The Stockton Delta Humane Society & SPCA has been serving the San Joaquin County and surrounding communities since 1966. We are a private, 501(c)(3) non-profit charity that operates strictly on public donations, supported by people and businesses who care about the welfare of animals. The Delta Humane Society & SPCA is a true no-kill animal shelter. We provide shelter, medical care and adoption services to abandoned, lost and misplaced pets. Each animal that comes into our shelter is given vaccinations and placed under surveillance until it is determined that the animal is ready to go home with a loving new owner. Every animal has been spayed or neutered and microchipped before adoption.

Let’s Taco Bout It
"Mexican food is one of the best culinary experiences that people can have." – Karla Souza
There are dozens of debates raging within California – where should the water go, which Major League Baseball team is best, and so on. But the rivalry that seems to spark the most passionate of arguments is a culinary one: Does NorCal or SoCal have better Mexican food? Obviously, due to my location, I’m biased. Just because we’re farther away from the border doesn’t mean that our Mexican food is lacking in quality, quantity, or flavor. To prove that, we sent our Food Editor, Suzanne, on the quest of a lifetime: From the large established restaurants, to the hole in the wall joints, and even to the many taco trucks scattered throughout the county, Suzanne sought out the best Mexican restaurants in San Joaquin to create the ultimate taco list. Warning: don’t read her feature on an empty stomach! That is, unless you plan to read it and then embark on a taco tour, magazine in hand, which would be a pretty good way to spend a day. Of course, many of us like to indulge in a strong margarita while enjoying a Mexican meal. Well, if you’re looking for your new favorite margarita, then you’re in luck – our Travel Editor, Nora, rounded up some of our area’s most exciting margaritas, recipes included! Kat Country has over 200,000 listeners – chances are you’re one of them. Even if you aren’t, if you’ve lived in San Joaquin County long enough, you’ve definitely at least heard of them. Their presence is everywhere, from the local sports scene to charitable events. But most importantly, they’re on the radio, bringing music and news to the Valley – even at 5 AM. “I get up in the middle of the night,” says Dennis Walker, better known as D.J. (Yes, that is his real name). He commands one third of Kat’s weekday morning show with co-host Jaimee Lee. “I try to get in by 4 or 4:15.”

locals to know “I’m here a little later,” Jaimee adds. She wears the hats of both Assistant Program Director and Music Director at the station as well as being D.J.’s co-host. Recently, D.J. and Jaimee have been joined by Erin Haight, Digital Content Director. Once they’re all together, the upbeat banter flows like fresh coffee in the morning. But don’t think they’re taking it easy in there. “This job is 24 hours a day,” shares D.J. “If something is happening in media, news, community, we want to be involved in it the next day.” Plus, that odd sleep schedule does cause some problems. Jaimee and Erin both admit that they hit a wall around 11 AM and must either power through or indulge in a nap. Beyond their actual show, they have events to attend, and the next day’s show to plan. Of course, sometimes outlines get thrown aside. That’s just the beauty of a live show. “There are times when we have an outline and then we come in saying, ‘You won’t believe what happened to me last night!’” explains Jaimee. “Those are some of the most fun shows.” “And then there’s times when stuff is happening and we have to get the information out,” D.J. explains. “Especially if it’s going to affect our listeners. Then we vet the information to make sure it’s 100 percent accurate.” On any given day, the hosts could be informing listeners of emergencies, like any of the recent fires that have devastated Northern California, or of daily headaches like traffic jams. Sure, you could get that information on social media, but that doesn’t mean the news you’re getting is as accurate or detailed as what you’ll hear on Kat. “I once had a report of a shark on the roadway in Tracy – you won’t get that on Waze!” quips Jaimee. To listen to D.J., Jaimee, and Erin together, you get the sense that you’re amongst old friends, covering every

And while they themselves are friends already, they do consider their listeners to be like family to them. “Technically, we’re just talking into a microphone in an empty room,” laughs Erin. “But I love going to events and meeting people and talking to them – these are our neighbors and people in our community and getting to be involved and give back is rewarding.” Kat’s team prides themselves on their community outreach, whether it’s their annual St. Jude’s Radiothon or starting ambitious fundraisers like their Quest for a Million Pennies (the logistics of which have been impossible to repeat due to its massive success). Time and again they’ve proven how much they care, determined to be more than just the
voices you hear through your speakers. Beyond the countless connections they’ve made over the years, part of their success lies in the fact that they’re clearly having a good time. “I don’t know of any other job I’d really want to do,” admits D.J.. “I’ve been fooling myself into pretending I’m working while I’m having a good time!” Jaimee and Erin feel the same way. Both San Joaquin natives, working for Kat has been a dream come true. “There was no other place I wanted to be,” says Jaimee. “It’s been so fun it feels kind of sneaky,” adds Erin. “Like I should be paying them!” These days, there are countless ways to listen to music. But it’s a testament to Kat’s quality that their ratings are still high, and that they still get nominated for awards. “People can listen to anything they want, but they choose us,” says D.J. “And that says a lot.” TUNE IN:

WHAT’S ALL the FUSS: THE KETO DIET EXPLAINED BY DEIRDRE CARLSON
Low-carb diets just keep on coming. The latest version is the ketogenic, or ‘keto’ plan which was first developed to successfully treat epilepsy in the 1920s. The ketogenic plan is a low-carb, high-fat diet that many people swear by for increased energy, weight loss, and mental clarity. Read on to see whether you should dig in or steer clear.
How it Works
The Food
The diet involves drastically reducing carbohydrate intake and replacing it with fat. This reduction in carbs puts your body into a metabolic state called ketosis. Ketosis forces your body to burn fat instead of carbohydrates to feed your muscles and mind. For most people, eating carbs triggers the release of the hormone insulin, which turns those carbs into energy. To achieve ketosis, you have to starve your cells of carbs so they break down fats into molecules called ketones.
Getting your keto on properly means that 90% of your daily calorie needs to come from foods such as meat, fish, eggs, butter, nuts, healthy oils, avocados and plenty of low-carb veggies. The remaining 10% should be split into carbs and lean protein. This would put your daily carb quota at 20 to 50 grams, which is about the same amount in 1 cup plain pasta. Since the point is to get in ketosis and stay there, it’s important to avoid any carb-based foods like grains, sugars,

legumes, rice, potatoes, candy, juices and even most fruits.
Risks vs. Benefits Some studies suggest that going keto helps aid people with conditions such as diabetes, polycystic ovary syndrome, and inflammation. The diet also has the potential to quickly reduce fat without losing muscle. But remember, a lot of the weight you shed right away is H2O pounds that will snap back if you stop the diet. And ketosis produces acetone, which makes your breath
smell oddly fruity. Slashing carbs can also lead to nutritional deficiencies and increased potential for kidney stones.
The Bottom Line While the keto diet prevents you from eating cupcakes and other unhealthy things, it also cuts out nutritious foods such as fruit and
whole grains because they interfere with the state of ketosis. However, a ketogenic diet may provide some health benefits, especially to those with metabolic, neurological, or insulin-related diseases. Unless you have a diagnosed medical condition that keto can directly benefit, this strict plan is not necessary and may be dangerous for some people.

