29 A TRIUMPH FOR STOCKTON

When Brandon Leake, 27, heard his name called as the winner of season 15 of American’s Got Talent, he celebrated. But not just for himself. Piping hot pizza. If there is one thing we can all agree on in 2020, it’s that America’s love affair with pizza isn’t going anywhere. In fact, Americans devour over 3 billion pizzas a year. Crazy right? Pizza is as American as apple pie and hamburgers on the Fourth of July. But what about wood fired pizza? If you haven’t had the pleasure of scarfing down a wood fired pizza, you haven’t lived. But fear not my fellow pizza lovers, because San Joaquin County is home to some of the finest wood fired pizza joints in the state. From brick and mortar restaurants, to mobile ovens, and breweries too, we’ve rounded up our favorite spots for this delicious dish and we’re dishing out our favorites for your enjoyment. 78 HOLIDAY IN HEALDSBURG

For those who are comfortable traveling, 2020 is the year of the road trip! Instead of loading up onto planes to scout far off destinations, we’re staying close to home where our own vehicles offer safer transport from one locale to the next. Part of vacationing close to home is searching out lesser-known destinations, and perhaps ones with slightly smaller crowds. That’s how we found ourselves in Healdsburg, soaking up the sunshine and searching for the bottom of our glass of pinot noir. BY NORA HESTON TARTE

Every Sunday, Bud, Matt, and Jeanne Millsaps serve up their customary brunch, a weekly service the Bud’s Seafood Grille owners has been doling out for nearly 27 years. “It is a special treat on a special day,” Jeanne says of the restaurant’s brunch. “People are relaxed and want to enjoy each other and are often celebrating.” BY NORA HESTON TARTE

to call Stockton part of our home, and it’s even more meaningful to see this city flourish in the wake of some challenging times its faced in the past. But just like the city has always rebounded spectacularly in its own time, we’re seeing even more exciting stuff—and people— coming out of this San Joaquin gem. Unless you’ve been living under a rock, you’ve likely heard the name Brandon Leake. The local spoken word artist who spends his free time building up Stockton’s youth, recently brought home the title of Season 15 Winner of America’s Got Talent. Performing on the biggest metaphorical stage of his life, Brandon’s win signified something of importance for all of Stockton’s residents, and we think it just may be the message he was trying to portray: Out of Stockton can come a lot of good. And while the rest of the world may just be seeing that now, it’s a fact we here at San Joaquin Magazine have long been aware of. Our managing editor got to have a one-on-one chat with the accomplished artist and learned some awesome tidbits about the man now known across the globe for his heart-wrenching poetry performances. Flip to page 29 to check out the interview, and learn where Brandon sees himself going now that he’s a household name. Brandon is magnificent, but he’s not the only “great thing” coming out of Stockton, and we look forward to celebrating Brandon’s win, and Stockton’s coming wins, for years to come. We’re glad the rest of the world is getting to see Stockton’s merits, too, perhaps, at least in part, because of Brandon.

LAST THOUGHTS PIZZA, PIZZA The ooey, gooey cheese; the fresh, locally made sauce; the smoky, cooked-to-perfection crust—I’m not sure which part of pizza I like the best, but, then again, I guess I don’t really have to pick. Pizza is one of my favorite indulgences, and I’m probably not alone. This month our food and wine editor took a deep dive into wood-fired pizzas to bring us a round-up of some of the best pies in SJC. Check out the feature on page 50.

IT’S ENGAGEMENT SEASON! With the holidays come a lot of diamonds—rings, that is. It seems as soon as we all start gathering with family and feeling all the feels, those ring finger photos start popping up all over our Instagram feed. Whether you’re newly engaged, your best friend just said yes, or you’re going to be a mother of the bride, you just picked up some new duties. Check out our special wedding section, starting on page 65, and start planning!

D CHRIS HASTON/NBC

A TRIUMPH for

STOCKTON BRANDON LEAKE WINS IT ALL ON AGT FINALE  BY NORA HESTON TARTE / D CHRIS HASTON/NBC / JUSTIN LUBIN/NBC

When Brandon Leake, 27, heard his name called as the winner of season 15 of America’s Got Talent, he celebrated. But not just for himself. The new father took that trophy home for his daughter, his wife, his late sister, spoken word artists everywhere, and the city of Stockton. “The journey made that win so much sweeter because it wasn’t even just about me,” Brandon says. Born and raised in South Stockton, Brandon let life experiences guide his performances on the show. Turning out poems on topics close to his heart, from the early passing of his baby sister, to social justice issues in the Black community, Brandon won over both the judges and America, as was evident in his monumental victory as the first spoken word artist SJMAG.COM

| NOVEMBER 2020 29

>>

“I write intentionally now for the sake of being able to do one of two things: either to comfort or to disturb, and sometimes I can do both at the same time,” – Brandon Leake

D JUSTIN LUBIN/NBC not only to win the competition, but to appear on the show at all. “This is such a big win for spoken word,” Brandon says, adding the performers tend to get second billing behind musical artists and comedians. Leading into the finale, Brandon had already tackled some tough topics, but his final piece was a personal favorite. Dedicated to his (now) seven-month-old daughter Aaliyah, Brandon talked about his greatest journey in life—becoming a dad. “That was the poem I always knew I was headed to,” Brandon says. “My daughter… may not understand what that moment means now but one day when she is older… she’ll never doubt how much daddy loves her.” Unapologetically, Brandon says he didn’t care what America or the judges thought of it. This one was a gift for Aaliyah. Brandon started writing at a young age, coming up with stories for Dragon Ball Z characters he liked tracing out of comic books. Soon, he stopped drawing and focused on the words. For him, it was a way to fall into

30

make believe without getting into trouble for making things up, but as Brandon grew, he put writing on the backburner, turning his attention instead to basketball. “To be a basketball player, to be Black, to be from my side of town, and to be a poet, would have been perceived as soft in a very demeaning sense,” he says. While playing ball at Simpson University in Redding, one of Brandon’s friends drowned. For the first time in a long time he turned to his notebook to find healing in words, and after that, he quit basketball. Instead, Brandon turned his efforts to an open mic night on campus, growing the event from a small gathering of “artsy weirdos” to a finale event with over 300 people. Over the years, the self-described man of faith has repeatedly asked God if spoken word is his calling, and every time he’s received a positive affirmation. While working jobs in the community with Lincoln Unified School District and the Child Abuse Prevention Council, Brandon pursued spoken word as an art form, going as far as to book his own tour

NOVEMBER 2020 | SANJOAQUINMAGAZINE.COM

in 2018-2019, traveling across the United States, Canada, and New Zealand to perform for crowds of anywhere from three people to a couple thousand people. Recalling a performance on his tour where three people showed up, he says he didn’t feel much different on AGT. Sure, the people in front of him could change his life, but, due to COVID-19, there wasn’t a large crowd—just the millions watching him at home. After the show wrapped and Brandon was crowned champion, he returned home. He’s constantly dodging questions about when he’ll move to Hollywood.

