ne of the joys of the Festival is that it reminds us all how lucky we are. Friends from out of town may clog up our homes for most of August, but at least they are constantly telling us how nice our homes are. As for everyone for whom beauty is commonplace, it is very easy to take it all for granted. What the annual influx of culture vultures from afar does is make us look anew each year at one of the most spectacular built environments in the world. With that in mind, we’ve decided to devote the lead feature in this issue to architect William Henry Playfair, who died 160 years ago. No-one did more to fashion the unique environment of the New Town and its surroundings than this quintessential

‘Playfair is to the capital what Mackintosh is to Glasgow’ Edinburgh man, who in spirit is to the capital what Charles Rennie Mackintosh or Alexander ‘Greek’ Thomson are to Glasgow. Since we started researching this piece, I’ve taken to looking more closely at my surroundings, and to looking upwards. Playfair’s influence is everywhere – not just in the grand Georgian townhouses, but also in iconic buildings such as Donaldson’s College and the National Gallery. Playfair’s fi ne classical work led to the line that Edinburgh is the Athens of the North, and it’s been a privilege to learn more about this most remarkable man.

dinburgh’s greatest nineteenth century architect once said that ‘nothing good in architecture can be effected without a monstrous expenditure of patience and India rubber’. The man responsible for many of our city’s finest buildings died 160 years ago. This summer a statue of William Playfair by sculptor Sandy Stoddart was erected on the newly redesigned Chambers Street plaza to commemorate his life and significant contribution to the Edinburgh skyline. William Henry Playfair was born in London in 10 |

1790. His Scottish father, architect James Playfair, considered an Edinburgh education was vital in order to become a successful and enlightened man. Scotland had enjoyed almost a century of enlightenment and had led the field in architecture, philosophy, economics, science and medicine. The Playfair family were prolific intellectuals and included mathematician John, engineer William and solicitor Robert – all leading players in the Scottish Enlightenment. Anything short of greatness was never on the cards for William Playfair. In 1794, soon after becoming a qualified architect, Playfair

moved to Edinburgh to start his own practice. Edinburgh’s New Town was nearing completion with the recentlyfinished St Andrew and Charlotte Squares flanking the grid-planned streets celebrating Hanoverian King George III and the 1707 Act of Union. The architectural work of Robert Adam strayed away from Palladian style and marked an epoch in neoclassical architecture. Edinburgh had become a city which visually mirrored its classical thinking, now being regularly referred to as the ‘Athens of the North’. In 1817 the young Playfair won a competition to complete Edinburgh University’s Old College building which had been initiated by the late, great Adam himself. In 1820 Playfair was commissioned to design Royal, Carlton and Regent Terraces, extending the New Town SF EDINBURGH

eastwards and circumnavigating Calton Hill. Regent Terrace was named after the then Prince Regent who became King George IV and visited Edinburgh in 1822. These terraced townhouses soon attracted some smart residents, such as Princess Caroline of Naples at number 12 and Louis Antoine, Duke of Angoulême, the last Dauphin of France, at number 22. After 1820, Playfair was inundated with commissions. The previously bare Calton Hill received the City Observatory, monuments to his uncle John Playfair, the mathematician and president of the Edinburgh Astronomical Institution, and Dugald Stewart, the philosopher. Playfair collaborated with Charles Cockerell on the unfinished National Monument,

which was modelled on the Parthenon on the Athenian Acropolis, and dedicated to the Scottish soldiers who died during the Napoleonic Wars. Over the following decades Playfair built St Stephen’s Church in Stockbridge, Surgeon’s Hall and the National Gallery of Scotland to name but a few. In 1857 Playfair died and was buried in the ‘lord’s row‘ in Dean Cemetery, a location usually designated for Edinburgh aristocracy. Nearly 160 years later, the city of Edinburgh and its four million visitors are still in awe of the great Doric grandeur of Playfair’s public buildings, inspired by a zeitgeist that continues to encourage greatness and academia to this very day.

