Cajun Music of Illinois program to be presented at JCHS Historical Village

Dennis Stroughmatt will be performing a Cajun Music program at 3:00 p.m. on Saturday, January 11 in the Schweinfurth Museum at the Jefferson County Historical Village. Beginning in 1699 with the building of villages such as Cahokia and Kaskaskia along the Mississippi River, French colonists from western France and Québec would intermarry with the Native populations of what are now Illinois, Missouri, and Indiana, developing a Creole culture that remains distinct from its cousins in Louisiana and Canada even today. This early Illinois population grew during the

18th century, giving the landscape of the Illinois County a decidedly French character. It would eventually leave its legacy not only in town names and landmarks, but also though songs, language, stories, food, and even the first lieutenant governor of Illinois, Pierre Menard. By way of 300-hundredyear-old traditions such as the annual “La Guillannee” French New Year celebration, this presentation by musician and cultural historian Dennis Stroughmatt will take listeners on a fascinating trip through the Illinois Country. Stroughmatt will highlight the enduring

French identity of historic Illinois communities such as Prairie du Rocher and Cahokia through long-told folktales, haunting ballads, and foot-stomping fiddle tunes. Fiddler, singer, cultural historian, and southeastern Illinois native Dennis Stroughmatt became acquainted with the historically French Creole community of Old Mines, Missouri, as a student and learned the community’s music and folklore from its tradition bearers. He is now recognized as one of the foremost experts on French Creole culture of North America, especially that of

the Illinois Country or Upper Louisiana (encompassing much of present-day Illinois, Missouri, and Indiana). He has made numerous recordings, received awards from national cultural institutions, travels extensively throughout the country as both a musical performer and an educational speaker, and teaches at Illinois Eastern Community Colleges. This program is provided free of charge, donations are appreciated. The Jefferson County Historical Village is located at 1411 North 27th Street in Mt. Vernon. Resources (IDNR) Certified Wingshooting Instructors will teach the wingshooting clinic. Young hunters will practice safe shotgun handling and operation while advancing their wingshooting skills during the clinic. The pheasant hunt will take place during the afternoon. Young hunters must have successfully completed an approved Hunter Safety Course and have a valid hunting license to participate. Nancy Pelosi wants to keep her power so bad that she’s willing to do whatever she has to do to try to keep it. All of the Democrats together could not do the great job that President Trump has done for our country. They have proven through Obama’s terms and through the past three years that all they know how to do is lie and cheat and try to stay in power. They are not interested in helping our country and don’t care any little bit about the American people. Nikita Khrushchev said many years ago that they would conquer us from within. It seems that that is exactly what they are trying to do. None of these people are true Americans in any sense of the word. They are all total gutter, sewer, trash. They are all guilty of all the things they are accusing President Trump of doing and on a much bigger scale. They themselves should be in jail for this crime and many others. It has left me thinking that the word “Democrat” is a dirty word. They have permanently scarred the Democratic Party. It blows my mind how many truly evil and corrupt people there are in our country. I have always thought those people were in the minority, but I’m beginning to wonder. I know that evil people make a lot more noise than good, honest people do. I hope that’s the case. However, evil does more damage

than good simply because they are bent on destruction of everything that is good. I realize people who listen to CNN and the other left wing media hear a glorified version in favor of the radical left. That is all they hear, so that is what they believe. Their closed mindedness is going to destroy this great country. That’s how Hitler got his power, and you see what happened there. Of course, the Left wants you to believe that the Holocaust didn’t happen. I could go on and on but there’s not room. I’m sure this will fall on deaf ears except to those who already know the truth. After 20 years of General Qassim Soleimani of Iran poking a stick in the eyes of the U.S., President Donald Trump took action to stop a war by taking out this man that was responsible for the death of thousands. General Qassim Soleimani of Iran was killed along with three other officials in an air strike at Baghdad’s international airport. Qassim Soleimani was Iran’s Quds Force commander. Also killed was Abu Mahdi al-Muhandis, deputy head of Iraqi parliamentary forces. Last week it took Donald Trump 13 minutes to do something after learning of immediate danger and the attack on the American Embassy in Iraq by the Iranians. It took Barack Obama 13 hours to respond to the attack in Benghazi. By that time it was too late; four Americans were dead, including Ambassador Chris Stephens. Im m e d i at e l y a f t e r sending U.S. troops in, the Iranian militants backed

