ased in the pretty village of Folkingham, just outside of Bourne, Hansen’s Chocolate House is a chocoholic’s paradise. A quaint, low-ceilinged cottage has been transformed into a chocolate shop full to the rafters of sweet treats, complete with views in to the chocolate workshop itself, where Master Chocolatier Jan Hansen lovingly prepares his chocolate temptations. He originally ran a shop in Stamford, but moved

Fine food The fabulous team at Prevost, Peterborough, has put a new menu together for spring. Start your fine-dining experience with freshly made bread served with fermented butter then move on to the playfully created snacks of Jerusalem artichoke with malt, veal tongue with burnt onion and anchovy and Brancaster mussels with apple and cucumber. The tasting menus include plates of salsify, caper and nasturtium, scallop, yuzu and sea fennel, pork belly with Scotch egg and linecaught turbot, and Lord of the Hundreds cheese with pear and dandelion leaf.

You can choose from cocktails and shooters, or go all out and buy your table a bottle of your favourite spirit, or one of the build-your-own cocktail boxes, which come with all the ingredients you need to make your own mojitos or bellinis. The Pornstar Martini is a favourite – a sweet, but sharp blend of vanilla vodka with passionfruit syrup, puree and liqueur with a shot of Prosecco served on the side – what’s not to like?

KEEPING IT TRADITIONAL The Millstone Inn, Barnack, is a traditional country pub serving great food in a relaxed, welcoming environment says the Stamford Foodie.
W
ith its quiet village location, The Millstone Inn is just a stone’s throw from one of Britain’s protected nature reserves and popular walking area – the Hills and Holes – and has built a reputation for pleasing both locals and visitors alike. Inside, the pub is a warren of cosy rooms with low ceilings, cottagey windows and plenty of character. The pub underwent a refurbishment at the beginning of last year, and although lighter and brighter with

some lovely new wallpapers on the walls, The Millstone Inn still retains that olde worlde charm. Head chef and proprietor, Oliver Dawkin took over in 2016 with a view to create exceptional dishes while using only the best local produce. His passion for giving his customers a varied choice and seasonal plates of food is shown with the ever changing menu and specials options For starter I chose the chicken liver pate, served with toasted brioche and a spiced apricot, orange and mango chutney – it had a lovely smooth texture and the chutney, which is homemade, as are all of the accompaniments, was a tangy touch. Kate had the crab cakes served with shredded fennel, which looked amazing – the cakes were perfectly crispy on the outside and drizzled with a sweet chilli dressing. After hearing so many good thing about The Millstone Inn’s Sunday lunches, I had to go for a roast. There’s plenty of choice on offer, with topside of beef, pork loin, chicken (all £12.95) or lamb (£13.95) on the menu; all are served with homemade Yorkshire puddings, seasonal vegetables, maple syrup roast parsnips and cauliflower cheese. FOOD & DRINK comes in a boat so you can pour as much or as little on as you like (I like my dinner to swim). It was a huge plate of really rather good food, and I cannot speak highly enough of the gravy, which, in my opinion, can make or break a meal, but this one was spot on. Kate had the slow cooked baby back ribs with barbecue sauce, hand cut chips, beer battered onion rings, coleslaw and salad (£15.95) – I had the ribs on my first visit to The Millstone Inn and it’s a brilliant dish; the meat is so tender and the onion rings are amazing – huge, crispy and sweet. After our mains, we were feeling quite full, but in the name of research, we ploughed on and ordered pudding! It was hard to choose as there were five or six options – all homemade – and were equally as tempting, but eventually Kate chose the chocolate brownie served with vanilla ice cream, which had the most amazing chocolatey aroma and I chose the lemon meringue pie, with soft, airy meringue sat atop of zesty, lemony filling and crisp pastry; it was the perfect balance of sweet and citrus.
This is such a lovely village pub, which is extremely popular with the locals, but it manages to draw in crowds from much further afield, including one diner who lives in China who always eats a Sunday lunch here when he visits! What else can I say?