oday Morningside, just a few miles south-west of the city centre, is one of Edinburgh’s most alluring suburbs. Described by James Grant in Old and New Edinburgh as ‘a row of thatched cottages, a line of trees and a blacksmith’s forge’, Morningside served as an important stopping place on the main drove road into Edinburgh from the southern farms. Morningside’s oldest landmark of note is the bore stone. Some have questioned the authenticity of the

Lord Gardenstone was a great eccentric and is reported to have had a peculiar fondness for pigs stone, which held the Royal Standard ‘for the muster of the Scottish Army’ on the Borough Muir prior to the catastrophic defeat at the Battle of Flodden in 1513 which claimed the life of James IV of Scotland. The bore stone lay in a nearby field before being taken to Morningside and set into the boundary wall of the parish church. In 2013 the battle was commemorated with a plaque beneath the stone quoting Sir Walter Scott’s epic poem Marmion which makes reference to stone. 18 |

Literary connections The Misses Balfour, aunts of Robert Louis Stevenson, lived at 6 Morningside Place. When the author visited as a child he would sit on the garden wall and fire his air-pistol at the neighbours. Until 2012 JK Rowling resided at Abbotsford Park and is said to have written some of the infamous Harry Potter series in local cafés in Morningside. Edinburgh authors Alexander McCall Smith and Ian Rankin have both lived in Morningside, very close to the old home of JK Rowling. There must be something in the water. Miss Jean Brodie, from the classic 1961 novel The Prime of Miss Jean Brodie by Muriel Spark, resided in Morningside. The book was turned into a play and a film with Dame Maggie Smith starring in the 1969 movie adaptation. Maisie Mackenzie the kitten and heroine of Aileen Paterson’s children’s books hails from Morningside. The Number 5 bus to Morningside features the little kitten as its mascot. One of the most celebrated Speakers of the House of Commons, Conservative politician William Morrison, was born in Morningside. He was given the nickname ‘Shakes’ due to his obsessive quoting of William Shakespeare’s plays.

One of the earliest surviving buildings in Morningside is the small two-room schoolhouse, built at what is now 140 Morningside Road in 1823. This school served a large area and some children came from as far as Swanston on horseback. Pupils would tether their horses on Cuddy Lane during classes. The clock on the facade reads twenty minutes to four – the time at which the school closed in 1892 after the nearby opening of South Morningside School that same year. Morningside House once stood on Morningsdie Road. This simple mansion house was built by the benevolent Francis Garden, Lord Gardenstone and Senator of the College of Justice, at the end of the eighteenth century. Lord Gardenstone was a great eccentric and is reported to have had a fondness for pigs. So much so that he slept with a pig in his bed in winter for

warmth, and would wrap it up in his breeches so they were nice and warm to put on in the morning. He died in 1793, having only lived at the mansion for four years. By the end of the nineteenth century the village was attracting many wealthy residents who sought space for their

Archbishop Cosmo Gordon Lang In later life the Very Reverend Cosmo Gordon Lang, Archbishop of Canterbury from 1928 until 1945, wrote of his precious childhood spent in Morningside: ‘At that time a quaint country village, with villas and quiet lanes.’ His father was the minister of Morningside Parish Church from 1868 until 1874. The family lived in a villa, known then as Bank House, on Morningside Road with a large garden and views to the Pentland Hills. ‘It was my own world, where my imagination for once had its unclouded day... these were days never to be repeated when I was master of my own realm, the glorious land of imagination, the land of make-believe.’ Cosmo Gordon Lang went on to study at Glasgow University, then Balliol College, Oxford, where he became President of the Oxford Union. In 1909 he was made Archbishop of York, and twenty years later Archbishop of Canterbury. During this time as leader of the Church of England the country fell into crisis following the scandalous decision of King Edward VIII to abdicate and marry American divorcée Mrs Wallis Simpson.

