When you place a slice of Tommy’s coal-fired pizza in your mouth, you are indulging in three years of research done by its owner, Tommy Bonfiglio, who vowed that his customers would enjoy “pizza done right.” From ovens, to sauces, to cheeses, and more, Bonfiglio diligently studied the art of pizza-making and came up with a sure fire way to make the best pizza around. The rapid expansion of his original Tommy’s Coal Fired Pizza in Red Bank, which opened in 2009, and now includes locations in Brick, Oakhurst and Paramus, proves he’s doing it right.
The coal fired oven is what gives Tommy’s pizza its unique taste. The ovens average 700 - 800 degrees. Making pizza in that intensity of heat seals in the juices and leaves a moist inside and a crispy crust. It seals in the flavor because the pizza cooks so quickly, there is not enough time for the taste to leach out of the food. “And a coal-fired oven does not add any taste to the

Pure, fresh and simple is what gives this pizza its unique flavor. There are no freezers here. Everything is made fresh daily. “We use delicious flavorful fresh basil and fresh lowacid San Marzano tomatoes. We use the tomato in its natural state,” Bonfiglio describes. “We also use fresh dry Grande cheese for our pizza. And, we don’t shred it. We slice it and place the slices of cheese right on top of the crust and then put on dollops of sauce and fresh basil on it.”
The restaurant, which offers whole wheat, white or glutenfree crust, also offers numerous pizza toppings, including anchovies, broccoli rabe, grilled chicken, Kalamato olives, meatballs, mushrooms, onions and pepperoni. Specialty Artisan pies are also available, such as “Milano,” grilled artichokes, fresh garlic, fresh mozzarella, fresh basil and ricotta cheese; or the “San Danielle” with Imported Prosciutto, Fresh Arugula, Fresh Basil, San Marzano Tomatoes, Fresh Mozzarella and Extra Virgin Olive Oil. But pizza isn’t the only food served. Tommy’s offers hearty salads (such as Italian Chopped Salad or Apple Salad with homemade dressings), sandwiches, calzones and entrees to please the palate. Chicken Parmigiana or Eggplant Parmigiana, both topped with homemade marinara sauce, smothered with mozzarella and provolone, are also available, as are pasta dishes such as Penne Vodka, Pesto or Marinara. Happy Hour is on tap Monday through Friday from 4:00 to 7:00 pm and on Friday also 10:00 pm until closing, and all day Saturday (except for Paramus) and Sunday. Salads, garlic bread with cheese, personal pies, calzones and wings, smothered in caramelized onions, are on the bar menu. Happy Hour offers halfprice draft beers, $4 house wines and $4 well drinks.
Tommy’s Coal Fired Pizza carries on the “old world” art of making pizza. And Bonfiglio brings his own Italian heritage to the mix. Every pizza is baked in a coal-fired oven at temperatures up to 800 degrees, and at these temperatures, he says, a flavorful and crispy crust is achieved.
The Bonfiglios also believe in giving back, and were recently honored by the Ashley Lauren Foundation at its second annual Butterfly Ball. The Bonfiglios have actively supported this foundation that assists children with pediatric cancer. Yvette has created Tommy’s “Child of the Month,” a joint charity with the Ashley Lauren Foundation to benefit a sick child every month. In addition to visiting the children, Yvette has a donation box with a picture of the child in each location.
Bonfiglio has traveled extensively, sampling pizza all over, including in Italy and came up with what he believes -- and his customers agree -- is pizza done right.
“It was not about the financial end,” Bonfiglio says of his desire to open a pizza business. “It was about our dream to do something fun -- and also to do something good for others.”

