Apricot An apricot is a fruit or the tree that bears the fruit. Usually, an apricot tree is from the tree species Prunus armeniaca, but the species Prunus brigantina, Prunus mandshurica, Prunus mume, and Prunus sibirica are closely related, have similar fruit, and are also called apricots.
Description The apricot is a small tree, 8–12 m (26–39 ft) tall, with a trunk up to 40 cm (16 in) in diameter and a dense, spreading canopy. The leaves are ovate, 5–9 cm (2.0–3.5 in) long and 4–8 cm (1.6–3.1 in) wide, with a rounded base, a pointed tip and a finely serrated margin. The flowers are 2–4.5 cm (0.8–1.8 in) in diameter, with five white to pinkish petals; they are produced singly or in pairs in early spring before the leaves. The fruit is a drupe similar to a small peach, 1.5–2.5 cm (0.6–1.0 in) diameter (larger in some modern cultivars), from yellow to orange, often tinged red on the side most exposed to the sun; its surface can be smooth (botanically described as: glabrous) or velvety with very short hairs (botanically: pubescent). The flesh is usually firm and not very juicy. Its taste can range from sweet to tart. The single seed is enclosed in a hard, stony shell, often called a "stone", with a grainy, smooth texture except for three ridges running down one side.
Cultivation and uses History of cultivation: The origin of the apricot is disputed. It was known in Armenia during ancient times, and has been cultivated there for so long that it is often thought to have originated there.[4][5] Its scientific name Prunus armeniaca (Armenian plum) derives from that assumption. For example, the Belgian arborist baron de Poerderlé, writing in the 1770s, asserted, "Cet arbre tire son nom de l'Arménie, province d'Asie, d'où il est originaire et d'où il fut porté en Europe ..." ("this tree takes its name from Armenia,
province of Asia, where it is native, and whence it was brought to Europe ...").[6] An archaeological excavation at Garni in Armenia found apricot seeds in an Eneolithic-era site.[7] Despite the great number of varieties of apricots that are grown in Armenia today (about 50),[5] according to the Soviet botanist Nikolai Vavilov its center of origin would be the Chinese region, where the domestication of apricot would have taken place. Other sources say that the apricot was first cultivated in India in about 3000 BC.[8] Its introduction to Greece is attributed to Alexander the Great;[8] later, the Roman General Lucullus (106–57 BC) also would have imported some trees – the cherry, white heart cherry, and apricot – from Armenia to Rome[citation needed]. Subsequent sources were often confused about the origin of the species. John Claudius Loudon (1838) believed it had a wide native range including Armenia, the Caucasus, the
Himalayas, China, and Japan.[9] Apricots have been cultivated in Persia since antiquity, and dried ones were an important commodity on Persian trade routes. Apricots remain an important fruit in modern-day Iran, where they are known under the common name of zard-ālū.
Cultivation Although the apricot is native to a continental climate region with cold winters, it can grow in Mediterranean climates if enough cool winter weather allows a proper dormancy. [citation needed] A dry climate is good for fruit maturation. The tree is slightly more cold-hardy than the peach, tolerating winter temperatures as cold as −30 °C (−22 °F) or lower if healthy. A limiting factor in apricot culture is spring frosts: They tend to flower very early (in early March in western Europe), meaning spring frost can kill the flowers. Furthermore, the trees are sensitive to temperature changes during the winter season. In China, winters can be very cold, but temperatures tend to be more stable than in Europe and especially North America, where large temperature swings can occur in winter. Hybridisation with the closely related Prunus sibirica (Siberian apricot; hardy to −50 °C (−58 °F) but with less palatable fruit) offers options for breeding more coldtolerant plants.[11] Prunus sibirica (Siberian apricot; hardy to −50 °C (−58 °F) but with less palatable fruit) offers options for breeding more cold-tolerant plants. Apricot cultivars are most often grafted onto plum or peach rootstocks. The scion from an existing apricot plant provides the fruit characteristics, such as flavour and size, but the rootstock provides the growth characteristics of the plant. Cultivators have created what is known as a "black apricot" or "purple apricot", (Prunus dasycarpa), a hybrid of an apricot and the cherry plum (Prunus cerasifera). Other apricot–plum hybrids are variously called plumcots, apriplums, pluots, or apriums. Apricots have a chilling requirement of 300 to

900 chilling units. They are hardy in USDA zones 5 through 8. Some of the more popular US cultivars of apricots include 'Blenheim', 'Wenatchee Moorpark', 'Tilton', and 'Perfection'. An old adage says an apricot tree will not grow far from the mother tree; the implication is that apricots are particular about the soil conditions in which they are grown.
Kernels
Seeds or kernels of the apricot grown in central Asia and around the Mediterranean are so sweet, they may be substituted for almonds.[citation needed] The Italian liqueur amaretto and amaretti biscotti are flavoured with extract of apricot kernels rather than almonds.[citation needed] Oil pressed from these cultivar kernels, and known as oil of almond, has been used as cooking oil. On average, bitter apricot kernels contain about 5% amygdalin and sweet kernels about 0.9% amygdalin.[13] These values correspond to 0.3% and 0.05% of cyanide. Since a typical apricot kernel weighs 600 mg, bitter and sweet varieties contain respectively 1.8 and 0.3 mg of cyanide.
