SDPB1: Sunday, December 12, at 6pm (5 MT) Lidia Bastianich is a celebrated chef and restaurateur who has published 13 cookbooks, coauthored with daughter Tanya, and companion books to her Emmywinning television series Lidia’s Kitchen, Lidia’s Italy in America and Lidia’s Italy. In her series Lidia Celebrates America, Bastianich travels across the United States in a celebration of culture through food. Bastianich says she is on a cross-country journey to explore the heartland of America, connecting with people and finding how small American towns preserve their deliciously diverse culinary traditions. “Small towns are the heart of our nation, rich in traditions that have been handed down generation after generation. I feel honored for the opportunity to gain access to people’s long-held cultural traditions.” ~ Lidia Bastianich In small, rural towns across the country, Americans are preserving their cultures through food and traditions. communities, sharing the stories of the people she meets and giving us a lens into their world. “I really respect rural America because that is what holds America together,” says Bastianich. “It’s those people that really are the heartbeat of America.” Shoofly Pie in Bethlehem, PA Not long after Bastianich’s arrival in the U.S. from Pola, Occupied Italy (now Croatia), she lived in a small town called Sunbury in central Pennsylvania, located on the Susquehanna River. Sunbury was Bastianich’s first exposure to small town America, and she loved the rolling hills, mountains, vast open spaces and river views which reminded her of her homeland in Istria. In Sunbury, Bastianich learned how to cook Pennsylvania Dutch specialties including shoofly pie and succotash made with peppers, potatoes and dumplings. Bastianich also visits Lancaster County in rural Pennsylvania, home to the Pennsylvania Dutch and Amish people. In Bethlehem, known for its holiday celebrations and decorations, Bastianich meets

Christmas in Natchitoches, Creole Country, Louisiana Under magnolia trees draped in Spanish moss, Bastianich enters the heart of Louisiana Creole Country. Here the culture derives from its early inhabitants, individuals known as gens de couleur libres (free people of color), who descended from a combination of French and African roots. Homegrown vegetables and fruit, wild game, fish, gumbo and étouffée, combined with spices like red cayenne pepper and filé (dried, ground sassafras leaves) provide the basics of Creole cuisine. Other Creole dishes include smoked bacon, ham and sausage, boudin, andouille, and zandouille. Strong Spanish influences are reflected in meat pies, dirty rice and tamales. Pigs & Tamales in Denton, Texas As in South Dakota, fairs are a rich part of Texas life, preserving agricultural traditions and introducing new technology. For many, fairs are a family affair. Bastianich joins Kate Swan, age 12, who raises pigs to show at the state fair. Kate’s father shows her the ropes, and even makes the whips that help steer the pigs. Kate is proud to have taken over most of the responsibilities herself and shows Bastianich how to wash, feed and pamper the pigs. In Denton, Bastianich also visits Jorge Landeros who owns Milpa’s Kitchen, an award-winning TexMex restaurant, and a center for the community. Landeros discusses the tradition of making tamales and how special they are to the Mexican culture at Christmas time.

Buffalo Soldiers in Lawton, Oklahoma On the streets of Lawton, Oklahoma, Bastianich encounters more than a dozen soul food and barbecue restaurants. Many are owned by AfricanAmericans, a testament to the growing economic power and vitality of a city recently named one of the most livable cities for African-Americans. Lawton is by the Fort Sill Army base, which in the mid-1800s was home to the famed Buffalo Soldiers. In the 1800s, these soldiers often ate beans, bacon, hard bread, potatoes, onions and stews. They also relied on a good bean soup served with dried apples, peaches and biscuits. Bastianich and Wallace Moore share cornbread, dumplings, baked beans, and coffee – all cooked over an open fire. Pork & Mustard Greens with the Hmong Community in Wausau, Wisconsin Driving north from Madison, Wisconsin, to the small town of Wausau, Bastianich visits Hmong vegetable gardens. Every June families gather here to plant seeds for the next year – new rows of corn, beans, melons, eggplant, greens, and herbs. Many of these plant varieties have no English names. Hmong immigrants brought the plants and seeds from the mountains of Laos, old flavors they now grow in their adopted homeland. Bastianich joins an extended Hmong family for family stories and a traditional feast, including pork with mustard greens and beef mincemeat, or laaj. Eelpout Festival in Walker, Minnesota Walker, Minnesota, has a population which tips just slightly over 1,000. And while it was inhabited for thousands of years by Indigenous peoples, it is now largely a melting pot of European cultures, from Finland, to Norway and Germany. Walker is located on the southwest corner of Leech Lake, Minnesota’s third largest, which hosts the annual International Eelpout Festival. For three days in February, Walker grows by ten-fold as fishers come from hundreds of miles away to ice fish for eelpout, a freshwater cod and one of the ugliest-bottom-dwelling fish. Bastaniach visits local chef Maxwell Mraz. Well-versed in cooking eelpout, Mraz demonstrates how to prepare salted eelpout cakes. They also make lefse from a recipe from Mraz’s Scandinavian grandmother.

