DAR Constitution Week winning poster
By Tina Suarez This year’s National DAR Constitution Week poster contest winner was Rusty Watson of Mt. Vernon, IL. Rusty says that this has been such an honor for her. She explains how she began the process of completing her award winning poster. The first flags adopted by our colonial forebears were symbolic of their struggles with the wilderness of the new land. Beavers, pine trees, rattlesnakes, anchors and various other insignia were affixed to different banners with mottos such as “Hope,” “Liberty,” “Appeal to Heaven,” or “Don’t Tread on Me.” In Rusty’s artistic composition she only included a few flags used during our struggle for independence. The origin of the Slogan “Don’t Tread On Me” pertains
to the snake’s deadly strike and the idea that it was best to leave them alone. The snake on the flag is also roughly arranged in the shape of the American Colonies. Still another was a white flag with a green pine tree and the inscription, “An Appeal to Heaven.” The first flag of the colonists to have resemblance to the present Stars and Stripes was the Grand Union Flag, sometimes referred to as the Congress Colors, the First Nav y E ns i g n and t he Cambridge Flag. The last flag depicted on her poster was the official flag of our country from 1795 to 1818, and was prominent in many historic events. It inspired Francis Scott Key to write “The Star-Spangled Banner.”
Congratulations to Rusty Watson. Constitution Week is the commemoration of America’s most important document. It is celebrated annually during the week of September 17-23. The United States Constitution stands as a testament to the tenacity of Americans throughout history to maintain their liberties, freedom and inalienable rights. The celebration of the Constitution was started by the Daughters of the American Revolution. In 1955, DAR petitioned Congress to set aside September 17-23 annually to be dedicated for the observance of Constitution Week. The resolution was later adopted by the U.S. Congress and signed into law on August 2, 1956, by President Dwight D. Eisenhower.
The aims of the Constitution Week celebration are to: Emphasize citizens responsibilities for protecting and defending the Constitution; inform people that the Constitution is the basis for America’s great heritage and the foundation for the way of life; encourage the study of the historical events which led to the framing of the Constitution in September 1787. Constitution Week is a great time to learn more about this important document and celebrate the freedoms it gave us. It is never too early to begin planning for next year by encouraging young people to sign the Constitution Week Proclamation Pledge and to ask your local community official to issue a proclamation about the Constitution Week.

The circus has come to town! Crazy Washington, especially many in The House of Representatives, has once again renewed my faith that it’s all a show to them and they have no intention of getting significant legislation on infrastructure, healthcare, etc. passed. Their lives revolve around investigations. Two and a half years wasted with the Mueller investigation and now the next year plus on impeachment inquiries of six separate committees, and whatever comes next. True to form, Speaker Nancy Pelosi, (just like years ago with her signature line, “We’ve got to pass this bill so we can see what’s in it,�) decided to launch an impeachment inquir y because of President Trump’s phone call with the Ukraine leader before the
actual transcript from the White House was released to Congress. And then Intel Committee Chair “Shifty� Adam Schiff in the opening remarks of the Intel Committee meeting “jokingly� recited his “godfather� version of the phone transcript. Later in the meeting he had to explain he was not reading from the transcript, but doing a parody of it. Well, that got me to thinking... How did Speaker Pelosi, who had been opposed to impeachment politically, suddenly decide to do the impeachment inquiry? Did a powerful leader in Congress “convince� her to begin the impeachment process? I think it went like this: -----------------

Heritage Festival will be held from 10 a.m. to 4 p.m. on Saturday, October 5 and Sunday, October 6, at the Jefferson County Historical Society’s Historical Village, to celebrate their Bicentennial (1819-2019). The JCHS will be celebrating the history and tradition of Jefferson County and surrounding areas by giving demonstrations of how things were done in the past. The Society has been hosting this event since the early 1990’s. All the buildings and cabins at the Historical Village will also be open for tours. Two days filled with oldfashioned fun to celebrate our heritage. There will be crafts, entertainment, demonstrations, exhibits,