Dried apricots Dried apricots are a type of traditional dried fruit. When treated with sulfur dioxide (E220), the color is vivid orange. Organic fruit not treated with sulfur vapor is darker in color and has a coarser texture. The world's largest producer of dried apricots is Turkey.
Medicinal and nonfood uses Cyanogenic glycosides (found in most stone fruit seeds, bark, and leaves) are found in high concentration in apricot seeds. Laetrile, a purported alternative treatment for cancer, is extracted from apricot seeds. Apricot seeds were used against tumors as early as AD 502. In England during the 17th century, apricot oil was also used against tumors, swellings, and ulcers.
Etymology The scientific name armeniaca was first used by Gaspard Bauhin in his Pinax Theatri Botanici (page 442), referring to the species as Mala armeniaca "Armenian apple". It is sometimes stated that this came from Pliny the Elder, but it was not used by Pliny. Linnaeus took up Bauhin's epithet in the first edition of his Species Plantarum

in 1753.[17] The name apricot is probably derived from a tree mentioned as praecocia by Pliny. Pliny says "We give the name of apples (mala) ... to peaches (persica) and pomegranates (granata) ..."[18] Later in the same section he states "The Asiatic peach ripens at the end of autumn, though an early variety (praecocia) ripens in summer – these were discovered within the last thirty years ...". The classical authors connected Greek armeniaca with Latin praecocia:[19] Pedanius Dioscorides' " [20] and Martial's "Armeniaca, et praecocia latine dicuntur".[21] Putting together the Armeniaca and the Mala obtains the well-known epithet, but there is no evidence the ancients did it; Armeniaca alone meant the apricot. Nonetheless, the 12th century Andalusian agronomist Ibn al-'Awwam refers to the species in the title of chapter 40 of his Kitab al-Filaha (The Book of Agriculture) as "apple from Armenia", stating that it is the same as or ("al-mishmish" or "albarqūq"). Accordingly, the American Heritage Dictionary under apricot derives praecocia from praecoquus, "cooked or ripened beforehand" [in this case meaning early ripening], becoming Greek πpraikókion "apricot" and Arabic al-barqūq, a term that has been used for a variety of different members of the genus Prunus (it currently refers primarily to the plum in most varieties of Arabic, but some writers use it as a catchall term for Prunus fruit).
In culture The Chinese associate the apricot with education and medicine. For instance, the classical word (literally: "apricot altar") which means "educational circle", is still widely used in written language. Chuang Tzu, a Chinese philosopher in 4th century BCE, told a story that Confucius taught his students in a forum surrounded by the wood of apricot trees.[24] The association with medicine in turn comes from the common use of apricot kernels as a component in traditional Chinese medicine, and from the story of Dong Feng, a physician during the Three Kingdoms period, who required no payment from his patients except that they plant apricot trees in his orchard on recovering from their illnesses, resulting in a large grove of apricot trees and a steady supply of medicinal ingredients. The term "Expert of the Apricot Grove" is still used as a poetic reference to physicians.
The banana is an edible fruit, botanically a berry,[1][2] produced by several kinds of large herbaceous flowering plants in the genus Musa. [3] In some countries, bananas used for cooking may be called plantains. The fruit is variable in size, color and firmness, but is usually elongated and curved, with soft flesh rich in starch covered with a rind which may be green, yellow, red, purple, or brown when ripe. The fruits grow in clusters hanging from the top of the plant. Almost all modern edible parthenocarpic (seedless) bananas come from two wild species – Musa acuminata and Musa balbisiana. Musa species are native to tropical Indomalaya and Australia, and are likely to have been first domesticated in Papua New Guinea.[4][5] They are grown in at least 107 countries,[6] primarily for their fruit, and to a lesser extent to make fiber, banana wine and banana beer and as ornamental plants. Worldwide, there is no sharp distinction between "bananas" and "plantains". Especially in the Americas and Europe, "banana" usually refers to soft, sweet, dessert bananas, particularly those of the Cavendish group, which are the main exports from banana-growing countries. By contrast, Musa cultivars with firmer, starchier fruit are called "plantains".
Description The banana plant is the largest herbaceous flowering plant.[7] All the above-ground parts of a banana plant grow from a structure usually called a "corm".[8] Plants are normally tall and fairly sturdy, and are often mistaken for trees, but what appears to be a trunk is actually a "false stem" or pseudostem. Bananas grow in a wide variety of soils, as long as the soil is at least 60 cm deep, has good drainage and is not compacted.[9] The leaves of banana plants are composed of a "stalk" (petiole) and a blade (lamina). When a banana plant is mature, the corm stops producing new leaves and begins to form a flower spike or inflorescence. A stem develops which grows up inside the pseudostem, carrying the immature inflorescence until eventually it emerges at
Banana the top.[14] Each pseudostem normally produces a single inflorescence, also known as the "banana heart". In the plantation system of cultivation, only one of the offshoots will be allowed to develop in order to maintain spacing. The banana fruits develop from the banana heart, in a large hanging cluster, made up of tiers (called "hands"), with up to 20 fruit to a tier. The hanging cluster is known as a bunch, comprising 3–20 tiers, or commercially as a "banana stem", and can weigh 30–50 kilograms (66–110 lb). Individual banana fruits (commonly known as a banana or "finger") average 125 grams (0.276 lb), of which approximately 75% is water and 25% dry matter (nutrient table, lower right).
Etymology The word banana is thought to be of West African origin, possibly from the Wolof word banaana, and passed into English via Spanish or Portuguese.
Taxonomy
The genus Musa was created by Carl Linnaeus in 1753.[26] The name may be derived from Antonius Musa, physician to the Emperor Augustus, or Linnaeus may have adapted the Arabic word for banana, mauz.[27] Musa is in the family Musaceae. The APG III system assigns Musaceae to the order Zingiberales, part of the commelinid clade of the monocotyledonous flowering plants. Some 70 species of Musa were recognized by the World Checklist of Selected Plant Families as of January 2013;[26] several produce edible fruit, while others are cultivated as ornamentals.[28]
Bananas and plantains In regions such as North America and Europe, Musa fruits offered for sale can be divided into "bananas" and "plantains", based on their intended use as food. Thus the banana producer and distributor Chiquita produces publicity material for the American market which says that "a plantain is not a banana". The stated differences are that plantains are more starchy and less sweet; they are eaten cooked rather than raw; they have thicker skin, which may be green, yellow or black; and they can be used at any stage of ripeness. [34] Linnaeus made the same distinction between plantains and bananas when first naming two "species" of Musa.[35] Members of the "plantain subgroup" of banana cultivars, most important as food in West Africa and Latin America, correspond to the Chiquita description, having long pointed fruit. They are described by Ploetz et al. as "true" plantains, distinct from other cooking bananas.[36] The cooking bananas of East Africa belong to a different group, the East African Highland bananas,[12] so would not An alternative approach divides bananas into dessert bananas and cooking bananas, with plantains being one of the subgroups of cooking bananas. Historical cultivation Early cultivation : Farmers in Southeast Asia and Papua New Guinea first domesticated bananas. Recent archaeological and palaeoenvironmental evidence at Kuk Swamp in the Western Highlands Province of Papua New Guinea suggests that banana cultivation there goes back to at least 5000 BCE, and possibly to 8000 BCE. [4][44] It is likely that other species were later and independently domesticated elsewhere in Southeast Asia. Southeast Asia is the region of primary diversity of the banana.

Areas of secondary diversity are found in Africa, indicating a long history of banana cultivation in the region. Actual and probable diffusion of bananas during Islamic times (700–1500 CE)[46] Phytolith discoveries in Cameroon dating to the first millennium BCE[47] triggered an as yet unresolved debate about the date of first cultivation in Africa. There is linguistic evidence that bananas were known in Madagascar around that time.[48] The earliest prior evidence indicates that cultivation dates to no earlier than late 6th century CE.[49] It is likely, however, that bananas were brought at least to Madagascar if not to the East African coast during the phase of Malagasy colonization of the island from South East Asia c. 400 CE.[50] The banana may also have been present in isolated locations elsewhere in the Middle East on the eve of Islam. The spread of Islam was followed by farreaching diffusion. There are numerous references to it in Islamic texts (such as poems and hadiths) beginning in the 9th century. By the 10th century the banana appears in texts from Palestine and Egypt. From there it diffused into North Africa and Muslim Iberia. During the medieval ages, bananas from Granada were considered among the best in the Arab
Modern cultivation All widely cultivated bananas today descend from the two wild bananas Musa acuminata and Musa balbisiana. While the original wild bananas contained large seeds, diploid or polyploid cultivars (some being hybrids) with tiny seeds are preferred for human raw fruit consumption.[61] These are
propagated asexually from offshoots. The plant is allowed to produce two shoots at a time; a larger one for immediate fruiting and a smaller "sucker" or "follower" to produce fruit in 6–8 months. The life of a banana plantation is 25 years or longer, during which time the individual stools or planting sites may move slightly from their original positions as lateral
home refrigerators because they suffer from the cold.[citation needed] Ripe bananas can be held for a few days at home. If bananas are too green, they can be put in a brown paper bag with an apple or tomato overnight to speed up the ripening process.[68]
Cavendish
Statistics on the production and export of bananas and plantains are available from the Food and Agriculture Organization. Some countries produce statistics which distinguish between bananas and plantains, but two of the top three producers (India and China) do not, so comparisons can only be made using the total for bananas and plantains combined. The 2012 statistics (see Table 1) show that India led the world in banana production, producing around 18% of the worldwide crop of 139 million metric tonnes. Philippines was the next largest producer with around 7% of the worldwide crop. Its national data does distinguish between bananas and plantains, and shows that the latter made up over 95% of production. Ten countries produced around two thirds of the total world production.[Note 1]
In global commerce in 2009, by far the most important cultivars belonged to the triploid AAA group of Musa acuminata, commonly referred to as Cavendish group bananas. They accounted for the majority of banana exports,[61] despite only coming into existence in 1836.[62] The cultivars Dwarf Cavendish and Grand Nain (Chiquita Banana) gained popularity in the 1950s after the previous mass-produced cultivar, Gros Michel (also an AAA group cultivar), became commercially unviable due to Panama disease, caused by the fungus Fusarium oxysporum which attacks the roots of the banana plant.[61] Cavendish cultivars are resistant to the Panama Disease but in 2013 there were fears that the Black Sigatoka fungus would in turn make Cavendish bananas unviable.[63]
Storage and transport Bananas must be transported over long distances from the tropics to world markets. To obtain maximum shelf life, harvest comes before the fruit is mature. The fruit requires careful handling, rapid transport to ports, cooling, and refrigerated shipping. The goal is to prevent the bananas from producing their natural ripening agent, ethylene. This technology allows storage and transport for 3–4 weeks at 13 °C (55 °F). On arrival, bananas are held at about 17 °C (63 °F) and treated with a low concentration of ethylene. After a few days, the fruit begins to ripen and is distributed for final sale. Unripe bananas can not be held in

Nutrition Bananas are an excellent source of vitamin B6 and contain moderate amounts of vitamin C, manganese and dietary fiber (right table).[84] Although bananas are commonly thought to supply exceptional potassium content,[85] their actual potassium content is relatively low per typical food serving at only 8% of the Daily Value (right table). A compilation of potassium content in common foods consumed in the United States shows that raw bananas rank 1,611th, supplying 358 mg of potassium per 100 g; some foods with higher potassium content include beans, milk, apricots, carrots, sweet green bell peppers and potatoes.[86]
Pests, diseases, and natural disasters
While in no danger of outright extinction, the most common edible banana cultivar Cavendish (extremely popular in Europe and the Americas) could become unviable for large-scale cultivation in the next 10–20 years. Its predecessor 'Gros Michel', discovered in the 1820s, suffered this fate. Like almost all bananas, Cavendish lacks genetic diversity, which makes it vulnerable to diseases, threatening both commercial cultivation and small-scale subsistence farming.[77] [78] Some commentators remarked that those variants which could replace what much of the world considers a "typical banana" are so different that most people would not consider them the same fruit, and blame the decline of the banana on monogenetic cultivation driven by short-term

tropical populations. Depending upon cultivar and ripeness, the flesh can vary in taste from starchy to sweet, and texture from firm to mushy. Both the skin and inner part can be eaten raw or cooked. The primary component of the aroma of fresh bananas is isoamyl acetate (also known as banana oil), which, along with several other compounds such as butyl acetate and isobutyl acetate, is a significant contributor to banana flavor.[91][92][93] During the ripening process, bananas produce the gas ethylene, which acts as a plant hormone and indirectly affects the flavor. Among other things, ethylene stimulates the formation of amylase, an enzyme that breaks down starch into sugar, influencing the taste of bananas. The greener, less ripe bananas contain higher levels of starch and, consequently, have a "starchier" taste. On the other hand, yellow bananas taste sweeter due to higher sugar concentrations. Furthermore, ethylene signals the production of pectinase, an enzyme which breaks down the pectin between the cells of the banana, causing the banana to soften as it ripens.[94][95]
Cultural roles Arts : The song "Yes! We Have No Bananas" was written by Frank Silver and Irving Cohn and originally released in 1923; for many decades, it was the best-selling sheet music in history. Since then the song has been rerecorded several times and has been particularly popular during banana shortages.[105][106] A person slipping on a banana peel has been a staple of physical comedy for generations. An American comedy recording from 1910 features a popular character of the time, "Uncle Josh", claiming to describe his own such incident:[107] Now I don't think much of the man that throws a banana peelin' on the sidewalk, and I don't think much of the banana peel that throws a man on the sidewalk neither ... my foot hit the bananer peelin' and I went up in the air, and I come down

The poet Bashō is named after the Japanese word for a banana plant. The "bashō" planted in his garden by a grateful student became a source of inspiration to his poetry, as well as a symbol of his life and home.[108] The cover artwork for the debut album of The Velvet Underground features a banana made by Andy Warhol. On the original vinyl LP version, the design allowed the listener to "peel" this banana to find a pink, peeled phallic banana on the inside.
Religion and popular beliefs In Burma, bunches of green bananas surrounding a green coconut in a tray form an important part of traditional offerings to the Buddha and the Nats. [citation needed] In all the important festivals and occasions of Hindus, the serving of bananas plays a prominent part. Traditionally in Tamil marriages, banana plants are tied on both sides of the entrance of houses to bless the newlyweds to be useful to each other. citation needed] The banana is one of three fruits with this significance, the others being mango and jack fruit. [citation needed] In Thailand, it is believed that a certain type of banana plants may be inhabited by a spirit, Nang Tani, a type of ghost related to trees and similar plants that manifests itself as a young woman. [110] Often people tie a length of colored satin cloth around the pseudostem of the banana plants. [111] In Malay folklore, the ghost known as Pontianak is associated with banana plants (pokok pisang), and its spirit is said to reside in them during the day.
Other uses Banana sap from the pseudostem, peelings or flesh may be sufficiently sticky for adhesive uses. The large leaves may be used as umbrellas. [103] Banana peel may have capability to extract heavy metal contamination from river water, similar to other purification materials. [114][115] In 2007, banana peel powder was tested as a means of filtration for heavy metals and radionuclides occurring in water produced by the nuclear and fertilizer industries (cadmium contaminant is present in phosphates). When added and thoroughly mixed for 40 minutes, the powder can remove roughly 65% of heavy metals, and this can be repeated.
