Hidden Hideaway is set amongst 400acres of rolling Leicestershire countryside. They have a pedigree herd of Lincoln Red cattle as well as a few sheep with lambs. Mainly an arable farm, in the summer months you will see lots of tractors and trailers and the combine in the fields near the site. Going into autumn the hedgerows around the farm are full with blackberries so if you fancy making a blackberry pie when you get home or trying your hand at blackberry gin, there is ample to go around. Minding your people while you mind business After having first-hand experience of establishing effective company cultures, Liberty Mind was created to help businesses and professionals bring humanity back into the workplace. Bringing well-being into the workplace, Liberty Mind is providing businesses with 121 workplace mentoring and workshops that aim to help businesses looking to support their employees. Created by Stamford local, Lizzie Benton, the company has already secured clients in Cambridge, London, and Milton Keynes, and aims to help businesses who want to establish an effective company culture. Talking about the impact of workplace mentoring Lizzie
comments, “It is my passion to help businesses implement true work-life harmony. When people feel supported and valued they bring their best work to the table. It’s rare that people get to talk at work about the things that are really impacting their lives. Unfortunately, 121’s are often only results driven appraisals void of human empathy. This is why Liberty Mind was established, to make the workplace more human.” lizzie@libertymind.co.uk libertymind.co.uk 07526 473854

We’re in good hands So many people work to make Peterborough better. Here, we acknowledge just two of the many of those who make a difference.
John Holdich has been the leader of Peterborough City Council since 2015 and a councillor since 1979 and was awarded an OBE for public service in 1996. John is a Director of Opportunity Peterborough and the recently formed Peterborough Investment Partnership. He is also Deputy Mayor of the new Cambridgeshire and Peterborough Combined Authority. He is Chair of Governors at the City College Peterborough, Chair of Glinton Parish Council, as well as a Co-opted Member of Cross Keys Homes Development Committee. A bit from John… It’s difficult not to be impressed by the new Fletton Quays development. The site will soon be home to apartments, a Hilton Garden Inn Hotel, offices - including one for council staff - as well as retail and leisure outlets, and a whiskey and gin distillery. It’s great to see a site derelict since the 1970s transformed in this way for the good of the city. Fletton Quays would not have succeeded without the Peterborough Investment Partnership (PIP), which has city council involvement. I was thrilled to see it scoop the Partnership Working prize at the National Planning Awards – proof we are all pulling in the right direction. We all know there’s fantastic talent and achievement here in Peterborough. I don’t have space to mention everyone by name, but well done to all recipients of the Queen’s Birthday Honours. The city is all the greater thanks to your efforts. john.holdich@peterborough.gov.uk 07920 160291
Simon Hinchliffe was successful in his application to be seconded to HRH Prince of Wales’s Business in the Community, part of the Prince’s Responsible Business Network, back in July 2017 as a Business Connector (Peterborough) Working for the City. His role is that of a Senior Manager seconded from the Public and Private sectors to connect local businesses, voluntary organisations and educational establishments together for mutual benefit. A bit from Simon… During the last ten months or so, I have had the privilege of meeting so many amazing people. Ranging from chief executives to volunteers to teachers… every single one of them have shown passion for what they do. I hope, in a small way, I have been able to make a difference to Peterborough by using my own business skills to help those people I have engaged with. I have seen some really strong collaborations developing as a result of me connecting people and organisations together, that probably wouldn’t have normally come into contact with each other. Several weeks ago, I received an email from Business in the Community HQ, telling me that I had been selected – “as a result of the work I had been carrying out in Peterborough” – to attend The Prince of Wales 70th Birthday Patronage Celebration at Buckingham Palace. To say I nearly fell off my chair was an understatement! Even the Postie remarked that you don’t get an envelope from Buckingham Palace everyday… Simon Hinchliffe Business Connector In partnership with Peterborough Council for Voluntary Services simon.hinchliffe@pcvs.co.uk 07503 153514 @Simon_Connects

Pushing the boundaries Serpentine Green boss swaps shops for Snowdon, Scafell Pike and the Sahara, all in aid of charity. David Wait is used to the challenge of running one of Peterborough’s largest and busiest shopping centres, but that’s a walk in the park compared to the tests and trials that await him over the next ten months. David has decided to take on eight incredible challenges, all over the world, in an effort to raise £10,000 for local charity, Disability Peterborough. Amongst other things, he will be jumping from a plane, running across the Sahara desert, climbing mountains in Peru and undertaking a bit of SAS selection! What’s more, he will be doing it all to the soundtrack of ACDC! This is such a massive commitment and these challenges push the boundaries of the average man’s fitness and determination, proving that David Wait is by no means average. It is also for a really good cause and all donations will be gratefully received. There are also potential sponsorship opportunities, please email david.wait@ serpentine-green.co.uk for details. The Grange Spa By Jenny Garford
Just 25 minutes from the bustling centre of Peterborough, the multi-award winning Grange Spa offers guests a peaceful, tranquil retreat full of rustic charm in the Lincolnshire countryside. Upon arrival, expect a warm welcome from the team and the opportunity to sit and enjoy a welcome drink maybe a cheeky glass of Prosecco? A short tour will help you familiarise yourself with the facilities, which include a modern gym, 12m indoor heated pool, herbal aroma bath, delicately scented gem stone steam bath and intensely hot steam room; delicate tropical and refreshing mint experience showers and an ice dipping bowl to refresh yourself post sauna. Outdoor seating allows you a few blissful moments of countryside quietude. There are plenty of places to hide away and relax, including the large snug, with comfy sofas and chairs, perfect for curling up in your fluffy white robe with a glossy magazine or a book from the well-lined library. Be sure to try the aromatherapy chair - a futuristic looking contraption that vibrates, plays soothing sounds and emits relaxing aromas. The Grange’s lunch menu includes super-food salads, quiches and a Lincolnshire ploughman’s, as well as sweet chilli salmon served with sweet potato and cous cous, and spicy jerk chicken with wild rice and peas - beautifully presented, absolutely delicious and wholesome to boot! All dishes are prepared and delivered on the day to the spa by Nanny’s Hamper, a local business based just a couple of minutes down the road from The Grange.
Exclusivity Dee and I were also invited to experience a spa treatment, using Pink Boutique’s certified-organic products. I had the Pinks Power Massage (£80) - a heavenly 90-minute full body massage, which focuses on meridian energy channels and pressure points to ‘relax muscles, balance your being, and cleanse your body and soul’. I have to say, I came out of the treatment room feeling positively buoyant! Dee had the Pink Boutique Eco Chic Facial (£60) which combines a relaxing face, neck and shoulder massage, with a deep cleanse and mask. The treatment lasted for an hour, and Laura, who performed the facial, was incredibly professional and the treatment was superbly relaxing. As far as spas go, The Grange is on the boutique side, which allows for the feeling of exclusivity; in fact, The Grange pride themselves on being able to offer a ‘crowd-free’ spa experience, and even with other guests using the facilities, it certainly was blissfully quiet and there was a real sense that the spa was ours for the day. The perfect place for those precious hours of ‘me’ time. The Grange Spa, Millthorpe Road, Pointon NG34 0NF relax@thegrangespa.co.uk thegrangespa.co.uk 01778 440511

