City of Centralia to begin leaf vacuuming curb but do not place leaves on the street or in the gutter as they will clog the storm drains. This is typically the area between the sidewalk and the curb. 2. Please do not place leaves behind or near obstacles such as mailboxes, trees, hedges, fences, etc. If there are any obstacles preventing your leaves from being picked up, they will not be picked up. 3. Leaf collection will begin at 6:00 a.m. and will end by 6:30 p.m., Monday through Friday. Leaves must be ready for vacuum by 6:00 a.m. on your scheduled day. If your leaves are not picked up on the regularly scheduled day (due to severe weather, equipment malfunction or a holiday) they will be picked up the following day or as soon as possible. Heirloom Cake Recipes
I’m so lucky I’m blessed with old family recipes, in other words, a collection of heirloom recipes for cookies, pies and cakes. But this week I’m in the mood for cakes, and hopefully these delicious cake recipes will come in handy for the holidays just around the corner. My great aunt always brought this angel food cake to all the family functions.
Angel Food Cake 1 cup sifted cake flour 1½ cups powdered sugar 1/4 tsp. salt 1½ cups egg whites ( 12 to 13) 1½ tsp. cream of tartar
1/4 tsp. salt 1 cup white sugar 1½ tsp. vanilla 1 tsp. almond extract
Preheat oven to 400°. Position oven rack on lowest level; remove other rack. Wash and thoroughly dry 10-by-4-inch tube pan with removable bottom. Reserve, ungreased. Measure flour, powdered sugar, and salt; sift together 3 times onto waxed paper and set aside. In clean mixer bowl, place egg whites, cream of tartar, and salt; beat until frothy. With beaters running, gradually add sugar, 2 T. at a time, to egg whites. Once sugar is incorporated, continue to beat until very stiff peaks; do not underbeat. Beat in vanilla and almond flavoring. Reduce mixer speed. Gradually add reserved flour mixture a little at a time into meringue. Carefully fold after each addition; mix only until flour disappears. With large spoonfuls, place batter in prepared tube pan. With table knife, pull/cut through batter to remove air pockets. Place on bottom oven rack. Reduce oven to 375° and bake 50 to 55 minutes, or until top is brown. Cake is done when it springs back when pressed with finger. Do not underbake. Remove from oven. Immediately invert pan to “hang” on funnel or small-necked bottle. Let hang until cold. Store baked cake in pan, wrapped in airtight plastic bag. Can be kept 1 to 2 days at room temperature or frozen 1 to 2 months.

Aunt Rubye’s Peerless Apple Cake
Tart apples (enough to make 3 cups sifted flour 4 cups sliced) 2 tsp. baking soda 2 cups white sugar 2 tsp. cinnamon 1 cup brown sugar 1/2 tsp. nutmeg, freshly grated Zest of 1 lemon 1/2 tsp. salt 2 eggs, slightly beaten 1/2 cup chopped nuts (optional) 1/2 cup vegetable oil 1/2 cup ground raisins (optional) 2 tsp. vanilla Preheat oven to 375°. Grease and flour two 12¾-by-4½-by-2⅜-inch loaf pans or two 9-by-5-by-3-inch loaf pans. Peel, core, and thinly slice apples; place in large bowl. Add sugars and lemon zest. Let stand approximately 20 minutes, or until apples become moist. Meanwhile, with rotary beater or whisk, beat eggs; add oil and vanilla. When apples are moist, add egg mixture to apples. Sift flour, baking soda, cinnamon, nutmeg, and salt together. With wooden spoon, stir in dry ingredients, add optional ingredients if desired, and mix thoroughly. Pour into prepared pans. Reduce oven to 350°, and bake 55 to 60 minutes, in 12¾-by4½-by-2⅜-inch pans, or 60 to 70 minutes in 9-by-5-by-3-inch pans (or until toothpick inserted into center comes out clean). Remove from oven; cool in pan 10 minutes. Remove from pan, and finish cooling on rack.