’m not usually excited by chain restaurants, but the ones coming to Peterborough are fantastic, with Caribbean chain Turtle Bay, opening its doors to the city in May. Expect big, fresh flavours, with street hawker-inspired starters and sharing plates, slow-cooked onepot dishes and succulent meat, flame-grilled on the traditional jerk pit barbecue. I particularly like the sound of the lightly spiced whitebait served with lime and coriander mayo, or Doubles –
a roti sandwich made with curried chickpeas, fresh cucumber chutney and coconut shavings. Goat curry is also on the menu alongside Trinidadian curried chicken – curried pork cheeks, Jamaican browned chicken and run down – a vegetarian coconut milk curry. Chicken, salmon and ribs have been given a spicy jerk makeover and cooked on open flames – delicious. Puddings are a pleasurable affair with lots of fruit, ice cream, caramel and a healthy splash of
rum, and it goes without saying that there’s a good deal of rum to be found in the stonking array of Caribbean-inspired cocktails, including the tempting Tease Me made with banana and coffee liqueurs, fresh coconut and banana and white rum, or the One Love martini made with Blackwell rum, fresh coconut and passion fruit, and passion fruit liqueur – book me a table now!

Four healthy habits to focus on this spring

EAT THE RAINBOW
The latest research has found eating 10 portions of fruit and vegetables (F&V) per day reduces our risk of cancer and heart disease and can prevent up to 7.8 million premature deaths worldwide every year. For the two out of three adults who don’t eat five portions a day this is likely to feel overwhelming and unrealistic. However, we also know any increase in fruit and vegetable intake is beneficial so simply just try to eat more including different coloured F&V to get a variety of vitamins and minerals. Ideas include: ■ Keep fruit accessible – if we see it we are more likely to eat it. ■ Add a handful of cherry tomatoes, chopped carrots or cucumber to your sandwiches at lunch or pack a

handful of spinach/salad leaves to your sandwich. ■ Keep a bag of frozen berries in the freezer and pop some into your porridge. ■ Pimp up your sandwich with these different fillings: peanut butter and banana, sliced apple and cheese, blue cheese and sliced pear. ■ When making a bolognese sauce add some diced courgette, carrot and onion to the mix. ■ Beans such as cannellini beans or chickpeas (80g) count towards one of your five-a-day. Add into your stews and soups or to your salads. A great snack is spicy roasted chickpeas. Toss together chickpeas (drained), oil, cumin, chilli and paprika. MAKE FRIENDS WITH FIBRE
The primary role of fibre in our diet is to support a healthy bowel, but research has also shown increasing fibre intake reduces our risk of heart disease, colon cancer and type 2 diabetes, reduces cholesterol levels and supports weight loss. Emerging evidence shows we need to look after our fibre-loving, gutfriendly bacteria as it plays a key role in our health. Experts recommend we consume 30g per day, but with the average intake being only 18g per day we need to re-think our eating habits.. Simple ways to boost your fibre intake include: ■ Choose wholegrains at every opportunity like wholegrain cereals such as Weetabix, shredded wheat, porridge oats; seeded and granary
bread or wholemeal pasta/brown rice. ■ If you have a sweet tooth reach for a flapjack next time instead of the doughnut. Oats are a great source of soluble fibre, or make homemade cakes with added fruit, nuts and seeds. ■ Replace the packet of crisps with your sandwich at lunch with a small handful of nuts. ■ Linseeds are high in soluble fibre and healthy fats. Sprinkle over your cereal, salad or yogurt. ■ Add beans, chickpeas or lentils to stews, soups and curries. A word of caution: Increase the amount of fibre into your diet slowly and increase your fluid intake at the same time to avoid unwanted side effects such as gas, bloating and constipation.
POWER UP WITH PLANT PROTEINS
For both health and environmental reasons there has been a food movement to choose more plant-based proteins over meat. Red and processed meat consumption has been linked to increased risk of bowel cancer and the advice is to limit your intake to 70g per day. Choosing plant proteins instead will also see an increase in your fibre intake and a reduction in saturated fat. Choices include: ■ Add chopped nuts and seeds to your
salads instead of your go-to cheese or ham salad. ■ Replace beef mince in your bolognese with quorn mince. ■ Vegetable burgers can really hit the spot especially with fiery jalapeno chutney. ■ Hummous is a great snack. ■ Try a lentil dhal or chana masala (chickpeas) for your next curry. ■ Join the meatless Monday revolution and go meat free at least once a week.