Stapleford Spa By Adrian Dewey
I have been to the stunning Stapleford Park many times, mostly when photographing weddings or doing fashion photoshoots but have never had the pleasure of using the facilities as a guest. I know it has the golf course, but I’ll be honest, I’m not very good at golf. I know it has an excellent reputation for food and I know it has the spa... but I’m a man… and we don’t really use spas, do we? Well when Gravitas magazine asked me if I’d like to go and review the Spa, I thought, finally I will get to see why spa days are becoming more and more popular. Men are increasingly looking after themselves, their skin, their bodies and most importantly, their state of mind. My man bag has all manner of things in it to make this slightly rotund, older-than-i’d-like-to-be photographer feel better and look younger. From anti-wrinkle gels and moisturiser, to face wipes and after-shave, but I’d still never considered a spa day.
Retreat
Myself and my friend arrived at Stapleford Spa that is located on the Hotel estate in the converted stables. We were immediately greeted by the friendly staff and shown upstairs to a comfortable lounge and offered tea and coffee. After a few minutes the therapist came out and talked through the treatments we would be having and then shown to our very large and plush changing rooms, white robe and slippers on and then it was back up to the lounge to relax prior to our treatments. What followed was a wonderfully relaxing hour, from picking the essential oils used for their specific aromas to the deep tissue massage and luxury facial treatment. Once we had both had our treatments it was time to get changed and have lunch at the Pavillion restaurant overlooking the golf course. With a glass of Prosecco and a tremendous burger with hand cut chips, all served with charm and a smile from our waiter, it was the perfect end to the morning. So much so that I didn’t want to go back to work. Must have a full day next time and make use of the fully equipped gym, the indoor heated swimming pool and beautiful gardens designed by Capability Brown. Stapleford have special offers on spa days and spa breaks, both of which include access to all of the leisure facilities. I am now a complete convert and truly believe more men should treat themselves to this experience. It’s amazing how the tension and stresses of the day to day grind leaves you, and with a selection of carefully chosen treatments that guarantee to restore, renew and revive your body and mind, I will definitely be back - and for a full day next time! How nature can improve our health and wellbeing A bee farmer from Lincolnshire wants to shine a light on the important relationship between nature and our health and happiness. By Jez Rose, Founder of Bees for Business. Jez Rose founded Bees for Business after escaping the rat race and buying a small run-down farm with his wife so that he could test his theories on the impact of nature on health, well-being and behaviour. As part of that, he installed a single beehive, but as he learnt more about the critical yet totally underrepresented role the honeybee plays and the tragic decline in their numbers, he installed more hives and has now committed to installing 250 over the next 5 years. Here Jez talks about the importance that connecting with nature has on well-being: “As a bee farmer who spends a lot of time outdoors, I know first-hand the remarkable impact that nature has on people. We know from studies that happy people are productive people and that nature is hugely beneficial to well-being. Shockingly, however, according to research conducted by Persil, 75% of children in the UK spend less time outside than prison inmates do. Our starting point at Bees for Business is that reduction in stress and anxiety and increase in well-being, happiness and confidence from seeing nature, is caused by nature’s ability to stimulate feel-good neurotransmitters such as dopamine and oxytocin. People who adopt one of our hives, quite rightly feel proud to be a part of creating positive results for honeybees, humans and the
environment. We also work with local stroke rehabilitation teams, special educational needs organisations and mental health charities to provide paid, volunteer and work experience opportunities because we understand the benefits of working in, around and with nature. Benefitting from nature is simple: encourage your children to play in the garden, make sure you take a walk each day and enjoy the beautiful countryside that surrounds us. Not only does it keep you physically active but the benefits on your general health and wellbeing cannot be argued with. You can find out more about Bees for Business at www.beesforbusiness.com
Our clients enjoy all of the many benefits of beekeeping but without any of the hard work!

