Kwoklyn Wan’s tried and tested recipes are delicious and aromatic.
T
his recipe is Japan’s contribution to the world of fried foods. Tempura is a light and fluffy batter that can be used when cooking meat, fish and vegetables.
Crispy Tempura King Prawns SERVED WITH A WASABI MAYO
INGREDIENTS
24 raw king prawns (deveined) 100g cornflour ■ 150g plain flour ■ 10g baking powder ■ 700ml groundnut oil ■ Enough iced Perrier or soda water to make a batter (should coat your finger) ■ ■
WASABI MAYO INGREDIENTS ■ ■
2tsp wasabi powder 2 pinches caster sugar
■
6tbsp mayonnaise
METHOD
To make the mayo, mix the wasabi powder with 1tbsp water to form a paste. Stir in the mayonnaise and sugar, then cover and chill. In a bowl mix all flours together, gently add the iced liquid, briefly stir (do not stir too much). Heat the oil in a deep saucepan until a piece of bread browns in it after about 15 secs. Line a tray with kitchen paper. Dip prawns into batter one at a time and gently lower into the hot oil, you can add a few at a time, allow to cook until the batter is golden and the prawns are pink. Diners can order their food to takeaway or enjoy table service and the extended menu in the restaurant, which includes delicious dishes like crispy fried whitebait with chilli mayo dip, black pudding fritter with sweet onion chutney, battered squid and tartare sauce to start, perhaps followed by monkfish tail and chips or pie of the day with mash and gravy for main? Tucked away on Cheyne Lane, Lambert’s Deli has built up a reputation for being one of Stamford’s best spots for coffee or a light bite to eat. ctober is Breast cancer awareness month, so let’s discuss the big C and how we can reduce our risk. According to Cancer Research UK someone in the UK is diagnosed with cancer every two minutes and no doubt most of you reading this will know someone whose world has been turned upside down following a cancer diagnosis. While rates for all cancers combined have increased by a tenth since the early 1990s, the good news is survival rates have doubled over the past 40 years and half of all cases (42%) of cancer are linked to lifestyle. The lifestyle and food choices you make CAN make a difference!
DON’T WAIT TO LOSE THE WEIGHT
Obesity accounts for 5% of all cancers and increases your risk of numerous cancers including breast and bowel cancer. Do you know what your BMI is and are you in the healthy range of 18.524.9? Are your trousers pinching at the waist or are you using the last hole on your belt? A healthy waist circumference (80cm (31.5in) for women and 94cm (37in) for men) is equally important. If your weight has been a struggle or is a concern ask your GP to refer you to an NHS dietitian.

The combined contraceptive pill has been shown to slightly increase the risk of breast (contributing to 1% of breast cancers in the UK) and cervical cancer; with the risk falling again after the pill is stopped. However, it also offers protection against womb and ovarian cancer; and may reduce the risk of bowel cancer. So, it is generally accepted that the protective effects of the pill last longer and outweigh the increased risk of breast cancer. It is worth speaking to your GP who can help you make an informed decision based on your personal circumstances and medical history.

Water removes watermarks. Check the care label and if washable follow the instructions, ensuring you wash at the right temperature. For items or fabrics that need dry cleaning, a professional can hand treat the mark prior to cleaning. Ensure you advise the cleaner that it is a watermark as dry cleaning will not remove a watermark. Before treating any mark or stain on your cloths or fabrics check the care label. Water can shrink, distort and discolour some fabrics as can bleaches. If in any doubt, seek professional advice.
Freshen up your curtains Make your curtains look brighter for the winter by taking them outside and giving them a good shake or leave them in situ and vacuum them. Hoovering removes dried dirt and improves the appearance of the curtains. It also takes away dust particles that cause allergies. Pay attention to the tops and hems of curtains where dust and dirt collects.
Ask Peters’ Cleaners Q How should curtains be cleaned? A This depends upon the fabric so ensure you follow the instructions on the care label. The wash symbol means the fabric is washable. If it is not hand wash, then you can put the curtains in your machine and wash at the indicated temperature. Be careful about tumble drying as this can cause shrinkage or excessive creasing. Ensure you remove all curtain hooks prior to washing.

