East of Malaga & Nerja
Nerja – The charming town of Nerja boarders the province of Granada, yet is just 45 minutes’ drive from the city of Malaga and its International airport. Torremolinos – Torremolinos is a city with lots to offer tourists and residents, just 13km from Malaga and its airport. As well as its 7km of coastline and beautiful sandy beaches connected by a seaside promenade, there’s a vibrant shopping area, excellent restaurants, bars and nightlife and plenty of green space. It has around 69,000 inhabitants and is popular with British tourists and residents with a large stock of well-priced apartments, very close to the airport and within easy reach of many amenities. There is a legendary nightlife, with bars, and night clubs and a thriving gay scene, but it’s family friendly too with the largest water park on the Costa del Sol and a Crocodile Park. Torremolinos is a very practical and affordable option, really convenient for the airport and well-connected by train and bus so there’s no need for a car. Benalmádena – 5km west of Torremolinos is the popular town of Benalmádena and its many attractions. It comprises of three main parts, a traditional white-washed village in the hills (Benalmádena Pueblo), the coastal area (Benalmádena Costa) dominated by the iconic Bil-Bil Castle, an award-winning marina and an enormous 200,000m2 public park, and the residential and entertainment district around Plaza de España (Arroyo de la Miel), with its bars, restaurants, theme park and ice rink. Families like the choice of schools, the private hospital, shopping and entertainment options. Younger folks love to party in 24 Hour Square, soak up the sun and try their luck in the casino. Retired visitors like to retreat to the peace of the traditional village and its surrounding stunning countryside and golf courses. There’s something for everyone!

The District of Mijas
Fuengirola One of the Costa del Sol’s favourite resorts for tourists and foreign residents alike, Fuengirola has so much to offer its 76,000 residents and much more to it when you come off its legendary seafront promenade and venture into its heart.

Fuengirola has seven wide, sandy beaches, which have all been awarded the prestigious Blue Flag, recognizing their cleanliness, amenities and excellent water quality. The 8km coastline stretches from the iconic Sohail Castle, with a long, well maintained seaside promenade, with a wide range of bars and restaurants.
Just one street back from the sea is the gastronomic heart of Fuengirola, which brings together lots of fantastic fish restaurants and a great buzz. Moving back a few more streets, you will find a thriving shopping street, lovely church square and a really vibrant residential area, with the widest mix of nationalities of any town on the Costa del Sol. Other attractive features of this great town are 350,000m2 of green space, a fantastic zoo, good schools, excellent shopping and a packed calendar of events. The Feria Internacional de los Pueblos, is one of the largest and most popular, paying homage to the wide range of nationalities that call Fuengirola home. There are a wide range of property options available in Fuengirola and this is the last town to be linked to Malaga by train, which makes it an attractive option for frequent travellers.
Mijas municipality is located 28km away from Malaga and stretches from a beautiful mountain range with its traditional white washed village (Mijas Pueblo) down to the sea, passing through modern residential areas very popular with British residents and tourists. Its 12km coastal strip has several great beaches, a new seafront promenade and inland there are 12 world-class golf courses.
La Cala de Mijas – Known as La Cala, this little seaside town is very popular for its lovely bay with wide sandy beach, large squares and open spaces with playgrounds, coffee shops and restaurants, a weekly market and lively community.
Riviera del Sol – Riviera is a peaceful development rising up from the coast road to the motorway, with a large amount of town houses which are very affordable. There are small pockets of amenities and a few small commercial centres and restaurants scattered around the area, however, for most things, residents here need to go to either Calahonda or La Cala. Calahonda – A large residential area comprising of villas, apartments and town houses, this is a selfcontained community of mainly British residents. It is very popular because it includes many bars and cafes, commercial areas with shops, banks and healthcare centres. The El Zoco centre has lots of really good quality restaurants and relaxed bars with more springing up all round Calahonda.

District of Marbella
Marbella Town Marbella is a lovely Spanish town with an affluent air, lots of charm, and a steady year round population. There is a well-developed and very pretty seaside promenade lined with bars and restaurants which is a must for a stroll. There is a marina, which is a great place for eating, drinking and partying, as well as a “fishing port” which is famous for its row of traditional fisherman’s cottages specialising in fried fish.

