There’s no place like home The Mattice family welcomed visitors to their new home on May 10th during a dedication ceremony hosted by Habitat for Humanity South Georgian Bay. Tracey Mattice and her two children moved into the three-bedroom house on April 26th. “We were all excited and happy to see the day come,” said Tracey. “It’s very exciting. A soup-er day The 5th annual Bowls for Beds in support of Home Horizon Transitional Support Program was held at the Georgian Manor Resort on April 27th. As the organizers indicate, “Prior to the event, local school children learn about homelessness and then, with the help of local artisans, create uniquely painted soup bowls. These Bowls are sold to people who come to the “Bowls for Beds” event where they sample delicious soups prepared by local chefs representing numerous restaurants from within the Georgian Triangle Area.” A wonderful program and tremendous success, raising just over $20,000! Training Horses “at liberty” with Marina Latto Have you ever ended a training session with your horse feeling frustrated or even guilty with what you’ve experienced for the past hour? Many of us have. Your time with your horse should enrich each other’s lives, not add to the chaos. Maybe the answer lies in a shift of your perception, in re-evaluating your approach. Liberty training is a unique and evolved approach to training horses. It creates a deep relationship which opens the doors to heightened communication between human and horse. You really can be your horse’s best friend. Are you? Marina Latto is a liberty horse trainer and coach at Legend eQuestrian. She is greeted at the paddock gate everyday by horses ready and willing to learn more in an environment that they know is safe and free. ‘Liberty’ means that the horse has a choice to participate, just as you do every time you go out to the barn. More specifically liberty means that there is no tack involved and no round penning. Just you, your horse and a large riding ring, arena, or if you’re really ready to learn – a large open field. For Marina there are two main focuses when working with a horse at liberty. Firstly, to create a purposeful relationship and connection that is developed through establishing social order between the two of you. Secondly, to further that communication and connection through fun games and lessons you teach the horse. Spending a relatively short amount of time to build a strong connection with your horse first will change the training dynamic. Force is no longer needed, instead free will and communication rein. When given the opportunity horses love to engage and show off their brightest selves when their learning is in a low stress environment. Remember, you should both be walking away from your sessions feeling energized and excited for when you see each other next. BBQ RECIPE: TEQUILA LIME FLANK STEAK WITH CHIPOTLE BUTTER 1 FLANK STEAK, about 2 pounds: • 4 fresh limes • Zest of one lime • 1/4 cup tequila • 4 garlic cloves, minced • vegetable oil • 2 tablespoons soy sauce • 1/4 cup fresh cilantro leaves, chopped • Black pepper to taste
CHIPOTLE BUTTER: • 1/2 cup (1 stick) unsalted butter • 1 1/2 tablespoons minced seeded canned chipotle peppers • 2 teaspoons fresh lime juice(optional) • 1/4 teaspoon salt
PREPARATION STEPS: • Put the steak in a large resealable plastic bag. • Using a grater or zester, remove the zest from one lime. Juice the remaining limes, and add the juice to the jar along with the tequila, garlic, olive oil, soy sauce, cilantro leaves, and pepper.Tighten the lid, and shake vigorously to combine. (Alternatively, whisk the marinade ingredients together in a small bowl.) Pour over the steak, seal the bag, and refrigerate for 6 to 8 hours, or overnight. • When ready to cook, start your grill on high. • Lift the flank steak from the marinade (discard the leftover marinade) Place the steak directly on the grill. Grill for 5-6 minutes, then turn. Continue grilling for 6 to 8 minutes more for medium rare or longer for a more well cooked steak. Transfer the steak to a cutting board and let rest for 10 minutes. Slice thinly across the meat grain. Serve immediately with a portion of chipotle butter.

Sharron Fleet lives for dance. In 2011 Sharron received the Inaugural Award for “Arts and Culture”, representing a lifetime achievement promoting dance in her community. In 2012 she re-located Fleet-Wood Dancentre to 65 Simcoe Street, nestled in the Arts Community of Collingwood. Her School of Dance, FleetWood Dancentre celebrated its 20th Anniversary with two performances of The Nutcracker in December at Meaford Hall. Alumni and students joined together for this sold out Christmas favorite which they produce every two years. Dancers also enjoyed performing at Christmas in the Collingwood Downtown Windows, a yearly tradition. Fleet-Wood offers classes for both the recreation and pre-professional student, launching many students to postgraduate training at Canada’s National Ballet School, York University, Ryerson and George Brown College. Presently students are working toward the June 14th Recital at Meaford Hall. Dancers from 3 years to 18 will perform pieces in ballet, jazz, modern, hip hop, contemporary, pointe and tap. To ensure everyone looks their best, Sharron also custom sews each and every costume, exploring her artistic creativity with fabric.