Spice Cake: 1/2 cup butter 1/4 tsp. ground cloves 2 cups brown sugar 1/2 tsp. ground nutmeg 2 eggs, beaten 1/ 2 tsp. ground allspice 2¼ cups sifted cake flour 1/2 tsp. salt 1 tsp. baking soda 1 cup buttermilk 1 tsp. ground cinnamon Raisin Filling: 1¼ cups raisins, packed 2 1/ 2 T. cold water 3/4 cup cold water 1 T. vanilla 1 cup sugar 1 T. butter 5 T. cornstarch Grated zest of 1/2 large orange Preheat oven to 375°. Grease and flour two 8-inch round cake pans. Line them with waxed paper; grease and flour paper. Cream butter until fluffy; add sugar and continue to beat until light and fluffy. Add eggs and continue to beat until thoroughly mixed. Sift flour, baking soda, spices, and salt together. Add flour mixture and buttermilk alternately to batter, starting and ending with flour and mixing well after each addition. Pour into prepared pans and bake 30 minutes, or until toothpick inserted in center comes out clean. Remove from oven; cool in pan 10 minutes. Remove from pan; peel off paper and finish cooling on rack. In food processor, grind raisins with 3/4 cup cold water until fine grind; pour into saucepan. Stir in sugar and bring to boil. Blend cornstarch with 2½ T. cold water. Stir into raisin mixture. Continue to cook, stirring constantly 3 to 4 minutes or until thick and clear. Remove from heat. Blend in vanilla, butter, and orange zest. Cool to warm before proceeding. Dust crumbs off cake. Evenly spread raisin filling between layers. Frost sides and top of filled cake. Dip metal spatula in hot water to create swirl effect. After frosting is “set,” store under cake plate cover at room temperature. FFA students attend land use contest
South Central FFA members participated in the Tri-County Soil and Water Conservation District’s Land Use Contest, which included FFA chapters from Marion and Fayette counties. The event was held on Tuesday, September 24 near Bluff City. Seven students attended and participated in the event. The South Central team brought home first place in Marion County

Local nurse receives DAISY award
Michele (Mimi) Steele, RN, Director of ICU and Telemetry at SSM Health St. Mary’s Hospital – Centralia, was honored recently with the DAISY Lifetime Achievement Award for extraordinary nursing. The DAISY Lifetime Achievement award recognizes nurses who have devoted their lives and careers to the compassionate care of others. Nurses are nominated by their colleagues for their life-long dedication to compassion in nursing through active mentoring, role modeling, advocating for their patients and promoting the positive image of nursing. The criteria for The DAISY Lifetime Achievement Award was de velop e d by D aisy Coordinators across SSM Health. Nominees must meet the following criteria: • The nurse must have a distinguished career in clinical practice, administration, education, and/or research that promotes a positive image of professional nursing. • As a professional, the nurse has worked to create innovative environments for the achievement of exceptional outcomes while advancing and contributing to the profession, while seeing a way to broaden
their knowledge and continually pursue professional development and life-long learning. • As an advocate, this nurse must have special concern for those who are underserved and marginalized. He or she has provided support for other nurses by being a mentor teach or coach. • He or she has partnered with patients, families, customers and colleagues to provide exceptional care and service throughout their career. • As a leader, this nurse has been instrumental in implementing the mission of SSM Health within their team, department, ministry and the community. • Throughout his or her career this nurse has been accountable for achieving exceptional outcomes. • He or she must have 25+ years of service. This annual event includes children’s activities such as face painting, pumpkin painting, cookie decorating, and bounce houses. The Salem Chamber of Commerce held a ribbon cutting Thursday, October 3 for the new Mexican restaurant, Mi Pueblo. The owners of the restaurant are Ismael and Sarah Aguilar. LOOKING FOR A CHURCH HOME? YOU’VE FOUND IT WITH US. Sermon Summary: October 6, 2019 Sermon Title: “I Thirst!” In John the 4th chapter we read the familiar story about Jesus ministering to the Samaritan woman at the well. And the first words that Jesus says are, “Give Me a drink.” He was telling her, “I thirst.” Yes, Jesus was thirsty in the physical. John tells us that He was weary from the journey. But Jesus was also thirsty to give out the Living Water. Jesus was the master at taking a physical situation or conversation, and turning it into a spiritual lesson. And He quickly uses water as a means to get through to this woman. He tells her, “I thirst.” And I think this woman may have totally misunderstood what Jesus was doing. I think initially she thought this was just a “pick up” line. She thought Jesus knew her history and thought she was “easy.” But Jesus quickly clears up any misunderstanding. “If you knew who I was, you would be asking Me for a drink.” And He goes on to explain to her that He was the Living Water. And that if she would drink the water He had to give, she would never thirst again.

