ne of the most remarkable changes in Edinburgh over the past thirty years has not been the cultural renaissance spearheaded by the Festival, but the incredible culinary change that has overcome the capital. Anyone as super-annuated as me can remember when, if you were hungry past nine o’clock in the evening, it was Ciao Roma or nowt. Sure there were some eateries that linger long in the memory – the thought of split prawn linguine at The Patio still makes me go weak at the knees – but the Edinburgh of 2017, where the city has more Michelin stars per citizen than London, was not one any of us could conceive in the Nineties. sfe11 Cover final.indd 1

‘Edinburgh has more Michelin stars per head of population than London’ Yet there is no sign of a slowdown in the improvement of our restaurants. In each issue we profi le six of the city’s best new restaurants, but there are also many more we don’t have space to review. At every level – from fi ne dining to the most humble dim sum shack or pub – the quality and quantity improves apace. Yes, the Festival moves me and makes me proud, but it is the explosion in our food culture that sustains me all year round and reminds me how lucky I am to live in such a fantastic city.

rom March to October 1597 the whole of Scotland took part in a nationwide witch hunt. Driven by fear and distrust, villagers turned on each other and any man or woman deemed a little odd was imprisoned and put on trial for witchcraft and
A third of the estimated 4,000 men and women tried for witchcraft in Scotland came from the Lothians sorcery. Encouraged by King James VI – who the previous year had published a booklet called Daemonologie which focused on black magic and witches, also touching on werewolves and vampires – the witch hunt ravaged Scotland. William Shakespeare was inspired by the king’s writings and his involvement with witch hunts when writing his play Macbeth. Scotland’s obsession with witches began after King James became embroiled in a trial in Copenhagen when he visited in 1589 to collect his bride to be, Anne of Denmark. Their return fleet had been struck by stormy weather and they were forced to spend several days in Norway. The Mayor of Copenhagen’s wife was blamed for causing the storm and after a trial she and one other were burned. Troubled by what he had seen in Denmark, James quickly set about hunting down witches in North Berwick, where their boat landed, who may also have been involved. 10 |

Daemonologie Shortly after their safe return to Scotland, more than 100 witches were arrested and many confessed to practicing black magic and being in cahoots with the devil. One of the accused, Agnes Sampson from Humbie, was made to wear the ‘witch’s bridle’, an iron mask with sharp prongs that protruded into her face and mouth, until she confessed. Another, Dr John Fian, had his fingernails extracted and pilliwinks or thumbscrews applied, as well as a number of other unspeakable contraptions intended to cause extreme pain and disfigurement. Both Sampson and Fian were burned in front of a crowd on Castlehill. The Survey of Scottish Witchcraft estimates that almost 4,000 people were accused, of which over two thirds were executed, between 1563 and 1736 when the Witchcraft Act was enforced. The majority of these were women, most often aged between 50 and 60 who, considering age expectancy was much lower in the 16th and 17th centuries, would have been community elders. 32%, by far the majority of them women, came from the Lothians and were executed on Castlehill. A major piece of evidence given at trial was the presence of the ‘witch’s mark’. The survey identified 10 professional ‘witch prickers’ working in the Lothian area during the witch hunts who used needles to impale the accused’s skin in order to find the mark. The witches mark would be a patch of skin protected by a magical spell and would not bleed. Others who cashed in on this mass hysteria were ‘witch finders‘, whose sole job was to travel the country, finding and accusing witches. The mass hysteria of these hunts were driven by fear and a belief in a holy and SF EDINBURGH

Published in 1597, Daemonologie is a three book series written by King James VI of Scotland, and later I of England. After the execution of his mother, Mary, Queen of Scots, in 1587 and his involvement in a witch trial in Copenhagen in 1589, it is said King James was plagued by a dark obsession. In these books King James makes arguments and comparisons between sorcery, magic and witchcraft, identifying several different types of evil spirits and spectres. Daemonologie endorses and encourages the practice of witch hunting as a method of expelling evil in a Christian society.

