ell, I am going to have to start off by saying Merry Christmas to all

our readers! What a fantastic 12 months we have had at Scene HQ. Our redesign back in January, which seems like it was only yesterday, was received with so much positive feedback. We have continued to add more relevant and interesting features and we always welcome your comments – please go to the Scene facebook page or email heidi@scenepublishing.co.uk This edition includes a few features about Christmas; decorating your home, choosing the right Christmas tree, keeping your presents safe as well as articles on where to go to meet with friends and family during the festive season. Also Wright Care has some advice about looking out for your elderly neighbours at this time of year. Our foodie spends some time with the new chef at the Stage in Market Deeping, who has launched a new menu together with some amazing new dishes incorporating his unique twist such as Crayfish and Truffle oil Mac ‘n’ Cheese – sounds delicious! ALONE The Chubby Castor at The Fitzwilliam Arms is a new solo venture by talented chef Adebola Adeshina.

A

cclaimed chef, Adebola Adeshina has been leading the kitchen at The Petersham Restaurant since 2014, focusing on modern British cooking, and using the best local, seasonal produce available. Since Ade’s arrival at The Petersham Restaurant, the dining experience has regularly been mentioned in the food guides – achieving two AA Rosettes for culinary excellence, a Michelin recommendation and a listing in the Good Food Guide. Early in his career, Ade started working with the Aubergine team under Gordon Ramsay. He remained with Ramsay for six years, cooking at the three Michelin-starred Gordon Ramsay Restaurant and at Petrus under Marcus Wareing. He opened his first restaurant at the age of 24 in Tottenham, which quickly became a foodie destination. Seven years later he moved to another venture with Parsons Restaurant in Essex, winning several awards, including Best Restaurant in Essex, Best Large Restaurant, Best Newcomer, two Rosettes from the Good Food Guide and Michelin Recommended. Now he is thrilled to be opening his first solo venture this month, The Chubby Castor at The Fitzwilliam Arms – expect civilised dining with a focus

Culinary art on fresh and locally sourced produce, cooked in a modern British way. Enjoy a relaxed atmosphere, a blend of modern and vintage design with exposed beams and Georgian wallpaper, complementing the beautiful areas of Cambridgeshire and Lincolnshire. The menu will include dishes like fresh handpicked steamed crab lasagna, toasted coconut flakes or beef tartare, quail egg and walnut homemade bread. The Chubby Castor is a beautiful building comprising stone, thatch and dormer windows, which convey all the charm and character of its 17th century style. The restaurant will serve a la carte, set lunch and dinner menus, Sunday roast, brunch, bar menu and, of course, afternoon teas. Also on offer will be seasonal cooking demonstrations to be held with guest chefs. In addition, three private rooms are available for functions, with covers from six to 24.

STAY TRIM How to avoid over-indulgence and all the trimmings.

W

ith the festive time upon us the next few weeks will involve excessive eating and drinking for many of us. The chocolates become daily regulars in the office, every week sees another Christmas party and soon enough every day is a splurge day. But along with the nights out and parties there is the “what shall I wear?” dilemmas. The magazine columns start to read “Little Black Dress challenge”, “Trim up for your tuxedo” to help those wanting to shift a few pounds before the Christmas blow out. Read on for some simple ways to keep your weight in check over this festive season: SKIPPING MEALS FOR LIQUID CALORIES

We can all see how this is going to end up? Missing meals so you can get drunk quicker or have a “big session” without gaining weight is dangerous, unhealthy and counter-productive to any weight loss goals! Eating before you drink slows down the absorption of alcohol and suppresses the hunger

Alcohol contains 7kcals per gram (compared to 4kcals per gram of protein and carbohydrate) so regular drinking will contribute to weight gain (and that’s without the extra food eaten). A large glass of wine has the same calories as a piece of cake, a pint of beer the same as a slice of pizza. Still planning on a second or third glass? Avoiding rounds allows you to drink at your own pace (saving money and calories). Here a couple of simple swaps to help keep the calories down (and in some cases the alcohol too).

Help combat the extra calories by moving more and I don’t just mean on the dancefloor (although dancing is a great calorie burner!). The Stamford foodie is finally lost for words – silenced by the outstanding talents of new head chef at The Stage.