The roads between the sea and the main shopping street (Ricardo Soriano) have lots of residential options, from marble clad developments with highly desirable apartments and penthouses, to more traditional apartment blocks, as well as some great restaurants and bars. The sea and the shopping area is linked by the famous Avenida del Mar, lined with Dali statues, leading up to a pretty marble paved park with a fountain, shaded by trees and perfumed by flowers.
Ricardo Soriano is a fairly standard high street with shops, supermarkets, banks, cafes and residential blocks, but tucked behind it is Marbella’s hidden treasure – the Old Town. This is a maze of winding streets, whitewashed houses, squares and chapels with charm a plenty. It has been sensitively developed with independent shops, cafes and restaurants to discover and is a joy to wander around, particularly on a warm summer evening. Behind the Old Town are more peaceful residential areas where you will find schools, post offices, health centres, supermarkets etc. Just off the motorway is the main shopping centre for the area with over 150 shops, a cinema, restaurants and a hypermarket. It’s great for families and boasts a wonderful restaurant scene with cuisines from all over the world, not to mention several Michelin starred restaurants!
The Marbella District stretches from Cabopino, all the way to San Pedro, through the iconic town of Marbella and the worldfamous luxury destination of Puerto Banus. It has a population of more than 140,000, and includes the Costa del Sol hospital, 16 golf courses, 4 marinas, 25 beaches, 20 spas, fine dining restaurants, exclusive beach clubs and great shopping for all pockets.
Cabopino – This charming marina is lined with restaurants and bars. The marina leads on to one of the most wonderful beaches in the area, a perfect sandy bay with clear shallow water for kids and then on to dunes and a naturist beach. Elviria – A pretty, as well as practical self-contained residential area, Elviria is popular for its range of amenities such as bars, restaurants, banks and supermarkets, schools, parks and open spaces, and modern developments of apartments, town houses and villas, built with foreign tastes in mind. It is within easy reach of many golf courses and lovely countryside, 15 minutes from central Marbella and famous for having some of the best beaches in the area and the legendary beach club of Nikki Beach. Las Chapas – This affordable, quiet residential area mainly comprises of private villas and includes the golf course of Santa Marina, lovely open spaces including a pine forest and access to the area’s great beaches, just 15 minutes away from Marbella. 11
Golden Mile – The Golden Mile is one of the most prime stretches of real estate in the world, connecting Marbella with Puerto Banus. Strolling down the lovely seafront promenade, or driving down the main road with its supermarkets, bars, restaurants and our RE/MAX Top office, it’s hard to guess what amazing properties lay between.
This is the location for some of the biggest and most expensive villas, with gates protecting the privacy of some of the world’s richest people. There are also lovely developments of pretty town houses running down to the sea, with lots of charm, as well as some more modern developments with amazing apartments and penthouses
Puerto Banus – Puerto Banus is a superb marina lined with designer boutiques and full of superyachts, famous around the world for its shopping and luxury lifestyle. There are also lovely restaurants and bars, supercars on every corner and a refined, polished feel. Back from the port, is more excellent shopping with a shopping centre and a massive El Corte Ingles department store, great restaurants and a large square, which plays host to a summer market and many flagship events. Clubs such as Tibu and Dreamers are set back in the town 12
Nueva Andalucia – A residential area North of Puerto Banus, Nueva Andalucia boasts a wide range of properties such as town houses and villas around golf courses, apartments and penthouses on large developments and town houses on gated communities. The assembled SISMO system is a continuous monolithic concrete system without fire leakage through the assembled system. The polystyrene used is selfextinguishing in compliance with the DIN 4102 rules. SISMO building technology allows the use of alternative infill materials for specific applications. Fire resistant tests carried out on different types of SISMO modules have given very satisfactory results.

