. It’s a difficult conversation to have, but it’s a conversation that could save a life, even theirs. Here are some tips for having a successful discussion about driving. • Don’t jump the gun. AARP offers an online seminar that will help you determine if driving is really a dangerous activity for your loved one, (AARP.org). • Give the conversation time. If an immediate threat to safety isn’t present, try having a series of conversations. It’s a big life change, and it takes time to sink in. • Schedule a doctor’s appointment to assess vision and hearing, as well as potential cognitive issues or medications that could impair driving. Sometimes a prescription change can make a difference. • Discuss concerns. How will the inconvenience be handled? How can you help? • Visit the DMV. Staff can make the process of revoking driving privileges official, and administer proper testing to give you and the mature driver in your life confidence in the decision.

It’s a Tuesday evening and the chill outside is barely a whisper compared to the warmth in each welcoming smile at Towne House Restauramt. The jazz band is in full swing, picking at strings on the bass, spilling over piano keys, and breaking out the beat across the drums. Candles and dimmed sconces cast their glow across white linen tables, polished silverware, and wine glasses. www.sanjoaquinmagazine.com

We opt for a table near the bar, where the mixologist conducts a symphony of her own. Slipping splashes of vibrant liquor over ice and sashaying the contents over and again, she serves two brilliant, seasonal jewels to our table. My managing editor’s face lights up, she takes a sip, and the worries of the day slip from her brow. Two figures in perfectly aligned smocks emerge from the corridor nearby, and our visit with the masterminds behind the menus of Wine & Roses begins.

“When I first started, Wine & Roses was just a bed and breakfast, and we used to do weddings just on the lawn,” John Hitchcock, Executive Chef and Partner of Towne House Restaurant at Wine & Roses, leans back in his chair. “I’ve seen Towne House grow from nothing to something. The ballroom hadn’t been built yet and the restaurant was open sporadically. When the ballroom opened, we turned it into a seven-day breakfast, lunch, and dinner operation.” Since its humble beginning, the establishment has blossomed, from its variety of quality ingredients to the men and women behind every masterpiece. Each chef learned their trade and studied new styles beyond San Joaquin, and each returned to their Central Valley roots, opting to bring their abilities back to their hometown. “We’re trying to give our community a place to go that has comfort food, but with that city flair,” Dawnelle O’ Brien, Pastry Chef of Towne 126

House, notes. We can’t help but agree between mouthfuls of butteryrich Foie Torchon, marinated in moscato, pink salt, and sugar. It’s served with a huckleberry gastrique and poached grapes atop house-made brioche. And every bite of the Fried Oysters is just as savory as the last, arranged on butter-leaf lettuce in a Miso Togarashi emulsion and topped with Asian pear slices. Everything that makes up the menu is purchased, prepared, and served with quality and freshness in mind. “We get the majority of our fish overnighted from Honolulu,” John explains. “And we use higher-end ingredients: Non-antibiotic, hormone-free pork. The salmon has no food coloring and no hormones.” Danica Aviles, the Chef D’ Cuisine, leads us through the restaurant’s seasonal salad, noting how each flavor plays into the next, from the mixed chicories, right down to the crisp and tart Mutsu apples. “We change the menu four to

five times a year, maybe more. We’ll change dishes here and there,” Danica explains. It’s bittersweet seeing our favorites go, especially when you have incredible entrees such as the Rabbit Loin, raised right here in San Joaquin. And the Grilled Prime NY Pave, with marble potatoes, bacon lardon, and brandy cream sauce, certainly makes a mouth-watering impression. But Towne House Restaurant's chefs always prevail when moving out the next line of courses, dessert included! “I do tastings for each menu with [the staff],” Dawnelle smiles. “They all come down to the kitchen and sample around eight desserts. That’s how the dessert menu is created. This last menu though… We ended up putting almost everything on the menu because no one could decide what to take off and what to keep on.” Our time with Towne House Restaurant came to an end amid blissful bites of Wine & Roses Sweet Cake, thick with ginger cream cheese filling, and spiced cider sauce. And with the last sweet spoonful of

