New Year Bliss The definition of “bliss” according to Merriam Webster, is “complete happiness.” How do you achieve complete happiness in the new year? You may not be able to achieve complete happiness, but you could resolve to be happier in the new year, all year long. The first thing that comes to my mind to make my life happier, is to remove the negatives and replace with positives. That can mean the negative in anything. Take any situation and turn it around to a positive situation. It may not always be clear how to do that, but many times, it is an easy fix. Change your way of thinking. If you wake up saying I feel bad, and say that several times during the day, you will feel bad. If you wake up not feeling your best, say it is going to be a great day and focus on all the good things, it will be a much better day! If you are in a negative financial situation, work towards making that better. Sometimes, spending less and trying to increase your income over time, will make that situation positive. The new year is always a good starting point to work on a better financial situation. You can set financial goals for the year and look back mid year to see the progress you have made. Make your day happier - This is easy. You know your daily routine. Prepare for it the night before. If you have children that are in school, make sure their clothes are laid out, backpacks and lunches are packed the night before. This way you are not running around looking for everything, and your morning will go smoother. Get up before your children, and do what you need to do, before they wake up. Breakfast on the table, before they awake is a good trick also! If you do not have children, your mornings can still be very hectic. Plan the night before. Know what you are going to wear the next day so you are not searching for that favorite sweater. Have you clothes hanging up near where you get dressed, ready to jump in to! Have any projects or things that you have to bring to work, laid out on the table or counter along with those car keys and cell phone. No running around searching for lost keys or cell phones! Lastly and most importantly - simply “be nice.” Being kind to others will only make you happier. A simple smile or a good gesture can make you and the recipient have a much better day. Pecan and Cream Cheese Scones Ingredients: 2 cups all purpose flour Âź cup granulated sugar 2 teaspoons baking powder 1 teaspoons salt 3 tablespoons butter
3 tablespoons cream cheese 2/3 cup milk 1 egg ½ cup chopped pecans toasted 1 egg yolk 2 tablespoons cold water
Method: Preheat oven to 350 degrees. Lightly coat a baking pan with cooking spray Sift together the flour, salt, sugar and baking powder. Cut the butter and cream cheese into the flour ingredients with a pastry cutter or 2 knives until crumbly. Beat together the milk and whole egg. Pour into the dry ingredients and stir until well blended. Dough will be sticky. Add the chopped pecans and blend well. For drop scones, use an ice cream scoop and scoop out onto prepared baking sheet. If wedges are desired, roll out on a lightly floured board into a circle approximately 3/4 to 1 inch thick and cut into wedges before transferring to the prepared baking sheet. Beat the egg yolk and water, and brush the tops of the scones with a pastry brush to glaze. Bake for 20-25 minutes until golden brown. Serve warm or cooled, with butter or clotted cream and jam. Bohemian Coffee Cake 2 ½ cups flour 1 cup brown sugar 1 cup white sugar 1 cup Wesson oil 1 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg
1 tsp. baking soda 2 eggs 1 tsp. vanilla 1 cup buttermilk 1 cup chopped pecans or walnuts 1 cup coconut
Mix well – Pour into bundt pan that has been greased and floured. Bake at 350 for 45 minutes. Frosting 1 8 oz. cream cheese softened 1 box powdered sugar ½ stick butter softened 1 cup chopped pecans or walnuts 1 tsp. vanilla Mix cheese and butter, add sugar, nuts and vanilla. Chocolate Cappuccino Cinnamon Cookies 2 sticks of butter, softened 2 cups packed brown sugar 2 eggs 2 ¾ cups flour ¼ cup cocoa 1 tablespoon instant coffee ½ tsp. baking powder ½ tsp. baking soda ½ tsp. salt ¼ tsp. vanilla 1 cup of Hershey’s cinnamon chips 1 cup of semi-sweet chocolate chips Beat butter at medium speed with electric mixer until creamy. Gradually add brown sugar, beating well. Add eggs, beating until blended. Combine flour and next 5 ingredients. Gradually add to butter mixture, beating at low speed just until blended. Add vanilla and stir. Stir in cinnamon chips and chocolate chips. Chill dough. Drop by rounded tablespoonfuls, about 2 inches apart, onto baking sheets coated with cooking spray. Bake at 350 for 8-10 minutes. Cool on baking sheets for 5 minutes. Remove to wire racks to cool completely. Makes 4 dozen cookies. Recipe courtesy of www.beadsmitten.com