The superior design of the SISMO module provides maximum strength during concrete placement. Once complete, SISMO structures attain a high structural integrity. Tests and experience have shown that the strength of a SISMO structure is far greater than a comparable traditional structure, and insulated formwork improves the concrete cure quality. ucked away in Hotel Puente Romano’s lush tropical gardens is Roberto Ristorante, a fine dining establishment with some of the most delicious Mediterranean food I have ever tasted. Not only is the food exquisite, but the location is unsurpassed, with uninterrupted views of the Mediterranean from their huge terrace and glass fronted dining room. Roberto is the perfect place to treat yourself to a really special experience and ticks all the boxes! It delivers gorgeous sea views, a relaxed yet magical ambience (complete with soft lighting and melodic piano music), food which is beautifully presented yet packed with flavour and some of the best service I have had on the Costa del Sol. Throughout our evening we were made to feel like VIPs and all the staff showed extraordinary knowledge of the menu. Our very helpful waiter recommended we try the taster menu to properly experience the cuisine and it was a real treat. For 69€ per person we enjoyed seven sublime yet dainty courses which left us delighted with the food, without feeling uncomfortably full. We also took the wine pairing option which really enhanced the experience. However you can enjoy a meal here for a more modest sum. Prices start from 15€ for a starter, 19€ for a main and 12€ for a desert. Every course was delicious, but here are a few of the stand out dishes. Finely sliced veal with a tuna sauce, tempura capers, micro herbs and edible flowers - a stunning looking plate which really packed a punch. Served with a light, fresh rose cava made in the French style which was lovely and refreshing. A luxurious and creamy lobster bisque with a seared scallop in the middle. When they lifted the lid on the little bowl, the smell of the sea hit you and you knew you were in for a treat. The bisque was paired with a 20 year old Oloroso sherry from Jerez with the taste of California raisins and a sour note which took the dish to another level. A beautifully tempered chocolate “cannelloni” filled with creamy mousse, on top of a light chocolate sponge and served with candied nuts and juicy orange segments marinated in wine. The balance of rich and sharp flavours and different textures made this a real taste sensation. Paired with a Malaga desert wine, with just the right level of sweetness. Dining under the stars THE warm summer evenings are finally here and dining al fresco is one of the many pleasures of this time of year in Marbella. One of the signs that the season has really started is the Marbella Club Grill leaving its winter home and heading out onto the spacious terrace for dining under the stars. Candles are lit, the gentle buzz of conversation and laughter is all around, the smell of the flowers mingles with the aroma of classic cooking and the scene is set for a very special evening. This iconic restaurant turned 50 in 2012 and has been delighting customers with classic Mediterranean cuisine cooked with flair and accompanied by superb service since 1962. Overseen by Executive Chef Juan Galvez the menu changes several times of year, but always features high quality produce prepared with care and allowed to shine. The centrepiece of the winter restaurant, the open grill, is still key to the menu, turning out perfectly cooked cuts of meats such as fillet steak en brochette
with herbs, chateaubriand with bearnaise sauce or the entrecote Rocky with Argentine sauce (named after the first grill chef). The lamb cutlets with mint sauce are divine, sweet and tender meat, with a smoky chargrilled taste and accompanied with fresh mint sauce – highly recommended. The soufflé s are legendary – choose from a cheese option for starters or decadent chocolate or Grand Marnier versions for desert. All are light as a feather, risen to perfection, soft and unctuous and totally delicious. Just remember that they take 20 minutes to prepare, so order them ahead of time if you can. If you prefer something lighter, the monkfish and clam soup with fennel has crystal clear broth and the most delicate and fresh flavours and the tartar of red prawn with avocado is a delight. If you’re not sure, simply check with the ever helpful maitre’d Alfonso who is always full of recommendations and Sommelier Angel can match each course to perfection. Whatever you choose will be served with aplomb and presented under a cloche, a touch which always makes the diner feel special. Marbella Mum raising money to support underprivileged kids in Malaga Hessia Fernandes has just launched a campaign to raise money for the Nena Paine Foundation for underprivileged children in Malaga. She will be undertaking the challenging trek to Everest Base Camp on the 7th of October 2018 on behalf of this kids’ charity. Her aim is to raise €6,000 to fund a minibus, which will be used to transport the kids to activities and distribute food to needy families. Ahead of the trek, we spoke to this philanthropic Mum of two to find out more about her and why she’s taking on this challenge.
Hi Hessia, please tell us a little about yourself I am a Consulting Sales Director for Europe, Middle East and Africa for Oracle, an American computer technology company. I am also a Mum of two teenagers. I am French, from a little village between France and Switzerland where most of my family still live. I have lived in Germany and London and moved over to Marbella 15 years ago when my children were small. How does raising money for charity make you feel? It may sound cheesy, but the first word that comes to mind is “complete”. I think it’s important to have the cycle of giving and receiving and giving to charity makes me feel responsible. I think it’s also very important to set a good example for my children and make them appreciate how privileged they are and that it is important to think about others and take responsibility to help those who need it. What other charity work have you done before? I love a challenge, so this is my third charity trek. I climbed Mount Atlas to deliver shoes to children in remote Moroccan villages and last year I climbed Kilimanjaro to raise funds for the Samaritans, a charity in the UK. I am passionate about sports and living an active life, so all my challenges revolve around sport and activity and pushing myself to the limit. Why do you raise money for charity? I was the youngest of ten children from a poor family in rural France and we received a lot of charity from the community, including clothes and shoes. That charity was so important for us and it left an impression on me.
I think it’s important to give back, so this is my way to thank people for what they gave me. Also, living in Marbella we are surrounded by so much wealth, so I want to take advantage of my privilege and give back to those who are not so fortunate. Tell us a bit more about your latest challenge
I will be trekking to Everest Base Camp in Nepal on the 7th October. It is a demanding 10-day trek which takes you to very high altitudes and has some tricky technical sections. I will be hiking from 1,852 meters up to 5,550 meters, which is demanding physically and mentally. The biggest issue is the altitude sickness, which was something I really suffered from when I climbed Kilimanjaro. It is also very cold at night, with a risk of avalanche as you climb higher and ever changing weather conditions add to the danger. This is a completely self-funded expedition, so every Euro we raise will go directly to the children’s charity and we hope to be able to hit our goal of raising €6,000 so the charity can buy the minibus that it desperately needs.
Why have you chosen Everest Base Camp? The Mount Kilimanjaro and Everest Base Camp treks rank as two of the most popular “epic mountain” treks in the world. Both mountains are members of the seven summits, the highest peaks of the seven continents, so Everest seemed like the obvious next step! I couldn’t climb to the summit of Everest, as you need to be a skilled mountaineer, but I felt that the trek up to base camp would give me a great experience, be a real challenge and something people could get behind so I could raise money for this great charity.