down from their attacks on the American Embassy. It had been written on the Embassy by the militants, “Soleimani is our leader,” while they chanted, “Death to America.” The American Embassy in Iraq is a big deal. The Embassy is a huge symbol of American power. In my opinion, unlike Obama, Trump knows the drill. America is the first to fight and defend her people, and the last to leave. Obama attempted to negotiate with hostile Middle Eastern countries and implement progressive diplomatic relations. It didn’t work! In fact, not only did it not work, Obama and his top officials lied to the American people about Benghazi, claiming that the attack on the American Post where Ambassador Stephens was brutally murdered was a spur-of-themoment incident over a YouTube video that angered the protesters. Two weeks later the Obama Administration

admitted the attack that left Americans dead was, in fact, a coordinated and well orchestrated attack. Who remembers Susan Rice getting on a number of Sunday morning talk shows and spinning the Obama and Clinton web. Frankly, it was plain to see the attack in Benghazi was just that, and not a protest that got out of hand. The same applied to the American Embassy in Iraq. It was a well orchestrated attack. The difference was Donald Trump’s handling of the situation, who wasn’t about to sit still and watch Americans die, for not one hour — let alone 13 hours — in the Situation Room. It’s apparent the era of timidity and lenience is over. Trump sent help to the besieged U.S. Embassy in Baghdad immediately. It was found Soleimani was planning “imminent attacks” against American facilities in the Middle East, including Americans in Iraq, Syria, and Lebanon, that could have resulted in

the deaths of hundreds if not thousands. At the present time there are plans to deploy 4,000 additional troops to the Middle East in the aftermath of Soleimani’s death. And, of course, the Iranian government has promised “harsh punishment.” So where will this go? Who knows. But there are a few things I am certain of: 1) Trump will not ask for war but won’t sit still while Iran keeps doing whatever they want; that includes killing Americans and destroying American property. 2) Trump won’t drop billions of dollars of cash in the Iranian government’s hands (blackmail money). Keep in mind there are two factions in Iraq. One supports America, the other supports Iran. However, there are many Iranians in Iran that support America! In closing, let me say, in most cases I’m against war! But I believe there comes a time when to do nothing is more dangerous. I believe this is such a time! The Iranian government has done everything they can to create a situation of provocation. And one thing I pray to God they have learned is that Trump is not Obama! Iran has been the aggressor for 40 years! In closing, if there was ever a time to support Americans and the President, it’s now! It’s too b ad t here are s ome Democrats in Washington that don’t have that ability. Until next week.

Vases portraying Jacqueline Kennedy or those with imitation jewelry or other accessories usually sell for the highest prices. Yesteryear’s Memories

Panther! Our local area was the subject of a book written by William Henry Perrin in 1883. His “History of Jefferson County Illinois” was interesting in not only early events but also gave some glimpses of pioneer life. He wrote about a certain “Mrs. Robinson” who was apparently a strong lady who took care of herself. We don’t know how much of the story may be exaggerated, but perhaps it wasn’t at all. The times in the early 1800’s could be brutal and dangerous, and those early settlers were on their own in surviving the weather, battles with other humans for territory or goods, and the ever-present threat of

hungry animals. In his story, he tells how Mrs. Robinson was faced with a marauding wolf in her barnyard trying to get to the livestock. She didn’t even call to her husband for help — she just picked up a piece of firewood and bashed it over the wolf ’s head. She proceeded to kill the animal and went on with her day. Shortly afterward, she was carrying her small child and walking to visit a neighbor a few miles away. She was accompanied by her dog who followed them everywhere they went. On the way, she saw a panther lurking in the grass, eyes fixed on her. The dog, protective of his human family, growled and moved between her and the big cat, staying at her feet to defend

her and the baby. She may have been scared, but she kept her presence of mind to deal with the situation. She took off her bonnet and tossed it in the brush to distract the beast. Curious, he went over and quickly sniffed the material. He ripped it apart with his sharp fangs, but was obviously disappointed with the tasteless piece of material. He turned back to the lady and her child. She then took off her shawl, throwing it as before to gain some time to get away, but the panther quickly shredded it and turned his attention back to the humans. By this time, she was running to make her escape. She knew the situation was dire but she ran as hard as she could. She was exhausted and the panther came close enough that she could distinctly hear the teeth snapping in the hungry mouth, ready to make a meal of them both. Luckily, just then a neighbor came across the scene. Carrying his shotgun, he shot the panther in his tracks. This was probably not unusual for the people who were settling in early Jefferson County. They were intent on making new lives for themselves in what was then still wilderness, and these people built the farms, villages, and towns that were the beginning of Southern Illinois as we know it today.

