Editor’s Note....

It’s been a long 3 months since we were told to STAY HOME and out of circulation. The first two weeks I was okay, the 2nd two weeks I was getting antsy and by the 3rd two weeks I was getting totally frustrated.

I know it’s a serious Pandemic but I also make my living by gathering ads from all of the small businesses throughout Perry and Juniata Counties. I felt bad for

all of them. But upon venturing out this month gathering information I found out that many people are shopping at our local businesses… WOOHOO, great job everyone, keep it up. You don’t have to go out to the big box stores when we have so many businesses to buy from locally. Usually the small businesses aren’t as crowded and you get that one on one personal service that is always nice. Some businesses benefited from the unemployment for self-employed and some

used creative ways to do business on the internet and by phone orders and porch drop offs. People have been creative in their endeavors to provide for their families and keep their businesses alive.

Our hearts go out to all of those who have lost loved ones or came down with the virus themselves. We were blessed in our family and no one contacted it or had to suffer loss. We did get a nasty bout of sickness before they closed everything down so hopefully we’re all immune now.

I was thankful to see that the Liverpool Pool is opening June 6th. According to the guidelines of the state many pools have chosen not to open this season so I’m sure Liverpool will be busy. They just did quite a bit of remodeling last year and are ready to serve the community this swimming season. Also the Tuscarora Heritage Days are going to be taking place in July instead of June so that is good. There is some light at the end of the tunnel.

I know I’m going to appreciate being with my family this summer and hopefully spend lots of time together. Having the schools closed has been a hardship on some families but also a blessing in disguise as children are learning from their parents instead of the government mandates of course that goes both ways as some children are being left on their own as parents had to work. But all in all I think we’re doing it the “American Way”… we make due and press on.

I want to thank all of my advertisers who kept me going through this pandemic and those who continually support our pages with their ad dollars. Thank you for letting our advertisers know that you saw their ad in The Shopper’s Remedy, they like to know their ad dollars are working.

TAP INTO COUNTRY CUISINE FOR YOUR NEXT MEAL

Few foods can be as comforting as down-home cooking that uses ingredients pulled straight from a backyard garden or a local farm. Simple, delicious flavors are often the crux of country cooking.

While fried chicken, grits and leafy green vegetables are hallmarks of country cooking, particularly in the southern region of the United States, many different ingredients can be used to create country-inspired meals.

Pork is a mainstay of many country dinner tables. This recipe for “Pork Chops with Butter Bean Salad” from “Real Simple Dinner Tonight: Done!” (Time Home Entertainment) by Allie Lewis Clapp and Lygeia Grace is a great representation of a simple, yet tasty meal.

Pork Chops with Butter Bean Salad / Serves 4 1 slice sandwich bread, torn into pieces 4 tablespoons olive oil 2 scallions, sliced

Kosher salt and black pepper 4 boneless pork chops (1 inch thick; about 1.5 pounds total) 1 bunch spinach, thick stems removed and leaves thinly sliced (about 4 cups) 1 14-ounce can butter beans, rinsed 1 tablespoon red wine vinegar 1⁄2 teaspoon dried oregano Heat oven to 400 F. In a food processor, pulse the bread and 2 tablespoons of the oil to form coarse crumbs. Spread on a rimmed baking sheet and bake until crisp, 5 to 6 minutes. Toss with the scallions, 1⁄2 teaspoon salt, and 1⁄8 teaspoon pepper.

Meanwhile, heat 1 tablespoon of the remaining oil in a large ovenproof skillet over medium-high heat. Season the pork with 1⁄2 teaspoon each salt and pepper and cook until browned, 2 to 3 minutes per side. Transfer the skillet to the oven and roast the pork until cooked through, 6 to 8 minutes.

In a large bowl, toss the spinach and beans with the vinegar, oregano, the remaining tablespoon of oil, 1⁄2 teaspoon salt, and 1⁄8 teaspoon pepper. Top the pork with the bread crumbs mixture. Serve with the salad.