moral obligation to rid Scotland of these evil sorcerers. Whilst some of the accused were drowned in the Nor’ Loch, most were strangled or burned. Forced confessions by torture rendered drowning to prove their guilt (after drowning if their body floated they were guilty) obsolete. More people were tried and executed on Castlehill than anywhere else in Scotland. A well installed in 1912 on the castle esplanade to commemorate the site of the burnings displays a serpent, a symbol of both the devil and Asclepius, the Greek god of medicine, and a foxglove, which is used as both a medicine and a poison. The Royal Mile hotel, The Witchery, also takes its name from this gory period in history. It is a surprise to many that the last woman to face trial for witchcraft in Scotland was in 1944. Helen Duncan of Callander was a medium whose séance in 1941 revealed the sinking of HMS Barham, an event that had been kept secret from the British public. The 1735 Witchcraft Act was repealed and Duncan was sentenced to nine months imprisonment. She died shortly after her release, at home in Edinburgh. ith the opening of the Union Canal in 1822 and the Caledonian Railway in 1842, Fountainbridge, where both transports terminated, became a hub of industries all wishing to take advantage of this new means of transportation between Edinburgh and Glasgow. In 1856 American industrialist Henry Lee Miller established the North British Rubber Company, today better known as Hunter Boot Ltd, in a twenty acre site by the canal. The company employed thousands of workers who made any

With the outbreak of World War One in 1914 the company took on a lucrative contract with the British government to produce Wellington boots for our military forces. Sean Connery Hollywood actor Sean Connery, most famous for playing James Bond in the first five films, was born at 176 Fountainbridge in August 1930. Though his tenement has long since been demolished, there is a blue plaque close by commemorating the actor’s birthplace. In his teens Connery, who was known as ‘Big Tam’, worked as a co-operative milkman and later as a lifeguard in Portobello. His father Joseph worked at the North British Rubber Mill and his mother Euphemia was a cleaner whose stockings Sean would use to fish in the Union Canal.

Another nearby factory to benefit hugely from the two world wars was Ethicon, a company that made and packaged sterile surgical sutures. Another major company established in Fountainbridge was the McEwan’s Brewery, best known for their 80/-, a heavy beer, and Export, an India pale ale. William McEwan opened the Fountain Brewery in 1856 using

Other large factories in the area included Mackay’s Sweet Works, an iron foundry and the Asa Wass scrap yard. The sudden influx of these factories to the area in the 19th and 20th century caused a corresponding influx of labourers and their families. The tenement housing in this area was considered the worst in Edinburgh and exceedingly overcrowded. In 1964 Labour Prime Minister Harold Wilson visited the

area and expressed his shock, promising to redevelop the area and improve the quality of living. Regeneration followed from the late 1980s – with housing improvements and later additions such as the Fountain Park leisure centre – and continues still to this day. This March a new £125 million development of luxury apartments was announced for a long derelict patch of land by India Quay. The double arched facade of the Edinburgh Meat Market, built in 1884, can still be found opposite Tollcross Primary School. Bulls’ heads adorning the keystone of each archway give a clue to the site’s past life as the city’s first municipal slaughterhouse. The art deco Lothian House at the top of Lothian Road, which initially housed the Inland Revenue Department but now consists of apartments and shops, was previously the location of a port. Closed in 1922, Port Hopetoun was the most easterly
terminus of the Union Canal and was, along with the nearby Hamilton Port, a bustling site handling all canal imports and exports to and from the city. With rail improvements in the 20th century, use of the canal drastically decreased, forcing closure of these basins in the early 1920s. A relief on the facade of Lothian House commemorates the