Why are you fundraising for Nena Paine? As a Mum of two children, I really wanted to raise money for a kids’ charity and after being informed about The Nena Paine Foundation from a colleague at Oracle, I felt it was a good choice. By supporting a smaller charity, we can really make a difference by raising awareness of the great work they do and also making a major contribution by funding a minibus which will make things so much easier for taking the kids out and about and also distributing food to people in need. I went to visit the project in Malaga and was so impressed by the work they were doing. The centre is a place where kids can go and receive help with education and be steered through difficulties in their lives. There are 19 teachers and psychologists supporting 240 kids from low-income families who have been identified at risk of social exclusion and who may be struggling at school. As well as helping them to improve their grades, and give them a safe place to be after school to do their homework, they also serve hot meals to 20 of the most vulnerable children. On top of this, they have started to distribute food to families as a Food Bank. They teach self-confidence and make sure all the kids know that just because they are not from wealthy families that they are not worthless and that they have the potential for a bright future. Education and support such as this is vital for breaking the cycle of poverty and giving children a way out of a bad situation so I really wanted to help them. Interview with Chef Jaume Puigdengolas from Skina and ‘Dine with the Stars’ On the 7th and 8th of September, three renowned Michelin starred chefs cooked together to create a 12 course culinary extravaganza at the 5* Kempinski Hotel Bahia Estepona. Jaume Puigdengolas from Skina, Diego Gallegos from Sollo and Mauricio Giovanini from Messina each cooked four amazing courses and Ana Núñez, Head Sommelier of Kempinski Hotel Bahia expertly paired them with wines. Each dish was spectacular, and often surprising, such as the depth of flavour from the Sisho leaf and apple tartar from Skina, which managed to be both light, yet complex and was the first time most diners had sampled this Japanese leaf. Other highlights from Skina included Amberjack fish cooked in yogurt and served with textures of beetroot, a chestnut mushroom ravioli which was meaty and rich and full of umami, and their Yuzu snow which was both creamy and light and bursting with a citrus tang. Spanish Chef Jaume Puigdengolas Rey has studied and worked in Michelin star kitchens for many years, including with three-star chef Santi Santamaria in Can Fabes and Dubai. In 2011 he became the Head Chef for the Marbella restaurant Skina, which received its first Michelin star in 2008 and has gone from strength to strength ever since. Jaume has an individual style which is centred around the best quality products and traditional Andalusian flavours, with a playful avante-garde approach which brings out the maximum flavour from every ingredient and every dish. His main motivation is creating sensory perfection.
We spoke to him after the event to find out more. 1. Why did you decide to be a chef? - Eating well and cooking together at home has always been a very important part of my family life which I lived and breathed since I was young. My Dad was a huge influence on me, even though he wasn’t a professional chef he was a real inspiration. 2. What would you say is the style of your food? - My style is very personal, I concentrate on flavour and the best ingredients, always playing with seasonal products and trying to make them shine! 3. What is the achievement you are most proud of? - Maintaining the Michelin star at Skina year after year and constantly pushing it forward is very important to me. 4. What do you think about the culinary talent on the Costa del Sol? - You can see each year that there’s more talent and the bar is being pushed higher and this is really important and beneficial for all of us working in the industry. We have to keep on pushing to make it better still! 5. What should gastro tourists do when they visit the Costa del Sol? - Above all they should enjoy and take advantage of the amazing diversity of cuisine and produce that we have in this area. 6. How has it been to collaborate with two other Michelin starred chefs for Dine with the Stars? - It’s been a wonderful experience to be able to share with these friends and fellow chefs and the setting was incredible and full of magic. We all said we’d love to do it every year. 7. What is your favourite dish on the menu and why? -
The Beets, amberjack fish and dairy dish is probably my favourite as it’s very fresh and delicious, perfect for summer in Marbella.
8. Do you have anything exciting coming up this year at your restaurant? - We’re always trying to improve and get better – that’s the trick to our success and this year we’re heading over to Hong Kong for a few weeks to create a pop-up Skina in Asia which will be a wonderful way for more people to come and try our food. 9. Personal Experiences OF EMS TRAINING By Georgina Shaw
I
am a 33 year old Mum of two-year old Lucas, I enjoy working out but never manage to find the time or the long term motivation. My aim when I started training at Look Your Best was to find a way to quickly lose my “wobbly bits”, without losing weight and try to find something which can incorporate into our very busy schedule.
The idea appealed to me, as it’s just a short 20 minute session, but because of the EMS technology, you can work 90% of your muscles at once and therefore get the equivalent results of 120 minutes in the gym! It can also target problem areas such as your tummy as the muscles are working harder for longer. It also strengthens your back, which I worry about as my toddler gets heavier and heavier.
How the training works
At the start of training they give you a comprehensive body test with their clever In Body machine which tells you your BMI, muscle mass, percentage of body fat, hydration and more. This is used to set goals and showed that I needed to put on 4.1kg of muscle, but lose 1.7kg of fat.
The normal training session consists of enjoying an isotonic drink, then being given cycle shorts and a long sleeved t-shirt and socks to work out in. You are then helped into the special suits which look a bit Lara Croft (in my mind anyway) to start the workout. It’s thanks to this clever equipment that you can get such great results in such a short time, as the suit contains electrodes in all the right places to make your muscles work really hard throughout, so if you’re doing a squat, the suit is also working your arms, tummy, back etc. The EMS feels like a strong pulse or tickle, which you can really feel working but isn’t uncomfortable. The session includes muscle building, cardio and then stretching and relaxation – a lot to pack in over 20 minutes. This is a proper workout with a personal trainer, but those pulses really make you work a lot harder and achieve better results and the interval training nature of the class means you achieve a lot in a short amount of time. Having the personal trainer there checking you’re doing the movements properly and motivating you to keep up the intensity is really valu-
able and definitely helps us to get the most out of the session. Following a shower in their spacious and pristine changing rooms, you are given a protein shake and can relax on their sofas. We’re so busy that we haven’t been able to do the recommended 2 sessions per week. However the results are amazing, after 5 sessions split over 3 weeks I achieved: * An increase in muscle mass from 20.5kg to 21.9kg * A decrease in body fat from 14.4kg to 12.8kg * A decrease in percentage body fat from 27.3% to 23.9% That was with a lower frequency than recommended and no change to eating or activity habits – amazing! f you love Spanish cuisine, don’t miss the Estepona Ham Festival from the 10th to the 15th of August. Called the IV Certamen Mundial de Jamón Popi Ciudad de Estepona and organised by champion ham carver Popi, this is a celebration of one of the best Spanish products, showcasing the breeders, producers and skilled carvers over five days. Around 60 producers of jamon exhibit their wares and stalls stretch 1.5 kilometres along the seafront. You can buy a plate of ham for 5 euros€ and try the many varieties of this amazing product, all washed down with some local wine or beer from the bars which also line the seafront promenade. The atmosphere is fantastic and it runs from 8pm to 2am, accompanied by some excellent concerts and live music. The pretty, charming and traditional Spanish town of Estepona is a foodie’s paradise, with around 350 bars and restaurants. The atmosphere is great, as you can stroll along, having a drink, choosing a restaurant, then 36 OCIO magazine
move on to an ice cream shop for dessert, all without having to worry about cars. Calle Real ends at a pretty square with a fountain, and there are many other great restaurants on either side of this road for you to choose from, so have an explore and see what kind of food you fancy. n

