f you have always wanted to learn how to cook Indian food but thought it was too difficult – then think again. This step-by-step recipe for Lamb Bhuna by our local Spice

with Parveen The Spice Queen

Queen is easy to follow and tastes truly authentic. It’s the perfect dish for these cold winter months. Serve it with a pilau rice, naan and cucumber raita.

Lamb Bhuna

PREP TIME: 10 mins COOKING TIME: 1 hour SERVES APPROX: 4 to 6 INGREDIENTS ■ ■ ■ ■ ■ ■ ■ ■ ■ ■ ■ ■ ■

METHOD

900g lamb diced (2cm) 2 onions, sliced 3 tsp garam masala* 1 tsp coriander powder* 2 tsp chilli powder* ¼ tsp turmeric powder* 6 cloves garlic, crushed 2 cm fresh ginger, crushed 1 tinned tomatoes, 400g 6 tbsp vegetable oil 2 tbsp fresh chopped coriander 2 tsp salt (*or Parveen’s spice bag)

Add all ingredients (except the coriander) into a large stockpot. Bring to the boil, cover with lid and then simmer for 30 minutes on low heat. Turn the heat up to medium for 10 minutes, stirring occasionally. The meat will now have a shiny appearance with the oil separating. Stir continuously for 10 minutes. If sauce sticks, add a splash of water. Add coriander and 200ml of boiling water, stir and simmer for 10 minutes or until tender.

In a small bowl, add 6 tbsp of plain yoghurt, ¼ cucumber (diced) and a pinch of salt then mix until smooth.

ith the cold weather here and the festive season long gone February can be a very bleak month for many. Add in failed resolutions and christmas debts; it’s no wonder people have lost the spring in their step and are suffering with postholiday blues. What are we inclined to do? Step forward feel-good foods such as sugary and high fat foods. When we ingest sugary foods, we release insulin, which supports the conversion of tryptophan (an amino acid) into the feel-good hormone serotonin. In case you were wondering you get the same from eating wholegrain foods although they don’t have quite the same appeal.

Add tiredness to the post-holidays blues and we are even more inclined to reach for the mid-afternoon pick-me-up. Lack of sleep plays havoc with our appetite regulation hormones and will see levels of our hunger hormone (grehlin) rise and levels of leptin (hormone that tells us we are full up) reduce. This will not promote a happy mood! We know that eating healthily supports mental health, provides resistance to infection and reduces feelings of tiredness and fatigue and yet all often a good diet falls down the priority list. Diets are often associated with a period of deprivation but change your approach and diets can provide health gains instead! Find out how you can boost your mood with food without needing to reach for the chocolates and biscuits (and yes it is okay to do

this from time to time): Brazil nuts – a great source of selenium, a mineral; low intakes of which are associated with irritability and negative mood states. Aim for two to three brazil nuts a day to meet your selenium requirements. Other good sources of selenium include meat, fish and seeds. Hold off on that cup of tea – tannins in tea and coffee can hinder the absorption of iron, a nutrient which carries oxygen around the body. Too little iron can cause low energy levels and weakness. Continue to enjoy your cuppa but leave an hour either side of meals rather than with your meals. Top up your iron intake with fortified breakfast cereals, red meat, fish and pulses such as baked beans. Iron rich meals choices include bean chilli or cottage pie with extra vegetables. Over the next few weeks I will be writing about the process, following a client who contacted me about anxiety ruling her life and feeling quite out of control. At our first meeting we briefly spoke about the issues currently affecting her life and how they are making her feel and react to things. It can be very difficult especially if you have children to admit that you need help. The hardest part is just walking through the door. I go through an overview of personal details and health issues and also talk about how well the client is sleeping. This plays a huge part in getting well and back in the right mindset. Once I have completed my consultation I give an overview of how the brain works. Giving the client this information allows them to have a better understanding about what’s going on and more importantly, why? The client is then giving some hypno work, as I like to call it, taking home an audio and getting a book to write down all those positive things. Following this consultation the first booking is made either week by week or in a block booking, so we’re ready to go.

n the previous edition, I talked about setting goals, which is the first step on your journey. Once you’ve done goal setting it’s about the mechanism to get you there. While exercise and sufficient sleep are important, healthy eating plays a major role. Ever heard the phrase “you can’t out-train a poor diet”? It’s true and anyone that says otherwise is either lying, or doing something drastically unhealthy with their diet!