Pork Tamales (yields 4-6 dozen tamales) Ingredients PORK BUTT • 2 ½ lbs. Boneless pork butt • 1 Tbsp. Garlic powder • 1 Tsp. Salt • 1 Tsp. Black pepper MASA • 10 lbs. Masa (cornmeal flour) • 4 cups Pork lard • ¼ cup Water • 3 Tbsp. Baking powder • 2 oz. Chile Ancho to color masa

TAMALE ASSEMBLY • 6 Dozen dried corn husks CHILE SAUCE • ½ lb. Chile ancho • 1 Tsp. Garlic powder • ½ Tsp. Ground cumin • 2 cups Water (stock saved from boiling the Chile Ancho) • 2 Tbsp. Pork lard • 2 Tbsp. Salt

Directions 1. PORK: Place pork butt in medium-size stock pot. Add garlic, salt and pepper. Add cold water to cover. On high heat, bring to boil, then reduce heat to medium-low and simmer partly covered for 1½ to 2 hours. Remove pork from stock and cool at room temperature. When cooled, shred meat into fine threads. 2. CHILE SAUCE: In large saucepan, boil the chile ancho for 10–12 minutes until softened. Drain chiles and reserve water. Rinse seeds from boiled chiles. Blend chiles, garlic and cumin. Add the 2 cups of reserved water. In heavy, large saucepan, heat 2 tablespoons pork lard over medium-high heat. Add drained chile puree carefully to avoid splatter. Reduce heat to low. Cook over low heat for 10-15 minutes. Remove sauce from heat. (Reserve 2 ounces of sauce to color masa). Combine pork with chile sauce. 3. MASA: Place 10 pounds of masa in large mixing bowl. Pour water and add baking powder over masa evenly. Add salt and mix masa by hand. Add pork lard and two ounces of chile ancho sauce (this adds color to the masa) and knead masa again. Masa is ready when it feels thick and compact. Pad masa down in bowl and set aside. 4. TAMALE ASSEMBLY: Soak dried husks in warm water for 1-1 ½ hours or until soft. Drain husks well; pat dry with paper towels. For each tamale, spread 2 tablespoons of masa mixture on each husk. Spoon 2 tablespoons of filling lengthwise down center. Fold husk and secure with strips of cornhusk. Steam for 1 hour. 5. STEAM TAMALES: Use stock pot with wire lining or steamer insert. Steamer should not set in water. Add a few husks to liner/steamer prevent tamales from getting wet. Tamales must be placed open-side up around perimeter of stock pot. Place extra husks over tamales and cover pot. Steam for hour or until husk peels easily from masa. 6. Serve warm or freeze after cooling. December 2021

SDPB December Listings Craft in America Holiday celebrates some of our most important traditions. Nordic folk woodcarver Harley Refsal brings to life the rich history of winter solstice. Clay artist Susan Garson creates fanciful Chanukah menorahs. George Vanderbilt’s opulent turn-of-thecentury Christmas is recreated at the Biltmore in Asheville, North Carolina. Daring chefs make lavish gingerbread houses for the competition at Grove Park Inn. Navidad is celebrated in San Antonio with religious processions, tamales and Kathleen Trenchard’s sparkling luminarias. Green lights dance across a star-filled sky, and snowflakes sparkle on the trees. It is little wonder Lapland is famous as a realm of elves and flying reindeer, the magical home of Santa Claus. However, this northernmost region of mainland Europe is a real place with real animals, such as reindeer, great gray owls, eagles, wolves, musk oxen and brown bears, who live out their lives in the tundra and forest. With 2020 pandemic restrictions in place, three-time Choir guest artist and Academy Award winner Brian Stokes Mitchell, returned to the Conference Center — without an audience — to film the narration for 20 Years with the Tabernacle Choir, a twenty-year retrospective of the much-heralded Choir Christmas concerts.