Lita grew up on the streets of Barcelona in a poor gypsy community, finally being adopted when she was twelve and being introduced to the magical world of art. Joseph Klibansky makes large-scale, idealistic digital paintings that are built up through hundreds of layers of photography enriched with acrylic paint on archival cotton paper overlaid with a liquid resin. His work conveys a layering and compression of time, space and place creating new narratives by creating dreamy images of cities, combining past and future, with a dramatic dynamism that for the artist becomes a way of signifying his perception of the rapidly changing digital culture as well as suggesting his personal journey.
Joseph Klibansky was born in 1984 in Cape Town and grew up in a creative and internationallyoriented environment. In his teens, he became fascinated by the possibilities offered by computer art and digital imagery. He started to merge hundreds of images into powerful compositions, enhanced by computer artwork and often combined with a variety of painting techniques.

Thomas Stork, Executive Chef of Hotel Puente Romano named Best Chef in Andalucía I
n February Thomas Stork was awarded the accolade of Best Chef in Andalucia as part of the Andalucian Gastronomy Awards 2013. Thomas is currently the Executive Chef responsible for the cuisine across the numerous restaurants in the Hotel Puente Romano and this award is a high point in a long and illustrious
career. This German born chef began his culinary career at just 14, working in a very humble kitchen, learning the basic skills and gaining a passion for food. In 1992 he moved to a Michelin star kitchen and from there got his dream job working in the three Michelin star restaurant La “Residenz Heinz Winkler”. He
said “I started working with Heinz Winkler in 1994 and it was better than the best university. Working there was a dream of all aspiring chefs and for me to come from a small restaurant in a little town to form a big part of his kitchen team was really an honour and privilege. Marbella Town hall works hard to encourage tourism To protect the important tourism sector, Marbella Town hall has implemented a range of initiatives to promote the area and encourage more investment. They are working on a very limited budget so have decided to go for a cost-effective PR strategy based around a series of events. José Luis Hernández, Councillor for Tourism and Foreigners Department, explained to the B2B meeting in September that the promotion they undertook for summer 2009 has already seen good results. The Davis Cup Quarter Final in Puerto Banus generated 10 million Euros in direct investment into the restaurants, bars, hotels, shops and businesses in the area. They also launched the Marbella Food and Sun gastronomic festival which ran over several days and highlighted the excellent produce and restaurants in the region. Marbella is also being promoted as a location for filming as well as a perfect place for launching products such as cars and luxury goods. Amongst the range of promotional activities being undertaken, Marbella Town Hall is working with golf courses to help them to more effectively promote themselves, funding