vendors and food. A large rummage sale tent will provide treasure hurting opportunities for all ages. This year the Heritage Festival will feature a photo display celebrating Jefferson County and Mt. Vernon’s Bicentennial. The featured exhibit will be “Spotlight on the Townships of Jefferson County.� All entries from the JCHS Bicentennial Photo Contest will also be on display. An antique tractor show will be provided by Jefferson County Antique Iron. There will also be a guided tour of the historic Old Union Cemetery at 2:00 p.m. each day. A service will be held in the Mt. Olive Church at 10 a.m. on Sunday. Musical entertainment on Saturday will include the Monday Night Strummers at 11:00 a.m. and the Central Christian Church Brass Section at 1:00 p.m. On Sunday Cassie Andrews and Calico Country will perform at 1:00 p.m. Ham and beans, BBQ sandwiches, hot dogs, and desserts will be available to purchase. Kettle corn and pork rinds will also be featured. All the proceeds from this event go toward the expenses of the Jefferson County Historical Society. Admission and parking for this event are free. Marlow’s Pumpkin Patch This week’s Spotlight on Business is brought to you by Grace Payne of the Mt. Vernon Convention and Visitors Bureau. In 1998, Timothy and Tracy Marlow set out 30 pumpkins on hay bales at the end of their driveway next to a Pringles can to collect the money. The second year, they grew 300 pumpkins and customers placed their payment in the mailbox. Since then, Marlow’s Pumpkin Patch has exponentially grown and added several new aspects to their farm. The business was started to teach their daughters, Erica and Emily, about
money handling. Marlow’s Pumpkin Patch is 100% run by the Marlow family — their daughters, parents, and relatives. Today, they see between 10,000 and 15,000 people at the patch each season. Starting small, Marlow’s has added many new activities over the years including an adult and toddler’s corn maze, hayride, a haunted barn, playground, toddler play area, animals, mini golf, and a silo slide. In their 10 month “off season,” the Marlows still work hard to clean up the patch, paint new hayride characters, and brainstorm new activities to add for the next year. Pumpkins are planted in June for the next season. Not surprisingly, the classic jack-o’-lantern
pumpkin is the most purchased item at Marlow’s. Many pumpkins are bought for business decorations and weddings. Besides your favorite pumpkin variety, you can also find gourds, squash, straw, mums, and corn stalks available for purchase. For Timothy, the most rewarding part of owning Marlow’s is seeing his kids grow up on the farm and take part by helping out with the business and seeing other families have fun. “We try to keep it very family oriented out here. I want a family to come out and have a good

Going Down to the River to be Baptized I love the bluegrass music in the movie “Oh Brother, Where Art Thou?” In the movie, there are some convicts who escape from a prison chain gang. On their journey home they come across a water baptism service at a river. One of the convicts becomes convicted of his sins and jumps in the river and baptizes himself. The movie is a take off on the classic book “The Iliad and the Odyssey.” It also portrays a group of women singing “Going down to the river to be baptized.” They are like the sirens in Greek mythology, which I interpret as the pull of the sinful nature in all of us. John the Baptist points us to the only answer to freedom from the power of the sinful nature, “The next day, John saw Jesus coming unto him and said, “Behold the Lamb of God, which takes away the sin of the world.” (John 1:29)
“And saying repent, for the kingdom of heaven is at hand . . . and were baptized by him in the Jordan, confe ss i ng t h e i r s i ns .” (Matthew 3:2, 6) Recently I had the blessing of baptizing six young ladies in the Salt River. They came out of life controlling addictions and found freedom in Christ. One young lady testified that when she came up out of the water, she felt so clean and refreshed. Of course, it wasn’t the baptismal waters that washed their sins away, but repentance and faith in the atoning blood of Jesus shed on the cross. The New Testament speaks of seven baptisms: 1) John’s baptism in the water of repentance (Matthew 3; Acts 19:3); 2) Christ’s baptism in water; 3) baptism in suffering (Luke 12:50); 4) baptism in the cloud and the sea (I Corinthians 10:2); 5) Christian baptism in water (Matthew 28:19; Acts 2:3841); 6) baptism into Christ