So, what is the best diet?

Firstly I don’t use the word diet as it can be associated with being deprived of something or being restrictive. Diet is simply defined as what you eat, not a specific way of eating or following a specific “programme”.

The best approach is one that:

■ keeps your hunger, energy and cravings all in check and under control ■ is sustainable over the long term ■ gives you the results you want to achieve (normally fat loss)

If you’re very hungry, tired or having terrible cravings then, no matter how much weight you’re losing, this is certainly NOT a good way of eating for you. If you feel rubbish all the time, then it is NOT working. A way of eating that makes you feel this way isn’t sustainable and can lead to bingeing and yo-yo dieting, which is not a good habit to get into. If you’ve lost loads of weight previously following a certain “diet programme” and then put it all back on once you stopped, this is also NOT a good way of eating for you. You couldn’t sustain these eating habits, which is why you couldn’t keep the weight off and have to keep “starting again.” Learn what works for you – what keeps you satisfied, energetic, with minimal cravings, while still losing body fat? Be a detective and find this out!

Protein will help you to feel fuller for longer, so make sure you get enough protein in. This can be in the form of meat, poultry, eggs, cottage cheese, tofu, and Quorn.

Eat vegetables to your tolerance levels. Some people get gassy and uncomfortable if they eat too much veg, so learn what works for you. Learn how many calories you actually need and roughly how many you are consuming. You may be surprised! Most people either wildly over or under estimate their calorie intake. Don’t cut out carbs altogether for a prolonged period of time. Your body needs carbs to burn fat. Learn the tipping point of how much carbohydrate you can consume, while still achieving the results you want. Fat doesn’t make you fat (unless you consume more calories than you’re burning). Your body needs GOOD fats – found in avocado, eggs, nuts and olives. Build some of your favourite foods into your diet (your way of eating). This stops you from feeling deprived, bingeing, and from ‘falling off the wagon’. Moderation is the key word here. What works for your friend won’t necessarily work for you. We are all unique with individual requirements. It’s important to try out different foods and see what works best for you.

If your current way of eating is pretty poor ie lots of convenience foods, takeaways, fizzy drinks, rather than an “all or nothing approach”, you may find it easier to eliminate/reduce one of these at a time. Little steps will get you where you want to be. Any diet that encourages you to drink your calories instead of eating them is rubbish and dangerous! Do not do it. You need food.

Five tips for a healthy complexion

EXFOLIATE Exfoliating regularly allows moisturisers and oils to reach deeper into the skin for better effects. For the best results exfoliate the skin two to four times a week to remove dead skin and aid circulation.

HYDRATE To get and maintain a healthy complexion, it is essential to re-hydrate constantly, with at least two litres of water per day and by eating waterrich foods such as spinach. Lighter face creams should be swapped for richer night creams and oils to keep skin hydrated.

AVOID TOXINS Cooler months are more likely to encourage skin problems like eczema or dermatitis to flare up. Avoiding allergens and irritants such as chemical-laden detergents will help prevent these problems. Using moisturisers designed for specific skin types will also improve skin quality.

EXERCISE The motivation to exercise often wanes in the winter months, however it is essential. Movement enables lymphatic drainage and constant circulation which then enables skin to be energised and glowing. Exercising three to five times a week will help maintain overall health, as well as youthful, healthy skin.

LUKE-WARM WATER Use luke-warm water instead of hot water to shower, bath or wash your face, which will prevent essential oils and moisture being stripped from the skin.

Peters’ Cleaners – celebrating 55 years in the business.

eters’ Cleaners is celebrating 55 years in business in 2018 having provided exceptional cleaning and customer service to clients in Peterborough and Stamford for more than five decades. The business opened on Broadway, Peterborough in February 1963 by father and son team Peter and Peter Grist, who were later joined by Peter senior’s younger son, Paul. With the maxim Your clothes – cleaned with care – quickly, Peters’ Cleaners offered a faster turnaround and presented garments hanging and wrapped in film. Prior to that, clothes were presented folded in paper bags. The business expanded and currently has shops in Lincoln Road, Mayors Walk and Stamford. In 2016, Paul retired and sold the business to Vicky Whiter who has spent the last 18 months refreshing the brand and shops. Paul said: “Vicky has amazing energy and has had to make some difficult decisions to modernise and improve the business, and is happily achieving this. Vicky is keen to maintain the same high standards of finish and customer service and values the history of the company.” Vicky said: “Customers today expect