This makes them susceptible to damage during cleaning and a badly sun-damaged blackout lining is likely to disintegrate. Q I have been told that my curtains may shrink during cleaning. Is that right? A Curtains should not shrink if the care label instructions are adhered to. New curtains generally allow 3% shrinkage when first cleaned. A professional will advise you of this.

hat is a multigenerational estate? LOST CHILD BENEFIT?
F
or some years now the child benefit tax charge for higher earners has had an impact on families and the implications of this charge aren’t always obvious. Child benefit can be claimed for all children under the age of 16. The current benefit is £20.70 per week for the first child and £13.70 for each additional child. So for two this is currently £1,788 per annum. THE TAX CHARGE AND HOW IT IS CALCULATED
Where a parent has not requested that HM Revenue and Customs (HMRC) stop paying child benefit, a tax charge will be levied on the household’s highest earner if their personal taxable income exceeds £50,000 per tax year. It is interesting to note that if both you and your partner have an income just below the £50,000 limit, you’ll still continue to receive the full amount of Child Benefit If you have an income of between £50,000 and £60,000 a year, the amount of extra tax you’ll have to pay will be 1% of the amount of Child Benefit you get for every £100 of your income above £50,000. So this would mean that should your income be
£55,000 this would lead to a 50% reduction in child benefit – £894 if you have two children. SO WHAT CAN BE DONE?
Well, one possible solution to this could be to make an additional pension contribution. If you follow the above example of someone who earned £55,000 then that individual could make a £5,000 pension contribution. This individual is a higher rate tax payer and so can claim effective tax relief on the payment of £2,000 – the net cost is therefore £3,000. The pension contribution of £5,000 also reduces the net income to £50,000 and so 100% of the Child Benefit will be retained – £894 in the above example. If you follow the example through a £5,000 pension contribution would receive £2,000 tax relief and £894 returned by way of child benefit and so the true cost of the £5,000 contribution would be £2,104! There are other ways of doing it including charity contributions.

B
etween the years 1827 and 1840 three brothers William, James and Samuel Symington left Leadshall in Lanarkshire, Scotland, for Market Harborough in Leicestershire. Their uncle was William Symington who devoted his life to the development of steam engines for ships. He was unsuccessful at exploiting his talents commercially and must have told his nephews many times over about his failure. William was the first of the three brothers to settle in Market Harborough a thriving market town. His younger brother James, aged 19, soon followed. Within months James set himself up as a tailor, hatter and woollen draper next to the shop where
his elder brother William sold tea and coffee. William’s shop was thriving and he decided to move into new factory premises to start a food manufacturing company – W Symington & Co Ltd. Their third brother Samuel was a commercial traveller who didn’t join his brothers until a few years later. The former house and shop that William used to own was sold to the Gold family who had a daughter named Sarah who was skilled at stay making – a craft and trade needed for corset making. At this time, all corsets were handmade and exquisitely embroidered. The combination of Sarah’s charm and strong will attracted her neighbour James Symington

(who owned the tailor and draper’s shop next door) and within three years they were married and she moved into James’ drapery business. Their first child was born in1837 when Queen Victoria came to the throne and Sarah, like the monarch, had nine children, but somehow she found time to support her husband’s business. The fashion of the day called for a narrow waist and every woman who could afford to do so (irrespective of her age and figure) wore corsets specially made to constrict her middle to the greatest degree possible. So, James was able to advertise himself as a tailor, hatter, haberdasher and stay maker. In 1850 James and Sarah leased a cottage and set up their first workroom. All the corsets

