ave you heard what all the “Cool Suburbs” are doing? As millennials age and their families expand they’ve been trading in their urban digs for a house in the ‘burbs. They want more space, good schools, and affordability—but don’t want to give up the fun and convenience of accessing dining, shopping, and a variety of entertainment spots. The movement is being called “hipsturbia,” and it’s one of the major themes identified in the Emerging Trends in Real Estate 2020, a report by Urban Land Institute and PwC. Byron Carlock, PwC’s Real Estate Leader says “We’re seeing millennials and Gen Zers deciding to do life together. We’re seeing home sharing, ride sharing and cost sharing. A lot of growth is

happening in cities around college towns, since they have a constant supply of young people and many decide to stay there after they graduate.” One of Chicago’s own suburbs, Evanston, is seeing a hipsturbia revival. Located near Northwestern University, residents enjoy rooftop bars, downtown shopping and access to and from the Chicago Loop via the CTA purple line. And in the Southwest, the hipsturbia formula is also happening in Tempe, Arizona. Located near Arizona State University, you’ll find coffee shops, restaurants, breweries, pubs, retail and entertainment—24/7. BAKE THIS! Irish Soda Bread Pudding With St Patrick’s Day right around the corner, I’m reminded how much I love Irish Soda Bread (Mariano’s has a great one!) and turning it into bread pudding takes it to a whole new level! INGREDIENTS • 2 tablespoons unsalted butter, softened • 8 eggs, beaten • 1 cup heavy cream • 1 orange, zested and juiced • ½ cup light brown sugar • 1 teaspoon ground cinnamon • 1 teaspoon ground cardamom • ½ teaspoon vanilla extract • ½ teaspoon salt • 3 cups Irish Soda Bread cubed and toasted SAUCE • ½ cup butter • 1 cup light brown sugar • ¼ teaspoon salt • 1 teaspoon vanilla • ½ cup evaporated milk (The sauce can be made ahead, then warmed in the microwave.)

INSTRUCTIONS 1. Preheat oven to 375˚F. 2. Lightly grease a 9”x13” baking dish and set aside. 3. Place eggs, cream, orange zest, juice, sugar, cinnamon, cardamom, and salt in a mixing bowl and whisk together until fully combined. 4. Place cubes of bread into another mixing bowl and pour egg mixture over. Fold together until well combined. 5. Pour mixture into the prepared baking dish and allow mixture to sit for 30 minutes.

6. Place dish in the oven and bake for 30 to 40 minutes or until mixture has cooked through and is toasted on top, but soft and slightly custard-like in the center. 7. Allow the pudding to cool for 10-15. 8. To make sauce, melt butter and brown sugar over medium heat. 9. Bring to a boil, and remove from the heat. 10. Whisk in the salt, vanilla, and milk. 11. Cut cooled pudding into squares, and top each with hot sauce. n