Engraved reliefs on the cast iron mullions depict a builder, a brewer, a printer and a millworker. British Distillery in nearby Haymarket. Now known as NB, the distillery is Edinburgh’s last working distillery. In June 1896 Usher bequeathed £100,000 to the city with instructions to construct a concert hall but, Usher didn’t live to see it completed in 1914. A day in the life of... Fiona Thorburn, Senior Animal Rescue Officer for the Scottish SPCA, is on hand to rescue the capital’s wildlife when they are injured or in peril WORDS BY M ORAG BO OT L AN D PHOTOGRAPHED BY A NGUS B L AC K B URN

escuing injured deer, badgers and foxes is all in a day’s work for Fiona Thorburn and the four other SSPCA animal rescue officers who work in and around Edinburgh. But it’s often hard to predict what a day’s work will entail in a job this varied. ‘I’ve picked up some very unusual animals in the nine years I’ve been working for the SSPCA,’ says Fiona. ‘I once picked up a stray leopard gecko that someone’s cat had brought into the house, which they found in their hallway when they got up to go to the loo in the middle of the night. I was also called out to assist a lady who opened her drawer while making a cup of tea to find a two foot long king snake curled up on top of her cutlery.’ Over the summer months Fiona’s workload increases with the birth of baby animals across
the city. Rescuing fledgling birds and animals injured on the road, then transporting them to Fishcross SSPCA national wildlife centre near Alloa for rehabilitation takes up the majority of her time. ‘We have a lot of expertise in rehabilitaion,’ says Fiona. ‘One of the country’s leading wildlife vets attends the wildlife centre and every year, as technology improves, so do the outcomes for the animals in our charge.’ Thankfully the prognosis looks good for the owlets pictured opposite, which fell from their nest in Cammo Tower. The baby barn owls were found by a dog walker who called the helpline and Fiona was quickly dispatched to fi nd them huddled together on the ground. With no chance of returning them to their nest safely, they are now being reared at Fishcross until ready for release.