were handmade until the advent of the sewing machine – the singer brand, in particular. So, in 1856 James started to take bigger orders and Market Harborough had one of the first mechanised corset factories in England. In the 1860s, corsets became big business in the fashion industry and soon Symington was able to open factories in Leicester, Rugby, Gainsborough, Ipswich, Sudbury, Liverpool, Manchester and Blackwood, as well as Peterborough. James and Sarah Symington’s sons and daughters soon took up positions within the company. Perry Gold Symington, the youngest daughter joined as an executive as well as a lady supervisor in a time when women of her class were expected to stay at home. However, workingclass girls and young women at this time either entered domestic service or gained factory work. By 1912 the premises were extended to take a further 200 machines and then 10 years later in 1921 the premises were extended yet again. By the outbreak of WWII, the Peterborough factory employed 650 people. Since it opened in 1903 until 1956 there had only been two factory managers and a quarter of its workforce had been there for and subsidiary companies 30-40 years. closed. CIVIL WAR BRIAN JONES – LOCAL HISTORIAN

S
tamford town escaped the Civil War relatively unscathed despite Oliver Cromwell’s siege of Burghley House and the visit there of the fugitive King Charles in May 1646. After the Restoration of 1660 the town recovered. Improvements to the Great North Road encouraged road trade and the river was made navigable again by a canal. Everyone who travelled north passed through Stamford and the coaching trade elevated old medieval inns like The George into major, nationally renowned, hostelries. Prosperous professional men and merchants were attracted to the town and they built their fine vernacular and later classic or Georgian houses, which today provide the backbone of the town’s fabric. Meanwhile – what was happening in the rest of our part of the world? Not a lot, it turns out. No vicar was appointed at Bourne for many years – the church being served by curates. The town will, in fact, have to wait until 1711 when Edward Blythe takes charge. In Market Deeping the Revd Paul Pretland had regained his living, but it would be a further
King Charles 2nd eight years to return St Guthlac’s church to what it was. The Uffington estate was bought for Charles Bertie, the 5th son of the 2nd Earl of Lindsey. A grand house was designed in 1675 and attributed to a rather anonymous ‘Mr Grant, Surveyor’ who is mentioned in the account books as receiving £4. 2s 6d’ for ‘making a plan of Uffington House and surveying several parcels of land adjoining to it’. Work started in 1681 and was largely completed by 168688. Bertie wrote in August 1687: “The house which I am now building ‘in the afternoon of my age, you must not call a fine house: but I hope it will be big enough for a younger brother’s family.’ When completed the interiors were regarded as some of the finest in Lincolnshire. The staircase, walls and ceilings were decorated by Antonio Verrio who had also worked at Windsor Castle and spent a decade at Burghley House. The Cromwells had gone and,

in 1660, King Charles 2nd was invited back to England to reclaim his throne. Once here the new king pursued a policy of political and religious tolerance – due in large part to his own leanings towards Catholicism. Ten years later Charles signed a secret treaty with Louis XIV of France promising to convert to Catholicism and support the French against the Dutch. In return, he would receive subsidies from France that enabled him to have some room for manoeuvre with parliament. In 1677 Charles 2nd arranged his niece Mary’s marriage to the Protestant William of Orange. As a result Catholic brother James was his heir. Charles died on 6 February 1685, converting to Catholicism on his deathbed and James came to the throne as King James 2nd of England. His many attempts to formalise toleration of Catholics and non-conformists failed due to a strongly hostile parliament.

AZORES A land full of natural beauty in the glistening blue immensity of the Atlantic Ocean.
T
he Portuguese-owned Azores Islands are an enchanting archipelago of nine emerald green islands situated between Portugal and North America in the North Atlantic Ocean. For the enlightened travellers, the Azores have long represented a beckoning blip on the radar of possible destinations and it is a Mecca for nature lovers and fans of adventure sports. Another reason to visit this independent region of Portugal is that restrictions on air routes to the Azores have recently been removed, which means more carriers (including RyanAir and Easy Jet), cheaper fares and more choice for travellers trying to explore this region. The flight time is just under four hours, with the outer islands being a short hop by ferry or air, making island-hopping a great itinerary. The islands lie on the nexus of the European, American and African tectonic plates and UNESCO has designated three of them (Graciosa, Flores and Corvo) as biospheres. The archipelago also comprises more than 30 Blue Flag beaches and 13 important wetlands areas. Last year the Azores were named as one the world’s top destinations for sustainable tourism. Renowned for exciting adventures at sea including scuba diving, snorkelling, water sports, and whale

