hen we took the decision to launch SF Edinburgh upon an unsuspecting city this summer, our aim was to showcase all that life in Scotland’s capital has to offer. Since then, it’s been an exhausting roll-call of restaurant and bar launches, matinees and private views as we have sought out the finest cultural and culinary morsels for your delectation. Jeez, it’s been hard, but then I suppose that someone’s got to do it... The response we’ve had to Issue #1 of SF Edinburgh has been truly staggering and more than a little humbling. Friends, colleagues and casual acquaintances alike have been in touch to

Even for those of us who have lived in Edinburgh for many years, each day has brought a slew of new recommendations or lifted the veil on some hidden corner of this great city. At times the sheer number of suggestions of things to do or see has been daunting, but we’re gradually getting round to those places that we didn’t know and re-acquainting ourselves with others we should visit more often. It’s been a ball, and in the process I hope we’re fulfi lling our primary mission of sharing that information and insight with you, our readers.

A

s my mother, the shortest member of my family, likes to say: the best things come in small packages. It’s a concept shared by the owners of Edinburgh’s former police boxes, the tiniest properties in the city. With a footprint of less than three square metres, you might think there’s not a lot to be done with the 1930s cast iron structures that are dotted about our streets… but you’d be wrong. From coffee stop to graffiti gallery, textiles studio to apple store, a group of creatives and entrepreneurs are breathing new life into the once redundant metal sheds after demand for their original use waned in the 1960 and 1970s. Unique to Edinburgh, the distinctive and compact properties were designed by former city architect Ebenezer MacRae in the early 1930s.

Featuring the city crest and Saltirepatterned mouldings, they were designed to complement the classical architecture of the capital. Used as on-street bases for beat bobbies, the boxes were effectively mini-police stations. Measuring just 1.98 x 1.37 metres, they housed a small desk, telephone and sink, with doocots in the walls for fi ling papers and a light on the top which flashed when the phone rang. One-bar electric fi res, bolted high on the back wall, had little effect in the winter. Former PC David Legge joined Edinburgh City Police in 1972. Stationed in Leith, his fi rst regular beat was from Box 2 at Henderson Gardens. ‘On the night-shift, which was from 9.45pm until 6am, you carried round a battery hand lamp and the beat keys and reference book which gave you access to properties to check the security and contact the owners if something was amiss,’ he remembers.

Each complaint received was recorded in the Box Complaint Book and answered within 14 days ‘On Tuesdays, the stolen car list came out and, armed with this, you had to check your entire beat for dumped, stolen cars. I saw a for sale sign in 2012 and thought, ‘wow, wouldn’t that be amazing to own?’

Constables signed on in the Box Journal, then did half-hourly to hourly turns of the area. ‘All your beat was covered and you knew everything that was happening,’ Legge says. ‘If a property was discovered broken into after you had been on nightshift, you were phoned at your house and roused from your sleep to explain how you missed the crime.’ But with the advent of radio and mobile technology, fewer bobbies on SF EDINBURGH

the traditional beat and the need for a fi xed means of communication with the station diminished, Edinburgh’s tardises gradually fell out of use. The force began selling them off in the 1990s, with Police Scotland putting the last 20 up for sale at the beginning of this year. There was no fi xed price; instead, potential owners submitted a bid along with outline plans of what they wanted to do with the box. ‘I saw a for-sale sign on one in 2012 and thought wow, wouldn’t that be an amazing thing to own? A little piece of history,’ says Monty Roy, who runs her box on Leith Walk as a pop up exhibition venue. ‘It is practically

BOXING CLEVER Designed by Ebenezer MacRae, 85 police boxes were created for Edinburgh and made at the Carron foundry near Falkirk. While the boxes that Gilbert Mackenzie Trench designed for Glasgow were made of pre-cast concrete, Edinburgh’s police boxes were constructed from cast iron. Around half of the slope-roofed structures are listed. During the Second World War special cowlings were designed to cover the roof lights to comply with black-out regulations.

unchanged inside and still has the light on top.’ Roy hopes to host a policerelated exhibition in the box, and is collecting memories of people who were ‘spoken to’ in it in the past. Over in Juniper Green, Ursula Fearn runs Eve’s Apple Shack from the newlypainted green and gold box on Lanark Road, which sells Scottish-grown orchard apples. ‘I want it to become an apple hub for Edinburgh, not just for apple sales but also by promoting planting, grafting and educating on all aspects of and proper care of apples.’ Like many of the current crop of police box owners, Roy and Fearn see themselves as the current custodians of an iconic piece of street furniture.

