Bowling is fun in your SPARE time Georgian Bowl hosted their YBC! Banquet on May 8th at the Duntroon Hall. I personally attended as my daughter Autumn has been bowling all season and loving it! There was a fantastic spread of food (mostly potluck) and bowling in the basement. Father’s Day June 21st 2015 Enjoy all this at our breath-taking, beautiful restored Station on the Green located at 27 Harbour Street West,
Parents, Grandparents, friends & the community at large turned out in droves to support the school and enjoy the spectacular venue at the beautiful Georgian Bay Club on May 20th. After a full day of sun, the golfers and gala guests were treated to a wonderful meal, shopping at the silent and live auctions, and some incredible entertainment. Big Blue Air whisked away some lucky raffle winners for a scenic helicopter tour just before dinner. Take off and landing were just outside the clubhouse as guests looked on. Olympian and Pretty River Academy graduate Larisa Yurkiw was the guest speaker. P.R.A.’s own music teacher Shane Cloutier and his band provided the musical entertainment. He was joined on stage by P.R.A. parent Margo Timmins, lead singer of Cowboy Junkies, and recent inductee to the Canadian Music Hall of Fame. My name is Pamela Quirk My mom worked in the RNA program at Collingwood General and Marine Hospital for 10 years so it was a part of my life from childhood. When my father was admitted to the hospital 4 years ago with a heart attack; it was a life and death situation for him. Collingwood General and Marine Hospital provided excellent care and he was given his life back. It was my catalyst to support an organization that meant so much to me. Giving was so easy – I consulted with an insurance specialist, took out a policy that cost me less than my annual typical donation. Over ten years, I will have this policy paid off and it hasn’t impacted my life at all. However, the financial implications to the Hospital are tremendous and will result in a significantly higher gift. Since my parents as well as brother and his family still live in Collingwood and I enjoy coming up here, I wanted to keep the support in this community. I am also very confident in the Foundation’s use of my money. They are excellent stewards and custodians of my support. Fashionistas hit the runway The 2015 ladies luncheon and fashion show was held on May 12th at Cranberry’s Bear Estate. OslerBrook’s first annual Mother’s Day brunch turned out to be a big hit with our members, their guests and families. The setting overlooking Georgian Bay enhanced the celebration of mom. Chef Brandi, presented a full array of delicious brunch items including all the breakfast treats; from fluffy buttermilk pancakes, bacon, sausage and frittatas to our ‘made for you’ omelette stations. The Wasaga Beach Cruisers On a sunny Victoria Day, the Wasaga Beach Cruisers club met at the Stonebridge Music Pavilion, and what a scene with the classic cars and Stonebridge as a backdrop. The Wasaga Beach Cruisers are a fundraising group that shows antique, classic, and modified cars on a regular basis and hold an annual show in June called The Fun Run, with 400-500 cars. Have you ever tasted REAL Balsamic? The unfortunate answer is that most have not. That tangy salad dressing, that delicate drizzle over meats and veggies, was more than likely what the Italians call Aceto Balsamico di Modena, a commercial reproduction of the much coveted Aceto Balsamico Tradizionale di Modena. Similar wording, but the difference is paramount. The generic reproduction, the “Balsamic of Modena”, takes as little as two months to produce, or up to 3 years if the label boasts “aged”, and often contains additives such as caramel colouring, sweeteners and thickening agents, such as guar gum, to give it a feel and taste similar to it’s older cousin. On the other hand, real, Traditional Balsamic of Modena is produced by only one consortium in Modena, Italy. It starts with the juice of crushed Trebbiano grapes, as opposed to a wine, typical of vinegar production. The juice is cooked into a thick syrup, then aged through a series of wooden barrels, where the sweet and and sour notes of the grape juice blend with the flavours of the various woods, and yeast ferments the syrup first into alcohol, then to vinegar. The sweetness is preserved throughout. Traditional balsamic is regulated by the same Protected Designation of Origin standards that are used for regulation of wines, and is only sold in 3 oz. bottles with colour coded caps to indicate its age (minimum 12 years, to 25 years or older). They are sold for upwards of $100 per bottle. It is used incredibly sparingly, with unrivaled complexity and depth of flavour. So what is a balsamic enthusiast to do, when what is readily available isn’t real, and what is real isn’t readily available? Luckily, between these two, there is a third, intermediate standard; Condimento Balsamic. Condimento balsamics are less regulated than the Traditional Balsamic of Modena, but, if you find a trusted supplier, they can be of equal quality for a fraction of the cost. With a slight difference in process, condimento balsamic production nearly mirrors that of traditional balsamic, but without consortium approval, they are significantly less expensive. Make sure the balsamic is at least 12 years old, was aged in wooden barrels, and doesn’t contain any of the additives typically found in lower grade balsamic, such as caramel colouring.