Black Pig & Oyster 82 Commercial St, Leith, EH6 6LX I have a notoriously picky friend – let’s just call him Chris – a foodie whose default position when it comes to grub is a sort of grudging, curmudgeonly passive-aggressive negativity. It is rare that anything is ever good enough. This is particularly the case when it comes to Spanish food given that for the past 30 years he’s spent a sizeable chunk of every summer at the family’s Spanish dacha, and he reckons he makes the meanest paella in Edinburgh, if not the world. Frankly, I can’t think of a worse person to accompany me to a tapas restaurant. Yet there we were – and he was happy. Not just content, but positively effusive about the food at the new sister restaurant to Glenrothes’ fantastic Iberian smokehouse 43 Main Street. The signature dish for Leith’s newest Spanish-themed establishment, which is just a few yards away from The Kitchin, is its pata negra (the ‘black hoof’ of the Iberian pig). A whole traditionally cured ham is carved ostentatiously, but while it is spot-on, it is just one of several excellent tapas dishes. The pincho, blue cheese panacotta, smoked pig, prawn croquettes, and the morcilla and mojo picante (deep-fried black pudding) were all superb, although the patatas bravas were decidedly ordinary. There are a few main courses, such as the surf and turf, but we gave them a sideswerve, as we did with the puddings, which seemed to be British-themed – strawberry tart, chocolate and peanut mousse and the like – rather than resolutely Iberian, as the tapas were. The wine list is tip-top: our Albarino was glorious, if dauntingly expensive. The other thing worth noting about the Black Pig & Oyster is the fetching architecture and decor. Inside the ceiling is all barrel-vaulted brickwork, the floors all wood and slate. On the waterside there’s a glass conservatory for summer days. Ronaq New Waverley, 31 East Market Street, EH8 8FR Having enjoyed lunch in the Comely Bank branch of this Indian restaurant hopes were high for its impressively appointed little sister. The views are fab, the decor is cool and the staff are friendly. We started indecisively with mixed starters. This was nice, but I’m guessing nice isn’t what they’re going for. Our curries fell into the same category and it seems harsh to say that we didn’t enjoy them. Honeycomb & Co 1 Merchiston Place, EH10 4NP On the corner of Merchiston Place, Honeycomb & Co has made itself at home in what was once the local post office. It’s now a bright, cheery place with stylish yellow furnishings. The menu is limited, but full of world flavours. My chicken was well seasoned and salad perfectly dressed. The pulled beef brioche roll was meltingly tender with a subtle BBQ flavour and served with a zesty cucumber salad. Herringbone 2 South Trinity Road, EH5 3NR After the success of its sister restaurant in North Berwick by the same name, this is a welcome addition to Goldenacre. It took quite some time for our order to be taken, and we endured a further wait for our starters which, when they came, were nothing special. Mains followed and although my steak was cooked very rare as ordered my partner was disappointed with his pork belly. Rabble 55a Frederick Street, EH2 1LH Rick’s, the Frederick Street style bar stalwart, has undergone an £800,000 refurbishment to emerge as Rabble, a rough-luxe taphouse and grill. I was a bit unsure about what that was, so was excited if not a little trepidatious about my first visit. Rabble is a restaurant of two halves. The front area is finished in mdf and bare stone with contemporary seating and a large central bar with beer taps connected to a Staropramen beer tank. I now know that it contains unpasteurised beer to keep the fizzy stuff fresh, but for much of my meal I thought it might be some sort of mini copper submarine. Through the back is a conservatory-style glass-roofed garden. Here the decor is lighter and fresher, with cool blue seats, tiled floors and large booths. The menu is packed with slow-cooked, Scottish-sourced delights and when autumn’s grip tightens on the capital I’m heading to Rabble for the 60-hour cooked gunpowder-rubbed beef short rib with mash and gravy. On a sunny summer evening I plumped for a smoked mackerel starter with Stirlingshire crème fraiche. This arrived in a puff of theatre as it was unveiled by the lifting of a smoke-filled glass cloche. Ross’s slow-cooked pig’s cheek starter lasted all of 30 seconds followed by 30 minutes of praise-singing. The spatchcock poussin grilled with lemon, rosemary and roasted new potatoes was deliciously moist and buttery and the grilled cod with confit Jersey royals, samphire, tomato and lemon was meaty and perfectly cooked, if slightly salty. To finish, a shared piece of peanut butter and chocolate tart brought on daggers across the table and forks at dawn. Decadently chocolatey, the smooth and creamy milk ice cream was the perfect accompaniment. The Pantry 2-4 Bridge Rd, Colinton, EH13 0LF This cosy little brunch spot in the south of Edinburgh is the second of two ‘The Pantry’ locations. Having been to neither, my companion and I took in the subtle Scandi décor while we had the first sips of our flat whites. With brunch and all day options available, the menu caters for all. I opted for the spinach and spring onion eggs benedict and my companion had the bacon and blueberry waffles. Both dishes were delicious and perfectly presented. Oriental promise Edinburgh is home to almost 50 Chinese restaurants, virtually all of them offering incredible value for money. Here are six of our favourites...
China Red No less a figure than Marcello Tully – the Michelin starred head chef of Kinloch Lodge on Skye – rates this ‘all you can eat’ joint behind the Usher Hall as one of his six favourite restaurants in Scotland. Don’t be put off by the flashing disco lights at the entrance, and make sure you go to the section where food is cooked in front of you, to your tastes. At £30 for two people, there’s no better value in the capital.

Chop Chop This utilitarian eatery may look pretty spartan, with its strip lighting and lino floor, but it’s rightly famous for its speciality of 18 different fillings of authentic boiled or fried dumplings from the North East of China. There’s far more to Chop Chop though, including the noodles (try the noodles in peanut and mustard sauce), fish (the fiery monkfish is outstanding), salad (my favourite is the glass noodles) and Ga Da soup.
Imperial Palace Out past the Corn Exchange and yards from the Water of Leith, this single-storey red brick building looks more like a warehouse than a restaurant, although the Beijing-esque flourishes give the game away. Inside it’s absurdly busy and packed with folk who know their Char Sui from their Cheung Fun. Stack Dim Sum Bar Taking its cue from the more established Chop Chop, this small but perfectly formed little dim sum bar off Leith Walk looks fairly grotty from the outside, but once inside it is a temple to the appreciation of Chinese dumplings. Unlike some of the other restaurants on this list, virtually everything on offer suits both aficionado and newcomer alike. Most Chinese restaurants have a lot of options for vegetarians, but there are even more than usual here. And it’s also exceptional value.