Research tells us the more active we are the healthier we are. The benefits of exercise are well known (helps with weight maintenance and reduces the risk of long-term disease such as heart disease); but exercise is often associated with lycra-clad gym sessions with walking overlooked. According to the NHS the average person walks 3,000-4,000

steps per day so setting a target of 10,000 is a great way to get active. Walking is free, can be easy to increase and will help to prevent weight gain, boost mood (when active we release endorphin, a hormone that are known to minimize pain and boost our mood) and strengthen our bones. If walking feels boring then walk with a friend, download some music or join a walking group.

wner Joanne Davis welcomed us and we were seated in the summerhouse for tea and a delightful selection of cakes and fresh fruit. After our respite, we enjoyed the relaxing bubbles of the hot tub. The warm water jets revitalised us while we took in the views over Rutland. Adorning our robes again, we wandered back to the treatment rooms for our massage, which was a luxuriously destressing experience – aromatic candles and soothing spa music. If grown from seed they are generally sown indoors and grown on. ■ Hardy annuals (HA) can be sown outdoors directly into the soil in spring and can withstand frosty conditions without protection, but also only live for one season. ■ Hardy biennials (B) complete their life cycle in two seasons. ■ Half-hardy perennials (HHP) live for several years, usually flowering from the second season. However, they do need frost protection over the winter to survive. ■ Hardy perennials live for years and can give valuable flower and foliage colour through the winter months.

Check for birds nesting before trimming hedges It is always a good idea to give your hedges a summer trim as well as their early year pruning. When doing so at this time of year, check that there are no nesting birds. Not only would you not want to disturb them, but it is also an offence under the Wildlife & Countryside Act 1981 to damage or destroy the nest of any wild bird while it is in use or being built. The bird nesting season is usually from early March until the end of July, but always check just before or after as well.

SPANISH INQUISITION Local historians and authors June and Vernon Bull reveal Peterborough’s links with Spain.
T
he town/city twinning movement started after World War II with the passionate support of mayors and citizens who vowed that Europe should never again be torn apart or divided by war. Most twinnings are between towns or cities that want to share or foster links through social, recreational, cultural and educational partnerships. Peterborough is twinned with five other cities; namely: Bourges in France, Viersen in Germany, Forli in Italy, Vinnitsa in Ukraine and Alcala de Henares in Spain. Twinning represents a formal, long-term friendship agreement including co-operation between two communities in different countries, and it is endorsed by

both local authorities. Alcala de Henares is a city steeped in fascinating history. It is located 35 kilometres away from the Spanish capital Madrid. The historical centre of Alcala de Henares was designated as an UNESCO World Heritage Site in 1988 due to its mediaeval beauty, quaint winding cobbled streets and plethora of historic buildings – the most important is probably the house of Cervantes (birthplace of the great 16th century Spanish literary figure Miguel de Cervantes, author of Don Quixote). Its Cathedral, churches, convents and university buildings offer glimpses into life in Castile and the Spanish Golden Age. The 13th century Archbishop’s
Palace is the birthplace of Catherine (also spelt Katharine) of Aragon, daughter of King Ferdinand II of Aragon and Isabella I of Castile and Queen of England from 1509-1533, as the first wife of King Henry VIII. Previously, Catherine was Princess of Wales as the wife of Henry’s elder brother Arthur who died in 1501 - just six months after their marriage. Catherine (aged 23) married Henry (nearly 18) on 11 June 1509. Over the course of the next nine years Catherine had six pregnancies (five were either premature, stillborn or died in infancy) but one child survived – Mary I (born 18 February 1516). Over their 25-year marriage Catherine’s influence over Henry VIII remained strong and she managed to persuade him at times to show clemency to lawbreakers. Her natural compassion for the poor and the suffering led to many actions of personal generosity, which as a Third Order Franciscan, she had an obligation. Catherine often visited the poor

dressed as a lay sister. Although their marriage remained happy over the years - Henry VIII wanted a male heir and appealed to Rome in 1527 for an annulment of his marriage. However, Pope Clement VII (Queen Catherine’s cousin) refused and this triggered the break between Henry and Rome which led to the Reformation. In 1533 Henry had his own Archbishop of Canterbury, Thomas Cranmer, annul the marriage and so divorced Catherine on 30 March 1534 to marry Anne Boleyn. After their divorce, Catherine was not executed like some of Henry’s later wives, but she was expelled from court and died of cancer on 7 January 1536 at Kimbolton Castle. Her only household included her confessor, physician and apothecary – all Spanish. Catherine’s dying wish was to be buried in a convent of the Observant Friars either in Greenwich or Richmond, but T: 01778 382762 | May 2017