The holidays are a busy time for the midwives, and Christmas 1966 promises to be a memorable one. On this year’s Call the Midwife Holiday Special, the Nonnatus House team are faced with their busiest Christmas Day ever as the Maternity Home is filled with expectant moms and challenging cases. It is December and Laura Ingalls has already had enough of winter on the wide-open, lonely prairie. The cold days and long nights weigh on her such that even the prospect of a De Smet town Christmas pageant cannot quite lift her spirits. However, stories of the past, joyous music, and a new acquaintance may offer her the perspective and lesson she needs to find warmth and light in even the coldest and darkest of nights on the Dakota prairie. This historical fiction radio production provides an hour of theater, history, music, and drama as we share a Christmas on the Dakota prairie with Laura Ingalls, her family, and her neighbors in Laura’s Little Christmas on the Prairie. Featuring local actors, live music and sound effects, and produced in front of a live audience at the De Smet Event Center theatre.

NOVA Mystery Monkeys of Shangri-La is the true story of a family of Yunnan snub-nosed monkeys living in the highest forests in the world. Only recently discovered, snub-nosed monkeys are hauntingly beautiful primates, gentler than others of their kind. Elfin-like, they seem both childlike and wise beyond their years. The family is led by a formidable fighter and his fighting force who guard a troop of 8-10 families. The survival of this unique monkey society, formed in response to the hardships of the Himalayas, depends on strong defensive strategies and the cooperation and interdependence of them all. In August 2014, Islamic State fighters invaded Yazidi settlements in northern Iraq. The Yazidi men were massacred; the young women were kidnapped and taken to Mosul. There they were paraded, selected, enslaved, tortured and systematically raped. Doc World I Was A Yazidi Slave tells the story of two Yazidi women, Shirin and Lewiza, who escaped. Follow their journey to recovery while asking how a survivor of unthinkable sexual violence can find justice and a path to rehabilitation.

Jack and Yaya met at ages three and two through their shared backyard fence. They spent their childhood together, building forts and burning trash cans in their small hometown in South Jersey. From a young age, Yaya and Jack saw each other as they truly were, a girl and a boy, even though the rest of the world didn’t see them that way. As they grew older, they supported each other as they both came out as transgender. Decades later, Jack and Yaya remain best friends. Jack now lives in Boston with his loyal pup, Plinko, and works as a kindergarten teacher, while Yaya lives in her childhood home, waiting tables and trying to make ends meet after her mother’s passing. During his summer vacation, Jack travels back to his childhood home to spend time with Yaya and his extended family. Jack and Yaya follows these two friends for a year and explores their unique relationship, drawing on home videos and conversations with their eclectic cast of friends and family. Located near 80-foot chalkstone bluffs overlooking Lewis and Clark Lake on the Missouri River in southern Bon Homme County, Springfield sports a population of around 2,000 folks. A popular fishing and hunting spot, Springfield is home to the Mike Durfee State Prison.