Saigon Saigon Popular with Edinburgh’s Chinese community, this huge 170-cover gastronomic emporium located just off Princes Street looks at first sight like a tourist hell hole (particularly during the all-you-can-eat lunch). However, it’s not and serves three excellent menus – dim sum, authentic Chinese cuisine (not for the fainthearted) and an a la carte menu that includes all the Western favourites. I always opt for the excellent dim sum, but dishes such as the pork fillet with sliced potato and tea tree mushrooms and the pungent crispy beef with sweet chilli sauce are well worth trying.

China Town Most of the restaurants on this list are relaxed and raucous, but with its pristine white table cloths and sotto voce lighting it’s immediately clear that China Town is a bit more buttoned up and suitable for a special occasion. The food is much more atuned to western appetites, so if you like your Chinese food relentlessly authentic or super-fiery this may not be the place for you. That said, it’s a lovely environment, and particularly suited to those who rarely eat Chinese food. My city garden Nestled behind Beech Lodge, a large mid19th century detached villa on Church Hill, Dr Ayles’ walled garden is a hidden city sanctuary for butterflies, bumble bees and garden birds. A large lawn extends from the back of the house where the family recently hosted their daughter’s wedding reception. Further down the one acre plot a carefully crafted box garden with white
flowers leads to a wildlife pond, filled with water lilies and reeds, with a grassy bridge leading to a doocot and bee hives. Dr Ayles (pictured with his parson terriers Monty and Basil) has spent the last 23 years developing the garden. A
fruitless search for a city centre property with the space for a family prompted Catie and Nick Wearmouth to widen their search area to 15 miles outwith the capital. ‘I was pregnant with our first child,’ says Catie. ‘We wanted a house where all of the rooms were of a good size and just couldn’t find one.’ That’s when they found this traditional, detached Victorian villa in Bo’ness. ‘We loved the layout and space,’ says Catie. ‘All of the rooms are of good size with lovely high ceilings.’ The couple started by moving the dark kitchen from the back of the house into what was the dining room, adding two new windows and a pantry with a door out into SF EDINBURGH

the garden. ‘We knew that the kids would want to play outside and we wanted to be able to keep an eye on them from the windows,’ says Catie. ‘Now we get the sun all day.’ A combination of basic Magnet cabinets with full stave wood worktops and green-toned French Gray walls ensure the room connects with the garden. The upstairs drawing room houses an original marble fireplace and stunning cornicing, just some of many period features that have been retained. ‘This is a grown-up space, where we can work and relax,’ says Catie. And with a family that has grown to three children in the seven years since they moved to Erngath Road, the dark grey, toy free space is a real blessing. A cupola floods the house with light, and despite being advised against installing it, it is now one of the couple’s favourite features. ‘We have a very old building, but we wanted it to reflect us,’ says Catie. ‘We’ve really lived in this house and we’ve loved it.

Glory looms Young Scottish weaver and tweed designer Araminta Campbell is upholding Scottish textile traditions while creating stylish and modern designs