Following mass on the 27 January 1536, Catherine’s body was carried to Sawtry Abbey and the following day to Peterborough where she is buried. At the west door of Peterborough Cathedral (then an Abbey Church) Catherine’s body was received by four Bishops and six Abbots. The principle mourner was Henry’s niece, Eleanor (daughter of the Duke of Suffolk). Henry did not attend and he did not allow their daughter Mary to attend either. On the orders of Henry VIII the Arms of Wales rather than
England were quartered with those of Spain as after their divorce Catherine was titled Princess Dowager because of her short marriage to Arthur, Prince of Wales. This ensured that all Catherine’s ties to England were severed not only upon their divorce, but also upon her death. Every year around the anniversary of her burial, Catherine’s life is commemorated by a service at Peterborough Cathedral with members of the public, school children, civic dignitaries, and a representative from the Spanish Embassy in attendance. So, our links with Spain remain noble and strong.

M
ay brings with it bank holidays, and is also the month that you can start relaxing in the garden more regularly, without having to think of endless indoor activities to keep the kids entertained. What is more relaxing than sitting on your patio with a cuppa while the kids play in the sunshine? Here’s a few ideas for fun afternoons in the garden.
Rose petal perfume This has stood the test of time as a firm favourite with little princesses everywhere – so long as you don’t mind sacrificing a couple of rose blooms for the greater good. Pick off the heads and let your kids collect as many petals to fill half a jam jar, being careful to avoid thorns, then add water. Let the kids mix and smash up the concoction with a stick or wooden spoon. When they have happily finished mixing (there is no time limit), put the lid on and leave to ‘develop’ overnight. The following day, pour the precious perfume into a bottle, which can then be decorated with ribbon and sparkles.

Treasure hunt If chocolate coins were good enough pirate treasure for Peppa Pig, then they also make ideal buried treasure for the garden. Fill a plastic box or empty ice cream tub with treasure and hide it under a shrub. Draw a simple map consisting of dotted lines and garden landmarks. In the absence of distinctive features, buckets placed about or the odd rock will do. Give the map to your little pirates to start the search. Luckily, most children won’t think to skip to the end, giving you a little longer to enjoy just sitting and watching them explore.
Pebble painting Collect some flat pebbles while out walking. Place some newspaper on the lawn with the washed pebbles and some paints and let your kids, dressed in old clothing, get creative without worrying about the mess. Felt tips are also a good alternative on lighter coloured stones. Varnish after they are dry to protect their masterpieces.
Kid’s garden Set aside part of a flowerbed just for the kids – it’s a great way to get them interested in gardening and nature. They will love to sow the seeds (try easy-to-grow cherry tomatoes and marigolds) and water the emerging seedlings. They can also be in charge of relocating slugs and snails (mine like collecting worms soil helpers to the patch). They can make signs out of lolly sticks and Sharpie pens, add a windmill, seashells or even the odd plastic dinosaur.

undreds of new, local exhibitors will be joining the action at the Lincolnshire Showground this June for the return of the much-loved Lincolnshire Show. Around 600 exhibitors will be trading alongside a host of exciting performances and attractions, including Broke FMX, the UK’s top ranked freestyle motocross riders. The audience will be able to see the thrill seekers jump up to 35 feet in the air while pulling acrobatic stunts over 100 feet gaps on both days of the event. One of these new attractions is the machinery parade, the narrated display will demonstrate how farmers use machinery to produce forage in modern farming today, showing off the latest machinery from harvesters to mowers. The show will offer the first pop-up restaurant, hosted by award-winning chef, Steven Bennett. Steven and his team will be bringing his Grimsby-based restaurant, The Comfy Duck, to this year’s show to serve his Lincolnshire-themed take on breakfast, brunch and afternoon

Further highlights include the launch of the Lincoln Knights’ Trail Education Programme, with more than 40 half-sized knights, all sponsored by local schools, making an appearance around the show before being moved to their trail locations across the city for the summer. The Lincolnshire Showground’s Knight, named Show Us What You’ve Got will also be on display for visitors. Now in its 133rd year as a county show, celebrating agricultural roots as well as all that’s great about Lincolnshire. With so many trade stands, live entertainment, cooking demonstrations, aviation attractions and activities for our younger visitors, this year’s show will be another actionpacked event.