GOAT YOGA
THE ADORABLE TREND TO KNOCK YOU OFF YOUR TREE POSE BY CAITLIN HAMER / D You might not think that yoga and barnyard animals are an ideal combination. In fact, it almost sounds
counterintuitive to the peace of mind that yoga is meant to provide. But if you’re at all familiar with the goat yoga trend that’s been sweeping the nation, you’re probably also aware that the prospect of having baby goats headbutting you while you’re practicing your Warrior pose isn’t deterring anyone. “I’ve found that it makes people joyous,” says Kelli Pearman, an instructor at Now and Zen Yoga Studio in Lodi. Though she was initially unsure of the practicalities of goat yoga—after all, adorable baby goats taking a nap on one’s yoga mat might be a bit distracting—she’s seen the same positive effect at each class she’s taught. “With any animal, they’re always in the present moment,” she explains. “It draws us into that playful, ‘let everything go and be in the moment’ mood.” And, she notes, it doesn’t hurt that the goats are sweet and adorable. Intrigued yet? If so, you’re in luck: Spenker Winery has been offering goat yoga to San Joaquin since 2017. As they’ve been planning to open their own creamery, they were already in possession of a herd of goats when the trend started taking off. “Our friends and family kept saying we should do it because we have goats already,” explains Sarah Spenker, tasting room manager of Spenker Winery. “I told my mom that we should see if people wanted to do it, and our first class sold out in two days!” The classes, taught by Kelli Pearman, are $45, the cost of which covers a 45-minute yoga class, plus

15 minutes or so of selfie and cuddle time, followed by a wine tasting. Kelli keeps the classes gentle, welcoming to all levels of yogis. So, whether you’re experienced but curious, or a yoga novice who’s looking for an Instagram worthy moment (with a side of health benefits), feel free to join in. “The outdoor space they offer for yoga is perfect,” promises Kelli. “It’s a space of love where there’s no judgment or expectations.” Spenker Winery will be offering goat yoga on select weekends throughout May and June. Make sure to check their website for tickets – this is one popular event! “You might just tap into a childlike space that maybe you haven’t found in a while,” suggests Kelli. So, bring your mats and an open mind. “And be ready to have fun!” says Sarah.

al this year, too. The starting line is at the Stockton Arena, so those of you who work in the heart of the city will have full view of the race. This year’s Tour begins in Sacramento on May 12, and speeds through our Golden State all the way to Pasadena on May 18. With seven stages to complete, the world’s most elite professional cyclists will navigate mountain roads, highways, and coast lines through their 777.6 mile course. As if that doesn’t sound tough enough, this year the Tour will feature 25 King of the mountain climbs—the most in race history. “It’s both fun and exhausting because it’s a weeklong race,” Evan admits. “I maintain my momentum by just to stay focused on the goal. Keep a bigger perspective when you’re in the difficult moments helps. I remind myself why I’m racing and remember that this is going to make me stronger later.” With such a demanding course ahead, Evan and the rest of the professional cyclists are no doubt going to have to give themselves more than a few pep-talks along the way. Be sure to give them your best cheer as they pedal through Downtown Stockton!
The Amgen Tour of California is returning to Stockton for the second year in a row on May 14. This being the Tour’s longest and most

challenging route in its 14-year history, trust us when we say you’re going to want front row seats to this spectacular event. High stakes aside, Amgen’s return to Stockton is a major deal for both the city and for the fans—in fact, it was the fans’ enthusiasm for last year’s race that was the deciding factor in bringing the tour back through Stockton. AEG has even routed a lap around Downtown. “So many fans showed up last year,” remembers Evan Huffman, professional cyclist and Amgen participant. Hailing from Elk Grove, Evan won stages four and seven of the 2017 Amgen Tour. “In terms of sporting events, I think Stockton often gets dwarfed by Sacramento, so to host the largest cycling event in the world here was a big deal,” says Evan. “People were excited to see us.” If you’re planning on joining in on the fun in May, keep an eye out for Evan as he’ll be putting the pedal to the met-

sports players who were once former rivals the chance to let bygones be bygones. “The players experience valuable lessons such as team work, sportsmanship and camaraderie,” adds Elizabeth. “There’s no better feeling than seeing them all high fiving after the game.” At the end of the night, it doesn’t matter which side of the Stanislaus River you’re from – it’s all about the joy of the game. An added bonus: the funds raised from this game go to Lions and local charities. The festivities begin at 6 PM, with a 7 PM kickoff.
SUMMER KICKOFF ALL STAR FOOTBALL CLASSIC RETURNS TO STOCKTON
BY CAITLIN HAMER Football may be fall’s favorite sport, but who says we can’t enjoy it in the summertime? If you’re missing those evenings spent cheering from the bleachers as the heart pounding action unfolds below, then you’re in luck, because it's time for the District 4-A1 Lions annual All Star Football Game! Now in its 46th year, this thrilling display of some of the finest high school athletic talent in the Central Valley is ready to return to its roots on June 15. After UOP shuttered their football stadium in 2012, the game went to two other locations, most recently in Tracy. The Lions have found a new venue at Lincoln High School’s Alex G. Spanos Stadium. Appropriate for both the game’s 2019 “Homecoming” theme and the football loving legacy of the stadium’s namesake, it’s safe to say that this year’s game will be extra special. “It’s really a community celebration,” explains Lion Roy Morales, noting that they’ve invited 36

