elcome to the new Savvy Magazine—the newly-madeover magazine. We’ve been working on unveiling this makeover for months. We pored over past issues, got feedback from readers, staff and our editorial board, and looked to our peers for examples of great work. We hammered out a vision for what service we wanted to provide, brainstormed creative new approaches to design and stories, and then even critiqued the mock-ups our designers came up with. It was truly a team effort. So, voila. Here we are. We even updated our name: Savvy Magazine, a change from Savvy.mn Magazine. We began as a website (Savvy.mn), which is why we called ourselves Savvy.mn Magazine. But now our print product has grown and evolved to what it is today. Everything must change, especially in order for it to grow. When I was hired last fall, I was tasked with the challenge of shifting Savvy for the better. It has been amazing to watch our abstract feedback from our weekly redesign meetings turn into tangible results – new fonts, new colors, new departments and features, new vision. New everything. Rebecca Pelfrey knows all about taking new directions. After working in graphic design and art directions, she convinced her husband to buy land and become independent farmers. Now the two own Morning Glory Farm in Stillwater, which sells food directly to buyers. They’ve also got plans to offer outdoor pizza events, brew their own beer and teach cooking workshops. Read Pelfrey’s inspiring story on page 12. It feels appropriate that we unveil our changes at a time when the seasons are changing, too. By the time this magazine comes out, it will be late spring heading into early summer. No doubt Minnesotans right now are thirsting for beverages with friends on an outdoor patio. For glutenfree folks (like myself ), we’ve got an article on page 18 about a new gluten-free brewery opening in St. Paul this summer; that should definitely quench your thirst.
We’ve got also got some fun new features to share. For example, take a look at Allison Roorda’s piece on Pumphouse Creamery in Minneapolis, page 24. And Teri Parsley Starnes, a Minneapolis-based professional astrologer, offers exclusive horoscopes for each sun sign. Check out her fantastic work on page 28. Wedding Guest dress code
With wedding season in full swing, you’ll need just the right thing to wear to be part of someone’s special day. Even if you’re not in the bridal party, being a guest can also cause some sartorial stress. Yes, all weddings are different, but there’s a basic code of conduct and dress that will serve you well no matter what kind of event you’re attending. Laura Nelli, owner and designer of Nelle Handbags knows the ins and outs of weddings after seven years in the bridal industry, her own 2011 wedding and a frequent guest herself. “I think as a guest you should take your cue from the invitation and where the reception and ceremony are being held and your knowledge of the couple and weave that information into your own style,” she says. She offered her insights on cracking the wedding dress code. Be appropriate Some of the old rules do apply, including don’t wear white or red. The key is not to upstage the bride. “It’s a huge trend to dress your bridesmaids in white, but you as a guest should never do it,” she says. She does think a black dress is no longer taboo. “A basic black dress with a fabulous statement necklace or a printed scarf will take down the sexy level,” she says. Go for simple, but distinctive Laura reiterated the guiding principle of wedding guest fashion: “You don’t want to outshine the bride,” she says. However, that doesn’t mean you have to look drab. Though they’re a trend, she suggests staying away from prints and sticking with a single color and adding your own flair through the accessories. You can incorporate the prints trend through a handbag or a shoe. “It’s a really safe way to incorporate trends,” she says. Don’t forget comfort It’s all about the feet. “You want to enjoy the wedding, dance and navigate any uneven ground,” says Nelli, who favors a low classic

Stick to a single statement Make your mark with one major piece and then keep everything else you’re wearing more subdued “If you were to have a statement bag, I would do a really pretty earring that highlights your face, a statement bag and a great basic shoe or if you do a statement necklace, no earrings, a simple thin bracelet and a basic shoe,” she says. Keep quiet “You should not wear clothing that creates noise,” Nelli says. Right now, it’s trendy to stack bangles, but you don’t want to grab anyone’s attention during the ceremony or reception. M
any people enjoy cooking, like animals, love the outdoors, and care about where their food comes from. But not many people gather up those passions and manage to convince a non-farming spouse that it might be nice to move from a suburb to a farm and strike out on their own. Rebecca Pelfrey is one of those rare people. Back in 2000, she found a 50-acre site outside of Stillwater that she thought would be a perfect place to revisit her childhood love of animals, especially horses. But it
was also perfect in that instead of being a run-down old farmstead, the land had been nicely cultivated into something akin to a pristine country estate—a much easier sell to her non-farming husband. “We started with a couple of chickens and a couple of horses,” Pelfrey says. “Then we added a lamb, added a pig, and pretty soon I’d become an advanced hobby farmer.” The “advanced hobby farm” now comprises a 30-ewe breeding flock and 20 Berkshire hogs, along with the chickens and some cows.