Reason for Coming to Spain: To swap the cold Scottish summer for a marketing internship and a nice tan in Spain before heading back to university and the snow!

As you can tell I love eating out! Favourite Hotel: I have done more backpacking than anything so have stayed in some truly awful places in my time, but I really like Alavera de los Baños in Ronda for Moorish charm. Experiences in the hospitality industry: I have been a waitress, worked in a bar and cleaned rooms in a hotel in my time – but none of it very well I’m afraid. The most fun must have been waitressing and cleaning rooms in a hotel at a ski resort for the season. The worst was being a waitress at Pirates in Magaluf, Mallorca one summer. Why you love the Costa del Sol: The sun, the sea and the wonderful people. I’ve had the best summer of my life here, will be very sad to leave and would most definitely like to make it home, one day. Favourite Food: Tapas and Italian Favourite Costa del Sol Restaurant: I like La Valencia in Marbella as it has a buzzing atmosphere and amazing food, Il Tartufo in the old town is a lovely Italian which in my opinion does the best Risotto. Favourite Hotel: I visited the Melia Lebreros in Seville in July, it is a lovely hotel and in a great location, I also like the Petit Palace Plaza in Málaga, it is in a great location (right next to the shops) and all the rooms have lovely wall paintings of different flowers and their own little courtyard. Experiences in the hospitality industry: I have worked as a waitress and a barmaid in Scotland for a few years while studying. Whilst I have met some amazing people and listened to some crazy stories during my experience, I definitely prefer to be on the other side of the bar, drinking a nice cocktail.

Why you love the Costa del Sol: I love living near the sea and being able to take the children to the beach and riding our bikes or rollerblading along the seafront and I believe the level of education here is excellent. Favourite Costa del Sol Restaurant: This is a very hard question for me as there are so many good restaurants here. The Early Years
Gordon Ramsay was born in the small town of Johnston in Scotland, at the age of 5 he moved to Stratford upon Avon, where he grew up.
Love for Football and for Scotland
At the age of 12, Gordon was chosen to play football for Warwickshire’s under 14’s. Returning to his roots in 1984 Gordon did a trial for Rangers FC in Glasgow, the team which stole his heart as a kid. During a training session he injured his knee, damaging the cartilage. But being Gordon, he was determined and battled on with the injury, causing further damage to his leg, which put an end to his football career.
Where it all Began
After coming to terms with the loss of his football dreams, at the age of 19, Gordon decided to enrol at North Oxfordshire Technical College to study Hotel Management. Following on from this Ramsay took a job as a Commis Chef at the Roxburgh House Hotel, where he learned the tricks of the trade, going on to run the kitchen and 60-seat dining room at the Wickham Arms.

After a while Gordon decided it was time to conquer the bright lights of London, where he worked as a Chef in a few restaurants, before being inspired to work for celebrity chef Pierre White at Harvey’s, for over two years.

But Gordon’s heart was in the Capital, returning to London in 1993, where he took his first job as Head Chef at Aubergine in London. Within three years of working there he achieved two Michelin stars, a major achievement for someone who claims to have fallen into the industry by accident.

sible. They go to the market each day and let their imagination run riot with delicious little amuse bouches which change daily. When we went the raspberries were good so the chef knocked up a raspberry gazpacho, which was a surprisingly savoury chilled shot with a rich olive oil note and then the background sweetness from the fruit. This got our taste buds tingling and made us realise we were in for a treat. The menu is really refreshing, with dishes I have never seen before, showing real creativity and flair. Two intriguing and popular dishes which set the tone for the cuisine are their starter of Sautéed Prawns, on Crispy Apple Rings with fondue of Parmesan and an Onion and Ginger Marmalade and the main of Confit Cod with garlic foam. The cuisine is Mediterranean “gastro” and this gives them the opportunity to choose delicious dishes, ingredients and inspiration from France, Italy and Spain, to create an intriguing but not confusing selection of dishes.