Brandon’s answer? He’s not. “I’d rather bring Hollywood here to a degree and open up lanes and opportunities for people,” he says. “I’m not special. I’m just another vessel that allows himself to be used for something good.” His most immediate plans involve falling back into a sense of normalcy with his family and getting back to his work in the community, hosting workshops for young people to realize the viability of storytelling. As restrictions lift, he’ll take his act on the road, but one thing is for sure: Stockton will always be home.

NOT-SO-FUN FLU FACTS As many as 20 percent of people who think they have COVID actually have the flu.

THE CRUDDY SEASON

AN UPDATED SURVIVAL GUIDE TO FLU SEASON IN 2020  BY FAITH LEWIS Already on edge from a global pandemic? Time to add flu season into the mix. While some have suggested that the use of masks, gallons of hand sanitizer, and an abundance of caution might make for a less intense flu season, medical professionals are urging people to stay vigilant, get the flu shot, and stay home if they’re feeling unwell. “If someone has fever, muscle pain, fatigue along with a cough, runny nose, and/or sore throat, there is a high likelihood that he or she has the flu,” says Dr. Amin Seyedkazemi, an Internal Medicine physician with Dignity Health Medical Group in Stockton.

32

NOVEMBER 2020 | SANJOAQUINMAGAZINE.COM

Those with chronic lung diseases or compromised immune systems (like children under two, the elderly, or people on immunosuppressants) are more likely to have complications, but most people will recover from the flu within two weeks. According to Dr. Seyedkazemi, once you develop symptoms, the best plan of action is to contact your primary healthcare provider or visit a clinic or urgent care as soon as possible. Antiviral treatments (like Tamiflu) are most effective within one to two days of the onset of symptoms. But she insists that the most important thing is to prevent getting the flu in the first place by getting vaccinated as soon as the vaccine is available. “Even though it is not 100 percent effective, it still can decrease the severity and duration of flu,” Dr. Seyedkazemi insists.

Approximately eight percent of the US population (roughly 26 million people) will get the flu each year. The flu virus evolves so quickly that last year’s vaccine likely won’t do much to protect you from getting the flu this year. You can spread the flu up to one day before symptoms start. It takes up to two weeks for the flu vaccine to work, so get vaccinated as soon as possible.

COVID CONFUSION

COVID-19 and the seasonal flu share most of their common symptoms including a fever, cough, and that general crap-I’mdefinitely-sick feeling. If you develop these symptoms during flu season, Dr. Seyedkazemi recommends getting tested for both the flu and COVID-19 by contacting your healthcare provider. And just in case you thought 2020 couldn’t throw anything more at us, “It is possible to get the flu and COVID-19 at the same time,” Dr. Seyedkazemi says. Thanks, 2020.

THANKSGIVING DINNER

EAT Lean THIS HOLIDAY SEASON LEANFEAST SERVES UP CLEAN MEALS THROUGH THE HOLIDAYS  BY NORA HESTON TARTE / D It is so easy to give in to over indulgence during the holidays. Whether your kids are encouraging extra baking hours for bonding time, you’re opting for heavy, comfort meals in the cold months, or your social calendar is packed with dinner parties, we all tend to consume more calories and even fatty foods in November and December. There is nothing wrong with giving into a craving, and a healthy relationship with your body and food is most important, but that doesn’t mean we don’t want to fuel ourselves with healthful options, too. Mark Sarale, owner of Nekter Juice Bar and Max Muscle, opened LeanFeast in Lincoln Center as his newest health venture in San Joaquin County. The meal prep shop offers fresh food cooked daily, a better alternative to pre-packaged services. He was first introduced to the franchise model in San Jose where his wife was driving weekly to pick up meals because it was less time consuming for their busy lifestyle than meal prepping all day on a Sunday. After a while they just decided to open their own,

“The quality and taste of the food is great,” Mark Sarale, Owner

and share their meal prep obsession with neighbors. “Your diet is the most important thing besides exercise to stay healthy and fit,” Mark says. “Most people struggle to lose weight because of the food they eat.” Lean Feast offers six different types of seasoned tri-tip, chicken breasts and thighs, turkey meatballs, turkey patties, bison burgers, salmon, shrimp, and swai fish. They also sell plant-based meals to meet

those with diet restrictions. Asparagus, not surprisingly, is a top-selling vegetable. The model works like this: order your meals ahead of time and pick them up for the week Monday through Sunday from the Lincoln Center shop, or opt for delivery. You will be charged per ounce for the protein, plus meals come with a carbohydrate and a veggie for a balanced diet. “We will customize for any diet,” Mark assures.

Whether you’re looking to replace a decadent, over-the-top meal with something simple or you want to enjoy the flavors of Thanksgiving for more than one night, LeanFeast has a solution. In November the shop offers a thanksgiving meal that includes oven roasted turkey, orange sweet potatoes, green beans, and an orange cranberry sauce.

injuries he’d been suppressing over the years including multiple brain injuries that left him with constant migraines, degenerated disks in his back as a result of close proximity to explosions, and severe PTSD. After Jaime got “fixed,” as he calls it, he felt a calling to help others in his position. He believed it was his duty to share his experience with other veterans facing tough times at home. That partnered with news that the nation’s largest veteran’s organization was blowing money on lavish parties in Las Vegas, led Jaime to start his own nonprofit, one that, in his opinion, would do better. “I started sharing my story and working with local veterans,” Jaime says. He organized efforts to make a local vet’s home ADA compliant after he lost his legs, he became a mentor at Veteran Treatment Court, and he started a veteran crisis line. FIX’D is free for anyone who has served in the U.S. military, regardless of how or why they were discharged. Originally funded by veteran donations and Jaime’s retirement checks, the organization is now receiving grants, which makes resources more readily available. When a veteran exits the program “fixed,” they are offered a peer counselor position to pay it forward. Since inception on April 6, 2016, FIX’D has helped 1,300 veterans and their families and successfully intervened in over 311 suicide interventions. “It is working,” Jaime says. “What we're doing is working.”

AS THE WEATHER COOLS, WE MAY NEED TO GET CREATIVE WITH OUR ACTIVITIES. Go for a hike. Even in November there are plenty of local trails to keep you active. The Lodi Lake Nature Trail is always a favorite, just a one-mile loop ideal for a quick run or a family outing. Oak Grove Regional Park has a 1.5-mile trail through old grove trees.

TURKEY TALK FUN FACTS FOR THANKSGIVING DAY FODDER  BY MEGAN MEINTASIS

It’s that time of year again - turkey time! Here’s a little turkey 101 for anyone who wants to know more about what America’s favorite holiday bird is like before it’s rubbed in butter and cooked to perfection.

HEAD

Although a turkey’s head is usually red, white, or blue, it turns a deep red when distressed.

GIZZARD

Turkeys have two stomachs, one of which is called the “gizzard." Small stones are stored in the gizzard, aiding in breaking down food during digestion.