Get summer ready! Quick tips for losing weight...
Summer is definitely here and traditionally it’s the time of year when you want to lose a few pounds to get bikini ready. However, losing weight can be frustrating and confusing. I’m often asked how to do it quickly and effectively so here are some suggestions:
•
Take a probiotic daily. Sugar cravings are often connected to poor levels of good bacteria in the gut - taking a probiotic will restore good levels of flora and make it easier to say no to that choccy bar.
•
Look at your levels of fibre. Fibre fills you up and keeps your blood sugar levels stable - this is a must if you want to avoid overeating.
•
Eat your food slowly. Receptor sites that signal to the brain about being full take 20 mins to activate so you’ll fill up quicker on less food if you slow down.
•
Ensure there’s a little protein in each meal. Protein prevents sugar cravings, generally takes longer to eat and sustains your energy levels.
•
Move! Make it easier on yourself to get success - you must move if you want to burn fat - it’s so much harder to lose weight by dieting alone.
•
Examine how you talk to yourself. It’s so important for success. Lose weight because you love and value yourself, not because you hate the way your thighs wobble.
•
Look at your mindset regarding weight loss. Think about eating healthily, not about calories and think about all the other positives you will gain by losing weight to keep you motivated - more energy, clearer skin, more confidence.

A summer of sport – be injury free! Are you an active gym member or someone who participates in a regular sport? Take these injury prevention tips on board.
Sport is all around us this summer – the world cup, Wimbledon, cricket, golf majors. Whether we participate or not, we can all empathise towards pain and injury. No-one wants to see their favourite sports star injured and neither do we want pain and hurt for ourselves. From all professional athletes, physiotherapists and strength and conditioning coaches I know, let me share some injury prevention tips: • • • •
Be in good physical condition! If you’re not used to playing sport or exercising regularly, take it easy and build up slowly. Know the rules and correct techniques – this will decrease the risk of injury massively. Wear the appropriate gear and equipment – it’s there for a reason! Sleep and rest is an extremely important part of recovery. Day two after exercise and sport can bring out the pain in our muscles. Take it easy and allow yourself to recover.
• •
•
Protein should be taken within an hour after exercise. Remember your carbohydrates, refuel healthily and drink plenty of water. Warm up and cool down before and after exercise. Stretching, slowly building your heart rate and slowly lowering your heart rate is effective and wise! If you have a history of injury or you have pain, consult a physiotherapist or a specialist in sports injuries/musculoskeletal pain.

Changing trends Pkai owner Kai Wan talks about the latest trends for male hair styles.
A faded hairstyle is still the most popular cut, clippered from short to longer on top. We also do skin fades where there is no grade on the clippers and grading up the head. We have seen an increase in doing these fades and perming the top, making it very curly.
35
Did you know, 25% of our clients are male
I think as we see this really short trend move out we’ll see slightly longer and maybe more textured looks come in, perhaps even some variation of a mullet (for the younger readers, this was a very popular style in the early eighties!). Beards are most certainly still out there and looking really cool. Guys are looking after them with the array of different beard oils available on the market, giving them a glossy look and much softer feel. However, the beard trend has been slowly disappearing over the last few months but will be around for a while yet. When looking at face shapes and suitability, think about proportions. If you have a longer, thinner face then perhaps having clippered short sides and lots of height on top would
not be right, as this look would exaggerate the shape. If you have a rounder face, the opposite applies - by having it short or close in at the side and height on the top will effectively lengthen the face shape. The male grooming market, in general, is very healthy both in terms of services and products. Hairstyling pastes such as System Professional Defined Structure and Craft Clay by Sebastian are our most popular. We also have an amazing range called Nioxin which is designed to promote thicker, fuller hair. This is fantastic for guys fearing hair loss and can reduce the effects. Wall climb
Note: Please consult a medical professional before starting a new exercise regime.
Benefits: Strengthen and develop your upper body. Execution: Start off in a press-up position on the floor and place one leg against the wall firmly. From this point aim to hold the hollow body hold through the exercise. The other leg should now be placed against the wall before you slowly begin to walk the feet up the wall and the hands back. Track progress with markers or tape on the floor until you reach a point that your nose can touch the wall for 60 seconds. Slowly lower back down to start position.
Wall squat Benefits: Strengthen lower limbs and improve posture in the thoracic spine. Execution: Take a shoulder-width stance with toes and knees in line, hands placed up against the wall and head up. Slowly descend back and down with the hips until the hip crease becomes lower than your knees, heels down throughout. Use a box or step to check depth and then slowly stand back up straight. Have a go at 2 x 15 reps.
You will never know your limits until you push yourself to them.
90/90 breathing Benefits: Used to teach diaphragmatic breathing, midsection bracing may improve stress levels, state of relaxation and midsection awareness. Execution: Knees and hips bent to a 90-degree angle with your back flat against the floor. Neck and spine should be neutral and comfortable. Place one hand on the upper chest and one on the lower abdomen. Take a slow deep nasal inhalation and exhalation.
39
Inverted handstand press Benefits: Strengthen and develop your upper body. Execution: Place your hands on the floor slightly wider than shoulder width. Raise the hips so that they are the highest point of your body. Weight should be transferred into the upper body. From this position bend your elbows and allow the upper torso and head to slowly touch the target area. Have a brief pause and push back to starting position. Aim for 15 reps before advancing to a box or elevated step.
Banded lateral walk Benefits: Activate the gluteus, strengthen the muscles of the lower body. Execution: With the band placed just below the kneecap and the body lowered into a partial squat, take a side step whilst applying maximum tension against the band. Focus on using the glutes and keeping the toes and knees in alignment with the chest up. Try 15 steps in both directions (Thor hip band from strength shop).
Hollow body hold Benefits: Increased strength and endurance in the mid-section. Good progression towards gymnastic holds on the rings and floor. Execution: Lay on your back in the hollow hold position, arms extended by the ears, legs straight, and begin to rock back and forth whilst maintaining a tight frame. Try 20-60 seconds rocking.