Tomato
T
he tomato (etymology and pronunciation) is the edible, often red fruit/berry of the nightshade Solanum lycopersicum,[1][2] commonly known as a tomato plant. The tomato is consumed in diverse ways, including raw, as an ingredient in many dishes, sauces, salads, and drinks. While it is botanically a fruit, it is considered a vegetable for culinary purposes (as well as under U.S. customs regulations, see Nix v. Hedden), which has caused some confusion. The tomato belongs to the nightshade family, Solanaceae. [1][3] The species originated in the South American Andes[2] and its use as a food originated in Mexico, and spread throughout the world following the Spanish colonization of the Americas. Its many varieties are now widely grown, sometimes in greenhouses in cooler climates.The plants typically grow to 1–3 meters (3–10 ft) in height and have a weak stem that often sprawls over the ground and vines over other plants. It is a perennial in its native habitat, although often grown outdoors in temperate climates as an annual. An average common tomato weighs approximately 100 grams
History The tomato is native to western South America and Central America.[6] Native versions were small, like cherry tomatoes, and most likely yellow rather than red. A member of the deadly nightshade family, tomatoes were erroneously thought to be poisonous by Europeans who were suspicious of their bright, shiny fruit. (The leaves are in fact poisonous, although the fruit is not.
Mesoamerica Aztecs and other peoples in Mesoamerica used the fruit in their cooking. The exact date of domestication is unknown: by 500 BC, it was already being cultivated in southern Mexico and probably other areas.[7]:13 The Pueblo people are thought to have believed that those who witnessed the ingestion of tomato seeds were blessed with powers of divination.[8] The large, lumpy variety of tomato, a mutation from a smoother, smaller fruit, originated in Mesoamerica, and may be the direct ancestor of some modern cultivated tomatoes.
Modern commercial varieties The poor taste and lack of sugar in modern garden and commercial tomato varieties resulted from breeding tomatoes to ripen uniformly red. This change occurred after discovery of a mutant "u" phenotype in the mid 20th century that ripened "u"niformly. This was widely crossbred to produce red fruit without the typical green ring around the stem on uncross-bred varieties. Prior to general introduction of this trait, most tomatoes produced more sugar during ripening, and were sweeter and more flavorful.[18][19] Evidence has been found that 10−20% of the total carbon fixed in the fruit can be produced by photosynthesis in the developing fruit of the normal U phenotype. The u genetic mutation encodes a factor that produces defective chloroplasts with lower density in developing fruit, resulting in a lighter green colour of unripe fruit, and repression of sugars accumulation in the resulting ripe fruit by 10−15%. Perhaps more important than their role in photosynthesis, the fruit chloroplasts are remodelled during ripening into chlorophyll-

free chromoplasts that synthesize and accumulate lycopene, β-carotene, and other metabolites that are sensory and nutritional assets of the ripe fruit.
Cultivation The tomato is now grown worldwide for its edible fruits, with thousands of cultivars having been selected with varying fruit types, and for optimum growth in differing growing conditions. Cultivated tomatoes vary in size, from tomberries, about 5 mm in diameter, through cherry tomatoes, about the same 1–2 cm (0.4–0.8 in) size as the wild tomato, up to beefsteak tomatoes 10 cm (4 in) or more in diameter. The most widely grown commercial tomatoes tend to be in the 5–6
cm (2.0–2.4 in) diameter range. Most cultivars produce red fruit, but a number of cultivars with yellow, orange, pink, purple, green, black, or white fruit are also available. Multicolored and striped fruit can also be quite striking. Tomatoes grown for canning and sauces are often elongated, 7–9 cm (3–4 in) long and 4–5 cm (1.6–2.0 in) diameter; they are known as plum tomatoes, and have a lower water content. Roma-type tomatoes are important cultivars in the Sacramento Valley Tomatoes are one of the most common garden fruits in the United States and, along with zucchini, have a reputation for outproducing the needs of the grower.
Varieties There are around 7,500 tomato varieties grown for various purposes. Heirloom tomatoes are becoming increasingly popular, particularly among home gardeners and organic producers.
Slicing" or "globe" tomatoes are the usual tomatoes of commerce, used for a wide variety of processing and fresh eating. Beefsteak tomatoes are large tomatoes often used for sandwiches and similar applications. Their kidney-bean shape, thinner skin, and shorter shelf life makes commercial use impractical.

Diseases and pests Tomato cultivars vary widely in their resistance to disease. Modern hybrids focus on improving disease resistance over the heirloom plants. One common tomato disease is tobacco mosaic virus. Handling cigarettes and other infected tobacco products can transmit the virus to tomato plants.[25] Various forms of mildew and blight are also common tomato afflictions, which is why tomato cultivars are often marked with a combination of letters that refer to specific disease resistance. The most common letters are: LB - late blight,[26] V – verticillium wilt, F – fusarium wilt strain I, FF – fusarium wilt strain I and II, N – nematodes, T – tobacco mosaic virus, and A – alternaria.

Hydroponic and greenhouse cultivation Tomatoes are often grown in greenhouses in cooler climates, and there are cultivars such as the British 'Moneymaker' and a number of cultivars grown in Siberia that are specifically bred for indoor growing. In more temperate climates, it is not uncommon to start seeds in greenhouses during the late winter for future transplant.