direction, although she also spent some time working as a horse trainer. It was the fateful trip to the farm for sale that brought back the idea of raising and training horses. Her husband was amenable to that idea and willing to commute to his work in Golden Valley. “But he didn’t know he was marrying a farmer,” Pelfrey says, laughing. “Here we had this beautiful land, and it seemed wasteful not to use it.” Her husband is still mostly hands-off. “I’m the farmer and the farmer’s wife,” she says. “If only I could have a wife!” Putting that beautiful land to work also allowed Pelfrey to pursue another passion: cooking and good food. “I like to eat something somewhere and then try to reproduce it,” she says. The farm gave her a unique angle to pursue; when she discovered that Berkshire pork tasted far better to her than standard grocerystore pork, she brought a couple of pigs to the farm and began raising them. Why is Berkshire better, in her opinion? “It’s a heritage breed that grows slower than commercial breeds,” she says. “Plus it’s darker meat, naturally marbled, with a very unique flavor.” It’s so unique and delicious that her children will no longer allow her to serve anything else. As it turns out, pigs can be for more

the farmer and “theI’mfarmer’s wife.”
But it was closer to what she truly wanted to do. She wasn’t raised on a farm, but grew up in Nebraska, living close to REBECCA PELFREY a river and vast undeveloped land. Days were spent exploring on horseback, and early ambitions focused on a cabin in the land. By the time she went to college the mountains with a horse, cow and and met her husband, other interests led chickens, living the self-sufficient life off her to a career in graphic design and art
than just eating. Pelfrey’s pigs are not just free-range, but allowed to root, because their predilection for rooting means they act as porcine rototillers, turning over the ground that becomes the annual vegetable garden. “Some farms prevent the pigs from rooting,” Pelfrey says. “But it’s their nature. They have to be monitored so they don’t dig too deep, but they enjoy it.” Bonus—the fields are tilled without machinery. Pelfrey’s farm is organic, and her animals are fed with organic feed, in addition to being humanely raised. She likes knowing where her food comes from and how it’s raised, and she envisions a future in which many others learn via her farm. Her goal is “50 Families on 50 Acres”— in other words, she wants her farm to feed 50 families. Right now she feeds about 30 families and plans to increase the vegetable production to raise those numbers. Feeding is only part of the goal, though. Pelfrey wants to help people learn about the intricacies of farming and food. Currently she hosts two annual events for her customers, a Cinco de Mayo festival and a fall Pork Fest/Oktoberfest. For both occasions, she provides meat from her farm which she cooks herself. Near future plans include adding an outdoor pizza farm. One of her customers is a builder who works with her on a barter
system, and he took a course at the North House Folk School in Grand Marais on building outdoor ovens. Pelfrey envisions such an oven at her farm, not only to provide events (with pizzas made with sausage and cheese made on the farm as well as vegetables grown there) but also to develop workshops where she could teach people how to cook and bake in an outdoor oven. She’d also like to teach people about
the “nose to tail” approach to buying half or whole animals for consumption. “So many people are used to buying meat at the grocery store,” she says. “They like pork tenderloin. Then they buy half a hog and say, ‘Where’s the tenderloin?’” As it turns out, the tenderloin is the meat that’s normally attached to the bone in a pork chop—which is how Pelfrey’s customers receive it. Adding workshops to teach people about the different cuts they’re getting, and what to do with them, would reduce the hesitance some new customers experience, she says. Cooking in general would be another focus for Pelfrey. “I want to do farmerchef events, teach people to cook real food,” she says. These could be anything from making lard to making cheese to the myriad ways cooks can use the tender pork shoulder cut. Pelfrey invites the local elementary school for a field trip each year, relishing the opportunity to teach kids at a young age about where their food comes from and life on a farm. It’s not an easy life, but it can be so rewarding. “The thing you love and hate is that you’re out there every day,” she says. “That physical work, being outdoors—it can be wonderful, and other times, not.” But the end results make it worth it, and make Pelfrey happy to be herding her lambs, no matter the weather. savvy.mn | JUNE 2013