Everyone loves music, but sometimes you forget just how powerful it can really be. Music is what allows each member of Mildly Medicated to overcome their own unique adversities. Vocalist Amanda McTigue, 17, has hemophilia, guitarist Ryan Chiarella, 18, has ADD, guitarist Steve Freed, 16, has diabetes, bassist Jenna Basile, 13, has Tourette’s Syndrome and drummer Rocky Basile, 16, is on HGH therapy. But when they’re jamming they’re on a level playing field with everyone else. At times bullied, the members of Mildly Medicated showed everyone what they were really about when they took the stage at Jenna’s school and raised $5,000 for Hurricane Sandy relief. “I never fit in but I performed and raised all that money in front of my whole entire school and they all started looking up to me,” says Jenna. Guitar has been a huge positive in helping Ryan handle his ADD as his attention to detail in learning how to master the instrument has helped him focus in other areas more easily. To him, music is the best way to vent. “Having medical problems, it holds you back in certain ways, it prevents you from doing certain things and it causes frustration and music’s an outlet for that,” he relates.
takes insulin injections daily to control his diabetes and Rocky is on hormone therapy due to his HGH deficiency. But in between shots they are like every other kid with desire to do something they love. Jenna originally started out playing the piano, but her Tourette’s Syndrome made the precise hand movements necessary to strike the keys very difficult. Her dad gave her a bass one day on a whim and she has been rolling with that ever since. She is dedicated to performing and won’t miss a chance: she played one show with a sprained ankle and another just four days after getting her appendix taken out. “We’re very comfortable around one another because we share a common interest and disability,” says Amanda, who takes medication to help her blood clot normally. She walked into the School of Rock on Route 79 in Morganville for lessons one day and walked out with a band. The school is a performancebased program with a feel similar to the popular Jack Black movie of the same
name. It was there they came together and gelled instantly. Their chemistry is obvious, especially when it comes to songwriting. Mike Basile, father of Jenna and Rocky and coowner of the School of Rock along with his wife Antonina, is amazed at how they can come up with a completed original song in just two days. “To create words and music that works in a day, two days, it’s ridiculous. Sometimes it takes weeks, months for something to come together,” Mike explains. “I don’t think they fully understand or appreciate how special this thing really is.” For a bunch of teenagers, they write, practice and play beyond their years. They will never ask for attention because of their medical issues, all they ask is that people listen to and judge them on their music. Their passion and ability for their craft have taken them to amazing heights for a band so young and they have been gaining recognition including being mentioned in The Asbury Park Press, The Aquarian and they were even played on “The Jay Thomas Show” on Sirius XM radio. Individually the members of Mildly Medicated listen to many different styles of music from pop to heavy metal and classical rock, but collectively they look to Paramore as one of their top inspirations. Their growing fan base can hear their original music on an album they’re working on currently scheduled for release at the end of July. Geovanny Valverde needed very little training when he began tending bar at Chris Michael’s Steakhouse and Lounge in Woodbridge. Then again, Valverde grew up inside a tavern -- literally. His father owns a bar, Ambaluz, in Costa Rica where he grew up. Valverde says growing up around the business, he learned and worked, even as young as five years old. “I was there all day long,” he explains. “Sometimes, I would even sleep there,” he adds with good-natured humor. In fact, he pretty much knew the bar business
applied for and got a job at Olive Garden to tend bar. He then moved to Chris Michael’s, where he started as a bar back and where he says he “couldn’t find a better boss.” He began bartending a year ago. “It is not a simple job, but I love it. You must deal with different personalities and it is a lot of responsibility. You have to be aware of a customer’s behavior and observe how much they drink and how it is affecting them. You get to know them, and most of the older ones will be
Valverde also recently began bartending at the Fox and the Hound in Menlo Park. In his spare time, which is limited, he enjoys playing on a soccer league with his friends. Although he plays for fun now, his dream was to play professional soccer and he trained for it in Costa Rica, attending soccer school and playing the game from 7 -16 years old. He left the country and his dream of becoming a professional soccer player to come to the US. “I wanted to meet new people and see different things,” he relates.

Behind the Footlights PNC Bank Arts Center by Steve Ortlieb The Garden State Arts Center. The PNC Arts Center. I guess it all depends on how old you might be. I’m of an age who still finds it difficult to attach a corporate name to a veritable institution. (Thank the Lord that the Yankees have not felt the need to go that route—yet!) The Garden State Arts Center, situated in Holmdel, opened in June of 1968 and prior to that it was the Telegraph Hill recreation area. It was an area, that for many years was a place to hike and camp. It is also known as Crawford’s Hill because the Crawford family, about whom very little is known except for the fact that the family burial plot is still here, the highest point in Monmouth County. It is very near the NJ Vietnam Veteran’s Memorial, part of the large parcel of land that is now the PNC Arts Center. It was with the creation of the Garden State Parkway that this amphitheater was imagined. In fact, prior to the Parkway, Monmouth County was sparsely populated and it wasn’t until the late 50s that it began to grow into the semimetropolis it is now. My own memories of the Arts Center are of having friends work there, directing cars, working concession stands and then during the shows, either catching part of Sinatra, or Judy Garland or Steve Martin or maybe even going to “visit the Crawford’s” our euphemism for underage drinking or something more nefarious. In the earliest days the Philadelphia Philharmonic and Van Cliburn performed; it also hosted such greats as Janis Joplin. More
recently you’re more likely to see OzzFest, Phish and Gwen Stefani. My personal memories are of the aforementioned Steve Martin replete with the arrow through his head, George Burns and Carol Channing in 1976 and Whitney Houston in 1986. Just from the names I’ve mentioned it’s easy to see that nearly every type of genre has passed through over the last 45 years. From perennial performers like James Taylor and the Beach Boys to the one-timers like Sinead O’Connor this summer venue has seen it all. This amphitheatre is open from May through September, seats over 7,000 under the soaring roof and over 10,000 on the lawn.
While the venue is still owned by the NJ Turnpike Authority, it is managed by Live Nation. Attempting to speak with someone at Live Nation has proven to be something of a challenge so I’ve gleaned most of my information from personal remembrances and the internet. I’m well aware that I am beginning to show my age because there was a time, and it doesn’t seem so long ago, that I would’ve wanted to be at every event held. Now as I peruse the schedule I realize
that only about half of what I see scheduled appeals to me. There are quite a few country music favorites like Tim McGraw and Brad Paisley to hard rockers Black Sabbath (now we’re talking!) and Kid Rock. You can «hear» this famous venue in several recordings. «Glen Campbell Live» was recorded at the amphitheatre on July 4, 1969; this LP shot up to number two on the Billboard Country Albums list, and number 13 on Billboard 200. Jackson Browne›s «Running on Empty» album also features songs recorded here, as does «An Evening with the Allman Brothers Band: 2nd Set,» recorded on August 16, 1994. This venue is renowned in the music world for its acoustics, so I›m betting there›ll be more live performances recorded for posterity. If you’ve never attended a show at the Arts center you should plan to. If being under the roof and sitting in a real seat isn’t important to you, pack a blanket or a couple of chairs and sit out on the lawn for a more communal experience. The acoustics are fantastic no matter where you’re seated. A full rundown of this year’s shows can be found on the Live Nation website or on the unaffiliated PNC website. Relax, have a beer or glass of wine, sit back and enjoy!