the alumni – all 3,000 of the players and coaches that have participated from the game’s inception. The football game itself features the best high school senior football players within the eight counties that make up the Lions 4-A1 District. Last year, 70 high schools were included in the district of 4-A1. The players are then divided into North and South teams, the dividing line being the Stanislaus River. “It’s organized like the NFL,” shares Elizabeth Olson, chairperson of the All Star Football Committee. “High school coaches choose their best players, send us game footage, ranked and the North and South coaches make final selections.” The players and coaches are in camp the week before the game, with the North team residing on UOP’s campus, and the South team at CSU Stanislaus. Not only does this give them a chance to bond, but for many of the students, it’s an early taste of collegiate life. Plus, it gives

and herbal blends. High Tea is their most popular service, in which customers enjoy five courses over two hours. As owner of the award-winning Corner Scone Bakery, Terrie knows the importance of fresh food and pastries. “Your scones should be hot out of the oven,” she says. The freshly-baked scones are served with chilled lemon curd made in-house, clotted cream, jam, and sweet butter. “From there we move into the palate cleanser—a fresh fruit sorbet—then we move into the savories,” continues Terrie, listing warm quiche and puff pastries filled with cheese or meats served with fresh fruit. Then the cut-out tea sandwiches are served. “We traditionally prepare a dill chicken salad and ginger cucumber served on Genova bread.” Is your mouth watering yet? It’s not just the excellent food that draws people to The Hidden Tea Room—themed events such as “Alice in Wonderland” or “Downton Abbey” encourage customers to dress up for the occasion. And don’t worry yourself over the etiquette; Terrie and Tara say there are a few
basic principles to keep in mind when dining. “Paying attention to the setting and tone of the room when you enter will help,” advises Terrie, adding that Tara provides Tea Tips on their Facebook page. “Use your manners, say ‘please’ and ‘thank you’, and use low voices. The face of FITNESS Since 1981 In-Shape has been serving San Joaquin County (and beyond) with a mission to create places of belonging that motivate the community to live happy, fit, and healthy lives. What started as a one-off, opened by a retired doctor with the goal of helping people get in shape and prevent some of the illnesses he saw in his practice, now serves gym-goers from Yuba City to Cathedral City. It all started at the West Lane club in Stockton where David Wright is the General Manager. “Aside from the tenacious focus on fitness programming, we always put people first – whether that’s our members or our team members,” David shares. “My favorite way we do this is with our Fit Club – rewarding members for their hard work every month with quality prizes they proudly use and wear outside the club.” At In-Shape Health Clubs, members are introduced to emerging fitness trends, quality programming, their signature training system Move7, racquetball and tennis tournaments for adults and youth, and—newly added—pickleball.

The face of JUICE BARS Mark Sarale opened his first Nekter Juice Bar in March of 2018, and the Stockton shop quickly became a staple for those in search of a healthier juice.
So why are people clamoring for Nekter juice? The brand is dedicated to fresh, quality juices, bowls, and desserts. The juices are made from fresh fruits and vegetables delivered to the shops three to four times per week, the base of the smoothies and bowls come from cashew milk made fresh daily on-site, and all of the products are free of refined sugars, yogurts, and juice concentrates.
Since then, Sarale has taken over an existing Roseville store and is opening a Modesto shop with his two sons. He’s also partnered with two other businessmen to bring more juice bars to the Sacramento area.
“Everything we have is as fresh as can be,” Mark says. Even the vegan ice cream—sweetened with agave nectar—is made from the same fresh cashew milk.
Mark originally got into the juice business for two reasons. He’s an experienced franchiser with San Joaquin businesses in other markets, and he’s a dedicated health and fitness nut. These passions collided when Mark’s wife told him about the Nekter shop in Roseville.
Guests are invited to order from a menu of smoothies, pressed juices, fusions, acai bowls, and vegan ice cream, or create their own concoctions. It’s also a great place to start a juice cleanse.
Mark and his two sons, Marcus (pictured) and Julian, have turned the franchise into a family business, with Marcus running the Stockton shop and Julian working to take over Roseville/s.

The face of HEARING SERVICES Doug Wesson’s own hearing loss started him on a venture in 1979 when he opened the first Wesson Hearing Aid Center in Manteca. As an Audioprosthologist, Doug has expanded the company with locations in Manteca, Ripon, Tracy, and Modesto, and brought on a second provider, Julia Tyner, to grow his vision. “When you don't hear well, you are missing this vibrant world we live in. Imagine never hearing your grandchildren again, not hearing the birds chirp, or not hearing your spouse when they say ‘I love you,’” says Julia, a board-certified hearing instrument specialist and licensed hearing aid dispenser at Wesson Hearing Aid Center. At Wesson, the focus is on family. Every person who walks through the door receives a high standard of care as staff listen to concerns, answer questions, and walk guests through the process of getting and using hearing aids. Anyone age 18 or older is invited to get a free hearing screening at Wesson, and, if a hearing loss is detected, the practice will loan out a pair of hearing aids for patients to test drive before committing.

Anyone over the age of 50 should get annual hearing screenings, Julia suggests. Because Wesson offers this service for free, there’s no excuse to skip it. And, because hearing loss is gradual, it can go unnoticed. Good hearing, in addition to improving communication, can slow the progression of disease including dementia, Alzheimer’s, high blood pressure, social anxiety, and balance issues. CARDIOLOGY Dr. Manshadi knew from a young age that he wanted to be a physician. “During a complicated pregnancy and birth, competent doctors in Israel saved both my and my mother’s lives,” he explains. Today, he seeks to emulate the confidence of those doctors by saving lives, educating others, and truly honoring the Hippocratic Oath. Named a top doctor by Castel Connolly, Dr. Manshadi began volunteering and administering EKGs at UC Davis Medical Center as a college student at the age of 18. There, he met Ezra Amsterdam, a teacher and mentor. “He instilled in me the love of cardiology,” he says. There was not only a love, but serious talent, as Dr. Manshadi dove deeper into the study—and with the ability to justify and analyze complex entities and categorize them, he excelled. “If your gift and passion are synonymous, you will be successful and happy.” In May 2013 Manshadi Heart Institute welcomed patients with a simple yet profound mission: Improve the lives of patients through excellence in cardiovascular education, heart disease prevention, and the highest-quality treatment available. The face of PUBLIC GOLF In August 2017, Central Golf Company took over the Manteca Park Golf Course, a centrally located, 18-hole public golf course in Manteca. Immediately, the group made changes. “We’re not just a place to play golf,” says Jeff DeBenedetti, director of golf at Manteca Park Golf Course and owner of Central Golf Company. Jeff and his team are embracing the idea of community at the new course. A big part of the mission involves bringing junior golf to Manteca. Employees told Jeff they once left the city to play golf at the junior level because there wasn’t a local outlet. All of that has changed. Manteca Park hosts four junior leagues to hit every caliber of player. And with Jeff at the helm—his last junior golf team won the junior’s PGA national championship—young golfers are in good hands. The full facility is more than an 18-hole course. It also offers a driving range, golf carts, a chipping green, and a putting green,