Tomatoes are now eaten freely throughout the world. They contain the carotene lycopene, one of the most powerful natural antioxidants. In some studies, lycopene, especially in cooked tomatoes, has been found to help prevent prostate cancer,[45] but other research contradicts this claim. [46] Lycopene has also been shown to improve the skin's ability to protect against harmful UV rays.[47] A study done by researchers at Manchester and Newcastle universities revealed that tomato can protect against sunburn and help keeping the skin looking youthful.
Genetic modification Tomatoes that have been modified using genetic engineering have been developed, and although none are commercially available now, they have been in the past. The first commercially available genetically modified food was a variety of tomato named (the Flavr Savr), which was engineered to have a longer shelf life. Consumption The tomato is now grown and eaten around the world. It is used in diverse ways, including raw in salads, and processed into ketchup or tomato soup. Unripe green tomatoes can also be breaded and fried, used to make salsa, or pickled. Tomato juice is sold as a drink, and is used in cocktails such as the Bloody Mary. Tomatoes are acidic, making them especially easy to preserve in home canning whole, in pieces, as tomato sauce or paste. The fruit is also preserved by drying, often in the sun, and sold either in bags or in jars with oil.
Potential health effects
Tomato plants are vines, initially decumbent, typically growing 180 cm (6 ft) or more above the ground if supported, although erect bush varieties have been bred, generally 100 cm (3 ft) tall or shorter. Indeterminate types are "tender" perennials, dying annually in temperate climates (they are originally native to tropical highlands), although they can live up to three years in a greenhouse in some cases. Determinate types are annual in all climates. Breeding Active breeding programs are ongoing by individuals, universities, corporations, and organizations. The Tomato Genetic Resource Center, Germplasm Resources Information Network, AVRDC, and numerous seed banks around the world store seed representing genetic variations of value to modern agriculture. These seed stocks are available for legitimate breeding and research efforts. While individual breeding efforts can produce useful results, the bulk of tomato breeding work is at universities and major agriculture-related corporations. These efforts have resulted in significant regionally adapted breeding lines and hybrids, such as the Mountain series from North Carolina.
Some studies have indicated that the lycopene in tomatoes may help prevent cancer, but taken overall the research into this subject is inconclusive.[49] There has been some research interest in whether the lycopene in tomatoes might help in managing human neurodegenerative diseases. Storage Tomatoes keep best unwashed at room temperature and out of direct sunlight. It is not recommended to refrigerate as this can harm the flavor.[52] Tomatoes that are not yet ripe can be kept in a paper bag till ripening.[53] Storing stem down can prolong shelf life. Fruit or vegetable? Botanically, a tomato is a fruit: the ovary, together with its seeds, of a flowering plant. However, the tomato has a much lower sugar content than other edible fruits, and is therefore not as

sweet. Typically served as part of a salad or main course of a meal, rather than at dessert, it is considered a vegetable for most culinary uses. One exception is that tomatoes are treated as a fruit in home canning practices: they are acidic enough to process in a water bath rather than a pressure cooker as vegetables require. Tomatoes are not the only food source with this ambiguity: avocados, green beans, eggplants, cucumbers, and squashes of all kinds (such as zucchini and pumpkins) are all botanically fruits, yet cooked as vegetables. This dispute has led to legal speculation in the United States. In 1887, U.S. tariff laws that imposed a duty on vegetables, but not on fruits, caused the tomato's status to become a matter of legal importance. Pronunciation The usual pronunciations of "tomato" are /(usual in American English) and (usual in British English).[82] The word's dual pronunciations were immortalized in Ira and George Gershwin's 1937 song "Let's Call the Whole Thing Off " ("You like // and I like You like / and I like and have become a symbol for nitpicking pronunciation disputes. Tomato records The heaviest tomato ever, weighing 3.51 kg (7 lb 12 oz), was of the cultivar "Delicious", grown by Gordon Graham of Edmond, Oklahoma in 1986.[83][unreliable source?] The largest tomato plant grown was of the cultivar "Sungold" and reached 19.8 m (65 ft) in length, grown by Nutriculture Ltd (UK) of Mawdesley, Lancashire, UK, in 2000. Cultural impact The town of Buñol, Spain, annually celebrates La Tomatina, a festival centered on an enormous tomato fight. Tomatoes are a popular "nonlethal" throwing weapon in mass protests, and there was a common tradition of throwing rotten tomatoes at bad performers on a stage during the 19th century; today this is usually referenced as a metaphor.

Classic Recipe: Marcella Hazan's Famous Tomato Sauce When it comes to essentials, like tomato sauce, originality is overrated. Marcella Hazan's classic tomato sauce is famous and adored, and justly so. Scads of bloggers and food writers have written about it, so I'm just following along. I thought it was worth a spotlight this week, as we talk about simple, fresh, inexpensive dinners. This is one of the best sauces I know, and it only needs four (yes, four) ingredients. The idea behind this tomato sauce is simple: Simmer a can of tomatoes with an onion and 5 tablespoons of butter. Add a pinch of salt and pull out the onion at the end, and you're left with a bright, velvety tomato sauce with a rich roundness from the butter. The butter doesn't saw off the edges of the tomatoes' tanginess in the way that sugar does; instead it complements the brightness and makes it shine. This tomato sauce is also entirely hands-off. You don't even mince the onion. It's a great way to knock a meal together with a few cupboard staples.