Wednesday, October 2, 2019 and his body, the church (Romans 6:3-7; I Corinthians 12:13); 7) baptism in the Holy Spirit and fire (Matthew 3:11-14). Experience these baptisms. BAPTISM INTO CHRIST. When one repents of sin and puts faith in the finished work of Christ on the cross, they are born again and baptized into Christ and his body. (Romans 6:3-7) The Holy Spirit indwells the believer and puts them in Christ. Ephesians 4:5 calls it “one baptism.” BAPTISM IN WATER. Before John the Baptist baptized anyone in water, he preached repentance and the penitent confessed their sins and made a public confession of their faith by water baptism. “That if you confess with your mouth the Lord Jesus and believe in your heart that God has raised him from the dead, you will be saved.” (Romans 10:9-10) A back-hills preacher told his congregation, “You can be dunked under the water so many times that you know every tadpole and fish in the river. But if you haven’t repented of your sins, you will go down a sinner and come up a wet sinner.” Jesus taught that repentance and water baptism is the beginning of discipleship. “Go, there-
fore, teach all nations, baptizing them in the name of the Father and of the Son and of the Holy Spirit.” (Matthew 28:19) BAPTISM IN THE HOLY SPIRIT. John the Baptist declared, “I indeed baptize you with water unto repentance but he that comes after me . . . shall baptize you with the Holy Spirit and with fire.” (Matthew 3:11) On the day of Pentecost Peter said that the gift of the Holy Spirit is for all “who are afar off.” (Acts 2:38-39) Jesus said that the Father gives the Holy Spirit to those who ask. (Luke 11:13; Acts 1:8) The fire of the Holy Spirit sets one ablaze with God’s power and passion. Ask and you will receive. Have you gone “down to the river and been baptized? Repentance, faith, and obedience bring you to the river of the Spirit and a new life in Christ. Water baptism reminds us that we all have pasts. We all make choices that maybe weren’t the best ones. To show their love for animals, Girl Scout Troop #8653 visited Jefferson County Animal Control. The troop donated food, treats and cleaning materials that the shelter was in need of. Martin Boykin, animal warden, discussed with the girls the importance of animal care and how all animals should have proper nutrition, shelter and veterinarian care. The troop received a tour throughout the facility seeing all the animals and how they are cared for while in Jefferson County Animal Control’s custody. The girls became friendly and were able to share some love with some of the pups and kittens.

Mt. Vernon Rotary Club hears about clean water in Tanzania The Mt. Vernon Rotary Club heard from Randy Steele last week about his passion for helping to drill water wells in Tanzanian He shared with the group some great information and showed pictures of the work that is happening to provide clean and safe water to communities. Steele spoke about the last trip he made and said that this is the second well this year that he has helped dig. The first well was dug in February
2019 in Mwerekwa, Tanzania and provided clean water to over 10,000 people; the last well, which was dug in July 2019 in Dirma, Tanzania, provided clean water to over 50,000 people. Mt. Vernon holds its 8th annual Fall Festival The annual fall festival was held September 27 through September 29 in beautiful downtown Mt. Vernon. The theme for this year was “Growth, Progress and Pride.” It focused on Mt. Vernon’s and Jefferson County’s Bicentennials. 2019 is both the city’s and county’s 200th birthday. The bicentennial is a great way to focus on the past, present and future of our region. The community is invited to celebrate the rich history and growth of both the city and county. The “ Growth. Progress. Pride” theme permeated the entire three-day festival. The parade on Saturday had 100 plus entries featuring a growingly popular Marching Band Expo that awarded $4,000 in prizes to the participating marching bands. Everyone in attendance from Friday at 5 p.m. until Sunday at 5 p.m. enjoyed wonderful entertainment and performers. Other events held over the weekend were the Kid Zone Fall Fest 5K for Special Olympics, DMDC CruiseIn , Tri-State Treasure Hunt for Kids, Mt. Vernon Business Women’s Club Great Pumpkin Contest, food court, vendors, and beer and wine tent. The Mt. Vernon Fall Festival is always one of Southern Illinois’ most fun filled weekends of the year, especially since the 200th birthday of Mt. Vernon and Jefferson County was celebrated. A special thank you to Angela Schrum, Festival Director for a great festival. Everyone is already looking forward to the Fall Festival in Mt. Vernon next year.