EYES

The placement of a turkey’s eyes on each side of its head gives it the ability to see two objects at once. Turkeys have sharp eyesight during the day, but their nighttime vision is poor.

WINGS

Turkey wings are considered white meat, and the top part of the wing is called a “drumette”. At dusk, wild turkeys use their wings to fly up into trees to roost.

BEARD

All male turkeys grow beards. Turkey beards often measure up to nine inches long, and sometimes even longer. A longer beard usually indicates an older bird.

LEGS

Turkey legs are considered dark meat, and contain around 28 grams of protein per leg. A wild turkey can run up to 25 mph.

TAIL

Male turkeys puff themselves up, and fan out their impressive iridescent tail feathers to get a hen’s attention during mating season.

TURKEY FACTS:

42

SPURS

Both male, and female turkeys are born with spurs, but only the male’s continue to grow and sharpen as the bird ages. This helps an older Turkey establish dominance over a younger bird during mating season.

A female turkey is called a “Hen," and a male turkey is called a “Tom." A young male turkey is called a “Jake," and a baby turkey is called a “Poult.” Only male turkeys make the signature turkey gobble sound. Americans cook over 45 million Turkeys on Thanksgiving Day alone.

Wood fired pizza ovens serve up a new kind of pie 50

NOVEMBER 2020 | SANJOAQUINMAGAZINE.COM

Up! FIRED MOBILE PIZZA OVEN

FIVE WINDOW BEER CO.

From brick and mortar restaurants, to mobile ovens, and breweries too, we’ve rounded up our favorite spots for this delicious dish and we’re dishing out our favorites

for your enjoyment. You might be asking yourself, what is a wood fired pizza? It’s not rocket science, but it is delish. A wood-fired pizza is quite simply, a pizza cooked in a brick oven. So, instead of being heated by electricity or gas, a brick pizza oven employs burning wood inside the oven to create a smoldering hot caldron that can reach anywhere from 500 to 700 degrees Fahrenheit. It’s a beautiful sight to watch as the pizza is cooked using indirect heat trapped by the burning wood in the oven. The result, a pizza that can cook quickly with a charred crust and smoky flavor that will satisfy your taste buds and have you wishing you had one in your own backyard. SJMAG.COM

Viaggio Estate & Winery

If you are looking for a wood fired pizza experience that is next level, look no further than Viaggio Estate and Winery in Lodi Wine Country. One step onto the expansive grounds at Viaggio and you may never want to leave. If there is such a thing as the ultimate food and wine pairing, it’s pizza and red wine. Lucky for us, Viaggio offers up both to locals and tourists weekly. The vast grounds are home to one of the regions original wood fired pizza ovens, and it adorns their charming patio where guests devour weekly pizza specials alongside freshly shucked oysters. Oh, yeah baby! Owners Teri and Larry Lawrence offer a world class experience to enjoy a wood fired pizza every Thursday through Monday from noon-4 PM. And as a bonus, they keep the pies flowing until 8 PM on Fridays. Executive Chef April Guttieriez crafts specialty pizzas with her culinary team that are drool worthy. Chef also pumps out both gluten free and vegan pizza crust for those with dietary restrictions. Always on the menu is the Larry Special, a loaded pepperoni pizza with a charred crust and just the right amount of zesty spice. Their everpopular vegan pizza is also available weekly. But if you want to taste Teri’s favorite pairing, look for the chicken, artichoke, and sun-dried tomato pizza to make its way into the rotation. She loves to serve it alongside Viaggio’s 2017 Ancient Vine Zinfandel, perhaps the ultimate Lodi pairing. So, if you’re in the mood for pizza AND wine, head out to Viaggio for the best of both worlds. VIAGGIO ESTATE & WINERY 100 E. Taddei Rd., Acampo (209) 368-1378 ViaggioWinery.com

You can sense the quality of the pizza dough and smoky influence in every bite. Their pizzas are simple, seasonal, and flavorful. With a larger-than-life pizza menu, Five Window Beer Co. dishes up every kind of pizza you can imagine. From classic pepperoni, to caprese, the Fiery Italian, and It’s Jammin pizza, there is something for everyone. In fact, they recently added a specialty dessert pizza that locals are raving about. Their home-made dough is topped with olive oil, ricotta cheese, blackberries, honey, mint, and sliced almonds. The best part? Ordering is simple and

quick. Head up to the pizza window, order your pie, and wait for your buzzer to go off. And if you are famished, no big deal, because Five Window’s Mugnaini woodfired oven can cook your pizza in just a few minutes. In the meantime, find a spot to sit, order a brew or a glass of Lodi wine, and savor the smell of the pizza oven. There you have it—your weekend is planned. FIVE WINDOW BEER CO. 9 W. Locust St., Lodi (209) 224.8036 FiveWindow.com

Editors Pick

We love the Canadian Bacon, cheddar cheese, and jalapeno pizza for the gooiest cheese pull around! Check out their social media page for updates on when this pie hits the patio.

Five Window Beer Co

If beer and pizza are more your pace—we’ve got you covered. At Five Window Beer Co. owners Charlie Lippert and Joe Ehlers made a winning move after opening their downtown Lodi brewery by purchasing a Mugnaini Brick Pizza Oven and an industrial dough mixer. Then they trained with Pete Murdaca of Pietro’s on how to make stellar pizzas to complement their killer line up of beers. Five Window’s focus is on point. The expansive, industrial themed brewery is an experience. With jumbo Jenga, shuffleboard, cornhole, and beer for days, this Lodi hot spot is popular for game nights, catching a game with friends, or even family night. But what we love most, is that you can gobble up seriously tasty wood-fired pizzas while tossing back a local brew.

Editor’s Pick

The Pickle Pie. This pie has a ranch dressing base, garlic, mozzarella cheese, ham, and bacon. But the kicker—they add both dill and bread and butter pickles for an extra zing. SJMAG.COM

Pietro’s Trattoria

It should come as no surprise that one of our favorite spots to savor a wood fired pizza is at Lodi’s long running King of Italian, Pietro’s Trattoria. For generations, the Murdaca family has been dishing up the tastiest Italian food in Lodi. One of their specialties is undoubtedly their Neapolitan-style, wood-fired pizzas. When the restaurant underwent a remodel, one of the pillars in their kitchen became a Mugnaini Pizza Oven. The Cadillac of pizza ovens, this beauty is visible from their open kitchen design, and it’s appropriately tiled in the colors of the Italian flag. It’s a grand vessel to fire up, and stunning to see in person. The oven is a special tool, but Chef Pete Murdaca insists that great pizza begins with the dough. Using quality ingredients, taking the proper time to let the dough cultivate, and rolling it out to perfection, creates the tastiest base for their specialty pizzas. It’s so popular, the restaurant released their world-famous pizza dough recipe during quarantine for folks to make at home. Pietro’s also boasts an on-site garden offering

the kitchen ample produce from eggplant and basil to melons and squash. What they don’t grow on premise is sourced from our region’s finest local farms like Golden Bear Ranches and R & G Farms, for seasonal touches. From calymyrna figs to heirloom tomatoes to Corto Olive Oil, a simple pie is transformed using the best of the best ingredients. While all their pizzas are delicious, they offer a few specialty food items that kick up the flavor in a major way. Do you like heat? Like, really like heat? Ask for a side of their Calabrian chili paste to spoon over your pizza. It’s smoky, spicy, and down-right scrumptious. If that sounds too adventurous, ask for their chili oil, with just a hint of heat, or freshly grated Parmigiana Reggiano. Bottom line, it doesn’t get much more authentic than Pietro’s. Be sure to make reservations, order on Door Dash, or even make their recipe at home. PIETRO’S TRATTORIA 317 E. Kettleman Ln., Lodi (209) 368-0613 PietrosLodi.com

Editor’s Pick

Picking just one is tough, but simplicity rules with their Marinara pizza. Crushed tomatoes, oregano, basil, roasted garlic, Corto Olive Oil, and parmesan make this a favorite.

