A Mother’s Love We all have experienced a mother’s love, whether you are a mother, you had a mother or grandmother that raised you. There is nothing like a mother’s love. Yes there are some that have not experienced that love, as we all my not have been blessed with a mother, as some may have lost them too early, or was not accepted by their mother. That is where, Grandmothers Step mothers and other mother figures step in. We are very thankful for all mothers. A Mother’s love ( step mothers, grandmothers & other mother figures) is like no other. I always knew the love of my own mother, but did not experience my own until I was 40 and had my 1st child. And, I am so convinced that adopting or fostering a child, also brings that exact same type of love. I have personally seen that in my friends eyes. So this Mothers Day and all year long celebrate your mother, stepmother, grandmother and the person that was a mother figure to you. Hold those special memories close. Mother’s Day Mother’s Day is a celebration of honoring mothers, motherhood and maternal bonds, and the influence of motherhood in society. I am blessed to be the mother of 4 amazing children. I had my first daughter at the age of 21 and her name is Lauren. She was a ball of energy and brought delight to everyone. In many ways we have grown together and she has become an amazing women herself who now is a mother to my first grandson Joel. My second son is Andrew. I had him when I was 25. He was the sweetest child ever. I can remember taking hours to get out of his room at night as many mothers do because he wanted momma to sleep with him. Lauren, Andrew and I have many stories and sit and laugh at some of the wonderful memories we have made. My third son is Nicholas. He is my stepson whom I raised since he is 3. My husband has custody of him. We remember meeting Nicholas for the first time at the Botanical Gardens in Birmingham, AL and he ran back and forth non-stop for 3 hours straight and we laughed at his cute little self. Motherhood can come in many forms. My last and fourth child is Noelle, our little miracle. I had 4 miscarriages after my second son Andrew and never thought I would be blessed with another child but after my gallbladder rupturing at 13 weeks pregnant with Noelle at Thanksgiving and making it until Christmas when we found out she was going to make it, we decided to name her Noelle which means Celebration of Christ’s birth and she truly was a celebration to us. She is so full of energy and life like her brother’s and sister and a true miracle and has brought pure joy to me. You can be a mother is so many ways. Be there for your children. Time goes by quickly so do as much as possible with them and cherish it. Tell them you love them often. Tell your children to come to you and make them feel safe so they will come to you with all their needs. Support them always. I would like to tell my mother Jackie Garner, I LOVE YOU! My mother taught me to do your best even thru difficult times and have a giant heart of giving. I know no matter what I go thru in life my mom is always there for me. I appreciate my mom! As a mother, cherish every moment you have. Make lifelong memories with each child. Teach them manners and to work hard to achieve all their dreams. Most of all LOVE them. To Every Mother Out There A Message From a Girl That Lost Her Mom Mother’s day is a very hard day for me. I lost my mom 4 years ago and unless you’ve lost a parent, you can’t understand the void this causes. Life is never the same. Every mother’s day becomes sad, because it’s just a reminder of what’s gone. The reason I choose to write about this not to get sympathy from you, but rather make you take a moment and: a) appreciate your mom if she’s still in your life b) realize life is really short, we should say those kind things to those we love more often c) realize if you’re a mom that your kids want you around for a very long time (even though they may not show that all the time…), therefore you must take responsibility in taking care of yourself – your health, your wellbeing. My mom was a great mom… the best I could’ve asked for. She was a mom to so many friends of mine too. She was just a wonderful person who loved life, loved singing and dancing (although you wouldn’t want to hear her sing and she was the first to admit that too…). She taught me a lot about love. I have a tattoo on my wrist that says “She is love” cause that’s what she really was. But she went too early probably because she usually put herself last. It was always about her kids and her family. I was blessed to have her for the time that I did. I had cooked meals at home, someone to tuck me in, the love like no other…. but when it comes to her taking time off for herself, relaxing, getting away (as all you moms need to!), spending just a little bit of money on herself… she was not good at that.