W

hen I was invited by The Scene’s publisher, Heidi, to sample a winter menu at The Stage in Deeping, I had an expectation of what I was going to eat; then, when I got there I ended up having to eat my hat, my words and some truly fantastic fodder. New head chef, Sam Sharman, who grew up in the area but spent many years travelling the world in the Royal Navy, has plans for The Stage that are as big and as bold as the flavour in his dishes. Sam, who joined the forces at 16, underwent intense chef training, earning himself the equivalent NVQ qualification in 28 weeks – it would have taken him three years to obtain it at college. The intensity

didn’t stop there, with Sam finding himself cooking for hundreds, and in some cases, thousands, of sailors in obscure locations like the California desert; or cooking at dinner/cocktail parties for high-ranking naval officers; Sam has even had the pleasure of cooking for the Queen. However, Sam isn’t resting on his laurels at The Stage, as he aims to win the hotel an AA rosette, an accolade I’m positive that he will achieve with ease, because, my goodness, this chap can cook. We sat down with owner Sav Fox and manager Nicola Beeby to try some dishes from Sam’s winter menu and we were blown away – not only are the dishes presented beautifully but they were packed with flavour, and perfectly seasoned. Sam’s attention to technique is apparent in each dish, like the 14hr pork belly (£14.95) confit in duck fat, compressed to produce perfectly crisp crackling and meat that is succulent and tender enough to be eaten with a spoon; or the lamb and heritage carrots (£16.95) pan-cooked December 2017 | E: info@scenepublishing.co.uk

FOOD & DRINK in clarified butter, which imparts a rich, nutty flavour, then finished in garlic and rosemary butter, and served with a sweet, nutmeginfused carrot puree; or the wild boar ravioli starter (£8) served with a sticky, intense bone marrow infused sauce that’s two days in the making; or the weekly visit to the Spalding or Boston vegetable auctions, to pick up fresh produce for the week. If you’re looking for something lighter, then a selection of sandwiches and jacket potatoes are available, as are light bites like warm bakery bread with salted butter and balsamic; tempura battered calamari with chilli and coriander; delicious black pudding scotch eggs; pigs in blanket served with honey and mustard mayo (priced individually or three dishes for £13), or the epic Stage Antipasti board – a wooden serving platter piled high with warm bread, cured Italian meats, cheeses, artichokes and olives – stonkingly good value for money at only £8! I was really impressed by the food coming out of the kitchen; I think Sam is going to do brilliant things for The Stage, so get your table booked now, it’s worth the drive out and I cannot wait to go back for an entire plate of that ridiculously good pork belly!

nless you have been living under a rock for the past few months around Peterborough you may have noticed the unveiling of our new Turtle Bay restaurant. Opening in June this year the blend of jerk cooking and colourful cocktails has brightened up our city for many months and now as we settle down into winter they’ve unveiled a new menu. While Caribbean and Christmas may not sound particularly fitting the match satisfies with a wave of spices that bring up the flavours of Christmas yet evokes thoughts of sitting on a beach sipping Pina Coladas – and I think we all need that in our lives. Available for a minimum of eight people this makes a perfect choice for a Christmas party or a big group gathering, and certainly makes the ideal party venue in the city. With four courses for £24 the menu certainly gives you a lot for your money and added to the cocktail happy hours, it makes a bargain that’s hard to ignore. First up is a selection of nibbles – however the term really does not do them justice as the spicy pork rinds and Trini chickpeas are a feast for the tongue as well as for the eyes. For starters the crispy chilli squid is a

delight and for those looking for a taste of Caribbean Christmas I can recommend the Guyanese curry duck that comes slow-braised with scotch bonnet and citrus flavours that could trick you into thinking it was Christmas goose! As for the cocktail connoisseurs among you I can recommend the Roots Culture for a sharp kick of rum while the Vanilla and Passion Fruit Mojito is one for those with more of a sweet tooth. All-in-all Turtle Bay’s atmosphere is what truly makes the night – surrounded by the sights and sounds of the Caribbean you can’t help but feel in the party mood. So, if you feel the need for a Christmas party with a fresh vibe, then look no further.

fter featuring the benefits of Thai massage in last month’s Scene, I was excited to experience what was involved and personally feel the benefits. Thai masseuse Wannee Cope, owner of Baan Sala in Stamford, offers a range of Thai massages from traditional to deep tissue, reflexology and head massage. Wannee was fully trained in Thailand and has been practicing for more than five years. There are certain differences from the more common Swedish-type massage that you may be more familiar with. A Thai massage involves lying on the floor to give you more comfort, but it also enables the therapist to use her weight and also her heels and knees to assist with a deeper massage to get into those more stubborn knots and to add extra compression on your pressure points to relieve tension.

I had an hour-long massage that cost just ÂŁ40 (other options include a 90 or a 120-minute massage). Wannee worked and focus on every part of my body, straighten out the muscles and making me feel like I was walking on air. Although a series of massages are more beneficial, I felt the advantages immediately. For something different and completely reviving, I would definitely recommend a Thai deep tissue massage with oil. It combines the stretching of the muscles as well as pressure of acupressure points with muscle manipulation. etallics in the home are changing from the stainless and chrome that has been synonymous with all of the recent greys to jewellery trends, which are copper and rose gold. Taps are moving to gold and curtain poles are changing to these warm metallics too, which enable us to introduce new colours – blush pink and rosy reds and golds. The fabrics themselves are reversing the other way and rather than simple linens we are seeing much more shimmer in the materials. To couple with the pinks, blue is making a strong appearance in all shades. Duck egg has been popular but this is moving to a more pale green shade and the blue is becoming navy. Blue is set to become the new background colour as we move away from grey and it can be used to great effect. Traditionally blue is seen as a cold colour but the navy tones are actually warm also working well with many of the pastel shades, which is a change from the strong citrus shades of late. Bold walls are now in favour with stronger colours being used. Wallpaper is moving away from a feature wall to a full room, with ceiling high designs so the impact is dramatic. These theatrical walls can be teamed with smaller designs on other walls if you do not feel brave enough to use it all the way around the room. Carpets are starting to follow this trend too as we move away from greys and stripes to more taupes and patterns. So, now you can choose where you would like your pattern – curtains, walls or carpets and then contrast in other areas.

How to pick the best Christmas tree.

KNOW WHAT YOU WANT If you have children, you might lean toward pines or firs with soft needles instead of spruce trees, which have sharp needles that can hurt when you step on them.

CHECK THE TREE’S FRESHNESS Bend a needle in half with your fingers – fresh firs should snap, while fresh pines bend and should not break.

FRESHEN THE TRUNK Cut off about a half inch from the bottom of the tree’s trunk and place the tree in water. The fresh cut will absorb more water, so your tree holds its needles and keeps its colour longer.

MAKE SURE THE NEEDLES ARE FIRMLY SECURE Gently grab the inside of a branch and pull your hand toward you. The needles should stay on the

Top Christmas cleaning tips from Peters’ Cleaners.

Christmas cake stains The festive season is upon us along with mince pies and Christmas cake. Christmas cake has many ingredients including alcohol, sugar and fat all of which can react differently with fabrics. Number 1 rule is DO NOT RUB! Don’t be tempted to scrub the mark away as rubbing can set the stain in and damage the fibres of the fabric resulting in permanent damage. Dry cleaning is the most-effective method of removing grease or fat so if it is a treasured item take it to a professional. Alternatively, if you want to try at home, use a special stain remover product although be aware that the mark will contain grease. Before treating any mark or stain on your clothes or fabrics check the care label. If in any doubt, seek professional advice. It is not advisable to apply water to dry clean-only fabrics as water may shrink, distort and discolour some fabrics.

Get ready to party! Time to inspect those party clothes. Don’t be caught short and discover food stains on your dinner jacket or evening dress the day of your do – get them cleaned and pressed now. If your dinner suit or dress is looking creased when you get it out of the wardrobe, rather than ironing them, which may lead to fabric damage, put them on a hanger and hang them in your bathroom or shower room. Steam from the shower or bath will gently encourage the creases to fall out. This may not work for all items, but it is inexpensive, easy and unlikely to cause any damage. If you are still not happy with the appearance of your clothes, take them to be professionally pressed.

Why will some cleaners not clean my beaded dress? A Party season is the excuse to get out your sequined and beaded tops that add a bit of glamour and glitter to your night. You may however find that not all cleaners will clean items with beads or sequins. Beads can be made of many different materials including plastic and glass. Dry cleaning means the item is exposed to heat and this can result in some types of beads, specifically plastic, melting and disappearing during the process, even though P symbol meaning it is suitable the item has a O for dry cleaning. Sequins and beads are usually attached to the fabric using either glue or cotton. Glue can disintegrate during dry cleaning and poorly secured cotton can come undone meaning beads or sequins fall off. If beads or sequins are attached as a ‘string’ the whole row can come off. A professional cleaner will know how best to clean the item.

They may decline but all the same it will mean a lot to know someone was thinking of them on Christmas day. ■ Christmas is a day to celebrate. For those alone it can make a lonely day feel even more empty. Spare some time for someone in need of some companionship or comfort. ■ Get involved over the festive period with campaigns such as Age UK who visit hospitals, hospices and care homes to provide some Christmas cheer, hot food and gifts. ■ Are you alone this Christmas why not share your company with someone else? STORM Volunteers needed at Peterborough’s FoodCycle project.

F

oodCycle, a charity which turns surplus food into free three-course meals with the help of local volunteers, is looking for people to join its cooking team. Peterborough’s FoodCycle project has recently celebrated a move to a new venue, the Park Road Baptist Church, which massively increased its capacity, enabling it to seat more than 80 lunch guests. This growth in numbers means they are looking for extra hands in the kitchen. Liz Bartley, one of the kitchen

team leaders, said: “You don’t have to be the next Jamie Oliver – if you can throw together a meal for yourself at home then we need you! We work as a team to decide the menu and cook the dishes, so you don’t need to know recipes off by heart or be able to whip up a three-course meal by yourself. “We cook every Monday but there’s no requirement for a weekly commitment. Our volunteers choose which dates they can help out and then

A fascinating story of a Peterborian who discovered gold, diamonds and alum in Brazil.

A

leading Brazilian newspaper “A Tarde” published an article on 26 April 1922 about a Peterborian - Herbert Waite, son of Thomas Waite of 184 Lincoln Road, who had started his journey to Bahia State (northeast of Brazil on the Atlantic coast) in November 1920 as a land surveyor. Some 18 months later Herbert Waite had discovered a pure alum (double sulphate salts) mine in the Sincora Mountain of central Bahia. The discovery of this mine made it the largest of its kind at that time and it was part owned by Herbert Waite and the French millionaire Marcel BouillouxLafont (1871-1944) – a banker

and industrialist. The mine covered more than 40 kilometres. The newspaper article recounted a thrilling story about Mr Waite’s journey into the interior of northeast Brazil to conduct his survey. He writes from Jiquy on 10 April 1922 to say: “Here I am right in the centre of the great gold and diamond field of Bahia State. Last night I was lulled to sleep by the roaring of the tigers in the hills. I am stuck here for fresh horses and shall not get away

until tomorrow. The climate is wonderful at 1,950 feet above sea level. Iracema (now named Almas) I passed on the train to here is 2,500 feet above sea level and for 10 miles either side it runs through a dense forest in which the trees surpass in height anything I could have imagined. The forest is just a closed wall of trees of all sizes, of wonderful grandeur and full of fearsome possibilities as regards snakes and wildlife. Tomorrow I start for Passaqau Joad Manoel – some 25 miles on horseback – an ordeal I am not looking forward to, as the road passes over crags. But beneath these crags is an endless wealth of gold and diamonds.

We cut our way through the 24 miles of virgin forest up to the great wall of alum. Practically pure alum is present in deposits of millions of tons – 40 square kilometres of it!” Herbert Waite left England in late 1920 to take up the post of Chief Resident Engineer of Brazil’s South-Western Railway. He relinquished this position as soon as he discovered huge deposits of alum and having panned successfully for deposits of gold and diamonds. Our research has uncovered that Herbert Tom Waite married Mamoela Gonçalez (a Spanish lady) in Brazil (a former Portuguese colony) and that he had a brother

Brazilian gold and diamond ring named Reginald who remained in Peterborough. Herbert’s granddaughter Claudia Waite de Souza still lives in Brazil and is a government lawyer. ith a lot of pomp and ceremony, Marvels newest super-film has hit our cinemas and, for the most part, it is as rip-roaringly fun as all of the others. “Thor must face off against his toughest foe to date; Hela (Cate Blanchett) – The Goddess of Death, and stop her from bringing about the end of Asgard. He must reconcile with his estranged brother Loki (Tom Hiddleston) and convince some old friends to help him, while evading The GrandMaster (Jeff Goldblum). Life, and Asgard, will never be the same again.” There is a standard checklist for Marvel films, ever since Guardians of the Galaxy exploded into our cinematic lives: Awesome soundtrack ✓ 80’s graphics and feel ✓ References to 80s ✓ Supremely funny trailer ✓ Extreme amount of hype around the film ✓ Connections to other MCU films ✓ Stellar casting ✓ The dialogue is clever, with some excellent exchanges involving Thor and his supporting cast, along with some sharp, dark scenes that try to emphasise the drastic nature of the film title.