service and convenience, and over the next 12 months we will expand our offering while remaining true to the business ethos.” None of this would have been possible, of course, without the huge contribution of blood, sweat and tears by Grist family members and the loyalty and hard work of the amazing staff, some of who are still working at Peters’ Cleaners today. “We have been blessed with many loyal customers, whose children and grandchildren are now using our services.” Among them is Jason Burgess from Stamford who said: “My mum has always used them, she would never use anywhere else so as a family we’ve used them for at least 50 years.” Catherine Horsman from Werrington has been using Peters’ Cleaners for 30 years and said: “I have always found them to give excellent service and the quality of the finish is better than if I take them to somewhere else.”

ost people are now familiar with the concept of a Lasting Power of Attorney (LPA) – it is a document that allows someone else to make a decision on your behalf if you can’t make one for yourself. Almost everyone that I meet is comfortable with the Property and Financial Affairs LPA because it does what it says on the tin. Sadly, this is not true of the Health and Welfare LPA. Many people believe that they don’t need one or that it is unimportant. One of the most common misconceptions is that it relates only to end of life decisions and acts as a DNR (do not resuscitate) instruction. I would argue that a Health and Welfare LPA is more important

that a Property and Finance document. Although, you really should have both. The LPA for Health and Welfare operates in three key ways. Firstly, it enables someone to talk to your doctors and other medical professionals on your behalf, without which patient confidentiality would prevent full and detailed discussions. In extreme situations it can enable your attorneys to make decisions about life-sustaining treatment, meaning that you can be let go with dignity if youwish. But, the important stuff falls between these two extremes. An LPA for Health and Welfare comes into its own when someone needs care. It allows your attorneys to make decisions about what care

Wealth was brought to Stamford’s merchants once the river Welland was navigable to the sea.

B

ack when the river Welland was not navigable to the sea, Stamford’s merchants appealed to Queen Elizabeth. She passed the appeal to William Cecil for advice – he responded and, in 1571, the Queen passed the Welland Canal Act. However, other things were happening in England and it was not until the 1620s, in the reign of King James, that plans began to develop. In 1623 the Stamford Corporation, with the permission of the Commission of Sewers, were given permission to build a new cut with the expectation of a completion date of 1627. However, they couldn’t come to an agreement with a number of contractors. Then the Civil War developed and the plans just faded away. It was not until 1664 that things began to move, and

Daniel Wigmore – a Stamford Alderman, woollen draper and mercer in Stamford and Mayor in 1666; 1677 and1684 – took the opportunity and agreed to build a Canal Cut and 12 locks – including those on the river itself – for £5,000, probably far more than £1 million in today’s money. Daniel was given the lease of the tolls for the following 80 years – an agreement that required him to pay a rent of one shilling per year! When the cut was opened in 1670 it was the longest canal with locks in the country. When Daniel died in 1687 he left his lease to Frances, one of his two surviving daughters. In 1673 Richard Blome – a cartographer who flourished in the second half of the seventeenth century – recorded in his Geographical Description of the Kingdom of England, Scotland and Ireland that at Stamford traffic was passing up and down the river ‘now made navigable’’ Depending on which way you were travelling the Stamford Town Bridge was either the beginning or ending of your

journey. Hudd’s Mill is sited by the Welland off Priory Road in Stamford and was first built across the mill stream in the first half of the 17th century – there is an inscription there which reads: ‘IRELAND 164...’ This former corn mill was converted into a house around 1990. It has an inscribed date of 1641 as well as two date stones reading 1751 and 1771. It is in Bath Row in Stamford that we find the beginning of the Welland Cannel – it’s Kings Mill. There had been a mill there in the time of the Domesday Survey and in a list of King John’s possessions it is noted as North Mill. A conveyance of land in 1629 refers to a new millstream being dug for either King’s Mill or North Mills. Whatever it was, the dyke was created around 1640 and a two-storey building was built in an L-shape. It is not unreasonable to say that ‘this was the beginning of the Welland Cannel’! ames was born at 12 Cromwell Road, Peterborough, on 1 November 1884 – the son of James Woodhouse Horrabin and his wife Mary (nee Pinney). He was educated at Stamford School and went on to study metal work design at the Sheffield School of Arts. In 1911 he moved from Sheffield to London to become the art director of The Daily News. James drew his first maps for the paper during the Balkan Wars of 1912-13 and went on to draw various other political and satirical maps; later becoming the newspaper’s art director. James also drew illustrations for The Outline of History by H G Wells. In 1922 he created the Dot & Carrie cartoon strip for The Star