USD-Springfield The University of South Dakota at Springfield was a statesupported university founded in 1881 and closed in 1984. Originally Southern State Normal School, it became Southern State Teachers College in 1947, Southern State College in 1964, and finally USD at Springfield in 1971. The rich history of the university and the relationship it still has with the community 37 years after closing is still evident today on the streets of Springfield. Dakota Life visits with alumni, former professors, and residents of Springfield about the history of the college. Setting Sail When he is not fixing cars, trucks, and pontoon boats at his body shop in Springfield, Greg Stockholm is dreaming of the open sea. Since 2002 Greg has been working on a 72-foot sailboat destined for deeper waters. When completed the 30-ton aluminum sailboat will sleep 12 comfortably. In 2017 Greg passed the midway point in his project. Check in with Stockholm on the progress, upcoming milestones, and his goal of sailing around the world. Tee Time Golf and all its accoutrements are a huge part of summer recreation in South Dakota. Mr. Golfcart, which calls Springfield home, has been open since 1993 and supplies golfcarts to courses and golfers all over the Midwest. Visit the thriving business and check in with the Springfield Golf Club established by 40 neighbors in 1957 with a beautiful course that overlooks Lewis and Clark Lake. The course that started with six holes has grown to 18 with a clubhouse and is still owned and managed by its members. BODE, a 30-minute documentary from Rapid City-based producer Randal Iverson, gives a snapshot of Rodney Bode, a painter and sculptor who created thousands of artworks mostly in obscurity at his Butte County ranch south of Arpan. A fan of Dances With Wolves, Bode moved to South Dakota from Idaho, ostensibly in pursuit of the unpopulated landscape and proximity to Lakota traditions. Prior to acquiring an acreage in western South Dakota, Bode lived in California. An American Legion baseball player, Bode went on to play for the San Francisco Giants in their farm system but quit after two years, probably due to a conflict with his principles, says his sister Rojean Nunnally. Bode was drafted into the Vietnam War. Nunnally says her brother did not agree with the United States’ reasons for entering the war and went AWOL, for which he served a year’s prison sentence. Nunnally says the things that happened to Bode in prison “broke him.” Art and painting helped Bode cope. In South Dakota, Bode and his wife Renee kept many horses and other animals. According to neighbors, Bode’s ability to care for himself and his animals nose-dived after his wife’s death. Mental health advocates were called and Bode was placed in involuntary treatment. Prior to his placement in a mental health institution, few had been granted entrance to Bode’s property. Inside his home and geodesic dome were discovered hundreds of portraits, still lifes, and abstract works. Many of the paintings are large and boldly colored. The sculptures are non-representational and composed of scrap metal. It’s thought Bode was self-taught. Jay Pond and Greg Geiger at Rapid City’s Gallery Six13 curated an exhibit of Bode’s work in October and November, which brought in over $15,000 in sales during its first week. Bode, now 80 and diagnosed with schizoaffective disorder and vascular dementia, resides at the Human Services Center in Yankton. BODE premieres Sunday, Dec. 19, 9:30pm (8:30 MT) on SDPB1.

- CPA and Accredited Estate Planner Melissa White from Eide Bailly LLP shares some charitable giving reminders for 2021. With the various federal tax proposals being discussed in Washington, DC, many of you may have already begun year-end tax planning or are considering a review of your retirement and estate plans. While there is significant uncertainty as to the future of those tax proposals as of the date this article is written, here are a few items we do know. Charitable Deduction Provisions Set to Expire When the CARES Act was passed in 2020, it included two significant charitable provisions for individuals that are set to expire at the end of 2021. Deduction for Those Who Do Not Itemize Before 2020, individuals who did not have sufficient expenses to utilize the itemized deduction received no tax benefit for their charitable gifts. With the passage of the CARES Act, individuals were permitted to take a limited federal income tax deduction for cash contributions made to certain qualifying charitable organizations. While the limit was $300 for all taxpayers in 2020, the maximum deduction increased to $600 for married individuals filing joint returns for 2021. The $300 deduction remains for all other filers. Removal of the Adjusted Gross Income Cap for Cash Gifts - Subject to certain limits, individuals who itemize may generally claim a deduction for charitable contributions made to qualifying charitable organizations. The deduction is typically

limited to 20% to 60% of adjusted gross income (AGI) and varies by the type of contribution and type of charitable organization. The CARES Act permitted electing individuals to apply an increased limit, up to 100% of their AGI, for qualified cash contributions made during calendar-year 2021. For the two CARES Act provisions above, cash contributions made either to supporting organizations or to establish or maintain a donor advised fund do not qualify. Cash contributions carried forward from prior years do not qualify, nor do cash contributions to most private foundations and most cash contributions to charitable remainder trusts. The Powerful Qualified Charitable Distribution (QCD) When the age for required minimum distributions from retirement accounts increased to 72, it created some confusion of when QCDs are permitted. The good news is QCDs can still be made once the account owner reaches age 70 ½. QCDs are a powerful source for charitable gifts. You can satisfy all or part of your required minimum distribution amount with a QCD, the QCD amount is not included in your taxable income, and there are other potential benefits to taxes and Medicare premiums. IRS Update Not only is the IRS allowing the $300 deduction for cash donations for people who take the standard deduction, they’ve added a $600 deduction for married joint filing. So, give generously!
