Quinoa Salad Ingredients: ½ box organic Quinoa (rinse, drain, and cook according to direction on the box – allow to cool if you want a cold salad) ADD: Cherry tomatoes, halved Avocado, diced Green peas (fresh or defrost frozen peas) Bell pepper, chopped Fresh Basil, chopped
Preparation: 1. Squeeze fresh lemon juice over the salad and toss. 2. Add a scoop of hummus on top of each serving.
Variations: Use chopped raw vegetables of your choice! Add some raw goat crumbled feta cheese and an option.