newspaper, which was later taken over by the Evening Post. The Dot & Carrie cartoons continued until his death at the age of 77 on 2 March 1962. At the age of 34 he began his family cartoon The Adventures of the Noah Family in the Daily News – moving to the News Chronicle in 1930. James married journalist, Winifred Batho (who used the nom de plume Freda Wynn), daughter of Arthur John Batho and his wife Lilian (nee Outram), on the 11 August 1911 at Sheffield. After their marriage the couple promptly moved to live and work in London. James later divorced Winifred on 13 October 1947 during his second extra marital affair. His first long-standing affair was with Ellen Cicely Wilkinson MP (feminist and

Labour Minister for Education); while his second (which had been going on since the early 1930s) was with Margaret Victoria McWilliams (a widow), whom he eventually married in 1948. In 1924 James co-wrote Working Class Education with his wife Winfred. He supported

the general strike in 1926 and co-wrote The Workers History of the Great Strike (1927) with his mistress Ellen Cicely Wilkinson MP and Raymond Postgate. James and Margaret (his second wife) lived in Hendon from the 1950s until his death. He was the creator of the Japhet and Happy a children’s cartoon strip that ran in the News Chronicle from the 1930s to the 1950s. At its height Japhet and Happy was as popular as Rupert the Bear in the Daily Express. The Japhet and Happy newspaper strip had its own annuals, souvenirs and children’s club. James was an early member of the Communist Party but left to become a member of the Labour Party and later he joined the Socialist League. As a Communist Party member, he was a frequent

contributor of hand-drawn maps to The Communist. Leslie Hepple (in his 2002 article [vol 31] of the Antipode – a radical journal of geography) said of Horrabin that “Many of Horrabin’s concerns find echoes in current radical geography, and his work deserves belated recognition and a place in the history of geography.” James was elected MP for Peterborough in 1929 under the first Labour premiership of James Ramsay MacDonald but lost his seat to the Conservative, David Cecil, 6th Marquess of Exeter (then Lord Burghley) in 1931. He scaled back his political activities from the 1950s due to his failing health. James was a lifelong smoker, which resulted in him being diagnosed with chronic obstructive pulmonary disease – eventually dying of bronchopneumonia in 1962. Comic Cons season begins!

T

his month sees the start of Con season for our local area. We are extremely lucky enough to have three (yes, three!) Comic Cons coming up between now and May, all very well priced and with some quite frankly amazing guests who you don’t usually see at these type of events. People often think that Comic Cons are just for geeks and nerds who like to skirt around celebrities, or like to dress up in funny costumes and stuff, but the truth is Comic Cons are now so inclusive, that anyone can go and have a good time. You don’t always get the same stars or things to do, which only adds to the uniqueness of each Con. You will always find props from films and TV shows; usually those that have been on high profile popular ones like the Iron Throne from Game of Thrones, or the Cafeteria Doors from The Walking

Dead all the way down to cars like the Delorean from Back To The Future, and even Ecto 1 from Ghostbusters. Artists play a huge part at Cons, and some of them have even drawn some of your favourite characters for comics or animated films and you wouldn’t even know! They will do you one-off drawings (for a price, obviously) that you just would not get anywhere else. Then you have the stalls that sell merchandise. These are always busy and varied in their wares and you can find yourself immersed in some of your favourite memories when looking at bits. The thing with Cons nowadays is, that the atmosphere generated by all those who attend them is just fantastic. There is always a real buzz around the event and the people who dress up in costumes; this is called Cosplay and there are people who do it for a living, always add to it. It’s great to see people as The Doctor, someone from Japanese Manga/Anime, even people as superheroes like Spiderman or Deadpool. Local Cons are amazing, and the three above have some of the most amazing guests: Dante Basco (Rufio from Hook), Erica Cerra (The 100 and A Town Called Eureaka), Hannah Spearritt (SClub7 and Primeval) Andrew Lee Potts (Primeval), Gareth DavidLloyd (Torchwood and Dr Who), James Crossley (Hunter from Gladiators) to name just a few!