Cheap? No. Worth it? Absolutely. For scattered around the islands (there are seven main islands and 55 islets or isolotti) are a number of beaches which are so perfect, so pristine, so unspoilt, that you would believe you had discovered paradise, and they are only accessible by boat.
Set Sail You can charter yachts and speedboats to sail you around the islands but then you’ll get a real taste of the seafarer’s life on board a period sailing ship, like the Pulcinella, which navigates the waters with the power of the wind behind its huge red sails. Anchoring at Budelli, guests on the Pulcinella are treated to a leisurely lunch, with a table laden with staple Sardinian fare - octopus salad, local cured meats, huge dishes of pasta with succulent prawns, and mussels galore, all enjoyed while taking in the view of the world-famous Spiaggia Rosa, an impossibly pretty pink-sand beach. Another stop at an idyllic beach on the island of Spiargi will have you question why you would ever return home. Sailing across the high seas with the sun on your face and the wind blowing through your hair, discovering barely-explored beaches, will have you feeling like a Phonecian- a must-do for those wanting an immersive experience. Sardinia is the perfect holiday destination for those who want to be seduced, and it would be hard not to be enamoured by the jewel in its crown, the Costa Smeralda. Sycamore is synonymous with BMW – a local dealership with history, heart and passion. It is often said that BMW stands for ‘Best Motors in the World’ and it would be difficult to argue with this. So, when did the Sycamore BMW partnership start? Peter Hamblin and his father, Bob, made the decision in 1972 that they wanted to sell sophisticated and exceptionally engineered cars. The Hamblins already owned the successful Central Garage (Uppingham) Ltd (CGU) when the Sycamore Group came up for sale. “The Sycamore Group matched our existing business profile, and the sale came about at a time when we were looking to expand,” says Bob. “We loved the marque. A chance to sell a German model that exuded power, presence and enviable engineering,” says Peter.
Words by Heidi Semple
The Sycamore Group was made up of three subbusinesses: the headquarters in Ramsey with a large depot, workshops for cars and trucks, body

shop and lorry bodybuilding shop; Sycamore in Cowgate, which held Wolsely and Morris commercial franchises; and Sycamore in Stamford that focused on Morris and Riley retail and was also a Wolsely distributor. Funding was arranged by Tony Prince, who was the Managing Director of CGU, which held the BMW brand, which he subsequently moved from CGU to Sycamore (Peterborough) in Cowgate. In a further shake-up, Sycamore (Stamford) took on the Saab franchise, and CGU sold the truckorientated business at Ramsey, so the Sycamore focus became purely car retail and servicing. However, back then just a BMW franchise wasn’t singularly financially viable, so the company also took on the unusual bedfellow Skoda. Unsurprisingly, it wasn’t long before BMW insisted on the removal of Skoda. The Sycamore Cowgate site consisted of parts, sales and service departments with around 10 staff. The core business was selling new and used BMWs with after-sales support. It ran as an independent company, although the parent company was Central Garage (Uppingham) Ltd.
51
Peter and Bob remember that the famous comedian, Ernie Wise, who lived in Peterborough and was a regular customer of Sycamores in Cowgate, used to fill up his Rolls Royce with petrol and then park his car there while he went about his day! In the eighties, the Cowgate business relocated to Glinton – a move instigated by the development of Queensgate and was steered by BMW itself as it wanted to situate outside of Peterborough. BMW executives viewed and approved the Glinton site by helicopter! “It was an exciting time for the company. The new site was built to BMW’s expensive corporate standards. It was, and still is, a stylish base” says Bob. Following the continuous success, the company developed a purposebuilt dealership on a green-field site on Papyrus Road where it quickly developed, and volume increased at a pace with the marque nationwide. There followed a sales centre in response to increased customer demand. The company then had to refurbish the original Papyrus Road dealership to accommodate the iconic Mini with a solus showroom. “The arrival of the Mini has boosted our business exponentially and introduced us to a more diverse customer base. It appeals to the new generation as much as it delights the purchasers of the original Mini, which was launched in 1959,” says Peter. Back in the day, when it all started for Peter and Bob, The BMW model of the day was the popular BMW 2002 range of light but powerful compact two-door cars. This was a trend-setting, iconic car that captured the market at that time and retailed at around £2,299. If you are lucky enough to be the owner of one of these now and it is in excellent condition, you could be looking at resale of around £50,000! Equally back in 1972 when the cost of a loaf of bread was around 9p and the average weekly wage was £32, a new mini would set you back £600. Now there is such a broad range of BMW models available, to suit every taste and budget, from the BMW 1 Series to the BMW M. You can choose from the iconic Mini 3-door hatch to the Clubman, Countryman or a Convertible. Whatever your style, Sycamore believe that if you try a BMW or Mini for 24 hours, you will not want to give it back! So you can put this to the test by calling Sycamore now to book your test drive.
What a difference a day makes! After 24 hours with a new BMW you won’t want to give it back.

Chalky white walls are an excellent foundation for this understated look; wooden floors, ideally parquet, are softened with colourful rugs, which are typical of Persian design and often come with a hefty price tag. While it’s nice to splurge, we found a fantastic selection at Carpetvista at really decent prices. Mid-century style sofas in neutral colours provide a muted background for an assortment of colourful, heavily textured boho cushions and throws. Additional seating comes in the form of leather chairs in iconic mid-century designs and aged leather pouffes.

Made with love
An idyllic village pub with a great atmosphere dating back to the 18th century serving delicious food, real ales and fine wine
With 26 years’ experience as a Chef, Mark Tomeo, recent head chef at The Blue Bell, has worked in some of the best and toughest London kitchens, training under Roger Evans at The Institute of Directors in London’s Pall Mall, before working under Michelin starred Bruno Loubet at The Chelsea Hotel, and under Darren Roberts at the glittering Atlantic Bar. Mark then made the decision to move out of London, settling in Norfolk, where he worked the kitchens of The Old Lodge in Old Hunstanton, and Heacham Manor Hotel, before moving to Peterborough.