‘We have varied creative plans for our boxes, but within our collective we are all very keen that these iconic monuments are used to serve their communities again,’ explains Newhaven box owner Johnathan Elders, who heads up a group of Edinburgh police box owners that staged the inaugural Police Box Festival in July, when 10 boxes across the city opened up their boxes to the public with a series of displays and events. ‘We are an eclectic bunch of artisans, very keen to celebrate these boxes and to keep them functioning as part of local communities,’ says Elders. ‘The fi rst festival was a great success and we have some exciting ideas for next year.’

F

or six centuries, from its foundation in the early 1100s, Leith was the principal port of Scotland. With a long and fascinating history and an ongoing regeneration project attracting newbies to the area, the district has a charm all of its own. Far from the desolate urban jungle depicted in Irvine Welsh’s 1980s novel Trainspotting, when unemployment was rife and heroin flooded the streets, Leith has bounced back from its hard times with a flair and resilience that is typical of its community. Traditionally a vibrant centre of industry, the port’s prosperity was built on shipbuilding, whaling and the import and export trades. From the Medieval period, wine was imported into Leith from Bordeaux for the Court,

A cane sugar refining business once employed many, with the sugar house in Breadalbane Street churning out 250 tons of sugar a week in the late 1800s. A glass bottle maker prospered SF EDINBURGH

Big moments in Leith’s past As the major port serving Edinburgh, Leith has been the setting for many significant events in Scottish history. Mary of Guise ruled Scotland from Leith in 1560 while her daughter, Mary, Queen of Scots remained in France. Mary of Guise moved the Scottish Court to the fortified Leith citadel. Leith was the base for James VI of Scotland’s troops when they were fighting his mother’s supporters in Edinburgh Castle from 1571-1573, a period known as ‘the wars between Leith and Edinburgh’. A century later a rampart was erected by the Army of the Covenant between Calton Hill and Leith to defend the northern approach to Edinburgh against Cromwell’s forces. It became the line of one of Edinburgh’s longest streets: Leith Walk. The world’s first Open Golf Competition was held on Leith Links – where Mary, Queen of Scots often played golf – in 1744. The Gentlemen Golfers of Edinburgh, who now play at Muirfield, compiled the game’s first known rules at their Leith Links clubhouse before passing them to the R&A.

for the best part of two centuries and rope making and flour milling also had their day. But it’s the people that have always made the place sing, from the ship builders and hardy dockers of yesteryear to fifth generation Leithers, young professionals and the artistic community it plays home to today. Mary Moriarty was a fixture behind the Port O’Leith bar for a quarter of a century until she retired in 2009. Awarded the British Empire Medal last year for services to the community, Moriarty had only intended staying three years when she took the reins at the Constitution Street pub in 1984. But plans to move to America were put on hold, and over three decades later, the 76-year-old says she’s here to stay. ‘I thought at the end of three years I would go to America, but fate stepped in,’ Moriarty says. ‘I got involved with lots of things in Leith. There’s a very great community here. Sometimes I think about the Californian sunshine, I wouldn’t mind a bit of that. But I have no regrets at all.’

Sunshine on Leith Dubbed the ‘Scottish Mamma Mia’, Sunshine on Leith,, released in 2013, transported Edinburgh’s port district to cinemas all over the world. Trainspotting producer Andrew Macdonald helped create this contemporary musical which gave Edinburghers a sense of pride in their home town. In addition to capturing some of the city’s most iconic landscapes, the film also perfectly illustrated the community spirit of Leith. Based around 13 Proclaimers songs, Craig and Charlie Reid saw the popularity of their music soar as a result.

meant that a lot of artists who didn’t have much money were able to find display spaces and that really brought great life to our part of Leith.’ Today the arts are celebrated each summer with the Leith Festival, the biggest community festival in Scotland, when Leithers come together to showcase the town and its talents in a week-long celebration which starts with a Gala Day and Pageant and finishes with the Festival Tattoo. Staged in its current guise for the last 20 years, the festival’s roots actually go back to 1907, when Leithers, doing

became its own borough, entirely separate from Edinburgh. With its own council, town hall and magistrates, it even had different licensing laws, which put The Boundary Bar in an interesting position – in more ways than one. Straddling the line between the two burghs, the pub operated through two doors so punters could leave the Edinburgh side when it closed at 9.30pm, coming straight back in the Leith entrance to carry on drinking. Leith and Edinburgh amalgamated in 1920, despite the Leithers voting overwhelmingly to remain a separate entity. ‘Leith was very self contained at that point,’ Delicata explains. ‘It thought about its own community and it still does have that mentality. It’s very people orientated.’ Hibernian Football Club represents another large part of the area’s