So if you’re a mom – you probably just recognized yourself in this. Well, it’s easy to get caught up in everyday life and say “life just got in my way” and let your health go, but remember this: every time you let your health go, you may be shortening the time you have with your kids. Read that again. Here I’ll say it again: every time you let your health go, you may be shortening the time you have with your kids. And let’s not forget that it’s the quality time we’re talking about. Again, don’t feel bad about this – most moms do this. But, it’s time to recognize that and make small changes. Nothing big of course… cause I know that guilt will come all over you… just small. Setup an appointment to get a massage once a month… every few months. Doesn’t matter. It’s something for you. And most importantly, start making healthy choices when grocery shopping and make sure you workout regularly. Sometimes you think “that’s too pricey” or “I can use that money elsewhere”. Ok… I want you to think about something here for a second: realize it can only be equal to about $5-$10 a day that you’re spending on you. Also, if you think about medical bills and time that it would take to go to doctor’s offices, get medication, surgeries, recovery time, etc. – realize that this is an investment into your health. Taste and See..... “Taste and see that the Lord is good; blessed is the one who takes refuge in Him.” - Psalm 34:8 (NIV). I do not find it one bit ironic that it is biblical to, “taste and see that the Lord is good.” Seeing as how I have made a career in food and writing, of course I love this verse! However, I learned this verse from an early age, from watching my Mom. My Mom taught me all about feeding people, and tasting and seeing that the Lord is good. My college background was a double major in Spanish and International Business, with a minor in Political Science. I left a career in politics to pursue a career in food. When I was stressed, I got in the kitchen. I would make a lasagna and take it to someone on my campaign staff and share. Or I would make brownies, or a key lime pie. It was my stress relief, but because I didn’t want to get fat, I gave the food away. I learned from my mom the importance of feeding people. The “tasting and seeing” part came naturally, I guess you could say. When I was in high school, my mom hosted a weekly prayer breakfast for a group of my friends. Because school started at 7:00, we did this prayer breakfast at 5:45 a.m. That’s early. Very early! We had a hot breakfast, every time. My friends always wanted to come over and hang out at my house. Sure, the food was enticing, but so were my parents. My parents made everyone feel welcomed and loved. Although they were fed (with food), they were also fed, emotionally. My parents loved my friends, and my friends loved my parents. I learned from an early age, what it means to be hospitable. What it means to share and show love and laughter. An awful lot of that love was done with food. Mother’s Day, for me, is an every day celebration. I am so fortunate that my mother refused to be my best friend when I was growing up, and instead focused on being my mom. My mom talked to and with me, not at me. More than anything, my mom understood that children learn from watching, as well as listening. Both of my parents taught me so much, through their actions. When the going got tough, they got down. On their knees, that is, to pray. When life was grand, they gave even more of themselves. My parents do not possess a selfish bone in their bodies. They were generous with gifts, but even more so, with their time and their love. I remember my mom being tired and busy, but never too tired or busy to help others. If a friend or neighbor was sick, or recently home from the hospital, my mom never asked what she could do to help. She simply showed up with a meal, muffins and breads for their freezer so that the family would have dinner, not to mention breakfast, in the coming days. When I came home from school, there was often a cake or cookies on the counter, to celebrate the “small” victories in life. We didn’t just celebrate birthdays ... we celebrated daily life. My mom made certain that my brother and I always knew how important it was not to take anything for granted, and to celebrate each and every milestone. Making the Varsity cheerleading squad was celebrated just as much as an “A” on one of my Honors English essays. My childhood years were wonderful, happy years, so it will likely be of no surprise that many of my memories are from my childhood kitchen. Sitting around the table, just living and loving life. Talking, laughing, eating. There were very few exceptions to eating a meal at the table. My parents fed me so much at that table. Not just physically, though. My parents fed me spiritually, emotionally and mentally, at that table. They stressed the importance of a relationship with Christ, at that table. They stressed the importance of seeking God’s will for my life, at that table. We talked about the hardships of life and friendship, and leaving home to go to college ... at that table. We talked about thinking outside of the box, and dreaming big, at that table. I also learned just how correct President Ronald Reagan was when he said, “All great change in America begins at the dinner table.”


Now that I am a mother of a teenager, I look back to those years, and pray that my sweet daughter will have similar memories, when she is grown. I love it when her friends come over, and know that most snacks and all of our meals are eaten at the table. We talk and ask questions; offer encouragement and support to anyone and everyone who eats with us. More importantly, if you dine with us, you pray with us. I want everyone who eats at our table to “Taste and see that the Lord is good.” Encouragement comes in many forms, but when it comes from me, it will likely come around the table. At least I hope it will. As it turns out, everything I ever really needed to know, I learned from my mom. At the table. Brunch Recipes/Dinner recipes or ideas to enjoy with loved ones: AIMEE FORTNEY’S EASY SHRIMP AND GRITS Breakfast, brunch, lunch or dinner, this is a favorite of mine! This is such a yummy, delicious meal to eat and is so simple, you might find yourself making it on Tuesday for dinner, Saturday for lunch and Sunday for brunch, it is just that good! For the Grits:

2 1/2 cups reduced sodium chicken broth 1 cup heavy cream 1 cup grits cheese (optional, and use whatever type you desire; about a handful of cheese)

In a medium sized pot, bring chicken broth and heavy cream to a boil. Slowly add grits, whisking as you add them, then reduce heat to medium-low and cover. Cook and continue to stir and keep an eye on your grits so they do not stick to the bottom. For really good, creamy grits, cook for about 20 minutes. (Even if your package says 5 minute grits; grits just do not cook in 5 minutes.) If they get too thick, add more liquid - water, broth or heavy cream, continuing to stir. Add cheese shortly before serving and stir to melt the cheese. For the Shrimp:

2 Tablespoons butter 1/2 of white onion, finely diced 2 cloves of garlic, chopped 1 pound shrimp, peeled and deveined dash of hot sauce* (optional and amount to your liking) “splash” of white wine, about 1/4 cup (also optional, but adds so much flavor and creates a shrimp “gravy sauce” to serve on top of grits) green onions, chopped for topping

Sauté onion and garlic in butter for about 2 to 3 minutes. Add shrimp and cook until shrimp turns pink, not very long at all; about 3 to 5 minutes. Add hot sauce and white wine after about 2 minutes of cooking the shrimp and stir to combine the flavors. To serve, either on a plate or in a pretty martini glass, spoon grits onto bottom, then spoon the shrimp mixture on top. Add more of the sauce on top, sprinkle green onions on top and enjoy! Truly easy, delicious shrimp and grits!


AIMEE FORTNEY’S DARK CHOCOLATE COCONUT BROWNIES

1 cup sugar 2 Tablespoons water 6 Tablespoons butter 1 good quality dark chocolate bar, or 1 King size (6.8 ounces) dark chocolate candy bar, chopped (all but 3 rectangles used, or you may use entire bar!) 2 eggs 1 teaspoon vanilla extract 1 teaspoon coconut extract 1 cup all purpose flour 1 cup semi sweet chocolate chips pinch of salt (about 1/2 teaspoon) 1/2 cup chopped macadamia nuts, toasted and coarsely chopped (optional) 1/2 cup toasted coconut (optional) powdered sugar (to sift for topping; optional)

Combine sugar, water and butter in a heavy (thick bottom) saucepan. Bring to a boil, stirring constantly. Remove from heat and stir in chopped chocolate bar until smooth. Let cool for about 5 minutes, then add eggs, one at a time. (You want your chocolate mixture cooled so that when you add the eggs, they do not scramble. Keep stirring the mixture when you add eggs, so this (scrambled eggs) does not happen). Stir eggs until blended, then add coconut and vanilla extracts. Combine flour and salt, then stir in chocolate chips and if using, nuts and coconut. Add to brownie batter, stir to combine. Place parchment paper that is hanging over on the sides, in brownie pan (I used a 9 x 9 pan) and lightly spray. (The parchment paper allows for you to just lift the brownies out of the pan, no mess!) Bake at 350 for 23 to 25 minutes. Sift powdered sugar over the top. (To perfectly cut brownies, use a plastic knife. My friend, Lindsey Byers shared this tip with me, and it works like a charm!) Feed the birds…. Add some sparkle to your cottage garden You can create these simple handcrafted bird feeders with thrift store pieces of glassware. They are guaranteed to add sparkle in your garden! Your imagination is your only limit to creating these wonderful glass bird feeders. Start by a visit to your local thrift store to look for inexpensive clear or white glass plates, bowls, sherbets, goblets and bud vases. You might even have a lot of these at home collecting dust in your cupboards, begging for a new use. Old cups and saucers sets are perfect too. Supplies needed: E-6000 glue Asst glassware- bud vase for the base should be at least 6”-8” tall or more with a small opening about ¾” to 1 ½” inches ½” copper pipe about 36” long You will be working with everything upside down at this point since it will balance better. Start with the top piece that will hold the bird seed. Glue the plate or next piece to to the bottom of the cup or goblet. Allow each piece to dry for at least ½ hour before you glue another to the stack. Your final piece with be the bud vase. This will be the only piece that is upright in your upside down looking creation! Allow the entire piece to dry 48 hours before flipping it upright and using outdoors. Push or pound your copper pipe into the place you want it and place the vase base over it.

Shabby Tote Tutorial Supplies: Tote Liquid Stitch Needle and Thread Sewing Machine (optional) Scissors Doilies Lace and Embellishments

When I have walked the craft stores, looking at all the pretties on the shelves, I came across some petite, canvas totes. I think they are the perfect size for flea marketing and antiquing, or going anywhere you don’t feel like carrying around a large tote or purse. The one thing I didn’t like was the plainness of the canvas. So, doing what I love to do, I re-purposed one. It came out so cute and was so easy, I just had to share with a tutorial. The best thing about creating this shabby tote, is that you don’t have to sew or own a sewing machine! That’s right, all you need is some Liquid Stitch!! It’s permanent and also stands up to washing. So, give this a try and don’t be scared, have fun and let your imagination go, bring out your creative side. I started first at the bottom and worked my way up. The first doily I used, I folded in half in an uneven way so it looked layered.

I do have a sewing machine and sew most of my items, but it’s not necessary for this project. Once you have your first layer on, continue up the front with more doilies, adding lace if you want a more romantic look. As you can see, I added some crinkled seam binding, and let it hang in place. You can achieve a more natural look if you don’t worry about unfinished edges of your doilies, don’t worry about some yellowing or discoloration. Vintage works of art are just that, works of art and all the little imperfections add to the beauty of your project. As I worked my way to the top, I found some vintage buttons I had and added those too. You can see the addition of white Venise Lace with more seam binding ribbon. Nothing has to be precise, your work does not have to be even match. I think the more you color outside the lines, the better the look. Once at the top, it’s all eye candy. I love the look of this sweet tote and can’t wait to try her out. Now all I need is someplace to go! I hope you will try this project and have a great time creating your own little work of art.