However, just like the past holidays, the few extra pounds we pack on for giving ourselves the excuse to eat, eat and eat some more is the reality of all that wonderful rich food. In my world it’s comfort food along with veggies, and my rule of thumb is, if it’s white don’t eat it, with the exception of cauliflower. Below are some of my favorites.

Pasta with Cauliflower & Cheddar

8 oz. whole-wheat linguine 1/4 tsp. dried thyme, crumbled 3 cups small cauliflower florets 1/4 tsp. hot pepper sauce 1½ cups 1% low-fat milk 1/8 tsp. salt 2 T. cornstarch 4 oz. extra-sharp cheddar cheese, shredded 1/2 tsp. dry mustard 2 T. grated parmesan cheese 1/2 tsp. freshly ground black pepper 1/4 cup thinly sliced scallion greens Bring large covered pot of water to boil over high heat. Add pasta, return to boil and cook 9 to 11 minutes, or according to package directions. Four minutes before pasta is done, stir in cauliflower and cook until cauliflower is tender and pasta is al denté. Reserving 1/2 cup of cooking liquid, drain pasta and cauliflower in colander. While pasta is cooking, in heavy medium saucepan, whisk together milk, cornstarch, mustard, pepper, thyme, hot pepper sauce and salt until smooth. Place pan over medium-high heat and bring to boil, stirring constantly. Cook, stirring, l minute, or until sauce is quite thick; remove pan from heat. Transfer pasta and cauliflower to warmed serving bowl; add reserved pasta cooking liquid and toss to mix well. Add Cheddar and Parmesan to sauce and whisk until smooth. Pour sauce over pasta and cauliflower, and toss to mix. Sprinkle with scallions. Makes 4 servings.

Rosemary - Orange Chicken on Spinach

1 lg. navel orange Pinch of crushed red pepper flakes 2-3 T. orange juice 1 Lb. thin-sliced chicken cutlets 1 T. olive oil 1/4 tsp. freshly ground black pepper 2 tsp. balsamic vinegar 1/4 tsp. salt 1/2 tsp. dried rosmary, crumbled 1 Lb. washed spinach, tough stems 1/4 tsp. light brown sugar removed Grate 1/2 tsp. of zest from the orange; set zest aside. Using sharp paring knife, peel orange, removing all the white pith. Working over bowl, cut between membranes to divide orange into sections. Squeeze membranes between fingers to release all the juice, then discard them. Pour all the juice from bowl into measuring cup, then add enough additional orange juice to measure 1/3 cup. Add orange zest, 1 tsp. of the oil, vinegar, 1/4 tsp. of the rosemary, sugar and red pepper flakes to orange juice, and whisk until blended; set aside. Sprinkle chicken with remaining 1/4 tsp. rosemary, black pepper and salt. In large no-stick skillet, warm remaining 2 tsp. oil over high heat until hot but not smoking. Working in batches, if necessary, add chicken and sauté 2 to 3 minutes per side, or until lightly browned and cooked through. Transfer chicken to platter and cover loosely with sheet of foil. Add spinach to skillet and stir-fry over high heat 1 to 2 minutes, or just until spinach is wilted. Arrange spinach around chicken on platter and place orange sections on chicken. Whisk dressing briefly to reblend it, then pour dressing over chicken and spinach. Makes 4 servings.