plus a banquet hall, coffee shop, clubhouse, and store. For those who haven’t seen the course since the takeover, there has been a significant re-design. The holes were renumbered to encourage a better game flow and a faster pace of play, plus a better last hole experience. What was once known as a slow course can now reasonably be played in just over four hours. The City of Manteca also hired a new superintendent who is improving the look of the grounds, the playing conditions, and the drainage. Condition-wise, Jeff says it’s one of the top courses in the San Joaquin Valley, and the prices give residents the best value in the valley ($26 on weekdays, $33 on weekends). Perhaps the biggest perk, however, is the course location. “It’s right here in peoples’ backyard,” Jeff says.

GRADUATE MEDICAL EDUCATION
You may not know it, but in San Joaquin County, there’s a worrying lack of physicians. Dignity Health St. Joseph’s Medical Center is actively working to help solve this problem by developing a graduate medical education program to train the next generation of doctors, right here in San Joaquin County. The program started in July 2018 with an inaugural class of 15 resident physicians across two specialties; family medicine and emergency medicine. St. Joseph’s plans to expand the program and by 2026, they expect to have 184 residents in 12 different specialties. Since residency programs need instructors, the hospital has also been able to recruit highly skilled, experienced physicians to both train the residents and practice medicine right here in our community. Apart from giving recently graduated doctors the chance to train, learn, and grow at their outstanding medical facility, the team at St. Joseph’s also hopes that the residents decide to stay in the area upon completing their program. “Research shows that a large percentage of resident physicians stay within 50 miles of where they complete their training,” explains Donald Wiley, president

and CEO at St. Joseph’s Medical Center. “We’re hoping that if we do this right, we’ll end up retaining a significant percentage of residents in our community.” By trying to select residency applicants who are from California or went to medical school here, St. Joseph’s hopes to increase the likelihood that the new physicians will stay local and serve the population for years to come. “We’re very proud that our hospital’s size and complexity of patient care gives us the unique capability to develop this graduate medical education program in the Central Valley,” says Donald. “This is a huge deal for our community.”

The face of TRAUMA RECOVERY
Kimberly Warmsley is healing the community one conversation at a time. A licensed clinical therapist for more than 10 years, Kimberly specializes in psychotherapy and talk therapy for those in emotional distress. Specifically she works with locals who have experienced trauma. Her services include one-on-one therapy, group therapy, and training for businesses and organizations on how to talk about mental health and emotional distress. Six months ago, Kimberly opened her own practice, Kimberly Warmsley’s Therapeutic & Trauma Services, in Stockton, where she was born and raised. “My goal is to first of all decrease the stigma on mental health,” Kimberly shares. Part of that is in the language she uses. “I try not to say mental health as much as other people do.”

in her neighborhood Weston Ranch. The goal of the “Save Our Community” talk was to develop solutions and strategies to build a safer environment. She also uses her power in grief counseling by organizing events for those affected by tragedy. For example, Kimberly cofacilitated an event for families affected by grief, loss, and tragedy in March. She drove a conversation that allowed participants to heal, taking away some benefits of group therapy without a formal appointment. “Through education, innovated treatment, and community partnership with our leaders we can heal our community from emotional distress,” Kimberly says.
Instead of creating an obstacle by classifying the need for trauma therapy as a mental health problem, Kimberly refers to this type of pain as emotional distress. For many patients just changing the phrase removes barriers for treatment.

ST REET ZLAN 415 C St., Galt T he Vibe If you haven’t ventured to this spot in Downtown Galt slanging some serious eats, you are missing out. Chef Erick Silva and his wife Jessica have a deep appreciation for gourmet street food. The décor is rustic and modern with both communal tables and high tops. While you are there, grab a cold Michelada or their specialty sangria to enjoy as you wait. T he Flavor Chef Silva isn’t messing around with these Vaquero tacos that are bursting with flavor and grease. For starters, this dude makes his own tortillas from scratch. He adds the braised meat, piles it up high with Monterey Jack cheese and adds the robust and aromatic salsa Macha. One bite and you’ll be hooked for life. And just when you think it can’t get any better, they serve the tacos with a piping-hot consommé to dip them. I’d be remiss if I didn’t also mention their fish taco. It is, quite honestly, the best fish taco I’ve ever put in my mouth. The beastly filet of crunchy golden cod is topped with a spicy sauce, sliced avocado and purple cabbage. It is out-of-this-world good.
DON LUIS MEXICAN RESTAURANT 5940 CA-99, Stockton T he Vibe Just off Highway 99 in Stockton, Don Luis has been in the business of serving original Mexican cuisine since 1994. Great food, atmosphere and one of those places where they treat everyone like family. You can sip on a margarita, order a Tecate, or savor a Michelada while deciding what to order. T he Flavor Hit this place up at lunch where you can
get two crispy beef or pork tacos topped with lettuce, tomatoes, shredded cheese and drizzled in a spicy taco sauce. While you’re at it, just go for the whole enchilada and make it a meal—that way you can grub on their Spanish rice, refried or whole beans, AND a salad. Just be prepared to take a nap from your foodinduced coma.

Then they top it all off with cilantro, onions, cheese, and smother the entire thing in a spicy sauce. This is one of those, “It isn’t that spicy…oh wait… oh dang that’s hot,” tacos moments. Totally worth the sweaty brow!

This place is huge, with a spiral staircase that leads to a second floor for special events. The open dining room has ample seating. Which is a good thing, because you will want to be comfortable when you are grubbing on tacos and sipping a strawberry margarita! T he Flavor
Stick to the beef or chicken tacos. Stuffed in a crispy taco shell and decked out with lettuce and cheese, they are perfect for late night eats. And the good news is they are open until 10:30 PM, when your hankering for good grub is just kicking in.