You are Never too Old to find your creative side! I have always been embarrassed to say that I do not know how to sew. My mother was a great seamstress. She would sew clothes for us as children. We still today, bring mending to her, as I can barely thread a needle. As I am approaching 50 and have small children, I decided I needed to learn. I bought my first sewing machine, which was also an embroidery machine. I had to watch youtube videos online to figure out how to thread a bobbin. I knew what a bobbin was luckily, as I did watch my mother often. My husband and I together figured out this machine together. Then it hit me, the fever! I needed to sew more. I even bought a larger embroidery machine, just one week after my first purchase. I learned to make adorable silly monsters and these sweet animals. The most fun part, was to see my children appreciate each new thing I made. So I have started this creative process, we will see where it takes me. So. if I can learn this, then you can learn something new also. I am quite sure many of you already know how to sew. But, there is something you have not learned. Try to learn something fun and new! A Back Yard Bird Paradise At long last, the cold winter has passed and we can finally get outside and enjoy the beauty of nature. When you think of the outdoors what is one of the things that makes it so special? It has to be the beautiful melody of the birds. There is something so soothing and relaxing about getting quiet and listening to nature sing. To enjoy the sound of nature to the fullest, why not draw it into your space? Attracting birds to your backyard is quite easy. With a few easy steps you can begin enjoying the sounds and sights of nature all summer long. To attract a variety of feathered friends to your yard, consider adding some (or all!) of these to your yard: Water – This is probably the simplest and most important element for attracting our feathered friends. While you can go all out with a pond or fountain, a simple bird bath is all you really need. Just make sure to keep it clean and filled with fresh water at all times. The larger birds, such as robins, really enjoy bathing in a shallow birdbath and when they do, it empties rather quickly with all their splashing about. Also make sure there’s enough of a lip on the birdbath for the little birds to sit while they sip. If you can, place the bath next to a tree or a bush or within some foliage so the birds feel a bit sheltered. The more safe and protected the birds feel, the more likely they will be to frequent the area. Bird houses – The addition of bird houses to your yard can provide entertainment all summer long as you watch the birds raise their families. This is especially fun and a great learning experience for children. There are many varieties of birdhouses available, depending on which species of birds you wish to attract. Start by checking your local library for books that will guide you as to which types of birds are native to your location. From there, you can learn which style of birdhouse is most likely to attract those birds. Another great resource would be your local gardening store, or if you are lucky enough to have one, a store that caters to wild birds. If you do decide to add birdhouses to your yard, one of the most important things you must do is clean them out each fall – but not until the birds have vacated it for the season, of course. This will assure new nesters will find the house attractive come spring time.


Feeders – Bird feeders are also another quick way to draw in our feathered friends. There is a vast number of feeders and also bird seed available and again, it’s a matter of deciding which type of birds you wish to attract to your yard. Here you will also want to do some research – this can be a great learning experience for the kids as they discover which species of birds live in the area and the type of feeder and seed most likely to attract those birds. Seeds will attract the widest variety of birds to your yard but also consider suet, which the woodpeckers and nuthatches love, and nectar feeders which will draw in the ever-popular hummingbird. Nectar feeders are a bit higher in maintenance as they require frequent cleaning and filling, but the rewards are well worth it. Should you decide you really enjoy birding, you may wish to take this one step further and plant a small garden which will be provide a more natural attractant for nature. Some plants to consider would be seed-bearing types, nectar producing plants, and those which will provide heavy cover such as the barberry. What if you live in an apartment or some place without a backyard? Don’t worry, you do have options. If you have a balcony you can find feeders and birdbaths made to fit the railing (if you rent be sure to get permission first and please do be considerate if there are balconies below yours). Another option if you have access to the windows from outside would be small feeders and nesting boxes that have suction cups which adhere to a window or patio door. These will provide a fascinating and up-close view of our feathered friends which is especially exciting. So there you have the basics for creating an avian paradise in your backyard. Do be patient as it will require a bit of time for the birds to discover your little oasis but once they do, the rewards are great. It can be very exciting to discover a bird you’ve never seen before frequenting your feeders – make sure to keep the bird book handy so you can identify it when this happens. Easy Homemade Bird Suet If you are like me, the best part of Spring is watching the bird return right to your back porch. We use a variety of bird seeds, to attract the different birds. Birds also love suet! We are sharing a homemade recipe below for making your own suet. Use caution in placing your suet feeders, as the suet, commercially bought and homemade, will melt in the hot sun! You can use a variety of suet holders, you can use a plastic mesh bag, a suet holder, or even just place in a dish. Happy bird watching!