Business Profile: Boston Pizza “Here to make you happy” Alex and Sandy Smardenka are very humble about the success of their Boston Pizza restaurants in Collingwood and Wasaga Beach. They would rather give credit to their staff. Alex started in the restaurant business at the age of 12 by working as a dishwasher in his father’s restaurant. He later enrolled in the Hotel and Restaurant Management program at Ryerson. After graduation, Alex joined Wendy’s International where he was awarded Manager of the Year. Sandy was a Banker for twentyseven years prior to becoming involved in the food service industry. Both Alex and Sandy had vacationed in The Georgian Triangle area when they were living in Toronto. It was their dream to one day move to Wasaga Beach. In their Boston Pizza restaurants Sandy looks after promotions, meeting and greeting patrons, administration and volunteer work. Alex takes care of the day to day operations. Boston Pizza Collingwood was established in 1986 and Wasaga Beach Boston Pizza was opened in 1988. The Smardenkas chose the Georgian Triangle to live and to work in because of the beautiful year round recreational opportunities and the friendly people. The small town atmosphere allows Sandy and Alex the opportunity to get involved in their communities. Alex is a member of The Wasaga Beach Rotary Club and Sandy belongs to The Wasaga Beach Lions Club. Coming on June 10 is The Heart and Stroke - Big Bike Fundraiser which starts at Boston Pizza in Wasaga Beach’s Stonebridge Centre. Sandy said that this entire

community fundraising event was championed by key staff members at BP who will be riding the Big Bike and raising donations along with members of the community. Both Boston Pizza Restaurants employ 50-100 staff members depending on the season. Alex and Sandy enjoy inspiring and empowering their staff to become the very best they can be. Some staff members have been on the BP team since the first day of opening; that is dedicated staff loyalty. The Smardenkas have hired several people who are disabled or mentally challenged to also work with them in the restaurants. Sandy has assisted a large number of organizations to raise funds for their not-for-profit groups. Both Alex and Sandy were inspired and motivated by their parents to work hard, save their money and set worthwhile goals. The Smardenkas are very proud of their sons Tino, Phil and Chris who also work in the family business. They have instilled the same strong values and work ethics in their boys. Without their sons’ support and commitment to the business, the Smardenkas could not have accomplished their lofty goals. Every Sunday night the boys and their families gather at the Smardenka home to enjoy Mom’s home cooking. When asked about receiving The Wasaga Beach Chamber of Commerce’s “Business of the Year Award” for 2015, both Alex and Sandy said that it is an honour and a privilege to have such a dedicated and focused staff, loyal customers and a wonderful community to serve.

From blank to beautiful in 20 minutes Thanks to the tireless efforts of Andrea Rinaldo, Karen Bogo and organizers, Art Battle Canada returned for another exciting night of live competitive painting at the Eddie Bush Memorial Arena on May 23rd. Not for the faint of heart these “12 local artists showed tremendous talent and courage, taking their canvases from blank to beautiful in just 20 minutes.” The competition consisted of two rounds of six artists and a final round of four with the audience voting democratically for their favourite painting at the end of each round. These amazingly creative artists gave it their all and were equal to the challenge but as in all battles one ultimately emerges victorious and as it is said “to the victor go the spoils”. Congratulations Jason Alexander as Champion d’Art Collingwood Art Battle 2015 and best of luck in the ensuing competitions leading to the national championship. Represent us well! Stayner’s Chamber of Commerce annual President’s Black and White Ball Over 100 people gathered together in their finest to honour the businesses in town and the dedicated, hard-working people who run and work in them. Re-Framing Hand-Me-Down-Art The concept of ‘hand-me-down’ is not new. Whether it’s an older sibling’s clothes finding their way onto the backs of their younger kin or an outrageously heavy tube television heading to a college dorm room in favour of a shiny new flat screen, objects everywhere seem to bridge the generation gap. Unfortunately, this phenomenon has not been embraced with the same vigour in the framed picture category. For some reason, Grandma’s kitchen table is more desirable than her beautifully framed needlepoint. Finally, there is an answer to this dilemma. Framed pictures – be it artwork or photographs - need to be re-designed. A timeless photo, needlepoint, oil painting, even vintage poster, needs to become desirable for the younger generation. Of course, updating the framing and matting is easy, and the finished product will have added intrinsic value that only a piece of this nature could provide. With many baby boomers beginning to consider downsizing their homes, they will undoubtedly soon be ready to part with some of the wall decor that they have accumulated over the years. David Margesson on Wine Take time for Cheese With Wine - A Marriage Made In Heaven! The pairing of food with a complementary wine is a real treat and is successful when the flavours of both are enhanced. We will be discussing only the matching of cheese with wine in this article. Do try to match both the next time you are entertaining. The enjoyment and taste sensation that you and your guests experience will be well worth the effort. There are a few thoughts to consider for a successful pairing: When choosing only one wine to go with a plate of mixed cheeses, I would suggest only 1 of 3 different varietals. A) A sparkling wine. Consider a Segura Viudas from Spain at $14.45 LCBO # 216960. A delicious sparkler that goes well with most cheeses. Champagne and Sparkling wines from dry to sweet have ample acidity and toasty, nutty flavours to complement cheeses from fresh through aged. Sparkling wines can also be enjoyed throughout a complete meal. B) Another great choice is an off dry Riesling. There are good choices from Cave Springs or Henry of Pelham in Niagara. Riesling is great because its acidity, sweetness, tropical fruits and minerally background allows it to partner broadly. Riesling can even be enjoyed with beef or lamb. C) Also consider a Gewurztraminer. It is dry with delicate body but its floral aromas will mix beautifully with the savoury notes of almost all cheeses. Generally, mild cheeses go well with Chardonnay and Riesling. Medium cheeses with young Pinot Noir. Hardy and ripe cheeses with mature Cabernet Sauvignon, Shiraz, Port etc.