Looking for some delicious food where every dish is made with the utmost care? Look no further than The Blue Bell at Glinton.
Growing up in a large Italian family, eating great food was the norm; Mark shared his childhood memories of tucking into fresh pasta and melanzane parmigiana - a simple Italian dish of layered aubergine with tomato and
parmesan. He also loved to watch his mother, a professional cake maker, at work and he accredits his love of being in the kitchen (and his fondness of cake) to her. Away from the kitchen, family is still very important to Mark, who loves nothing more than watching a good film with his daughter or popping back to his parent’s house to eat. Much like The Blue Bell’s proprietor, Will Frankgate, and his food-hero, Raymond Blanc, Mark finds great joy in taking simple ingredients and transforming them into something spectacular, making him the perfect fit for the Michelin-guide-listed pub. The Blue Bell source their ingredients ‘on the doorstep’, building dishes around great seasonal produce from local producers. Mark’s aim is to continue building The Blue Bell’s reputation for serving unpretentious, honest food, cooked with love, care and attention. Food = Love Cook up a storm in the kitchen with local chef Kwoklyn Wan and #JoinTheJourney. Written by Kwoklyn Wan
When asked to sum up my love of food in just a few words, it’s probably easier to tell you what I don’t love… the fact that there’s just never enough of it! Food is so much more than just a necessity to live, it’s the crunch of fresh vegetables, the squelch of juicy king prawns, the aroma of that perfect spice combination, the soft chew of sticky rice and the slurp of long noodles! I grew up loved and well fed, therefore the two have always gone hand in hand for me; Food = Love and with love, you share food simple! Spending so much time writing about food, I so often crave the flavours I describe and find myself rushing out to the local Chinese supermarket for extra supplies to whip up a tasty treat to satisfy my literary induced hunger. Having spent a few years away from commercial kitchens, using my lifelong training to teach martial arts in both the UK and US, it has been a real highlight for me to come back to my first passion and find such overwhelming support from the people I meet. It’s a heart-warming feeling to receive such genuine interest from others for the love I have for something so simple, and it gives me great pleasure to be able to share my knowledge and skills with those that wish to join me on my journey to create and enjoy ever more deliciously mouth-watering dishes.

A Cocktail Concoction There’s no better way to while away a sunny summer afternoon than with a delicious cocktail or two!
Words and pictures by Jess Lamb
Stephen Miskell and Alex Way, resident mixologists at Twelve All Saints (Stamford’s super stylish answer to a classy cocktail bar) gave Gravitas the lowdown on the best drinks to be found behind their bar this summer – and even shared a couple of secret recipes for you to try at home.
The Classic Margarita
Porn Star Martini
A Perfect Pisco Sour
The margaritas alone (the name means ‘daisy’ in Spanish) are reason enough to prop up the All Saints bar for an hour or two. The precise origins of this delicious drink are more than a little murky, but it’s widely believed that it first came to popularity during Prohibition, when booze-deprived Americans ventured across the Mexican border in search of a drink – and enterprising bartenders were more than happy to oblige.
A relative newcomer to the cocktail scene, this pretty peach drink is the ultimate in style, sexiness and sophistication, and it’s not unusual to see a host of them lining the Twelve All Saints bar on a Friday and Saturday evening! Created by Douglas Ankrah – a bartending legend – the Porn Star is a delightful blend of vanilla vodka, Passoã passionfruit liquor and passionfruit syrup … all accompanied by a shot glass brimming with Prosecco!
We all know and love the traditional Whisky Sour, a blend of whisky and lemon juice with a cherry and orange garnish. However, if you’ve never tried the pisco alternative, you’ve been missing out. The Pisco Sour has been appearing in cocktail recipe books since as early as 1903 and was made famous by a rather excellent gentleman named Victor Morris, who perfected the drink as we know it today in his bar in Lima, Peru.
The All Saints team use their definitive recipe of tequila, Cointreau orange liqueur and fresh lime juice, with a dash of sugar syrup to taste, all served splendidly in a chilled glass with a salt rim. If you’re feeling adventurous, why not ask for your margarita with a twist… we thoroughly recommend the chilli option!
This drink epitomises everything that’s great about Stamford’s top cocktail bar, it’s fun and fabulousness and is definitely the Gravitas team’s go-to on a night out.
The alcoholic base of this blend is the hugely underrated pisco, a Peruvian brandy distilled from fermented grape juice. Twelve All Saints expertly blend this South American spirit with egg white, lime juice and sugar syrup, finished with just a dash of bitters and a dried orange garnish, in order to create the perfect blend of sour and ever so slightly sweet in one delectable short drink!
77
A Dash of History ‘Cocktails have an amazing heritage’ says Stephen as he pours a healthy measure of tequila into a shaker, ‘wherever humans have appeared through the ages, alcohol has never been far behind!’ Never a truer word was spoken, and it’s highly likely that blended drinks developed as a means of making unrefined forms of alcohol a little more palatable. Luckily for us, this ritual has evolved slightly over the years, and now most bartenders worth their salt follow a basic recipe that calls for three parts spirits (my favourite, tequila, for example) to two parts citrus and one-part sweetener, which can be anything from honey or sugar to agave syrup.
Have these creative concoctions caught your interest? Twelve All Saints also run fabulous cocktail masterclasses which are the perfect way to learn more, celebrate a special occasion or simply have a night out to remember! Contact the bar for more details and pricing. stamfordwinebar.co.uk/twelve-all-saints 01780 765335
However, if your summer is less about big nights out and more about balmy evenings in the garden with good friends, Stephen’s secret recipes are guaranteed to tickle your guests’ tastebuds!
Cucumber and Mint Gin Fizz
Chilli & Basil Crush
•
50ml gin
•
50ml vodka
•
25ml lemon or lime juice
•
25ml lime juice
•
5ml Sugar syrup
•
Basil leaves
•
Mint
•
Brown sugar
•
Prosecco
•
One small red chilli
•
Cucumber
•
Soda water
•
Lemon
Muddle together the lime juice, brown sugar and chilli (sliced) in the bottom of a glass. Add the vodka and shake/stir with some ice for 8-10 seconds. Strain the mixture into a glass of fresh ice, discarding the muddled ingredients. If you’re feeling really fancy, then strain again through a tea strainer to remove any stray chilli seeds trying to get involved with the party! Top with soda and garnish with a fresh basil leaf and a slice of lime.
(all measurements per person)
This simple, refreshing recipe is an instant crowd pleaser. Simply muddle together sliced cucumber, mint and a dash of sugar syrup at the bottom of the glass or pitcher, add the gin and lemon/lime juice and give everything a good old mix! Finish by topping up with Prosecco and a sliced lemon garnish. (Remember - the better the gin, the better the drink!)
(all measurements per person)
If mixing isn’t your thing, why not try a twist on the classic English gin & tonic and get creative with your garnishes. From fresh tastes such as cucumber and rosemary to spicy cinnamon or quintessentially English rhubarb, there’s a whole host of fabulous flavours out there to discover. Simply add the garnish prior to lacing your glass with gin and follow with premium tonic water for a glass bursting with flavour. The team at Twelve All Saints recommend any quality gin for best results - their top picks are Sipsmith London Dry Gin or Warner Edwards Dry gin (a local favourite!) For best results, finish with Fever Tree tonic water or Schweppes’ new range, ‘1783’.

