Minorcan Clam Chowder
St. Augustine Style
Ingredients: 3 oz. slab bacon, diced into ¼ inch cubes 1 medium onion, diced 1 stalk celery, diced 2 cloves garlic, minced 1 green bell pepper, cored and diced 2 datil peppers, minced 1 can (28 oz.) plum tomatoes, crushed
1 cup tomato sauce 5 cups clam juice 2 bay leaves 2 potatoes, peeled and diced ½ tsp. dried thyme 1 cup minced clam meat (may substitute conch) 1 Tbsp. salt (to taste) ½ tsp. pepper (to taste)
Directions: In a large soup pot, fry diced slab bacon until crisp. Remove from pot and then set aside. Add diced onion, celery, garlic, green pepper and datil peppers to pot and cook until onions are translucent. Add tomatoes, tomato sauce, clam juice, and bay leaves (remove before serving), then bring mixture to a boil. Reduce heat and simmer for 1 hour. Add potatoes, thyme, and clam or conch meat; simmer 45 minutes. Season with salt and pepper; remove from heat. For best flavor- simmer all day or chill overnight and reheat it the next day. Serves 6. Enjoy! 32