house, originally known as the Volunteer’s Arms, opened in 1871. The pub prides itself on its ‘never-changing’ décor and part of the original gantry can still be seen today, partially hidden by all the clutter the pub has collected over the years. The following year saw the fi rst horse-drawn trams and a decade later the Edinburgh and Southside Railway arrived at a new station on Morningside Road. Today the station clock still stands by the old station, now a bank, and has become a much-loved fi xture in the area. When the clock was briefly removed in the 1960’s for repairs the local council received hundreds of complaints from Morningside residents. The last of rural village life went with the demolition of Springvalley Farm to make way for more Victorian terraces. Springvalley Farm had been

David Deuchar David Deuchar was an artist who resided at Morningside House. However today he is most remembered, not for his own work, but for his involvement in the life of another artist. In 1771 Deuchar came across a 17-year-old boy called Henry Raeburn who was apprenticed to his good friend, goldsmith William Gilliand. Recognising genius, Deuchar gave Raeburn free tuition twice a week and encouraged him to quit goldsmithery and pursue a career in painting portraits. Cameron has welcomed many Hollywood A-listers such as Cary Grant and Sigourney Weaver Cinema, known locally as ‘the Dom’. Opened in 1938 the independent picturehouse was designed by renowned cinema architect Thomas Bowhill Gibson for owner and fi lm lover Captain WM Cameron. Now a Grade B-listed building the cinema demonstrates the Art Moderne style, popular in pre-WWII Britain. In the 1950s Captain Cameron passed the cinema on to his son Derek. Derek Cameron was an innovative man and his ability to constantly adapt to the fast-evolving entertainment industry, as well as the development of television, video and DVD at home, has seen The Dominion thrive against the odds. It has even added three more screens to the complex over the years. Cameron has welcomed many Hollywood A-listers such as Cary Grant and Sigourney Weaver to the cinema, and was awarded an MBE in 1999 for services to the entertainment industry. Derek’s children took over the cinema in 1996, and so ‘the Dom’ remains very much a family business. The last few centuries have seen Morningside evolve from a small farming community into a bustling Edinburgh suburb, and yet it still retains its wholesome village feel. SF EDINBURGH

W

hen I studied animal biology at Napier University I took weekend and summer jobs at Edinburgh Zoo. After graduating I worked on the primate team for six years before moving on to penguins three years ago. We have 105 gentoo, king and northern rockhopper penguins. Each one has a different personality. It really surprised me when I started because they are birds. They really keep me on my toes. The kings are very laid back and tend to keep to themselves, but the rockies charge around the enclosure, causing havoc and trying to start fights. Some are really fussy eaters and will only eat their fish in a certain way or at a