Easy Homemade Suet 2 cups quick style oats 2 cups of cornmeal 1 cup of all purpose flour 1 cup of lard - (block of lard works best) 1 cup crunchy peanut butter. 1/2 cup of dried cranberries or nuts and or bird seed Directions: In a bowl mix all the dry ingredients including cranberries. On the stove melt the lard and the peanut butter, after melted, add all the dry ingredients. Pour into a pan that will allow the suet to be at least 1 or 2 inches thick then place in refrigerator until hard. Cut into squares and then place in your suet bird feeders - The birds will love them!

Homemade Strawberry Ice Cream Ingredients: 2 cups whole milk 2 cups heavy cream 1 cup white sugar 1/4 teaspoon salt 2 teaspoons vanilla extract 2 cups mashed or diced fresh strawberries In a large bowl, combine the milk, cream, sugar, salt, vanilla, strawberries, This works best if you have a “freezer bowl” which is the newer concept to the old fashion “Ice Cream maker” - If you do not have a freezer bowl, you can pour into a regular bowl, place in the freezer and every 30 minutes, stir the mixture until reaches desired consistency. You may want to half the recipes for smaller portions - Most freezer bowls are for just 2 cups - this recipe yields 4 cups.

Mint Chocolate Chip Ice Cream 2 cups 2% milk 2 cups heavy cream 1 cup sugar 1/2 teaspoon salt

1 teaspoon vanilla extract 1 teaspoon peppermint extract 3 drops green food coloring (optional) 1 cup miniature semisweet chocolate chips

In a large bowl, stir together the milk, cream, sugar, salt, vanilla extract and peppermint extract until the sugar has dissolved. Color to your liking with the green food coloring. Pour the mixture into an ice cream maker, and freeze according to the manufacturer’s instructions. After about 10 minutes into the freezing, add the chocolate chips. After the ice cream has thickened, about 30 minutes later, spoon into a container, and freeze for 2 hours. You can half the recipe for a smaller recipe - makes 2 quarts for a larger maker.

Strawberry Swirl Cheesecake Bars Crust 2 c. graham cracker crumbs 6 T. butter, melted Filling 1 (10 oz.) pkg. frozen strawberries in syrup, thawed 1 T. cornstarch 3 (8 oz.) pkgs. cream cheese, softened 1 c. granulated sugar 2 T. all-purpose flour 1 tsp. vanilla extract 1 tsp. lemon extract 3 lg. eggs, room temperature 1 c. sour cream Preheat oven to 350ËšF. Spray a 9 x 13 inch baking pan with nonstick baking spray. Crust: In small bowl, mix graham cracker crumbs and melted butter. Press into bottom of pan creating an even layer. Refrigerate while you prepare filling. Filling: In blender, puree strawberries with syrup until smooth. Using a fine mesh sieve, strain seeds and discard. In saucepan, combine strawberry puree and cornstarch; cook and stir until thickened. Cool. In large mixing bowl, beat the cream cheese, sugar, flour, vanilla extract, and lemon extract on medium speed until smooth. Reduce the mixer speed to low and add the eggs, one at a time, beating after each addition. Blend in the sour cream. Pour batter over crust. Drop strawberry mixture by spoonfuls over batter. Gently swirl with a knife or spatula. Bake for 30-45 minutes until center is set. Cool on wire rack to room temperature. Cover and place in refrigerator to cool completely. Cut into bars. Store leftovers covered in refrigerator. Makes 12-16.