1. Cut kernels away from corn cobs; place kernels in bowl and discard cobs.
2. Heat large saucepan over medium-high heat; add oil, shallots and hot pepper flakes. Cook, stirring constantly, for 1 to 2 minutes or until lightly golden. Add corn kernels, salt and pepper; cook for another 2 minutes. Add half of tomatoes; cook for 1 to 2 minutes. Add wine; simmer for 5 to 6 minutes or until reduced by half. Add broth; return to simmer. 3. Add mussels, stirring to combine. Cover and bring to a boil. Boil for 2 to 3 minutes or until mussels have fully opened and are cooked through; discard any that do not open. Stir in basil and remaining tomatoes. Serve immediately. After enrolling in the program, Mayor Cooper had the specialized energy management technology installed in her home for free by her local utility. The peaksaverPLUS program is being offered at no cost to all Collus PowerStream customers through the saveONenergy programs, offered by the utility and funded by the Ontario Power Authority (OPA). As a peaksaverPLUS participant, Mayor Cooper received an energy display and a programmable thermostat which were installed in her home. Together these devices are valued at more than $400. The thermostat is able to be accessed over the Internet, allowing homeowners to make adjustments to the temperature settings remotely. The in-home energy display shows in near real time, how much electricity your home is using in both kilowatt hours and cost. These two devices will help Mayor Cooper and her family conserve energy and better manage their electricity costs year-round.

by Margot Nicolson FRAMING & DESIGN TIPS If you are not familiar with frame design, here are some quick tips to help you achieve good results. It’s important to realize these are all generalizations and there will be exceptions where you may want to take a different approach to your design. Design Tip #1 - Mat Border Proportions Mat border widths change in popularity somewhat like hemlines on dresses. The current style is the use of wider borders than the typical borders used 10 or 20 years ago. Today many people look at mats as an opportunity to add colour to the frame design, but originally mats were neutral in colour and used to provide visual relief between the art and its surroundings. More generous mat borders enable you to focus on the art much more easily. Design Tip #2 - When You do not use a Mat, Try a Wider Frame Moulding When your frame design doesn’t include a mat, the frame you select may need to make up for it. The frame shown on the left, may have looked nice with a mat border, but without the mat, it looks skimpy and can bring down the perceived value of the art. Using the wider frame on the right the overall size is still smaller than it may have been with a typical mat border width, but it helps make the art look more interesting and important. Framing Tip #3 - Use Conservation Grade Glass or Acrylic The design on the left shows this framed art in its orginal state. Due to damage from ultra-violet lighting (either sun or artificial light) the art and mat faded to look we see at the right. Conservation grade glazing protects from most of the harmful light rays. By investing a bit more in protective glazing, you will maintain the integrity of your framed art and increase its longevity. Framing Tip #4 - The Shape of the Moulding Profile can Relate to the Art The rounded shape of the frame moulding on the left relates to the round ladybug, as well as all the spots on the bug. The three square profiles stacked together to frame the art on the right tie to the pre-dominantly square shapes the artist used. Framing Tip #5 - Handle Acrylic with Care! The surface of most acrylic is highly susceptible to scratches and scuff marks. You can help protect its appearance by using nonabrasive cleaners made for acrylic and soft clothes instead of paper. Also, use a feather duster, or even better, compressed air from a spray can, to remove the dust particles. Framing Tip #6 - The Layers of a Double or Triple Mat Can ALL Be The Same Colour Many people just assume if there are multiple layers of matting used, each layer needs to be a different color. Actually, using the same colour for all layers can simplify the design and keep attention focused on the art.

Cool down your home by adding new blinds During warm summer months, you may be spending a lot on cooling costs. Lions Club members conduct Lions day of service The Wasaga Beach Lions Club served the community by cleaning up a km of road from Schooner Town Park going eastbound as part of the Lions Day of Service. This project is a benefit to the community because it cleans up 1 km of road for our residents and a welcoming view for tourists. The clubs cleans this section of the road twice a year. According to Lion President Janice Campbell “Genuine service to people in our communities is the foundation of what Lions Clubs do. The Wasaga Beach Lions Club, along with Lions Clubs from across Ontario, is proud to be part of this event. The Lions members thank everyone who contributed to this important work. Steps towards independance The Nancy Island Lions Club of Wasaga Beach organized the Purina Walk for Dog Guides. Lions Foundation of Canada Dog Guides is a national charitable foundation that was created by the Lions of Canada. Its mission is to assist Canadians with a medical or physical disability by providing them Dog Guides at no cost. Since 1983, Lions Foundation of Canada has been providing specially trained Dog Guides to men, women and children from coast to coast. In addition to training Dog Guides for people who are blind or visually impaired, Dog Guides are also trained to meet the needs of Canadians with hearing, medical and physical disabilities, epilepsy, autism and type 1 diabetes. Hypnosis can be a powerful life-changing tool. The human mind functions on at least two levels of awareness; the conscious and the sub-conscious. These two levels of awareness are complimentary and operate simultaneously. The conscious, analytical mind acts as a filter for incoming information. The sub-conscious mind has limited reasoning capabilities; it believes what it is told and proceeds to act upon this information as though it were true. During hypnosis, the conscious mind’s filtering chatter is temporarily rendered inactive, and the client’s desired suggestions are given directly to the sub-conscious. This bypasses the conscious mind’s critical faculty (its ability to accept or reject information) and registers directly upon the sub-conscious mind as “the truth”. Believing the concept or idea, the subconscious mind then reacts automatically in thought and action to manifest your desires. Hypnosis can be used in many facets of life, and is particularly effective for the following: behaviour modification, weight reduction, smoking cessation, stress reduction, etc. Hypnosis utilizes the process of quieting the mind, then implanting positive suggestions into the subconscious mind during this “trance” state. The combination of relaxation and suggestion is what makes hypnosis such a powerful tool. By calming the mind, then instilling positive suggestions, you can improve your performance, control addictions, decrease stress, eliminate unwanted habits or behaviours, and generally improve the quality of your life, safely and effectively.

Spectacular turn out! Mountain View School held its 3rd Annual Spring Spectacular on Saturday May 3rd.