1. What’s your background and how did you get involved in the Golden Fig? I actually went to school for architecture and interior design but after spending some time working at a specialty food shop in East Hampton, N.Y., I fell in love with food and never looked back. I started making the vinegars as gifts in the early ‘90s and they just kind of rolled into new ideas for new goodies, and before I knew it, I was making over 100 products. After having sold at the St. Paul Farmers Market for almost 10 years, I decided a store was in order, and I opened the shop on Grand Avenue in 2006.

ane Breimhorst and Thom Foss make for complementary brewery business partners: Foss, who used to work in IT and now works in marketing and public relations, says he’s more of the numbers guy; Breimhorst, a stay-at-home Dad who a few years ago was diagnosed with Celiac’s disease, is the hand-shaker. He’s the guy who’s attending community meetings and telling everyone about St. Paul’s first gluten-free brewery, which the two are set to open this summer. The brewery will be a one-of-a-kind establishment. It’s currently in the planning stages, but Foss and Breimhorst say their new 5,000-square-foot brewery, Burning Brothers Brewing, will be opening near Fairview and University Avenues in St. Paul. They’ll offer exclusive gluten-free beers, recipes they developed themselves after Breimhorst was diagnosed with celiac disease a few years ago. Breimhorst says that when he was diagnosed, he felt devastated. The treatment for celiac disease is a gluten-free diet. He

had been a cook at the Loring Pasta Bar, an establishment full of gluten in its beers, pastas, breads and more. But he wasn’t going to let his condition overcome him; he instead began developing recipes for beers. He has a distinct sense of taste and noticed that many of the gluten-free beers on the market today use brown rice syrup, leaving a finishing taste like that of a diet soda. What he and Foss are aiming to offer is a beer not just good enough for gluten-free beer drinkers; instead they want a beer that is delicious and satisfying whether a person is gluten intolerant or not. In other words, a good beer is a good beer, and that’s what the two want to create. “What we’ve done is we’ve figured out the use of different adjuncts and grains, malted and kilned ourselves,” Breimhorst says. “I want people who have a choice or don’t have a choice, to enjoy and kick back, and worry about something else that’s more important.” He and Foss became friends nearly 20 years ago when some mutual friends introduced them to each other, and they’ve

been putting their heads together for adventures ever since. Breimhorst has been a cook, a comedian, has worked to help children with mental illness, and even spent some time as a debt collector. Foss did a two-year stint in the National Guard and went to college in Mankato before launching his career. After he and Breimhorst met, they got into fireeating at the Minnesota Renaissance Festival – thus the name for their new brewery. They plan to offer stouts and pale ales, a niche in the gluten-free beer market that has not been filled, Foss says. Also on their wish list is to create a taproom that will be a gathering place for the community. “I definitely can foresee that as a destination for people who are gluten-free,” he says. These are big dreams, but Breimhorst says their vision is clear. “We’re just a couple of local boys that want to not just give back to the community but we want to put something out there for people to enjoy,” Breimhorst says. “That’s simple and we want to keep it that simple.”

I’ve heard stories about her raw kale salad being the only food a friend could eat during chemotherapy, and that it actually contributed to his healing process,” Shimp says. “Her flavors are like no other type of food I know.” Jansz, who once cooked for holistic health guru Deepak Chopra, cautions home chefs away from buying prepackaged spices, insisting the best way to buy spices is whole and fresh from a local co-op. Buy what you need and grind the spices at home in a small coffee grinder. Also, don’t be afraid to experiment with spices in your everyday meals, such as meatloaf or spaghetti, the Diva suggests. Until you try, you don’t know what you’re missing. “How can it hurt?”