Welcome to a vineyard whose heritage runs from the deep roots of our Lodi Appellation to the rolling Sierra Foothills—combined to create an exceptional winery along the schist rock and limestone to which the property owes its name. Ironstone Vineyards is a venue for weddings, concerts, and a variety of events, with grounds as rich in history as they are in award-winning wines. After inheriting 12 acres of farmland from his father, John Kautz learned of Lodi’s perfect wine-grape climate, built up his grape supply and winery business, and today, provides both to countries across the globe. The winery itself is a family heirloom on wife and co-owner Gail Kautz’s side of the family. What was once a weekend retreat in the foothills has transformed into a 19th century styled gold stamp mill. “My family grew up visiting there, so my father and mother decided it would be perfect to build Ironstone,” says Joan Kautz, Global Sales & Marketing. “When we first decided to build the winery, my parents wanted to build in an old mine shaft. They formed a mining company and built the winery into the mountain. There are tea drinkers and there are herb enthusiasts. These folks pick up a box of chamomile at the local grocery store or grab a few stems of lavender at the farmers’ market and that’s that. And then there’s the diehard, no-nonsense herbal remedy fans that’d rather help supplement our doctor-prescribed meds with tried and true herbal concoctions than sit at home drowning ourselves in bottles of Nyquil. And, to top it off, members of the staff or community often provide special classes to learn more about how to improve one’s health and standard of living. Which brings us to Green’s Herb Vault—quite literally, a vault in the building. Once Wells Fargo hit the road and Eunice eventually moved in, the vault became the perfect holding cell for a wide variety of dried goods, stacked from wall to wall and floor to ceiling. “There’s over 430 herbs that you can buy by the ounce,” Dr. Eunice Green explains. House blends, premade by Eunice or Herbalist Chris Devincenzi, are also available for those who’d rather grab a bag and head on out. This impressive variety is restocked weekly, used up by customers or students of Chris’ herbology classes held about every six to eight weeks. “Everybody walks away with herbs, medicines, and tinctures…. stuff that they need,” Chris notes as he pours up a bag of herbs for a customer. “What we’ve done is, we’ve made it a simple process so people feel empowered to do it themselves.” And if the many visitorss during our interview is any indication, the San Joaquinians stopping by Green’s Nutrition do feel that empowerment. 130

4 Center-cut salmon fillets, skinned, each about 3-inches square 2 Tablespoons amber agave nectar 2 Large oranges ¼ Cup extra virgin olive oil ¼ Cup fresh lemon juice ½ Cup chopped fresh flat-leaf parsley 2 Scallions, finely sliced 3 Tablespoons chopped fresh mint leaves 2 Tablespoons capers, rinsed, drained, and coarsely chopped 2 Tablespoons orange zest 1 Teaspoon crushed red pepper flakes Kosher salt and freshly ground black pepper DIRECTIONS:

For the salsa: Peel and trim the ends from each orange. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments and add them to a medium bowl. Add the olive oil, lemon juice, parsley, scallions, mint, capers, orange zest, lemon zest, and red pepper flakes. Toss lightly and season with salt and pepper, to taste. Set aside. For the salmon: Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush the grilling rack with vegetable oil to keep the salmon from sticking. Brush the salmon on both sides with the agave nectar and season with salt and pepper, to taste. Grill until the fish flakes easily and is cooked through, about 3 to 4 minutes on each side. Filling: Blend cream cheese, milk, orange peel & vanilla. Spoon filling in the centre of the Crepe, sprinkle with toasted pecans & a few segments of orange. Roll up & plate. Repeat with second Crepe. Sauce: Boil sugar & water. Add arrowroot diluted with water, stirring continuously. Boil until clear, strain. Add blanched juliennes of orange zest & the strained orange juice.