For the Love of Chocolate! We recently visited Hershey, PA and had the best time! We have never seen so much chocolate in one place. We had the opportunity to learn how Hershey made their chocolates and the history of their company. Such a fun time! Not to mention all the free chocolate samples! We rode the ride through the factory at least 5 times. Best part the ride was free! We had the opportunity to make our own Hersheys chocolate bar in their factory. We had to wear hair nets and aprons. (I honestly felt like Lucy & Ethel, if you remember the day they worked in a chocolate factory) We were able to choose our type of chocolate, dark. milk chocolate or white chocolate. Then we chose the add ins, like toffee, chocolate chips, etc. We were even able to personalize our own candy bar wrappers. The hardest part was waiting for the chocolate to harden. If you ever have the opportunity, it is such a great place to visit. There are of course so many great places to visit near Hershey, like the Amish communities in Lancaster, CO. Gettysburg was also very close, with of course so much history. We were able to take an auto tour of the battlegrounds after spending 2 hours at their beautiful museum. On the way to the Amish communities, we stopped by the Turkey Hill Experience. Which is a great place if you love ice cream, lemonade and tea. We had all the ice cream we could eat, all the tea and lemonade we could drink. We became big fans of Turkey Hill that day, spending over 3 hours playing, learning, and making our very own ice cream. We also were able to star in our own commercial which we still are laughing about, they are so funny to watch. We travel several times a year and always enjoy our adventures. The best part is being with each other as a family. Just a side note: If you visit and get the free chocolates, remember that they are in your purse, before placing your purse near the car heater! Chocolate Thumbprint Cookies Ingredients VANILLA FILLING (recipe follows) 26 HERSHEY’S KISSES Brand Milk Chocolates or HERSHEY’S HUGS Brand Candies 1/3 cup HERSHEY’S Cocoa 1/4 teaspoon salt 1 cup chopped nuts 2 tablespoons milk 1 teaspoon vanilla extract 1 cup all-purpose flour 1 egg, separated 1/2 cup(1 stick) butter or margarine, softened 2/3 cup sugar Directions 1. Beat butter, sugar, egg yolk, milk and vanilla in medium bowl until fluffy. Stir together flour, cocoa and salt; gradually add to butter mixture, beating until blended. Refrigerate dough at least 1 hour or until firm enough to handle. 2. Heat oven to 350°F. Lightly grease cookie sheet or line with parchment paper. Shape dough into 1-inch balls. With fork, beat egg white slightly. Dip each ball into egg white; roll in nuts. Place on prepared cookie sheet. Press thumb gently in center of each cookie. 3. Bake 10 to 12 minutes or until set. Meanwhile, prepare VANILLA FILLING. Remove wrappers from chocolate pieces. Remove cookies from cookie sheet to wire rack; cool 5 minutes. Spoon about 1/4 teaspoon filling into each thumbprint. Gently press chocolate piece in center of each cookie. Cool completely. Makes about 24 cookies. VANILLA FILLING: Combine 1/2 cup powdered sugar, 1 tablespoon softened butter or margarine, 2 teaspoons milk and 1/4 teaspoon vanilla extract in small bowl; beat until smooth. VARIATION: Omit egg white and chopped nuts. Roll balls in granulated sugar. Bake as directed. Top with VANILLA FILLING and pecan or cherry half. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Frost; garnish with chocolate chips, if desired. VARIATION: For heart shapes: Using open-topped heart-shaped cookie cutter (at least 1-1/2 inches deep and 3-inches wide), cut cake into 12 hearts. Frost and decorate as directed. **Cake can also be baked in two greased and floured 9-inch round baking pans. Bake at 350°F for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans. Cool completely. Frost as desired. HERSHEY’S RED VELVET CUPCAKES: Line about 28 muffin cups (2-1/2 inches in diameter) with paper or foil baking cups. Prepare batter as above; fill each muffin cup about 1/2 full with batter. 4th of July Cherry Pie 3/4 cup sugar 3 tablespoons cornstarch 2 cans red tart cherries (cherries in their own juice. Not pie filling.) 1/4 teaspoon almond extract 1 tablespoon butter 2 crusts for a 9 inch pie Preheat oven to 400 degrees. Drain the cherries and reserve the juice from only one can. In a saucepan, stir the cherry juice into the combined mixture of the cornstarch and sugar. Cook over medium heat, stirring constantly until thickened. Remove from heat. Gently stir in cherries and almond extract. Pour filling into pastry lined pie pan. Dot with butter. Adjust crust, seal and vent or, dot top with extra pie crust dough pieces as shown in photo. Bake 30 - 40 minutes or until crust browns and filling begins to bubble. If necessary, cover edges with aluminum foil during the last 15 minutes of baking to prevent over browning. Cool pie for several hours to allow filling to thicken before slicing. Makes 8 servings.

Mimi’s Armchair Adventures It started when Mimi inherited her grandmother’s overstuffed wingback chair. She treasured memories of sitting there with her grandmother listening to stories about Granny’s life, especially when Granny herself was a young girl. So when it arrived, Mimi immediately sunk into the worn blue velvet and thought of Granny. But something curious happened every time Mimi sat in the chair. At first, she thought she was dozing off, but soon she realized she was lost in time. Now she’s sharing her adventures with us. Mimi had just returned from a shopping trip with her mom. It had been fun as usual, but also very informative. While browsing in the local emporium owned by the mammoth chain of book stores, Mimi’s mom found a title that stopped her in her tracks. When Mimi saw her mother staring in disbelief, she ran over to see what had caught her mother’s eye. Was it something objectionable? An old favorite? It would turn out to be both. She held in her hands a book called Dick and Jane and the Vampires. “Mom, you look as if you’d seen a ghost. What is it?” “Mimi, do you know about Dick and Jane?” “The old readers?. Aren’t they the books in your attic? “Yes, I can’t believe they brought them back. Look at this.” Mimi took the book and was instantly reminded of the books her mother had shown her when they were cleaning the attic a while ago. By the time Mimi went to school, the books had been discontinued, so Mimi had only seen a few that her mother, a former teacher, had stored in her attic. But they were iconic, it seemed everybody knew about them. The books were very simplistic. Only a few words were on each page with an illustration. The characters were Dick and Jane, a brother and sister, Sally, their baby sister, Spot the dog, Puff the cat, and of course, Mother and Father. The books were used in US schools from the 1930s through the 1960s. By 1970, most schools replaced them with books that had newer ideas and methods for teaching children to read. But the book held by Mimi’s mother was fairly new. “Oh Mimi, these books bring back memories, and I’m sure a lot of people have fond memories of using them when they learned how to read, but the truth is they were terrible. They were based on controlled vocabulary and repetition. Most of the kids were bored beyond belief because nothing happened in the stories.