Sometimes I think about the Californian sunshine, but I have no regrets at all what they do best, came together to help their own. ‘It started in the pre NHS days when the poor people of Leith couldn’t afford medical treatment,’ explains festival director Tony Delicata. ‘They created this pageant which proceeded down Leith Walk collecting money so the poor could get treatment at Leith Hospital. ‘Leithers have always had sunshine on Leith,’ Delicata adds. ‘It’s a place with such a strong identity.’ That stems back to 1833 when Leith

Fun facts Rose’s Lime juice – This citrus cordial, which originally comes from Commercial Street in Leith, was designed in the 1700s to give sailors their daily intake of vitamin C to help them avoid scurvy. Whaling – From the 1600s-1800’s whaling boats set out from Leith for Greenland and the Antarctic. Whale oil was highly sought after by soap manufacturers. Christian Salvesen’s whaling ships brought the first penguins back to Leith and donated them to Edinburgh Zoo, which became the first zoo in the world to house and breed these popular birds. Mela Festival – For 20 years, Leith Links has played host to this multicultural festival (‘Mela’ means ‘gathering’ in Sanskrit) which attracts 25,000 people in September.

Leith was very self contained at that point. It thought about its own community and it still does as the Famous Five, each scored more than 100 goals for the club, with Hibs winning the league three times between 1948-52. ‘Hibs are a big part of Leith,’ Delicata says. ‘They’ve recently launched a new community department which is nice because it makes them more touchable.’ Following decades of industrial decline, slum clearances and the resulting depopulation in the post-war era, the recent upturn in Leith’s fortunes can be traced back to the late 1980s, when old industrial sites were developed into affordable housing and small business units cropped up. A concerted regeneration project followed, and residents are finally beginning to see a built and functioning Leith fitting of its community and heritage. Now home to a vibrant hub of waterside bars and restaurants, two of which are Michelin starred, the prestigious Royal Yacht Britannia is permanently berthed at Ocean Terminal. A growing, richly diverse population, the means that the port is enjoying a sparkling revival – although there’s still plenty of room for improvement; ‘I hope they continue with it’, Moriarty says. A day in the life of... King’s Theatre resident dame Allan Stewart has been playing to Edinburgh audiences for a quarter of a century WORDS BY AL L AN S T EWART

I

’ve been fortunate enough to work in theatres around the country and in all honesty the best audiences are in Edinburgh and Glasgow. London are the worst. I did my first panto at the King’s Theatre in ‘89. On a two-show day I get up at 9.30 and have a toasted roll with butter and raspberry jam. It must be my favourite jam or my day is ruined. I arrive in the theatre 45 minutes before curtain-up and leave my make-up to the last minute – usually my dresser Maggie is shouting on me to get ready. Before we go on stage Andy and Grant, my long-term castmates, and I hug and give a loud yell. If we forget to do it we panic. When I played the Fairy Godmother in Cinderella I entered flying in on a moon. A big cheer went up and I said ‘hello

Eighteen costume changes becomes a bit tiring, but that’s show business boys and girls’ and then went completely blank. I laughed and said ‘oh I’ve forgotten my words’ and the audience laughed and I still drew a blank. Eventually Andy screamed the line from the side. They didn’t let me forget that in a hurry. The worst part of being a dame is the costume changes. By the time you get to show 60, 18 changes becomes a bit tiring. But hey ho, that’s showbiz. Two shows a day is a lot but we have so much fun. It’s never the same, the audiences make it different. All in all, unless the dreaded cold or flu kicks in, it’s a joy and I’ll carry on as long as the audience let me.

21212 With his flamboyance and idiosyncratic take on molecular gastronomy, chef Paul Kitching is the enfant terrible of the Edinburgh restaurant scene. His quirky, playful food is not the usual fodder so he tends to be a bit Marmite – you love it or hate it, but are never indifferent – but of the 750 restaurants I’ve reviewed over 15 years, I’ve only given two 10/10 rating and this was one. The funky decor in this gorgeous Georgian town house also sets it apart. Five courses £70 (with paired wines £125).