Heather Jansz is a Diva. Big hair. Big passion. Big food. Step into her kitchen and you’ll likely be bowled over by the aromatic flavors of cardamom, cinnamon and cumin. Taste her chutneys – spicy, sweet and savory all at the same time – and you’ll feel like you’ve been transported to the Southeast Asia. Jansz, better known as The Curry Diva, has been awakening the senses and palates of Minnesotans since the 1970s, showing locals there’s more to a good spice rack than salt, pepper and garlic bread sprinkle. A native of Sri Lanka, Jansz’s personal mission is to bring the exotic flavors of the East to your table. “We crave our curry,” Jansz says of Sri Lankans. “It’s like a drug.” While many people assume curry is just a spice, it’s actually a style of cooking, says Jansz, the longtime owner/chef of Uptown’s defunct Sri Lanka Curry House. Every curry chef has his or her own combination of spices, says Jansz, noting her Diva blend is comprised of “all the essential spices,” including curry leaves, lemon grass and green cardamom pods. But spices are more than just good flavor, they’re good for you. In hot, humid climates, like Sri Lanka, spices were originally used for preservation, says Jansz. Many spices have anti-bacterial and anti-inflammatory properties that make them great for digestion and overall bodily health, she says. Jansz approaches her cooking through the lens of Ayurveda, an Indian holistic health system that focuses on maintaining balance of the mind, body and soul through good nutrition. Ayurveda, the sister science to yoga, is often seen as a way to prevent and treat illnesses. “The way we eat…is meant to fix the body,” says Jansz, whose food is all gluten-, dairy- and fat-free. Spices and oils play important roles in the Ayurveda diet, which touts the importance of all six tastes: salty, sweet, sour, bitter, pungent and astringent. While most Americans only activate the first three, Ayurveda strives to incorporate all six in at least one meal a day to ensure a balanced diet. Jansz is a pioneer in Twin Cities’ Ayurvedic style of cooking, says Stephanie Shimp, co-owner of Highland Grill in St. Paul where Jansz hosts Curry

It helps all the other spices get activated in the body and aids in digestion. It encourages you to sweat and rids the body of harmful toxins. Black pepper oil is great for aches and pains (and perfume).
Diva-licious Quinoa 3 cups Quinoa 1 onion - chopped 1 bundle cilantro - chopped 8 cloves of fresh garlic - chopped 3 cups of mushrooms chopped 3 cups of leeks - chopped 2 cups of peas 2 cups of carrots (You can add any veggie that you desire) 2 Tbsp. of diva blend of spice or 1 Tbsp. each of roasted coriander & cumin 1/2 tsp. of ground cardamom 1Tbsp. of coarse crushed black pepper 2 Tbsp. of ghee or coconut oil 1 cup of pumpkin seeds Salt to taste Boil the quinoa (Treat it like a pasta; boil it with extra water and drain when done). In a wok or a fly pan, heat the oil. Add the onion and garlic brown for just a few moments. Then add leeks with all the dry spices and cook for another few moments. Add all the veggies and some of the salt to taste. Add in the quinoa and mix really well. Take it off the stove and add last add the chopped cilantro and pumpkin seeds and more salt to taste, if you like. To make this dish even healthier, add 1 teaspoon of turmeric into the water when boiling.

Monique Volz of Maple Plain turns passion into purpose. BY LIV LANE

onique Volz is always cooking up something good. She’s on the road most weekdays, consulting major food brands on public relations and social media. But weekends are spent in her kitchen – from sun up until sun down – as she experiments with new recipes for her blog, AmbitiousKitchen. com. This is nothing new for Volz. “When I was in college, I was always baking and cooking, taking cookies to parties,” she said. “Every second that I wasn’t focused on my school work, I was in the kitchen. “ The Maple Plain blogger grew up in a family that was passionate about good food. Her mom’s side of the family is Puerto Rican, with an affinity for

flavorful food. “My grandma is probably the best cook ever,” she said. Meanwhile, she has fond memories of frequently baking cakes, cookies and pies with her dad. During college, she began following favorite food blogs and, after graduating, she decided to start her own site. Ambitious Kitchen launched in August 2011, but Volz rarely posted recipes more than once a week. A year later, as she got more serious about developing her recipes, posting frequently and photographing her food with a new DSLR camera, Volz said her blog traffic grew “exponentially.” Today, she spends two to three hours per trip to the grocery store, laughing that “nobody ever wants to go to the store with me!” As she walks the aisles, she waits for inspiration to strike and then fills her cart with ingredients for her next experiment. Popular recipes on the blog range from a Black Bean, Sweet Potato and Quinoa Chili with Smoked Chipotle to a Vegan Detox Green
Monster Smoothie. In homage to her dad, who passed away when Volz was 18, she also offers plenty of cookie recipes to readers. Her favorite creation so far? Nutella-Stuffed Brown Butter and Sea Salt Chocolate Chip. Volz is grateful for the ways her blog has brought new connections and opportunities into her life. For instance, when the Greek yogurt brand Fage held a recipe contest last year, its PR firm reached out to Volz, encouraging her to enter. Her dark chocolate cheesecake recipe won and last November, she got to cook with celebrity chef Bobby Flay at his New York restaurant, which also served her winning recipe to guests. Volz has high hopes for Ambitious Kitchen’s future, with plans to expand her content to incorporate additional passions like beauty products, photography and travel – and eventually focus on the blog full-time. She credits her readers for keeping her motivated. “I love my readers,” she said. “Every day, I get emails that are incredible –