and dolphin watching. The region is home to about a third of the world’s species of cetacean (whales, dolphins and porpoises) and is home to sperm whales, common dolphin and bottlenose dolphins. The nutrient water is what makes the region one of the best diving spots in the Atlantic, and is alive with a great variety of marine life, including yellow mouth barracuda, devil rays, loggerhead turtles, slipper lobsters and many more species. As well as attracting tourism through the activities in the sea, there is also a lot to discover on land including geotourism, hiking and adventure sports. The Azores is home to Portugal’s highest mountain (Mt Pico) and if conditions are right it makes for the perfect climb to catch the sunrise or sunset. Throughout the island there are many waterfalls cascading into ravines, which make for amazing canyoning. The Azores are an up-and-coming tourist destination and they are waiting to be discovered by the adventurous or those just seeking something different from the usual beaten path.

Lincolnshire Wildlife Park is home to a myriad of birds and animals.
D
id you know that within Lincolnshire Wildlife Park is the well-established National Parrot Sanctuary, which houses more than 1,000 parrots and parakeets – many of which fly freely around the park? The park is well known for its tigers. The Bengal Tiger adventure started with Dehra and her three cubs that arrived more than two years ago. The park now has 11 Bengal tigers. Tigers are fascinating creatures and no tiger has the same stripes as the next; the special white markings on the back of their ears warn off other challengers as they look like eyes. ANIMALS GALORE And, there are many more animals to see – Zuri the Black Panther is one of the newest additions to the park’s family. Just next door to Ozzy you will find the reindeer; three lovely ladies by the names of Flower, Lexi and Boomer. The tortoises here are

of all shapes and sizes ranging from the smallest of just a few inches, to Albert weighing in at five stone! Cecil, the tapir is a sight to behold, he is gentle and friendly, and originates from the wet Brazilian and South American rainforests. You can visit the greater rheas, cousin to the Ostrich. In the wild these flightless birds use their powerful legs to outrun trouble. A must-see are the ever popular and captivating meerkats. You will be delighted watching them dig dens and be captivated as they play. And listen out for the effervescent Australian Kookaburras. Clarence and Kola are the loved-up ring-tailed lemurs that arrived at the park in 2009 and every year since they have had pups. Other animals at the sanctuary include otters, capybara, bearded dragons, snakes, a chameleon and an enormous display of colourful tropical fish. MAGICAL PARK An interactive app that brings the outdoors in!

hildren are using gaming apps from a young age – that’s just how things are nowadays. However, the Magical Park app from Ferry Meadows aims to keep children healthy with outdoor exercise and digital entertainment. The themed app enables children to earn virtual rewards by completing challenges. While progressing through the game, a world of imagination opens up where a Magical Park can be built in Ferry Meadows through the camera function. They can also engage with the community by completing challenges alongside others to reach spectacular milestones. The objective of these games is to keep players engaged while learning and having fun. The Halloween themed app, where you can spot ghosts and ghouls, is available now until Sunday 5 November – just right for keeping the kids

W
ith all the hype surrounding a few big blockbusters this summer, this delightfully witty and engaging film, produced by Dreamworks & based on the books by American author and illustrator Dav Pilkey, snuck in under the radar. And, what a gem of a film it is! It had me so excited, I wanted to go and purchase the books, which I had not read and neither had my children. It is based around two supremely imaginative friends who like to play pranks on people – George and Harold – who somehow manage to hypnotise their Principle (Head Teacher for us Brits!) into
thinking he is an overly enthusiastic and super silly superhero named Captain Underpants, a man who has no shame in having his overtly large white Y-fronts on display for all to see. There are some funny visual parts in the film and some witty throwaway lines that will have slightly older children howling with laughter as well as a few sniggers from parents. “This is a hilarious, charming and witty film that everyone can enjoy.