Others will just go around looking for trouble, pulling on the hoses and stealing brushes from the keepers. Each penguin has a band with three beads to identify them, but most we know just by their character. There is one penguin in particular called Mittens. He is so mischievous. You can’t put anything down for a second or he’ll steal it. I’ve taken my fleece off in the summer and put it down only to see Mittens dragging it off through all the poo and fish. Lovage 38 St Mary’s Street, EH1 1SX People watching is one of life’s simplest pleasures, and the floor to ceiling shop style window looking from Lovage’s simple, yet stylish interior onto the old town provides ample fodder. Polish brothers, Lukasz and Bartek Jedrejek opened up just around the corner from the Royal Mile – in what was once Stac Polly Bistro – just four months ago, after cutting their culinary teeth on stints in kitchens in Poland and Edinburgh. The menu is seasonal, short and sweet, with a strong emphasis on Scottish produce. Scallops with apple and cucumber salsa, mint oil and scallop were cooked to perfection, but a sneaky strawberry which didn’t warrant a mention on the menu appeared mysteriously and altogether superflously on the plate. Slow cooked Ayrshire pork belly with chorizo crisps, apple and horseradish puree, baby leek, buckwheat and porter sauce packed a flavoursome punch, but was lacking in the glorious crunch of pork fat. Mains were an absolute triumph. My braised lamb shank was again well cooked, with a Madeira sauce to die for, my only complaint being that what I was dying for was a bit more of it on the plate. The pan fried hake came in a sumptuous langoustine bisque with mussels, coconut, sugar snap peas and mint. These were always going to be a tough act to follow, but the chocolate fondant was a dreamy, oozy delight with salted caramel ice cream, just in case it wasn’t rich enough already. The gooseberry cheescake was less impressive, slightly overcooked, the burnt flavour was impossible to ignore although the gooseberry was still discernible. Had it had a couple of minutes less in the oven this would have been a delight. Served with ginger ice cream, which was creamy and delicious but sadly lacking in ginger kick and thyme and vodka gel. We started with a cocktail and six ‘natural’ oysters which were deliciously fresh. Not one to hold back, my dining partner ordered the 8oz fillet steak with half a lobster and I had a whole lobster. We could not fault the food, it was fresh, tasty and ticked all the boxes seafood should, however with a bill well over £150 including a bottle of wine, I’ll save Cadiz for special occasions. Foundry 39 39a Queensferry Street, EH2 4RA Right in the heart of the west end, this huge bar and restaurant occupies the former site of Bar Roma. The decor is cool but not uber trendy and the staff were friendly and helpful. It’s the perfect place to meet friends after work for drinks and hearty sustenance. Fried pickles with blue cheese mayo were naughty, but so nice. The sour dough pizzas are almost impossibly thin and crispy. The Reuben burger with salt beef, sauerkraut, swiss cheese and tabasco was a carnivores delight. A selection of fries and slaws topped things off nicely. Cau 15 Castle Street, EH2 3AH This Argentine steak house between Princes Street and George Street doesn’t feel like part of a chain. The fripperies are all tip-top – it’s nicely decorated, has wonderful Argentine reds and a decent cocktail list – but the steaks are deservedly centre stage. Starting at £14 these mix traditional European cuts and more exotic Buenos Aires favourites such as the asada de chorizo, a sirloin marinaded in smoked paprika, aji molido, garlic and parsley. Chop House Arch 15, East Market Street, EH8 8BG

The launch of a second Chop House barely a year after the inaugural launch in Leith came as something of a surprise, yet is testament to the success of the slick, contemporary original, with its impressive cocktail bar and on-trend sourcing policies. Its wee brother in the Arches at the back of Waverley Station is at first sight a markedly different beast. For a start it’s on two levels, with a bar and booth-style tables downstairs and conventional tables upstairs. It’s also fundamentally different architecturally, mainly because of its site in the B-listed arches which has meant a huge steel frame has had to be built and slid into the Victorian brickwork. The result is a surprisingly successful mix of brutalist architecture, Victorian brickwork, contemporary decor and views out to the old High School. As for the food, they have imported the formula in its entirety from Leith. So, first up are variations on classic cocktails, followed by a roster of seafood-heavy starters such as crispy squid or roast scallops. The main course was, as ever, completely dominated by the selection of steaks, which ranged from a 300g rump at £18 to a 500g surf ‘n turf sharer at £75 (Chateaubriand, porterhouse and bone-in-rib are done by market weight and price). We had a rib-eye and fillet, both of which were perfectly cooked and gorgeously tender. The pick of the puddings was the gooey chocolate brownie with burnt marmalade icre-cream and honeycomb, and the surprise of the evening was the sheer quality of the wine list. Maison Bleue Le Bistrot 372 Morningside Road, EH10 5HS This new Morningside bistro offers up the same French and North African classics with a Scottish twist that its big sister is loved for. The ambient lighting, eclectic decor and French music make it an atmospheric venue even on a quiet night. Standout dishes were the calamari with a delicate Asian flavour, the impossibly tender beef cheeks, slow-cooked in red wine and a perfectly seasoned tagine. Brilliantly bijou Atmospheric and invariably packed, these small restaurants mix unbeatable ambience with top food

Field, Newington This tiny eaterie is one of my bankers if you have foodies in from out of town. Set up by frustrated Michelin-star trained trio of chefs Gordon Craig, Richard Conway and Rachael Conway, Field specialises in simple yet gourmet gastronomy, with a small menu on which you’d be happy to eat anything. Eccentric cow-themed decor, friendly service, heavenly grub, what’s not to like? Their new sister restaurant in Stockbridge, The Field Grill, is damned good too.

