Local business leader to chair United Way campaign United Way of South Central Illinois’ 2019 campaign to raise $225,000 will be led by one of the community’s most respected business leaders, who also has a long history as one of the Jefferson County’s most visible and active supporters. UWSCI officials announced last week that Country Financial’s Josh Finley is joining the organization as its 2019 campaign chair. Finley previously worked with the local charity as a sponsor and supporter. Finley says

United Way and its partner agencies have a history of changing lives for the better throughout the community, and he is looking forward to continuing his efforts to advance those efforts. “I am honored to be asked to represent United Way of South Central Illinois as its 2019 Campaign Chair,” Finley said. “Throughout my career within Jefferson County, I have had the privilege of supporting United Way. In that time, I have witnessed numerous examples of how its partner agencies make life-changing differences for

individuals and families in need. Simply put, giving to United Way is one of the most effective ways to help our friends, neighbors, and in some cases, our own families right here at home. The crazy days in Washington continue. The news media is bouncing from story to story so fast that they are getting dizzy. Of course, some of them were born dizzy. So, sit back and pick a player and story on this week’s spinning wheel of misfortune. Speaker Nancy Pelosi: I feel “saddened” that I had to start the impeachment inquiry because it will create more division between the parties. Translation: I hope I didn’t screw up and we opened a can of worms. Congressman Adam Schiff: Hey, just because the whistleblower contacted my staff for help before going

to the Inspector General doesn’t mean I shouldn’t chair this investigation. Translation: When you get caught, Divert, Divert, Deny. President Donald Trump: I’m not meddling into politics, I’m meddling into investigations, Translation: The Mueller Investigation is over. Now it’s my turn to get to the bottom of this. Secretary of State Mike Pompeo: The State Department will follow the law in turning over documents requested by congressional committees. Translation: Slow down. Quit harassing the State Department employees and I will turn over

what I am required. Former New York Mayor Rudy Giuliani: The State Department turned over documents I gave them from my investigation on Ukraine involvement in our 2016 elections. Translation: Breaking News: Congressional committees now have affidavits implicating the DNC, Hillary Clinton, Joe Biden, George Soros and others. Let’s see what happens. But there’s more in the news than just the impeachment inquiry. There’s just a little over a year to go before the 2020 elections. Bernie Sanders suffered a heart attack and was hospitalized for a few days.

Upon leaving, he says he’s looking forward to getting back on the campaign trail. As his numbers are dropping, will he be healthy enough to withstand a year of hard campaigning? Elizabeth Warren, with more information coming out about Biden, seems to be charging in the polls. Besides her far left leaning ideas, will her total lack of foreign policy experience be brought up next by any other candidate? Probably not. Outside of Biden, none have foreign policy experience. And if the news was reporting it, back in the news is Tulsi Gabbard. She has qualified for the next debate. Who will Gabbard go after this time? A good guess is Warren and maybe Biden. Look for some fireworks if the moderators from CNN and the New York Times give Gabby a chance to speak. The Democratic debate will be Tuesday, October 15 starting at 7:00 p.m. Central Time. On a final note, when will Hillary start the “Draft Hillary Campaign”? She’s slowly been creeping back into the news. Boy, is that creepy! Until next week.

I came to a beautiful country setting in Mt. Vernon. It was the Simply Barn Life Gift Store. The store is owned and operated by Mike and Bethany Anderson. They began with an idea two years ago. They started going on the road to buy antiques for their store. Next they purchased items from a store that they both liked that was going out of business. Now the story begins. Chicken dinner to benefit Run for the Wall

On Sunday, October 13, the community is encouraged to enjoy a delicious chicken dinner at The Elks while supporting The Run for the Wall. The annual

Run for the Wall ride stops through Mt. Vernon every May. Riders stop to fuel up and travel to the Mt. Vernon Airport to enjoy a donated luncheon on their

way to the Veterans M e m o r i a l Wa l l i n Washington, D.C. The Run for the Wall honors P.O.W., veterans, and active military.

Proceeds from the Elks Chicken Luncheon on October 13 will be used for the riders’ luncheon and fuel costs next May. The luncheon is from 11 a.m. to 2

p.m. and includes a fried chicken buffet with homemade desserts. Tickets are $10 for adults, $5 for children ages 6-11, and children 5 and under are free. To

Illinois Fall Trout Season Opens October 19 The 2019 Illinois Fall Trout Fishing Season opens Saturday, Oct. 19 at 57 ponds, lakes, and streams throughout the state. An early opportunity at select trout sites — the Fall Catch-and-Release Fishing Season — will open Oct. 5 at a limited number of locations. To view the list of locations visit the Illinois Department of Natural Resources website at www. ifishillinois.org No trout

may be kept during the catch and release fishing period, but anglers can keep trout after the opening of the regular season beginning Oct. 19. The Illinois catchable trout program is funded by those who use the program through the sale of Inland Trout Stamps and through the Illinois Fish Management Fund. The IDNR has added one new site for Fall Trout Fishing in 2019 —

Kaufman Lake in Champaign — maintaining the stocking of rainbow trout to 67,000 fish in the fall season. Rock Springs Pond in Decatur will be temporarily removed from stocking due to a maintenance project at that site. No trout may be taken from any of the stocked sites from Oct. 1 until the fall trout season opens at 5:00 a.m. Oct. 19. Anyone att e mpt i n g t o t a ke (harvest) trout before the

legal har vest season opening will be issued citations. All anglers — including those who intend to release fish caught before Oct. 19 — must have a valid fishing license and an Inland Trout Stamp, unless they are under the age of 16, blind or disabled, or are an Illinois resident on leave from active duty in the Armed Forces. The daily catch limit for each angler is five (5) trout.

Illinois fishing licenses and Inland Trout Stamps are available at DNR Direct license and permit locations, including many bait shops, sporting goods stores and other retail outlets. SSM Auxiliary holds annual recruitment luncheon On Thursday September 12, 2019, the Auxiliary of the SSM Health Good Samaritan Hospital held their Annual Volunteer Recruitment Luncheon at the hospital. Prospective volunteers from Mt. Vernon, as well as throughout Jefferson County, attended the luncheon as well as selected hospital staff. C u r r e nt au x i l i a r y member Zella Fitts related a story about the positive effect one of the Auxiliary’s “comfort bears” had on a recent hospital patient with

Alzheimer’s Disease. It seems that having the bear to cuddle made the required testing/treatment procedures much more tolerable to the patient and her fear/anxiety levels lessened enough that the testing was completed successfully. Another long-time volunteer, Ruth Jones, discussed why she continues to give of her time every week to serve the patients, their families, hospital staff and other volunteers week after week, year after year.

Ruth mentioned that helping others has blessed and enriched her life. Lastly, Derek Shaw described the various volunteer opportunities available through the hospital auxiliary and where they are located. Off campus service areas include the Oza Cancer Center ( re-opening in December after an extensive renovation) and the Bargain Box, a thrift shop located on South 10th Street, in Mt. Vernon, IL. For those who prefer to volunteer in a more clinical

setting, there are positions available in patient care units, the emergency department, and surgery waiting area. In addition, escorts are always needed to take patients and their families to imaging, the procedure center, the main surgery area, the women’s center, critical care, etc. Volunteers also provide assistance during regular blood drives every other month. Pet Therapy is a very popular service area where volunteers bring their certified dogs to visit

patients all over the hospital. The dogs are very popular with both patients and staff. Driving a shuttle around the various parking lots, picking up and delivering people, is another way to provide a valuable service. There is a volunteer position for almost everyone wanting to help others and make a difference. Girl Scouts work in park

Come Out and Support the Marching Rams By Brendan Estes The Mount Vernon Township High School Marching Rams have been very busy this year. The Marching Band has already had three marching show performances, two parades, played at the school’s homecoming bonfire and has attended Band Day at the University of Illinois in Champaign. The Band also plans to participate in a marching competition this y e a r at Mc Ke n d r e e University on October 19. The band is over thirty members strong and was excited to welcome back over nine Band Alumni for the homecoming football game marching show last Friday, October 4. The next marching show performance will be on October 25 for the home football game against Mt. Carmel. Ms. Raquel Maxey, an English teacher, assistant director for the theater, and the speech and acting coach at MVTHS is the new sponsor for the National Honor Society at MVTHS. Daylight Savings Time Our human experience is regulated by time. We have an inward clock and an earthly clock. We mark time by the seconds, minutes, hours, days, weeks, months, and years. We have our calendars and day planners. Our measurement of time has advanced from the moon, sun, and stars, the sundial, hourglass, clocks, watches, computers, smart phones, technology, and some refer to Father-time. I have a friend who buys, repairs, and sells grandfather clocks with beautiful sounding chimes. God our heavenly father has control of time. David realized this, “My times are in your hands.” (Psalm 31:15) Time waits for no one. “Even the stork in the heavens knows her appointed times; and the turtledove, the swift, and the swallow, observe the time of their coming. But my people do not know the judgement of the Lord.” (Jeremiah 8:7) The apostle Paul addressed the

Greek philosophers and said of God, “And he has made from one blood every nation of men to dwell on the face of the earth and has determined their pre-appointed times and boundaries.” (Acts 17:26) Knowing that our times are in God’s hands, how can we make the most of our time on this earth? What are some of the vital things the Bible reveals about time? REDEEM THE TIME. We can waste time or redeem time and make it count for eternity. We all will one day give an account to God concerning how we spent our time on earth. Paul admonished us, “See then that you walk circumspectly, not as fools but as wise redeeming the time, because the days are evil.” (Ephesians 5:16) Paul was communicating a sense of urgency. Make the most of your time. We must keep our standards high, act wisely, and do good whenever and wherever we can. GOD HAS A TIMETA B L E F O R T H E

EVENTS OF THE WORLD. The Sovereign Lord has a plan and the clock is ticking. “That in the dispensation of the fullness of times he might gather together in one all things in Christ; both which are in heaven and which are on earth — in Him.” (Ephesians 1:10; Acts 3:21) SIGNS OF THE TIMES. As certain signs reveal what season we are entering so God’s Word reveals the signs of the times that point to the second coming of the Lord Jesus, the last days, and our gathering together with him in heaven. Jesus said, “Hypocrites, you know how to discern the face of the sky, but you cannot discern the signs of the times.” (Matthew 16:1-3) “But concerning the times and the seasons, brethren, you have no need that I should write to you. For you yourselves know perfectly that the day of the Lord comes as a thief in the night.” (I Thessalonians 5:1-10; 4:13-17) Many of the signs of the times reveal that we are living in the last days, therefore, it is imperative that we be ready to meet the soon coming king of kings — the Lord Jesus. (II Timothy 3:1-5) Peter urges us to conduct ourselves, therefore, with fear or reverence, during our time on earth, for we will one day stand before the judge. (I

Peter 1:17-18) IT’S TIME TO WAKE OUT OF SLEEP AND SEEK THE LORD. “And do this, knowing the time, that now it is time to awake out of sleep; for our salvation is nearer than when we first believed. The night is far spent, the day is at hand.” (Romans 13:11-12) In a few weeks, many will be changing their clocks to daylight savings time. Spiritually we should live our lives on daylight savings time. The scriptures tell us how. “Therefore, let us cast off the works of darkness and let us put on the armor of light.” (Romans 13:13-14) The armor of light is Jesus. Put him on by repentance and faith in his work on the cross. Paul preached to the Greek philosophers at Athens. “Truly, these times of ignorance God overlooked, but now commands all men everywhere to repent, because he has appointed a day on which he will judge the world in righteousness by the man whom he has ordained. He has given assurance of this by raising him from the dead.” (Acts 17:30-31) You can walk in perpetual daylight savings time. Put on the armor of light — Jesus. Rotarians hear how Rotary Foundation benefits the world The Mt. Vernon Rotary Club recently heard how the Rotary Foundation benefits the world and our local community. Kevin Settle, Foundation Chairman, and Janice Alka, Past District Governor, praised the Club members for their past contributions to the Foundation. For the fourth consecutive year, 100% of the Rotar y members donated to the Foundation. One of the major initiatives for the past 34 years has been working to eradicate polio. Heirloom Cake Recipes

I’m so lucky I’m blessed with old family recipes, in other words, a collection of heirloom recipes for cookies, pies and cakes. But this week I’m in the mood for cakes, and hopefully these delicious cake recipes will come in handy for the holidays just around the corner. My great aunt always brought this angel food cake to all the family functions.

Aunt Rubye’s Peerless Apple Cake

Tart apples (enough to make 3 cups sifted flour 4 cups sliced) 2 tsp. baking soda 2 cups white sugar 2 tsp. cinnamon 1 cup brown sugar 1/2 tsp. nutmeg, freshly grated Zest of 1 lemon 1/2 tsp. salt 2 eggs, slightly beaten 1/2 cup chopped nuts (optional) 1/2 cup vegetable oil 1/2 cup ground raisins (optional) 2 tsp. vanilla Preheat oven to 375°. Grease and flour two 12¾-by-4½-by-2⅜-inch loaf pans or two 9-by-5-by-3-inch loaf pans. Peel, core, and thinly slice apples; place in large bowl. Add sugars and lemon zest. Let stand approximately 20 minutes, or until apples become moist. Meanwhile, with rotary beater or whisk, beat eggs; add oil and vanilla. When apples are moist, add egg mixture to apples. Sift flour, baking soda, cinnamon, nutmeg, and salt together. With wooden spoon, stir in dry ingredients, add optional ingredients if desired, and mix thoroughly. Pour into prepared pans. Reduce oven to 350°, and bake 55 to 60 minutes, in 12¾-by4½-by-2⅜-inch pans, or 60 to 70 minutes in 9-by-5-by-3-inch pans (or until toothpick inserted into center comes out clean). Remove from oven; cool in pan 10 minutes. Remove from pan, and finish cooling on rack.

Antique Turtle Cake

1/4 tsp. salt 1 cup white sugar 1½ tsp. vanilla 1 tsp. almond extract

Preheat oven to 400°. Position oven rack on lowest level; remove other rack. Wash and thoroughly dry 10-by-4-inch tube pan with removable bottom. Reserve, ungreased. Measure flour, powdered sugar, and salt; sift together 3 times onto waxed paper and set aside. In clean mixer bowl, place egg whites, cream of tartar, and salt; beat until frothy. With beaters running, gradually add sugar, 2 T. at a time, to egg whites. Once sugar is incorporated, continue to beat until very stiff peaks; do not underbeat. Beat in vanilla and almond flavoring. Reduce mixer speed. Gradually add reserved flour mixture a little at a time into meringue. Carefully fold after each addition; mix only until flour disappears. With large spoonfuls, place batter in prepared tube pan. With table knife, pull/cut through batter to remove air pockets. Place on bottom oven rack. Reduce oven to 375° and bake 50 to 55 minutes, or until top is brown. Cake is done when it springs back when pressed with finger. Do not underbake. Remove from oven. Immediately invert pan to “hang” on funnel or small-necked bottle. Let hang until cold. Store baked cake in pan, wrapped in airtight plastic bag. Can be kept 1 to 2 days at room temperature or frozen 1 to 2 months.

Spice Cake: 1/2 cup butter 1/4 tsp. ground cloves 2 cups brown sugar 1/2 tsp. ground nutmeg 2 eggs, beaten 1/ 2 tsp. ground allspice 2¼ cups sifted cake flour 1/2 tsp. salt 1 tsp. baking soda 1 cup buttermilk 1 tsp. ground cinnamon Raisin Filling: 1¼ cups raisins, packed 2 1/ 2 T. cold water 3/4 cup cold water 1 T. vanilla 1 cup sugar 1 T. butter 5 T. cornstarch Grated zest of 1/2 large orange Preheat oven to 375°. Grease and flour two 8-inch round cake pans. Line them with waxed paper; grease and flour paper. Cream butter until fluffy; add sugar and continue to beat until light and fluffy. Add eggs and continue to beat until thoroughly mixed. Sift flour, baking soda, spices, and salt together. Add flour mixture and buttermilk alternately to batter, starting and ending with flour and mixing well after each addition. Pour into prepared pans and bake 30 minutes, or until toothpick inserted in center comes out clean. Remove from oven; cool in pan 10 minutes. Remove from pan; peel off paper and finish cooling on rack. In food processor, grind raisins with 3/4 cup cold water until fine grind; pour into saucepan. Stir in sugar and bring to boil. Blend cornstarch with 2½ T. cold water. Stir into raisin mixture. Continue to cook, stirring constantly 3 to 4 minutes or until thick and clear. Remove from heat. Blend in vanilla, butter, and orange zest. Cool to warm before proceeding. Dust crumbs off cake. Evenly spread raisin filling between layers. Frost sides and top of filled cake. Dip metal spatula in hot water to create swirl effect. After frosting is “set,” store under cake plate cover at room temperature.