Number One at The Balmoral Arguably the most understated (and, I’d argue, underrated) of Edinburgh’s five Michelin-starred restaurants, Number One has had a sumptuous overhaul and now boasts red walls and achingly contemporary decor. The influence of young head chef Brian Grigor has also been positive – he handles Scottish produce with great creativity: nobody cooks game better and his Balvenie-smoked salmon is a thing of beauty. Restaurant Martin Wishart Ah, the grand daddy of them all – the restaurant which set Leith on its way to becoming the finest concentration of culinary genius in Britain outside central London. Wishart’s temple to gastronomy can come across as a bit starchy, but you undeniably feel like you’re in a restaurant where food isn’t just taken seriously but utterly revered. There’s a palpable sense of occasion and decorum to eating here, with a superbly nuanced French-influenced menu that toys with your tastebuds. His failure to achieve a second star remains a mystery. Tasting menu £80 (£135 with paired wines).

The Pompadour The grand dame of Edinburgh fine dining, the Waldorf-Astoria Caledonian Hotel’s restaurant is the only venue on this list without a Michelin star, but it is run by the Galvin brothers, who already possess a star each, and is so clearly set up to operate at the top level that it’s worthy of inclusion. Head chef Fraser Allen is charged with producing the sort of cuisine needed to grace this A-listed fin de siecle salon, with its ornate cornicing, handpainted panels and stunning views of the Castle. The menu is classical French – crisp and timeless, with the signature dish of lobster lasagne a winner – and the environment is memorably opulent. The tasting menu is £68 (£120 with paired wines).

Castle Terrace This is the stealth bomber of Edinburgh’s Michelin-starred restaurants, a top-of-the-range eaterie which has a quiet confidence and doesn’t feel the need to shout about its manifest achievements. Leith Chop House 102 Constitution Street, Leith

Just a short stroll from Casa Bano, this new 40-seater steakhouse just off Leith Links reminds me of the phenomenally successful Butchershop Bar & Grill in Glasgow’s West End and is yet another great addition to this thriving area. The space that was once the defunct Leith Lynx restaurant has been imaginatively refurbished and substantially expanded, and now includes an inviting bar area that serves craft beers and features a War & Peace-sized cocktail menu. Stripped wooden floors and on-trend little white fishmonger-style tiles make for the sort of functional yet contemporary decor you’d expect from the team responsible for Edinburgh institutions such as Sygn, Monteiths and The West Room. Although there is a supporting cast of starters (the ale-glazed ribs are none too shoddy) and mains, the star attraction is undoubtedly a list of steaks which climaxes with rarefied cuts of porterhouse, chateaubriand and wagyu. Head chef Brian McConnachie heads a team that uses Scottish steaks that have been dry-aged on site using Himalayan salts for a minimum of 35 days before being cooked over an open flame charcoal grill (the Chop House claims to be the first restaurant in Britain to have its own dry-ageing fridge). Anywhere that serves bone marrow gravy gets this carnivore’s vote, although if the bum-tingling heated banquette was a bit of a surprise, so was a wonderfully varied and extraordinarily chunky wine list whose only omission was a red under £19. Still, that’s a minor detail – it may not have been cheap, but this was a thoroughly enjoyable meal in a venue that has all the ingredients to become a long-term Leith resident. Checkpoint 3 Bristo Place Serving food from 9.30am until midnight requires a varied menu at this new restaurant and bar. Starter-sized salads came in annoying metal bowls making my charred gem lettuce with deliciously crisp whitebait tricky to eat. The shrimp and cockle tagliatelle was good enough to necessitate an emergency bread order to soak up its rich remains. My burger was perfectly cooked, but came slathered in ketchup and on a burnt bun. But all was forgiven while enjoying the sweet and sticky banana tarte tatin – a triumphant finale. Many have lived a lifetime in Edinburgh completely unaware of the cold war relic that lies 100ft under Corstophine Hill. Built for the RAF in 1952, Barnton Quarry Bunker was the Sector Operations Centre tasked with co-ordinating fighter command response in the event of intrusion by Russian nuclear bombers into UK airspace. In 1960 the bunker was taken over by the Scottish Office who converted it into an underground office capable of holding 400 government staff in the aftermath of nuclear attack. Disused latterly, the bunker fell victim to vandals, thieves and fire in the early 90s and lay in a sorry state until a hardy team of volunteers, backed financially by the owner of Scotland’s Secret Bunker in Fife, set about restoring the bunker to its former glory, with the aim of reopening it as a museum and interactive learning experience in 2019.