Serve it over pasta with a flurry of cheese, and enjoy tomato sauce with the flair of restaurant richness. It doesn't replace my favorite meaty sauces, though; it's extraordinarily simple and minimalist. But it's very satisfying, and its ease cannot be beat. As a topping for ravioli, or a filling for lasagna, this sauce is spectacular. My only change to the original recipe is the addition of black pepper. Look, I just can't eat a bowl of pasta without a bit of black pepper, and I think this sauce benefits from just a little flurry of pepper at the end. Have you ever tried this famous sauce? he potato is a starchy, tuberous crop from the perennial nightshade Solanum tuberosum L. The word "potato" may refer either to the plant itself or to the edible tuber.[2] In the Andes, where the species is indigenous, there are some other closely related cultivated potato species. Potatoes were introduced outside the Andes region approximately four centuries ago,[3] and have since become an integral part of much of the world's food supply. It is the world's fourth-largest food crop, following maize, wheat, and rice. [4] Wild potato species occur throughout the Americas from the United States to southern Chile. [5] The potato was originally believed to have been domesticated independently in multiple locations. [6] but later genetic testing of the wide variety of cultivars and wild species proved a single origin for potatoes in the area of present-day southern Peru and extreme northwestern Bolivia (from a species in the Solanum brevicaule complex), where they were domesticated approximately 7,000–10,000 years ago.[7][8][9] Following centuries of selective breeding, there are now over a thousand different types of potatoes. [8] Over 99% of the presently cultivated potatoes worldwide descended from
varieties that originated in the lowlands of south-central Chile, which have displaced formerly popular varieties from the Andean highlands. Etymology The English word potato comes from Spanish patata (the name used in Spain). The Spanish Royal Academy says the Spanish word is a compound of the Taino batata (sweet potato) and the Quechua papa (potato). [13] The name potato originally referred to a type of sweet potato although the two plants are not closely related; in many of the chronicles detailing agriculture and plants, no distinction is made between the two. [14] The 16th-century English herbalist John Gerard used the terms "bastard potatoes" and "Virginia potatoes" for this species, and referred to sweet potatoes as "common potatoes". [15] Potatoes are occasionally referred to as "Irish potatoes" or "white potatoes" in the United States, to distinguish them from sweet potatoes
Genetics There are about 5,000 potato varieties worldwide. Three thousand of them are found in the Andes alone, mainly in Peru, Bolivia, Ecuador, Chile, and Colombia. They belong to eight or nine species, depending on the taxonomic school. Apart from the 5,000 cultivated varieties, there are about 200 wild species and subspecies, many of which can be cross-bred with cultivated varieties. Cross-breeding has been done repeatedly to transfer resistances to certain pests and diseases from the gene pool of wild species to the gene pool of cultivated potato species. and in the European Union.[19][20] The major species grown worldwide is Solanum tuberosum (a tetraploid with 48 chromosomes), and modern varieties of this species are the most widely cultivated. There are also four diploid species (with 24 chromosomes): S. stenotomum, S. phureja, S. goniocalyx, and S. ajanhuiri. There are two triploid species (with 36 chromosomes): S. chaucha and S. juzepczukii. There is one pentaploid cultivated species (with 60 chromosomes): S. curtilobum. There are two major subspecies of Solanum tuberosum: andigena, or Andean; and tuberosum, or Chilean.[21] The Andean potato is adapted to the short-day conditions prevalent in the mountainous equatorial and tropical regions where it originated; the Chilean potato, however, native to the ChiloĂŠ Archipelago, is adapted to the long-day conditions prevalent in the higher latitude region of southern Chile. History The potato was first domesticated in the region of modern-day southern Peru and extreme northwestern Bolivia[7] between 8000 and 5000 BC.[8] It has since spread around the world and become a staple crop in many countries. The earliest archaeologically verified potato tuber remains have been found at the coastal site of Ancon (central Peru), dating to 2500 BC.[30][31] According to conservative estimates, the introduction of the potato was responsible for a quarter of the growth in Old World population and urbanization between 1700 and 1900.[32] Following the Spanish conquest of the

Inca Empire, the Spanish introduced the potato to Europe in the second half of the 16th century. The staple was subsequently conveyed by European mariners to territories and ports throughout the world. Nutrition The potato contains vitamins and minerals, as well as an assortment of phytochemicals, such as carotenoids and natural phenols. Chlorogenic acid constitutes up to 90% of the potato tuber natural phenols. Others found in potatoes are 4-O-caffeoylquinic acid (crypto-chlorogenic acid), 5-Ocaffeoylquinic (neo-chlorogenic acid), 3,4-dicaffeoylquinic and 3,5-dicaffeoylquinic acids.[41] A mediumsize 150 g (5.3 oz) potato with the skin provides 27 mg of vitamin C (45% of the Daily Value (DV )), 620 mg of potassium (18% of DV ), 0.2 mg vitamin B6 (10% of DV ) and trace amounts of thiamin, riboflavin, folate, niacin, magnesium, phosphorus, iron, and zinc. The potato is best known for its carbohydrate content (approximately 26 grams in a medium potato). The predominant form of this carbohydrate is starch. A small but significant portion of this starch is resistant to digestion
by enzymes in the stomach and small intestine, and so reaches the large intestine essentially intact. This resistant starch is considered to have similar physiological effects and health benefits as fiber: It provides bulk, offers protection against colon cancer, improves glucose tolerance and insulin sensitivity, lowers plasma cholesterol and triglyceride concentrations, increases satiety, and possibly even reduces fat storage. [42][43][44] The amount of resistant starch in potatoes depends much on preparation methods. Cooking and then cooling potatoes significantly increases resistant starch. For example, cooked potato starch contains about 7% resistant starch, which increases to about 13% upon cooling. Comparison to other major staple foods The following table shows the nutrient content of potato and other major staple foods, each in respective raw form. Staple foods are not commonly eaten raw and are usually sprouted or cooked before eating. In sprouted and cooked form, the relative nutritional and anti-nutritional contents of each of these grains may be different from the values reported in this table. Toxicity Potatoes contain toxic compounds known as glycoalkaloids, of which the most prevalent are solanine and chaconine. Solanine is also found in other plants in the family Solanaceae, which includes such plants as the deadly nightshade (Atropa belladonna), henbane (Hyoscyamus niger), tobacco (Nicotiana), as well as eggplant and tomato.