“So what were the books about? “They were supposed to be about real life, but most of the kids I taught did not lead lives like Dick and Jane’s family. Neither did we. The father in the book wore a suit to work and the mother wore gloves and a hat to the grocery store. We grew up in a blue collar neighborhood. And no one talked like they did. They said things like ‘Look Up Jane. Look. Look Up Up.’ And that’s not the worst of it, Mimi. Research showed that US children were poor readers. When compared to children in other countries, it looked very bad indeed. Dick and Jane readers were blamed” “So why were they used for so long?” “Sets were made for pre-reading as well as for a variety of school subjects, like health and science. They were made for several grade levels as well. My guess is that school districts were reluctant to change once they spent a fortune buying several sets of the books. They must have had to justify the money spent. Besides, for a long time, they were considered cutting edge, and there wasn’t much competition.” “The publisher must have made a fortune.” “Oh yes. They even made special editions for Catholic schools and other religious groups. Every school in America could use them. But a few things changed all that Mimi. One was a book written 1955 by Rudolf Flesch, called Why Johnny Can’t Read. The author really blasted the books. Another ground-breaking publication was by Theodore Geisel. A publisher handed a list of 220 words to Geisel, and asked him to play around with it. His result changed everything. Kids wanted to read. Parents loved it as much as kids. It was ironic Mimi, Theodore Geisel used the same method of controlled vocabulary as the Dick and Jane books. He added some phonics and lots of imagination and his result, The Cat in the Hat blew Dick and Jane away.” “ So Mom, did Geisel or as we know him, Dr. Seuss, put the Dick and Jane readers out of business.?” “Not really. The publisher of Dick and Jane tried to meet the needs of a changing America by introducing children from other cultures, and children of color. But it was too little too late. They held on for 13 more years, but by 1970, most schools had replaced Dick and Jane.” “Mom if you’re so critical of Dick and Jane, why did you save some of the books.? I always thought you were sentimental about them.” “Yes Mimi, I guess it’s a love-hate relationship. As a teacher, I felt frustrated by Dick and Jane. And you know Mimi, 30 years from now, the debate will still be going on about what’s best for teaching kids to read. But like most people, I do feel nostalgic about things from the past. The Dick and Jane books had good intentions, and there’s no denying that they opened the door to new ideas in the teaching of reading.” “ Dick and Jane remind me of the 1950s when I was learning to read. They remind me of my family and of growing up. They are such a big part of American life.” Mimi and her mom both thumbed through the book. It was published recently, but still had the look of the original Dick and Jane books. But there was a twist.