Fired Mobile Pizza Oven

At Fired Mobile Pizza Oven, a passion for pizza is a family affair. The husband and wife pizza power couple, Daniel and Sarah Correa, take their mobile pizza oven to every corner of the 209. From the beginning of their adventure, Sarah and Daniel knew they didn’t want to be pigeonholed to a brick and mortar location. Their mobile pizza unit offers them flexibility, a change of scenery, and the ability to throw down some dough anywhere they please! For the Correa’s, the quality of their pizzas can be attributed to three essentials: the oven, the dough, and the sauce. The couple owns an authentic Forno Valoriani Wood Fired Pizza Oven made by Mugnaini. It’s a beauty, and it serves them well. Second is the dough. Fresh, home-made dough is prepped for each event, and

56

NOVEMBER 2020 | SANJOAQUINMAGAZINE.COM

you can taste the difference. Lastly, the sauce. The couple uses the gold standard in pizza sauce making—San Marzano tomatoes. Yum! They also focus on utilizing locally sourced products from farms in our region, because sourcing your food close to home carries a lot of bonuses. If you’re looking to dive into some of the duo’s favorites, try the Hot Boi. They start with a red sauce base and add mozzarella, pepperoni, and jalapenos. Then they hit the pizza with a ranch drizzle and some Mike’s Hot Honey for extra flavor. Fired Mobile Pizza Oven makes their rounds at a few regular spots like Yosemite Meat Market and Idol Beer Works. But they are also available for private or corporate parties, weddings, winery visits, and more. Be sure to stalk their social media so you can get a slice—or three.

Guantonio’s

The latest hot spot for local foodies, Guantonio’s is tossing up legit wood fired pizzas with flair. The newest location serves up authentic pizzas alongside crazy good sides and an eclectic wine list for the hippest take out in town. Owned and operated by the Guantone family—Nick's wife Marisa runs the front of the house and his parents assist in the kitchen—they are no strangers to wood fired oven cooking. In fact, they had the first mobile Mugnaini Pizza Oven in town. The transition to brick and mortar brings their vision full circle, with a home base to serve good eats to the community. But let’s talk pizza. The centerpiece of their open kitchen concept is the beastly charcoal grey Mugnaini Pizza Oven used to cook their gourmet pizzas. Chef Nick Guantone is a master of his craft, working and stoking the fire until It reaches the right temperature. If you want to know what separates their pizza from the rest of the crowd, it’s the dough. The dough is a labor of love, naturally leavened, with timers set to remind Chef to punch it down or work it with his hands. The outcome of this arduous process is a pizza dough that is distinctly delicious, chewy, and smoky. The menu consists of staples like Ezzo Pepperoni and features weekly specials utilizing the bounty of local produce that surrounds us. Try the Fino pizza, loaded with roasted fennel, house fennel sausage, tomato, onion, and farmstead ricotta. The depth of flavor is layered and lingers after every bite. When you’re picking up your pizzas, be sure to check out Guantonio’s wine offerings. The restaurant serves as a funky little wine shop with wines using Lodi grapes for super small production wineries. Of course, you can also find local favorites like Acquiesce Winery and Field’s Family Wines, too. GUANTONIO’S 600 W. Lockeford St., Lodi (209) 263.7152 Guantonios.com

BY THE NUMBERS 46 – the number of

slices the average American consumes each year. $38 billion — annual pizza sales in the U.S. 350 — slices of pizza sold every second. 93 — percentage of Americans who eat pizza once a month. 70,000 — number of pizzerias in the U.S.

THE 411 ON WOOD BURNING PIZZA OVENS A wood fired or brick pizza oven, is one of those bucket list backyard additions we all want in our lives. If you ask us, the Mugnaini Pizza Ovens are the cream of the crop, and wish we had one to take our outdoor entertaining up a notch. With temperatures reaching 500 to 700 degrees Fahrenheit, they are an efficient way to feed a crowd, cook up a pie, and make your backyard smell delish. 1. High heat = less time. It shouldn’t take more than a few minutes to cook a pizza at those temps! 2. Boosts Flavor. The smoke from the wood enhances the pizza’s flavor because the heat is evenly distributed. 3. Helps retain nutritional value of fruits and vegetables on pizzas because they are cooked over an open flame. Longer cooking times in a traditional oven deplete nutrients and antioxidants. 4. Saves Energy. I mean, who isn’t sick of paying high electrical bills?

You need to determine how likely it is that you’ll run into a staffing snafu or other problems sharing the space, or just ask how the venue handles scheduling in these cases to ensure another bride on property won’t compete with your big day.

BOTTOMS UP

MINDING YOUR Q’S and VENUES

Does the venue have a bar? What might seem like a given could turn out to be a more complicated factor than you thought. Not all venues have bars. Other venues may have a bartender on staff, but don’t provide the alcohol or only accept cash. Bride tip: If your dream venue doesn’t have a bar, it doesn’t have to be a Make sure you know who your contact at the venue will be, how much time they’ll be able to devote to you and your wedding, and that you jive – you’ll be working very closely, after all.

ALL THE QUESTIONS YOU SHOULD ASK BEFORE CHOOSING A VENUE  BY FAITH LEWIS The venue sets the tone of your wedding and is instrumental in making your vision a reality. But it’s more than the brick-and-mortar offerings that can make or break your big day. Make sure you won’t have any unpleasant surprises by asking these questions before booking the venue.

LOOKING AT LOGISTICS How many people can be accommodated, what dates are available, and when do we pay? We trust you’ve already thought of these, but that doesn’t make them any less important! You should already have an idea of the size of wedding you want, as

well as your budget. Consider how your guests will get to the venue and where out of town guests can stay. Bride tip: Don’t commit to an exact date before you’ve chosen your venue. You’ll have more flexibility if your dream venue is already booked.

ALL EYES ON YOU Will you have the venue all to yourself or will you be sharing the limelight (and the staff’s attention) with another bride? While many venues will only host one event at a time, sometimes cleanup from an earlier wedding might run long and you’ll need to adjust your own day-of timeline on the fly. Other venues may

dealbreaker! Look into mobile bars like Belle and Aventure Mobile Bar Co.