empora is a little restaurant in Marbella’s Old Town which opened its doors in June. It is a cozy little restaurant with dark wood and a warm interior and tables outside on the street. The philosophy behind it is to do something different which gives the diner real gastronomy, using superb ingredients but without the high prices. Andrés Perdiguero the owner, has decided that he doesn’t want to do the normal Spanish or tourist fare so he’s taking a gamble with an unfamiliar menu with lots of unusual ingredients and flavours. It’s a brave move, but would it work? Select headed down there to find out. The food certainly packs a punch, delivering a real gastronomic treat with stunning presentation at surprisingly affordable prices. The service is really good too, with the owner working front of house offering lots of suggestions on things to try, selecting wines from the list and even adding an extra touch with chocolate from his chocolate shop to end the meal!

For starters we opted for Duck Carpaccio and Salmon Tartar. The duck was served with parmesan, pine nuts, apple and rocket, a light, fresh starter with lots of interesting flavours served with fabulous olive oil and bread. The salmon came with avocado and rocket which showcased the most wonderfully fresh salmon and was a perfect summer starter. For the main course we went for the Duck Magret with a raspberry reduction, mushrooms and a potato and vegetable stack. The duck was perfectly cooked with crispy fat rendered down just enough and pink, juicy meat. The raspberry reduction went really well with the duck and I was amazed by the quality of the ingredients, as well as the cooking. We followed this by sharing the Lemon Sorbet with Cava, a tart sorbet of fresh lemons served in a martini glass and topped with a healthy dose of cava at the table. It was like a very grown-up ice cream float and really good to clean the palate. This is real gastronomy for less and seriously good value for money considering the quality of ingredients, standard of cooking and level of service. Average starter is around 10€, mains start from 16.50€ for the duck breast, up to 22€ for the steak and desserts are 6€. Well done Tempora for trying something different – we’ll be back! “I love the job because it allows me to travel. From the age of 15 I have worked in the hospitality industry, beginning my career as a service assistant in a small cafe.” George went on to work behind the bar in working men’s clubs and ended up managing a bar in Leeds. The job allowed George to combine working in an industry which he loves while studying business and economics at university. “I love working at Sala Beach, it’s a great boutique beach club, but it is my ultimate dream to combine my experience with my degree and open my own bar one day. When you see how much money comes through the tills, you really want to have your own till and make it happen for you.” George believes that the trick to becoming a cocktail guru is providing service with a smile, while having some good banter with your customers. “Some cocktails can take a few minutes to make and you need to be able to keep the customer entertained and make them want to come back. It is also important to taste the cocktail before you serve it, to make sure that it is up to scratch.” Over the years George has been asked to make many cocktails, the most popular being his signature frozen strawberry daiquiris, a best seller at Sala Beach. The Backlash against

F
or decades supermarket chains have been taking over the world, pushing down the price of food, increasing mass production and squeezing the independent retailer off the high street. This has been a dominant trend for such a long time that now consumers are looking for something less sterile and are actually prepared to pay more for an artisan product with a personal touch. Slowly but surely we can see this influence on the World’s high streets and the hospitality industry is sitting up and taking notice. Artisan butchers, bakers and candlestick makers are making a welcome return and everything from chocolatiers to wine makers are getting in on the act. This is giving consumers a lot more choice and they want to see this reflected in the restaurants, bars and hotels they frequent. Rustic bread rolls made in-house always add a nice touch at the beginning of the meal, if fruit and vegetables can be grown in your own garden even better. However, if this is not possible, how about taking the time to research your local producers and see if you can utilise the high quality products being grown and made on your doorstep? Not only will this give you environmental credentials as you will minimize the food miles, but it will give your business a local identity and a connection with the community. Yes these products are undoubtedly more expensive, but the stories and people behind the products can be used for marketing purposes and there’s no doubt that your customers will notice the difference in quality.
In Andalucia we are blessed with the most fantastic locally grown ingredients and in Spain the supermarkets have seemed to take less of a hold. You can still find a whole host of traditional producers of stunning cheeses, olive oil, organic vegetables and of course the legendary jamon. In an online survey conducted by a restaurant last year to find out the favourite locally produced food, a wide range of products were praised; from tomatoes and avocados to boquerones and piquillo peppers. One participant wanted to shine a light on one of their local producers which really sums up the spirit of the artisan producer. “We live inland, in the mountains of the Sierra de las Nieves. The nearby village, Yunquera, is small, but very proud of its cuisine. In our village, we have a shop that sells only pork - ‘Ibericos Yunquera’. The man who owns it is very passionate about his pork. He produces the feed and then uses it to feed his pigs. He butchers the pigs himself, and then makes the most gorgeous pork products. My favourite product is his criollos, they produce almost no fat in the pan. They have a gorgeous taste of ‘sausage’, but with no filler, so much better than the English version. They have a gorgeously garlicky taste, that does not overpower.” The recession has also seen people diversifying and people from all walks of life are abandoning their office jobs to indulge their passions for creating something special and trying to make it into a business. This gives us handmade soaps, jewellery, greeting cards and fantastic cakes, biscuits and breads which are popping up in local markets and online. This is a great opportunity for the hospitality industry to source really special products which could be unique to your business.