Chicken Piccata with Escarole

12 oz. skinless, boneless chicken 1 cup halved cherry tomatoes breast halves (4) 1/8 tsp. salt 1/2 tsp. dried thyme, crumbled 2 tsp. cornstarch dissolved in 1/2 1/4 tsp. freshly ground black pepper cup defatted chicken broth 1½ tsp. olive oil 1/2 tsp. grated lemon zest 2 garlic cloves, minced 1 T. fresh lemon juice 5 cups loosely packed cut-up escarole 1 tsp. unsalted butter or margarine Preheat broiler and broiler-pan rack. Season both sides of chicken breasts with thyme and pepper. Place chicken on broiler-pan rack and broil 2 to 3 inches from heat for about 5 minutes per side, or until it is browned and cooked through. Transfer chicken to warm platter and cover loosely with foil. Meanwhile, in large, deep skillet, warm oil over medium-high heat. Add garlic and sauté, stirring constantly, 30 seconds or until fragrant. Add escarole, increase heat to high and sauté, tossing frequently, 2 to 3 minutes or until greens begin to wilt. Add cherry tomatoes and cook 2 to 3 minutes or until tomatoes are warm and soft, and escarole is completely wilted. Add salt, then transfer vegetables to warm platter. In the same skillet, whisk together cornstarch mixture, lemon zest and lemon juice, and bring to boil over high heat, stirring constantly. Simmer, stirring, 1 to 2 minutes, or until sauce is slightly thickened and bubbly. Add butter or margarine and any juices that have collected on platter, and return to boil, stirring. Wars, famine, poverty, and death has stalked the globe. Even Christians have faced injustice and suffering in all the many forms. What is the scriptural response and how can we have victory over injustice and suffering? In our study of the book of James we come to chapter five and God’s answer to injustice and suffering. JESUS IS THE JUST JUDGE. There is a day of accounting when all will stand before the Lord and give account for their deeds. “Come now, you rich, weep and howl for your miseries that are coming upon you! Your riches are corrupted, and your garments are moth eaten! Your gold and silver are corroded, and their corruption will be witness against you and will eat

ears of “the Lord of Sabbath.” Jesus told the story of the rich man and the beggar Lazarus. The rich man had no regard for the beggar who sat outside his gate with sores covering his body. Both men died. The rich man ended up in hell, tormented by flames of fire. The beggar ended up in paradise where he was comforted for eternity. (Luke 16) The Father has committed all judgment into the hands of his Son. Jesus is the true and just judge. There is a God in heaven. Take hope! Trust in him! JESUS IS COMING AGAIN! “Therefore, be patient, brethren, until the coming of the Lord . . . Establish your hearts, for the coming of the Lord is at hand.” (James 5:7-12) The coming of the Lord is called the Blessed Hope. The next great event to take place is the soon coming of the Lord and the catching away of be-

lievers to be with Jesus. (I Thessalonians 4:13-18) James tells us to be patient. Keep planting seeds of righteousness. We will reap everlasting life if we faint not. When things go wrong, don’t grumble and complain. Don’t blame others. Trust God! He is merciful and compassionate. “The Judge is standing at the door.” We are admonished to be an honest man of his word. “Lest you fall into judgment.” Rejoice! Jesus is coming! JESUS ANSWERS PRAYER. “Is anyone among you suffering? Let him pray. Is anyone cheerful? Let him sing psalms. Is anyone among you sick? Let him call for the elders of the church and let them pray . . . And the prayer of faith will save the sick . . . pray one for another that you may be healed.” (James 5:13-16) God hears and answers the prayer of faith and repentance When facing injustice and suffering pray. Prayer moves the hand of God. Prayer will relieve your cares. (I Peter 5:6-8) James points us to the prophet Elijah as a great man of prayer. But he reminds us that he was a man just as we are, subject to injustice and suffering. But Elijah prayed. He prayed humbly. He prayed boldly in faith. He prayed fervently and

earnestly. He prayed persistently. “And the heavens gave rain and the earth produced its fruit.” (James 5:18) We have this promise, “The effective, fervent prayer of a righteous man avails much.” (James 5:16) I saw this on a recent Facebook post, “Worry is a conversation you have with yourself about things you cannot change. Prayer is a conversation you have with God about things He can change.” JESUS SAVES! This is not a dorky religious slogan; it’s the gospel truth. “Brethren, if anyone among you wanders from the truth and someone turn him back, let him know that he who turns a sinner from the error of his way will save a soul from death and cover a multitude of sins.” (James 5:19-20) The gospel truth is this, “For God so loved the world, that he gave his only begotten Son, that whosoever believes in him, shall not perish but have everlasting life.” (John 3;16) Look to Jesus! He is the victor over injustice and suffering.

The position is a 40 hour a week position and will run from mid-January through June 30, 2020. The position requires someone with good communication, organizational, and computer skills.