Purslane, Stockbridge Hidden in a basement, named after a scrubby weed and sourcing most of its produce from Stockbridge, this one’s a gem. Affable chef-patron Paul Gunning learned his craft under a host of Michelin-starred chefs, including Marco-Pierre White, and it shows. Wonderful French-influenced fare served in a relaxed, convivial atmosphere will have you coming back for more. The three-course a la carte is £30, but his speciality is intricate tasting menus of five or seven courses (£40/£50). Try the roasted rabbit loin or venison.

Aizle, Newintgon Named after the Scots word for a glowing hot ember, nowhere has shaken up Edinburgh’s restaurant scene more than this Southside temple to molecular gastronomy. Instead of a menu you’re asked what you’re allergic to, then given a long list of ingredients, which then arrive in no particular order as part of a five-course menu. It’s routinely brilliant and a Michelin star will surely land on their heads eventually. They are also cocktail fanatics, so go on, it’d be rude not to...

SMALL BUT PERFECTLY FORMED RESTAURANTS

Wedgwood, Old Town Eponymous chef-patron and occasional celebrity chef Paul Wedgwood has so many gongs that he’s rumoured to have been taking lessons from Sir Chris Hoy on how to find space for them all (no easy task in this small two-floor restaurant on the Royal Mile). The plaudits – which include a listing in the Sunday Times top 100 restaurants in Britain – are richly deserved and come on the basis of food of near Michelinstarred quality (and price). Wedgwood is a keen forager who says his favourite dishes are panko and black sesame-crusted mullet, pork belly or hand-dived scallops wrapped in caul fat.

Gardener’s Cottage, London Road This lilliputian urban/rural mix is marmite: you either love its communal shoulder-to-shoulder eating and tendency to mungbean hippieness or you don’t. My parents hated the knit-your-own vibe chefs Ed Murray (Falko Konditormeister) and Dale Mailey (The Ledbury) brought to this quaint Playfair afterthought, but most normal people love it, as do the critics, including exiled Edinburgher AA Gill. With a tsunami of foraged ingredients and innovative but hearty seasonal dishes in a take-it-or-leave-it fivecourse format, the food is seriously healthy and seriously good. Most of all, it’s definitively unique and definitely worth trying.

Wee Restaurant, North Queensferry We reviewed the excellent new city centre branch of the Wee Restaurant recently, but the original has been going strong in North Queensferry since 2006 and lives up to its name. Husband and wife team Craig and Nikki Wood run the show, with Craig (the CIS Chef of the Year for 2015) doing the hard yards in the kitchen. This proper local restaurant now has 40 covers, but when they started up the place would have been standing room only had the Waltons come en masse for their tea. I

n a brand new, five-bedroom home in Loanhead, interior designer Kelly Park has created a luxurious, bespoke haven for a family seeking space to relax and socialise with friends. The clients wanted custom-made features and a high-quality finesse from floor to ceiling. Kelly’s design service, Evolve Interiors, focuses on tailored, high-end and bespoke interiors at cost-effective rates. ‘I have always endeavoured to achieve affordability without comprimising on style,’ says Kelly. The main living room features a wall of bespoke paper called ‘coral forest’ by designer Dot Keedy for Tektura. The walls throughout the house are fabric backed vinyl, a type of wallcovering often found in hotels and restaurants which ensures durability and longevity. It was essential that this room could seat twelve people and the long, teal sofa was custom-made at 3.1 metres long. After having difficulty finding a suitable high street alternative,

Kelly designed the coffee table to suit the surrounding seating. By comparison the smaller living room is more straightforward. ‘This is their TV room where they can sit back and relax,’ says Kelly. ‘They wanted it to be a bit more simple, with less furniture.’ Three-dimensional wall panels add a sense of fluidity and serenity to the room.

I have always endeavoured to achieve affordability without compromising on style After holding consultations with each child, Kelly designed a bedroom to suit their specific interests, including a New York skyline for the family’s youngest son. ‘In the frame over the bed I added LED lights that change colour as something fun and gimmicky,’ adds Kelly. ‘The boys absolutely loved it.’