Meat Main Courses I still love my time in the kitchen. However, I catch myself always looking for new and exciting recipes to add spice to life around the dining room table for my family. Recently I’ve been focused on new ways to serve the main course, starting with meat, and below are some new recipes. Some I’ve already tried and loved as well as some I’m looking forward to making and serving.
Spicy Pork and Cashew Stir-Fry with Snow Peas and Red Pepper
1 T. medium-dry sherry 2 tsp. cornstarch 3 T. soy sauce 2 tsp. Asian sesame oil 3/4 lb. boneless pork loin, thinly sliced, then cut into 2x1/4-inch strips 1 tsp. sugar
3 T. peanut oil 2 tsp. minced peeled fresh ginger 2 tsp. minced garlic 1/2 tsp. dried hot red pepper flakes 1 large red bell pepper, cut into 1/4-inch-thick strips 1/2 lb. snow peas, trimmed 1 cup salted roasted cashews
Stir together sherry, cornstarch, and 1 T. soy sauce, then stir in sesame oil. Add pork, stirring to coat well, and let stand 10 minutes. Stir together sugar and remaining 2 T. soy sauce. Heat wok or large nonstick skillet over high heat until bead of water dropped on cooking surface evaporates immediately. Add 1½ T. peanut oil, swirling wok to coat evenly, then stir-fry 1 tsp. ginger,1 tsp. garlic, and 1/4 tsp. pepper flakes until fragrant, about 5 seconds. Add bell pepper and stir-fry 2 minutes. Add snow peas and cashews and stir fry until snow peas are crisp-tender, 1 to 2 minutes. Transfer vegetables to bowl. Heat remaining 1½ T. peanut oil in wok until just smoking. Stir-fry remaining ginger, garlic, and pepper flakes until fragrant, about 5 seconds. Add pork and stir-fry, separating strips, until browned and barely cooked through, 2 to 3 mins. Add vegetables and sweetened soy sauce, then stir-fry until just heated through, about 1 minute more. Serves 4.
Beef Stroganov
3½ T. unsalted butter 1 T. all-purpose flour 1 cup beef broth 1 (1-lb.) piece beef tenderloin, trimmed, sliced 1/4-inch thick, then cut into 1-inch pieces 2 T. olive oil 1/2 cup thinly sliced shallot
3/4 lb. cremini mushrooms, trimmed and halved (quartered if large) 3 T. sour cream at room temperature 1 tsp. Dijon mustard 2 T. chopped fresh dill 1/2 tsp. salt 1/8 tsp. black pepper
Melt 1½ T. butter in small heavy saucepan over moderate heat and whisk in flour then cook roux, whisking constantly, 2 minutes. Add broth in a slow stream, whisking constantly, and bring to boil. Reduce heat and simmer, whisking occasionally, 3 minutes. Remove from heat and keep warm. Pat beef dry and season well with salt and pepper. Heat 1 T. butter with 1 T. oil in 12-inch heavy skillet over moderately high heat until foam subsides, then saute beef in 2 batches, turning once, until browned on both sides but still pink inside, about 1 minute. Transfer to plate with slotted spoon. Heat remaining 1 T. butter with remaining 1 T. oil in same skillet over moderately high heat until hot but not smoking, then saute shallot, stirring occasionally, until golden brown, about 3 minutes. Add mushrooms and saute, stirring occasionally, until liquid mushrooms give off is evaporated and mushrooms are browned, 8 to 10 minutes. Return meat with any juices accumulated on plate to skillet and stir to combine, then transfer to platter. Reheat sauce over low heat (do not boil), then whisk in sour cream, mustard, dill, salt, and pepper. Pour sauce over beef and serve immediately. Serves 6.