wanted to do something happy and not too uber restrained,’ explains interior designer Jessica Buckley as she shows me around her striking New Town apartment, which manages to be vibrant, calming and functional all at the same time. Influenced by the colourful homes of her childhood, as well as a memorable internship with American designer Diane Bergeron in Australia – ‘She has the most wonderful style that’s not afraid of pattern and colour’ – Buckley embarked on a six-month transformation of her once bland apartment. She chose to live in it for a year to figure out how best to use the space. Switching the kitchen to where the second bedroom once was at the front of the house meant the heart of the home is now flooded with natural light, while bold colours and designer textiles

An eclectic mix of carefully chosen furnishings complete the look. ‘The whole house is a real mish-mash between arms and legs expensive stuff with things from the high street and hand me downs,’ Buckley says. ‘I think it gives a much more interesting result if you’ve got a mix, rather than everything straight off the peg.’ Offering free consultations, Buckley designs interiors reflecting her clients’ personalities and lifestyle, from the finishing touches in one room to a complete internal overhaul.

am checking out a pedal bike with unfeasibly wide tyres that’s propped against the counter in Howie Nicholsby’s Edinburgh store when the man himself bounds in. It would be fairly conspicuous in most city boutiques, but in Nicholsby’s Thistle Street shop, which features quirky kilts hanging from copper piping, it hardly stands out. The designer has come straight from a morning’s cycling with his young son, but there’s not a stitch of lycra in sight. Instead Nicholsby is sporting a plain, lightweight kilt with incorporated reflective strips. He always wears a kilt, has done for the last decade. ‘I don’t own jeans or a suit,’ he says. ‘I’ve got an old kilt I can barbecue in and I even incorporate a kilt into fancy dress...’ And with that he excitedly launches into a description of his planned zombie get-up for a halloween party. Despite considering himself a ‘designer by default’ – he dreamt up the concept and launched 21st Century Kilts in 1996 – Nicholsby has dressed everyone who’s anyone, including Robbie Williams and Vin Diesel. Having grown up in the industry – his parents own Geoffrey the

Tailor Kiltmakers on the Royal Mile – Nicholsby decided aged 18 that he would offer a contemporary twist on the classic kilt, giving men around the world a realistic alternative to trousers. The concept has been embraced by some – like the Swiss foot surgeon who has bought 22 kilts from Nicholsby in the last five years, and wears them every weekend – while many others want a traditional but bespoke tartan kilt with a modern twist. ‘Even though I’m known for pvc and leather kilts, I’d say over 50%

‘Kilts don’t have to be formal wear worn with shiny buttons’ of my clients still have a hand-stitched tartan,’ he says. Already known the world over for his quirky kilts, Nicholsby is striving for more. ‘I always knew that it would be an uphill struggle for people to realise that kilts don’t have to be only formal wear worn with shiny buttons from the Victorian era and furry sporrans,’ he concedes. ‘It’s a continuing journey.’

Home report A look at movements in the city’s housing market reveals Edinburgh continues to see above average growth in values

The average price of a two-bedroom flat in Portobello and Joppa has risen by more than 16% in the last year. In the third quarter from July to September this year, two bedroom flats in Portobello/Joppa sold for £185,846 compared to £159,898 in July to September 2014.

My Edinburgh The Traverse Theatre’s artistic director says her walk to work through the heart of the city is deeply inspiring WORDS BY ORLA O ’LO UG H L I N

The Traverse Theatre was founded in 1963. It is known the world over and my job is to fi ll it with wonderful new work. It’s a mixture of commissioning projects that we produce, so working with writers that excite us and that we think have something to say, and also programming visiting work. Edinburgh is the city of festivals. Last year we hosted nine festivals just at the Traverse alone and I’m sure we’ll top that this year. I absolutely love Edinburgh. I live in the West End which is the perfect location because I can walk to work in 15 minutes, I can get my kids to school in that time or I can be on a train or at the airport. You’ll always see me walking in one of those directions.

I’m struck by the beauty and grandeur and the fact you can see so much sky My walk to work is a deeply inspiring one because it takes me right though the heart of the city. Every day I’m awestruck by the beauty and grandeur of the architecture and the fact you can see so much sky. You’re at the top of a hill, you can see the Firth of Forth, there’s so much variety. It really is a phenomenal city. There’s a real loyalty from our Edinburgh-based audiences who understand we’re not just for August, we’re for life. They support us all year round; we feel very championed by them. Edinburgh audiences expect to be challenged and provoked in some way. They expect the work not only to be quality but to be challenging them, whether that be politically, socially, emotionally or intellectually.