T he Flavor Miguel’s serves up a grand assortment of tacos. You can choose from beef, pork, chicken or fish tacos, but I’d go for the crispy chicken tacos stuffed with shredded cheese and lettuce. T he Flavor Get the crunchy chicken tacos. These shells are crispy without falling apart and are loaded with chicken. Run by a husband and wife team, this grubworthy restaurant is dishing up some of the region’s best gourmet tacos. There is so much to love about this place, but one of the major perks is their offering of fresh, seasonal margaritas to wash down your meal. Seriously, the strawberry margarita is uh-maz-ing! T he Flavor A good fish

T he Flavor The menu is huge, with a ton of options, but I opted for the twist. I decided to try a taste of the Colorado beef tacos. They were spot on. The savory sauce has a hint of heat and the meat was tender as heck. The Colorado beef is served in a grilled four tortilla with lettuce. I’d order it again. I hear the chicken tacos are also super popular.

T he Flavor Their most popular item on the menu is their fish tacos… and for good reason. Unlike most restaurants that fry their fish, La Palma grills the delicate white fish. T he Flavor You choose your meat at this BBQ joint. Head to flavor town and pick from BBQ chicken, pulled pork, tri-tip, hot link, or bacon. To say this taco truck is popular is an understatement. Located in the 76 Gas Station parking lot off March Lane and I-5, the line is always long. In fact, sometimes even parking is difficult. You should be prepared to stand in line for a few minutes, and you might have to scarf down your tacos in the car, so you aren’t late to work. But I promise you, this place is worth the wait. Like, holy cow worth the wait.
T he Flavor
You guys, this taco truck reigns supreme and for good reason. If you are looking for the juiciest Al Pastor anywhere, El Mayita is your friend. The meat is marinated and cooked on a spicket, where they slice off large flavorful chunks of the al pastor onto beds of soft corn tortilla. Then they load it up with fresh pineapple, purple onion, and a spicy guacamole crema. Packed with flavor and oh so delicious, these tacos are the bomb! As in—I’m still talking about them to everyone I know— good. The carne asada tacos are also tasty as heck. Okay…just order one of everything. 80

GORDO’S TACOS 1002 Waterloo Rd, Stockton T he Vibe This place is clearly a popular spot to pick up your taco fix. So much so, that they now have a taco truck and a brick and mortar building. Can you say winning? The colorful taco truck serves up all the authentic meats from carne asada and carnitas to birria and buche. Authentic, flavor packed meats are the staple at this foodie favorite. T he Flavor These tacos are loaded with love. Made using their home-made corn tortillas, the buche (pork stomach) tacos are my main jam. The meat is slow roasted and delicious, topped with the traditional dose of cilantro and onions and served with grilled onions and nopales. I could eat here every day. In fact, I’m heading back to try their Amor y Paz Taco stat. Taco bout a breakfast I can get behind, the tortilla is stuffed with spicy chorizo and topped with an egg.
LA PICOSITA 126 W. Turner Rd., Lodi T he Vibe
Expect long lines if you hit them up at lunch. According to Lodi’s Annual Taco Truck Cook Off, La Picosita is Lodi’s fan favorite. Located on the corner of Turner and Church Streets and tucked in the corner of a car detailing parking lot, this place knows what’s up. Remember its cash only and the most affordable tacos you can find.

These tacos live up to the hype and are as legit as you can find. I can’t decide which is better, the spicy carne asada or their crispy pork carnitas tacos. Both are topped with fresh cilantro and onions, but honestly, the meat speaks for itself. Seasoned to perfection and juicy as heck, they also give you fresh limes and jalapeños just in case you want to turn the heat up even more! These tacos are a great example of residual heat. By now, I’m, guessing you’re craving #allthetacos and planning your next meal. Or maybe you are hosting a Cinco de Mayo party for family and friends. Either way, we’ve got the details on how to create your own taco bar in the comfort of your home! This is one of my favorite ways to feed a crowd—it’s cheap, delicious, and perfect for those warm May weekends spent outside with a cold beer in your hand. These recipes are simple to make, which also makes them perfect for those busy weekday family meals. Now, who is ready for the next Taco Tuesday?

CARNE ASADA INGREDIENTS 2 Lbs. Skirt Steak 2 Limes, Juiced 4 Garlic Cloves, minced ½ C. Orange Juice 1 C. Chopped Cilantro 1 tbsp. Cumin ¼ TSPN. Chili Powder ½ tbsp. Salt ¼ tbsp. Pepper 1/3 C. Olive Oil 2 tbsp. Apple Cider Vinegar 1 Jalapeno, chopped
DIRECTIONS Mix all ingredients in a gallon size Ziploc bag and add the meat. Seal the bag tightly, getting out all the excess air. Refrigerate for at least two hours, but not longer than 8 hours. Preheat your outdoor grill to medium-high heat. Cook for 3 minutes. Flip the meat and cook for an additional 3 minutes until you have nice grill marks and the meat is heated through. Remove from heat and slice into strips cut against the grain. Serve with sour cream, pico de gallo, and cotija cheese.
CRISPY CARNITAS INGREDIENTS 4 Lb. Skinless Pork Butt or Shoulder 3 TSPN. Salt 1 TSPN. Pepper 2 TBSN. Mexican Oregano 1 TSPN. Ground Cumin 1 Large Yellow Onion 8 Cloves Garlic 2 Limes, Juiced 2 Large Oranges Juiced 1 TSPN. Orange Zest 1 C. Coke, Mexican Coke is Preferred
THE ESSENTIALS Tortillas—both corn and flour Cilantro and Onions Salsas—Pico de Gallo. Salsa Verde, Chile de Arbol, Sour Cream Jalapeños Avocado and or Guacamole Cheese—Cotija and Monterey Jack Limes, Quartered Hot Sauce Beer—Tecate, Corona, Pacifico, Sol, Modelo, Dos Equis Napkins
3 Bay Leaves DIRECTIONS Rinse the pork butt and pat dry with paper towels. Add pork, salt, pepper, oregano, cumin, onion, garlic, lime juice, orange juice, orange zest, coke and bay leaves to a slow cooker. Cover and cook on low heat for 8 to 10 hours or on high heat for at least 5 hours. Remove the pork and shred. Set oven to broil. Line a baking sheet with foil and spray with non-stick cooking oil. Pour 1 cup of leftover juices from the crock pot and pour over the meat. Cook for about ten minutes or until the skin becomes crispy.

SALSA VERDE CHICKEN INGREDIENTS 4 Chicken Breasts 1 12 Oz. Jar of Salsa Verde 1 Jalapeño, Chopped 1 14 Oz. Can of Fire Roasted Green Chiles 1 Yellow Onion, Quartered 4 Garlic Cloves, chopped ½ tbsp. Cumin ½ TSPN. Mexican Oregano ½ tsp. Salt DIRECTIONS Place 4 Chicken breasts in a slow cooker with salsa verde, jalapeño, green chiles, onion, garlic, cumin, oregano, and salt. Close and cook for four to six hours. Remove the chicken and shred with two forks. Also remove jalapeño and onion and chop roughly. Pour one cup of remaining salsa verde sauce from the crock pot and combine with the chicken. Sprinkle with cilantro, onion and a lime wedge. Sour cream and cheese are optional, but a definite yes in my book!

Strawberry Rhubarb Margarita Shannon Langley, bartender at Rosewood Bar & Grill, created this margarita for spring, inspired by the fresh food surrounding the area. “I enjoy working with the local produce we have right here in Lodi, and our strawberries are amazing in a margarita,” she says. WHAT TO EXPECT: The flavor is similar to a classic margarita but also with a subtle sweetness that balances the Siempre tequila well. Expect the fruit to add a freshness to the margarita. HOW TO INFUSE YOUR OWN TEQUILA.
WHAT TO EXPECT: Jarrod says, “The flavors of the drink would be like the name. At first you get the sweetness from the passion fruit and on the back end you get the ‘heat’ from the habaneros.”
It’s not as hard as it sounds, but you’ll have to prepare early. If you’re making this drink at home, start at least two days before you need to serve it. To infuse the tequila, start with your favorite bottle of liquor. Then, cut up three habanero peppers to place per bottle. Jarrod recommends letting it sit for a minimum of 48 hours. If you want more heat, leave the peppers in longer, or add more than three peppers to each bottle.
WHAT TO PAIR IT WITH: Dining out? Order-up the ahi nachos or avocado fries at Midgely’s. Both dishes make great companions for the flavor profile of this drink. Whitney Galecki, the bartender who created the menu’s watermelon-flavored margarita, chose the sipper to stand out. “I recently enjoyed a pineapple margarita at a neighboring restaurant and I wanted to do something different but still just as refreshing! I’ve seen blood orange and pomegranate ones in the area but not watermelon, so it sounded perfect,” she says. WHY ORDER IT: If you like tequila, this is a good drink for you! Bud’s menu didn’t have any tequila cocktails on it before it was revamped—that is until Whitney added the watermelon margarita to the mix. “We get a ton of margarita orders daily so I knew some sort of specialty margarita would sell,” she says. PAIR IT WITH: Fish tacos. “Margaritas and tacos go hand in hand,” says Whitney. “Our fish tacos are made with fresh breaded Pacific cod and a delicious house made aioli. They’re perfect for when you just want to stop in the bar and have a drink and a quick bite to eat.”

John Denigris, the owner, chef, and mixologist at Habanero Hots takes his tequila very seriously. For years the tequila connoisseur has been traveling to Mexico, and specifically Jalisco, to find tequilas everyone can enjoy, creating a collection of more than 180 tequilas served at his restaurant. On a recent trip, John brought back a single-barrel of El Tesoro-Habenero Hots, a tequila only available at his restaurant. He chose El Tesoro for its flavor as well as the old-school techniques the boutique distillery still uses to make its liquor.
RECIPE: 2 oz. el Tesoro tequila juice of one fresh lime 1 oz. of agave nectar ½ oz. Grand gala FLAVOR: John describes this drink as “the ultimate original margarita.” The basic marg recipe is good tequila, orange liqueur, and lime. “When I make a margarita I really key in on layering those flavors. If you can taste all three of those ingredients you’re going to enjoy your margarita,” John says. 90

BennyJann Peneyra was just a baby when his family moved from the Philippines to the states in 1990 looking for work. Most of them became nurses or accountants. Not Benny, though. Benny began cooking at a young age with his grandfather. “He taught me how to scramble eggs,” Benny recalls. “Anything that could have an egg scrambled with it could be a meal.” Though she was working a lot, Benny’s mom was his biggest source of inspiration—and his biggest critic. “Everything that I made as a young cook, I always would ask her opinion on it,” explains Benny, adding with a laugh, “She was very blunt.” Today, as owner of the popular pop-up Rice Queen Social Club, Benny’s motto is “At the end of the day, always cook like you’re cooking for your mom”. “When you cook like that, it comes from the heart,” notes Benny.

Love, of course, makes everything taste better, from the foodie-favorite Lumpia, to the traditional Stuffed Pusit (squid) with garlic rice and cucumber salad, to the intriguing Duck Asado Spring Rolls and more. “I always start with what I like to eat or was raised eating and fuse that with what I’ve learned,” says Benny about his creative process. The result? Traditional Filipino recipes with a modern twist. The Duck Asado Spring Rolls, for example, were inspired by his time spent shredding duck for a Vietnamese Restaurant in San Francisco. “It was kind of confit at first. I braise it in duck fat and grill it to give it a nice flavor,” says Benny. “It has vermicelli noodles, lettuce, cucumbers, and an herb mix I call the “Asian trinity”—cilantro, basil and mint. They add a very nice flavor to fresh veggies.” Top it off with spicy fish sauce vinaigrette, shaved chilis, and peanuts and you have yourself a mouthwatering, Instagram-worthy meal—just don’t forget the rice! Just three years old now, Rice Queen Social Club has developed an almost cult-like following of foodies both here and beyond Stockton, the evidence of which Benny noted when he popped up at Cocoro. “I looked around and realized I didn’t recognize anyone,” remembers Benny. “I thought, these people actually wanted to come out here and experience the food!” To that, we say “Well, duh.” You only have to see photos of the mouthwatering barbeque plates, the comforting Bao Buns, the vivid Spam & Braised Pork Belly Fried Rice to find yourself eagerly scrolling through RQSC’s social media to figure out when and where their next pop-up will be. “Filipino cuisine used to be a trend,” says Benny, “but now it’s here to stay. People weren’t really sure what it was, but now at least most people know lumpia, so they’re willing to try other things.” Benny’s own lumpia begins with a stop into Louie’s Meat Market—as a small business owner, he knows the importance of shopping local. Back at 102

the kitchen, Benny crafts the base he learned from his mom: salt, pepper, and fish sauce. He then expands the recipe, adding chili oil, crispy chilis, and garlic, Sambal, and oyster sauce. “It’s a melting pot of Asian sauces that I grew up experimenting and eating that makes it stand out from other lumpia,” explains Benny. As for the protein, Benny’s done everything: chicken, duck confit, he’s even made a Spam Breakfast Lumpia before. “You can wrap anything in these and fry them,” he concludes. With ideas this good, Rice Queen Social Club has turned into one of the foodie-gems of Downtown— and while the pop-up provides the
air of exclusivity, Benny has been considering the brick and mortar life. “I’ve always talked about it, I just have to actually do it,” he says. For now, he and his fans are more than content. “It’s actually pretty cool. MIMOSA MANIA CHEERS TO MIMOSA OF THE MONTH AT WEIBEL BY CAITLIN HAMER
If you thought that the only appropriate time to enjoy a mimosa was during weekend brunch, then you’ve been misinformed. Not only does Weibel Winery’s tasting room offer mimosas all day, every day, but they’re also taking this formerly simple cocktail to brand new heights. “It’s been close to a year and a half since we started offering a mimosa of the month,” says Brenda Hunter, tasting room manager at Weibel. From holiday inspired themes like their Valentine’s Chocolate Strawberry Mimosa, to seasonal flavors like their autumn Apple Cider mimosa, every month’s unique mimosa has given them the opportunity to showcase one of their twelve sparkling wines. The planning of each month’s 106

new mimosa is a group effort, combining the minds of the tasting room’s talented staff. “We’ll experiment and try different things,” explains Brenda. “First we decide what’s going to be the sparkling flavor of the

month, and then we try to decide what goes with it.” From there, it’s all about experimentation until they find the perfect combination that makes their taste buds sing. “We all love to be mixologists!” she adds.
May’s very own mimosa is the Tropical Mimosa, which features Weibel’s peach mango sparkling wine, and pineapple orange guava juice. Perfect for ushering in those first truly warm days of the year, this mimosa will have you dreaming of white sands, blue waters, and the sun on your skin as you sip away on this bubbly beverage. If you missed out on Weibel’s past mimosas, you’re always welcome to request them, pending ingredient availability. Are you craving a famous Disneyland Dole Whip? Then ask for a pineapple juice mimosa with piña colada sparkling wine (make sure they top it off with a little whipped cream!). Or combine orange juice, strawberry-peach juice, and peach mango sparkling wine for a Strawberry Sweet Peach mimosa! But, if you still want a classic mimosa, Weibel is happy to offer you that, too. However, Brenda may still try and suggest some alternatives to make the drink a little more unique. “Sometimes I’ll suggest the peach sparkling wine or the almond sparkling wine with orange juice,” she says. CHOPPED CHALLENGE WITH CHEF IAN BENS OF ROSEWOOD BAR & GRILL BY SUZANNE LEDBETTER
Five random ingredients, one talented chef; put them together and you’ve got an exciting culinary contest on your hands. When I asked the renowned Chef Ian Bens of Rosewood if he would be up for the challenge, he eagerly accepted. The five mystery ingredients? Lamb, blueberries, walnuts, asparagus, and potato chips. So, what is this feast for the eyes? Rosemary and garlic lamb chops with a sweet and sour blueberry sauce, toasted walnut hummus and potato chip crusted asparagus spears. Rosewood Bar and Grill 28 S. DIJON MARINATED LAMB CHOPS INGREDIENTS 8 Lamb Chops, Frenched 1/4 cup Dijon Mustard 2 Tbsp. Olive Oil, 1 Tbsp. For Cooking 2 Tbsp. Butter 2 Sprigs Rosemary 2 Garlic Cloves, sliced Salt and Pepper to taste
DIRECTIONS Mix mustard and olive oil in a bowl. Brush mixture all over the lamb chops, avoiding the bones. Let chill 2 hours or up to 24 hours. Season the chops on all sides. Heat 1 tablespoon oil in heavy large skillet over mediumhigh heat. Add chops to skillet along with rosemary and garlic. Add butter to the pan, it should melt and foam. Baste the meat with the melted butter with a spoon. Cook 3-4 minutes per side for medium-rare, 5-6 minutes per side for medium. Let rest 5-10 minutes before serving.
LAMB RAGU INGREDIENTS 1 Tbsn Olive Oil 1 Onion Finely Diced 2 Cloves Garlic, Minced 1 Tbsn. Chopped Rosemary 1 Lb. Boneless Lamb, ground or cut into very fine dice Coarse salt Freshly Ground Pepper ½ C. Merlot 1- 14.5 ounce can Italian Plum Tomatoes, coarsely chopped
DIRECTIONS Put the oil and onion in a large skillet and cook over moderately high heat, stirring frequently, until the onion is pale gold. Add the lamb and cook until browned, 5 minutes. Season with salt, pepper, rosemary and stir. Add the wine and simmer until evaporated, 10 minutes. Add the tomatoes and simmer gently, stirring from time to time, until the fat begins to separate from the sauce, 15 minutes.
SWEET & SOUR BLUEBERRY SAUCE INGREDIENTS ½ C. Sugar ½ C. Red Wine Vinegar 1 C. Blueberries DIRECTIONS Heat sugar and vinegar to a simmer, add blueberries and bring back to simmer. Remove heat and let cool down completely. Puree in a blender until very fine. To assemble, layer the ragu and the lamb chops. Spoon the blueberry sauce over the lamb and enjoy! Bon Appetit!

TOASTED WALNUT HUMMUS INGREDIENTS 1 (15-ounce) Can Chickpeas, Drained and Rinsed 80 grams Walnut Halves, Toasted at 350 degrees for 15 minutes 1/4 C. Fresh Lemon Juice 1/4 cup Tahini, Well Stirred 1 Small Garlic Clove, Minced 1 Tbsn. Extra-Virgin Olive Oil Salt to taste 1/4 C. Ice Cold Water
DIRECTIONS In the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute, scrape the sides and bottom of the bowl then process for 30 seconds more. Add the olive oil, minced garlic, walnuts, and a 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl then process another 30 seconds or until well blended. Open, drain, and rinse the chickpeas. Add half of the
chickpeas to the food processor and process for 1 minute. Scrape sides and bottom of the bowl, then add remaining chickpeas and process until thick and quite smooth; 1 to 2 minutes. Slowly add ice water until you reach the perfect consistency. Taste for salt and adjust as needed.
POTATO CHIP CRUSTED ASPARAGUS INGREDIENTS 24 large asparagus spears (2#) cold water 2 cups flour 2 tbsp salt 2 cups buttermilk 1 large bag potato chips (10oz) DIRECTIONS Prepare a small deep fryer or a large pot filled no more than 1/3rd full with sunflower oil and a deepfry thermometer. Snap off bottoms of asparagus where they naturally break. Trim
spears to 5 inches in length, rinse in cold water. Cut the rest of the stems into coins and set aside. Pulse potato chips in food processor until coarse crumbs. Mix flour and salt in medium size bowl. Place buttermilk into another medium size bowl. Place potato chip crumbs into a third medium size bowl. Drain asparagus and place 2 at a time into container with flour, shaking to cover. Remove spears with fingers or tongs and shake off excess flour, place spears into buttermilk. Shake in buttermilk to evenly coat, remove spears, tap off excess and place into potato chip crumbs. Shake crumbs to cover spears, press crumbs gently to help adhere to spears. Gently remove spears and place on a tray. Repeat with remaining spears. Fry coated asparagus spears 1-2 minutes at 350F. Remove gently to a tray lined with paper towel, season with salt and Aleppo or cayenne pepper.

You know the Goodstock girls— Amy Sieffert and Anne Wilcox, the dynamic duo behind beloved events such as Stockmarket in Downtown and Herstory at the Haggin Museum. This month, they’re channeling their devotion to their community via food, culture, and the beautiful Japanese Garden at Micke Grove Regional Park. “Micke Grove has always had a soft spot in our hearts, and when we met the folks there, we talked about partnering up to bring awareness to the Japanese Gardens there. It’s really a hidden gem,” says Anne. “We knew we needed to do something interesting with a purpose,” adds Amy, who held her wedding in the Gardens in 2003. “In addition to promoting the space, a portion of the proceeds goes to Micke grove park, so you’re not only connecting to the space but also supporting it.” The event, dubbed “A Garden A’Fare”, is a cultural and culinary celebration featuring four chefs of different nationalities. Each will prepare a specific type of cuisine that represents some of the most prominent

cultures found here in San Joaquin. The lineup is as follows: Lauren O'Leary of Lauren Rose Cooks will be whipping up Italian, Manjinder & Paulette Singh of Delicious India will be simmering Indian cuisine, BennyJann Peneyra of Rice Queen Social Club will be frying Filipino fusion, and Jake Whitlock of The Black Rabbit (formerly Abbey Trappist Pub) will be serving Japanese fare. “This county is so diverse culturally, we really wanted to connect people to both the Garden and to each other through food,” Amy explains. Apart from the delicious cuisine, carefully paired libations will be available, provided by The Whiskey Barrel. Guests will feast, sip, and savor in the serene beauty of the Japanese Gardens to live music provided by Travis Vega, a local jazz guitarist. It will truly be an event to remember. “One of the things that we’re passionate about with all of the events that we do is connecting people to each other but also to a place. We enjoy showing things in new perspectives,” explains Amy, adding with a laugh, “Also, we love food.” While the guests will no doubt share this love, everyone present will also be sharing in traditions that have defined San Joaquin county, simply by exploring these flavors that hail from four very different countries. “Food is one of the most universal things that all people can connect to—it’s almost a language,” muses Anne. “Even if you have not been to that part of the world, or don't speak the same language—everyone loves to eat.” FOR TICKETS AND INFORMATION: GoodstockCA.com

In fact, you might not even realize how useful honey can be in the kitchen. I’m here to show you a few ways honey can kick up your culinary game. It’s the perfect pairing for just about any cheese at the market, a tasty addition to a marinade, a garnish to a flavorful crostini, and a natural way to sweeten up your favorite home-made cocktail. Check out these buzzworthy recipes arriving just in time for warmer weather! 114

PEACH & BURRATA CROSTINI with HONEY

INGREDIENTS 1 French Baguette 1 8 oz. Package Burrata Cheese 2 Peaches, Sliced 1 to 2 Tbsn. Honey ¼ C. Basil and Mint Leaves, Chopped
DIRECTIONS Preheat oven to 375 degrees. Slice the baguette into ½ pieces. Brush each slice with olive oil and bake on a cookie sheet until golden brown about 5 to 7 minutes. Meanwhile, slice peaches into wedges. Spoon burrata over the top of each bread slice. Layer with one peach wedge, drizzle with honey, and garnish with fresh mint and basil leaves. Serve with a Lodi Viognier for the perfect pairing.
ALEPPO HONEY CHICKEN INGREDIENTS ½ C. Extra Virgin Olive Oil 1/3 C. Honey 1/3 C. Red Wine Vinegar 3 tbsp. Aleppo Pepper 2 tbsp. Salt, Kosher 8 Garlic Cloves, Chopped 1 tbsp. Rosemary, Chopped 2 tbsp. Thyme, Chopped, separated 1 tsp. Orange Zest ½ tsp. Red Chili Flake 4 Chicken Drumsticks 4 Chicken Thighs
DIRECTIONS In a large bowl, combine all the ingredients except the chicken and whisk until all of the ingredients are combined. Reserve two tablespoons of the marinade in a small bowl and refrigerate. Add the chicken to the large bowl and turn to coat. Cover and refrigerate overnight. Preheat the oven to 425 degrees and line a baking sheet with foil. Remove the chicken and let the excess marinade drip off the chicken. Place the chicken, skin side up onto the lined baking sheet and roast for 45 minutes or until temperature reaches 160 degrees. Transfer the chicken to as platter, drizzle with the remaining two tablespoons of marinade, sprinkle with salt, additional 1 tbsp. of thyme and serve.
MANCHEGO, HONEY & COFFEE INGREDIENTS 1 Wedge Manchego Cheese ¼ C. Local Honey 1/8 C. Coffee Beans, freshly ground DIRECTIONS Remove the cheese from the fridge at least one hour before serving. Slice the Manchego into triangles, ¼ inch thick. Place coffee beans into grinder. Put homey into a small bowl. Arrange the Manchego cheese on a serving board, pile coffee grounds on one end and add the bowl of honey. Or simply arrange cheese, sprinkle with coffee grounds and driz www.sanjoaquinmagazine.com