Lamb Chops with Yogurt-Mint Sauce
1/2 cup fresh mint leaves, finely chopped 1/2 cup plain yogurt 1 garlic clove, minced
1 tsp. fresh lemon juice 6 (1-inch-thick) rib lamb chops 1 T. olive oil
Stir together mint, yogurt, garlic, lemon juice, and salt and pepper to taste. Pat half of lamb chops dry and season with salt and pepper. Heat oil in 10-inch heavy skillet (preferably cast-iron) over moderately high heat until hot but not smoking, then saute chops, turning once, 6 minutes for medium-rare. Transfer chops to plate and keep warm, covered with foil. Dry, season, and saute remaining chops in same manner. Serve topped with yogurt-mint sauce. Don't Be Burned By Poor Fever Advice Elevated body temperature, also known as fever, makes many people run to the medicine cabinet. This is especially true when fever strikes a young child and parents’ concerns grow. But fevers are quite common and not nearly as harmful as many people may think. Although illnesses may bring about fevers that can be life-threatening, including malaria and dengue, more run-of-the-mill fevers are typically triggered by common bacterial or viral infections or even inflammatory conditions like rheumatoid arthritis, offers The Mayo Clinic. Sometimes the cause of a fever can’t be identified, but
that is not necessarily cause for alarm. Fevers are a natural immune response. The purpose of a fever is to gain an advantage over an infectious agent by making the body less favorable for the spread of this agent, whether it’s a virus or bacterium. Many infectious agents are temperaturesensitive and require the right mix of conditions to be able to become profligate consumers of the body’s resources. The hypothalmus is the body’s internal thermostat and will be triggered by biochemical substances in the blood alerting the body to the presence of a potential invader. The body then will retain and
generate more heat to essentially kill off that invader. According to the Internal Me d i c i ne R e s i d e nc y Prog ram at Indi ana University, because children have immature and novice immune systems, they tend to get higher fevers more quickly than adults. As children age and their bodies learn and adapt, fevers typically are not nearly as severe. This may be a reason why a child’s high fever is less of a concern than the same fever in an adult. Normal body temperature fluctuates during the day, but a temperature from about 97 F (36.1 C) to 99 F (37.2 C) generally is con-
sidered “normal.” Adults should only be concerned if a fever is high-grade, reaching 104 F or more. Such fevers are considered dangerous. Chronic fevers, or those persisting for longer than three to four days, also should be checked out by a physician. Watching how a person behaves may indicate whether he or she is ill enough to necessitate a doctor visit. Infants should always be checked by a doctor if they have a fever because it could be a sign of a serious infection. Low-grade fevers generally do not require any medicine, and taking a fever-reducer may prolong the underlying illness or
How to lower blood-sugar levels without medication
Type 1 diabetes is an autoimmune disease in which the body wrongly identifies and then attacks pancreatic cells, which causes little to no insulin production. Those with type 1 diabetes usually must rely on insulin shots to remain healthy. Type 2 diabetes involves insulin resistance or insufficient insulin production and is the more common form of diabetes. The pancreas may still produce insulin, but not enough to meet the demands of the body. Diet Diabetics can work with their doctors and nutritionists to come up with a diet that will be most effective. Some advocate for eating foods that are low in carbohydrates or ones with a low glycemic index. Others say that it is more important to restrict caloric intake rather
than sugar intake. Work with a professional to create a healthy diet and follow it as closely as possible. Eat meals at the same time each day so you can better regulate blood-sugar spikes and lulls. Skipping meals may cause you to overeat later in the day, which can throw glucose levels off-kilter. Exercise Many people with type 2 diabetes are carrying around extra weight. Exercise can help them shed pounds and maintain healthier weights. But exercise does more than just help you lose weight. The Joslin Diabetes Center says strength training exercises are an important component of workouts. By maintaining lean muscle mass, you can get rid of a larger amount of glucose in the bloodstream, thus helping manage diabetes in the process. Get at least 20 to 30 minutes of moderate activity several days per week. Supplementation Some people find that certain natural ingredients
can help regulate bloodsugar levels. For example, pure, organic apple cider vinegar taken over time can help people with diabetes manage their blood-sugar levels more effectively. A small amount of cin-
namon per day may be able to reduce fasting glucose levels by anywhere from 18 to 29 percent, according to a study in the Journal of Agricultural and Food Chemistry.