THOR: Ragnarok However, this is undone with the needless jokes and quips. Thor really suffers from “Deadpool Syndrome”, whereby it tries to be funny, too funny in many places, and puts unwarranted funniness in others. It’s like everyone now wants to add in some hilarity to their films, as if that was the reason Deadpool did so well. Ragnarok is apocalyptic, not a joke, and I think those at Marvel forgot this when writing the script. Not exactly light-hearted subject matter! Cate Blanchett steals the show as Hela – a powerhouse performance of Nordic mythology proportion. One of the best in a superhero film fullstop! Overall, one of the best, if not the best, Marvel films. Great cast chemistry, great supporting staff and a great soundtrack! A must see for all Superhero film fans! 4k or Blu-ray all the way upon release! A God(dess) of a film, nothing Ragnarok about it! 5/5

CANAL LIFE T BRIAN JONES – LOCAL HISTORIAN

he Stamford Canal that ran for just under seven miles between Stamford and Market Deeping, played an important part in history linking all the communities. Significant improvements were made to the river after the Civil War with a new cut with 10 locks being constructed between Stamford and Market Deeping with two locks being built on the river section below Market Deeping. The finished project was the longest canal with locks in Britain when it was built. No longer a barge-carrying canal it remains a fascinating one to walk alongside. West Deeping appears to have gone into slumber between the 16th and 18th centuries. However, the water mill on the Stamford Canal remained active. Now a private house it is easy to see the mill in the early 18th century where, at one stage, it had four water active mills. Going over the canal/water course then, and to this day, we see the through road called King Street – a road close of the line of the Roman major road of Ermine Street – a road that ran, and still runs, along the edge of the Fens and heading to Bourne and its Abbey. Could King Street have been a shorter and/or cheaper road to follow with little reason

Deeping St James Church for the traveller of the time to linger too long here in this small community? Market Deeping also seems to be keeping itself to itself at this time. A 2,000+ word story of the communities’ history makes no mention to the late 16th and early 17th century activities in the town. By contrast the Stamford canal was continuing its journey to the sea with Market Deeping being its final commercial stop-off point. However, there is a legacy of the time – a legacy that is visible to this day. It is on the church of St Guthlac – outside for all to see; something that impacts on our life then – and now. Look up at the tower as you walk into town and/or as you leave – if you are going north you’ll see the date 1710 with the message ‘The day is Thine’; and if you are heading

south to the town centre you’ll see ‘The Night cometh’. So easy to miss; so poignant to read. The third of our communities is Deeping St James. In common with other monastic houses Deeping Priory was dissolved in 1539 - and its lands sold to the Duke of Norfolk. The Priory was retained for parish worship. Tragically, the buildings themselves fell into decay with the church tower collapsing in 1717 with ‘centuries of flooding and decay’ being to be blame. A new tower was built in the 1730s – and stands proudly to this present day.

rudenell Estates has started on Phase One of a major and an essential refurbishment programme for Deene Park. This renovation includes a complete renewal of most of the roof, the rebuilding of many of the chimneys, essential works to the masonry and refurbishment of the South Elevation and Courtyard. Local surveyors BSM Noble of Peterborough is overseeing the renovations, and historic building specialist Messenger Construction of Stamford has been undertaking the works to the building. We are delighted that the project is running on budget and on time! We are still expecting the final removal of the shroud of scaffolding in December this year.

The Roof: Repairs to the roof have included increased falls and insulation and ventilation while the Collyweston roof has been completely removed for repair, felt laid to the base of the roof, broken or damaged slates replaced with like-for-like new ones and re-sited. Timber windows: A repair scheme has been undertaken using replacement timber

Stonework: One of the main problems with 17th century stonework is corrosion of ferrous cramps installed during the original construction. Lincolnshire Wildlife Park has unveiled Phase 1 of The National Parrot Sanctuary.

T

he Animal Rehabilitation and Reception Centre, (ARRC) a 2,600m3 development, is set to deliver a new level of professionalism within the park as the numbers of parrots arriving at the centre are on the increase again. CEO of the charity Steve Nichols said: “This is just as exciting as when we laid the first brick on Bengal Gardens, our tiger research centre. Probably more so as we now complete the circle and put parrots as the number one animal on site again, reinvigorate and re-launching The

National Parrot Sanctuary.” The £250,000 development will comprise of state-of-the-art facilities, including a four-stage negative air pressured quarantine unit for newly arrived birds; a fully equipped hospital with both on-show and off-show convalescing wards;