Varieties
These compounds, which protect the plant from its predators, are, in general, concentrated in its leaves, stems, sprouts, and fruits. [51] In a summary of several studies, the glycoalkaloid content was highest in flowers and sprouts and lowest in the tuber flesh (in order from highest to lowest content, generally: flowers, sprouts, leaves, skin, roots, berries, peel [skin plus outer cortex of tuber flesh], stems, and tuber flesh).[52] Exposure to light, physical damage, and age increase glycoalkaloid content within the tuber.[53] Cooking at high temperatures —over 170 °C (340 °F) — partly destroys these. Light exposure causes greening from chlorophyll synthesis, thus giving a visual clue as to areas of the tuber that may have become more toxic; however, this does not provide a definitive guide, as greening and glycoalkaloid accumulation can occur independently of each other. Some varieties of potato contain greater glycoalkaloid concentrations than others; breeders developing new varieties test for this, and sometimes have to discard an otherwise promising cultivar.

Tuber formation halts when soil temperatures reach 27 °C (81 °F); hence potatoes are considered a cool-season crop.[58] Tuber bulking occurs during the fourth phase, when the plant begins investing the majority of its resources in its newly formed tubers. At this stage, several factors are critical to yield: optimal soil moisture and temperature, soil nutrient availability and balance, and resistance to pest attacks. The final phase is maturation: The plant canopy dies back, the tuber skins harden, and their sugars convert to starches.[59] New tubers may arise at the soil surface. Since exposure to light leads to greening of the skins and the development of solanine, growers are interested in covering such tubers. Commercial growers usually address this problem by piling additional soil around the base of the plant as it grows ("hilling", or in British English "earthing up"). An alternative method used by home gardeners and smaller-scale growers involves covering the growing area with organic mulches such as straw or with plastic sheets.

Potatoes are generally grown from seed potatoes – these are tubers specifically grown to be disease free and provide consistent and healthy plants. To be disease free, the areas where seed potatoes are grown are selected with care. In the USA this restricts production of seed potatoes to only 15 states out of the 50 states that grow potatoes. [56] These locations are selected for their cold hard winters that kill pests
Storage facilities need to be carefully designed to keep the potatoes alive and slow the natural process of decomposition, which involves the breakdown of starch. It is crucial that the storage area is dark, well ventilated and for longterm storage maintained at temperatures near 4 °C (39 °F). For short-term storage before cooking, temperatures of about 7 to 10 °C (45 to 50 °F) are preferred.
While there are close to 4000 different varieties of potato,[72] it has been bred into many standard or well-known varieties, each of which has particular agricultural or culinary attributes. In general, varieties are categorized into a few main groups, such as russets, reds, whites, yellows (also called Yukons) and purples—based on common characteristics. Genetically modified potatoes Genetic research has produced several genetically modified varieties. 'New Leaf ', owned by Monsanto Company, incorporates genes from Bacillus thuringiensis, which confers resistance to the Colorado potato beetle; 'New Leaf Plus' and 'New Leaf Y', approved by US regulatory agencies during the 1990s, also include resistance to viruses. McDonald's, Burger King, Frito-Lay, and Procter & Gamble announced they would not use genetically modified potatoes, and Monsanto published its intent to discontinue the line in March 2001. Uses Potatoes are used to brew alcoholic beverages such as vodka, potcheen, or akvavit. They are also used as food for domestic animals. Potato starch is used in the food industry as, for example, thickeners and binders of soups and sauces[97] Maine companies are exploring the possibilities of using waste potatoes to obtain polylactic acid for use in plastic products; other research projects seek ways to use the starch as a base for biodegradable packaging.[97][98] Potato skins, along with honey, are a folk remedy for burns in India. Potatoes (mainly Russets) are commonly used in plant research. Culinary uses Potatoes are prepared in many ways: skin-on or peeled, whole or cut up, with seasonings or without. The only requirement involves cooking to swell the starch granules. Most potato dishes are served hot, but some are first cooked, then served cold, notably potato salad and potato chips/crisps. Art The potato has been an essential crop in the Andes since the pre-Columbian Era. The Moche culture from Northern Peru made ceramics from earth, water, and fire. This pottery was a sacred substance, formed in significant shapes and used to represent important themes. Potatoes are represented anthropomorphically as well as naturally.