The Gravitas Fine Dining Club take to Peterborough for their first event Words by Zoe Phillips Pictures by Dean Lynn

The restaurant is the culmination of Lee Clarke’s two decades in cooking in some of the finest kitchens. Offering a modern British fine dining experience, without the formality, bold flavours and boundaries. The three, five and nine-course menus are crafted from the finest homegrown and locally sourced ingredients. Prevost’s menus were selected to reflect their commitment to serving farm fresh, seasonal food at its best.

wine being explained to the guests was a tremendous experience. Prevost was able to cater for our vegan and gluten-free diners, with each dish meeting their dietary requirements plus keeping the high flavours and standards. We thank Lee Clark and his team at Prevost for hosting and facilitating our first fine dining experience, which was a great opportunity for our advertisers and collaborators to meet and chat at a beautiful relaxed and informal event. We are seeking suitable venues that feel they are able to facilitate a large group and provide a high standard of fayre for our next event. We look forward to another fine dining experience. prevostpeterborough.co.uk

Failure Breeds Success
Jess Lamb interviews Mike Greene - serial entrepreneur, Secret Millionaire, author and passionate advocate for Peterborough.
Mike Greene is a true Peterborough success story. An early childhood spent in a council care home, with a family constantly struggling to make ends meet gave him the grit and determination to establish his first business in his twenties. However, his first venture failed and Mike found himself back at square one. In true entrepreneurial style, Mike did not give up but worked hard to learn from his mistakes and went on to rebuild his empire, bigger and better than before! Now a hugely successful businessman and entrepreneur, as well as a former star of Channel 4’s The Secret Millionaire, Mike spent some time with Gravitas sharing his thoughts on life, success and why failure is so important.
82 Down to Business
Your childhood was very different to your life now. Has this influenced the person that you are today? Absolutely. I moved to Peterborough (Mike lived in Bretton and attended Bretton Woods School) with my mum and four siblings when I was 11 - that’s 43 years ago now! We had almost nothing, but my mum worked incredibly hard to support us and taught me that even if you don’t have much, you can still work hard and do well. She was an amazing swimmer and used to teach severely disabled children to swim. That really instilled in us how important it is to give as
that was a paper round or other jobs – I realised early on that ambition required knowledge and was hungry to learn and work hard. It wasn’t until my early twenties that I first saw an opportunity, but when I did, I seized it with both hands.
Your first business was a big learning curve… Yes, by my mid-twenties I had already gone bust! We’d achieved fast growth but not properly understood cash flow and went bankrupt. The only thing I had left was a house in Peterborough, where we returned
much as you can, no matter what you have.

millionaire! We always did our bit, whether
on mopeds to earn money.
Since then, you’ve rebuilt and have had a whole host of successful business ventures. Looking back, would you do anything differently? I would fail faster. It was only the utter failure of my first business that challenged me to assess what I had done wrong and what I needed to do differently to ensure that I didn’t repeat my mistakes – now, I believe that being accepting of failure is vital in order to achieve success. I found myself penniless and virtually homeless in my mid-twenties, but instead of giving up, I embraced it and started looking at what I could learn from the experience. Failure is an event, not a destination - that’s a belief that I have tried to pass onto my children and is also the reason that the book I published in 2013 is entitled ‘Failure Breeds Success’.
83
Is there anything else that you attribute your success to? Well, as I said, embracing failure has made me much more comfortable with the business process. However, I have a lot to thank my mum for. She was an incredibly strong mother and woman with huge conviction, and I channelled a lot of strength from her. I’m also very spiritual. Spiritualism gives me a lot of peace and helps me to understand myself and others; I’ve even walked across burning coals! Finally, I think that I had to learn to focus on myself as well as others. We as a society have learned to try and not be selfish, which I think can be a negative thing, because if I don’t spend time making me the best me, for me, then I can’t give the best of myself to anyone else, and I think that’s really important. Selfish can be selfless!
After your appearance on The Secret Millionaire, you went on to sell your business. Why was that? The Secret Millionaire was a true life-changing experience. I thought it would be really interesting to return to the same kind of challenging environment that I’d grown up in but underestimated how much impact it would have on me. It made me feel that it’s very easy to sign a cheque, but so much more selfless to actually work to make a difference.
What did you do differently? I decided to step off the ‘hamster wheel’ and now spend an enormous amount of time on philanthropy; we have a family foundation (my daughters help us choose the charities we support), I donate a minimum of ten percent of my yearly earnings to charity, and also spend a lot of time with young entrepreneurs. I spend time talking in schools and run a regular clinic at the Allia Future Business Centre in Peterborough where I advise people on their ventures – I like to think that there’s not much I can’t have a perspective on!
What’s your vision for the future? I now spend a lot of time mentoring others. I really feel that nothing feeds your soul like helping those around you, and I try and focus on that as much as possible. Work aside, my main aim is to keep challenging myself! I like to do something that really pushes my boundaries every year – I’ve climbed Kilimanjaro, run marathons, and even participated in the Clipper Round the World yacht race. That time away really helps me recharge and focus on the bigger picture. I also spend as much time as I can with my wife and two daughters. mikegreene.co.uk