My city garden Annemarie Hammond and her husband moved to Fountainhall Road in 1971. Here Annemarie spent the next twenty years teaching children to play the flute until a medical condition prevented her from playing. ‘I was subconsciouly looking for something creative to do and the garden was there and hadn’t been touched in twenty years’, says Annemarie. Without any planning she began clearing the weeds and planting beds. ‘I just about knew the difference between a pansy and a petunia, but that was as far as my garden knowledge went.’ Over the years the garden has gone through many transformations. ‘I am not a true gardener’, says Annemarie. ‘I am making a work of art, using plants instead of paint.’ To the delight of Annemarie, a self-confessed ‘frog-watcher’, her two ponds have become popular with frogs. Founder of ERIBÉ knitwear, Rosemary Eribé puts a contemporary twist on traditional Scottish woollens

stablished in 1986, ERIBÉ is a cottage industry gone global. Available in over 200 stores in 16 countries, ERIBÉ specialises in natural heritage Fair Isle – often giving it a modern and stylish twist. At the helm of the eponymous company is its founder and namesake Rosemary. Born in Morningside, Rosemary moved to Hamburg after school to pursue a career in textiles. ‘I found it very hard,’ says Rosemary. ‘I was only 17 years old and spent two years there.’ On her return to Scotland in 1980, Rosemary enrolled at the Scottish College of Textiles in Galashiels. ‘To come from a city like Hamburg to Galashiels was a huge shock. It was all men, and very old fashioned.’ Her success is down to Rosemary’s ability to constantly adapt to her market. ‘I always knew I wanted to set up my own business,’ says Rosemary. ‘I was a poor student and I just went for it – but I knew absolutely nothing.’ Starting out, she specialised in cashmere, embracing the intarsia trend of the 1980’s. Her hand-knit intarsia clothing was selling for up to £1,000 a garment in the shops. After a trip to Japan, her largest market

at the time, Rosemary realised that there was a huge demand for Fair Isle knitwear abroad. In the 1990s ERIBÉ became one of the first companies to make natural undyed Fair Isle wool garments. Rosemary launched a collection called Ecology in 1994 and began selling to Germany. With the crash of the Japanese market in the 1990s – known today as ‘the lost decade’ – all trading ceased. For many British textile companies this was catastrophic. ‘I was so lucky that I had my German

Rosemary has adapted her Fair Isle designs to follow trends and offer a range of colours from the natural Ecology range, to hot pinks, corals and electric blues. Home report A student living report has found Edinburgh to be the most expensive city for students

Across Scotland house prices in areas near the highest performing state secondary schools are above average. In the area surrounding Boroughmuir High School in Edinburgh South house prices have risen by 15% since June 2015.

The Royal Bank of Scotland’s student living index has found Edinburgh to be the most expensive city in the UK for students. Edinburgh students pay an average of £112.05 on rent per week, compared to around £110 across the UK.

Both my parents are Scottish and I was born in Edinburgh – it is my home. It only gets a little awkward during football chat: are you an England or Scotland supporter? For me it is a bit of a dichotomy to be honest, but I am a proud Scot and I love it here. The Grassmarket is one of my favourite places to visit when I’m in town. There are so many lovely shops and restaurants I could spent hours wandering around. The area is especially lovely at night, it’s always so energetic and bustling. The castle is magnificent too – it is one of the most beautiful buildings I’ve ever seen. I don’t know anyone who doesn’t love it.

My grandparents used to take my siblings and I to the Tattoo every year. Growing up we thought it was magical, staying up late and being amongst all the fabulous lights and noise, it is such a spectacle. I want to take my boys next year.

Growing up, the Tattoo was magical Memories like these make Edinburgh special and nostalgic for me. Growing up, I had wonderful times with my grandparents, who lived in Corstorphine, near the Zoo. Edinburgh has changed a lot since I was young. It has become a very modern town, with some wonderful bars and restaurants. There was nothing like that here when I was younger. I love to do a bit of shopping when I am up too. Harvey Nichols is great, I can spend all day in there. Kirsty is an ambassador for Speedo’s Dive In campaign.