Daylight Savings Time Our human experience is regulated by time. We have an inward clock and an earthly clock. We mark time by the seconds, minutes, hours, days, weeks, months, and years. We have our calendars and day planners. Our measurement of time has advanced from the moon, sun, and stars, the sundial, hourglass, clocks, watches, computers, smart phones, technology, and some refer to Father-time. I have a friend who buys, repairs, and sells grandfather clocks with beautiful sounding chimes. God our heavenly father has control of time. David realized this, “My times are in your hands.” (Psalm 31:15) Time waits for no one. “Even the stork in the heavens knows her appointed times; and the turtledove, the swift, and the swallow, observe the time of their coming. But my people do not know the judgement of the Lord.” (Jeremiah 8:7) The apostle Paul addressed

We all will one day give an account to God concerning how we spent our time on earth. Paul admonished us, “See then that you walk circumspectly, not as fools but as wise redeeming the time, because the days are evil.” (Ephesians 5:16) Paul was communicating a sense of urgency. Make the most of your time. We must keep our standards high, act wisely, and do good whenever and wherever we can. GOD HAS A TIMETABLE FOR THE EVENTS OF THE WORLD. The Sover-

eign Lord has a plan and the clock is ticking. “That in the dispensation of the fullness of times he might gather together in one all things in Christ; both which are in heaven and which are on earth — in Him.” (Ephesians 1:10; Acts 3:21) SIGNS OF THE TIMES. As certain signs reveal what season we are entering so God’s Word reveals the signs of the times that point to the second coming of the Lord Jesus, the last days, and our gathering together with him in heaven. Jesus said, “Hypocrites, you know how to discern the face of the sky, but you cannot discern the signs of the times.” (Matthew 16:1-3) “But concerning the times and the seasons, brethren, you have no need that I should write to you. For you yourselves know perfectly that the day of the Lord comes as a thief in the night.” (I Thessalonians 5:1-10; 4:13-17) Many of the signs of the times reveal that we are living in the last days, therefore, it is imperative that we be ready to meet the soon coming king of kings — the Lord Jesus. (II Timothy 3:1-5) Peter urges us to conduct ourselves, therefore, with fear or reverence, during our time on earth, for we will one day stand before the judge. (I Peter 1:17-18) IT’S TIME TO WAKE
OUT OF SLEEP AND SEEK THE LORD. “And do this, knowing the time, that now it is time to awake out of sleep; for our salvation is nearer than when we first believed. The night is far spent, the day is at hand.” (Romans 13:11-12) In a few weeks, many will be changing their clocks to daylight savings time. Spiritually we should live our lives on daylight savings time. The scriptures tell us how. “Therefore, let us cast off the works of darkness and let us put on the armor of light.” (Romans 13:13-14) The armor of light is Jesus. Put him on by repentance and faith in his work on the cross. Paul preached to the Greek philosophers at Athens. “Truly, these times of ignorance God overlooked, but now commands all men everywhere to repent, because he has appointed a day on which he will judge the world in righteousness by the man whom he has ordained. He has given assurance of this by raising him from the dead.” (Acts 17:3031) You can walk in perpetual daylight savings time. Put on the armor of light — Jesus.