Money doesn’t grow on trees, but it can come from outside your business
Everyone knows money doesn’t grow on trees, and if your business is looking to grow, improve their financial position, invest in new technology or bring in new staff, it is almost certain you will need additional finance to do so.
In 2017 as a whole, according to data provided by SME Finance Monitor, 38% of SMEs were using external finance, increasing to 73% of those with 50-249 employees. In 2018, this figure is a little lower at 33% in the 3 months up to April 2018. Peterborough based law firm Taylor Rose TTKW offers a wide range of services to help
both borrowers and lenders. Before seeking or providing external funding, it’s important to understand the pros and cons of your business. This includes being clear on the terms of a loan or investment, security and the implications of selling company shares. Loans often require some form of security to be given to the lender to guarantee repayment, so far as possible, should any difficulties occur. Investors will usually seek a return on their investment and any sale of shares needs to be looked at carefully to ensure that the company does not end up being taken over by a third party or even a competitor. For borrowers, we review documentation received from lenders and investors, advise on security documentation (including personal guarantees by directors), draw up investment agreements (including

shareholder agreements) and assist with preparing the paperwork for issuing or selling company shares. Whilst the banks and financial institutions are generally the first point of call, we are seeing an increase in private lenders and investors coming forward to provide funding and make investments in SMEs, especially when there is a potential higher ROI than current interest rates. For lenders and investors, we produce a variety of agreements to document loan/ investment terms and advise on possible security requirements, including reviewing property titles being offered as security, to ensure you’re protected.

People are the most important resource in any business. Your staff have the power to exponentially drive the growth of your business. However, misconceptions of how to nurture that power can affect both the reach and speed of growth. Staff development is an integral cog in the nurturing machine, so any learning offered must be efficient and focused to ensure the best outcome for both staff skills and your business. Learning by ‘doing’ is the way in which we best connect theory, practice and application. So why does experiential learning boost staff performance? • • •
It replicates the real It requires involvement It creates predictable outcomes
Creating a staff training program that incorporates an understanding of your peoples’ current skill set and experiential learning offers higher rates of staff performance, development and retention. Set in a beautiful grade II listed building and with direct views of Peterborough Cathedral, the Eco Innovation Centre provides serviced offices for virtual and physical business tenants, as well as offering high-quality meeting and event space.
Over the last few weeks a I’ve spent time with some keen, eager, newly promoted, young leaders. They asked me what I think they should focus on in the first few months. I thought I’d share my suggestions!
One of the most popular services the centre offers is that of a Virtual Office; this provides new and growing businesses with a flexible and a cost-effective solution to support their operations, delivering the prestige of a prime Peterborough business address, administrative support and post forwarding. In addition, businesses have access to a variety of well-appointed meeting rooms for those times when you need a physical work location, be it for meetings, presentations or simply for a change of environment.
Identify your strengths and development areas. Think about the behaviours and approaches that come naturally to you, and the impact these have on others (positively or negatively), 360-feedback can be really beneficial too.
Many businesses receive payment before delivering their product or service to their customers, however for a range of reasons there are many who can’t do this. This results in giving credit i.e. raising an invoice for payment later. Giving credit in business isn’t a new thing, and raising an invoice is a common practice. An invoice is a legal document which means it needs to be issued correctly. Not only to ensure you meet your legal obligations but to give you the best chance of getting paid too! There are a few common mistakes, but the two I’m most interested in you getting right are your clients business name and address. Without these key details being right, how can you chase for payment or even take them to court should you need to? So, if you do nothing else, please take the time to ensure you know your customers ‘real’ business name and address prior to providing your product or service. If you’d like a copy of my Invoicing tips, please email julie@incrementi.co.uk Julie P Randall, Incrementi Ltd 01223 782708

Sharing the wealth ‘Baby boomers’ predicted to give ‘millennials’ an inheritance boost. Words by Partner Stephen Duffy, Head of Private Client
A report published by the Resolution Foundation predicts that leaving an inheritance will become commonplace during the next 20 years, with ‘millennials’ born between 1981 and 2000 identified as the main beneficiaries. Historically, living standards rise with each generation but millennials are currently falling behind their predecessors, particularly in relation to climbing the property ladder, savings and pensions. They are half as likely to own their own home at age 30 as members of the post-war ‘baby boomer’ generation.
Our approachable lawyers provide straightforward and clear advice tailored to your needs
However, the report finds that the passing down of assets held by the baby boomers (born 1946-1965) to younger family members through inheritances and gifts is likely to increase significantly, thereby improving the living standards of millennials and some of ‘generation X’ (born 19661980). It also predicts that the total value of inheritances will double during the next 20 years, peaking in 2035. At present, most people are likely to inherit during their 50s. The report estimates that the most common age at which those currently aged 20-35 are due to inherit will
increase to 61. Receipt of inheritances at this age may assist in retirement planning or helping the children of millennials to access property ownership. However, factors such as increased life expectancy and the funding of future social care costs may impinge significantly on the amount of wealth bequeathed. The findings of the report may lead to further consideration of ways to engineer intergenerational wealth transfer at an earlier stage, possibly by facilitating downsizing or equity release. Inheritance Tax reforms, due to be fully implemented by 2020, will introduce a new housing allowance which means that up to £500,000 per adult can be bequeathed tax-free. The report found that this could lead to the average tax burden being halved for 20-35 year-olds in relation to inherited property. Overall, finance can be an essential part of growing a business, and taking into account the points above can help you benefit from the best rates. If you would like any advice and guidance, the team at Pilot Fish are happy to talk things through with you. If you would like to discuss passing on wealth - whether by using Wills, trusts or gifts - then please contact us. enquiries@buckles-law.co.uk 01733 888888