WHO’S WHO Who is your contact at the venue and which vendors do they recommend? Make sure you know who your contact at the venue will be, how much time they’ll be able to devote to you and your wedding, and that you jive – you’ll be working very closely, after all. Your venue can also be a huge resource when you’re looking for other vendors. Chances are they have their favorites.

bride guide

One of the upsides to living and getting married in wine country is the breadth of vino available at our fingertips. Whether you’re working with a venue that stocks its own varietals or you plan on bringing in some of your favorite local wines from places nearby, you may have trouble selecting the perfect wines to represent you. With this fun breakdown, we’ve come up with some suggestions to get you started.

FOR THE VINEYARD BRIDE… If you’re getting married at a vineyard, opt for a zinfandel or, especially, an old-vine zinfandel to show off the best assets of your wedding venue. We’re fairly certain that just about any local vineyard you choose will be serving up zins since it’s the county’s specialty, so you can’t go wrong with what’s on site.

FOR THE UPSCALE, ROMANTIC AFFAIR… If you consider yourselves wine If you’re lovers, this is your opportunity hosting a to have a little fun.

black tie wedding, perhaps illuminated by city lights at University Plaza Hotel, opt for deep Bordeaux varietals. This includes bold cabernets and fruit-forward merlots (which have made a comeback—trust us!) Something about these dark, heavy reds just screams elegance to us.

FOR THE ITALIAN-INSPIRED EVENT… This is more about the venue and overall air of the wedding. Several venues throughout San Joaquin County are built on Italian inspiration. And many restaurants that may be housing smaller receptions are Italian, too. So, choose appropriate varietals to match the theme—we’re thinking a Nebbiolo or barbera, born in the Piedmont region of Northern Italy.

FOR THE GOLF COURSE WEDDING… A big bonus of saying “I do” on one of our local courses it getting to choose what wines to usher in from a neighboring vineyard. If you’re getting married outdoors on the course, it’s likely warm and you may want to choose lighter wines for guests. We recommend any refreshing white varietal— Acquiesce sells whites only—or lighter pinot noirs.

FOR THE WINEENTHUSIASTS If you consider yourselves wine lovers, this is your opportunity to have a little fun. Choose off-beat varietals not everyone will have tried before, perhaps a tempranillo, Verdelho, or albarino will be fitting.

FOR THE SENTIMENTAL COUPLE… How sweet would it be to toast your new nuptials with a bottle that holds a special place in your heart? Perhaps it’s the first bottle you shared together, or from a favorite wine-tasting excursion. Whatever it is, you won’t get bored sharing the story of your wine from table to table.

bride guide

THE EVENTS BEFORE THE BIG EVENT ALL THE LITTLE SHINDIGS LEADING UP TO THE BIG I DO’S  BY NORA HESTON TARTE Planning a wedding is a massive undertaking, and while we tend to focus on the final event, it’s important not to overlook those smaller celebrations leading up to the wedding. Take a look over all the can’t-skip parties before the big day, and get prepared for multiple celebrations.

HOST: It’s perfectly acceptable to host this one as bride and groom, however, you may also have a parent or close friend offer to throw the party for you. Etiquette says either will do. And if more than one person really wants to host, you can create co-hosts or have more than one party if it makes sense to do so.

ENGAGEMENT PARTY

THE PARTY: This event doesn’t have to be formal. Feel free to ditch the place cards and even the seated dinner and instead have small bites at a friend’s home with ‘gram-worthy décor, or do it happy hour style at a local restaurant. For something even more laid back, this event can be a midday BBQ or even a house party. The choice is really up to you!

EVENT: This is the first big event to celebrate your upcoming nuptials, and in many ways to announce your new status to the masses. Most couples will have one engagement party with family and friends while others choose to have a couple— perhaps to break up larger families (one for the bride’s side and one for the groom’s side?) or to host in more than one locale.

70

NOVEMBER 2020 | SANJOAQUINMAGAZINE.COM

WHO TO INVITE: You can invite just about anyone you plan to invite to the wedding, but engagement parties often have a more intimate guest list. So invite your closest friends, your immediate family, and co-workers.

BRIDAL SHOWER EVENT: This is one of the more popular events leading up to the wedding. Typically it’s girls-only, however co-ed parties are becoming more popular. This event should be a little more formal than the engagement party. It can still be hosted at a friend’s home, but it can also be held at a local event space or a restaurant. Typically it will be a daytime event with some curated activities and structure.

HOST: Family members like sisters or moms may play host to this event. Or the maid or matron of honor, perhaps along with the other bridesmaids, can throw this event for the bride. Sometimes a group effort, especially if you have a tight-knit group of girlfriends, can take the pressure off of one person. THE PARTY: This event can be themed and often it includes pretty décor, plenty of photo ops, and some fun games to break the ice. Oh—and presents! Plus, don’t forget the cake and probably some sort of signature cocktail or bubbly bar. WHO TO INVITE: Again, traditionally this is girl’s only, so make the guest list out of many of the female invitees to your wedding. Don’t skip the groom’s family either. Your future female inlaws should be invited, too!

BACHELOR/BACHELORETTE PARTIES EVENT: This is the big night out to say farewell to the single life! Most brides and grooms have their own. It can be in town or out of town in a locale chosen by the

bride or her maid of honor. Sometimes, however, brides and grooms decide to have a joint party or co-parties where they meet up part way through. HOST: The best man and/ or maid of honor plans these events, sometimes with help from the rest of the bridal party.

72

NOVEMBER 2020 | SANJOAQUINMAGAZINE.COM

REHEARSAL DINNER EVENT: The night before the wedding you’ll dine with outof-town guests and members of your wedding party, likely after the wedding rehearsal.

HOST: Tradition says the groom’s family hosts this event, but really any close family member or friend of the bride or groom could pick up the duties.

THE PARTY: This is up to your discretion or the discretion of the host, but typically it’s a late night or over-night party. Or, it could be a day (or two!) of wine tasting.

THE PARTY: Hosted at a restaurant or a family home, this event is typically relaxed but not always casual. It always includes a full dinner and mostly just focuses on time to socialize.

WHO TO INVITE: This may be the smallest guest list of any of the events. Choose wisely but always include your wedding party. Other close friends, coworkers, and siblings/cousins may also make the cut.

WHO TO INVITE: This isn’t a time to invite the whole wedding to a second meal. Instead, keep this list to the wedding party, close family and friends, and outof-town guests.

WHAT to EXPECT When You’re BUDGETING  BY NORA HESTON TARTE

When it comes to hosting a wedding, setting a budget can be one of the most difficult tasks. That’s because marrying your bank account to the Instagram wedding of your dreams filled with photoworthy trends and fun little extras doesn’t always end in happily ever after. And if you’re getting married in California, the average cost does run higher than many other states. But instead of letting budget put a damper on your marital bliss, give yourself a reality check early and take the steps to stay within the bounds of your budget. “I like to tell my clients when preparing the budget to plan on everyone who they invited attending. That way when they finalize the guest count, they won’t be

74

NOVEMBER 2020 | SANJOAQUINMAGAZINE.COM

surprised with unexpected costs,” says Katie Fehn at Stockton Golf & Country Club. It’s easy to give in to those little upsells from alcohol offerings to extra florals. But the couple hundred dollars here and there adds up. “A bride and groom need to set their budget ahead of time, and have a wedding coordinator attach a dollar amount for each item they wish to have,” suggests Teri Lawrence, owner of Viaggio Estate & Winery. An itemized spreadsheet that shows the cost of each item is really helpful and gives you a better visual when you’re budgeting, making it easier not to miss anything, like sales tax and gratuity. Another bride tip is to focus on a couple of elements most important to you. So, if

you have your eyes set on gorgeous photos, spend more on your photographer, pay for extra hours, or consider videography services. If you’re into décor, set aside extra money for rentables or florals. Whatever it is, focusing the majority of your budget on a few areas and spending less on other items will help keep costs down. “Sometimes they can do something as simple as changing to a different napkin for dinner, or a less expensive appetizer,” Teri says. “Planning a wedding especially right now can be difficult and sometimes expensive,” says Jennifer Winn of Hutchins Street Square. “One way to save on budget is to do the catering yourself or hire a family-owned restaurant.”

HOLIDAY IN

HEALDSBURG A GETAWAY FILLED WITH WINING, DINING, & THE GREAT OUTDOORS  BY NORA HESTON TARTE

78

NOVEMBER 2020 | SANJOAQUINMAGAZINE.COM

For those who are comfortable traveling, 2020 is the year of the road trip! Instead of loading up onto planes to scout far off destinations, we’re staying close to home where our own vehicles offer safer transport from one locale to the next. Part of vacationing close to home is searching out lesserknown destinations, and perhaps ones with slightly smaller crowds. That’s how we found ourselves in Healdsburg, soaking up the sunshine and searching for the bottom of our glass of pinot noir.

associated with big California reds as well as the more subtle characteristics of matured Italian wines. They even have a few zins they do well, which, coming from the zin capital, is worth tasting and comparing (it’s no Lodi, but they do impress). 107 North St.

SECOND STOP: SHOP.

There is more than wine to explore in the plaza. After a few glasses, or even between stops, step into the boutiques and browse around. Ooh La Luxe was the first to catch our eye—a clean, bright, Boho-chic boutique exploding with trendy styles and affordable brands of sun dresses, casual tops, detailed bralettes, and more. 326 Healdsburg Ave. We also stepped into Copperfield’s Books, one of those independent bookstores we love to find in small towns. From new releases to kid’s finds, the little shop housed everything, but the best feature was Jordan Vineyard

FIRST STOP: WINE.

Healdsburg is about one hour outside of Napa, but it’s certainly still within wine country. Driving past the familiar vineyards, you’ll soon escape into a treelined paradise, a land full of greenery masking the opulent driveways that will lead you into some of the most gorgeous wineries in California. Jordan Vineyard and Winery is one such place. To adhere to social distancing guidelines in place by Gov. Gavin Newsom, the upscale winery is hosting patio services to delight guests. The Paris on the Terrace lunch for example transports diners to France, where romantic music scores the afternoon experience featuring a parade of gourmet dishes made mostly of the on-site finds as well as a sampling of several decadent wines including a true Champagne (created in partnership with a winery in France) and vintage Cabernet Sauvignons. The meals rotate but when we visited we enjoyed salmon topped with roe over a bed of avocado and a shredded carrot salad with carrot puree and raspberry vinaigrette. That was only course one of a multi-course meal that included dessert and a charcuterie board, as well. 1474 Alexander Valley Rd. After exiting the grounds, it was time to visit some of the area’s other wineries. Driving the 15 minutes into town, the

Healdsburg Plaza is home to countless options for wine. Simply walking around you’re sure to find somewhere that tickles your fancy, but of course, we have suggestions. Thumbprint Cellars offers up gorgeous and complex wines with cheeky descriptions etched right onto the bottle. The artisan winery, due to COVID-19 regulations, provides outdoor seating plus a sampling of snacks to taste with each wine. You can choose from a long list of varietals including the Three Some Red Blend and the 2018 Arousal (you see what they’re getting at with these names). 102 Matheson St. A quick jaunt down the street will bring you into Portalupi Winery, an Italian label serving wines from vineyards across California. A tasting of up to six wines is available (and the fee is waived with a bottle purchase). When we visited, we were escorted to a private patio seat and served accompaniments including pop rock pink chocolate and Cheetos to bring out flavors in the wine. The Cal-Ital wines (made in California with Italian influences) evoke the deep, rich flavors

handwritten notecard reviews from staff sharing their top picks. Plus, books for sale take up sidewalk space as well so you can browse a small sampling of the shop’s interior without walking inside. 104 Matheson St. On Saturdays, there is also an opportunity to peruse the Healdsburg Farmer’s Market, one block from the plaza, across the street from the restaurant The Wurst. Here you can grab fresh produce or curated goods from local vendors as well as something to snack on. The vendors are constantly rotating so there is always something new. We recommend checking out Anna’s Seafood, serving up fresh sashimi and other sustainably sourced goods from the sea, Aroma Floral for its collection of dried floral decorations, and Dry Creek Peach if you’re trying to get your hands on some truly juicy peaches.

THIRD STOP: DINE.

The food in Healdsburg something else, and to be honest, you can dine to your heart’s desire without ever leaving the plaza. Dinner at KINSmoke is divine. It is the second location of this BBQ joint in town. But it isn’t a hole-in-the-wall. Like all things in the plaza, KINSmoke is refined, serving up downhome comfort food with added class. We definitely recommend bringing your appetite and not skimping on the sides. The mac ‘n cheese here is devilishly good (too good to share) and the spiced sweet potato tater tots served with maple dipping sauce are subtly sweet and not so spicy. For dinner, choose from piles of meat and sandwiches exploding with smoked chicken and pulled pork. Or, dabble in the short-but-sweet seafood menu—we ordered up the Wood Grilled Salmon served with mashed potatoes and crispy Brussel sprouts. 304 Center St. Another worthy dinner spot is Valette. Depending on how COVID rules change, you may be picking up this meal to go, however the restaurant did add outdoor seating beginning August 14. If you opt for pick-up, the crew makes it fun. When you pull up to the side entrance you’ll be greeted with a team of smiling, masked faces (well, at least we think they are smiling). While you wait for your food wave to the staff, chat with your waiter, and have a glass of wine poured for you upon pull-up. The food here is truly unmatched, and everyone in town will echo that sentiment. We opted for the Chef’s “trust me” menu. The tasting menu doles out several courses to be enjoyed one by one, but each is a surprise to the guest. From a garden salad drizzled with strawberry dressing to an olive-crusted salmon cooked to absolute perfection, every bite was delicious from the dinner rolls to dessert. 344 Center St. For lunch, Oakville Grocery is a good choice. The merchant finds success as an indoor shop filled with luxury picnic item as well as a full deli. Here you can grab your drinks, your sides, and all of your snacks for a beautiful gourmet lunch. Or, you can Oakville Grocery

order a sandwich or pizza to go. We can’t get enough of the chicken gruyere panini, stuffed with chicken, bacon, gruyere cheese, balsamic onions, and dijionaise served on warm artisan bread. Plus, there’s wine on tap. If you want to dine in, the outdoor patio opens up into the plaza and features a cute array of tables for seating after you order and pay. 124 W. Matheson St. If you’re craving dessert, we’ve got a cool suggestion. Wicked Slush comes highly recommended, a combination of slush desserts and soft serve ice cream in mouth-watering flavors. You’ll notice we’re calling it slush—and there’s a reason for that. The owner, Amy, says her desserts are not shaved ice, a slushy, or an Icee. Growing up on the East Coast, they deem this dessert exactly that, slush, or Italian Ice to New Yorkers. Looking for a combo? Go half and half on a soft serve and slush dessert. 13840 Healdsburg Ave.

STEP 4: SLEEP. Looking for a cozy place to curl up at night? Healdsburg Inn on the Plaza offers the ideal location for those visiting, especially first-timers. Located smack dab in the middle of the plaza, this boutique hotel oozes oldschool charm. The quaint hotel hands out actual keys—not cards—to guests, and even gives everyone staying the night a key to the front door (because they lock up at 8 PM). Stay here for quiet luxury. The guestrooms vary but you can expect creature comforts in each ranging from balconies to jetted tubs to in-room fireplaces. Plus, the breakfast here is delicious and served room-service style during COVID.112 Matheson St. Our other top pick for a night in Healdsburg is just a hop, skip, and a jump away. It’s a little outside of the Plaza, but not too far. Dry Creek Inn is a more casualstyle hotel but there is a Wine Country Suite that is

While we love to be wined and dined, no trip into Healdsburg would be complete without stepping foot into the Russian River. Certainly a highlight, getting onto that water is a can’t-miss experience. Offered through Russian River Adventures, full day tours are family-friendly and hosted by Larry Laba and/or his team, featuring a self-guided rafting tour through the vineyards and redwoods. An excursion includes use of an inflatable canoe (don’t worry, it’s unbelievably sturdy) and e-bikes to get yourself back. A fullday tour includes a nine-mile paddle along the Russian River. Then, you’ll hop on a couple of electronic bicycles (don’t worry-the crew

will transport your stuff back for you) and ride through the vineyards back to home base. While cruising down the river, you’re likely to see a lot of wildlife, though it varies from season to season, including bald eagles, hawks, sea otters, and turtles. While you make your way down the shallow river, enjoy the scenery, and pop out to swim when the weather is nice. In a couple of places you may hit small currents but the flow is very mild, and easy enough for kids to maneuver. Expert Tip: If you haven’t eaten yet, step next door to Healdsburger after your tour. The service may be a tad slow, but the food is worth the wait. 20 Healdsburg Ave.

BLOWING SMOKE

THE STIGMAS AND STEREOTYPES STANDING BETWEEN SENIORS & MEDICAL MARIJUANA  BY FAITH LEWIS

life

Nearly a quarter century ago, California became the first state to legalize the use of marijuana for medical use. This meant that people suffering from chronic pain or conditions such as epilepsy now had an alternative to traditional treatments with hit or miss results. But seniors were slower to seek out this treatment option. Some were too embarrassed to ask their doctors due to stigma and fear of judgment. Others simply didn’t know that it could be used to treat their symptoms. SJMAG.COM

good life

Now the tides are turning for the “children of the 60s” and the generation of flower power and free love is slowly starting to embrace the idea of medical marijuana. According to a study published in the Journal of the American Medical Association, the rate of older adults (age 65 and up) turning to marijuana to relieve chronic pain and treat other medical concerns has jumped significantly in the last decade from 0.4 percent in 2006 and 2007 to nearly three percent in 2015 and 2016. So what conditions might medical marijuana help seniors cope with? And what does the future hold for marijuana use in the medical field?

TREATMENT FOR CHRONIC CONDITIONS According to some reports, there are upwards of 150 different chemicals found naturally in marijuana (though some more conservative estimates report closer to 70 chemicals). Each one has varying effects on the human body. Depending on the treatment, medical marijuana use can pinpoint some of these chemicals to produce a desired result or can involve all of them.

88

ALZHEIMER’S DISEASE Alzheimer’s is a degenerative disease that causes the loss of memory and cognitive thinking skills. Though much is still not understood about the causes and progression of Alzheimer’s disease, it is thought that beta-amyloid proteins are likely the cause. Several studies have published promising results that tetrahydrocannabinol (THC) and other chemicals found in marijuana can be effective in slowing the production of beta-amyloid proteins.

CANCER Marijuana is not used to treat the cancer itself, but it has proven effective in alleviating nausea caused by chemotherapy treatments. An FDA-approved prescription pill currently uses a man-made, synthetic form of THC.

CHRONIC PAIN Chronic pain can be caused by a wide variety of conditions. Chronic pain management remains the top reason people turn to medical marijuana, with more than 60 percent of medical marijuana users depending on it to manage chronic pain, according to a 2017 study.

BRUNCH AT BUD’S

BUD’S SEAFOOD GRILLE HAS A SUNDAY TRADITION  BY NORA HESTON TARTE / D DAN HOOD

209

Every Sunday, Bud, Matt, and Jeanne Millsaps serve up their customary brunch, a weekly service the Bud’s Seafood Grille owners has been doling out for nearly 27 years. “It is a special treat on a special day,” Jeanne says of the restaurant’s brunch. “People are relaxed and want to enjoy each other and are often celebrating.” Once a week from 10 AM-2 PM, morning meals are served with breakfast staples including muffins, coffee cake, fresh seasonal fruit, bagels with cream cheese, herbed potatoes, coffee, and champagne. But those extras aren’t the stars of the show. In true Bud’s fashion, it’s the bountiful seafood that keeps guests coming back SJMAG.COM

The cocktails are served with fresh muddled fruit, Meyer lemon vodka, and mojito mix, and come in two flavors—strawberry kiwi or cucumber watermelon. Enjoy your brunch on the patio. Bud’s has always offered outdoor seating in picturesque Lincoln Center but the eatery has updated its outdoor space with an extended deck to serve more customers during COVID. “Brunch is lovely outside, especially in the fall,” Jeanne says. And, when it starts to cool off, there are plenty of heaters to warm the space up.

clout anymore. In fact, he maintains it’s safe to eat oysters year round because they are typically farmed in oyster beds in the ocean instead of collected wild. “They are available all the time just like mussels,” ORDER OYSTERS: Bud says. If they are wild, be careful. Red Bud’s Seafood Grille tides taint the creatures, but it’s rare to 314 Lincoln Ctr., Stockton find wild oysters on a menu. (209) 956-0270 If you ask Bud when the best time to BudsSeafood.com eat oysters is, he’ll tell you the winter

The “R” Rule. If you eat oysters, you’ve heard it before, and depending on who you ask, the rule either matters a lot or not at all. If you’re not familiar, here it is: the “R” Rule refers to the months that it is safe to eat oysters, warning fans to only consume the seafood in months with the letter R, (September-April). Bud Millsaps, owner of Bud’s Seafood, says the rule doesn’t carry the same

months, specifically November through February. “They are different in the summer compared to in the winter,” Bud says. In the winter, “they are real plump and full.” Again, they are safe to consume anytime because oysters are commercially produced, but you’ll get better quality when it’s colder out, according to Bud. When you open an oyster, the aroma is mild and slightly sweet, explains Bud, who has been serving oysters for 40 years. “If you open them up, you smell them, it’s like you smell the sea,” he says. And if you haven’t tried an oyster before, the best approach is to go ahead and order up. There is no real comparison to the taste. “They just have their own flavor." At Bud’s, oysters are served to order. Meaning when someone orders a batch, the crew shucks them on site using an oyster shucking tool—a small stubby stainless steel utensil—and serves them on a plate of ice with lemon, cocktail sauce, and horseradish. Never, he warns, use a regular knife to shuck an oyster. At Bud’s Seafood Grille, Bluepoint oysters from the Chesapeake Bay area near New York are the specialty. It’s an all-around oyster, a classic that most can enjoy. On Thursdays, Bud’s offers an oyster special. You can order as many as you want from 4-7 PM for $2 each, or come in any other time and grab six for $16.50. Popularly, people enjoy oysters with beer and crackers or sourdough bread. If you want to get fancy, Bud will throw together Oysters Rockefeller on demand, complete with bleu cheese crumbles, fresh spinach, and garlic butter.

THREE ASIAN SPIRITS THE DIFFERENCE BETWEEN SOJU, SHOCHU, AND SAKE  BY NORA HESTON TARTE

SAKE

SHOCHU

SOJU

Sake is most akin to beer, made with grains and fermented with yeast. Served cold, hot, or room temperature, there are a lot of ways to enjoy sake and, like beer, it offers a range of flavors. Traditionally, sake is served in ceramic flasks called tokkuri and poured into small cups called choko. For hot sake, these vessels keep the liquid toasty, but they are also used with cold or room temperature sake, too. This beverage can be picked up at just about any Asian restaurant, including Mikasa Asian Bistro & Sushi Bar, Midori Fine Asian Cuisine, or Komachi Sushi. Komachi has a separate sake menu with large and small servings of hot or chilled sake to choose from.

This ancient Japanese liquor dates back at least 500 years and can be made from sweet potatoes or barley. Like sake, it is similar to a beer as the koji mold breaks down the starch and ferments the beverage, but is classified as a distilled liquor. It is often ordered on the rocks but can also be used as a replacement liquor in many drinks. Some like that the ABV of shochu is low—a common charactertisic when comparing Asian liquors to American liquors—about 20-30 percent on ice or 12-15 percent in a mixed cocktail. At Komachi, Tim and Sunny Chang serve a Shochu Yuzu Lemon Drop, Shochu Moscow Mule, and Peach Shochu Cocktail to guests.

Soju is often used as a low-alcohol celebratory drink, like a Japanese tequila, and it is ranked as the world’s best-selling liquor. Made with sweet potatoes, wheat, or tapioca, the distilled spirit comes in a variety of flavors and aromas. Like many Asian liquors, soju doesn’t have one purpose. Harry Yu, owner of Mikasa and Midori, says you can drink it on the rocks, straight up, or mix it into cocktails. The ABV typically falls under 24 percent so it can be classified as a beer/wine in California. Hailed as the National Drink of South Korea, there are a lot of customs that come with drinking soju. Many will take it as a shot, chilled, but if you’re keeping with tradition you may be forbidden from pouring your own shot.

IT ALL STARTED WITH A PUMPKIN PATCH 5 TEEN FARMS RAISES MONEY TO FUND SCHOOL TRIPS  BY NORA HESTON TARTE In Summer 2019, five teens from Lodi Academy were planning ahead for their fall sophomore biology trip to the Mendocino Coast. The price tag on this venture, however, was steep. So, the friends since kindergarten got creative. Using a plot of land from one member’s grandparent’s property, the crew—Daphne McCann, Dylan Kaestner, Ethan Nevis, Jaylen Lemos, and Spencer Hall—started growing pumpkins to sell. When the holidays hit, they shifted to holiday décor using wooden pallets, and in Spring, the fivesome planted a garden. Before they knew it, the fall trip was done and the group now had a new venture ahead—an East Coast history trip was scheduled for Spring 2021. Every season, the goods change to match demand. What started with pumpkins and holiday décor has grown to include canned foods and fresh fruits and vegetables. “Instead of just pumpkins, we planted all kinds of produce: tomatoes, cucumbers, green beans, etc.,” Spencer Hall, 16, says.

PERFECT PERSIMMONS  BY SUZANNE LEDBETTER, FINE FOODIE PHILANTHROPIST

Talk about the underdog of fall fruits. Believe it or not, the persimmon, native to China, is a berry. The perfect fall food, persimmons are in season from September through December and can be used in both savory and sweet recipes. They add a delicate sweetness to baked goods and bring a savory component to holiday salads or appetizers. But what does one taste like? It has the crispness of an apple, the sweetness of an apricot, and flesh like a firm tomato. Basically, it’s the most unappreciated fall fruit in America. So, go ahead—give them a try. But before you do, read on for some cooking inspo!

KNOW YOUR TYPES Guess what? Not all persimmons are created equal. Learn the difference now! Hachiya Persimmons are an astringent variety that have a pale orange skin and are heart or acorn shaped. But you do not want to eat these raw. If you don’t like persimmons, you probably thought these were for snacking. But they aren’t. Hachiya’s are

excellent in baked goods, but they need to be incredibly soft when used. They are a delicate fruit suitable for cookies, pies, jams, and puddings. Fuyu Persimmons are a non-astringent variety with a vibrant orange skin, and firm-to soft-flesh that can be eaten raw. These tomato shaped beauties are beautiful when incorporated into a fall salad, appetizer, or even as a replacement for a crostini.

HARVEST CROSTINI INGREDIENTS

oz. cream cheese oz. crumbled feta cheese 2 tbsp. olive oil 1 tbsp. maple syrup 1 tsp. fresh lemon juice ½ tsp. sea salt ½ tsp. garlic powder ½ tsp. onion powder ¼ tsp pepper 1 ½ tsp. fresh mint, chopped fine, plus more for garnish 1 baguette, cut into rounds on the bias 2 persimmons, sliced into rounds, and cut in half 1 c. pomegranate arils ½ c. chopped walnuts