Ripe, creamy cheeses like Camembert and Brie also go well with rich, buttery Chardonnay. Cheddars and similar sharp English cheeses go well with dry reds such as Cabernet Sauvignon. Swiss and Gruyere go well with Pinot Noir. Blue Cheese works well with dry reds, very dry sherry etc. Avoid tannic reds with these cheeses. Hard cheeses like Parmesan Reggiano and Romano go really well with dry Italian Reds including Chianti, Barolo, Ripasso and Amarone.

Crime Stoppers A local charitable fund raising event was held on May 2nd at the Wasaga Beach RecPlex for Crime Stoppers, who partnered with Shred North Ltd. to invite individuals and businesses to have the opportunity to have personal/confidential documents professionally, and safely shredded. Identity theft is one of the fastest growing crimes, and can take years to fully recover from. Crime Stoppers raised $700 to support the tip line 1 800 8477. Energy-Efficiency with Ceiling Fans Although ceiling fans cannot contribute directly to savings on lighting energy costs, they can contribute significantly to savings on electrical costs associated with space heating and cooling. Household electrical costs associated with space heating and cooling are in the range of 35-45%. Using a ceiling fan can help to cool our homes in summer, and helps to more efficiently distribute heated air in winter. Although it’s difficult to place an exact savings amount related to the use of ceiling fans, it’s an established fact that ceiling fans can help to reduce electrical costs by creating greater efficiency in how we heat and cool our home environments. For instance, during the summer months, a fan can make the room feel as much as eight degrees cooler, reducing the need to run the air conditioning. Many people find that it’s often more comfortable to turn off the air-conditioner at night, and use a ceiling fan at low speed in the bedroom. During the colder months fans can improve a home’s heating efficiency by circulating the pocket of warmer air that otherwise rises to the ceiling. Many ceiling fans now carry an Energy Star rating with improved motor and blade designs that require less energy to run than conventional fan/light units. This can save you an additional $15 to $20 per year on utility bills, plus any additional air conditioning or heating savings gained when the fan is operated properly. Clearview’s 4th Annual Mental Health Walk The walk was held on May 7th at 10 am at Stayner Collegiate Institute. The high school students as well as the grade 7-8 students from Clearview’s Elementary Schools were in attendance. The aim of the walk and presentation is to help reduce the stigma of mental health, making our schools and communities a safe place to talk about mental health and seek support. A BBQ party at Parkbridge On May 16th Parkbridge, Lakes of Wasaga Resorts, held their annual Open House Event. Always a fun day for the residents who make Wasaga Beach their RV Cottage destination, but also a great way to introduce new families, future snowbirds and retirees who want to have a place to escape to. There were visitors that waited all winter for this weekend! Back in February, Parkbridge introduced the latest Park Models at the Toronto RV Show. On the long weekend in May, people saw just how easy it is to own and see the Resort for themselves, plus, all the amenities there are to use. And being close to the beach is another bonus! With 1000 hamburgers/hotdogs, up for grabs, everyone was treated to local musical talents, Party Tyme Treats, local vendors and this year the Georgian Life PHOTO•BOOTH. Everyone left with their own photo keepsake. Just recently, Parkbridge, Lakes of Wasaga was voted by Parents magazine one of the top family destinations in Canada. Golfers Elbow Medial epicondylitis is commonly known as golfer’s elbow. This does not mean that only golfers have this condition - the golf swing, however, is a common cause of medial epicondylitis. Many other repetitive activities can also lead to this condition: throwing, chopping wood with an axe, running a chain saw, and using many types of hand tools. Any activities that stress the same forearm muscles can cause symptoms of medial epicondylitis. Golfer’s elbow causes pain that starts on the inside bump of the elbow (the medial epicondyle) and may spread down the forearm. Overuse of the muscles and tendons of the forearm and elbow are the most common reason people develop this impairment. Bending your wrist, twisting your forearm down, or grasping objects can make the pain worse. You may feel less strength when grasping items or squeezing your hand into a fist. In some cases, the symptoms of this condition are due to inflammation of the forearm flexor tendons. For example, inflammation in a tendon is called tendonitis while inflammation around the medial epicondyle is called medial epicondylitis. However, golfer’s elbow often is not caused by inflammation. Rather, it is a problem within the cells of the tendon - doctors call this condition tendonosis. In tendonosis, wear and tear is thought to lead to tissue degeneration. This overuse injury is often treated very successfully with conservative methods, such as:
