Alpha Delta Nu Nursing Society Induction Kaskaskia College held its induction ceremony for the Alpha Delta Nu nursing honors society at the Annual Nurse Pinning held last week. New members inducted include Abigail Henegar, Centralia; Myka Hollenkamp, Iuka; Alexis Holmes, Centralia; Meagan Jones, Centralia; and. Rebekah Sanders, Vandalia. Alpha Delta Nu Honor Society was created in Illinois in 2009 by the National Organization of Associate Degree Nursing, and was launched nationwide in 2012. According to its website, noadn.org, “The objective of the N-OADN Alpha Delta Nu Nursing Honor Society shall be to recognize the academic excellence of students in the study of Associate Degree Nursing. The society shall encourage the pursuit of advance degrees in the profession of nursing as well as continuing education as a

life-long professional responsibility. Additionally, the society shall participate in the recruitment of qualified individuals into the profession of nursing.” Kaskaskia College received the 12th chapter in the state of Illinois. In order to be accepted into Alpha Delta Nu, students are required to create a “capstone project” designed to further interest in the profession of nursing. Students must have also maintained a 3.0 grade point average and be recommended as a society member by the nursing faculty. Members receive a pin that may be worn on their uniforms, informing others of their dedication and excellence. Friends of Centralia Regional Library to sponsor Yacht Club’s January boating events The Friends of the Centralia Regional Library are starting the new year off by sponsoring boating events at the Centralia Recreation Complex on Saturday mornings during the month of January. The Yacht Club will have its motorized boats ready and waiting for pilots of all ages from 8 to 10 a.m. Members

of the Friends will be there to sign everyone up for a chance to win a motorized boat of their own. Drawing for the giveaway will be on January 2. Upcoming hemp production workshops During the first week of February, University of Illinois Extension will host three separate workshops throughout southern Illinois to share information on industrial hemp production. The signing of the Illinois hemp bill has provided opportunities for the cultivation, distribution and processing of hemp for fiber, grain and CBD. This versatile cash crop takes up a small amount of acreage and has the potential to empower small farmers, however, is not without its own set of challenges. Join Extension Educator Phillip Alberti as he shares

his experience with this potential new cash crop for producers in Illinois. Demonstrations of various production systems and planting methods will be covered while addressing issues faced throughout the growing season. Additional topics include: licensing, rules and regulations, end products and an update on hemp across the state of Illinois. Each workshop will discuss grain, fiber and CBD production and will also focus on the many applications for this new crop. There aren’t sufficient words to describe the depth of contempt, disgust and disrespect that I feel for Nancy Pelosi, Adam Schiff, Jerry Nadler and the Democrat representatives who voted in favor of President Donald Trump’s impeachment. It is without a doubt a despicable abuse of power backed up by lies and one sided testimonies. If the Democrats somehow pull this off, we will be under a Democratic dictatorship. They will do this to everyone who ever beats them in an election from now on. The Obama administration was the most corrupt administration in the history of our nation. They are all guilty of many impeachable actions. That’s part of the problem. They all had a real good thing

going, covering for each other because they were all breaking the law at every opportunity. President Trump threatens their little play house. They go in office with nothing and all end up multimillionaires after a few years. It seems like all the evil corrupt and insane people navigate to the Democratic Party. Of course they wanted to stay in power too, and President Trump threatens that too. Those people who conducted the impeachment should lose their power. They do not deserve to have any power over any person. None of us are safe. If they can turn this into impeachment they could accuse anyone of anything and, we would have no defense. It terrifies me and should every American. I truly believe Adam Schiff is insane. Yes, insane. Look at his eyes as he talks. It seems that that is exactly what they are trying to do. None of these people are true Americans in any sense of the word. They are all total gutter, sewer, trash. They are all guilty of all the things they are accusing President Trump of doing and on a much bigger scale. They themselves should be in jail for this crime and many others. It has left me thinking that the word “Democrat” is a dirty word. They have permanently scarred the Democratic Party. It blows my mind how many truly evil and corrupt people there are in our country. I have always

thought those people were in the minority, but I’m beginning to wonder. I know that evil people make a lot more noise than good, honest people do. I hope that’s the case. However, evil does more damage than good simply because they are bent on destruction of everything that is good. I realize people who listen to CNN and the other left wing media hear a glorified version in favor of the radical left. That is all they hear, so that is what they believe. Their closed mindedness is going to destroy this great country. That’s how Hitler got his power, and you see what happened there. Of course, the Left wants you to believe that the Holocaust didn’t happen. I could go on and on but there’s not room. I’m sure this will fall on deaf ears except to those who already know the truth. However, a word to the wise is sufficient. Logic should tell you that if they have to lie and cheat and only show one side of their case, it must be a sham and a lie. Carlyle Lake Christmas Tree Recycling Project

The U.S. Army Corps of Engineers at Carlyle Lake will be collecting used Christmas trees for the annual Christmas Tree Recycling Project. The Corps of Engineers, along with the Illinois Department of Natural Resources, uses these trees to provide effective and economical fish habitat at Carlyle Lake. Christmas trees can be donated from December 26, 2019 through January 31, 2020 at the following locations: Plant Land (located

on Old Route 50 east of Breese), Dam East High Water Boat Ramp, and the Little Prairie Nature Trail parking lot, located in the West Spillway at Carlyle Lake. Every spring, volunteers from various conservation minded organizations and clubs donate their time to help submerge the trees in the lake as fish shelters. These fish shelters provide breeding areas, resting places, and protection. They give young fish much

needed living spaces where they can feed on plankton and avoid being preyed upon by larger fish. The protection provided by the trees allows for a large number of fish to grow to maturity and ultimately provide more fish for anglers. The investigation afterward determined that blasting had ignited coal dust in the air and the explosion was horrific. One hundred and eleven men died that day. They were burned or injured or suffocated from the fumes produced by the fire and many died a slow death — desperate to get a message to their wives and children and families they scratched out notes any way they could. On paper or the wall, they told their loved ones goodbye. Only eight were rescued. Woody Guthrie, a folk singer and by many considered a national treasure, wrote a song, “The Dying Miner” also known as “Goodbye Centralia” and it has been preserved by the “Smithsonian Folkways” record label in Washington, D.C. It can be easily found online. By the way, his son Arlo Guthrie recorded a song written by Steve Goodman, “The City of New Orleans” about the train that goes through Centralia every day.

New Year, New Recipes

Christmas and New Years are behind us! However, just like the past holidays, the few extra pounds we pack on for giving ourselves the excuse to eat, eat and eat some more is the reality of all that wonderful rich food. In January I’m ready to get back to a routine of eating healthier and happier. Our mainstay is meat, chicken and fish. In my world it’s comfort food along with veggies, and my rule of thumb is, if it’s white don’t eat it, with the exception of cauliflower. Below are some of my favorites.

Pasta with Cauliflower & Cheddar

8 oz. whole-wheat linguine 1/4 tsp. dried thyme, crumbled 3 cups small cauliflower florets 1/4 tsp. hot pepper sauce 1½ cups 1% low-fat milk 1/8 tsp. salt 2 T. cornstarch 4 oz. extra-sharp cheddar cheese, shredded 1/2 tsp. dry mustard 2 T. grated parmesan cheese 1/2 tsp. freshly ground black pepper 1/4 cup thinly sliced scallion greens Bring large covered pot of water to boil over high heat. Add pasta, return to boil and cook 9 to 11 minutes, or according to package directions. Four minutes before pasta is done, stir in cauliflower and cook until cauliflower is tender and pasta is al denté. Reserving 1/2 cup of cooking liquid, drain pasta and cauliflower in colander. While pasta is cooking, in heavy medium saucepan, whisk together milk, cornstarch, mustard, pepper, thyme, hot pepper sauce and salt until smooth. Place pan over medium-high heat and bring to boil, stirring constantly. Cook, stirring, l minute, or until sauce is quite thick; remove pan from heat. Transfer pasta and cauliflower to warmed serving bowl; add reserved pasta cooking liquid and toss to mix well. Add Cheddar and Parmesan to sauce and whisk until smooth. Pour sauce over pasta and cauliflower, and toss to mix. Sprinkle with scallions. Makes 4 servings.

Rosemary - Orange Chicken on Spinach

1 lg. navel orange Pinch of crushed red pepper flakes 2-3 T. orange juice 1 Lb. thin-sliced chicken cutlets 1 T. olive oil 1/4 tsp. freshly ground black pepper 2 tsp. balsamic vinegar 1/4 tsp. salt 1/2 tsp. dried rosmary, crumbled 1 Lb. washed spinach, tough stems 1/4 tsp. light brown sugar removed Grate 1/2 tsp. of zest from the orange; set zest aside. Using sharp paring knife, peel orange, removing all the white pith. Working over bowl, cut between membranes to divide orange into sections. Squeeze membranes between fingers to release all the juice, then discard them. Pour all the juice from bowl into measuring cup, then add enough additional orange juice to measure 1/3 cup. Add orange zest, 1 tsp. of the oil, vinegar, 1/4 tsp. of the rosemary, sugar and red pepper flakes to orange juice, and whisk until blended; set aside. Sprinkle chicken with remaining 1/4 tsp. rosemary, black pepper and salt. In large no-stick skillet, warm remaining 2 tsp. oil over high heat until hot but not smoking. Working in batches, if necessary, add chicken and sauté 2 to 3 minutes per side, or until lightly browned and cooked through. Transfer chicken to platter and cover loosely with sheet of foil. Add spinach to skillet and stir-fry over high heat 1 to 2 minutes, or just until spinach is wilted. Arrange spinach around chicken on platter and place orange sections on chicken. Whisk dressing briefly to reblend it, then pour dressing over chicken and spinach. Makes 4 servings.

Chicken Piccata with Escarole

12 oz. skinless, boneless chicken 1 cup halved cherry tomatoes breast halves (4) 1/8 tsp. salt 1/2 tsp. dried thyme, crumbled 2 tsp. cornstarch dissolved in 1/2 1/4 tsp. freshly ground black pepper cup defatted chicken broth 1½ tsp. olive oil 1/2 tsp. grated lemon zest 2 garlic cloves, minced 1 T. fresh lemon juice 5 cups loosely packed cut-up escarole 1 tsp. unsalted butter or margarine Preheat broiler and broiler-pan rack. Season both sides of chicken breasts with thyme and pepper. Place chicken on broiler-pan rack and broil 2 to 3 inches from heat for about 5 minutes per side, or until it is browned and cooked through. Transfer chicken to warm platter and cover loosely with foil. Meanwhile, in large, deep skillet, warm oil over medium-high heat. Add garlic and sauté, stirring constantly, 30 seconds or until fragrant. Add escarole, increase heat to high and sauté, tossing frequently, 2 to 3 minutes or until greens begin to wilt. Add cherry tomatoes and cook 2 to 3 minutes or until tomatoes are warm and soft, and escarole is completely wilted. Add salt, then transfer vegetables to warm platter. In the same skillet, whisk together cornstarch mixture, lemon zest and lemon juice, and bring to boil over high heat, stirring constantly. Simmer, stirring, 1 to 2 minutes, or until sauce is slightly thickened and bubbly. Add butter or margarine and any juices that have collected on platter, and return to boil, stirring. Cook just until butter or margarine is melted and sauce has thickened. Pour sauce over chicken and vegetables. *** Until next week, Au Revoir! —Elizabeth Fenton

Kaskaskia College will be hosting a special Spring 2020 Registration Day at the main campus and all Education Centers on Saturday, January 11 from 9:00 a.m. to 2:00 p.m. Departments providing services for the day will include Advising, Admissions and Registration, Placement Testing, Financial Aid, Cashiers, and the Bookstore. Advising will be available on a walk-in basis that day. The Cashier’s Office will be open to accept payments or assist in setting up payment plans through Nelnet.

New students or returning students who have stopped out for at least a year are encouraged to apply prior to the 11th by completing the Student Admissions Form online at www.kaskaskia.edu and choose the “Apply Now” link. Students should also bring with them their high school transcripts, college transcripts, and ACT/SAT scores. Students that have not previously taken the ACT/SAT should plan to test for math and English class placement by contacting the KC Academic Center for Excellence at 545-3160 for more information.

In order to register on this date, students need to be aware that their Free Application for Student Aid (FAFSA) needs to be complete or payment of 35% of their Spring tuition will be required to register for classes on the 11th. Assistance with setting up payment plans with Nelnet will be available through the Cashier’s Office. Financial Aid staff will also be available to help in completing the FAFSA process or you can complete it at home at fafsa.ed.gov. Once your FAFSA is finalized, you will then be reimbursed at a later date depending on your eligibility for aid.

Victory Over Injustice and Suffering Since the fall of Adam and Eve, injustice and suffering has plagued mankind. Wars, famine, poverty, and death has stalked the globe. Even Christians have faced injustice and suffering in all the many forms. What is the scriptural response and how can we have victory over injustice and suffering? In our study of the book of James we come to chapter five and God’s answer to injustice and suffering. JESUS IS THE JUST JUDGE. There is a day of accounting when all will stand before the Lord and give account for their deeds. “Come now, you rich, weep and howl for your miseries that are coming upon you! Your riches are corrupted, and your garments are moth eaten! Your gold and silver are corroded, and their corruption will be witness against you and will eat your flesh like fire.” (James

I think Jesus was showing this blind man that he could trust Jesus. Jesus had to have been telling him of obstacles in the roadway. He had to have been talking to the man about his family and his situation as they traveled together. And when Jesus knew the blind man now trusted Him, Jesus stopped and spit in his eyes. We can’t minister to people if they don’t TRUST US....

We have heard our grandparents or great grandparents talk about the stock market crash in 1929 that kicked off the Great Depression. A lot of us watched our 401Ks take a major nose dive in 2008 when Congress refused to bail out banks that had made loans to people they knew could not pay them back. What happened? Moth! Rust! THIEVES!!! And then, we’ve heard how that if you invested just a couple of thousand dollars in Walmart in 1970, you would be a multimillionaire today. Earlier in Matthew chapter 6, Jesus talks about various types of investments. He starts out the chapter by talking about charitable deeds. Here is His basic message: If you SEE a need, and you have the ability to do so, MEET that need! INVEST in those that are poor and hurting....

The Illinois Department of Natural Resources (IDNR) is accepting applications through Jan. 21, 2020 for the state’s Park and Recreational Facility Construction (PARC) Grant Program. The program will provide grants to eligible local governments for acquisition, development, construction, rehabilitation or other capital improvements to park and recreation facilities in Illinois. IDNR is anticipating that a total of $25 million in grants will be available through funding provided by the Rebuild Illinois Act. The maximum grant award is $2.5 million.

The PARC Grant Program provides funding for bondable, brick and mortar projects that include demolition, site preparation and improvements for indoor and outdoor recreation facilities, reconstruction, improvements and expansion to existing facilities, and new construction. Projects involving land acquisition for construction of new or expansion of existing indoor and outdoor recreation facilities, and for open space and conservation purposes, are also eligible. The priority of the program is the renovation or construction of indoor recreation facili-

ties since they are not eligible under other IDNR grant programs. The PARC Grant Program will reimburse grant recipients up to 75 percent of approved project costs (up to 90 percent reimbursement will be available to local governments defined as disadvantaged). Eligible applicants are limited to units of local government that are authorized by Illinois law to expend public funds for the acquisition and development of land for public indoor/outdoor park, recreation, or conservation purposes are eligible to apply for funding assistance.

The Central California Blood Center says 75 percent of all Americans who reach age 72 will need blood in their lifetimes. Around 97 percent of people will have a friend or loved one who will need lifesaving blood. The American Red Cross says more than 41,000 blood donations are needed every day, and a total of 30 million blood components are transfused each year in the United States alone. Various surgeries, from joint replacements to bypass surgeries, require several pints of blood. Car accident victims may require as much as 100 pints of blood. Unfortunately, blood cannot be manufactured in labs, so hospitals and medical centers rely on blood donations to meet their blood needs. But donation centers often fall short of their needs, which only highlights the important role donors play. According to the Red Cross, only 10 percent of the nearly 40 percent of the population eligible to donate blood actually does so. That may be due to misinformation or even fear about the process. A whole-blood donation takes between 45 and 60 minutes, but the actual blood donation lasts only 10 to 12 minutes (the rest of the time involves preparation and recovery). Donors are typically given a brief physical exam, which includes checking temperature, blood pressure, pulse, and hemoglobin to ensure it is safe for donors to give blood.

The Mayo Clinic Blood Donor center says a person can donate whole blood as frequently as every 84 days. Specific blood components also can be donated, such as red blood cells, platelets and plasma. These donations may occur more frequently and the process is called apheresis. Since many donated red blood cells and platelets must be used within days of collection, new donations are in constant need. One blood donation can save the lives of up to three people. The Red Cross notes that donors who begin donating blood at age 17 and donate every 56 days until they turn 76 would have donated 48 gallons of blood, potentially helping to save more than 1,000 lives. While all blood types are needed, O-negative blood is in the highest demand. That's because this blood can be given to people of all blood types, and is often relied on in emergency situations when a patient's blood type is not yet known. Only 9 percent of the U.S. population has type O-negative blood, making these donors even more valuable. People with ABpositive blood type are universal donors of plasma. There is always a great need for donors that are Rh-negative as well. Donating blood is a relatively easy process that has countless rewards.