Buying a Business in Spain During the Recession... AMAZING OPPORTUNITY OR NAIVE MADNESS? Many people have a dream of opening up a bar, restaurant or hotel on the Costa del Sol as it is such a popular area with tourists, expat residents and the Spanish year round. Unfortunately in a large number of cases that dream has turned into a nightmare, as people have invested in an inappropriate business without doing their research or getting the right support. There are many opportunities for buying businesses which have suffered in the crisis, and there are some excellent deals available as a result. However, it is important to enter into any possible aquisition with your eyes open, with a sound understanding of why the venture failed and what you can do to ensure that it does not happen to you. Have no doubt that this is a difficult and uncertain time to enter into business in Spain. The IMF predicts that the economy will not start to rise again until 2014, with it taking until 2017 to recover to the level prior to 2007. However, look around the Costa del Sol and you will see bars and restaurants doing well and even expanding despite the difficult times. There is clearly an opportunity to thrive if you choose the location and premises carefully and understand the local market sufficiently to be able to give them something they want.
Take the time and pay money, if required, for good impartial advice which will get you the right property for the best price. It is certainly a buyer’s market, so negotiate hard and be willing to walk away if you think you can get a better price. Choose a location with good year round footfall and budget for sufficient marketing to draw the customer to you. Know your competition – sample your competitors and evaluate what they are doing well and what they could be doing better. Think what you could do to stand out from the crowd. Undertake market research to see what people want and listen to the response. There’s no point bringing a concept from abroad if there isn’t a need for it here. Set the right price – in these times of austerity price matters more than ever, but not at the expensive of quality. If there’s something which makes your product premium, and therefore have a high price, make sure you can justify that and inform your customers why they should pay more.
TIPS FOR BUYING AND CREATING A PROFITABLE BUSINESS
Tell the world – don’t forget the importance of marketing. Without properly informing your local market how will people know why they should come and see you?
Make sure that you have professional advice from a well-respected commercial real estate agent and consult Spanish speaking, independent legal advisors to ensure that everything is correct and in order.
Keep them coming back for more – you need to set a high standard and keep to it. Only then will the customers reward you with becoming regulars hence providing a steady revenue stream.

HOSPITALITY INDUSTRY According to the OECD Report “Tourism trends in the OECD area and beyond”, jobs in tourist related activities accounted for over 12% of total employment in Spain, the highest of all the countries surveyed. This is obviously even higher in the coastal areas and the sector represents a crucial source of employment for young job seekers who are suffering in the current economic crisis. The high unemployment in Spain is well documented, but if we look at the tourism and hospitality sector as a whole, it seems to be relatively resilient and even improving following a few tough years. The recession started to effect tourism in 2008 and intensified in 2009 by reducing the volume of tourists, the length of stay and spending by personal and business travellers. This of course had a knock-on effect on employment in the industry, but there were large regional variations. Hospitality professionals have an advantage over other sectors as they work in a global industry and, if they are prepared to travel, can move from region to region following the jobs. Even in the worst parts of the global recession, areas such as China and the Arab Emirates were growing, so there are always opportunities.

For 2012 the picture is looking brighter with the Spanish Ministry for Industry, Energy and Tourism reporting that in
June there was an increase of 4.7% in the number of tourists, compared to June last year, and even more interestingly that the average spend per traveller also increased by 3.8%. In total the tourist spend in the month of June was 5,833 million Euros, a significant contribution to the national economy. In Andalucia there was a 5.5% increase in average spend per traveller, but a decrease of 4.6% in the number of visitors. This represented a 1% increase in tourist spend overall, compared to the previous year, and broke the downward trend seen in the last five months. The market which is contributing most towards this growth is the American market which is slowly discovering the area partly thanks to the visit of Michelle Obama. Unfortunately we don’t have a crystal ball, so it remains to be seen what effect the recession will have on the hospitality industry long term. Whatever happens, it will continue to represent a crucial sector for employment and one which will always offer opportunities in Spain and beyond.

THE IMPORTANCE OF EMPLOYEE OWNERSHIP On September 18th 2019 the Financial Times used its entire front page to highlight the need for corporates to be more than only for profit and to have a dimension of ‘purpose’. An unprecedented move by the FT to send a strong message to its significant global readership. The whole page was blocked in yellow to signify the yellow ribbon, worn to express a deeper purpose in many cultures.