Burgers • What do you need from a wine for burgers? Depends on the toppings, but for
the most part, you want something red, with bright acidity and ample tannins. A Sangiovese-based blend is just the ticket, such as Banfi Centine Rosso.
Grilled Meats • Lamb chops, jerk chicken, and various cuts of steak need bolder wines with full
flavors and structure. Choose a Chilean red such as Natura Carmenere or a juicy red from down under like Chateau Tanunda Grand Barossa Shiraz. If you want to spring for a wine to impress, go with baby Brunello Rosso di Montalcino or a Super Tuscan such as Banfi BelnerO.
BBQ • To temper smokey, spicy, sweet flavors of barbecued ribs and chicken, pulled pork
from a smoker, etc., fun and fizzy Lambrusco is perfect thanks to ample acidity and just enough sweetness to cool peppered palates. Tried and true Riunite Lambrusco is incredibly affordable, available everywhere, and comes in party sizes such as 1.5 & 3L.
Grilled Shrimp with Watercress and Sweet Corn Vinaigrette 1 1/8 cups vegetable oil 3 ears corn, shucked and stemmed Kosher salt & freshly ground black pepper 18 medium-size shrimp, peeled, cleaned, and deveined 1 pinch cumin 1 pinch paprika 1 shallot 1/2 cup white balsamic vinegar 1 large bunch watercress, tougher bottom stems removed 1/2 Haas avocado, pitted, peeled, and cut into 1/2-inch chunks 1 Granny Smith apple, peeled, cored, and sliced into 1/4-inch-thick segments Squirt a splash of oil over the corn and spread. Sprinkle with salt and pepper. Place cobs on the grill and rotate as needed until lightly caramelized, about 10 minutes. Set the ears aside to cool, then remove the kernels and place into a bowl.
Tex-Mex Burgers 1 1/2 lbs. lean ground beef or 1/2 lb. each ground veal, beef and pork 1 egg 3 Tbs. olive oil 2 scallions chopped (white part only) 3 - 4 jalapeno chiles (fresh or canned), seeds removed and minced fine or 1/4 cup salsa Sea salt and freshly ground pepper to taste Toasted hamburger rolls In a non-stick skillet, sauté jalapenos (if using salsa instead, no need to heat just blend into meat) and scallions in olive oil over low heat, until soft. Cool, and then add to ground meat together with the egg. Blend well and form into patties. In a heavy skillet or on barbecue, cook patties until medium-well. Serves 4 - 6. Timing: 20 minutes.
1 Tbs. coarsely ground black pepper 1 1/2 tsp. ground allspice 1 1/2 tsp. grated nutmeg 1 1/2 tsp. ground ginger 1 1/2 tsp. coarse salt 1 chicken (about 4 pounds), washed and patted dry 1 tsp. canola oil 1 can (about 12 ounces) lager beer Light a grill for indirect medium heat, about 325°F. Mix spices together. Rub chicken inside and out with 2 Tbs. of spice mixture, and rub outside of the chicken with 2 tsp. of oil. Open the can of beer, and pour off 1/4 cup. Stir remaining spices into beer in the can. Coat outside of can with remaining oil. Lower chicken onto can, inserting can into the cavity of the bird.
Meanwhile, in a large bowl, combine shrimp, cumin, and paprika. Add splash of oil and toss to coat. Grill until pink, turning once (6 -8 minutes). Set aside.
Position chicken so front legs and can form a tripod, holding chicken upright.Put chicken and can on grill away from the heat, cover grill, and cook for about an hour and ten minutes (thighs at 165°F). Transfer chicken, still on the can, to a sturdy surface. Holding can with tongs and gripping chicken with a towel, twist and lift chicken off can and transfer to carving board. Rest 8 to 10 minutes, carve, and serve. Serves 4
In a blender, combine corn kernels, shallot, 1 cup of vegetable oil, and vinegar and process. Place watercress in large bowl, top with avocado, apple, and 1/2 cup of vinaigrette and gently toss. Transfer watercress to a platter and top with grilled shrimp. Serve immediately. Serves 6

Last week, over 100 ABC authorities raided 29 establishments’ state-wide seizing product and inventory records. They included fancy venues, neighborhood taverns and chain restaurants.