hat better summer treat could there be than ice cream? Maybe ice cream made with local, allnatural ingredients from the Pumphouse Creamery on Chicago Avenue. The Pumphouse Creamery celebrated its 10-year anniversary in May, after owner Barb Zapzalka opened the store first in 2003. She didn’t start out making ice cream, though. “I was working as a computer programmer before this job,” she says. “I didn’t want to do that as a long-term career.” Zapzalka had work in restaurant management when she was in college and wanted to get back to working with food. During the course of trying to find the right niche for herself, she started researching how to make commercial ice cream. “Pretty soon, I’m writing a business plan,” she says. Zapzalka ended up leaving her computer programmer job about three months before the Pumphouse Creamery officially opened. While the small shop by 48th Street and Chicago Avenue was under construction, she continued to teach herself about ice cream and making ice cream in preparation for her new career. “The most surprising thing for me was the physical part of the job, being on my feet all day,” she says. Another big change for Zapzalka was trying to do 50 different things each day. In being the owner and manager of Pumphouse Creamery, she made herself responsible for hiring workers, managing the store and inventory and making the ice cream, one of her favorite parts of the job. The creamery has only one ice cream machine that makes a batch of five gallons

at a time. Zapzalka makes her ice cream with organic, all-natural ingredients. “I’m very picky about the ingredients,” she says. “I try to use as much organic as possible. I try to use as much local as possible.” She says that’s what makes Pumphouse Creamery unique among ice cream shops: the quality of the ice cream and the fact that the actual owner is the one mixing it up in the back. As the owner, Zapzalka also has to try to gage what is going to sell. She says she keeps an eye on the weather, which can affect her business. “During the summer, we’re the busiest,” she says. She also has to negotiate inventory and freezer space for all the products, especially in the summer when Pumphouse Creamery sells more ice cream. But Zapzalka says she is enjoying her time as the owner of an ice cream shop. “I love being able to make a living off of something that I love doing,” she says. “I enjoy that people do enjoy this ice cream. That’s the biggest compliment for me.”

In this month’s edition, readers ask about handling psychic abilities, career coaching and unresolved questions with loved ones who have passed. If you want to know if you have psychic abilities, but aren’t sure you can handle the responsibility that comes with it, is there a way to “test drive” it before you decide? It’s always scared me, but I feel could have that ability and would like to find out, but I don’t want to be emotionally carried away by it, or for it to consume a large part of my consciousness and life. Evidently you have a good sense of boundaries or you wouldn’t be asking this wise question! When something devours a large part of our life, our boundaries are askew. Decent boundaries protect us. When we experience a dropin insight, which is an insight that drops in unexpectedly and appears like a clear flashing thought or impromptu waking vision, it’s prudent to be conscious of how we react. If we sense something negative about another person for example, and tell him or her, the information can act like a

powerful flare tossed into the unconscious mind. So remember that wisdom and intuition are partners, let them both do their job and intuitively check the facts. When we intuitively sense something about someone we should write down what we see and how exactly we feel and let it go. Later we circle back and see if it came to fruition. This technique can be done with any insight. It increases confidence and strengthens our abilities. If a loved one who has passed is starting a new journey on the other side, how does the way we think of them, or carry our unresolved questions affect their new journey? The love we feel for another soul travels with them to the other side. The love they feel for us travels also. Love is the gateway into resolving karmic issues. Karma is the law of cause and effect. Our deeds, past and present, determine our future experiences. If we are unresolved about something or perhaps, down right angry at someone here or on the other side, the vibration radiates through our spirit and can create events that are less than desirable. Those on the other side are aware of this but do not suffer in the same way. The most common message I receive from those in spirit is regret about unshared love and forgiveness. So resolve, love and forgive; that’s best for every soul involved.