Will & Probate Services
Words by Jess Lamb | Pictures by Adrian Dewey
Gravitas interview Nick Ash, founder of one of the UK’s leading independent estate planning firms.
Established by managing director Nick Ash in 2005, Will and Probate Services has gone from strength to strength and recently took the highly innovative step of establishing a franchise model, enabling aspiring paralegals across the UK to take on what Nick and the team describe as ‘The Most Interesting Job in the World’. How did the business first get started? I’ve always been entrepreneurial and had noticed that a really outstanding wills and probate service didn’t seem to exist and I’ve worked hard since 2005 to build my specialist expertise and provide the best service possible. This has led to me being named the most respected estate planner in the UK – an accolade of which I’m very proud.
Around two-thirds of people in the UK haven’t made a will. Why is this?
I think that for a lot of people, it’s an extremely difficult subject to consider. That’s why we put our clients first and make sure that the services we provide are straightforward, compassionate and reassuring.
Why is making a will so important? 50% of people die without a will. Probate can be a hugely complex procedure without a will and can cause even more stress to loved ones. We want to make a difficult time as simple as we can, and a clear, well-written will makes things much more straightforward for loved ones.
Why did you decide to create a franchise model for Will and Probate Services? The franchise model is unusual for the legal services industry, which is what I believe makes it so special and the model enables us to bring on board talented, motivated people that want be their own boss and achieve that all important, work-life balance.
93
We believe that there’s no other business that’s as varied, interesting and gives the opportunity to make a real difference to people’s lives. So many of our cases are absolutely fascinating and give such a unique insight into client’s lives, and of course, it’s also great to be able to help make things better for clients during difficult times. The backgrounds of our franchisees reflect this diversity – from former teachers to those with experience of professional industries such as finance and law, we work with people from all walks of life and each and every one is able to give a unique and valuable perspective.
You were recently named as a finalist in the Most Impressive Growth Category at the National Entrepreneur Awards 2017. How are you feeling about this impressive achievement?! We were so proud to be recognised in such a prestigious award! It really is a testament to the hard work and success of the whole team, and just proves what a great business model we’ve found. However, of course, we’re not just content to be finalists! We are constantly working to become bigger and better, and this nomination has given us the motivation to aim for the winning spot at next year’s awards. Watch this space…
And finally… as you previously mentioned, work-life balance is very important to you. What do you enjoy

Why have you dubbed the model ‘The Most Interesting Franchise’?
outside work and how do you unwind at the end of a working day? Yes, I believe that as a business owner it’s very important that you are still able to switch off. Family time matters hugely and I spend as much time as I can with my wife (we’ve now been married for 33 years!) and two sons. I’m also a very keen cyclist and try to undertake a new challenge every year. I’ve completed London to Paris and love combining the sport with travel – we’ve undertaken several challenging long-distance trips through parts of Europe such as Spain and Italy, with Croatia next on the list! London – a super cool, trendy and buzzing city offering you a change of atmosphere and bars galore... We all know that one of the great things about Peterborough is its transport links – you can be in London in just 45 short minutes for a day of sightseeing or a whirlwind weekend getaway. So whether you’re shopping, socialising or simply looking for an after-work drink before you catch the train home, Gravitas has picked three of the best bars in the capital that we think you’ll love!
Nightjar -129 City Road, Hoxton Nightjar is a true institution on the London cocktail scene, regularly featuring in shortlists of the UK and the world’s best bars. This basement bar tucked away on an unassuming street in Hoxton has everything – astoundingly creative drinks (you’re likely to find everything from Islay peat and savoury sand to seaweed air on the menu) passionate staff and über-cool, speakeasy style surroundings with regular live music. It’s a heady mixture that is guaranteed to enchant you. This place is just as popular as you might expect, so make sure you reserve a table in advance. Cocktails start from £12 and there’s also a selection of tapas available. barnightjar.com 020 7253 4101
The Experimental Cocktail Club -13A Gerrard Street, Chinatown If the thrill of finding a secret bar is your thing, then The Experimental Cocktail Club is for you. Nestled in the heart of Chinatown, the ECC has long been a fun-seekers mecca thanks to its innovative drinks menu and dimly-lit, achingly cool atmosphere. Its three floors are almost always heaving with people, although sometimes you’ll catch a little more peace earlier in the week… assuming you find it first! Look out for an unassuming black door and you’ll be on the right track (the bouncer with a clipboard in hand is also somewhat of a giveaway). experimentalcocktailclublondon.com reservation@chinatownecc.com
St Pancras by Searcys -The Grand Terrace, Upper Concourse, St Not only does the St Pancras Champagne Bar by Searcys boast the longest champagne bar in Europe, it’s also the perfect location for those catching the last train back to Peterborough, thanks to its prime location just a 5-minute walk from Kings Cross Station. The setting is truly impressive – visitors can take in the spectacular architecture of the iconic St Pancras terminal whilst sampling the carefully chosen champagnes gracing the menu.