Making Memories one Plate at a Time Collecting antique plates has always been a passion of mine. I remember as a child, looking at my Mother’s china cabinet and longing to use the beautiful Homer-Laughlin plates she proudly displayed behind the glass. These plates were only used at Christmas time in our home and they made you feel like a Princess. Although these plates are not the most expensive china, to our family they were amazing. These plates eventually became mine, and later, I presented them to my daughter when she married. They still make me feel special whenever I see them. People who don’t have a passion for collecting often wonder why we collect plates? To some they may seem worthless or things that add clutter a home. For me, each plate is a memory. I love to use plates in my home decor. They are perfect not only on our tables but on your walls. Using special plates for holidays such as Christmas, Easter, Thanksgiving, Valentine’s Day and Mother’s Day can make your table feel extra special. With all kinds of styles and designs, it will not take long to find what fits your home perfectly. All these pieces are beautiful and timeless in their own way. They reflect the period they were created in, especially those that are hand painted. My favorite plates to collect are Haviland, Limoges. My sweet pre-teen, Granddaughter was recently sharing with her other Grandma, how beautifully I set a table. To her plates, have already become a lovely memory of a special day. I already have a set picked out just to pass down to her. Collecting plates helps preserve memories, even when we do not realize it. So be creative, put your lovely plates out for all to see. Spring Organization As I sit in my sunroom overlooking the 20+ inches of snow that the last nor’ester brought us, it is hard to imagine that I am writing an article for the spring magazine. I have to dig deep to Think Spring. I wrap my hands around my warm cup of White Minty Mint tea and as I take a sip and breathe in the fresh minty smell, I am reminded of my herb and flower garden. That is when I spot my shelf of scrap fabric project books. I have so many ideas for using my scraps, but going through the ten plus bins of leftover fabric to find the right fabric for any project is a daunting task. My husband and I are scientists, so we like our lives to be organized and categorized. Unfortunately, when it comes to my fabric scraps, I have been less than diligent. That leads me back to my thought of spring. It’s time for spring cleaning and organizing all those scraps. I dump my first bin onto the cutting table. As I look at the huge pile, my first thought is to once again abandon ship and put the scraps back into the bin for another time. Luckily, my husband is standing there drinking his morning coffee and giving me that “You really need to organize these scraps this time” look, so I plough ahead. My first step is to separate the larger pieces from the smaller ones. Any cut that is ¼ yard or more is put into one pile. I call these my SCRAPS. Cuts that are smaller than ¼ yard are put into another pile. I call these my SNIPPETS. I also save selvages, so I immediately find a smaller clear bin for all of the selvages. For now, I grab an index card and write “SELVAGES” and tape it too my little bin. Yeah! One pile off the table and organized. My next step is to separate the holiday themed fabrics from the rest. When I’m finished, I have two piles of holiday themed fabric. One pile of SCRAPS and one pile of SNIPPETS. I grab two more small clear bins and label them HOLIDAY SCRAPS and HOLIDAY SNIPPETS. In go the appropriate fabrics and I move onto the next level of organization. I then decide to organize by color. Based on my piles, I chose to organize based on the following colors: red, yellow/gold, orange/rust, green, blue, purple/pink, brown/black/tan, and cream/white/ivory. First I attack my SCRAP pile. Smaller bins are labeled with the word SCRAP and the color. In go the appropriate fabrics. Progress! I can finally see my cutting mat again! Next, the SNIPPETS are organized by color and put in the appropriately labeled bins. Success! One big bin of fabric leftovers organized. I want to be able to store my SCRAPS, SNIPPETS, and SELVAGES in my studio where I can see them so I decide because of space requirements, I can’t organize all of large bins at once. Instead, I challenge myself to use only the SCRAPS, SNIPPETS or SELVAGES in the organized bins for my first project. The bins make stacking easy. Because they are clear I can see how full each bin is and also see the colors through them. As I start to use up my SCRAPS, SNIPPETS, and SELVAGES, I can see which bins need to be restocked from my larger leftover fabric bins. I also decide that as I have more leftover fabrics from projects I will immediately place them in the proper bin which means no more huge piles of fabric to go through. This should also allow me to finally get through my large bins giving me much needed space and time. Plus, I’ll finally be able to put those leftover fabrics to use making the scrap fabric projects I have in mind. Spring has sprung…at least in my studio!

The Everyday Diva does not loose herself in her role...she acknowledges first of all that she is a woman fulfilling diverse roles. Today, there is a new revival taking place that has slowly been gaining momentum over the years. This revival is not about women wearing high heels, burning bras or carry signs...it is simply about women making a commitment, taking action and possessing the desire to make a difference through leadership. (However, high heel shoes will always represent the heart of a Diva woman and find a place on the runway for successful female leaders). We are at a major transition point in many aspects of our global world. Women are becoming more educated, taking on leadership roles and creating a voice in many areas of the marketplace. According to the Bureau of Labor Statistics women now make up nearly half of the workforce. It is a time for women to lean in to the changing needs in our society and businesses as defined by, Facebook’s COO Sheryl Sandberg in her new book, “Lean In: Women, Work, and the Will to Lead.” She speaks of female leaders and their responsibility to get involved. It is very important for women to step up to the plate and lead without losing their Diva spirit...the very gift that gives them a powerful presence. That Diva spirit is what the world needs as we shift to a focus on personal and professional life balance, cooperation and the value of head and heart as critical business competencies.

The time we face is so well described by the 2004 Nobel Peace Prize winner, Wangari Maathai. She says, “In the course of history, there comes a time when humanity is called to shift to a new level of consciousness, to reach a higher moral ground and a time when we have to shed our fear and give hope to each other. Wining with Cindy Summer is almost here. I can feel the warm wind blowing, birds chirping, and spending more time playing with my animals outside. It is a great time for BBQ and relaxing under the trees with a view of the city skyline and watching the sunset in the west. Looking forward to dinner with friends the chef and I start to plan our menu and sample some wines. We found a lovely 2012 California Chardonnay at our local market which won the “Best Buy� 2011 from wine enthusiast magazine. Perfect for our summer menu and it was called Flipflop. I imagined walking on the beach wearing my flip flops and relaxing. It was reasonably priced and we really liked this wine and it would go well with our menu. The wine description said: medium bodied, rich chardonnay with pineapple, soft vanilla and a long lingering finish. Creamy, toasted oak notes pair well with wood-fired Neapolitan pizza, mac and cheese or chicken Caesar salad. We decided to grill turkey burgers and assorted vegetables, healthy choices such as bell peppers, onions, zucchini, and tomatoes. We also prepared a Caesar salad, as well as a sweet potato salad with quinoa. For dessert we kept it simple and healthy, fresh fruit, topped with some Greek yogurt, and roasted blanched almonds, such a summer treat. Enjoy summer and cheers!