inding a suitable muse for her bespoke tweed designs wasn’t difficult for award-winning artist and weaver Araminta Campbell. Growing up on an estate near Aberdeen, the young Araminta was surrounded by the fabric and the glorious countryside of Royal Deeside. Graduating in embroidery, Araminta set up her own textile business in 2014. She now creates tweed bags, scarves, wraps, blankets and cushions from a studio
The workshop houses two 1960s looms which Araminta uses to hand weave and workshop in The Biscuit Factory in Leith. The workshop houses two 1960s looms which she uses to hand weave one-off scarves and shawls using incredibly soft British alpaca wool in all-natural colours. The tweeds inspired by Deeside are woven in Scottish mills and used to create a range of bags – one of which is owned by Camilla, Duchess of Cornwall – and even dog collars. Guinot Hydradermie Facial Tucked away on Alva Street in the West End, Chamomile Sanctuary does it all. Most customers are regulars who drop by for a quick treatment in their lunch break. I went for a Guinot Hydradermie Facial and after a busy day specified that the result be relaxation and hydration. The treatment room was certainly relaxing, with dimmed lighting and soothing music, and the bed was heated and extremely comfy. My therapist carefully explained the treatment which she had altered to suit my skin. The treatment lasted an hour and ashamedly I admit I fell completely asleep (apparently it happens all the time). White to Brown Spray Tan Feeling a little pale and pasty after a long winter I popped into Zen Lifestyle on Hanover Street for a White to Brown Spray Tan the day before heading off on a beach holiday. White to Brown contains a purple pigment which prevents the ‘tangerine look’ and instead leaves a really natural and golden colour. The session lasted 40 minutes and the process was well explained by the friendly beautician. After application she explained all the dos and dont’s of spray tan aftercare thoroughly, recommending a few tips to make the colour last even longer. ESCAPE TEAM BUILDING
The Great Escape Being locked in a room with your colleagues may be your idea of hell, but at Escape in the New Town your main motivation is to get out as quickly as possible. The SF Edinburgh team took on the Da Vinci room. We were given 60 minutes to solve a series of puzzles with a focus on code breaking, symbolism and association problems in order to open padlocks and find keys, the last one of which would open the door to freedom. As well as escaping from the room our mission was to recover the Holy Grail. Working as a team came more easily than solving some of the clues and I’m pleased to report that we made it out in a very respectable 53 minutes. Go team SF Ed! www.escapeteambuilding.co.uk

Home report An increase in prices means a difficult market for Edinburgh’s first time buyers

The average selling price in east central Scotland between March and May 2017 has increased by 3.3% to £221,522 when compared with the same period last year.

The number of new homes brought to market decreased by 6.7% annually.
An increasing number of properties in Edinburgh are selling for over their home report valuation, potentially making it more difficult for first time buyers to get a foot on the property ladder.

Two bed flats in Leith, The Shore and Granton have shown the largest yearon-year increases in average selling prices in the three months between March and May 2017. This indicates there is a continued demand for the types of property that are popular amongst first time buyers, particularly as we are seeing a decrease in new housing stock.
83.9% of sales met or exceeded their home report valuation over the last three months, and properties that were marketed as ‘offers over’ achieved on average 9.5% over the asking the price. This is up from 7.5% during the same period last year.

THE LAST WORD
My Edinburgh For Sam Heughan, Hollywood heart-throb and star of the hit TV show Outlander, it all started at the Royal Lyceum Theatre WORDS BY SAM HEUG H AN
I went to the Steiner School in Edinburgh; it was very creative and treated each pupil as an individual. I think I learnt self discipline there. I also learned to play a few brass instruments, but not very well.
As a child I lived very near Arthur’s Seat. It was a great playground back then, and now, as an adult, it’s a great wee walk whenever I am home.
My acting career began at the Royal Lyceum Theatre. I joined as a member of the Youth Theatre Arts Scotland (YTAS) when I was at school. I knew the theatre well having attended many performances there through a free ticket scheme they had for preview shows. Working alongside the main shows and the actors there gave me a real insight into the industry and an understanding of the skills required to be a professional actor. It is a wonderful theatre and still holds a great magic for me.

I have so much admiration for sports men and women, their dedication and ability. I love to watch live sports events, particularly rugby – Edinburgh is a great place for rugby and I look forward to the Six Nations every year.
It is a wonderful theatre and still holds great magic for me Filming Outlander has made me more aware of my Scottish ancestry. I realise how lucky I am to come from a country with such a rich history and culture. Scotland is the real star of the show.
Season One of Outlander is now on More4 and Season Three is on Amazon this September.
