Sweet Potato Salad with Chili-lime Dressing
Ingredients: (6 servings)
For Salad: 2 lbs. organic sweet potatoes, peeled and cut into 1” chunks (Boil for 710 minutes, drain and place into a large glass bowl) 1 medium organic sweet red bell pepper 1 bunch scallions, finely chopped For Dressing: 4 tablespoons organic olive oil 2 tablespoons fresh squeezed lime juice 1 ½ teaspoons chili powder 1 teaspoon ground cumin ½ cup cilantro, finely chopped 1 teaspoon unrefined sea salt 1 teaspoon black pepper
Preparation: 1. Mix the dressing. 2. Toss the potatoes and vegetables in a large bowl with the dressing.
